We might be biased but a more delightful setting to sit back, relax and watch the world go by, we think would be hard to find anywhere else in the world! Fiskardo is not only a place to relax but is also bursting with things to see and do. In the back streets of the village one can find an array of delightful gift and craft shops around every corner. It is a pleasure to stroll around as and explore the 18th century buildings which line both sides. The harbour walk is a must and if you follow the headland around you will eventually come to the small but pretty Zavelata Beach. For those interested in history and architecture, there are a couple of old buildings to discover too. Follow the steps from the harbour up to the Panagia of Platiteras Church and Monastery where you find a wonderful area left untouched by the 1953 earthquake. Another trip well worth making is the walk to the Lighthouse of Cape Fiskardo. This imposing old lighthouse was built in 1892 and stands proudly on a sliver of land that juts out into the sea. Lastly, check out the harbour museum that has a fascinating display depicting how the village has changed over the last few years.

If you want to head out and about there are some stunning spots near to Fiskardo as the west coast of Kefalonia is well known for having the most impressive beaches and diverse landscape. Heading south you come to the pretty sleepy fishing village of Assos with its row upon row of pastel painted Venetian houses and picturesque port. It is also home to a stunning Venetian fortress located on the hillside protecting the bay, (well worth the walk). Further along this coast road you come to the world famous Myrtos beach, probably in our opinion the most spectacular beach in all of Greece, and rightly so, as Myrtos is consistently voted into the top ten best beaches in the world. Thanks to its white sand, turquoise sea and surrounding tall cliffs, which on first sight, can truly take your breath away! If you are longing to take to the sea during your stay, there is no better place than Fiskardo to hire your own motor boat to visit coves which are only accessible from the water or even navigate over to Ithaka, an adventure in itself. Imagine having your own beach for the day, pack a picnic and enjoy lunch on your very own piece of a Greek island. Remember to book early, especially in July and August as these motor boats are in high demand from all

the islands visitors. If you prefer an organised tour, then there are prearranged trips to take you out and about on the water to some of the many hidden coves and a chance to see the island’s marine life including the protected Monk Seals. Work with an architect and builder who are used to doing that type of development work. Make sure the property plans show all the right boundaries and ownership and rights of way and alike are all fully understood. Make sure the infrastructure can be delivered to the site if not already in situ. Prepare for a lengthy project – costing more than you had expected, if you want a superb job at the end of it all. But don’t skimp towards the final stages and spoil all the hard work that’s been done. What projects are you working on at the moment? Seaview Cottage

Happy co-incidence. Our builder lived next door, so logistically it seemed the ideal development for us – mainly because of the stunning views out over Staithes and across the Yorkshire coast. The cottage had previously been occupied, albeit untouched for some 40 years, and the Forge was an open vacant space full of old tools and materials. Effectively, it was a blank canvas, so we could completely start from scratch, creating two characterful and modern

A dream come true LINZI HATELEY TAKES THE ROLE OF MRS JOHNSON IN THE UPCOMING TOURING BLOOD BROTHERS MUSICAL AT LEEDS’ GRAND THEATRE AND OPERA HOUSE. t was the role she’d always secretly dreamed of playing. The matriarch in a captivating and moving story of twin boys separated at birth, only to be reunited by a twist of fate. For Linzi Hateley, that dream has now come true as she takes the role of Mrs Johnstone in the touring production of Blood Brothers, which arrives at The Grand Theatre and Opera House in Leeds on 7 May. Presented by Bill Kenwright and written by Willy Russell, this epic tale of Liverpool life, which started as a play performed at a Liverpool comprehensive school in 1981, has since gone on to win four awards for best musical in London as well as seven Tony Award nominations on Broadway. Linzi has performed in countless West End productions, the most recent of which being the role of Donna in Mamma Mia. She can also add Joseph and the Amazing Technicolour Dreamcoat, Les Miserables, Chicago, Grease and Mary Poppins to her credits. We caught up with the thrilled actress to find out more.

I

Mrs Johnstone is one of the all-time great theatre roles. Have you been longing to play her?

Absolutely. It’s a show people know and love and I’ve seen it a few times myself, and it’s one of those parts where you hope at some point you might fit the bill. It’s been a secret dream to get the opportunity to play her and now I am. How do you hope to make the role your own?

It’s going to be an interesting process and I hope I can bring something of myself to it. I’m a mother myself and I’m working class. When you have natural connections to a part then hopefully you can bring a lot of yourself to it because that way it can be as truthful as it can possibly be.

What do you feel makes her such a coveted character?

Did it move you to tears as it does everyone else?

There are more these days than there used to be but there still are very few iconic female parts in musical theatre, where you think ‘I’d love to have a go at that at some point’. It’s got everything. It’s comedic, it’s incredibly tragic, she’s strong but she’s vulnerable – it has it all in one big package and it’s written so brilliantly by Willy Russell. In a way, with a lot of his writing, it’s almost shocking that it’s written by a man because he has such an understanding of things from a female perspective. To get that sort of writing, particularly in a musical, is a very rare thing.

Yes it did. It just has that effect on people, doesn’t it? Even though you watch it from the beginning knowing what the end is it still gets to you. It doesn’t make any difference. You’re just on this rollercoaster and [laughs] it just kills you. It’s going to be hard to play. I’m hoping I can get across what I need to and still be able to do it. In the song Easy Terms when she’s about to give one of her babies away I just hope I can get through it because, being a mum, I can’t begin to imagine having to give a child away.

Why do you feel the show continues to enthrall and move audiences 35 years after it premiered?

Blood Brothers is only your second big tour in a musical, isn’t it?

It is without doubt the best British musical there has ever been. It appeals to everybody. I’ve had that question asked of me many times when I’ve been in musicals that are so successful and I think the most successful ones tend to be the ones that appeal to an absolute wide range of people who can all relate to it in some way or another. It’s also nice when you have a musical that’s sort of more of a play than an actual musical. Sometimes the women might have to drag the men along but with Blood Brothers I think the men come out loving it just as much. It’s just a very collectively satisfying night. Can you recall when you first saw it?

I think the first time I saw it was the production starring Stephanie Lawrence, which I think was when it came back to London. Funnily enough years later I worked with Joanna Monro, who played the other mother in it. I worked with her in Mamma Mia! so it was nice to be able to chat to her about it because the production she was in was such a great one.

It is yes. I toured with Barnum a couple of years back with Brian Conley, which started in Chichester and then went on tour. I was very nervous about touring because my daughter was doing her GCSEs so it wasn’t the most ideal time to be trekking off but she was able to tour with me for half of it once she’d finished her exams. I’ve always been fortunate that I’ve been able to stay at home a lot whilst working in the West End but I have to say [laughs] I couldn’t get over how much nicer the audiences were. It’s interesting because you can’t have both – you can’t be at home but have those warm audiences you get on tour. They’re so thrilled that you’ve come to them. A lot of the time I’m performing for tourists in London so it was nice to play your own country, so to speak. That’s one of the things I’m most looking forward to about Blood Brothers, apart from having a crack at the part of course. Blood Brothers is at The Grand Theatre and Opera House in Leeds 7-18 May. GUEST OF HONOUR AT A RECENT HARROGATE CHARITY EVENT WAS YORKSHIRE TRANS-ATLANTIC ROWER, FRANCES DAVIES. he Friends of Alfie Martin held a ladies lunch at The Old Swan Hotel, Harrogate. The 140 guests were invited to a drinks reception at noon followed by a delicious twocourse lunch and the afternoon included a talk provided by guest speaker Frances Davies of the famous Yorkshire Rows. Yorkshire Rows is a team of four formidable working mums – Frances Davies, Helen Butters, Janette Benaddi and Niki Doeg – who dared to dream. They are the first women to row across the North Sea and holders of a Guinness World Record for rowing 3,000 nautical miles across the Atlantic Ocean during the world’s toughest rowing race. Frances is a mother to two teenage sons, Jay and Jack, and wife to Mark. Growing up in the countryside of

Yorkshire from an early age she developed a love of the great outdoors. This led to regularly competing in athletics and cross country events at school and university and as an adult her fresh air activities have widened considerably. She has climbed Mount Meru in Tanzania, walked into the Annapurna Sanctuary in Nepal and closer to home run the London Marathon twice. She has also walked both the Yorkshire and National Three Peaks, completed the 108-mile Scottish Coast to Coast race and regularly enters running, cycling and open water swimming events across the country. Professionally, she is a private client lawyer and has been for the last 22 years. There was a fantastic raffle with a

variety of exciting prizes with all proceeds raised going directly to the charity which buys life-saving equipment for neo-natal care in Yorkshire. Having started their life as tiny plugs, the Arium’s enormous glasshouse ensures they grow into some of the best quality plants in the area; many of which are also for sale in the shop. So with the weather turning warmer, visit the Arium to choose your bedding plants – they’ll lift your garden and add highlights of vivid colour that will flower until the late summer frosts arrive. Some of the popular varieties you’ll find include geraniums, begonias, petunias, lobelia and ‘Trixi’ plants which provide an already mixed combination. Against The Odds shares the accurate and dramatic events that the Bomber Command strike force had to endure during the Second World War. The 75th anniversary of the D Day landings is being celebrated in style, and this is a family event not to be missed. Lines of beauty IN SEARCH OF PERFECT BROWS, AMANDA ROY PAID BEAUTY EXPERT KAREN BETTS A VISIT – AND WAS BLOWN AWAY BY THE RESULTS. BY RHIANA HUGHES. n the March issue of Northside magazine, we ran a story on award-winning permanent makeup artist Karen Betts. Karen has been a real pioneer in the beauty industry, with women all over the country desperate not to get their hands on her, but to be afforded the opportunity for Karen to get her hands on their brows. MD of revolutionary British beauty brands HD Brows, K.B Pro and Karen Betts Professional, as well as director and co-founder of Nouveau Lashes, there’s no doubt that Karen is well-established in her field. Having seen the incredible work that Karen and her team of highly-trained staff have done on others, Northside’s publishing director Amanda Roy decided to give Karen’s services a try, booking herself a microblading appointment. If you saw our March issue, you’ll know that microblading is a form of cosmetic tattooing, but rather than a traditional cosmetic tattoo machine, a manual handheld tool containing tiny needles is used to complete the procedure. Mimicking natural brow hairs, microblading gives the appearance of perfectly natural brows that look beautifully groomed and defined, without the need for brow pencils or pomades every morning, saving precious time, money and effort – a huge selling point for Amanda, who couldn’t wait to start skipping the laborious step of her makeup routine in the mornings. On the run up to her appointment, Amanda could barely contain her excitement, letting us all go green with envy at the fact our brows would now pale in comparison to hers. Knowing she’d be in safe hands with the team at Karen Betts’ South Elmsall HQ, Amanda headed off to her appointment, and the smile on her face upon her return was noted by everyone in the Northside office, even before we’d noticed her stunning new brows!

“They’re amazing, aren’t they?!” Amanda exclaimed, to which of course we all cooed in agreement. It was clear by the way Amanda’s face lit up that she was more than pleased with her new look (and about the extra ten minutes of sleep she’d get in the morning). Though happy that Amanda loved her new brows as much as she’d expected to, that deadly old sin jealousy reared its ugly head once again when she told us that it was Karen herself who’d performed the procedure, with Amanda now joining a long list of beauty moguls who’ve been clients of Karen, including Lisa Eldridge and Katie Piper. At this point, there wasn’t a woman in the office who wasn’t tempted to splash

out on the treatment herself, and Amanda found herself flooded with questions on how her appointment went from start to finish. Lucky for you, you don’t have to listen to ten women asking Amanda the same question 15 different ways, as once we’d all calmed down, I had a chat with her, as well as catching up with Karen to find out just what a microblading treatment really looks like, and what we can all expect should we book ourselves in for an appointment. The main question we all had for Amanda was whether or not the procedure hurt, to which she replied, “No, not at all. Karen put on lots of numbing cream to make sure I wouldn’t

feel any pain, and she made sure it was doing its thing while we had a chat about what I wanted my brows to look like.” All of Karen’s treatments start with a consultation with her client. “The consultation is so important, it allows me to not only understand what my client is looking to achieve, but it allows me to study their face as they talk to see how their features move and get a good look at their facial structure,” says Karen. “Eyebrows are so important when it comes to expressing our emotions as well as framing our features. I also think it’s important to let my clients get to know me a bit during this time, I want them to trust me and to be honest I’ve always thought a good relaxed chat helps put people at ease when they’re nervous.” Nerves can be a big thing for many of Karen’s clients, but Amanda assured us that she immediately felt safe and at ease in Karen’s hands. “I knew that she knew what she was doing. I’ve seen how good her work looks on other people and more than anything I was excited to get it done,” said Amanda. “Once my brows went numb, Karen drew on the brow shape freehand, which

took around 10-15 minutes, then she made sure I was happy with the shape before she moved on to adding all the pigment.” How did she know so quickly what shade to use for the pigment? Karen has developed her own pigment range and microblading tool under her K.B Pro brand, and pigment selection is now second nature to her. She chooses the pigments based on the clients hair colour, skin tone and desired result and gets straight to work. The microblading itself took around 45 minutes to an hour, during which

time Amanda says all she could feel was “a faint scratching sensation at the beginning, but then nothing.” Karen is all about natural brows, believing that permanent makeup is “really about enhancing your natural beauty, not masking it.” Throughout the treatment Karen used various cartridges on her K.B Pro Glider (microblading tool), each one with various arrangements of ultra-fine pins, and each pin-arrangement creating a slightly different ‘hairstroke’. “Once she was finished, Karen checked that I was happy with everything and went over all the aftercare. I have to go back in a couple of weeks for a retouch appointment so she can have a look at how my brows have healed and see whether or not they need any more pigment in certain areas, or if any adjustments are needed,” says Amanda. “I knew I’d love my brows, but I didn’t know it would be this quick, easy and painless. Question: I have read there are now less invasive treatments for benign prostate problems. Would I be suitable for either Urolift or Rezum therapy? Answer:

Men with enlarged prostates (the medical term is BPH), which may cause difficulties with passing urine often suffer with other typical symptoms which may be extremely bothersome. Traditionally surgical treatments would involve removing prostate tissue. After surgery, men usually experience a rapid

improvement in urinary flow but recovery from surgery may be prolonged and side effects such as incontinence, scarring and sexual problems may occur in some men. Recently, minimally invasive treatments have shown benefit in improving symptoms alongside a quicker recovery, faster operating times and reduced issues with potential surgical complications. Currently, two new treatments have shown proven results in helping men suffering from BPH. Urolift involves the insertion of tiny implants (like miniature treasury tags) which help to hold the prostate tissue out of the way, helping to improve the flow through the water pipe. Alternatively, Rezum uses heated water vapour (steam), which gently causes cell damage within the prostate tissue. Over time, the body will then naturally re-absorb the treated tissue as part of the healing response. The risks of these treatments are much less than standard conventional treatments, however, it is best to talk to your urologist who performs these procedures as to your suitability and discuss all options available. Both treatments can be performed as a day case admission to hospital. You will need to be fully assessed with regards to the size of the prostate, how bothersome the symptoms are and exclude any other factors which might be causing your problem to urinate.

‘Excellent’ grading

Marking the launch of its new film club, Skipton’s Alexander’s Bar and Kitchen will host two trail-blazer film screening events for Hinterlands, the new annual festival celebrating rural film and the countryside, which launches in Skipton this May. Ahead of the official Hinterlands launch on 16 May at Skipton Castle, the Art Deco inspired all day dining venue will screen two award-winning films by the London and Skipton based Tempo Productions; the feature length documentary, Teddy Pendergrass: If You Don’t Know Me and family feel-good film, Oyster Farmer. Owner of Alexander’s, Susannah Daley said: “We are thrilled to be part of the inaugural Hinterlands Film Festival which is an exciting new cultural event for the area. Celebrations are underway at Queen Ethelburga’s Collegiate (QE) after the Independent Schools Inspectorate (ISI) awarded the Collegiate the top grading of ‘Excellent’ across all schools and areas, praising the pupils’ outstanding academic achievements and personal development. QE’s Early Years Foundation Stage provision in Chapter House, was also assessed as ‘Outstanding’ in all areas. The glowing ISI reports follow a three-day inspection in February this year, with inspectors observing every aspect of school life at QE through attended lessons, assemblies and extra-curricular activities. They held discussions with pupils, parents and staff across the school, in addition to examining samples of pupils’ work. Inspectors also visited boarding houses and the wider facilities, together with learning support and educational resource areas. Solicitor joins committee An Irwin Mitchell family law solicitor has been appointed to the prestigious Law Society’s LGBT+ national committee. Scott Halliday, based in the leading national law firm’s Leeds office, formally joins the committee this week after being selected from several contenders for one of five places on the prestigious board. The committee governs the Law Society’s LGBT+ Lawyers Division which is committed to providing LGBT+ solicitors a community and a voice within the legal profession. The division provides specialist events and training on LGBT+ matters, ad-hoc peer support and campaigns on behalf of LGBT+ solicitors. The national committee is currently headed by Katrina Robinson MBE, whom Scott will work closely with during his four-year term. Scott’s presence in the LGBT+ legal community is already established in the north; he founded the Leeds LGBT Diversity group in July 2018, a professional networking group for LGBT+ professionals and allies across the Yorkshire region. Scott is also a published author and has been featured in national press for his commentary on prominent modern family issues such as the heterosexual civil partnerships case, Steinfeld & Keidan, which won in the Supreme Court in 2018. Everyone’s a winner AN OPPORTUNITY TO SAMPLE HORTO’S TASTING MENU BROUGHT OUT CHRIS WILSON’S COMPETITIVE SIDE.

f you’re feeling slightly jaded by the very idea of eating out, if you think you’ve sampled every cuisine the world has to offer, it‘s time to play The Game. This was the choice offered to my friend and I when we visited the contemporary Horto restaurant, stunningly situated within the white cube that is the Spa at Rudding Park Hotel. I’d eaten at Horto before and been impressed by chef Murray Wilson’s creative, seasonal food combinations. So the opportunity to sample a seven-course tasting menu was simply irresistible. The dishes change regularly according to what’s in season and the inspiration for this comes from the kitchen garden lovingly tended by gardener Adrian Reeve.

A cursory glance at the tasting menu was all it took to persuade us that we must try it, then we were offered the opportunity to add a little fun foodie challenge to our dining experience. We could either keep our menus, printed on a single sheet of paper with

the day’s date attached, and refer to them throughout the meal, or eat ‘blind’ and try to guess the various herbs, spices and seasonings used to flavour each dish. We’d be given the full run-down after every course. How could we resist? But first, our meal began with the breaking of bread. But this was not just any old loaf or bun, we were offered three different bakes of some of the most delicious bread I’ve ever tasted. The crispbread, dark and crunchy and packed with seeds, was addictive; the crust on the sourdough was just awesome; treacle bread was dark and delightful. Meanwhile two different types of butter – one savoury and seasoned with chicken, one sweet with honey – was another signpost that this would be a meal with a difference.

Some wiggle room is offered to cater for food allergies so my annoying inability to eat oysters did not scupper me at the first hurdle, the aptly named Oyster Explosion. My cucumber version looked identical, like a small egg intriguingly placed on a bed of small pebbles straight from the freezer. Pop it in the mouth, break the thin, crisp edible shell and allow a starburst of smooth, creamy goodness to tickle those taste buds. It was so rich I convinced myself that avocado must be involved somewhere. Wrong. This game was trickier than I thought. My friend’s shellfish version, complete with that telltale seaside tang, was easier to identify. We scored more highly as the game continued in a relaxed setting that brought to mind the minimalist chic of a high-end Scandinavian café, with bold splashes of colour on the walls and the very comfortable seating. The seafood courses on the menu also included a perfectly cooked scallop with lemon, potato and garden vegetables in a chicken stock and Cornish turbot, rich with a delicate texture, served with creamy parsnips and cockles in a sharp brine. Moving on to the carnivore section of the menu, Yorkshire beef tartare was probably my favourite dish of the night.

I’d regard this as too hardcore to order as a conventional main course but here it came into its own. The red meat was fabulously tender and the addition of a mustard/mayonnaise mix, artichokes, capers and shards of toasted sourdough made this a mini masterpiece to linger over. I’ll resist the temptation to offer a blow-by-blow account of every course, other than to say that the switch from savoury to sweet was perfectly judged as were the portion sizes. A couple of mini cep mushroom ice-creams (no, neither of us guessed that one) paved the way for puddings and the final course, a sliver of crunchy, chewy decadent treacle tart, was a suitably perfect end to a fabulous meal. You’re in good hands with the expert and friendly staff at Horto, which is why I’d recommend the wine pairings specially designed to match the tasting

menus. Four glasses, strategically delivered to match the food, were a complete success and led to some surprising matches. For example I’d probably have gone for a big-hitting red for the steak and duck courses but a much lighter South African Rose really worked. Chef ’s Menu is £69 for seven courses with a wine pairing option of £55 for seven glasses or £40 for four. All guests must choose from the same menu but it can be adapted for pescatarians, vegetarians and those with a nut allergy. So did we win The Game? It’s hard to tell. Let’s just say on this occasion, despite my competitive nature, the pleasure was most definitely in taking part. hough it feels like a lifetime ago, it was only back in 2016 that I boarded a flight to jet off to New York with two of my closest friends to celebrate finishing our degrees. After one short layover and a couple of taxi rides later, we arrived in the Big Apple, and for the next four days we did what any good travellers do – ate our way around the city. Ever since my first trip to the US, I’ve been dying to head back and explore the parts of the city (and the restaurants) I didn’t get round to visiting first time round. With it looking unlikely that I’ll be jetting off again any time soon, I

searched far and wide for the next best thing, and it seems that we’ve got our own little slice of NYC right here in Yorkshire. New Leeds restaurant Union Square looks like no others I’ve seen before. The restaurant’s exterior has been designed to mimic that of a real NYC subway station, while neon signs reading ‘New York Food & Drink’ light up the windows. Walking in, it really did feel as though we were headed into a New York subway station. If subway stations were bright, clean and filled with the smell of freshly cooked food, that is.

Union Square’s menu is full of tempting burgers, pizzas and craft pizza wraps, and it didn’t take long for my partner and I to make our decisions and place our orders at the restaurant’s bar. It’s unusual that we find ourselves in the mood for the same type of food, with our tastes being poles apart, but this time, neither of us could resist trying items from Union Square’s burger menu. These weren’t just any old burgers, though. They were truly like none we’d seen or eaten before. My partner ordered The Pizza Burger (£8.50) with a side of fries (£1 supplement), while it was The Original Yorkshire Burger (£9.50) that

“I could go on and on about what the gravy added to the meal, but instead I’ll say just this – is there anything out there that gravy can’t make that bit better?” caught my eye, and I couldn’t resist adding some sweet potato fries to my order (£1.50 supplement). The Pizza Burger, made up of a beef patty, pepperoni, cheese, pizza sauce, lettuce, tomato and a gherkin, was the perfect solution for my other half, who initially couldn’t choose between a pizza or a burger, so was thrilled to find something that combined the two. The tangy marinara sauce was thick enough so as not to seep through the soft brioche bun, and gave the burger something we never knew was missing,

but now will feel lost without. My burger too was something I’d never tried before, nor had I ever even imagined its existence. The Original Yorkshire Burger consisted of a beef patty, Yorkshire bacon, Yorkshire blue cheese, lettuce, tomato and a gherkin, encased in Yorkshire puddings with a pot of gravy on the side. Now I know Union Square is quite clearly an American themed restaurant, and my journey there in the first place was based on my longing to head back to the states, but how could I resist giving their take on Yorkshire’s finest attributes a try? The Yorkshire puddings were crispy on the outside and light and fluffy on the inside, as any good Yorkshire pud should be. Holding the rest of the burger

together nicely, it was a welcome change from the overly stodgy buns I’ve been served in the past. I could go on and on about what the gravy added to the meal, but instead I’ll say just this – is there anything out there that gravy can’t make that bit better? All about the game MATT CORNISH FINALLY MADE IT TO THE CLARENDON HOTEL – WAS IT WORTH THE WAIT? he Clarendon Hotel has been on my wishlist for a while – friends have reliably informed me it has a particular reputation for locally shot game. Set on the edge of the small village of Hebden, just past Grassington, it’s built from traditional Dales stone with the facia covered in mature ivy which adds to the character. It was larger than I expected but still has an authentic, rural pub feel to it – indeed the bar area was in use by a couple of locals just enjoying a quiet pint. And it has an excellent range of drinks, including real ales, an extensive wine list, gins and (always a good sign), a proper range of decent single malts. The Clarendon was taken over in

2015 by Lionel Strubb, and his amiable warm welcome as we walked in immediately set a laid-back tone. Despite being a weeknight, the restaurant was busy but it didn’t feel overcrowded. The menu itself is well ordered with options to suit a range of purses – from pub classics such as cod and chips and sausage and mash, right through to more creative, fine-dining fare. It was also pleasing to see a proper choice for vegetarians, with a selection of interesting and creative dishes. There was an impressive choice of game with rabbit, pheasant, partridge, wood pigeon and venison – all locally sourced, including from the Grimwith Estate and Hebden Ghyll shoot.

Other dishes featuring locally caught trout, Dales lamb and mutton, and cheese from the Courtyard Dairy in Settle (one of my favourite shops in the Dales). In the end I opted for wood pigeon. Two beautifully presented breasts with just the right reddish pink centre were arranged alongside a perfectly crisped sliver of bacon with a single chestnut and fig tortellini. It was cooked expertly – soft, succulent and textured, with that delicate but earthy woodland taste. The tortellini felt light and the soft chestnut worked well to temper the sweetness of the fig. My partner opted for the Yelliston Farm Goat’s Cheese with beetroot panna cotta and horseradish espuma. The light

taste of the cheese contrasted well with the stronger notes of the horseradish foam and subtle tang of the beetroot. For her main, she opted for the butternut squash gnocchi with spinach and chestnuts. The creamy sauce, featuring some delicately shaved parmesan, provided a wonderfully deep combination of tastes, with the different vegetables, including asparagus, providing subtle differences to each mouthful. But my personal highlight of the meal was the Yorkshire Dales venison. It was presented with a hearty braised leg in the middle, three chunks of panfried loin and surrounded by endive and orange marmalade, tiny glazed carrots and smears of carrot puree. The leg was slow cooked to perfection

– falling apart easily in soft, tender pieces. I’d have been perfectly satisfied with it on its own, but the chunks of loin really were something else. Again, beautifully cooked with a reddish-pink middle, but I wasn’t prepared for the sheer depth of flavour and joyous texture. The whole dish was just incredible. For dessert, I’ve always been a fan of a proper, hearty crumble, so opted for the blackberry and thyme crumble with Crème Anglais. It had that great combination of sharp fruit, light custard and of course the soft crumble top. My partner’s cheese board (featuring five excellent cheeses chosen from a separate menu), was accompanied by fruit, biscuits and chutney on a board so

Andy Collop Macleod’s at The Coniston Hotel Country Estate & Spa Macleod’s new head chef Andy Collop may have only joined the team at the end of March, but he’s already made his mark on the North Yorkshire restaurant. “I would describe the food that we serve in Macleod’s as ‘modern British’,” says Andy. “We have a firm focus on using high-quality local ingredients, of which we have in abundance being located on the edge of the Yorkshire Dales. “The hotel is based on a 1,400-acre estate which means that when the seasons allow, we use produce that is foraged or farmed right here on our doorstep. Recently, we’ve been foraging wild garlic that grows in the woods near the lake.” Andy has always loved the fast-paced environment of the kitchen, and says that he has “always thrived under pressure”. “The feeling you get after a service when all the planning and prepping comes together is really special. Ban Kaewkraikhot Sukhothai “Before I opened my first restaurant, I had noticed that there were not many Thai restaurants in Yorkshire,” says Sukhothai head chef and owner Ban Kaewkraikhot. “I was born and raised in Sukhothai, Thailand, and the fact that I was given the opportunity to offer my hometown’s recipes here in Yorkshire is so rewarding. “I grew up cooking with an abundance of ingredients like birds eye chili, lemongrass, Thai basil and fish sauce, which I use now to create many of our dishes.” Sukhothai relaunched their a la carte menu last year, and have recently introduced a Chef Specials menu. As well as allowing diners the opportunity to try a wider range of dishes, their menus ensure that no matter what people’s dietary requirements, there’s something on the menu for them. “People choosing vegetarian or vegan diets are expanding in the UK and will continue to do so. Daniel Parry The Inn at South Stainley “I have always had the attitude of ‘you can put your mind and hand to anything’, and that reflects in my cooking,” says Daniel Parry. “I don’t see myself as having a particular style or dish as I like to try cooking as many different styles of food as possible. “I really enjoy the different, interesting fresh seafood that is delivered daily, which we showcase in our weekly changing specials. Lee Murdoch Three’s a Crowd “Simplicity and freedom” are the two main things that get Three’s a Crowd executive chef Lee Murdoch excited about stepping into the kitchen each day. “We are passionate about using the best products available and letting them shine. Our food is curated to offer great flavours without being fussy and complicated,” says Lee. Working at Three’s a Crowd, Lee has the opportunity to work with the freshest products from around the world, even some that many don’t expect them to have access to. “There is a misconception that because we are landlocked we cannot get great fish. Some of the best shellfish and fish comes from the Scottish Isles and it’s only up the road.” Lee tells us there’s plenty going on at Three’s a Crowd in the coming months; “We are opening our first floor private dining room in May, and we will be hosting wine dinners monthly with our first one being Pol Roger.” They’ll be hosting beer and independent food festivals too, so keep an eye out for updates!

Matt Powell Bistro du Vin Growing up with a greengrocer father, Matt Powell of Hotel du Vin’s bistro restaurant always had an interest in food and cooking. His passion has grown over time, and now he can’t imagine wearing anything but his chef whites to work each day. “Bistro du Vin is the perfect fit for me, as French bistro food is my real passion. Cassoulets, Bourguignon, escargot, steak tartare… the list goes on!” Matt’s favourite thing to cook is seafood, “especially crab,” he tells us. “We will be launching a dish this summer called Hot Shells, which will have roasted crab and lobster. Perfect for dining al fresco in our courtyard. “We are always evolving our menus with the seasons to get the best out of our ingredients. Paul Warner Clocktower at Rudding Park Serving diners modern British food from Rudding Park’s 2AA rosette Clocktower restaurant and bar, chef Paul Warner is clearly passionate about his craft. “We are spoilt at Rudding Park as the Kitchen Garden supplies over 500 different herbs, salads, vegetables, edible flowers and fruits with quality heritage varieties usually hard to get hold of, so it’s a great chance to experiment. “We have just introduced a range of six new ‘Clocktower bowls’ packed full of flavour and perfect for this time of year. From the ‘Crayfish Bowl’ with mango, chilli, coriander, puffed wild rice and mixed baby leaf to the ‘Salt Beef Bowl’ with comte cheese, balsamic onions, gherkins, pickle and sour cream, there’s something to suit everyone. “The bowls are perfect accompanied with a refreshing glass of wine when dining alfresco on the south-facing terrace at Clocktower. Tom Maine Black Bull Moulton The Black Bull Inn Moulton chef Tom Maine remains just as excited to work at the popular restaurant as he did the day he started. “The constant evolution of it all, the new trends, new flavours, new techniques, new textures. And I’m allowed to eat it all, in fact the way I was taught – it’s compulsory.” Tom tells us that his favourite ingredient to cook with is pork, with his ‘pork shirt and tie’ dish featuring on the restaurant’s new menu. “It’s the most versatile meat by a long way, it has a beautiful fat content in the belly, and a fantastically lean produce in the tenderloin, all the way to the crispy ears and melt-in-the-mouth cheeks.” Although a big fan of traditional flavours, Tom is looking forward to things to come, seeing rum replacing gin, small plates getting bigger but leaving chorizo behind, and Japanese influences and American style steakhouses taking over. Shaun Rankin Shaun Rankin at Grantley Hall “I’ve been designing the concepts, sourcing and procuring items such as the plates and glassware. It’s been quite a big journey,” says Shaun Rankin of his new restaurant, Shaun Rankin at Grantley Hall. “The ambition is to try and source producers within a 20-mile radius in the next two to three years. We have a kitchen garden, fruit trees and beehives and we’ve reached out to local growers and farmers. All the flour is locally sourced and the meat is from R&J Butcher’s farm.” Shaun Rankin at Grantley Hall will feature 38 covers and a chef ’s table for up to six guests. “I’m back to running a restaurant and it’s me that will be cooking there and being there with guests and the team. We’re working on two menus at the minute; tasting menus and one with a nod to nostalgia, a taste of home – about my time growing up in Yorkshire but done very quirky. “I’m taking inspiration from my past.
