The Guanacaste region of Costa Rica is hot and dry, perfect for planning your holiday getaway during the cold, months of winter. TRAVEL Anguilla is a hidden gem in the northern Caribbean near Saint Martin, where the pace is slow and the living is easy. The secluded island is surrounded with crystal clear water and some of the most gorgeous white sand beaches in the world. Visit Scilly Cay, a small coral based island, in Island Harbour. As the sun sets, take a walk along Sandy Ground beach, before heading over to the Pumphouse, where you can dance the night away. Another popular spot for nightlife is Johnno’s, an open-air bar that is busy with hungry lunch goers during the day and bursting with large crowds of partiers at night. The self-appointed birthplace of rum, Barbados is a beautiful island in the Caribbean, near Venezuela, popular for long stretches of sandy beaches, worldclass water sports and Harrison’s Cave; an underground dwelling with minerals and waterfalls. Bridgetown is the island’s capital, it’s only, city. Take advantage of duty-free shopping and a stroll down to the water, to see one of the many cruise ships who use the area as a port of call. The Crane has been serving guests since 1887. The dazzling waters of Crane Beach, a truly beautiful stretch of land, surround the luxurious resort. llyson Steedman was tired. While she loved the idea of her job, after ten years of grinding out corporate

events, she decided to take a step back and evaluate her career and how it related to her overall happiness. For a while she forayed into retail, opening up her own pet boutique, and while she discovered that this wasn’t an exact fit for her, she did discover that she loved being her own boss. And that she really missed event planning. Even as she briefly stepped away from the industry, she continued to do events as personal favours for friends and family. Allyson became determined to have the freedom to do things her way and her passion was re-ignited – she would be her own boss and have the ability to treat each event as if it were for her own friends and family. Allyson launched Trix and Trumpet, an Event Styling and Consulting firm in 2012. Her concept was simple and it was a niche left wide open in the market place. “My concept”, says Allyson, “Is not to necessarily do things from beginning to end, but to help people get started, provide help where they need it and to fill in the holes. Or I can simply provide you with the information and you decide what to do with it. Events are supposed to be fun - to celebrate, be with friends and family. At the end, during crunch time, it’s not fun anymore for a lot of people. They need a helping hand. It’s still your event, it’s still your party, but now you have that helping hand”. It was with this playful thought that Allyson came up with the name of her company;. “I’m giving people the tricks of the trade so they can get their accolades – the trumpet”!

LEISURE In an era where planning events such as weddings, showers and anniversaries can be extremely expensive and stressful, the concept of Trix and Trumpet is genius. Not everyone can afford to have an event planner from beginning to end, but most of us, especially if we’re already spending a large amount of money as it is, would love to be able to outsource some of the tasks that are just too monumental or too stressful. Allyson, through her website ww.trixandtrumpet.com, does a lot of her consulting and coordinating virtually. “I wanted to do something that was meaningful to me”, says Allyson. “Virtual event planning makes it so much easier to connect with people. I can assist people in other cities and countries using my various connections. I can get access to information without actually having to be there .The information that is provided online now is often just as good as walking into a space. It helps people accomplish things so much quicker.” Trix and Trumpet has expanded its business model to focus on three different areas of event planning. First, they do consultation about design, budgeting, venue sourcing and logistics. Second, they can offer event styling. “Everyone should have a great party design, but you might not know what you have in your home that can work”, says Allyson. “But I do.”

Serves 4

1 ripe pineapple, peeled, cored, and cut into 1-inch chunks

6 ounces BaconInfused Bourbon, divided

2 teaspoons pure vanilla extract

2 dashes Angostura bitters

Crushed ice

Simple Syrup to taste

Candied bacon, for garnish

Pulse pineapple and vanilla in a food processor until no pineapple bits remain and mixture is frothy. Add simple syrup to taste. Transfer half the mixture to a shaker and add 3 ounces of the bourbon and 1 dash of the bitters.

Shake vigorously and pour into 2 ice-filled glasses. Repeat with remaining pineapple mixture, bourbon, bitters, and ice. Garnish with candied bacon and serve.

8 ounces bourbon, rye whiskey, or dark rum

24 oz. boiling water

4 lemon slices

Pour 1 ½ tablespoons honey in each of 4 warmed cups. Add bourbon, rye, or rum and then water. Stir until honey is completely dissolved. Garnish each cup with a lemon slice and serve.

8 ounces cooked beets*

1 Granny Smith apple, peeled, cored, and cut into 1-inch chunks

1 cup granulated sugar

11⁄4 cups water

3⁄4 cup apple cider vinegar

6 star anise pods

2 teaspoons whole allspice berries

1 bottle prosecco, chilled

*Use homemade roasted beets or store-bought vacuum-sealed beets. Avoid canned beets, which are too soft and waterlogged to use in cocktails. Pulse beets and apples in a food processor until completely pureed. Set aside. Combine sugar, water, vinegar, star anise, and allspice in a medium saucepan. Cook over medium-high heat, stirring, until sugar is completely dissolved, about 5 minutes. Stir in pureed beets. Remove from heat and let cool to room temperature. Strain mixture through a fine-mesh sieve into a 13-by-9-inch baking pan; discard solids. Place pan in freezer. Scrape mixture with a fork once every 20 minutes until mixture is fully frozen and has a slushy consistency. To serve, spoon 3 to 4 tablespoons granita into each of 6 champagne flutes. Top with prosecco.

Using an electric mixer, beat cream, confectioners’ sugar, and espresso powder on medium speed in a large, chilled bowl until soft peaks form, 2 to 3 minutes. Ladle drink into warm cups and top with whipped cream. Sprinkle with hazelnuts and coconut.

• 4 stalks lemongrass, bruised and cut into ½in (1cm) lengths

• 7oz (200g) galangal, peeled and diced

5 kaffir lime leaves, bruised 1 chicken leg 2 cups water 2 small red chiles 1 litre (1¾ pints) coconut milk 1 tbsp nam pla or Asian fish sauce juice of 3 limes 3 scallions, finely chopped

INSTRUCTIONS

Put the lemongrass, galangal, lime leaves, chicken, and water in a pan and bring to a boil. Simmer uncovered for 30 minutes, or until the chicken is cooked. Remove with a slotted spoon, dice the flesh, discarding the skin and bones, and set aside. Add the chiles to the pan and bring the soup back to a boil. Pour in the coconut milk and heat slowly—you want the soup to become hot enough for the flavors to infuse the coconut milk without coming to a boil. Strain the soup into a clean pan or tureen. Remove the chiles from the sieve and cut into slivers. Add the nam pla, lime juice, scallions, cilantro, and chicken to the soup, then taste to check the seasoning. Serve garnished with the chile slivers.

hen describing Juan Pablo Di Pace, four words which come to mind are “very attractive triple threat”. Juan has quite an impressive resume. He

stars in some of the most successful movies and screen plays such as Chicago, Grease, and Mamma Mia, alongside some of the greatest actors. Juan describes his experience while working with Meryl Streep and Pierce Brosnan in Mamma Mia as “incredible”. He goes on to say, “I remember waiting tables, and then days later I was shooting with my idols laying around in the most beautiful beaches in Greece.” For someone with such an impressive resume, it would seem that Juan knew exactly what career path he would take from an early age, this was not the case. Though he said that he always had a passion for films and television, he expressed that he first wanted to be a film animator. His love of acting developed when he played the role of Danny Zuko in a school play of “Grease”. “I never looked back. Danny was a great character, especially because he’s not that nice. Bad boys have more fun -they definitely have more fun than me! I love playing arrogant guys because I am more of a grandpa in real-life.” Juan’s parents have always been supportive of his career choice. “My parents have been happy with whatever I decided to do in life, I am very thankful for that. My mother is a painter, my father a marketing manager, and my sister an actress and director so creativity runs in my family”. Juan also directs, and says that there is quite a difference between acting and directing. “When you are directing, you are able to step outside and see all the things you cannot see when you are acting. Actors know very little of what goes on behind the scenes, and that’s how it should be. When you direct, you get to create the mood and, point of view, it’s an amazing experience.”

PERFUME (A.K.A. FRAGRANCE) Some fragrance ingredients can trigger allergies and asthma and some are linked to cancer and neurotoxicity.

ALCOHOL Alcohol is a very drying and irritating solvent and dehydrator that strips your skin’s moisture and natural immune barrier, making you more venerable to bacteria, mould and viruses. It may also promote brown spots and premature aging of skin in certain people.

MINERAL OIL This petroleum by-product coats your skin like plastic, clogging the pores. It interferes with your skin’s ability to eliminate toxins, promoting acne and other disorders. Mineral oil slows down skin function and cell redevelopment, resulting in premature aging.

TALC Similar to asbestos in composition, talc is found in baby powder, eye shadow, blush, and deodorant. It is linked to ovarian cancer and respiratory problems.

PROPYLENE GLYCOL Propylene glycol is a small organic alcohol commonly used as a skin-conditioning agent. It is classified as a skin irritant and penetrator. It has been associated with causing dermatitis as well as hives. The trip includes a leisurely day with tastings at nearby wineries and a picnic lunch amongst the trees and mountains. Travel to Outdtshoorn to the Little Karoo, a mountainous valley and through Meiringspoort, bikers will spot several local animals including Black Eagle, Grey Rhebuck and Klipspringer. Animal lovers can even partake in a fun donkey cart ride and visit an ostrich farm.
