The Gainford Gateway Gainford Group’s new city centre project promises to bring an unloved area of Newcastle back to life.

G

ainford Group is developing a stunning new hotel and leisure project in the heart of Newcastle which will provide an exciting new gateway into the city centre. The company has bought the former Premier Inn on New Bridge Street in the heart of Newcastle and the building will form the basis of a new hub of bars, restaurants, meeting spaces and gardens. A dazzling illuminated ‘Jewel Box’ will be a bold talking point forming a glass viewing area overlooking the city and towards the River Tyne. The development will also mark the site of a new ‘blue carpet bridge’ over the central motorway which will create a brand new route in to the city for the growing number of students living in the vicinity as well as for visitors to the central area of Newcastle. Gainford Group believes the

development will be an exciting part of the changing face of Newcastle city centre, taking an unnattractive brick building – almost a barrier to the city centre – and creating an inviting and safe gateway into Newcastle. The new project will regenerate the area and change the view into the city, creating a vista from Sandyford to Grey’s Monument. There will be a four-star hotel on the site and then a range of high-end eating places, cafés and bars as well as a spa and fitness centre. A rooftop bar will also make the most of building’s cityscape views. The project will also provide Newcastle’s biggest conferencing space with facilities for events for 500 people. The Blue Carpet gateway bridge will provide an easy and safe connection between the city and Northumbria University for students with a pathway and cycle route.

This will be a massive improvement for students who use the route to get to their studies – a seamless streak of blue paving which will be safe and accessible. It will also encourage a flow of pedestrians to walk into the city centre. This is being encouraged by the Government in terms of health – as a deterrent from taking cars in to the city centre – and therefore lowering unhealthy car emissions. Gainford is proud to be working alongside Newcastle City Centre on the project, which will genuinely create an urban regeneration and boost for the city. The exciting development will change the face of a gateway route to the city, benefitting many people, providing a luxurious collection of new leisure venues. Work will start on the project in 2018 with completion by late 2019.

If you like your comforting classics… there are so many, but my top dishes would be the lamb shank, pork tenderloin or open vegetarian lasagne.

If you want to indulge… try the the trio of desserts. You get cheesecake, sticky toffee pudding and one of the best brownies you’ll ever taste in Newcastle.

Chicken forestiere Chicken supreme breast, French trimmed 1 large Red Rooster potato 1 head hispi cabbage 50g wild mushrooms 50g smoked pancetta lardons 50g silverskin onions 175ml red wine jus 5 cloves of garlic, crushed 2 sprigs of thyme 250g butter 100ml rapeseed oil 50ml double cream A splash of white wine Maldon salt Black pepper Pre-heat your oven to 190 degrees and bring a pan of salted water to the boil. For the chicken, you will need a nice large plump breast. Begin by removing the skin around the bone and trim off any fat from the side of the supreme. To make the fondant potato, you will need to

turn the potato on its side. Trim each end to your desired thickness - about two inches. Lay the potato flat and, using a metal ring, cut out the potato. Using a speed peeler, trim around the edges of the potato to form a smooth edge. This will help prevent the edges from burning when cooking. Heat a heavy-based pan and, when hot, add half the rapeseed oil. Add the potato and colour on the one side. When its starts to turn golden in colour, flip it over. Add 200g of the butter and half of the garlic and thyme. By now the butter should be what we what we call ‘noisette’ - like a golden foam, with a slight nutty smell. Place the fondant in the pre-heated oven for approximately 20 minutes, or until a knife goes through it with little resistance. Heat another pan and add the remaining rapeseed oil. Place the seasoned chicken supreme skin side down and seal until the skin is a golden colour. Flip the chicken over, then add the remaining garlic and thyme. Place the pan in the oven.

The chicken will take approximately 11 minutes, but probe to 75 degrees next to the knuckle to be sure. Remove the chicken from the oven and baste with the remaining butter. Tip the chicken and the contents into a resting tray. For the hispi cabbage, cut into four equal quarters and remove the stalk. Add one quarter to the boiling water for approximately two minutes. Heat a pan while you wait. Add the cabbage to the hot pan with a knob of butter and season. For the forestiere sauce, take a heavy based sauce pan and brown off the silverskin onions, pancetta and wild mushrooms. Deglaze the pan with a splash of white wine. Add the jus to the pan, along with the double cream, and bring to the boil. To assemble the dish, place the fondant potato at the head of the plate, the hispi cabbage off centre and lay half of the chicken on the cabbage. Spoon the sauce around the plate and over the chicken.

Meet the mixologist

I’ve been a part of The Hudson team since the bar opened… and it’s been amazing to see how well-loved it has become in the city. It’s unlike any other venue you’ll find in Newcastle; reminiscent of a chic, Manhattan-style bar with a bit of an edge. The atmosphere here is always relaxed - people come here to unwind.

Getting creative behind the bar is what I love most… my first job was making mead on Lindisfarne Island as a young lad and I’ve loved working with alcohol ever since. Being a mixologist at The Hudson means you’re given the chance to get creative and experiment - I love making new cocktails for the menus.

Meeting new people on the job keeps things interesting… you never know who you’re going to meet. I love nothing more than when someone takes a seat at the bar and conversation starts flowing. The bar’s location opposite Central Station means many customers are travelling visitors and I love hearing their stories.

Favourite drink to make? Our Colour of Gin cocktail, which is a mix of Star of Bombay gin, lime, our homemade tonic and magic ice. It changes colour from blue to pink as you add the tonic - it’s a real showstopper.

The Hudson is The County’s sparkling cocktail spot; a classy bar serving expertly-crafted cocktails, from magnificent martinis to elegant, spiritled concoctions. The place to be for distinctive after-dinner drinks and fizzy toasts to the weekend.

Top tipple to drink? A simple gimlet cocktail - gin, lime juice and sugar. I’m a very big gin fan.

Hudson must-order? The Rhubarb One. It’s unique; sweet, but with a slight bitter tang, made with rhubarb and ginger gin, strawberry liqueur, notes of ginseng, grapefruit and more. METHOD Add all ingredients into a Boston cocktail shaker. Shake and strain into a martini glass, rimmed with a small handful of crushed pistachio nuts.

What’s in a name?

The venue takes its name from George Hudson one of the greatest railway pioneers of the 19th century. Known to many as the ‘Railway King’, he was responsible for putting the North - and particularly Newcastle - on the map as one of the UK’s major railway hubs. The track master died in 1871, but his legacy lives on through Newcastle’s vibrant city centre, its transport links, grand Central Station - the very place Hudson helped transform into a renowned landmark and now, The Hudson.

The kitchen’s power pastry team put their all into the selection of dainty finger food, spoiling guests with mini morsels that not only show off their impeccable patisserie skills, but deliver in flavour and presentation. Think handmade cheese and fruit-studded scones, the finest macaroons dusted in edible glitter and sophisticated sandwiches, from cream cheese, smoked salmon and cucumber on rye, to rustic sourdough with Mediterraneaninspired toppings. For chocolate-lovers, there’s the Hudson’s renowned brownies to try, plus a selection of fancy French desserts and even mini milkshakes. Enjoy yours with tea or fizz.

Sunday feast

The Hudson’s Sunday lunches options promise all the comfort, but with added elegance. Starters range from moules marinière and oak-smoked salmon, to chicken liver pate with Madeira jelly and rolled goat’s cheese, while mains include traditional roasts, served with homemade stuffing and Yorkshire pudding and proper roast potatoes, pan-fried salmon, lamb rump and the kitchen’s ever-popular open lasagne for vegetarians. Groups of hungry diners can order the sharing board, which serves up pork loin, chicken breast and sirloin of beef together with crispy crackling and all the trimmings.

ach year, the North East’s frontrunners in the worlds of business and charity come together to celebrate the region’s most accomplished and inspirational women at The Chronicle Sunshine Fund Glass Slipper

Awards. Held at Hilton Hotel Newcastle Gateshead, the glittering ceremony recognises a selection of local women for their success and positive impact on their community, from dedicated fundraisers and ambassadors, to hard-working leaders and high-achievers. With awards such as Newcomer of the Year, Young Achiever, North East Champion, Outstanding Business Leader, Women in the Community, Woman of the Year and Judges’ Recognition Award up for grabs, the evening is filled with promise and positivity, shining a light on the inspiring actions and deeds of the nominees - and the ways in which they are flying the flag for the North East.

This year, one of the ceremony’s highest and most celebrated accolades - The Lifetime Achievement Award - was awarded to Susan Khaliq. The award salutes the work of one remarkable and passionate woman who has made a considerable and lasting contribution to the North East, either through business or another worthy cause. Described by judges as ‘more than your average superwoman’, the recipient is someone who has made a impact in society and improved the lives of others - worthy achievements that many associate with Susan. Through her successful care home business, which she owns with her husband, Mohammed, she has been able to transform the lives of many elderly and vulnerable people living in the North East and the North, providing them with the highest quality care and facilities. Established in 1995, Gainford Care Homes Limited has built a solid reputation; the business places a huge emphasis on the treatment of its

residents and has a dedicated team of nursing and residential staff who are on hand 24 hours a day to ensure that those in their care are always comfortable, content and treated with dignity and respect. In addition to elderly care, the business, which now operates 14 care homes and employs more than 1,100 members of staff, also offers a range of specialist services, helping more than 15,000 people with physical and learning disabilities, dementia or Alzheimer’s disease. Susan who in her downtime, enjoys spending time with her loved ones and grandchildren, running the family home and singing in the Women’s Choir in Whitley Bay, continues her charity work outside of work. Recently, she trekked across the Grand Canyon, raising an impressive £3,000 for The Chronicle Sunshine Fund, and gave her time as a guide to the blind through Travel Eyes - a tour operator providing independent travel for people who are blind or partially sighted.

After its successful global introduction in 2016, Aston Martin’s definitive GT - the acclaimed DB11 - is now available with a 4.0-litre twin-turbocharged V8 engine. Perfectly complementing the DB11’s existing 5.2-litre twin turbocharged V12 engine, this new powerplant has provided the opportunity to reveal more of the DB11’s sporting character, while expanding its global appeal with a combination of exceptional performance and improved efficiency.

This new V8 derivative brings further significant benefits in markets where car taxation policy is structured around engine capacity, such as China. Aston Martin Chief Technical Officer, Max Szwaj, commented: “As an engineer I find the DB11 a fascinating car. One with great depth of character and ability. One with a distinct and carefully crafted character that’s truly seductive. It has been hugely rewarding to put our stamp on this new V8 engine - both in the way it sounds and performs - and to use its impressive attributes as the impetus to reveal a little more of the DB11’s sporting character.” The inherent qualities of this light, compact and characterful power unit make it the ideal choice. Aston Martin’s engineering team has tailored the V8 engine perfectly for its application in the DB11 with bespoke air intake, exhaust and wet sump lubrication systems. The electronic calibration of the V8

engine has included creating new ECU software and reprogramming the engine and throttle mapping to ensure it possesses the all-important feel and sound for which Aston Martins are renowned. The V8-engine option provided the ideal opportunity to explore the more dynamic side of the DB11’s character and capabilities. To this end Aston Martin engineers designed new engine mounts, which together with the bespoke, slimline wet sump system enables the V8 to be mounted as low as possible for an optimised centre-of-gravity. The V8 engine is also lighter and more compact, which contributes to a saving of 115kg and a kerb weight of 1760kg. With more of that mass centred within the wheelbase, the V8-engined DB11 has an increased sense of agility - a quality that has been fully exploited with detailed revisions to the suspension bushing, geometry, anti-roll bars, springs, dampers and ESP software. By carefully crafting its dynamic character, the V8 appeals to those customers drawn to a refined and comfortable GT with a more sporting bias. There are subtle visual differences that include a unique alloy wheel finish, dark headlamp bezels and a pair of bonnet

vents, these vents come in a choice|of black or titanium-finish mesh, again different from that fitted to the twelve-cylinder variant. Inside the V8 has the same standard equipment levels and the same extensive choice of colour and trim options. They can also elect to enhance the specification of their car via the same Option Packs and Designer Specification packages, plus a suite of Q by Aston Martin - Collection options. our restaurants have only the best ingredients at their disposal… and I still cook wherever and whenever I’m needed. Some days I’ll be making sushi at Aveika, other days I’ll be preparing Sunday roast and rolling out pasta over at The Vermont and The Hudson. With so much variety, every day is an adventure and I’m always learning, whether I have a wok, pot or carving knife in-hand!

I’m not the type to tell chefs they can’t do something in the kitchen… or push them into doing everything my way. You can be the boss and a team player at the same time. I accept that I’m not always right, so I encourage each team to experiment and bring new ideas to the table as often as possible. Developing new menus and dishes is always a group effort; we bounce ideas off one another and see what works and what doesn’t.

I’ve grown a lot during my time working for Gainford Group… I’ve gone through quite a few life changes while on the job, including getting married and becoming a father for the first time. Professionally, I’ve progressed through promotions and now feel like I’m in a really good space. So many chefs feel stuck in their jobs, whereas I feel free in mine. Working at different venues, alongside different people with different skill sets, keeps me inspired.

I take pleasure in creating a staff calendar every year, filled with embarrassing personal photos of everyone. I stick them on the kitchen walls for everyone to laugh at all year long.

I’m not in the kitchen a lot at home… but that’s only because my wife won’t let me! She had barely cooked a thing when we met, but she absolutely loves it now. We like fresh Mediterranean cuisine, lots of salmon and BBQstyle food in the summer. I’m not allowed to do the food shopping though as I get too carried away; my eyes are bigger than my stomach and I always end up buying far too much.

all about the classics I’ve been working as a chef for almost 30 years now… it’s been my job ever since I left school. I’ve done it all; from functions and pubs, to working in fine-dining, brasserie-style restaurants, and I still love it to this day. It’s the same four walls, but every day is different. It’s an honour to work at a hotel as reputable and as loved as The Vermont - our team of chefs here are incredibly dedicated and skilled.

One of the best things about being head chef is the chance to create new and inspiring dishes… our menus change with the seasons and so we’re always looking ahead to the next one, bouncing ideas off each other as a group. It’s a collaborative effort; I’ll decide on one or two new dishes, but I always encourage everyone to pitch in and bring something to the table, as it were. It’s all about team work.

A confident and happy team is the key to success in the kitchen… we create dishes for the hotel’s restaurant, bar and functions, so we all have to be able to adapt and play on different skills on a daily basis. Part of my job is to make sure that the other chefs are focussed, but also proud of the food they’re putting out. If a dish has been made with confidence and passion, it’ll show on the plate.

Standing on your feet 12 to 16 hours a day can take its toll, but as a chef, I thrive on the energy and buzz of the kitchen. You feel really accomplished after a good service, especially when the pressure’s been on. Working with younger chefs is a lot of fun, too. I’m the oldest team member!

Working for such an established and respected company like Gainford Group means you’re free to be yourself… you’re treated like an individual with an identity here, which means a lot to me. Having the room to grow, progress and get creative on a day-to-day basis is great.

FOOD FACTS Culinary hero… the first head chef I worked with after leaving school, at a hotel in the Lake District. He had such a great work ethic - incredibly handson, dedicated and supportive - and it’s something I’ve taken with me throughout my career.

Dream dining partner… Ronald Reagan. The kitchen kit I can’t live without… my little palette knife, which I always keep in my pocket.

Food heaven… a simple pizza - always! Food hell… I’m not a dessert person at all. I’d choose a cheeseboard over a pudding any day.

Favourite ingredient… at the moment, it’s squash.

Last meal… a giant pepperoni pizza.

Pan fried sea bass

with king oyster, celeriac, Marmite and shallot

1 seabass fillet (170g) 1 celeriac, peeled 2 cavolo nero leaves 1 king oyster mushroom Marmite Butter A sprig of thyme Rapeseed oil Salt 1 lemon Pre-heat oven to 180°C. Starting with the celeriac, grab a pastry cutter and make three small cylinder shapes. Blanch in salted water for three minutes, then refresh in an ice bath and reserve on a j-cloth to dry. Dice all of the the celeriac trim and place in

a pan with a knob of butter. Soften slightly, but don’t colour. Add water and bring to the boil, before simmering until soft. Keep the water. Drain off the excess water, before pouring the cooked celeriac into a food processor, blitzing until smooth. Adjust the consistency with the retained liquor. Season with salt and a little lemon. Cut the king oyster in half and brush lightly with oil. Place and mark on a hot grill pan. Remove and brush the flat surface with Marmite and adding a little butter. Place in the oven for two minutes. Trim the belly from the bass fillet and square off and score the skin (your fishmonger can do this). In a hot pan, add some oil. Season the fillet skin side and place into the pan. Press down if

required to keep the fillet flat. After 30 seconds of cooking, add a little butter and a sprig of thyme. As the fish cooks, the flesh turns from opaque to white.When almost cooked through, season the flesh and add a couple of drops of lemon juice, then turn the fillet. Remove from the heat. Baste with the butter and thyme. Blanch the cavolo nero in salted water for 30 seconds, remove and dry. Add this to the fish pan, baste and season. For presentation, brush some Marmite across the plate (lots if you love it, a little if you’re a hater!) Arrange the puree on the plate, then add the celeriac fondants. Add the cavolo nero leaves and place the fillet on top. Put the king oyster either side and finish with a few of the fried thyme leaves.

METHOD Add whisky, lemon juice and sugar syrup into a Boston cocktail shaker. Strain over ice and pour into a tall Hobstar glass. Top with ginger beer, cucumber slices and half a fresh cucumber stick.

I’ve worked in bars since I left school, but nothing compares to The Vermont… it’s such a luxurious venue with an amazing reputation. Being able to call it my workplace makes me proud - it feels like a big step up.

There’s a drink for everyone at The Redwood Bar… our range of whiskies, spirits, ales and wines is on another level - we offer so much variety, especially for such a small and intimate bar.

The best thing about being behind the bar is interacting with customers… the clientele here is so friendly and I really enjoy getting to know the guests and making recommendations on where to go in the city.

Favourite drink to make? I like working with rum - it’s one of my most favourite spirits. Our Rum Punch and Long Island Iced Tea are strong and exciting - not for the faint-hearted!

Top tipple to drink? You can’t beat the classic cocktails. I like short, whisky-based drinks, too.

Vermont must-order? The Regal Cucumber. It’s unique because it’s made with whisky instead of gin, which is usually paired with cucumber. Somehow it just works; it’s super and refreshing. It’s one of my favourites on the menu. Sam Harrison, mixologist, Redwood Bar.

WOW WEDDING Chanel Morrison and Carl Robinson chose The Vermont Hotel as the setting for their super chic wedding. Here, the couple unveil the story behind their big day… The meet: We met in our home town of Newton Aycliffe in 2012. I was due to leave the North East for Nottingham, so decided to go for leaving drinks at the local pub with my best friend Laura. Carl was there celebrating his new job with a group of friends, we all got chatting, and the rest is history. We talked for weeks until he finally asked me on a date and ever since then we’ve been inseparable. And I never made that move to Nottingham! Will you? We got engaged on Valentine’s Day 2015, when I was five months pregnant with our daughter, Farrah. He booked a beautiful suite at The Vermont - my favourite hotel - and took me for a meal. When we returned to our room, there were flowers, chocolates and a card on the bed, filled with pictures of memorable moments in our lives, from buying our first home, to our baby scan and holidays. Inside it read, “there’s only one thing left to do…” and as I turned to him, he was down on one knee with a ring. We

enjoyed champagne in the Sky Lounge & Garden afterwards. The plan: We chose to marry in September 2017 so our daughter would be old enough to walk down the aisle as our flower girl. Our ceremony took place at St Andrew’s Church in Newton Aycliffe. As for the reception, we’d looked at a few different venues, but none of them compared to The Vermont Hotel. After a meeting with Tanya and Jade, the hotel’s wedding coordinators, we were sold. Working with them was a pleasure from start to finish - they couldn’t do enough to help. We knew our wedding was in the best hands and they made it perfect for us. Picture perfect: We chose Sunderland-based photographer, Chris Randle Photography. He has a great vision and style and understood exactly what we wanted. He took photos inside the church, at The Vermont’s Sky Lounge & Garden and surrounding areas. Unfortunately,

the weather wasn’t the best on the day, but he managed to capture the most creative and abstract images - you can’t tell it was a gloomy day weather-wise! Big day details: My bridesmaids and I stayed in the hotel’s Presidential Suite the night before. Chloe Ladbury did our hair and the girls at Marta Makeup pampered us before the ceremony. We returned to The Vermont for our wedding breakfast and evening reception and were greeted with Champagne and the warmest welcome from Tanya and Jade. We wore: My dress was by Martina Liana and I chose a simple, floor-length veil from Mia


Sposa in Newcastle. I can’t put into words how much I loved it; it was classy, but with a touch of sexiness! The embellished train was perfection. My bridesmaids wore beautiful blush multiway dresses from a small bridal store in Richmond, while our daughter wore a white dress from Monsoon with a blush ribbon around her waist to match the bridesmaids. Carl wore a navy heritage check double-breasted suit from Reiss with a pink and white polka dot tie and pocket square from ASOS and classic brown leather shoes from Woven Durham. The best men wore tailored three-piece suits from Next with matching polka dot details. Blooms: We had the pleasure of working with Sue Shone from Cosmic Flowers in Newcastle. We were going for a classic, romantic theme, so we used mainly white flowers with a touch of blush here and there. The bouquets were made up of avalanche roses, bouvardia and gypsophila, with a touch of eucalyptus. Decor details: Kat at The Whole Sch-bang,

Gateshead, transformed the ballroom for us. Stand-out features were the four blossom trees centre pieces with twinkling hanging lights, four large candelabras draped in white flowers and simple white chiffon drapes down the back of the chairs, tied with ribbon. It took our breath away; classy, but with a bit of wow-factor for our guests. Fabulous favours: Many of our friends are gin-lovers, so we gave them glass bottles of sloe gin with cork stoppers. I hand-stamped our wedding date on to mini luggage tags and tied them to each bottle. Instead of name cards, we used polaroid photos of each guest - this gave everyone some laughs! The cake: Bernadette from Dreamworld Cakes, Ouseburn, made our cake dream a reality. It was a three-tier creation; the bottom layer was double chocolate with chocolate ganache, the middle layer was white chocolate with raspberry and white chocolate buttercream and the top layer was a naked cake with fresh mango puree. It was decorated simply with gold-painted cherries and

real roses. Absolutely beautiful. Feast: Caesar salads with pancetta and boiled eggs, slow-roasted pork shoulder with fondant potato and cabbage and a chocolate platter for dessert. We drank: Veuve Clicquot Champagne for our drinks reception and again for the toast. We sipped on red and white wine with the meals. The fun: Local singer, Jessica Avison, serenaded us as we arrived at The Vermont after the ceremony, while we greeted our guests - most of whom were laughing at their personal caricatures, drawn by Paul Slattery! Jonny Ward took to the stage to perform some of our favourite indie songs in the evening. Fun extras included a photo booth with props, a giant candy wheel for the kids and a fantastic DJ, who said ours was one of his favourite weddings thanks to our lively guests! STAR VISIT

American boxing champ, Floyd Mayweather, touched down in Newcastle in March 2017 as part of The Undefeated Tour 2017 - a global venture celebrating his extraordinary career. 52

he event, which gave fans a chance to meet the sporting legend and discover more about his life and success in the ring, took place at Gateshead’s Lancastrian Suite and Livello hosted the official after party. The 15-time world title winner and his entourage, The Money Team, including DJ Jay Bling, arrived at sister venue, Aveika, via a fleet of Mercedes, with the man himself stepping out of a Rolls Royce Phantom. After a pre-party feast, they joined former Sunderland and Tottenham footballer, Jermaine Defoe, Newcastle Eagles players and other local famous faces, on the dance floor at Livello.

Speaking of his visit, he said: “It was great to come here and share my story with fans who have supported me for over 20 years. I was blown away by Newcastle - particularly the Quayside. It’s a real party city - like a mini Vegas - and the atmosphere at Livello was absolutely electric.” Mayweather’s visit to the North East came 18 months after he hung up his gloves for the final time, retiring with an undefeated record of 50–0. Regarded by many as the finest boxer of his era and the best defensive boxer in history, Mayweather has enjoyed a career that has seen him spar with - and beat - a number of the sports’ greats, including Genaro Hernández, Manny Pacquiao, Diego Corrales, Andre Berto and, most recently, Ireland’s Conor McGregor in what is now considered one of his most famous fights.

vibrancy and friendly atmosphere, its renowned nightlife and, of course, its football. In fact, it’s a great place for all kinds of sport, including rugby and basketball. It offers so much in terms of entertainment and sightseeing - there’s loads to see and do, whatever your interests. Visitors will certainly never be bored here!

in Gosforth, so that’s my base these days, but The Vermont has always been a go-to hotel of mine. It’s where I’d always stay when visiting the city for work. Location-wise, it’s spot-on; within walking distance to all the shops, restaurants and bars and next door to Castle Keep. Great views of the River Tyne, Quayside and the city’s bridges, too.

An ideal day in the city… It’d begin with

breakfast somewhere on the Quayside, followed by a leisurely stroll up into the centre of town. I’d enjoy a bit of mid-morning shopping and a bite to eat - once I’d finally decided on where to go! There are so many great places to eat now. I’d watch Newcastle play at St James’ Park in the afternoon, followed by a night on the tiles. Livello is one of my most favourite bars - I love having drinks outdoors in the courtyard cabana.

You’ll often find me at Aveika; it does some of the best food in the whole city and the atmosphere is always great. A great place to go to kick-start the weekend. I’m also a big fan of 21 on the Quayside and Peace and Loaf in Jesmond.

My idea of the perfect evening… As I’m getting older and a little bit more sensible, I like the idea of dinner and drinks. But when I was younger it was all about the bar and pub crawls! The good thing about Newcastle is that you can do both; it’s very easy to go out and enjoy a quiet dinner with family or your other half, or, if you fancy it, a big night out in the clubs and bars with a bunch of mates.

If I fancy getting cultural… There are a few great museums and galleries worth visiting Newcastle has such a rich history. The kids and I enjoy walking across the Millennium Bridge over to BALTIC Centre for Contemporary Art. In the city centre, there’s the Great North Museum: Hancock and Laing Art Gallery. Grey Street’s architecture is stunning, too.

If I want to relax… I’ll go to David Lloyd Newcastle for a gym session and a swim, head to Close House or Slaley Hall - two great nearby hotels - for a round of golf, or take the kids for a walk along the Town Moor. Some quiet time with

them in Exhibition Park is always nice, too.

For shopping, I’ll go… Newcastle’s a great city for shopping, whether you’re into designer brands or independent clothing stores. I’m definitely more of a try-it-on kind of guy, so I do like a trip around the shops. You can’t beat Fenwick and the stores around Grey’s Monument for your big labels. I take my son to all the games shops, too.

Favourite city landmarks… The bridges are amazing - especially the Tyne Bridge. It’s iconic. I like the Angel of the North, too. It’s not in Newcastle, but whenever I see either landmarks, I know I’m finally home. St James’ Park will always stand out for me too; I’ve been going there since I was a boy and it’s now an important part of my working life.

What Newcastle offers that other cities don’t… I’ve been lucky enough to live all over the place - from London to Manchester - and travel across the world to some of the most wellknown cities, but Newcastle is a real one-off. It’s the people that set it apart; it’s one of the most friendliest and welcoming places I’ve ever known. It’s the perfect size, too. You can see it all in a day or two and yet it never feels crowded. There’s a real sense of community among the locals.

spice it up Kurt Toulson is head chef at Aveika I’ve been at Aveika since the beginning… and it’s been quite a journey so far. I’ve worked my up the ranks and learned so much here over the last couple of years. At 21, I’m the youngest in the kitchen, but that means nothing to me - or the others. Age is just a number; we’re a really close team and everyone brings different skills and levels of experience to the job.

My cooking career began by washing dishes… I left school and thought I’d join the army, but it never went that way. Instead, I began pot-washing in a care home, then making sandwiches and cakes, and my interest in food soon grew. I applied for an apprenticeship at an Asian restaurant in Yarm, before moving to Newcastle and applying for a role at Aveika. The rest is history - and I love cooking more than ever.

My role is a mix of paperwork and creativity… I’ll always rota myself in on one of the sections, with someone there to cover me incase I’m needed in the office, or elsewhere. Cooking is my passion, so I like to get stuck in as much as possible. Our kitchens are exciting places - I get a real buzz when the pressure’s on.

There’s nowhere else like Aveika in Newcastle… it’s such a unique and exciting restaurant when it comes to food - and service. Other places may be serving traditional Japanese food, but our menus offer tasty twists on classic dishes, influenced by other parts of Asia, such as Malaysia and China. Expect a fusion of flavours; we like to keep our food fresh and interesting, as well as visually attractive.

Every day I’m inspired to work harder… as a young chef, I want to go as far as I can go in my career, pushing myself and learning new skills. I’m really proud to have progressed as far as I have, but you never stop learning in this job and I’m lucky to be

FOOD FACTS Culinary hero… Gordon Ramsey. Dream dining partner… Karl Pilkington. The kitchen kit I can’t live without… my own set of knives. We have communal knives in the kitchens, but I always use my own.

Food heaven… Pad Thai. Food hell… cold, processed meats. Horrible! Favourite ingredient… I hate to say it, but sugar. It has the power to transform things like sauces, marinades and soups into something completely new. Plus, I have quite a sweet tooth.

Last meal… a stuffed crust Texas barbecue pizza with garlic dip.

Inside-out sushi rolls

With eel, crab and salmon and tuna and avocado.

Ingredients for the sushi rice 2 cups of short grain Japanese rice ¼ cup vinegar (rice or sake-mash) ¼ cup sugar 2 tbsp salt

Method Rinse the rice five times, then drain in a colander and let dry for 15 minutes.

Transfer the rice to a very large bowl. Sprinkle 1/2 cup of the seasoned vinegar all over the rice. Drizzle onto a spatula while waving the spatula back and forth. Using a slicing motion with the spatula, gently separate the rice grains while mixing in the seasoning. Fan the rice while mixing it to help it dry.

Ingredients for the rainbow roll 2 asparagus stems 1 full sheet of Nori cooked sushi rice 50g white crab meat 30g cream cheese 60g sashimi salmon fillet 10g shredded carrot

Ingredients for the tuna and avocado roll Cook the rice in a rice cooker according to the manufacturer’s instructions. Alternatively, in a medium saucepan, combine the rice with two cups of cold water and bring to a boil over high heat. Cover and cook over moderate heat for 10 minutes. Reduce the heat to low and cook for 10 minutes longer. Remove from the heat and let it stand, covered, for 15 minutes. Meanwhile, in a small saucepan, combine the vinegar, sugar and salt and warm over moderate heat, stirring to dissolve the sugar.

Wipe down any stray grains from the side of the bowl. Cover the rice with a damp towel to keep warm.

Ingredients for the eel roll 1 full sheet of Nori Cooked sushi rice 50g wakame ½ frozen unagi (freshwater eel) fillet ¼ red pepper 20g cucumber 6 avocado slices Japanese mayonaise

Method Start by spreading 150g of rice on one side of the nori. Make sure the entire sheet is covered with rice. One of the advantages of using sticky rice is that it becomes clear, which is helpful because the next step is turning the nori upside down. Once upside down, place the filling on the top side and roll inside-out.

METHOD Add strawberry purée to the bottom of a Hobstar glass, before filling to the top with crushed ice. Measure the passion fruit, mango, vodka and Crème de Cacao Blanc liqueur into a Boston cocktail shaker. Shake and strain over the crushed ice. Add the Fraise de Bois liqueur, top with lemonade and garnish.

I moved to Newcastle from Edinburgh, where I spent a few years working in bars… I’m now bar manager at Aveika and having a blast. I oversee the overall running of our busy bar, making sure service is running smoothly, our stock levels are up and everyone is enjoying themselves! This is a lively bar that comes alive after dark.

When someone says “surprise me”, what’s your go-to drink? If it’s busy, a Long Island iced tea. It has a little bit of everything, so you can’t go wrong. If it’s quiet, I’ll get to know them, ask what kind of spirits and fruits they like, then go from there.

I’ve created a few of my own cocktails - a few have made it on to our menus and I have one or two in the pipeline for future ones.

CROWNING GLORY As Miss Newcastle enters its 11th year, Gainford Group is proud to be continuing the event with Tyne Tees Models…

E

ach year, Gainford Group joins forces with the North East’s largest model agency, Tyne Tees Models, to host Miss Newcastle - one of the most prolific and celebrated charity events in the region’s calendar. The glamorous competition has been running for the last decade, each year bringing together local businesses to raise vital funds for local charities and showcasing a selection of the region’s most talented and driven young women. Finalists are chosen in various heats, hosted across the region by the competition’s big-name sponsors, which in the past have included Newcastle Racecourse and international brands, Topshop to Charlotte Tilbury. The hopefuls are then given a four-month period to individually raise as much money as they can for the competition’s chosen charity in the lead up to the glittering final. For some, winning the title - and the tiara - can be be life-changing. Many of the competition’s past winners have gone on to carve out successful careers for themselves thanks to the experience and the exposure the event provides. Now signed to Tyne Tees Models, last year’s

winner, Alisha Cowie, has begun what should be a blossoming modelling career. 2016 and 2015 winners, Charlotte McIntosh and Vicky Turner, have walked for world-famous brands in London Fashion Week and signed to modelling agencies in Milan, while the competition’s very first winner, Sophie Gradon, has appeared on hit TV shows and is now pursuing a career in television presenting. Over the years, Miss Newcastle has supported the likes of the RVI Hospital’s Tiny Lives Trust and the Percy Hedley Foundation, and fundraising efforts have even included a sponsored trek to the Grand Canyon. For 2018, the vision is to take the profile, quality and exposure of the competition to new levels and to raise a record-breaking £10,000 for The Chronicle Sunshine Fund. Founded in 1928 by King George V, who donated £15 to take disadvantaged children to the coast during his visit to open the Tyne Bridge, the charity provides specialised equipment to children with disabilities and life-limiting illnesses in the North East - equipment that can’t be funded by anyone else. A board of dedicated trustees - all local

professionals from the region - steer the initiative and dedicate time to make sure children are supported and provided with equipment to suit their needs, working closely with individuals, groups, registered organisations and special and mainstream schools and hospitals. The final of Miss Newcastle 2018 will take place on June 1st at The County Hotel, in the heart of Newcastle. Hosted by Capital FM presenters, Bodg, Matt and Hannah, the black-tie event will see 10 finalists take to the catwalk, competing in an evening of high fashion and entertainment in a bid to win the crown. They will be judged by a panel of experienced industry professionals and the winner will receive a place at the Miss England final, as well as a modelling contract with Tyne Tees Models. This year’s event, supported by 10 big-name sponsors, promises to be bigger and better than ever before, with a theme inspired by the allure of Aladdin and Arabian Nights. Guests will enjoy live performances, music from guest DJs, dazzling costumes made by local hands and, in true Gainford Group style, plenty of bubbles to kick-start the celebrations and keep them flowing all night long.
