TERRY LAYBOURNE IS THE MAN WHO CREATED A ‘FOOD SCENE’ IN NEWCASTLE, LONG BEFORE THE DAYS OF STREET FOOD AND CRAFT BREWERIES. HE LAID THE FOUNDATIONS FOR QUALITY FOOD IN THE CITY, BRINGING THE FIRST MICHELIN STAR TO TYNESIDE AT HIS 21 QUEEN STREET RESTAURANT. FROM THERE, HE DEVELOPED THE 21 HOSPITALITY GROUP, WHICH NOW EMBRACES SOME OF THE BEST-LOVED EATING PLACES IN NEWCASTLE THAT CONTINUE TO GAIN INDUSTRY AWARDS AND ACCOLADES. GH: I started off my hairdressing career at the

TL: The development of the new food hall was a great project. I was initially brought in as a consultant to help with logistics and menus etc for what become Fuego and Mason + Rye, but soon got sucked in to the whole project. Eventually I agreed to take on the retail fishmonger, which I developed further into a fishmonger/fish kitchen, which we ended up naming Saltwater Fish Company. The concept was last-minute – I had no concept of retail, but I did the numbers. It needed an entrepreneurial fishmonger or an entrepreneurial restaurateur prepared to take it on.
GH: We love it there – amazing what they do in that little space!
GH: Any more plans? Could you see yourself retiring?
