MERRY MENUS

Feast festive this season with our pick of the best Christmas menus across the North East THE RISE RESTAURANT, TERRACE & BAR, THE GRAND YORK There’s no city quite like York at Christmas – and where better to enjoy a fabulous festive feast than The Grand Hotel? The Rise is a refined, contemporary setting with seasonal produce at its heart – paired with an exquisite, five-star service. To start: The cauliflower velouté is a great place to start – served with Crabley goat’s cheese and rosemary pistou. For mains: Go traditional with a tasty twist. The Yorkshire turkey parcel is served with chipolata, roast potato and winter veggies. For pud: Treat yourself with baked white chocolate custard, served with cherry truffle and mulled wine sorbet. Delicious. thegrand.co.uk

The Rise

THE CRATHORNE ARMS, YARM This North Yorkshire gem is as cosy as it gets at Christmas. A great place to gather the family in the snug, enjoy a glass of mulled wine by the roaring fire and dine in style. Festooned with antique furnishings, fairy lights and a towering Christmas tree on its doorstep, it’s a haven of home comforts when it comes to the design – and there’s no compromise when it comes to the dishes, too. To start: McCoy’s seafood pancake is always a good idea. A parcel packed with chunks of seafood, topped with the most delightful seafood sauce – to be soaked up with warm, crusty bread. For mains: The button mushroom, braised leeks and tarragon pie is a great winter special for veggies. Served with mash and wilted greens, it’s as hearty as it is heavenly. COACH HOUSE, MIDDLETON LODGE Revel in the rustic beauty of Middleton Lodge’s Coach House this Christmas, where you’ll find festive feasting aplenty – and lots of lovely, seasonal events to bring a bit of Christmas cheer! The Coach House Christmas Day menu kicks off with champagne and nibbles, followed by seasonal meats, fish and veggie dishes, straight from the Walled Garden. To start: Cured salmon, shallots, cucumber, capers and horseradish crème fraiche – as fresh as fishy, festive dishes come. For mains: Roast venison wellington, pickled red cabbage and roast winter roots. For pud: Christmas pudding, rum and raisin ice cream and brandy sauce. middletonlodge.co.uk

Crab & Lobster

of flavours, with everything from ham hock terrine and slow cooked lamb, to celeriac wellington and maple syrup tart. It’s a bright, light and buzzy place to raise a glass this festive season. To start: We’re already dreaming about the creamy wild mushroom soup, topped with blue Wensleydale and truffle oil. For mains: Get your game face on and tuck in to roasted pheasant wrapped in bacon, served with pressed game sausage, kale, parsnip puree, cranberry gel and parsnip crisps. For pud: A cheese-lover’s dream seals the deal. A board of Harrogate Blue, Brie de Meaux and Godminster Cheddar, served with pear chutney, biscuits, grapes and Christmas cake. museyarm.com

THE FORTH, NEWCASTLE A proper, city centre pub with an off-beat edge, The Forth is a great place to hang out with friends and family – and spread festive cheer from 17 November until 1 January 2020. Think exposed brickwork, open fires and local artwork. It’s cool, it’s contemporary but it’s incredibly cosy. To start: First things first, something fruity. Opt for the roast pear appetiser, served with wheatberry, apple and cranberry salad. For mains: The Forth’s fish game is strong. Order the pan-fried sea bass for mains, sitting on a bed of beetroot gnocchi with tenderstem broccoli, parsnip crisps and pesto. For pud: Christmas is for sweet treats, right? Lap up treat season with millionaire’s salted caramel torte, complete with caramel sauce and sprinkles. Dreamy. theforthnewcastle.co.uk

CRAB & LOBSTER, THIRSK The Crab & Lobster is an elegantly eccentric spot, perfect for a hearty winter meal with loved ones. Embracing local produce, fresh seafood and a wide variety of seasonal, gourmet dishes, the place is traditionally British with a real Yorkshire feel; yet it’s packed with treats and trinkets, suggesting both local and exotic destinations across the globe. To start: Tuck into the warm tartlet of Whitby crab with dill and gruyere, parsley and chive crème fraiche. For mains: The roast sirloin of aged grand reserve beef is a hearty main, sure to warm you up this winter. Served with braised onions, Yorkshire pudding, mustard and creamed horseradish. For pud: Satisfy the sweet tooth with the baked whisky and orange marmalade cheesecake. crabandlobster.co.uk

MUSE, YARM For continental, Parisian-style dining in Yarm, book a table at Muse – a beautiful bistro serving rustic and seasonal dishes, with a bit of French flair. This year’s Christmas dinner menu is packed full

MARCO PIERRE WHITE STEAKHOUSE BAR & GRILL, DURHAM For a festive feast with all the trimmings, head to the very merry Marco Pierre White Steakhouse in Durham city centre. Their seasonal set menus add a sprinkling of magic to any mouthwatering Christmas meal. Foodies can expect everything from smoked salmon and roast turkey, to ribeye steak and Bakewell tart. To start: The duck rillette is what dreams are made of. Dunk in a wedge of sourdough and top with cornichons. For mains: The creamy polenta is the perfect veggie dinner, served with aged Italian cheese, mushrooms and buttered leaf spinach. For pud: Treat yourself to the traditional plum pudding with a delicious drizzling of brandy sauce. mpwrestaurants.co.uk

QUOTE OF THE DAY Four of the best festive food tips and tricks, from some of the region’s top chefs...

“DON’T OVER-COMPLICATE THINGS - DO FEWER SIDES AND EXTRAS, BUT MAKE LARGER QUANTITIES OF EACH FOR LEFTOVERS ON BOXING DAY - NOBODY WANTS TO COOK THEN!” JOSH OVERINGTON, HEAD CHEF AT LE COCHON AVEUGLE

“PIPE SOFT BUTTER UNDERNEATH THE TURKEY SKIN BEFORE ROASTING TO STOP THE MEAT FROM DRYING OUT AND HELPS FOR CRISPIER SKIN.” MICHAEL PENALUNA, EXECUTIVE HEAD CHEF AT WYNYARD HALL

“Ask your butcher to take the legs off the turkey and bone and roll them. This way, when you cook the turkey, the breast won’t be overcooked as you can cook it in less time. Always take the turkey out of the fridge to come up to temperature well in advance, which will also cut down the cooking duration.” Richard Allen, executive chef at The Orangery at Rockliffe Hall

“USE TURKEY BONES TO MAKE YOUR STOCK THE DAY BEFORE, SO YOU’RE READY TO GO ON CHRISTMAS DAY. LIGHTLY BROWN THE BONES OFF AND THEN SIMMER FOR THREE HOURS. LEAVE TO COOL AND CHILL OVERNIGHT. THEN, ON THE BIG DAY, ALL YOU NEED TO DO IS REHEAT.” MICHAEL WIGNALL, CHEF PATRON AT THE ANGEL AT HETTON
