Neil Butterworth takes charge of the kitchens at The Vermont Hotel. The food means business, but enter his calm kitchen and you’ll discover there’s a whole ‘lotta love’ to be found.

A

few words might spring to mind when describing the food at The Vermont Hotel. Elegant. Exciting. Dining here - whether in The Bridge Brasserie or at the Redwood Bar - is a classy affair indeed, eased by a relaxed ambiance throughout. It’s what makes this hotel so inviting to so many. Ordering here means you get to tuck in to decadent dishes that marry intelligent ingredients, with a dash of fancy French finesse for good measure. It’s posh nosh done properly. It might be a surprise to know, then, that the man in charge of the kitchen considers himself to be quite the ‘normal bloke’ - a chef who’s all about honouring simple recipes and timeless techniques and who would choose good old fish and chips over seafood foams and deconstructed chicken breast any day of the week. West Yorkshire-born Neil Butterworth has been in the culinary game for the last twenty-something years, in a career that has seen him go from humble Harrogate hotels to London Town, where he worked under the watchful eye of awardwinning chef, Nico Ladenis. But he hasn’t always been a foodie. “It makes me laugh when I hear famous chefs say that they learned how to cook alongside their

mum or their nan - because I never did that,” says Neil. “My mother was a school dinner lady and my father, although a slightly heavy-handed engineer, used to make really good flaky puff pastry. But other than that, I don’t really have a lot of childhood food memories. I didn’t do any cooking as a boy.” “Growing up in the 70s and early 80s, although homemade, the food wasn’t all that sophisticated. The meat would be on for hours and the liver would be fried to death and horribly strong. Even now, just the smell of it in the kitchen takes me back.” Oddly enough, it wasn’t until he tuned in to a TV programme about oil workers - and just how well they were fed - that he decided he wanted to give cooking for himself a go. “It sounds bizarre, but that one TV programme really changed things for me,” he says. “I was expecting to see them eating small portions of basic cafe-style food, but there they were, digging in to big, old-fashioned buffets. Things like whole dressed salmon, carved ham and giant beef joints. I didn’t know food could be like that.” “It showed me just what could be done with food - and made me want to learn how to cook for myself and try different things.”

After leaving school, Neil headed for Halifax college where he completed a City & Guilds qualification in catering and embarked on a two-week work placement at a local hotel an opportunity that would kick-start his culinary journey. “It was hard work - I was a bit like a rabbit in the headlights at first - but once I found my feet, I loved it,” he says. “My first head chef was a great guy and I learned so much from him. I was also part of a big team and worked on all sections - everything from the banqueting to patisserie - so I got to do a bit of everything. I think your first job has a big impact on you and I was lucky I had such a positive experience. Many people give up and leave the industry if they don’t.” Neil moved on to other kitchens as the years went by - some French, some classic British and others a bit of both - tackling jobs that saw him move up the culinary ladder to become head chef in a few spots. A process that he deems invaluable now in his role as head chef at The Vermont. “It’s funny, so often you hear kids and young people saying that they want to be chefs, after watching celebrity chefs on TV - but the industry is just not like that in real, everyday life,” he says. “Some of them aren’t prepared to get their hands dirty and learn the basics, forgetting that every >

chef - even the likes of Jamie Oliver and Gordon Ramsey - had to start somewhere.” “I tell my team, if you’re making carrot soup for over 200 people, you need to know how to chop onions and peel carrots - it’s as simple as that. Young chefs have to remember that it takes time - you can’t just walk into a head chef job with no experience. There’s no shortcuts.” Learning from Neil’s experience at The Vermont is a young brigade of budding chefs - a team of around 11, ranging from a sous chef to a teenage apprentice. With the exception of one, the eldest are around 25-years-old. For some, leading a fresh-faced team in a hotel with such a reputable name may sound like a tricky task, but it’s a role that Neil thrives in. “I genuinely enjoy teaching younger people,” he says. “A lot of people have this impression of head chefs as people who scream and shout and who throw pots and pans around - but I couldn’t do that twelve hours a day. I’d be exhausted! Managing people is about getting the most out of them so that they become better. “I’m a firm believer in leading by example - I’d never dream of asking one of them to do something I’m not prepared to do myself,” he says. “I’ve worked in places where the head chefs wouldn’t do any cooking - they’d just stick to the paperwork and call out the cheques. But I love that my role is very hands-on; I’ll sometimes work six or seven days a week and often come in to do

extra bits and bobs. I like to think that by seeing me doing these things my team are inspired to do the same.” And the hard work certainly pays off. Together, the team have created a bar menu with edge and a restaurant menu that showcases high-quality, French-style cuisine - plates that bring together carefully married flavours, made with, as Neil puts it, a lot of love and attention. “I always ask my chefs, ‘would you eat that?’ and if the answer is no, then we’re doing it wrong,” he says. “You have to be really proud of the food you put out - you have to care about it. Homemade food cooked with love, that’s meant to be enjoyed in a relaxed setting - that’s what we do here. Nothing is rushed - we make 90 per cent of everything ourselves, right down to the ice cream and the scones served with our Afternoon Tea.” “For me, it’s all about flavour - I’d choose substance over style every time,” he says. “You could say I’m old-school; I like to do things properly. You’d be surprised how many people get the simple stuff wrong - things like omelettes and béchamel sauce. But we pride ourselves in knowing that the standard of the food here is really high, whether you’re sitting down to breakfast, grabbing a snack at the bar or indulging in an evening meal. Combine that with the hotel’s unbeatable location and views and you have one pretty special place to eat.”

FOOD FACTS Food heaven? Fish and chips and a cold can of dandelion and burdock. My father’s side is from Blackpool, so we spent a lot of time at seaside chip shops as kids.

A Brasserie must-order? Probably a steak - you can’t beat it.

Food hero? It has to be Nico Ladenis - I learned so much from him. Working with him was a total pleasure.

Gourmet travel destination? Paris. I don’t know what their secret is, but their cooking is always better.

Favourite ingredient? Vanilla. Last meal? What can I say? I love fish and chips. But with normal garden peas, though. Never mushy!

Smoked salmon parfait with beetroot crème fraiche and micro herbs serves 4 For the parfait 2 x 150g fresh salmon fillets 700g smoked salmon 4 smoked trout fillets 750g cream cheese 200ml double cream 1 x 125g natural yoghurt 7 leaves gelatine 2 dspns chives, finely chopped 1 tspn horseradish, freshly grated salt & pepper

the mix into a bowl. Gently fold in the yoghurt, horseradish and chives, and season. – Soak the gelatine in cold water until soft. When soft, squeeze out any excess water and gently melt in a pan. When melted, carefully fold into the salmon mix. Check for seasoning. – Spoon into the lined terrine, carefully cover with the overlapping salmon, ensuring everything is covered, wrap in cling film and place in the fridge to set.

For the beetroot crème fraiche – Gently poach the two salmon fillets until just cooked, leave to cool completely. When cold, remove from the poaching liquor and flake into small pieces. Leave to one side. – Line a terrine mould with cling film, then line with some of the smoked salmon, leaving some to overlap. – Place the remaining smoked salmon and smoked trout fillets in a blender and blitz until smooth, add the cream cheese in two stages, then gradually pour in the cream (be careful not to over blitz as this may split the mix). Scrape

2 large beetroot crème fraiche salt & pepper

For the saffron mooli mooli saffron salt – Peel some of the mooli, and using a small parisienne scoop, cut out as many small balls as possible. – Bring some salted water to the boil, pour enough on to just cover the mooli, and add a pinch of saffron strands, leave to cool down in the liquid. When needed, drain on some kitchen cloth. Best made the day before.

To assemble the dish

– Place the beetroot in a pan of cold water, bring to the boil and simmer until the beetroot is cooked, (check with a skewer). Allow to cool, scrape off the skin, chop into small pieces and liquidise with enough crème fraiche to loosen the beetroot and to make it the purple colour you desire. Season and place in the fridge.

– Spoon some of the beetroot crème fraiche around the plate. – Slice the salmon parfait, and place in the centre of each plate, then sprinkle around some chopped chives, a few baby capers, some of the mooli balls, drizzle a little rapeseed oil around the outside, then finally, a few sprigs of micro herbs.

4 chicken breasts thyme leaves salt & pepper plain flour eggs, beaten breadcrumbs

1 small white onion, finely diced 4 cloves garlic, grated 1 dspn tomato puree white wine, a generous splash 1 tin chopped tomatoes 2 bay leaves 2 sprigs rosemary, chopped salt & pepper 2 dspns malt vinegar 2 dspns brown sugar

– Remove the fillets from the chicken breasts, leave to one side, and then carefully peel away the skin. Place some greaseproof paper on a tray, stretch out the chicken skin (without tearing it), and place on the paper, sprinkle with the thyme leaves and season, place another sheet of greaseproof paper on top, then another tray on top, (this acts as a weight, and keeps the chicken skin flat). Cook on 180ºC until golden brown and crisp, remove from the oven and place on a plate and leave to dry out. – For the chicken breasts, place on a chopping board, cover with a clingfilm, and using a meat tenderiser, gently bat out the breast until it is the same thickness all over, cover, and leave in the fridge until needed. – For the chicken fillets, place between 2 pieces of clingfilm, and using the meat tenderiser, gently bat out until the same thickness all over. Place the flour, eggs and breadcrumbs into three separate bowls, then dip the fillets into the flour, shake off the excess, then into the egg, and then finally the breadcrumbs. Cover, and place in the fridge until needed.

– Sweat the onions and garlic, without colour, until soft, and tomato puree and cook for a few minutes, splash in the white wine, let it reduce, then add the chopped tomatoes and bay leaves, simmer for 10-15 mins, add the rosemary and season. Place the vinegar and sugar in a pan, bring to the boil, reduce until syrup consistency, then add to the tomato sauce (best made in advance, then re-heated when needed).

For the pommes puree mashed potato, enough for 4 people double cream butter, diced salt & pepper – Mix together a knob of butter with a drizzle of cream to consistency and taste desired.

– Beat together the butter and marmite, add the thyme leaves.

To assemble the dish – Lightly oil the chicken breasts, season, and cook on a chargrill (or in a frying pan). – Whilst the chicken is cooking, heat the mash, when warm, beat in some diced butter and add a little cream to enrich the mash, heat through, season, leave in a warm place. – Gently melt some butter in a pan, and add the washed spinach, season, cook until wilted, leave in a warm place. – Heat up the tomato sauce. – When the chicken is cooked, brush with the marmite butter, and leave to rest somewhere warm for a few minutes. Whilst the chicken is resting, cook the bread crumbed chicken fillets until golden brown. – Place the spinach on to 4 warm plates, put the chicken breast on top, then the fillet, and finally, the crispy skin, drizzle any juices over and around. Serve both the tomato and rosemary sauce and the pommes puree, separate.

Gateau St. Honoré with lemon curd & raspberries serves 4 For the base

– Roll out the pastry until thin, using cutters, cut out into 8cm circles, place on some grease proof paper on a baking tray, prick with a fork, and lightly brush with the beaten egg, place another sheet of baking paper on top, then weigh down with another baking tray (this acts as a weight to stop the pastry from rising too much). Bake on 180ºC for about 12-15 mins, or until golden brown. Remove from the oven and allow to cool. Store in an air tight container until needed. Best made in advance.

and shiny (will take about 5-10 mins), and the mix should ‘come away’ from the side of the pan. Remove from the heat and place into a mixing bowl. – Add the eggs one at a time, incorporating fully, before adding the next egg, beat until smooth, leave to cool slightly before placing into piping bag. – Pipe into small balls onto grease proof paper and cook on 180ºC for about 18-20 mins, slowly open the door to check if they are ready (the choux buns should be golden brown and double in size). Remove and allow to cool. Best made in advance. *This mix will yield around 40 choux buns, which can be frozen and used at a later date.

For the crème patissiere

1pt milk 1 vanilla pod, split 5 egg yolks 125g sugar 25g plain flour 25g corn flour

4 lemons, grated zest & juice of 200g sugar 1 vanilla pod, split 100g butter, diced 3 eggs, beaten

puff pastry egg, beaten, with a little milk

– Bring the milk and the pod to the boil. – Whisk together the yolks and seed from the pod until pale and fluffy, whisk in the flour and corn flour. – Whisk the liquid onto the egg mix, return to the pan, and gently cook until the mix starts to thicken and turn glossy. Whisk until smooth. Remove from the heat and scrape into a bowl, lightly dust with icing sugar and place a layer of cling film on top (this prevents a skin from forming). Allow to cool before placing in the fridge. Must be made in advance.

For the choux pastry 250ml water 100g butter, diced salt, pinch of sugar, pinch of 125g plain flour 4 eggs – Bring the water, butter, salt and sugar to the boil, gradually add the flour, beat until smooth

– Place the lemon zest, juice, sugar and pod in a bowl, and place over a pan of simmering water. When the butter and sugar has dissolved, stir in the beaten eggs, cook for about 10-15 mins, until the mix thickens and coats the back of a wooden spoon, pass through a sieve and allow to cool. When cold, place in the fridge.

For the crème anglaise ½pt milk ½pt double cream 1 vanilla pod, split 5 egg yolks 100g sugar – Bring the milk, cream and the pod to the boil. – Whisk together the yolks and seed from the pod until pale and fluffy. – Whisk the liquid into the egg mix, return to the pan, and gently cook until the mix starts to thicken and coats the back of a wooden spoon. Remove from the heat and pass through a sieve. Allow to cool before placing in the fridge. Must be made in advance.

For the raspberry coulis 2 punnets raspberries 1 dspn icing sugar 2 dspns water – Place all ingredients in a pan, gently heat until the raspberries turn soft, push through a fine sieve and leave to cool.

For the crème chantilly 1pt double cream 1 vanilla pod, split, seeds only 1 tblspn icing sugar – Place all ingredients into a bowl and whisk until it forms soft peaks, place in the fridge until needed.

To assemble the dish – Place the pastry discs onto a board, pipe some crème patissiere into the centre. – Pipe crème chantilly into 16 of the choux buns, then dip each one into the lemon curd, then place three around the outside of the crème patissiere, then place one on top. – Pipe some crème chantilly in the gaps, and place some raspberries in and amongst. – Spoon some crème Anglaise and raspberry coulis around onto 4 plates, carefully transfer the gateaux onto the plates, decorate with a few mints leaves, dust with icing sugar and serve. *Some of the above will make a little more than needed… but these can be used in other dishes.


My background is in nightclubs and restaurants… I love how luxurious The Vermont feels and how good the service is here. Everything here is of such a high standard.

I’m bar manager, so I’m in charge of all four bars within the hotel… so it’s my job to keep everything to the highest standard. I train the staff to maintain the quality in service and products.

selection of whiskies, spirits, ales and more. It’s also the only bar where you’ll find a cocktail menu. I love the old-school feel of the place; it’s at its best when the lights are low, the fire’s on and there’s live music playing.

Favourite drink to make? A mojito. It’s one of those cocktails you can twist to make it your own. You can mess about with flavours, you can make it sweeter, make it sour.

tonic. It has a few different types of botanicals and tastes completely different, I think, to a standard G&T. The cucumber in there is great.

When someone says ‘surprise me’, what’s your go-to drink? I’ll ask them if they prefer their drinks on the sweet or sour side, see if they want something refreshing or a little heavier. Take a base spirit and develop.

The Vermont Hotel was the dazzling setting for the thoroughly glamourous wedding of Jodi Fletcher and Jamie Lowson. Here’s the story of their big day in their own words… The meet: We went to the same school as each other but I was the year above Jamie. We didn’t speak anymore once I left school but would see Jamie occasionally on nights out in Newcastle. I was the one who eventually found the courage to message Jamie to say happy birthday and it blossomed from there. Will you? We got engaged on Christmas Day, 2012. Jamie put the ring in a Christmas cracker and my mum did a seating plan for the day. Only my mum and Jamie knew that he was going to propose. Jamie and I pulled the cracker and the ring landed on the table. I picked the ring up not noticing it was real until I felt it. I burst into tears and turned to Jamie and he asked me to marry him.

Jamie had a 3-piece navy suit with a tweed waistcoat. Jamie wasn’t a fan of traditional wedding style suits so went for something more ‘him’ from Bakers Tailoring in Middlesbrough – the groomsmen’s outfits were also from here. Older bridesmaids wore floor-length embellished gowns. The dresses were Adrianna Papell. Younger bridesmaids had white dresses with big tulle skirts from Tonia Ann Bridal in Washington. Blooms: My older bridesmaids and I carried sweet avalanche and lisianthus flowers with asparagus fern and the younger bridesmaids carried baskets of petals – from Leaf Florist in Hebburn. They were so beautiful - everything I asked for and more.

The plan: We chose October after speaking to Tanya at the Vermont. It turned out to be amazing beautiful sunshine and not cold at all.

Decorating details: For the ceremony I had chiffon drapes with pearl brooch for the chairs, eight silver lanterns down the aisle, petals scattered down the aisle, silver sequin table cloths with an arrangement of flowers on the registrar’s table and then two decorated candelabras on ivory plinths at the top of the aisle. For the wedding reception I had the chiffon drapes with pearl brooch on the chairs, full sequin table cloths on all tables, candelabras with draped pearls with a wreath of flowers and ivy on the stem standing on a mirror plate with tea lights and pearls draped along the table for centrepieces. On the top table I had mixed vases, flowers and candles all the way along with the two ivory plinths behind with lanterns. This was all provided by Styled & Seated. Favours: I gave miniature Jack Daniels to the gentlemen and small bottles of sparkling white wine to the ladies. For the children I made up activity bags to keep them entertained.

The photographs: Casablanca photographed my sister’s wedding so I knew how amazing they were. They could not have been more helpful on the day. They helped with my dress my shoes and my nerves throughout the day.

Cake: I went for a five-tier cake which looked beautiful. Each tier was a different flavor: chocolate orange, chocolate, lemon sponge, carrot and the top tier was a dummy cake. It was made by Andrea Lant.

The Big Day details: We decided to have the full day at the Vermont, the ceremony, reception and the evening party. With the hotel having such an elegant 1920s look I wanted to try and stay with that theme as I love it. We wanted 1920s/Great Gatbsy kind of glamour and we had lots of silver and sequins.

Feast: Canapés: Chicken goujons, fish cakes and smoked salmon blinis. Starter: Goats cheese and caramelised onion tart. Main course: Roast sirloin beef with red wine jus. Dessert: Chocolate brownie.

They wore: I went for a fish-tale style ivory dress. It was full-lace, backless with diamanté and draped beads on the back and a sweetheartstyled front. I had my dress made so that it was exactly how I wanted it.

We drank: Veuve Clicquot champagne for reception drinks and toast. Red or white wine throughout the meal. Entertainment and fun: Swing singer Anthony

Stringer sang from the wedding reception through until 9pm when the DJ started. He was amazing all day and entertained every age group. We also had Wizadora from Jarrow in between the wedding breakfast and evening. She is a children’s magician and entertainer. The children all loved her and her real bunny! In the evening I had a photobooth to keep all guest entertained whilst they were having a break from the dance floor. We had LOVE letters from the ceremony to the night as well as a sweet cart and a light reflection on the wall saying Mr & Mrs Lowson. Rate my day: Definitely 10 out of 10. We had the most amazing day and it went exactly to plan. We would choose this venue again and again and would recommend to other couples. It is a beautiful venue and wedding planner Tanya and the staff can’t do enough for you. The day runs so smoothly so you just enjoy it. Tanya stuck to all arranged times and made sure that everything was exactly as I asked. There was not one hiccup – with 121-day time guests I was a bit conscious about how smoothly the day would go but the staff made it look like a breeze. The exclusivity at The Vermont made it so much more special. Knowing I would be the only bride that day made me feel like the VIP. Honeymoon: We went to Jamaica and stayed at

the Sensatori in Negril. We had the most amazing two weeks. It was relaxing and beautiful. The beaches had white sand and clear blue sea. Top tips: Don’t think you have loads of time to get organised because it creeps up before you know it. Organise all the little details

A DAY IN THE LIFE It’s 6am on a Saturday morning, and for Vermont Hotel’s wedding planner Tanya Hedley, time for a quick run on the beach before breakfast, then prepare for another wedding...

A

s I drive to work I picture the scene unfolding in the Presidential Suite: The Bridal party waking up like children on Christmas morning – girls all huddled together in one big, unmade bed, matching pyjamas on, opening gifts and popping champagne. Soon the room will descend into chaos - make-up, hair, laughter, tears… I enjoy a few moments of calm. Before anything else (including my coffee) I visit the suite. Breakfast trays have been set down with good intentions but are often left cold and untouched, pushed aside to make room for more important things like make-up palettes, bouquets,

and more make-up brushes than you could ever imagine one person needing. It’s difficult to be heard amongst all the excitement so eye contact is the key when getting the bride to focus on what I’m saying. I query any last-minute changes or surprises, and inevitably arrange for a fresh shipment of champagne glasses and strawberries to be delivered, often along with any other requests such as superglue, scissors, a pencil sharpener, safety pins, plasters – you would be surprised! I don’t bombard the girls with too much information (they are too excited to take anything in) so I tell them what time they must be dressed before returning to the relative calm of the hotel to set about my wedding day duties.

It sounds clichéd to say that every wedding here is different, but with each couple using a different combination of function suites, they truly are. We may be dressing one room, we may be dressing three. We may see a neutral colour palette with masses of ivory roses, hydrangeas and peonies, or we may see an abundance of playful colour. But whatever the day brings, one thing is for sure – there will be no cutting corners and no compromise. Our expert team is slick: they polish cutlery and glassware, steam the crisp white linen, lay tables and chill champagne with quiet efficiency. Before long, this picture-perfect wedding is starting to take shape and is enhanced by the arrival of florists, bakers and entertainers.

Personal touches added by the couple such as favours, family photos and candles are carefully placed out – the tiny details taking the most time of all. (I once placed Swarovski crystals down with tweezers!). I know I am satisfied with a wedding set-up when it is (as I like to call it) “magazine worthy”, this is my standard of excellence. In the bar, the guests start to arrive early and there is an air of giddy excitement as this very special family reunion gets underway. Outfits have been planned for months and everyone is out to impress. The mother of the groom works the room like the family ambassador, she takes

an enormous sense of pride in seeing everyone and being seen, after all, today she is a VIP and she must have lapped the room ten times by now. I speak to the groom, his nerves concealed by bravado, buttonholes are pinned and he is whisked away by the photographer – I re-do his pocket square before letting him go and I watch as he takes a nip of whisky from a hipflask in his jacket pocket (no harm done). Before long, the wedding guests are ushered to their seats, and quietly make small talk as they await the star attraction. Behind the scenes, I organise the bridal party into the correct order for

the processional. Small children almost always cry and there is usually a quick reshuffle in the line or some degree of blackmail to temporarily halt the tears. Jewellery, dresses, hair and makeup are checked over one last time and for just a few minutes we feel that we are backstage at London Fashion Week. For the first time (and probably for the last time) the girls fall silent; tears are forming and tissues are hurriedly stuffed into bras! Both inside and outside the room there is silence. It’s time... The music fades in, the doors are opened and the girls walk on my queue, one by one by one, until it’s Her turn. I close the door behind Her and watch the ceremony play out. Before long, vows and kisses have turned into speeches and dinner, then tea and coffee, and somehow, it’s cake cutting and first dance. The day has run away with us all. I have played Lady in Waiting to the bridal party, assistant to the photographer, and ensured that the couple’s carefully laid plans are executed with meticulous precision. I have been uncompromising with my directions and my colleagues have dutifully followed through with every instruction. I watch (and usually cry through) the first dance, with an enormous sense of happiness and pride, before discreetly slipping away and leaving them to dance the night away – my work here is done. I’ve worked in hospitality for nearly 40 years… I started out in the late 70s and early 80s and spent seven years in the Lake District managing hotels, before coming to the North East in 1993.

Working at The Vermont Hotel means you’re free to be yourself… there’s a lot of room for individualism here, which I really appreciate. As experienced and trusted members of staff, we’re given the freedom to work fairly independently. The staff tend to look up to us, too, which is nice.

The best thing about the job is… talking to interesting people. We get so many different characters walking through the doors, from all over the world. I have a keen interest in local history and enjoy advising people on where to go and what to see. Newcastle’s architecture is world-class. It is so much more than a ‘party city’. Driving the hotel’s Rolls-Royce Phantom is a definite perk… it’s a fabulous car. We drive VIP guests and brides and grooms around in it and it’s always so much fun.

Looking smart and presentable is important to me… we’re the first people guests meet upon arrival, so it’s crucial that we make a good impression. Representing the hotel means looking the part and I’m conscious of that the whole time I’m on duty.

background. I’m always getting told off by the restaurant staff because I actually prefer to have the doors open. I don’t mind the cold - I’m used to being outdoors.

I’ve met many celebrities on the job… but Joe Frazier was a particular highlight. He was a hero of mine - I remember watching him as a young man fighting against Muhammed Ali - and meeting him had a big impact on me. Sir Anthony Hopkins came to stay recently - he was absolutely charming. Very unassuming and normal.

If you want to succeed in customer service… you have to be a born helper. Being open and willing to listen to people is what it’s all about.

Our venue is a traditonal one, a hotel that really is steeped in history. As a landmark building in the heart of Newcastle, The County has a history of hosting fine weddings and it isn’t unsuual for us to host a second or third generation wedding celebration here. Interior details in the hotel, like the high-ceilings in our function rooms, the grand windows and beautiful oak panelling make it feel like a very special place - and details like this serve as a fabulous and atmospheric backdrop for photography for the bridal party. A County Hotel wedding is more likely to have a classic theme: details like white flowers, candles and drapery, perhaps a harpist or string quartet to play during the reception and a

I am often asked about trends for the bridal party and one in particular that has emerged and built up a lasting momentum is the ‘mix ‘n match’ bridesmaid group. Tradition dictates that all bridesmaids wear the same dress, however in today’s world of female friendships there is no ‘one size fits all’. Our wedding parties are built up of the most important people in our life and they come in all different shapes and sizes. This can cause quite the dilemma when it comes to dressing your bridesmaids, with as many as five or six in some cases of different body shapes, heights and skin tones to dress. Is one magically going to work for them all? For a lucky few it will, however, if it isn’t for you, it’s time to look at the mix ‘n match trend and keep everyone happy. This can work in a few ways, the most popular is picking a colour palette to represent your theme and letting your bridesmaid have a variety of dresses to suit their individual style. If a complete mix of dresses does not go with

your vision, there is the ingenious multiway dress one dress that can be customised to each person’s shape, having the same shade and skirt shape but with a variety of different wrapped tops to give your girls the comfort to feel beautiful. Law firm Sintons handled the acquisition of Gainford Group’s latest addition to their portfolio – The County Hotel.

T

he 114-bed venue, opposite Newcastle’s Central Station, was bought by the family-owned Gainford Group after they beat competition from a host of rival bids. Sintons, based in Newcastle, is the long-standing legal advisor to the group, and acted for them in the multi-million pound purchase from US Pension Fund Amaris. The Grade II listed building, opposite Newcastle Central Station, was originally built as a county hotel in the 18th Century, as part of a redevelopment of the city centre which connected Neville Street with Collingwood Street. The Gainford Group are now planning to reinstate the venue as a “jewel in the crown” of the gateway to the city, investing heavily as they continue to do throughout their portfolio. Creating stand-out Japanese food takes a skilled hand and a creative eye. At the helm of Aveika, head chef Lee Hardy is the man behind some of the tastiest, best-looking Asian cuisine in Newcastle.

Y

ou’d be forgiven for thinking that great Japanese food stops at sushi and soup, but venture inside Aveika and you’ll soon discover that its offering goes above and beyond - and it’s a million miles away from what you might find in a soy-drenched takeout box. The restaurant’s mouthwatering menus straddle both the traditional and the ultra-modern and

have earned it legions of foodie fans since its opening in late 2015, all of whom flock here for a true taste of the orient with an added VIP edge that is synonymous with Gainford Group. Fun and inventive food done properly is the name of the game here - something that kitchen frontman, Lee Hardy, knows a thing or two about. In a career that has taken him from street food to fine dining, the Yorkshire-born chef has travelled worldwide - to kitchens in Shanghai, Hong Kong

and Dubai - all in the name of bringing healthy and authentic Asian flavours to the UK. Not bad at all for a guy who kicked off his cooking career as a 15-year-old dish washer back in his hometown of Halifax. “While I was doing my A-Levels, I had a part-time job at a local restaurant washing dishes. As time went on, more and more chefs started to leave and one day the head chef turned to me and asked if I fancied giving it a go - just like that.”


“I started doing a few hours on a Sunday around studying and found that I really enjoyed it - I seemed to have a natural knack for it. Long story short, I ended up liking it so much that, eventually, I said goodbye to college in favour of doing the chef thing full-time - so you could say that the culinary life chose me. “As a teenager, I saw the job as nothing more than a way of making a few quid and eating free food - little did I know that it it would turn me into a chef and kick-start my career!” Moving to the North East for a job centred around Asian delights started his love affair with Japanese food. “It was the first time I’d tried my hand at Japanese and Chinese-style cooking, but I took to it immediately and soon fell in love with it. It was everything I had been doing before, only more,” says Lee. “It is such an exciting way of cooking - you use so many unique and versatile techniques - and I love creating fresh, made-to-order dishes. “You very rarely prepare anything in advance - only the ingredients. I worked alongside some

really talented Asian chefs there and learned a lot - which only spurred me on.” After moving up the ranks and spending some time as head chef, Lee went it alone to dabble with Japanese street food. Armed with a gazebo, he put his experience and talents to good use, rustling up speedy and flavoursome hand-held delights for the public - inventions that soon caught the eye of Gainford Group, who offered him a position at their sparkling new restaurant. Today, Lee heads up a team of eight chefs, a diverse and passionate bunch, all with the same agenda - to put out the best Japanese food in Newcastle. “I’m very lucky in that each and every one is a master at what they do - they’re incredibly skilled - and I can rely on them all individually to get the job done.” “One of the biggest battles you face when running a kitchen is ensuring that customers receive the same quality every time they visit, but I know that every member of my team can work on every section - nobody’s talents are limited.” “It’s a huge advantage, as it means we very rarely

have a bad service and the atmosphere is always upbeat. Having great people around me keeps me inspired in the kitchen.” The result of their teamwork and expertise is an exciting menu brimming with flavour and flair; a fusion of classic appetisers, traditional robatagrilled meats and sensational sushi and sashimi, together with signature Asian dishes with contemporary twists to keep diners on their toes. There are sharing platters too, perfect for hungry parties. The aim, Lee explains, is to offer something for everyone, from adventurous eaters to the most dubious of diners. “The food at Aveika is inventive - but it’s not intimidating,” says Lee. “Yes, we’re always trying to push forward and be creative - experimenting with flavours and playing with ideas is something we do a lot of - but you won’t find anything scary on the menu. Japanese food has this reputation for being overly complicated and centred around weird ingredients - but that’s not the case here.” “We only use high-end meats and fish. Things like our Wagyu beef - a delicacy in Japan - which >

Other places will import it from overseas. Our fish is as fresh-as-can-be, too, and many of our dishes are unique to us - you won’t find them anywhere else in the city.” “Our Chicken Katsu, for example, is one of our bestsellers. In our first year, we made around 12,000 of them. Many people order it because they consider chicken to be a safe option, but are surprised to discover that it’s actually a really tasty dish. Chicken breast covered in breadcrumbs, with steamed rice and a pot of a Japanese-style curry sauce - nothing flash, but still with a neat Asian kick. We also do a lot of cooked sushi - it isn’t all raw!” And it all looks every bit as good as it tastes great news for the armies of Instagram addicts that regularly walk through Aveika’s doors. “It’s funny because the chefs over in Japan aren’t as bothered about presentation - they just want the dishes to taste good,” says Lee. “But in this country, especially in this day and age, it’s all about social media. I’ll observe dinner here at Aveika and, I swear, nine out of ten people will spend a good five minutes photographing their food before they even pick up their chopsticks.” “As a chef, you just have to accept that that’s the culture we’re living in - and it does sometimes

make you think twice about about what you’re putting on people’s tables. Fortunately, I think our food really looks the part and I do quite like Instagram myself.” “I enjoy taking quick snaps of our dishes and messing about with step-by-step how-to photos. It’s a way of showing off what you can do - and attracting new customers. Aveika’s Instagram page is really popular.” And it’s not just Newcastle’s happy snapping foodies that are taking notice of Aveika’s pretty plates. The restaurant is regularly frequented by celebrities, who stop by to chow down in the restaurant before drinking and mingling underneath the chandelier. After all, while Aveika’s cuisine may be kind on the wallet, its undeniable that this is a place to indulge in evenings out with a high-class edge. “I won’t lie - it’s always nice to get famous faces in,” says Lee. “Celebrities telling their hundreds and thousands of followers on social media how much they like your food is never a bad thing, let’s face it. It’s a big compliment. “But that’s the great thing about Aveika - we like to think that it appeals to all kinds of people. People who are passionate about good food and who are looking for an exciting dining experience, and those who like to kick-back and drink in luxurious surroundings. It has it all - and certainly stands out.”

FOOD FACTS Food heaven? Our very own kimchi mayo. You’ll find different versions of it, but ours is unique. So many people ask for the recipe, or if they can take some home with them. It’s great with meat or fish. Favourite dish to make? Scallops. All you need is a good non-stick pan, a nice butter emulsion, a bit of seasoning and a good squeeze of lemon - there’s nothing better. An Aveika must-order? I’d say the Kakugiri tuna sushi roll. It’s lightly fried and quite spicy.

Food hero? I don’t really admire a particular person - it’s more about what chefs do with their ingredients, and the places they travel to to cook, that inspires me. Gourmet travel destination? Dubai is out of this world. They do phenomenal sushi over there. Favourite ingredient? Garlic - I don’t think anyone could live without it. Last meal? ‘American chicken’. Chargrilled chicken breast on toasted cinnamon bagels with a thick sauce made with double cream, creme fraiche, onions and pancetta. Pop some Monterey Jack cheese on top, stick it in the oven, and it’s done. Not at all healthy, but it tastes amazing. I’d die a happy man.

Daburuw kani (soft shell crab) serves 1 1 x soft shell crab 195g sushi rice 97mls sushi vinegar 1 green apple ½ nori sheet 20g shredded carrot 20g shredded cucumber 30g white crab meat 48g caster sugar tobiko (flying fish roe) 250g nippin flour (tempura flour) ice

For the rice - In a strainer rinse the rice until the water runs clear. - Combine the rice with 292ml of water. - Bring to the boil and reduce the heat to low.

- Cover and cook for 20 minutes. - The rice should be tender and all the water absorbed.

For the vinegar - While the rice is cooling, in a sauce pan combine the vinegar, sugar and cook over a medium heat until until the sugar has dissolved. - When the solution has cooled add the apple and blend. - Add the apple vinegar solution to the sushi rice, it will appear quite wet but stir in and as the rice cools it will absorb and become sticky.

For the sushi roll - When the rice is cool, lightly press 100g rice to ¾ of the nori sheet. - Turn the sheet over so the rice is face down. - On the section of the nori sheet that has no rice on at all, place the cucumber, carrot and crab. - Then using a rolling mat, lightly press the roll into your desired shape.

For the soft shell crab - For the tempura flour simply whisk carbonated water into the nippin flour, do not over whisk, leave some small flour pockets, these will pop in the fryer and create a crispy batter. - Add 3 or 4 ice cubes to the batter. - Lightly flour the crab. - Coat the crab in the tempura batter & shallow fry until golden brown.

For serving the sushi roll - Cut the crab and roll into 3 pieces, sit the crab on top of the sushi. - Finish with tobiko and serve with soy, ginger and wasabi.


Pan fried duck breast serves 2 2 x gressingham duck breasts 100g shiitake mushrooms 300ml hoi sin sauce 300ml vegetable stock 4 sweet potatoes 100ml double cream 50g butter 2 cloves garlic 2 banana shallots 10 spears of asparagus 10 baby carrots 2 heads of pak choi sea salt

For the sweet potato purée - In a pan of seasoned water boil 3 sweet potatoes until soft. - Remove from water and steam for 30 seconds to remove excess water. - Heat the butter and cream on low heat until the butter has completely melted. - Whisk the cream into the potato until it is extremely smooth.

For the sweet potato crisps

For the hoi sin and shiitake sauce

- For the sweet potato crisps use a potato peeler to make long shavings and shallow fry until golden brown.

- In a pan heat a teaspoon of oil and add the banana shallots. - Cook until soft then add the garlic and shiitake mushroom. - Cook for 3 minutes and add the vegetable stock. - Reduce by ²/³ and add the hoi sin sauce. - Cook through and season to taste. - Steam the asparagus, carrot and pak choi for 2-3 minutes and season with sea salt.

For the duck breast - Lightly score the skin of the duck breast and season well with sea salt. - Heat a teaspoon of oil in a non stick pan. - Place the duck breast skin side down and cook until the skin is golden brown and crispy. - Turn over and seal the rest of the duck breast. - In a preheated oven 190°C cook the duck breast for 7-10 minutes depending on how rare you like it.

For plating the dish - On the plate swipe a good spoonful of sweet potato purée, followed by the steamed vegetables. - Cut the duck breast into 6-8 slices and lay over the vegetables. - Place the sweet potato crisps around the plate. - Drizzle the hoisin sauce and shiitake around the plate

- After marination gently scrape off excess miso paste from the cod. - On a baking tray with parchment bake the cod in a preheated oven 190°C for 10 minutes.

For the miso butter - add 3 teaspoons of the miso to soft butter. - Add the coriander and chilli to the butter and mix well. - Place the butter mix on cling film and form into a cylinder shape place in the fridge.

For cooking the vegetables - While the cod is baking, steam all the vegetable for 2-3 minutes. - Finish the vegetable in a pan with a couple of slices of the pre made miso butter. - Heat the remaining miso marinate on a low heat. - Serve the miso buttered vegetable, cod and miso sauce on the plate.

IN THE KNOW WYLAM WONDER The Vermont Hotel has joined forces with the artisan drinks movement to create the Vermont’s very own craft ale. Brewing sensation Matt Boyle brings the genius of Wylam Brewery to the hotel with a real taste of authenticity. Vermont pale ale is a classic and palate-friendly pale ale with a fresh citrus taste and autumnal spicy notes. Engineered by Matt it is intended to replicate the quality and class of the hotel itself. A fine addition to Matt’s lineup of premium brews it stands side by side with his many bestsellers including, Writer’s block, Wylam Rocket and Wylam Angel. Conceptualising a beer is a precise art. Says Matt: “We select a style, tailored to the criteria of the client. Next on the agenda comes devising a bespoke recipe for the ale. What taste are you going for? The diversity of beer and wide variety of hops means that thought must be given to the distinct taste you’re going for.
