With an already extensive portfolio of luxury hospitality venues across Newcastle, The Gainford Group has announced plans to redevelop its New Bridge Street site into a multipurpose destination.

A NEW GATEWAY

As this latest edition of Gainford magazine was going to press, the team was busy finalising proposals for the organisation’s most ambitious and exciting project yet. Plans are well underway for a

multi-purpose destination which will form part of a new £50 million gateway into Newcastle, at the site of the New Bridge Street hotel. The new project will include a five star hotel, private residential apartments and a fitness and health club, along with a number of bars and

restaurants serving food from around the world. Once complete, it will be the most significant location on Newcastle’s skyline and the go-to area for residents, shoppers, workers, diners and overnight visitors to the city. This vision from Gainford will breathe new life into the city centre.

When we first viewed the venue, we fell in love with the decor and the overall feel of the hotel. It’s located in the heart of Newcastle with excellent views of the Tyne and the bridges which makes for amazing photographs. It was the venue that we had looked at after getting engaged and no other venue felt like ‘the one’.

OUR HIGHLIGHTS FROM THE BIG DAY…

Everything about the day was amazing. The staff were on hand to help and make sure every need was met. The hotel kindly allowed us to go up to ‘Above’ rooftop to capture some photos overlooking the Tyne - that was such a special moment for us.

SPECIAL DETAILS…

One thing which was a little different about our wedding was that we opted to not have a first dance but decided to have a ‘last dance’ instead at the end of the night which we felt was more intimate and a lot less pressure!

OUR GUESTS SAID…

Our guests were full of kind words about the

day - lots of compliments for the wedding breakfast! And our best man said he has never been to a wedding where the dance floor was full all night. Compliments from ourselves go to Christine, Lukas, Marcus and all of the staff for making sure we had the most perfect day.

Delicious dining awaits on the sixth floor of The Vermont Hotel. Offering mouthwatering menus, vibrant cocktails and breathtaking views of the River Tyne and Newcastle’s Quayside, The Maven is one of the most stylish spots in town and certainly a place to be.

Get to know…

The Maven has a rich history, it takes its name from a young explorer who, from his home in Newcastle, set out on a culinary adventure, setting sail to eastern lands to acquire new knowledge on cuisine from around the world. Throughout this adventure, he discovered new flavours, spices and techniques and returned to his hometown to share his foodie findings. Furnished to the highest standards, with plush velvet seating, dark mahogany tables and beautiful blooms, this luxuriously low-lit venue is the perfect place for cosy date night dinners, mid-week suppers with friends, weekend gatherings with the whole family or even special occasions and private parties. The restaurant offers an exquisite afternoon tea menu, seasonal flavours from all corners of the globe and, of course, delicious Sunday lunch options to end the week the right way.

Dreamy dining

We all know thatvariety is the spice of life - and this is the ethos that The Maven lives by when it comes to food. Whether you’re stopping by for lunch or dinner, you’re a meat-eater, vegetarian or pescatarian, your tastebuds will be taken on a round-the-world tour, exploring and enjoying traditional dishes from the likes of Asia, India, America and the UK. Starters range from Tamarind lamb pancakes with hoisin and kimchi to twice cooked belly pork with five spice powder and soy caramel, while mains include herb crusted cauliflower steak served with white beans and tomatoes, The Redwood Burger with cheese, burger sauce and crispy onions, to name a few. For those with a sweet tooth, desserts include sticky toffee pudding, lemon tart and macha pannacotta with a miso caramel and sesame seed brittle.

Sunday best

The experienced and well-travelled chefs at The Maven aren’t afraid to experiment with flavours, so on Sundays, guests can expect to be pleasantly surprised with exciting twists on the traditional dishes we all know and love. Alongside classic roasts, including a vegetarian option, diners can enjoy Sunday roasts done differently, with beer battered fish with chips, mushy peas and tartar sauce, yellow vietnamese curry with silken tofu and fragrant jasmine rice or you can opt for a traditional choice - slow cooked feather blade of beef with Yorkshire pudding, creamed potato, duck fat roasties, seasonal vegetables and gravy. Enjoy one course for £17.95, two for £21.95 or three for £25.95.

Herb crusted cauliflower steak with white beans and tomatoes

INGREDIENTS

1 large head of cauliflower (approximately 2 pounds) ¹/₂ cup extra virgin olive oil, divided

1 ¹/₂ teaspoons kosher salt, divided 1 teaspoon freshly ground black pepper, divided 8 ounces green beans , trimmed

3 garlic cloves, finely chopped ³/₄ teaspoons lemon zest

¹/₃ cup chopped parsley, plus more for garnish ¹/₃ cup panko

¹/₄ cup freshly grated Parmesan

1 can white beans, drained and rinsed

1 cup halved golden or red cherry tomatoes (about 6 ounces)

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

METHOD

Arrange racks in the middle and upper third of the oven; heat to 190c.

Remove leaves and trim the stem end of cauliflower, leaving the core intact.

Place the cauliflower core side down on a work surface. Using a large knife, slice through the centre from top to bottom to yield 2 1-inch “steaks”; reserve the remaining cauliflower ends for another use. Place cauliflower steaks on a rimmed baking sheet and, using one tablespoon of olive oil, brush both sides of the steaks.

Season with ¼ teaspoon salt and ¼ teaspoon pepper. Roast on the lower rack of the oven, turning halfway through, until cauliflower is tender and browned, about 25 to 30 minutes.

Meanwhile, on a second rimmed baking sheet, toss green beans with one tablespoon of olive oil, ¼ teaspoon salt and ¼ teaspoon pepper. Arrange in a single layer, then roast on the top rack of the oven for around 15 minutes until the green beans begin to blister.

In a medium bowl, whisk together garlic, lemon zest, ¹/₃ cup parsley, remaining six tablespoons olive oil, one teaspoon salt and ½ teaspoon pepper until thoroughly mixed. Transfer half of the mixture to a second medium bowl.

To the first bowl, add the panko and Parmesan, and stir until fully combined. Set aside.

To the second bowl, add the white beans and tomatoes, and toss to coat. Set aside.

In a small bowl, whisk together the mayonnaise and mustard.

Remove sheet pans from the oven. Spread mayonnaise mixture over the cooked cauliflower. Sprinkle ¼ cup panko mixture evenly over cauliflower. Spread the remaining panko mixture evenly on the sheet pan. Add the white bean mixture to the sheet pan with green beans and toss to combine.

Return both sheet pans to the oven and continue to roast until the panko topping starts to brown and the white beans begin to crisp, approximately five to seven minutes more.

Tebasaki wings

INGREDIENTS

100g chicken wings

½ teaspoon ground black pepper

½ teaspoon salt

¼ cup evaporated cane sugar (packed)

3 tablespoons soy sauce

cup sake

1 teaspoon ginger juice (grate the ginger and squeeze out juice)

4g garlic (1 medium clove, grated)

1 tablespoon black vinegar (or balsamic vinegar)

1 tablespoon potato starch

Vegetable oil (for frying)

2 teaspoons toasted sesame seeds

METHOD

Put the chicken wings in a single layer on a tray and sprinkle with half of the salt and pepper.

Toss the chicken to coat evenly and refrigerate while you prepare the other ingredients.

Make the glaze by adding the sugar, soy sauce, sake, ginger juice, and garlic in a shallow pan. Heat over medium-high heat until the glaze starts to thicken. You can tell when it’s ready when the bubbles get big and shiny.

Add the vinegar, and then transfer to a large bowl and allow the glaze to cool.

Add about two inches of vegetable oil to a heavy-bottomed pot and heat to 320 degrees F (160C).

Take the chicken out of the fridge and use paper towels to remove as much moisture from the surface of the chicken as possible.

Sprinkle on the potato starch and toss the wings to evenly coat each piece with a thin layer of starch.

Fry the chicken wings for 10 minutes in batches. Transfer to a plate and continue frying the rest of the wings. Tuck in and enjoy.

A triumphant transformation

Aveika has had a makeover…

Following much success over the eight years since launching in 2015, the time for change has arrived. Aveika has welcomed many high profile guests over the years and has been recognised for its outstanding food offering, scooping up awards on many occasions, and after much consideration, now felt like the right time to give the venue a facelift. The impressive £300,000 investment has transformed what once stood as a nightclub into a sophisticated lounge and bar area made up of plush sofas, statement chairs, low tables and mood lighting. After eight years of trading as Newcastle’s go-to after-dark venue, the new look has ambitions to attract more diners during the daytime.

“We wanted to open the place up because of its location and have taken the nightclub element away from it. We have opened it up so you can

see inside and customers can enjoy the amazing views of the river. We are looking to attract more of a daytime trade and will open from 12pm onwards which is in line with our neighbours such as the Pitcher and Piano and the Hard Rock Cafe. We still have our nightclub up the road, Livello, but Aveika’s concept will be about daytime trade and early evening,” says Gainford Group Director, Imran Khaliq.

When it comes to the food, Aveika serves up some of the most colourful and creative Japaneseinspired food Newcastle has to offer. Its mouthwatering menus have earned it legions of foodie fans since its opening in late 2015 and that’s something that it has no intention of changing. Visitors to the all-new Aveika will see its mezzanine level, which was once home to its VIP tables, has been transformed into an extension of the restaurant - which was named the best restaurant

in the North East at the British Restaurant Awards last year.

When choosing to dine in the lounge and bar area, diners are greeted with the Sip and Snack menu which is packed with some of Aveika’s beloved favourites. Reworking classics with a modern, innovative twist is what the food here is all about. Think small plate delicacies including Tebasaki chicken wings, tempura rock prawns, robata grilled chilli beef skewers and more, as well as a selection of indulgent sushi and side dishes. Lemon tart

INGREDIENTS

For the pastry

75g plain flour

100g cold butter, cut into small cubes

25g icing sugar

1 free-range egg yolk

For the filling

4 large free-range eggs

100ml double cream

150g caster sugar

3 lemons, juice and zest icing sugar, for dusting

METHOD For the pastry

Place the flour, butter and icing sugar into a food processor. Pulse briefly until the mixture resembles breadcrumbs, then add the egg yolk and one tablespoon of cold water.

Pulse again until the mixture sticks together in clumps then tip onto a work surface and gather it into a ball with your hands.

Knead the pastry just two or three times to make it into a smooth ball. Wrap it in cling film and place in the refrigerator for 15 minutes.

Grease 12 x 7.5cm/3in fluted tart tins.

Roll out the pastry to a thickness of 5mm/¼in. Cut out circles with a 10cm/4in round cutter and use to line

the tins, re-rolling the pastry as necessary. Place the tart cases in the fridge to chill. Preheat the oven to 200C(180C fan)/400F/Gas 6.

Cover the base of the tartlets with baking parchment or foil and fill with a few baking beans.

Bake blind for seven minutes then remove the parchment and beans.

Return the pastry cases to the oven for another 4-5 minutes or until they are light golden-brown and completely dry. Set aside to cool while you make the filling.

Reduce the oven temperature to 170C(150 fan)/325F/Gas 3.

For the filling

Break the eggs into a large bowl and whisk together. Add the rest of the filling ingredients and whisk again until they are all well-combined.

Pour the filling mixture into a jug, then into the cooled baked pastry cases. To prevent it spilling as they go into the oven, pour in most of the filling so it almost fills the tarts, carefully sit the baking sheet and tarts on the oven shelf, then top up with the rest of the filling to completely fill the tarst. Bake for about seven minutes, or until just set but with a slight wobble in the centre. Leave to cool slightly then carefully ease the tartlets from their tins an place on a wire rack to cool completely. Serve and enjoy!

Hopscotch, which is due to open this summer will have distinct interiors that incorporate a stylish café, an innovative play area and outdoor playground.

Hopscotch will be somewhere that parents, grandparents and friends can relax while the children engage in fun, entertaining and safe play. The bespoke play space has been designed by the industry’s forward-thinking supplier Tigerplay, who are creating an inspirational structure that offers obstacles and slides for little explorers, as well as a ball pool and sensory points for babies. Role play huts and a chill-out zone for older children will also feature, as well as a unique outdoor area for young adventurers. During weekday and weekend sessions, the play café will be available to host children’s parties and other events and will offer exclusive use, working closely with local businesses to offer a range of added extras to make those occasions special. With an emphasis on using locally sourced suppliers, Hopscotch will offer an inviting brunch/ daytime menu, quality coffee, delicious pastries and sweet treats as well as fun nutritious children’s meals.
