This recipe creates the most strikingly coloured spaghetti, thanks to the beetroot. People will ask if you actually made the beetroot spaghetti - they always do - it’s up to you whether or not you own up!
Northumberland cook, Jane Lovett, is back with another culinary bible to inspire and educate when it comes to unfussy, fool-proof cooking at home
Jane Lovett is a cook, tutor, caterer, author and food stylist from Northumberland. She has had a life-long love affair with food; planning her days around feeding others, savouring mealtimes and always thinking ahead to her next plate of grub. She is best known for her delicious, reassuringly fool-proof recipes; and her brand new cookbook, Just One Pan, is no exception bursting with bakes, casseroles, gratins, dhals, frittatas and hearty salads of every description. A quick flick through the cookbook and you’ll find recipes to cover all occasions, from quick mid-week lunches, to family feasts, as well as snacks, sweet treats and sharing platters. Just One Pan is packed full of over 100 flavourful, achievable recipes to get fresh, home-cooked food onto the table in a stress-free way. Not only does one-pan cooking allow for a bit of downtime as dishes cook away on the stove or in the oven, it also means more time for relaxing and entertaining guests. Here is one of our favourite summer recipes…

30G WHOLE (SHELLED) HAZELNUTS, BLANCHED SEA SALT AND FRESHLY GROUND BLACK PEPPER
Boil a kettle full of water. Find a large saucepan, big enough for cooking the pasta. Heat the dry saucepan on a medium heat, add the hazelnuts and toast them until brown and fragrant (about 5 minutes), swirling them around so they brown evenly and don’t burn. Tip onto a board and roughly chop, then set aside. Pour the water from the kettle into the pan, bring back to the boil, add plenty of salt and then the spaghetti. Cook according to the packet instructions. While the spaghetti is cooking, put the beetroot, soft goat’s cheese, mint leaves and some seasoning into a small food-processor and whizz together into a smooth-ish purée. Check and adjust the seasoning accordingly. Drain the pasta in a colander (reserving a mugful of its cooking water first) and set aside. Heat the olive oil in the pasta pan and add the beetroot purée, followed by the pasta, plus a tablespoon or so of the reserved pasta water. Mix together and serve with the toasted hazelnuts, remaining mint leaves and some extra goat’s cheese.

Celebrate the height of summer with this quintessentially British treacle tart recipe by Shaun Rankin, Grantley Hall… A treacle tart carries some real nostalgia for so many reasons. Whether it takes you back to your childhood round your nan’s house, a Sunday roast at home, or a special celebration, it’s a quintessentially British pudding and a real crowdpleaser when it comes to dessert. If you’re going to give it a go this summer, make sure you try this award-winning, Great British Menu version - a treacle tart with as fine a pedigree as that of its creator, Grantley Hall’s Shaun Rankin.

FOR THE PASTRY 260G PLAIN FLOUR 100G ICING SUGAR 30G GROUND ALMONDS 125G UNSALTED BUTTER, DICED 3 EGGS PLAIN FLOUR FOR DUSTING 1 TSP MILK FOR THE TREACLE TART FILLING 60G UNSALTED BUTTER 1 EGG 1 EGG YOLK 3 TBSP DOUBLE CREAM 6G SALT 450G GOLDEN SYRUP 120G BROWN BREADCRUMBS TO SERVE 250G RASPBERRIES 1/2 LEMON, JUICED 1 TSP ICING SUGAR BLACK PEPPER 225G CLOTTED CREAM HOSPITALITY EDIT JUL/AUG 21
method
Start by making the pastry. Put the flour, sugar, almonds and butter into a large bowl. Using your fingertips, mix together into a crumb consistency. Add two of the eggs and mix well. Cover and rest in the fridge for 30 minutes. Meanwhile, preheat the oven to 180ºC/gas mark 4. Lightly dust a work surface with flour. Roll out the pastry to about 2mm thick. Line the tart ring with the pastry, letting it hang over the sides. Cover with oven-proof cling film and fill the tart base with dry rice or baking beans. Bake blind for about 20 minutes or until the case is cooked through and lightly golden. Remove from the oven and lift off the rice or baking beans and the cling film. Mix the egg and milk in a small bowl. Using a pastry brush, egg-wash the tart well and return to the oven for a further three minutes. Remove from the oven and set aside. Reduce the oven temperature to 160ºC/gas mark 3. For the filling, melt the butter in a

saucepan until it starts to foam and turn brown, then take off the heat. Pour the butter through a sieve to remove the sediment. Mix the egg, egg yolk, cream and salt in a bowl. In a saucepan heat the golden syrup gently for a few minutes until hot. Add the brown butter and mix well until it goes cloudy. Then add the cream mixture and the breadcrumbs. Mix well then pour the mixture into the cooked tart base. Cook in the oven for 25 minutes then reduce the temperature to 140ºC/gas mark 1 and cook for a further 20 minutes. Remove from the oven and leave to cool, so the top is chewy and the middle is soft and moist, with the pastry nice and crunchy. When you are ready to serve your treacle tart, put the raspberries into a bowl and add the lemon juice and icing sugar. Mix well and finish with pepper to taste. Cut the tart into portions, scatter with the raspberries and serve with a scoop of the clotted cream.

Highlights include starters of roasted king scallops with pancetta, braised lettuce, fish velouté and parsley oil and a twice-baked cave-aged mature cheddar cheese and spinach soufflé with a pear and walnut salad. Championing the main dishes is the Chateaubriand, a stunning sharing dish with the usual accompaniments as well as an onion and pancetta compote and both bearnaise and peppercorn sauce. The restaurant is located in the iconic Spanish City which recently underwent a £10 million restoration project, reopening after nearly two decades of closure in 2018.
