he Maven opened its doors in the spring of 2019 and joins Gainford Group’s award-winning family of bars and restaurants, alongside The Hudson, Aveika and Livello. Elegantly furnished and decorated with plush velvet seating, dark mahogany tables, candlelight, and beautiful white flowers, the low-lit and intimate venue is the perfect place for cosy date night dinners, special occasions and private parties, mid-week catch-ups with friends and weekend family gatherings. Gainford Group’s executive chef, Ken Thompson, and The Maven’s current head chef, Kris Campbell, have worked hard to create the best menus possible; an exciting and unique a la carte offering, serving up flavours from all corners of the globe, an afternoon tea menu that caters to the whole family and all occasions, and inventive Sunday lunch options to round off the week in style. “Guests can expect an eclectic range of dishes here at The Maven, inspired by cuisine enjoyed around the world,” says Kris. “I wanted the the food to appeal to everyone including the hotel’s international clientele - so variety was important to me. “I really liked the idea of creating an environment in which guests can come in for afternoon tea, a north Indian curry, traditional fish and chips, or a Greek-style mezze sharing board. Something for all tastes and appetites. “Many hotel restaurants only attract hotel diners, but our hope is that The Maven will break down barriers and shine bright as both a respected hotel restaurant and an exciting stand-alone venue in Newcastle’s ever-growing food and drink scene,” says Ken.

Starters range from tempura king prawns and fresh Scottish mussels, to char siu belly pork, chilli cumin and lentil dhal and roast garlic, cheddar and ale soup; while mains include spiced salmon fillet, north Indian lamb curry, basil pesto linguine, grilled halloumi salad, a speciality ‘Maven’ burger and grilled steak. Groups of hungry diners, meanwhile, can pick from one of the kitchen’s four sharing boards, inspired by Mexican, Greek and Italian flavours. And if dessert is your thing, there are plenty of sweet treats to settle on - everything from Earl Grey panna cotta and lemon pie, to sticky toffee pudding, chocolate and ricotta cake and raspberry crème brûlée.

The Maven offers five delicious options to choose, depending on how hungry or fancy you feel. If you’re after a quick breather, then cream tea is a great option; freshly-baked sweet scones with clotted cream and preserves and your choice of tea or coffee. For special occasions, or if you’re in the mood for a sweet treat, then the kitchen’s traditional afternoon tea is a real winner. Alongside sweet and savoury scones and tea or coffee, diners can enjoy dainty finger sandwiches with gourmet-style fillings and a tempting variety of mini desserts and pastries, made by skilled hands. Vietnamese shaking beef For the stir-fry liquor 3 2 2 1

tsp fresh lime juice tsp fish sauce tsp sugar birds eye chilli, chopped

For the beef marinade 250g fillet steak, sliced into strips 2 tbsp vegetable oil 2 tsp oyster sauce 1 tsp light soy sauce

Stir-fry vegetables 1 clove of garlic, sliced Âź pineapple, diced 8 basil leaves, torn Âź red onion, thinly-sliced 1 handful of watercress, torn 4 cherry tomatoes, halved

To garnish Shallots, deep-fried Coriander

To make the dressing, combine the lime juice, fish sauce, sugar and chilli in a bowl and mix until the sugar has dissolved. To make the marinade, combine all the vegetable oil, oyster sauce and light soy sauce in a bowl and place the beef in the liquid. Set aside for up to 30 minutes, allowing the flavours to infuse the meat. Prepare the stir-fry ingredients and set aside. Put a non-stick frying pan on the heat, then add a splash of vegetable oil. Wait until the pan is smoking hot, then add the marinated beef, caramelising on both sides. Add the vegetables and stir in with the beef. Add the stir fry liquor to deglaze the pan and let this reduce by half. Add the watercress and serve. Serve with torn basil, coriander and deep-fried shallots.

METHOD Using the spirit measure, pour all ingredients into a cocktail-shaker filled with ice cubes. Securing the lid, hold the shaker with both hands (one on each piece) and shake vigorously over your shoulder. Shake all the ingredients together, then strain the contents into a sling glass. Top up with a splash of Pepsi, garnish with a lemon slice and enjoy.

Amy Turner and Marc Philip Lennox chose The Vermont Hotel as the setting for their modern fairytale wedding. Here, the couple unveil the story behind their big day‌


The meet: Amy and Marc met back in 2009 in a bar in Newcastle. Marc was a close friend of Amy’s sister, Laura, and when the pair were introduced, they hit it off straight away. The proposal: The pair got engaged on 16 May, 2016. Marc organised a surprise flight from Newcastle International Airport to the coast. While flying above Tynemouth, at 2,000 feet, Marc got down on one knee and popped the question. The plan: The couple tied the knot on 6 October, 2018. On the night before the wedding, Amy and her bridal party laid their heads in the hotel’s luxurious Presidential Suite, which comes with an adjoining twin bedroom. On the morning of the wedding, after a relaxing breakfast together in the comfort of their suite, Amy sat down to get her hair and makeup done by North Shields hairdressers, GM Hair, and Kitty Kerry MUA. Videography also took place in the suite. On the night of the wedding,

Amy and Marc had the suite all to themselves. Big day details: Award-winning wedding band, Hip Operation, serenaded the couple and their guests on the day, while Grey’s Events provided evening entertainment in the form of casino tables. The pair worked with Gateshead-based wedding and event styling company, The Whole Sch-Bang, to bring their dream wedding to life in the form of table decor and flowers. They wore: Amy wore a blush pink Mori Lee gown, complete with a beautiful lace train, which she purchased from Brides Dream in Newcastle. The bridesmaids’ dresses were from online fashion brand, Little Mistress, and the men wore Moss Bros 1851 Jacquard Tuxedos. Picture perfect: The guys at 14photographers captured Amy and Marc’s special day. Photos were taken at the hotel’s Sky Lounge & Garden, on the Moot Hall steps, opposite the hotel’s main entrance, and on Newcastle’s High Level Bridge.

Food, drink and fun: For fun favours, the couple gave their guests miniature bottles of vodka and Kraken Black Spiced Rum - their favourite spirits. And because the pair are big fans of Indian food, catering on the night was provided by Sachins, one of Newcastle’s best-loved Indian restaurants. Local cake-makers, Captain Cake, made the couple’s three-tier creation. Why they said yes to The Vermont Hotel… “It was our dream venue. We had particular desires when it came to our big day and the hotel’s fantastic wedding coordinators worked so hard to deliver exactly what we had in mind, from decorating the room for our ceremony and evening reception, to having a traditional Indian feast as our wedding breakfast! Ken Thompson is Gainford Group’s executive chef. Originally from Blaydon, he’s worked in the industries of food, hospitality and people development for over 20 years...

GET TO KNOW KEN THOMPSON When I was younger, I flirted with the idea of joining the police. But then someone told my father, ‘get your boy into cooking and he’ll never be out of a job everyone has to eat’ and I soon found myself at college in Newcastle, doing an advanced Level 3 course in professional cookery. Fortunately, I really took to it and the rest is history.

Travelling had a huge impact on my life and career. After college, I embarked on a round-the-world trip, which saw me working in kitchens in places such as Sydney and Brisbane. I learned a lot skills-wise and gained great cookery experience, but it probably helped me more as a person. I grew and matured so much as an individual; it instilled a lot of discipline, confidence and professionalism in me at a young age.

I’ve been lucky enough to work for, and alongside, some great organisations and people throughout my career. Back in late 80s, I was sous-chef to the great Terry Laybourne at Fisherman’s Lodge in Jesmond. When I returned home from

travelling, we crossed paths again and I joined him in the kitchen at his restaurant, 21, on Queen Street, Newcastle. I went on to spend seven years at his company, 21 Hospitality Group, as group kitchen manager. I’ve also worked for Marriott, St James’ Park and Newcastle College.

I’ve always had an interest in people development. My career has seen me take on three roles in education at Newcastle, Darlington and Tyne Met Colleges as a part-time catering lecturer. Training and nurturing young people - budding chefs - is a real passion of mine. It’s all about helping them reach their potential.

What most drew to me to Gainford Group is that it’s a family business. I was really inspired by its story and how it has grown and flourished over the years, thanks to the Khaliq’s hard work and dedication. It’s a business, but it’s rooted in family values and I really respect that. Everyone involved is committed to its success and working here feels like being a part of something incredibly meaningful.

My role at Gainford Group is full of variety - which I really like. My main focus is supporting the chefs in the group’s restaurants in terms of personal development and training, but it also involves me focusing on menu content, recruitment, liaising with suppliers, organising student placements, food safety and sourcing the very best produce for each of the kitchens. There’s lots to do and no two weeks are the same.

A kitchen is only as good as the people in it. The way I see it, in my job, I’m the coach and they’re the football team - the youth squad. It’s up to me to get the most out of every player by encouraging them and supporting them in any way I can.

I try and cook as much as I can at home. But the kitchen is mainly my wife’s domain - she’s a great cook. Dining at home has always been a family experience; sitting around the table with the kids, enjoying everything from Mexican and Indian food, to traditional roast dinners. My favourite food to cook is traditional, hearty French cuisine. It’s the way I was trained and I’ve had a love for it ever since.

Grilled prawns with chilli and roast garlic and miso butter 20 large red prawns 1 bulb of garlic, roasted until soft 3 red chillies, deseeded and thinly-sliced 4 tablespoons of white miso 250g unsalted butter, softened A sprinkling of sea salt 1 lemon, cut into wedges Rapeseed oil Chopped parsley 20 skewers To make the roasted garlic and miso butter, roast the bulb of garlic in a hot oven for 1520 minutes. When soft, blend with the white miso and softened butter and set aside. Skewer the prawns from the tail up through the body, rub with rapeseed oil and season with salt. Place on a hot griddle, or in a pan, and cook each side for approximately three minutes until noticeably charred. Transfer the prawns to a tray and smother generously with the roasted garlic and miso butter. Place in a hot oven for a further four minutes. To assemble the dish, take the prawns out of the oven and serve on a warm plate with a wedge of lemon and a sprinkling of chilli and parsley.

Jessica Rose March and Alexander James chose The County Hotel as the setting for their sophisticated wedding. Here, the couple unveil the story behind their big day‌

The meet: Jessica and Alexander met at Ponteland High School in Northumberland and have been together since. They celebrated their 11-year dating anniversary the day before they said their vows. The proposal: The pair got engaged on 19 April, 2018. They were living in London at the time and after a day spent together in Greenwich Park, Alexander got down on one knee in the comfort and privacy of their home. The plan: The couple tied the knot on 5 April, 2019. On the night before the wedding, while Alexander stayed at the couple’s home in Dinnington, Jessica settled in the hotel’s luxurious Penthouse Suite with her mother and sister. Before she said ‘I do’, Jessica did her own makeup and local hairdresser, Aimie Foster, took care of her wedding day locks. The couple stayed in the Presidential Suite on the evening of the wedding.

Big day details: Jessica and Alexander said ‘I do’ in Newcastle Civic Centre, before making their way to The County Hotel. Jessica, with the help of her mother and sister, created all of the breathtaking flower arrangements and bouquets, and for entertainment, the couple enlisted the help of Brent March Music and Paul Lytton, otherwise known as The North East Magician, who entertained guests throughout the day. They wore: Amy wore a chic, figure-hugging gown from a unique wedding retailer in Newcastle, while Alexander and his best men wore speciallytailored suits from Moss Bros. We also love the history behind the building - it’s stunning. Two of our wedding guests actually got married at The County back in the 70s! Nomad sushi 80g sushi rice Half a nori sheet 2 tablespoons tempura flakes (tempura batter, deep-fried until crisp) 1 and a half tablespoons of apple salad (50g mayo, 30g orange tobiko, 1 whole apple, cut into thin sticks) 50g smoked eel 2 strawberries, whole

Cut the nori sheet and add the sushi rice,making sure the nori is completely covered in rice. Flip the nori sheet over and sprinkle with tempura flakes. Add the green apple salad and gently roll into a cylinder, pressing as you go. Once you’ve achieved a cylinder shape, put the sliced eel and sliced strawberry on top, wrap in cling film and then portion out the sushi.

INSPIRING SUPPORT Gainford Group offers a helping hand to PIE Project… Giving back to its local - and wider - communities has always been a big part of Gainford Group’s ethos. Today, the Group is a proud supporter of 17 regional and national charities, all of which go above and beyond to help those in need, from babies and young children, to teenagers and veterans. Most recently, the Group joined forces with The Primary Inspiration through Enterprise (PIE) Project. Established in 2013, the Newcastlebased organisation aims to build effective business links with schools, helping children (as young as eight-years-old) and young adults realise their ambitions and go after the career of their dreams. It’s also the first UK initiative to deliver accredited vocational qualifications, such as its NCFE Qualification, to primary and secondary schools.

The hope is that students develop the knowledge, attitudes and life skills they need to succeed. Its founder, Ammar Mirza CBE, patron, Sir John Hall, and president, Bill Midgley OBE, continue to work closely with a vast number of North Eastbased organisations and businesses, including Gainford Group, which have kindly dedicated significant time, effort and money to make a difference to their local communities. Recently, Gainford Group showed its support for the charity’s BIG PIE Friday Challenge. Targeting nine, ten and 11-year-olds, it aimed to engage, inspire and educate future generations in science, technology, engineering, enterprise and mathsbased activities. Pupils from five North East schools took part in a day of enterprise, during which they competed

at completing various tasks in record time. They also had to plan, create and sell something with the support from local businesses and complete a formal qualification, before being judged on the profit they made. Each of the Schools will be allocated a ‘PIE’Oneer’ – someone from industry - to help them through the challenge and independently validate the competition. Ammar Mirza CBE, trustee of PIE Project, said: “The level of support and interest from the public, private and third sectors for the challenge was overwhelming. We had small and big businesses coming together to support our common purpose; improving life chances and enhancing life choices for young people, regardless of their background. “I am also grateful for the significant support from a number of organisations that recognise the valuable work of the charity. As Miss Newcastle enters another exciting year, Gainford Group is proud to continue hosting the event in partnership with Tyne Tees Models…

ach year, Gainford Group joins forces with the North East’s largest model agency, Tyne Tees Models, to host Miss Newcastle. The event, which has been going strong for 12 years, has raised over £100,000 for local charities and is now considered one of the biggest, most prolific and most celebrated charity events in the North East’s social calendar. Each year, Miss Newcastle brings together local businesses to raise vital funds for local charities

and showcases a selection of the region’s most talented and beautiful young ladies. 13 finalists are chosen in various heats, hosted across the region by the competition’s big-name sponsors, which in the past have included Newcastle Racecourse and international brands, Topshop to Charlotte Tilbury. The hopefuls are then given a four-month period to step out of their comfort zones, be selfless with their time and individually raise as much money as they can for the competition’s chosen charity all in the lead up to an exciting black-tie final.

This glittering event always pulls out the stops, providing an opportunity to celebrate all of the ladies’ achievements and raise even more money for local businesses. Just last year, the fundraising funds from all 10 finalists, combined with the money raised at the final, amounted to an impressive £20,000 for the Evening Chronicle Sunshine Fund. But the fun doesn’t stop there. The final also sees a judging panel crown a worthy winner; a young lady who has gone above and beyond in her money-making efforts and who has dedicated


time to her local community and those in it. For many, winning the title - and the tiara can be be life-changing. A number of past competition winners have gone on to carve out successful careers for themselves thanks to the experience and the exposure the event provides. Now signed to Tyne Tees Models, 2017’s winner, Alisha Cowie, continues to enjoy a successful modelling career. She is also the current reigning Miss England and has represented the country at the Miss World Final in China. Over the years, Miss Newcastle has supported the likes of the RVI Hospital’s Tiny Lives Trust, Percy Hedley Foundation and The Chronicle Sunshine Fund, and fundraising efforts have even included a sponsored trek to the Grand Canyon. This year - the 12th year of the competition the spotlight was once again on the Evening Chronicle Sunshine Fund. The Newcastle-based charity provides specialist equipment to hundreds of disabled children in the North East every year. Applications are at an all-time high, however with the financial help and support from Miss Newcastle, both Gainford Group and Tyne Tees Models hope to help even more children reach their potential and live life to the fullest. This year’s finalists exceeded all expectations in their efforts to raise as much money as possible. Armed with their signature yellow buckets, the ladies drew on their own individual interests and networks to set up a range of fun and creative events, from dog walks in Newcastle’s Exhibition Park, to Easter bonnet parades at local schools, special ‘pamper days’ in partnership with The Body Shop and team bag-pack events at local supermarkets. Over 300 people - the largest number to date - applied for this year’s competition, which took place at The County Hotel on June 14. Hosted by Capital FM presenters, Bodg, Matt and Hannah, the event was bigger, better and more glamorous than ever before, themed around ‘The

Year of Aphrodite’, drawing inspiration from the Greek goddess of beauty and love. The event opened with a dramatic dance sequence, followed by a jaw-dropping catwalk show. Before a panel experienced industry professionals, finalists showed off their stuff in a bid to win not only the Miss Newcastle crown, but a place in the Miss England Final and a contract with Tyne Tyne Models. Guests will also enjoyed live performances, music from guest DJs and, in true Gainford Group style, plenty of bubbles to kick-start the celebrations and keep them flowing all night long. Commenting on another successful year, Gainford Group owner, Imran Khaliq, said: “Gainford Group are very proud to host the Miss Newcastle event and we are delighted to have exceeded our fundraising target with £30,087.00 going directly to benefit young people with special needs in our region.” “The Miss Newcastle event is a positive showcase for young women in our region, encouraging them to step out of their comfort zones and help build confidence, while directly benefitting the charity via their fundraising in the community.”

MISS NEWCASTLE 2019 This year’s heat saw young women from all over the North East - from Whitley Bay and Wallsend, to Chester-le-Street and Cramlington - compete, helping spread the word about the Evening Chronicle Sunshine Fund across the width and breadth of the region. In the end, it was 19-year-old Monet GrantChowdhury of Chester-le-Street, who was crowned 2019’s winner. Commenting on her win, she said: “I was completely lost for words. I didn’t know what to say or what to do. I was not expecting it at all. The competition was tough and all the girls worked so hard - every one of them deserved to win.” Monet, who is currently studying interior design at Manchester University and also works parttime as a nursery nurse assistant, says she feels extremely passionate about supporting children and charities that help youngsters in need.

A range of different employers attended the glittering event, as well as many members of the Armed Forces, all of whom were in different stages of their journey.
