Starting a Business? Here’s 5 things you need to do... Starting a new business is often an exciting time, but also a time when new business owners are apprehensive about the future and the huge array of matters they need to consider when starting a business.

ƧƊȁ ǶƵƊƮ ɈȌ ƮǞȺȯɐɈƵȺ‫ ة‬ƧȌȺɈ ƊȁƮ ƵɮȯƵȁȺƵ ǶƊɈƵȲ Ȍȁ‫ خ‬ÀǘǞȺ ǞȺ

For many this is a daunting process and it can be easy to look at ways to cut corners or overlook matters, at least in the short term. It is a sad fact that the majority ȌǏ ƦɐȺǞȁƵȺȺƵȺ ǏƊǞǶ ɩǞɈǘǞȁ ɈǘƵ ˛ȲȺɈ ɈɩȌ ɯƵƊȲȺ‫ خ‬ÀǘƵȲƵ ƊȲƵ a number of reasons for this but a common theme in business failure relates to a lack of planning or consideration of all of the issues involved.

3. Draft Appropriate Terms of Business

1. Decide on Your Legal Structure

or products you are to provide and can provide important

particularly pertinent in family run businesses where there are the additional dynamics of complex personal relationships.

In many ways, ensuring that you have legally binding, enforceable terms of business is perhaps the most ǞǿȯȌȲɈƊȁɈ ƮȌƧɐǿƵȁɈ Ɗ ȁƵɩ ȺɈƊȲɈٌɐȯ ƧƊȁ ǘƊɨƵ‫ خ‬ÀǘǞȺ governs how you will get paid and what happens if a customer does not pay on time. 2. Document your relationship with co-owners At the outset of a business relationship, business owners will often have multiple goals and aspirations. Unfortunately however, as time elapses it is not uncommon that businesses interests and goals will change.

4. Check Your Compliance Requirements Different businesses in different sectors will have different compliance requirements. It may be that you must be authorised by a regulatory body or you may require a license to carry out all or part of your business. Failure to adhere to these obligations could lead to criminal sanctions.

5. The need for written Employment Contracts If a business start-up has employees engaged in the business then it is a legal requirement that they have a written Employment Contract. Failure to provide a written employment contract is in breach of the Employment Rights Act 1996 and can give rise to a compensatory ƊɩƊȲƮ Ǟȁ ɈǘƵ 0ǿȯǶȌɯǿƵȁɈ ÀȲǞƦɐȁƊǶ‫ خ‬yȌɈ ȌȁǶɯ ǞȺ ǞɈ Ɗ legal requirement, it is good practice as it sets out key employment related matters. IN BRIEF

Dig for festive family fun The only chance this year to see family fun history show The Great Christmas Dig will be at the Richard Whiteley Theatre, near Settle, on 7 December. HandMade Theatre’s original and highly interactive Christmas show was developed from its summer touring production, How Time Flies, which was inspired by a community based archaeological dig led by Carenza Lewis, of Channel 4’s Time Team TV programme. It has been devised to get young audiences thinking about history in the form of a magical, festive treasure hunt. HandMade Theatre’s creative director, Amy Nicholson, explained: “Creating Christmas versions of our shows is something we do regularly to come up with interesting new ideas. Linking archaeology and Christmas led us to loads of really inspiring facts.”

Tribute to last Tucano flight Queen Ethelburga’s Collegiate has paid tribute to close neighbours 72 squadron, based at RAF Linton-on-Ouse, with students and staff gathering to watch the final flight of the Tucano training aircraft that was first flown in the 1980s. Students and staff congregated on the school’s sports pitches to pay tribute and watch this historic aircraft fly in formation for the last time. Students in King’s Magna Middle School formed the number ‘72’ on the school’s hockey pitch, which was visible from the aircraft, whilst the rest of the school gathered together close by to enjoy the Tucano’s final performance. Tucano aircrafts entered service 30 years ago as trainer planes for pilots wanting to progress onto fast jets. To mark the retirement of the aircraft, the Tucanos powered down for the last time at RAF Linton-on-Ouse. The base will continue to host the Yorkshire Universities Air Squadron until the end of 2020 when they too will move to a new home.

TRAVEL

Go west GREAT FOOD, BEACHES, GOLF AND YEAR-ROUND SUN... THERE ARE LOTS OF REASONS TO CHOOSE A CLASSIC COLLECTION HOLIDAYS TRIP TO PORTUGAL.

Carvoeiro

ometimes referred to as ‘Europe’s west coast’, Portugal is a country of picturesque vineyard-filled rolling hills, dramatic cliffs and year-round sunshine. Add to that stunning hotels, and it’s no wonder Portugal is such a popular luxury holiday destination. Whether you want to relax on a beach, go trekking through the hills, discover the remnants of the country’s far-reaching history, or discover new flavours on a vineyard tasting tour, pretty much all tastes and interests can be catered for in Portugal. Speaking of tastes, Portuguese cuisine is another great reason to visit. With 1,700 kilometres of coastline, seafood features highly on most menus. From the Algarve specialty of cataplanas – a flavourful local dish of seafood named after the special shallow-sided Portuguese pot it’s cooked in – to Porto’s delicacy of tripe stew, dishes tend to be fresh and light, but packed with flavour. Being neighbours with Spain, these meals are usually served up as small plates, similar to tapas, so you can sample as many different dishes as possible. Portugal has a temperate climate, which varies slightly throughout the country. The north tends to be cooler, getting progressively warmer and drier as you go south. Portugal is a great destination any time of year. From June to August, the sun is reliable throughout the country, and even during the winter months temperatures in the Algarve average highs of 17°C, making it a great option if you prefer to avoid the cold.

Algarve beach

Top Portugal beaches The Algarve region is where Portugal’s most well-known and popular beaches can be found, and with good reason. Praia da Marinha and Benagil are two idyllic coves on the stretch of coast between Armação de Pêra and Centianes. There’s just one seasonal beach restaurant on Praia da Marinha, meaning the rest of the beach is just fine golden sand and a warren of coves backed by imposing cliffs. Take a cliff-top walk and you can wind around to the next beach, Benagil, where you can take a boat to the huge nearby sea cave that’s as big as a cathedral. There are pretty beaches away from the Algarve, too, and as they’re more off the beaten track, they’re likely to be quieter. Foz de Minho is Portugal’s northernmost beach, located on a wooded peninsula one hour from Porto. Take a walk along the sand, and you’ll find that this sheltered river beach leads to an amazing Atlantic beach with an offshore fortified islet and mainland Spain just opposite from where you stand. An hour’s drive from Lisbon, there’s Galapos beach, which is near the tiny harbour village of Portinho da Arrábida on the coast of the Parque Natural da

Arrábida. The park has been protected since 1976, and is home to wildcats, polecats and eagles. Galapos is considered the most scenic of the coves dotted along this part of the coastline, with its calm waters and sandy beach backed by rocky outcrops and greenery.

Find dinosaur footprints There are many areas of natural and historical interest around Portugal, many of which make for a breath-taking treat after tackling a long trek. Sintra-Cascais Natural Park is one of 13 natural parks in the country. It covers the westernmost point, and includes the Serra de Sintra mountain range, which provide amazing vistas. There are also several sites of archaeological interest, such as consolidated fossil dunes, dinosaur footprints and fields of calcareous stone eroded by the seawater. You can even get a diploma to prove that you’ve visited.

See the cliffside caverns There’s more rock-related fun to be had at the caverns of Algar Seco, in the Algarve. The white cliffs feature several archways and caves, which have been formed by being thrashed by waves over thousands of years. You should get up

TRAVEL

Albufeira

close to get a sense of the scale of these formations, so it’s best to book a boat trip to see them from the water, or scale the cliffside steps, which will take you down to the grotto pool.

Take in a round of golf Making the most of so much scenic landscape, Portugal is also home to some world-class golf courses. Many of these can be found in the Algarve region, particularly in the luxurious town of Vilamoura. But there are also outstanding courses in the north of the Algarve, such as Monte Rei, which has Silves old town

sweeping views of the Serro do Caldeirão mountains to the north, and the Atlantic Ocean to the south.

Go ghost spotting For a taste of ghostly history, Castelo de Silves in the Algarve is a grand Islamic building, and was reportedly built in the 8th century when the town was the Moorish hub of the region. Scale the ramparts, and you’ll be able to look out across the lush surrounding countryside, as well as being able to see the huge stone soldier who is forever standing guard. The castle walls are also said to be

haunted by a Moorish maiden, so keep your eyes peeled.

Portuguese cuisine With so much of the country being coastal, seafood and shellfish feature heavily in Portuguese cuisine, which tends to be rustic and hearty. There are variations throughout the regions – sardines and mackerel are the specialities in the Algarve – but be sure to try national dish, Bacalhau, which is dried and salted cod. There are many variations on how to serve it – one popular way is with onions, olives, parsley, egg and chips, also known as Bacalhau à Brás. Wine is also big business here, much of which will have come from the many vineyards in the more rural areas of the country, with many full-bodied reds and the delicate white wine, Planalto. And, of course, lots of port wines from around Porto. Classic Collection Holidays looks forward to working with Spa Travel to create your perfect Portugal holiday. Kammy is coming to town FOOTBALLER-TURNED-TV PRESENTER CHRIS KAMARA HAS GOT HIS VERY OWN CHRISTMAS WISH – RECORDING AN ALBUM OF FESTIVE FAVOURITES. COULD A NUMBER ONE BE ON THE CARDS? ASKS RICHARD ABBEY. t’s beginning to look at lot like Christmas for ex-footballerturned-TV presenter Chris Kamara who is making a play for the festive number one spot. Yes, you read that right, Kammy – as he’s affectionately known – is releasing a Christmas album and has set his sights on getting the first Christmas number one single by a male solo artist in 21 years. The last, in case you were wondering, was none other than Cliff Richard with Mistletoe and Wine. “I know it might be surprising to some, but anyone who knows me – especially those who shared a changing room with me in my playing days who first told me I could sing – will tell you what a big fan I am of big band music,” said Chris. “Never in my wildest dreams did I think I’d get to record a full album, though!” So how did this come about? Anyone who knows Chris, who’s perhaps now best known for Sky’s Soccer Saturday and ITV’s Ninja Warrior, will know he’s not backward in coming forward when it comes to giving things a go. He’s appeared on everything from Catchphrase to The Chase but it was an invitation to take part in a Christmas special of the BBC’s All Together Now – a singing show where you’re judged by 100 panellists, including Geri Halliwell – that really brought his vocal talents to the fore. “I said I’d do it but only if I could sing ‘Brown-Eyed Girl’,” recalls Chris. “My agent came back to me and asked if I wouldn’t mind singing a ballad as too many people were singing singalong songs. So I went on and sang Elton John’s ‘Your Song’. I was in second place with two to go but Ian Beale’s wife from EastEnders came on and sang ‘Simply The Best’ and I got kicked out.” It was this Christmas Eve appearance

I

that caught the eye of music producer Adam Greenup who contacted Kammy in the new year and teased the idea of doing a Christmas album. “I thought it was a wind-up, Ant and Dec’s Saturday Night Takeaway,” laughs Chris. “But it was legit. I went down, sang a number for Adam. He said I was a better singer than he thought.” Adam had pulled together a 22-piece big band and the plan was to do nine cover versions of classic Christmas songs – think Let It Snow!, Santa Baby and Jingle Bells – and a brand new song, Here’s To Christmas, written especially for Chris. To say he was blown away was an understatement. “I’m thinking flippin’ ‘ell, a brand new Christmas song that’s never been recorded before. It’s written by a fella called Richard Scott, who does a lot of work for Robbie Williams, and it’s an absolutely magnificent song. I hope that I’ve done it justice.” The album is out now and Chris couldn’t be prouder. “Here’s To Christmas is something I’m really proud of and I think it stands up as something fun, but something that doesn’t sound half bad too – an album to get everyone in the swing of Christmas!”

One thing I did ask Chris, who played for the likes of Portsmouth, Swindon and Stoke, was his reputation as a singer in his playing days. “I didn’t really sing in the changing rooms because you’d get absolutely battered by the lads!” beams Chris. “The only time I ever remember singing was at Leeds. I signed on the Monday and on Tuesday we flew to Dublin for a friendly. I trained with the lads that morning; I knew them from playing against them but didn’t know them that well, the likes of Vinnie Jones, Gordon Strachan, Lee Chapman, Imre Varadi, Mel Sterland… “Anyway, Howard [Wilkinson] took us to a restaurant and they had a pianist on. When I went to the loo I said to him, ‘can you play Elton John’s Your Song because Elton’s my hero’ and he went ‘yeah, can you sing it?’ I said ‘I know the words, you can tell me afterwards whether I can sing it’, and so we started the music and there’s all the lads looking round and I’ve got the pianist’s mike in my hand and I sang Your Song and got a round of applause afterwards for doing it. “When I sat down Gordon Strachan said ‘this is our shy new signing, Chris Kamara everybody!’.” Christmas has changed a lot for Chris since his playing days and now, like most of us, is a day with family rather than a day on the training pitch or having to watch what he ate and drank. “It wasn’t until I was 38 that I had a drink on Christmas Day, which is also my birthday,” said Chris. “I’ve made up for it since I might add!” Maybe this year he’ll be raising a class to a Christmas number one spot. Unbelievable Jeff? Maybe not! Here’s To Christmas, by Chris Kamara is out now.

Kenny Davies and Justin Brett in Aladdin in 2017

Ever the Fool IN WHAT WILL BE HIS NINTH YEAR PLAYING THE FOOL IN THE LEGENDARY ROCK ‘N’ ROLL PANTOMIME AT CITY VARIETIES MUSIC HALL, LEEDS LAD KENNY DAVIES REVEALS WHY HE KEEPS COMING BACK FOR MORE. enny Davies knew he wanted to be an actor from a very early age; when his grandmother bought him a plastic guitar that he ‘played’ for family and friends. A pupil at Intake High School, he performed in most school plays and soon swapped his plastic guitar for a real one, also learning to play the keyboard and drums. He went on to study at Rose Bruford College, London, where he graduated with a BA (Hons) degree in Actor Musicianship. With an abundance of stage and TV credits to his name, Kenny is best known in his home city for appearing in the Rock ‘n’ Roll Pantomime at The City Varieties.

This will be your ninth Rock ‘n’ Roll Pantomime – what keeps you coming back for more?

Apart from Yorkshire being the best county in the UK, one of the main reasons I keep coming back is because Leeds is my hometown and I feel that I have a connection with The Varieties. I have been performing in shows at the world-famous venue since my first Youth Theatre appearance back in 2000. It’s a tradition now; when I think of Christmas, I think of the Rock ‘n’ Roll Panto. Why do you prefer Rock ‘n’ Roll Pantomime over traditional?

You get two shows in one – as well as

the acting and dancing, you also have the live music aspect. The thrill of being an actor-musician in a show like this is being able to play multiple instruments on stage in front of a live audience. I think this truly improves the experience as the band forms a connection with the audience; it’s organic. You always play The Fool who never gets the girl – do you not fancy playing Prince Charming to ensure your ‘happily ever after’?!

I love playing The Fool as I love slapstick and making people laugh. As for getting the girl, who knows, maybe this year will be my lucky year.

Kenny Davies and Dyfrig Morris in Cinderella in 2018

What has been your favourite part to play? And favourite song to sing?

I’ve enjoyed every part I’ve played over the years, but I feel like Buttons has the edge. I’ve played Buttons twice (2012 and 2018), but both times have felt completely different because I’ve worked with a different cast each time. As for my favourite song, I loved singing I’m Gonna Be (500 Miles) in Robin Hood.

Due to the nature of the part I play, there are lots of times when I must fall over, walk into a wall, get bashed on the head etc. During Robin Hood there was one scene where I get hit with a mallet – due to a spacing issue, instead of the mallet missing my head, it connected with my face and bust my lip – the show still went on. Any quirky pre-show rituals?

Can you share any funny stories?

When I played Buttons in 2018, I had to wear a yellow wig as part of my costume. In one scene I get bashed on the head and thrown in the well. All was going fine until in one performance, when, as I was bashed, my wig flew off my head and landed in an audience member’s lap. It was rather embarrassing for both me and the audience member who politely passed it back. Can you divulge any times when things have gone wrong?

No rituals but I do love pre-show as we [the cast] get the chance to interact with the audience as they are taking their seats. It gives us an opportunity to fire them up and get them excited. We also get to tell the children to shout and be loud – and it provides a great excuse to pinch the audience’s sweets. Kenny can be seen playing Ruffles/Jack Frost in this year’s Rock ‘n’ Roll Pantomime, Red Riding Hood at City Varieties Music Hall from Friday 29 November 2019 to Sunday 12 January 2020.

Snow White Harrogate Theatre 27 November 2019-19 January 2020 Mirror, Mirror, on the wall, who is the fairest of them all? Join Snow White and a host of characters for the adventure of a lifetime, as they travel through the forest to the diamond mines on a thrilling quest to defeat the spells and enchantments of the evil Queen. They’re going to need all the help they can get - both from you in the audience and the seven very special, little folk that live in the forest. Chock full of magic and sparkle, Harrogate Theatre’s pantomime is a firm festive favourite. Expect all of your favourite panto characters, spectacular scenery, sing-along songs and buffoonery aplenty. Tickets available from £22. A Viking discovery TRADING, RAIDING AND MORE – AN OUTWARD LOOK AT THE VIKINGS FOR THE JORVIK VIKING FESTIVAL 2020.

For the March to Coppergate, hundreds of Vikings parade through the streets of York

ith any talk of Vikings, their fearsome reputation as warriors is probably the first thing that springs to mind. However, in February as part of the JORVIK Viking Festival, their prowess as traders and explorers will come to the fore, and how this unique approach of trading, raiding and discovery made them one of the most influential peoples of the early medieval period. The JORVIK Viking Festival, Voyages of the Vikings, runs from Saturday 15 to Sunday 23 February 2020 in York and will feature assorted exploits taking them all directions of the compass. Whilst the Festival host, JORVIK

Viking Centre, shows how the Vikings settled and made a kingdom of their own when they arrived on our shores, the 2020 JORVIK Viking Festival will look at the skills of this proud people as explorers and traders. “The view of Vikings as thoughtless barbarians is not the whole truth – they were very much part of a global trade in luxury goods for several centuries, with items such as honey, tin, fur, fish and walrus ivory proving popular commodities through central Europe and into the Iberian Peninsula – and these were traded for items like exotic spices and silks from the Far East,” explains festival manager, Gareth Henry.

“Whilst written records made by the Vikings are relatively few, they did cross paths with notable scholars such as Arab traveller and chronicler, Ahmad Ibn Fadlan, who recorded his impressions of these tall, blonde traders – and his stories, along with those of other Viking travellers and warriors, will be at the heart of this year’s JORVIK Viking Festival, showing how the Vikings were part of a rich, multicultural society.” Other characters taking centre stage during the Festival will be Ingvar the Far Travelled, whose pursuit of gold prompted an expedition to re-open the old trade routes between the Baltic and Caspian seas; and Bjorn Ironside,

legendary son of Ragnar Lothbrok, who travelled to the Mediterranean in 859861 AD to conquer new lands before ultimately leading the raid on York in 866 which led to 200 years of peace and prosperity, as this settlement grew to be the capital of Viking Britain. It was not only men who had the wandering spirit: Gudrid Thorbjarnardottir was perhaps the most widely travelled European of the early 11th century, being born in Iceland, married in Greenland and giving birth to her son in North America! These stories will be woven throughout the Festival, from the Banquet of the Voyagers taking place at the Merchant Adventurer’s Hall on Saturday 15 February, to the parade of hundreds of Vikings through the city streets on Saturday 22 February, ahead of the night-time Battle Spectacular in the Land of Darkness, where a cast of hundreds will bring tales and sagas to life, with stirring music, live battles and a fiery finale with the heavens erupting with pyrotechnics above Clifford’s Tower at the Eye of York. JORVIK Viking Festival 2020 is a great destination for families in February half term, with plenty of Viking-themed events for children. Kids will enjoy exploring the Viking Encampment, taking part in swordfighting workshops led by JORVIK’s experts, learning about archaeology on Poo Day and cheering on their favourite in the Annual

Strongest Viking Competition, to name just a few activities. With events all day, every day, and plenty of outdoor and indoor options, the Festival guarantees a memorable and thrilling half term trip. There’s plenty for adults too, with special exhibitions, tours and even a Viking-themed Festival bar opening for the week within the Encampment. As Viking re-enactors roam the streets, be inspired by Norse culture with talks from Viking experts running throughout the week; and die-hard Viking enthusiasts will love the annual Festival Symposium, a day-long event gathering the latest research from Viking experts from around the world. JORVIK Viking Festival is run by York Archaeological Trust, the educational charity behind JORVIK Viking Centre. The Festival is a great chance to discover JORVIK, as well as the Trust’s other historical attractions in the city: Barley Hall, a medieval townhouse; the Richard III and Henry VII Experiences in the famous city walls; and DIG: An Archaeological Adventure, the perfect place for kids to discover York’s fascinating heritage. Tickets are on sale now for JORVIK Viking Festival’s highlight events, with more being announced over the coming weeks and the full programme released in January. To keep up-to-date with the latest event announcements, visit www.jorvikvikingfestival.co.uk.

Glitzy event HUNDREDS HELPED DOUBLETREE BY HILTON HARROGATE MAJESTIC HOTEL & SPA CELEBRATE ITS OPENING. ire-eaters, stilt walkers, classical musicians, flapper girls and a swing band entertained hundreds of guests at a party to officially launch the DoubleTree by Hilton Harrogate Majestic Hotel & Spa. The glitzy event saw guests – including civic dignitaries, business leaders, conference organisers and representatives from Hilton – being taken on a gastronomical tour of the landmark building following the completion of a major £15million transformation by owners, The Cairn Group. This has resulted in the 184-bedroom venue undergoing a full refurbishment of its restaurant, lounge bar, reception, lounge public areas, 14 meeting rooms, event and function suites, and guest bedrooms. Additionally, the former Majestic Leisure Club has been redeveloped into the £2million Harrogate Spa – which now takes its place within the premier league of UK spa retreats. Speeches on the night were delivered by DoubleTree by Hilton Harrogate Majestic Hotel & Spa general manager, Matthew Hole, and Hilton senior vice president Patrick Fitzgerald, who grew up in the spa town.

Firm focus PERSONAL EXPERIENCE SHAPES VISION FOR NEW DIRECTOR OF CLINICAL SERVICES. he new Director of Clinical Services at BMI The Duchy Hospital in Harrogate has her focus fixed firmly on a highly personalised approach to patient care after experiencing ‘the other side’ following a serious illness. Sue Atkinson is “quite lucky to be alive” after having a stroke eight years ago, and is now drawing on her experience in hospital to shape her plans for what she wants to achieve in her new role. “What I learnt as a patient was the importance of healthcare staff getting to know the person they are treating,” she says. “Having been on the other side, I am very passionate about patient care and delivering high standards of care.” Sue, 55, says it’s the little, personal details that really matter to patients, especially when they are going through such a traumatic period in their lives. “For me, it was important that I was asked my preferred name,” she says. “I remember one of my specialists calling me Susan, not Sue. I just felt she wasn’t talking to me as a person and I didn’t feel I could trust her. On the other hand, there was a staff nurse who introduced herself to me – I can still remember her name, Siobhan – and who took the time to really get to know me and find out things about my life. She knew my preferred name, and she knew the names of my husband and my two sons. It put me at ease and I felt I could trust her and ask her anything.” Originally from the North East, Sue qualified as a Registered General Nurse 31 years ago and has since worked in General Surgery, Orthopaedics and Day Surgery within both private and public healthcare organisations. She has spent the last 15 years working in service development and quality improvement, and her most recent role was as a manager in residential care where she took a nursing home from requiring improvement to overall good. As the new Director of Clinical Services at BMI The Duchy, Sue will be overseeing patient pathways to strengthen a caring culture throughout the organisation. Sue says: “My focus will be on ensuring that safe and effective clinical and customer care is at the heart of everything we do. A caring culture starts with the development of trust and respect between all the staff members. Having got to know everyone in the short time I’ve been here, I know they really care. I firmly believe that the culture of an organisation is influenced by the people who are at the top, so for me it’s very much about a kind of modern style of leadership which acknowledges that all staff are in this together and we are working as a team.”

T

BMI The Duchy is the only private hospital in Harrogate, employing over 100 people. It offers inpatient, day-case specialties and outpatient services, as well as health assessments, to insured patients, people who choose to pay for their own care and NHS patients. Sue says her ultimate aim is to continue a positive momentum by helping build the reputation of BMI The Duchy so it becomes the private hospital of choice for people in the local community. She adds: “What interests me about working here is that there’s been a hospital on this site for a long time and it’s now in an exciting period of change. The time is right to show our local community that BMI The Duchy is a trusted, welcoming and accessible provider of outstanding private healthcare in the Harrogate area.” To make an appointment or query please contact: BMI The Duchy Hospital Harrogate, Queens Road, Harrogate, HG2 0HF Tel: 01423 567136 www.bmihealthcare.co.uk/duchy

Grand style THE CLASSIC YET CUTTING-EDGE CUISINE AT THE BOX TREE IS A JOY TO BEHOLD, WRITES CHRIS WILSON. he Box Tree is one of the oldest buildings in Ilkley dating back to 1720. It’s also one of Yorkshire’s oldest restaurants, having originally opened in 1962. But despite the elegant and charming cottage setting, or the first impressions when stepping through the impressive heavy wooden front door that it could double as a very plush antique emporium, The Box Tree is anything but a relic of the past. Service from an immaculately suitedand-booted front of house team is attentive but definitely friendly rather than stuffy, the menu has a classical French base but with myriad modern touches that keep it at the forefront of cutting edge cuisine. Most importantly the food is light, flavoursome, immaculately presented and, quite simply, gorgeous. From the first nibble of canape to the last indulgent artisan chocolate, dining at The Box Tree is a treat to linger long in the memory. Executive chef Simon Gueller was at the forefront of Leeds’ restaurant revolution when I first sampled his cooking at Rascasse 20-odd years ago. With over 100 covers it was the largest Michelin-starred restaurant outside London. Then came Guellers, a smaller fine dining establishment in the city’s business quarter. It burned brightly for a short while, quickly earning another Michelin star. I still remember walking out of there one Saturday night in the early noughties, convinced I’d just eaten the best meal of my life. Since 2004 Simon has been at The Box Tree with his wife Rena who is managing director. They recruited Michael Carr as head chef after spells at high profile restaurants such as Northcote Manor, Star at Harome and Gordon Ramsay in London. I invited a fellow refugee from the newspaper trade to be my dining companion. Jane spent a number of years writing for the business pages and was wined and dined often enough during that period to become a discriminating critic of the region’s restaurant scene. Jane also has a pretty severe allergy to

onions which I would imagine makes her a thoroughly annoying customer for any restaurateur. But when Simon popped up from the kitchen as we were discussing the menus he assured us that whatever we chose, that particular hurdle could be overcome. That settled it, while there were many

temptations on the a la carte menu and also a ‘three courses for £50’ option, the five-course Menu Gourmand tasting menu was a must. But first, as we relaxed by the fire in the lounge, there were divine canapes to be nibbled including bite-sized parmesan biscuit with goats cheese, chives and

onion seeds. Mine also contained a single onion ring, Jane’s was delicately removed with tweezers. We were summoned to our table and another treat appeared in the form of excellent freshly made sourdough bread and two types of butter, the house salted and a super savoury Marmite butter. It really was excellent bread, crusty and moreish. Extra helpings were offered and despite having five courses ahead of us, resistance was futile. Tasting menus can be tricky for all concerned. There’s a lot of hard work for the kitchen and front of house teams of course, but it can also be tough going for the customer if portion control goes awry. It’s an opportunity for the chefs to

show what they can do, but pile those plates too high early in the proceedings and the diner will run out of steam. I apply a simple rule of thumb here... when the last leg is in sight am I actually looking forward to eating a pudding? The answer in this case was an emphatic ‘yes’ but before we reached the sweet stuff there was a full gamut of savoury tastes and textures to be savoured. In a meal where every course was a highlight, certain combinations really struck a chord, such as the sweet roasted sea scallop with celeriac, apple and truffle, or the little shards of macadamia nut bringing a gorgeous crunch to a comforting Jerusalem artichoke dish. So, great food and service in a setting that screams comfort and bonhomie... what’s missing from this picture? Enter Didier, The Box Tree’s knowledgeable

and hugely entertaining sommelier. We had chosen the wine flight to accompany our tasting menu and this affable Frenchman was on the spot, not just to pour the wine but to give us full tasting notes on why each particular glass would match the food on our plates. Nobody likes to lectured during dinner but Didier’s relaxed, conversational style added to our knowledge and enjoyment We hung on his every word and quickly realised his smart choices were enhancing every dish, such as that first sip of spicy ViognerRoussanne with roast sea scallop, or the way a rich and smooth Argentinian Malbec-Cabernet combined with a forkful of salt-aged beef fillet. Our meal was rounded off in a suitably grand style with the lightest apricot soufflé, before we returned to our cosy armchairs by the fireside in the lounge for coffee and chocolates. I was totally won over by The Box Tree but what of my hard-to-please companion? A fortnight after the event, Jane was back in touch to relive her favourite foodie moments, describing The Box Tree as the most impressive ‘fancy’ restaurant she’d ever been to. It’s hard to argue with that. The Box Tree 35-37 Church Street, Ilkley, LS29 9DR Tel: 01943 608484 www.theboxtree.co.uk

Tender loving care THE NEWLY-RENOVATED BAY HORSE INN HAS MADE A STUNNING START, WRITES CHRIS WILSON. hen Gary Hendrickson took a wrong turn and ended up in the village of Goldsborough for the first time in his life it seemed as if fate was taking a hand. “I drove past the local pub and it looked so perfect I actually braked, reversed, parked up and went inside for a drink. It looked so warm and welcoming I felt instantly drawn to it,” he recalls. If I tell you that Gary is now the manager of the pub in question, The Bay Horse Inn, it sounds like a simple, sweet story... but there were a few twists and turns along the way. It may have been love at first sight but on closer inspection this Grade II listed 16th century

W

coaching inn was less than perfect. Gary recalls: “To be honest I walked inside and it was cold, virtually deserted and very much in need of some tender loving care. I walked out thinking it was a bit sad, but if anybody ever gave it a makeover it could be the most fantastic village pub.” Fast-forward a few years and that is precisely what has happened. Goldsborough Hall owners Mark and Clare Oglesby have rescued their local and turned it into everything you’d expect of a traditional village pub. It’s a tasteful and sensitive renovation, with original beams and stone floors, a woodburning stove and a double-sided bar. In

summer a beautiful beer garden will come into its own. The pub walls are decorated with large framed black and white prints depicting village life in the 1920s, a period when HRH Princess Mary was living at Goldsborough Hall. She had married into the Harewood family which owned both pub and village as part of the Harwood Estate until it was sold in 1952. As part of the refurbishment there are five cosy en-suite bedrooms, just perfect for the weary traveller, and a dining area with seating for 32 people. With room for up to 24 on one table and catering for up to 50 guests for a reception or

EATING OUT

buffet, it’s a versatile venue with private dining options. The kitchen is being run by Tony Fulford and the team from the famous Harrogate eaterie Chez la Vie. So there’s a lot going on but my first impression on stepping over the threshold was of a charming local pub with soft lighting, a roaring fire and a warm welcome. And that’s exactly what Gary wants. “Too many village pubs have been lost when they convert to restaurants. The Bay Horse is a pub that does food,” he insists. So after a drink by the wood burner in the bar, which has some great beers including Black Sheep and Theakstons and an impressive gin and tonic menu, we took our seats in the equally cosy dining area. The food menu is very well judged with a tempting selection of hearty favourites, seasonal dishes, salads, burgers, steaks and stone-baked pizzas. We began with a couple of seafood classics, moules mariniere (£8.50) and baked queen scallops (£9.95). The mussels were plump and delicious in a very moreish sauce of white wine, cream and shallots and the same could be said for the scallops, with garlic and melted mature cheddar cheese. For mains I was hugely impressed by the Bay Horse gourmet fish pie (£15.95). Served in a large earthenware pot with a nicely charred cheesy mash topping, it was packed with jumbo prawns and chunks of flaky white fish and salmon in a creamy sauce. The seasonal selection of main course

choices included a dish you don’t see every day, Lamb Henry (£18.95). Featuring a large hunk of lamb shoulder slow-braised to a point of extreme tenderness, this old school classic was an instant hit with my companion, served with mashed potatoes and peas in a red wine sauce. Both our mains were great examples of comfort food served with a touch of class, delivered to the table by an enthusiastic front-of house team. Gary has gone out of his way to keep the local connection by recruiting local staff wherever possible. There’s an excellent wine list, several notches above what you’d expect from your average local, including some nice choices by the glass. A couple of large glasses of Salmon Run Sauvignon Blanc from New Zealand (£9.25) were a great choice. For dessert we shared a properly sticky old-school slice of Yorkshire treacle tart with a jug of pouring cream (£6.95) and a selection of Yorkshire cheeses with crackers, chutney and grapes (£7.95). It’s crazy to think that this lovely venue, the rebirth of which has been greeted with much enthusiasm by villagers, could have fallen into disrepair. It’s well worth making the detour to seek out a picture perfect village that now has a pub to match. The Bay Horse Inn Main Street, Goldsborough, HG5 8NW Tel: 01423 797777 www.bayhorseinn.co.uk

Pleased to ‘meat’ you CHOPHAUS: STYLISH STEAKHOUSE HEADING TO OAKWOOD. he leafy North Leeds suburb of Oakwood continues its transformation into one of the city’s most essential districts as it prepares for the arrival of Chophaus. Perched on the edge of Roundhay Park just behind the historic Oakwood Clock, the contemporary steakhouse and grill is shaping up to be a major player in the thriving Leeds food scene. Offering an enticing mix of premium steaks, chops and seafood, Chophaus will also offer a range of signature dishes designed to keep the city’s most discerning of foodies coming back for more. Housed in the striking wooden building formerly occupied by Café Sylva, the two-floor venue has undergone an impressive facelift created by award-winning interior designers Nanu Soda that will include a lively cocktail bar and private dining area. The mixture of deep colours, sleek finishes, brushed brass accents and vine wrapped beams has resulted in a dark and seductive interior design that perfectly sets the mood. By day, the floor to ceiling windows will help create a brighter space that takes full advantage of the natural light and park views. The talented team of chefs tasked with bringing the Chophaus menu to life have a long-list of globe-spanning credentials including the Batu Karang Resort on the island of Nusa Lembongan, Odysseia in Pacific Palace Jakarta and Aiden Byrne’s Church Green in Cheshire. The menu has been carefully crafted to include a diverse range of both small and large plates that blends beloved traditional dishes with innovative modern flourishes. Standout small plates include seared king scallops with wild mushroom ragout and winter truffle, mussels in beer broth with grilled cheese croissant and game terrine with beetroot ketchup and shallot rings. And, if the prime cuts of steak cooked over a charcoal grill don’t pique your

interest with their distinctively smoky flavour, the signature large plates will. Highlights on offer include the Texel lamb rump with shepherd’s pie, braised duck leg with smoked foie gras, and Old Spot belly pork with tiger prawns. The small yet well edited selection of seafood dishes range from whole baked Dover sole with celeriac, grapes and walnuts to wild bass with braised leaks and potato salad. Chophaus have also gone all out on their Sunday menu, with traditional beef, chicken and pork roasts complemented with a range of sumptuous starters and sides, including rarebit profiteroles. The divine dessert menu is also full of temptation and includes the showstopping Black Forest cheesecake with cherries and tuille and the palatecleansing citrus tart with fennel and basil salad. The upmarket downstairs bar is also destined to become a destination in its own right, with flawlessly made cocktails spanning stone-cold classics to more unfamiliar and exotic concoctions. The Rosemary Paloma blends Patron Silver tequila shaken with fresh lime and grapefruit juice, and is finished with a sweet, homemade rosemary syrup. Life’s a Peach is a balanced mix of Woodford Reserve bourbon, Briotett peach liqueur,

cinnamon syrup, Angostura and peach bitters. A trio of Chophaus Espresso Martinis will make for the perfect post-meal pick me up and include crème brulee or honeycomb syrup mixed with Belvedere vodka, Kahlua and fresh pulled espresso. A classic version will also be available for traditionalists. General manager Matt Kerrywood, previously of Iberica, Rare and Malmaison, had this to say ahead of the opening: “Oakwood is one of the most vibrant suburbs in the city and we couldn’t think of a better place to make Chophaus a reality. The area has really come into its own in recent years, with some of the city’s best bars and independents thriving of late. We’re confident that our restaurant will be a go-to destination for both locals and those from wider Leeds and beyond looking for exceptional steak in a lively, modern venue.’’ The restaurant opens on 11 December and bookings are now being taken – they can’t wait to ‘meat’ you! IT’S CHRISTMAS! DEBORAH DE VITTORIS IS FEELING FESTIVE. FIND OUT WHAT SHE’S BEEN UP TO…

hristmas has well and truly arrived in Leeds, taking the festive spirit to a whole new level for 2019; the decorations across the city are to-die-for, but my favourite décor has to be at the Victoria Quarter. From the ornate and intricate decorations, to the twinkling reindeer horns at the foot of their giant Christmas tree, it’s the perfect backdrop for those all-important ‘instagrammable moments’. Another festive staple for me is the German Market, which never fails to put me in that Christmas mood; forget about the steins this year it’s all about the crepes and churros for me! Team PGHL will be back at Millennium Square in January, as I have foolishly agreed to a team building day at the Ice Rink, it’s been a long time since I’ve been on ice skates so wish me luck. Anyone that knows me will tell you I’m obsessed with dogs, and so the Christmas Doggie Disco at Revolucion de Cuba is another must for my festive social calendar. I’ll be taking all four of my pampered pooches along on 1 December donned in the festive outfits for an afternoon for disco beats and free doggy treats. Other than dogs, my other two favourite things are handbags and gin, and last month I was lucky enough to get a double dose of both. If like me, you’re a bit of a shopaholic, then you’ll love the new Mulberry store in the Victoria Quarter. Bigger, better and more luxurious than their last, the new venue is two-floors of interior design heaven and of course, filled with exceptional accessories that would make the perfect Christmas gift.

Hedonist Bar, it’s the city’s first gin school and distillery and offers a brilliant gin masterclass. As well as learning about the history of the iconic tipple, you get to mix up some botanicals and make your very own brand of premium gin to take home. It’s a great place to go for an alternative night out or team building exercise, and they also sell gift tokens which make for a great Christmas present.

A sprinkle of PGHL magic The Victoria Quarter is trimmed up a treat

Team PGHL were lucky enough to stage the official launch party inviting Leeds’ finest to experience the new store while enjoying canapes from The Ivy, cocktails courtesy of Slingsby Gin and entertainment from a jaw-dropping gospel choir. Here’s hoping Santa leaves me a Mulberry handbag under the tree come the 25th… Calling all gin lovers and drink connoisseurs, a visit to the Liquor Studio on Lower Briggate is a must! Brought to you by the talented team behind the

November was a super busy month for private events and those that spring to mind were two incredible 40th birthday parties that we hosted in the Dakota’s Salon Prive Bar. The stunning venue, along with the Dakota team and a sprinkle of PGHL ‘magic’, including a mirror man, balloon wall, sax and DJ, meant the ladies had ‘the best parties ever’! Another hidden talent in our team is the creative arm of the business, and you can see this for yourselves with the eyepopping Instagram wall we’ve designed and installed for First Direct Arena. Go check it out for a selfie on your next gig night.

Private parties at The Dakota

Finally, to celebrate all the work we’ve done this year, team PGHL are going to let of steam with a rewind back to the days of garage for our team Christmas outing. Held at Oracle on 14 December, Spoony’s House will see the garage maestro whip up a festive storm as he promotes his latest album. This will be closely followed by the annual PGHL Christmas party, which gives us a chance to celebrate with our clients and friends. Taking place at Harvey Nichols on 18 December, we plan to end our busy year of events with the parties of all parties! Whatever you are doing, I hope you have a great Christmas and New Year and I’ll see you in the next decade! DDV x Northside | www.northsidemagazine.co.uk 81

Bring the outside in

Warm up your walls

Winter is not a time to be spending excessive amounts of time outdoors but that doesn’t mean we can’t bring a touch of nature indoors at a time when the thought of going outside seems unbearable. Crafted from chunky round rattan for a rustic finish, this simple curved log holder is the perfect fireside storage solution. Each features a generous capacity for storing logs, with two sturdy feet and a handle to either side for ease of carrying. Round rattan log basket by Cox & Cox £45 www.coxandcox.co.uk

It might not seem like the most obvious place to start, but a fresh lick of paint in the right colour will help to make your home feel a lot warmer. So, swap cold white walls for dark, deep colours that will transform any space. Traditionally, colours such as red and orange were used to bring warmth to an interior, but rich shades of navy blue, emerald green and dark grey are just as sumptuous. GARDENING

TEN THINGS TO TACKLE IN YOUR GARDEN THIS DECEMBER/JANUARY: BY NIGEL EATON, HEAD OF RHS GARDEN HARLOW CARR SHOP & PLANT CENTRE. Roses, shrubs and fruit can be planted in mild weather; make sure you spread the roots and carefully back fill with soil and compost with an addition of Rootgrow to get the roots established. Don’t be tempted to prune back ornamental grasses as these are often havens for overwintering beneficial insects. Keep an area of your pond ice free to allow any build up a gas from decaying vegetation to escape and allow oxygen exchange for the wild life. Feed the birds and keep birdbaths defrosted. Feed with a high fat content feed such as peanuts, sunflower hearts or fatcakes. Wisteria side-shoots can be cut back in January to encourage more flowers in the spring, cut back to about 4 from the main stems. Shred your Christmas tree at participating council sites which they will then use for mulching beds in parks and gardens. Go to your local council website for details.

84 Northside | www.northsidemagazine.co.uk

If you have a pot grown Christmas tree try and acclimatise it gently to going back outside by putting it back out on a mild day if possible – taking it from a warm house to below zero conditions in one step will not help it survive until next Christmas! Keep a close eye on emerging shoots and if a real cold snap is forecast have some good mulch available to cover tender shoots.

January is also the time to hard prune late flowering clematis such as the Viticella varieties. These can be pruned to about 12 from the ground to encourage strong shoots in March. In the shed get all your tools cleaned, disinfected and sharpened for the coming season. Remember if pruning out old or diseased stems on dormant plants through the winter make sure you disinfect the blades of your secateurs after each plant to stop cross contamination. Make a plan for the next couple of months of all the jobs you need to do so that you can adjust your tasks according to the prevailing weather conditions. Wet weather jobs in the shed still need doing however tempting an afternoon on the sofa with a cup of coffee is!
