“The first Tour de Yorkshire I took part in was amazing and is a great memory”

THOUGHTS

MY GORGEOUS

Yorkshire:

ESCAPE A spa! Some peace away from demanding children, dogs and a busy business! I hardly ever get any me time so for me, a relaxing treatment, a warm jacuzzi and some time to read a magazine is pure bliss.

LUCY PIT TAWAY LOCAL ARTIST L U C Y P I T TAWAY.C O.U K

VIEW I love the view of Pen Hill In Wensleydale from Scarth Nick. I also love the view from The Cow and Calf at Ilkley. MEMORY Too many to name! The first Tour de Yorkshire I took part in was amazing though and a great memory. I got to do some great things including taking part in the Publicity Caravan which was such fun, seeing loads of fab new places in Yorkshire and everyone’s excited and happy faces smiling and cheering us as we passed by or stopped to greet them.

PLACE I love going to Newby Hall with friends and family, it’s got something for everyone. The gardens are stunning and I can’t resist behaving like a big kid and having a ride on the miniature train and a race in the paddle boats with the kids! Last time we went I succumbed to their persistent requests to be the only mum to have a go on the zip wire and with some interested onlookers, I took a leap of faith… but the result wasn’t pretty and I reckon I will leave that one to the kids from now on! PERSON Ed Sheeran. He’s my favourite singer and when I discovered he was born in Yorkshire I decided I like him even more! PASTIME A walk in the fresh air with the family and the dog, I love Saltburn or walking by the river in Richmond. Whether it’s looking for conkers in the woods with the kids or building sandcastles at the beach, quality time with my family is the most important thing to me. FOOD/RECIPE I love Wensleydale cheese, particularly the apricot version and I love the gluten-free, deep-fried Wensleydale at the creamery cafe in Hawes. I’m awkward because I am wheat intolerant so I can’t eat the most delicious things like Yorkshire curd tart or Bettys Fat Rascals!

There are quirky items to make you smile, such as vintage telephones and typewriters (which still work) or flickering filament bulb lights. And things to make you warm and cosy whilst at the same time paying homage to

family from Robin Hood’s Bay - and recently the knitwear range has been expanded with designs from other villages along the coast. The idea for Berties came from seeing home concept stores in Holland. The coastal location meant that weaving the heritage of the place into the store’s collection was of paramount importance. Matthew headed to the history books and museums to get the precise patterns for the gansey range. “They represent the village’s heritage. People buying them are so keen to know the history of the item they are spending their money on so that it means more”, says Matthew. “The ganseys are designed to be timeless and they work for every occasion – lounging about on a Sunday or I’ve worn mine with a crisp white shirt, jeans and brown brogues to go to a nice restaurant”, he adds. Matthew scours places he visits for inspiration for Berties, proud to bring the work of other makers to his coastal showcase. COT TAGE PROFILE

Sara’s York Top 5 Make the most of the City of York:

1

WAKE UP Start the day with breakfast at The Ivy. Gorgeous food in a beautiful setting right in the heart of town. We love the hot buttermilk pancakes!

2 “We’ve tried to think of everything families and groups of friends could want or need; smart TVs with Netflix, a huge American fridge/freezer and instant boiling water tap. Even down to the simple things like board games and DVDs. We can also help with organising additional services like private nannies, chefs and

chauffeurs”, she says. “We want families to be able to travel light and not have to worry about a thing”. In the village there’s a super village pub serving up quality food, a tearoom, playground and playing fields - and a gin distillery offering tasting open days weekends. And of course, the City of York is on the doorstep...

WALKABOUT Work it off with a walk around the old City Walls. Definitely the best way to see York and soak up that historic atmosphere. Discover more olde worlde charm exploring the quintessentially English cobbled streets of The Shambles, Stonegate and Little Stonegate – straight from a picture-postcard!

3

W0W-FACTOR Have your breath taken away at the York Minster. Just taking in the view from the outside is really something but venture in to appreciate the scale of the building. If you’re feeling sprightly head up the steps of the central tower for a super view of the city.

4

WONDERFUL Re-fuel with an indulgent afternoon tea at Bettys – a real must. It’s always busy with tourists but those buttery Fat Rascals and elegant pots of tea make it a worthwhile wait!

5

WORTH THE WAIT... End the day with a few cocktails at one of York’s fantastic bars. We love Dyls Café Bar with its fantastic riverside terrace. Try the ‘Yorkshire Rose’ a yummy mix of Mason’s Lavender Gin, rose lemonade, prosecco and red berries. Cut & Chase and The Biltmore Bar are also fab.

Skylark WEEKEND GETAWAY DO Stay close to home. One to two hours’ journey is as much as you need on a Friday night. DON’T Head off on a ‘flyer’ – everyone else is doing the same. Little ones can be put into their PJs if you set off later. Big kids won’t care as long as there’s a drive-thru en route. DO Pack light. It’s two sleeps and two days. Adjust accordingly. Jeans, comfy gear and walking kit. Also clothes that allow for mud or sand splatters! A posh top/ shirt if Saturday night ‘glam’ is required. DON’T Overplan. One activity is quite enough. Relish sleeping-in and lazy breakfasts. One well-chosen fresh-air outing is a plenty, be it a country show, a beach walk or stately home visit. The rest of the time relax and enjoy each other’s company without deadlines.

18

FAMILY REUNION/BIG BIRTHDAY DO Plan wisely. A giant house or a cluster of cottages? Give granny her own place where the kids can gravitate for secret sweet stashes. Older people rarely sleep late (or very much) – nor do they always want to dance to Wham at midnight with their tipsy offspring. DON’T Expect instant harmony. Don’t force teens to be sociable if they’re not or make them instantly re-engage with relatives. Have a tech tolerance for their phones etc. They’ll veer towards the social hub of the house in their own time. DO Divide the chores. If you’re self-catering, designate meal duties. Every family’s got an ‘organiser’ who will probably relish telling everyone else what to do – make the most of it and bring what you’re told. The key is to make sure there’s loads of breakfast items. After that think pub, takeaway or caterer. DON’T Forget to create a cocktail hour. Ask everyone to bring a substantial appetiser/canapé for the group and drinks. The perfect way to reconnect. And let the kids have full-fat Coke for once. TOP TIPS WI-FI Naturally, Wi-fi is on the must-have list - for the surfing silvers with their iPads as well as the tech-needy teens. A BIT OF SPACE Choose a cottage with a second living

room or snug where teenagers (or parents) can get away for a bit. If there is a television / music system / DVD or games console in there then even better. No arguments over what to watch on TV is always a winner. GAMES Coming in many different formats, games are a great way for families to get together and keep everyone entertained. From a competitive board game to an XBox challenge, who doesn’t love a family games night? Some family-friendly holiday cottages come with a dedicated games room, so you could set up a pool tournament or table tennis challenge! Perfect for keeping teenagers happy on your UK getaway. MOVIES Chill out with a movie. Some of our family favourites: ET, Mary Poppins, Wizard of Oz, Home Alone, School of Rock, Toy Story, Sound of Music, Mamma Mia, The Goonies, Paddington.

WHAT’S IT FOR? Ask yourself, “What am I buying this property for”. If the answer is mainly for rental income don’t be too subjective about property size, type and location. If you will be spending a significant amount of time there – then you should be more choosy. Do your sums – document all costs and projected income to ensure the property you choose will give the return you want. Spreadsheets and third-party financial advice are invaluable.

KILLER FEATURES Guests have high expectations in today’s competitive market, so make your place stand out from the crowd; LUXE IT UP Mis-matched furniture and tired looking décor just doesn’t cut it in the holiday cottage market anymore. Go for contemporary, country-chic, traditional, just make sure it hits the right note in terms of luxury and style. And pay attention to outside space! Teapot Cottage

LOCATION, LOCATION, LOCATION Location plays a large part in the success of a holiday cottage. To encourage bookings throughout the year the more you can reference your cottage in the context of a desired town, village or attraction the better. Being within walking distance of a pub or eatery is also a huge plus and properties with stunning views are always in demand. If you’re concerned your location may not be as popular, do something to make the cottage appeal in its own right or think about other niche markets like cyclists and walkers and do things to appeal to them. And don’t forget – location is also an important consideration if you mean to clean and manage the property yourself. UNDERSTAND YOUR TARGET MARKET Maximising occupancy is all about understanding your property’s target market. Larger holiday homes should appeal to the family / celebration market. Can you include a children’s playground in the grounds, incorporate a games room and other leisure facilities larger groups demand? With a one-bedroom cottage think about why couples would choose your cottage over the hundreds of others out there – what makes it romantic, exclusive? Think open fires, baths in the bedroom, contemporary four-posters. Do you want it to appeal to pet-owners? Little extras like doggie beds and food bowls make all the difference.

COMFORT Your property should compare with the facilities of a luxury hotel. Install the biggest bed you can (zip and link are best), provide a TV and ensuite facilties (for every bedroom if possible) and leave bottles of water in each room. LEISURE TIME Hot-tubs continue to be the feature de jour guaranteeing higher rates and better occupancy throughout the year. Other desirable features include saunas and games rooms. DOG-FRIENDLY Always a contentious one particularly if you’re not a dog owner, but opening the property up to this market is strongly recommended. Dog owners make up over 50% of most self-catering bookings in the UK.

Interior designer Terri Crosby is owner of beautiful Station House in Wensleydale, one of our newest Gorgeous Cottages

TECHNOLOGY Wi-Fi is an absolute must. Other persuasive features include underfloor heating, home cinemas, SMART TVs, sound systems and Netflix. ACCESSIBILITY With our ageing population features and facilities to accommodate the older or less mobile generation are increasingly in demand (such as downstairs ensuite bedrooms). LEGAL REQUIREMENTS Choosing your décor and pulling it all together is undeniably fun, but don’t forget to research and understand all the legal requirements of owning a holiday cottage and how to keep your guests safe.

She excels at extreme luxury, with her background in interior design for luxury residences and amazing super yachts, and runs her own interiors business, G Luxe Interiors, based in Northumberland. One of Terri’s passions is for transforming unloved properties into luxurious “real homes” – which is exactly what she has done at Station House, bringing the quality and finish of superyachts to her exquisite property. “I saw the house on a walk one day and some time after saw it was for sale – it is the station house on the restored Leeming Bar to Redmire line”. “We completely remodelled and extended this lovely characterful property. I’ve used a lot of the suppliers who I go to for the yacht furnishings so it really is wonderful. Unlike some holiday houses you don’t have to race for the best bedroom! They could all be the main bedroom. “The style is relaxed, gentle and welcoming. Lots of texture and nice accessories to touch – cashmere, mother-of-pearl, the ultimate in pillows and towels, Yves Delorme robes. “The best of what I would choose for the yachts brought to Yorkshire!” Station House sleeps six and at the heart of the house is a dramatic double-height open-plan kitchen, dining and living area.

FINISHING TOUCHES Once you’ve created your gorgeous new holiday home, don’t scrimp on presenting it property. Professional photography is an absolute must and staging it for the images is equally important. One of the most important final touches is your welcome hamper. Presenting a few choice products with a welcome note for your guests’ arrival can make all the difference for your reviews and future bookings. And finally, repeat after me ‘cleanliness is everything!’

atherine is in-the-know when it comes to effortless yet delicious food for family celebrations, milestone birthdays or cosy getaways. So much so that she’s written a bible of recipes called, The Weekend Cookbook. Subtitled, ‘breakfast, lunch and dinner at home or away’ it takes you on a tempting journey to a food, friends and family-filled weekend away. A weekend where there’s dolcelatte and leek risotto waiting to share on a Friday night and where breakfast the next morning is an easy tray-roast breakfast with poached eggs. Saturday night is time to sit down with garlicky prawn, clam and chorizo pot (and much wine!) with Sunday the shared celebration of steak and Black Sheep ale pie – with failsafe Yorkshire puddings. Catherine was brought up on the edge of the North York Moors and loves a run back home for Sunday lunch – these days with husband Harvey and kids Hamilton and Beatrice in tow. “I’ve got a need to feed and I love doing that for the kids and for friends. On TV there are the ‘posh girls’ making their cupcakes but I am a mum and I have a normality that they don’t in their cute Parisian garret kitchen”,

“My approach to food has always been simple: relaxed, delicious and without any pretence. In other words, I am a family cook”

In other words, I am a family cook. I truly believe that food should suit the mood and do its best to enhance a weekend.“ MAKING LIFE EASY: CATHERINE’S WEEKEND CHECKLIST Ready-made gnocchi, great-quality pasta, ready-made pasta sauces, olives, oven chips, halloumi, chorizo, lemons & limes, herbs, marscapone, ready-made custard! FIVE MINUTES WITH

Tommy Banks

YORKSHIRE WONDERCHEF TOMMY BANKS WOWED THE FOOD WORLD WHEN HE BECAME BRITAIN’S YOUNGEST MICHELIN-STARRED CHEF IN 2013

Tommy won TV’s Great British Menu in 2016 and 2017. Then, in October 2017, his gastropub, The Black Swan at Oldstead, near Thirsk, was awarded the ‘Travellers Choice Best Fine Dining Restaurant in the World’ by TripAdvisor. He has just opened a new restaurant, Roots, in the City of York, which showcases his love of the land, his family’s farming heritage and homegrown Yorkshire produce.

WINNING THE GREAT BRITISH MENU WAS A PIVOTAL MOMENT FOR MYSELF AND THE BLACK SWAN I spent weeks dreaming of the food I was going to cook there; I’d wake up thinking about it, then head to kitchen and try something else. When it came to filming I was so, so nervous. At the restaurant my food makes sense because of the place. I wondered, will my food make sense in a studio in Camden, a place that’s a bit like a bunker? The pressure was so high.

FOOD IS A FAMILY AFFAIR

GAINING A PERFECT TEN ON GBM WAS A CAREER HIGH

The field-to-plate element isn’t a gimmick. Our family has farmed the land surrounding the pub for many years. My parents Tom and Anne bought the pub when I was young, running it as a local pub and B&B with no great ambitions for its food.

When Tom announced my score and told me I had attained the joint highest score ever I was very humbled and honoured to be on par with chefs such as Daniel Clifford, Tom Kerridge and Tom Aikens. Having watched them before on the show, it was amazing to be on the

same level as chefs that I’ve always looked up to. AFTER THE MICHELIN MY FOOD STYLE CHANGED I was making dishes from cookbooks - from other chefs. Clearly, I could cook, but I felt my food lacked real soul. I thought, I have no knowledge or experience of cooking in top kitchens in London or wherever, but what do I know? We’re farmers! I decided, then, that I would restrict myself to things I we could grow ourselves or forage – and that was really the start of the ‘new’ Black Swan – and now Roots. THE VILLAGE OF OLDSTEAD IS AN UNLIKELY PLACE TO FIND A MICHELIN RESTAURANT In terms of staff, chefs really have to make a commitment to work here – they have to relocate, they have to buy a car and be prepared to live the job. Thankfully, we never get awkward customers. People have made the journey to get here and that remote road is a scene-setter in itself - there is anticipation and escapism.

Black Swan

A CHANGE OF A SEASON IS ALWAYS A THRILL I want chefs to put the seed in, grow it, harvest it, then cook it and serve it to the table, so the food comes full circle to the customer and has more meaning. It is food we really believe in and we put our heart and soul into it. We keep developing what we’re doing; planting, picking and getting excited about what will appear the next week. I love it when summer comes, when we pick the veg at 5pm and then serve it at 6pm – that’s when the magic happens. IT’S NICE IF YOU CAN GROW SOMETHING AND MAKE IT THE STAR OF THE SHOW Our ‘meatroot’ is beetroot cooked in beef fat for five hours. It starts off as a big chunk, then cooks down with a smoky, sweet flavour. We’re really fond of that one!

I want chefs to put the seed in, grow it, harvest it, then cook it and serve it to the table, so the food comes full circle to the customer

THE RESTAURANT AT THE BLACK SWAN HAS AN AIRY, SCANDI-FEEL DINING ROOM We want people to feel comfortable. Welcoming and unstuffy. It is a great place to be at the moment – everyone enjoys coming in and guests and staff are really into what we’re trying to achieve here. I’ve never felt so fulfilled.

THOUGHTS

MY GORGEOUS

Yorkshire:

are breathtaking, the Yorkshire Dales are like a living work of art, our coastline is the envy of many countries and then we have the superbly dramatic Pennines, the stunning Peak District and the inspiring Yorkshire Wolds – which artist David Hockney has committed to canvas. We’re contemporary and cool too, with seven cities and countless towns boasting incredible culture, shopping, nightlife, theatres, museums, restaurants and bars.

SIR GARY VERITY DL CHIEF EXECUTIVE, WELCOME TO YORKSHIRE

VIEW There are so many, but I’d suggest heading to Sutton Bank, the place that the late, great Yorkshire vet and author, James Herriot, described as “England’s finest viewpoint”. Admire the magnificent scenery and then take a glider flight for an amazing look at this wonderful county in all its glory. MEMORY The Welcome to Yorkshire team being instrumental in successfully bringing the Tour de France Grand Depart to this fabulous county in 2014 and seeing its beauty showcased to the world - and Leeds United winning the First Division title in 1991/92! ESCAPE At home on my North Yorkshire sheep farm. I confess that I’m a bit of a workaholic so an escape and wind-down is essential. It’s good for me and therapeutic, but as anyone will tell you, there’s always work to be done on a farm.

PERSON There are so many great Yorkshire people, past and present and too many to name, but I really wish I’d met Yorkshire and England fast bowler, Bill Bowes. He was the most important force behind Yorkshire’s dominance of the County Championship during the interwar period and is still one of England’s most talked-about bowlers. Barry Cryer is a wonderful writer and comedian, a one-off, always original, with a rare eclectic mind and is nothing less than a Yorkshire icon. PASTIME Getting on my bike… keeping fit, pedalling through the beautiful Yorkshire countryside and watching in awe at how the professionals do it at the annual Tour de Yorkshire cycle race and I’m really looking forward to the UCI Road World Championships coming to Yorkshire in 2019. FOOD/RECIPE

PLACE I’m often asked where my favourite places are in Yorkshire and the genuine answer is it’s impossible to say because we’re blessed with so much variety. The North York Moors

Where do I start? Fish and chips at the coast or, for a treat, dining at one of Yorkshire’s Michelin star restaurants, but my signature dish has to be Yorkshire pudding of course - and always with gravy.

MARCH Enjoy a classic spring walk in the so-called ‘Daffodil Dale’ to see Farndale’s glorious wild daffodils. It’s a straightforward 3½-mile linear route alongside the enchanting River Dove, from Low Mill to Church Houses and back, though there is an alternative return route that climbs through farm fields for some lovely valley views. Depending on the weather, the daffodils are usually out between mid-March and mid-April, but this is a charming walk at any time of year. Facebook: Farndale - Daffodil Valley
