One of Newcastle’s most respected chef-restaurateurs, Terry Laybourne, takes us through his top tips for the perfect festive turkey! - First of all... it seems that, certainly in our house, no one wants to eat the dark leg meat. Ask your butcher for a turkey crown (a double breast on the bone) rather than a whole turkey. - Perhaps the single biggest thing would be to immerse the turkey in a brine overnight; this will result in a tastier and much more succulent breast. - Use a digital probe! Dryness is often a problem in roast turkey, particularly in the breast meat. Use a digital probe to monitor the internal temperature and remember that there will always be around 3 to 5 degrees heat gain as the bird rests. - Consider the gravy. If you don’t have any turkey giblets, scatter a good handful of chicken wings in the roasting tray under your turkey; these will provide you with a good base for the gravy. - Don’t be tempted to roast at too high a temperature, which can also lead to dryness. 160°C is perfect. - Rest the bird for at least 20 minutes before attempting to carve. The resting time allows the meat to relax, rendering it more succulent and actually easier to carve. - Try a boxing day fry-up. Cut any leftover cooked turkey into bite size chunks. Sauté a chopped onion and some diced smoked bacon in a large frying pan until they begin to soften. Add a handful of sliced cooked potatoes; continue cooking until the potatoes begin to brown. Throw in the leftover turkey and a teaspoon of caraway seeds, a tbsp of chopped parsley and a little sage toss together. Season well and add a tiny splash of good quality white wine vinegar. Divide between warm plates and top each with a fried egg. Serve with a green salad. Enjoy - and a very Merry Christmas!

Three words that sum up Christmas for you? Family, food and fun. How do you spend Christmas Day? Last year we all had Covid, so it's probably best forgotten! In a normal year it depends on whether or not Newcastle Falcons have got a game because we sometimes play on Boxing Day, but generally speaking it's all about seeing family. We have two young boys now, which obviously changes Christmas a lot. Max and Rex are 1 and 2 now so they're just starting to get to grips with it. I don't roped into doing any of the cooking, I just sit and eat! Do you have any interesting festive traditions? I don't, actually. We don't get up to anything unusual, just make sure we enjoy it!
FAULTY TOWERS: THE ORIGINAL DINING EXPERIENCE
CULT CHRISTMAS CRACKERS: A TYNESIDE XMAS ALL-NIGHTER

Your favourite places to visit in Newcastle at Christmas time? How has 2022 been for you? It's been good for me and my family. We hadn't been abroad on holiday for years with everything that's been going on, but we managed to get away to southern Spain, which was nice and hot. What are you looking forward to in 2023? One of my wife's pet hates is the fact I never plan for anything, so I don't really have anything specific other than hoping that everyone has a happy and peaceful year. Obviously I'd love Newcastle Falcons and the region's other sporting teams to do well, too!

The season’s celebrations don’t stop there, with Fenwick’s deliciously entertaining experiences continuing in Arthur’s Restaurant located on the first floor of the Newcastle store. This year, families can also bag tickets to Santa’s Breakfast Club and Santa’s Supper Club, as well as the brand-new Afternoon Tea with Santa. Northern Pride returned with a bang after two years away, finally having the opportunity to host UK Pride in our city, and what a stunning job they did of it! A whole weekend of amazing events and celebrations, with big stars on the Pride stage including Drag Race icon Bimini, and their biggest ever march through the heart of the city. They lit up the Town Moor in July, and we can’t wait to see what 2023’s event brings!

BIG OFFICE MOVES
Following on from our updates on the wider Pilgrim Street Development, Bank House - the first building set to be complete in April 2023 – is beginning to fill up, with two major businesses confirming plans to move into the building as soon as it’s complete! One of these, Lycetts, confirmed in October that they will be heading to Bank House after 60 years on Dean Street. The leading independent insurance broker has recently exchanged contracts on 10,000 sq ft of sparkling new office space, occupying the entire sixth floor of the 14-storey building, and international law firm DAC Beachcroft have taken 15,000 sq ft, the entire first floor and half of the second! This high-profile development is changing the face of the city already, watch this space for even more tenants coming soon!
ST. JAMES’ PARK HOSTED THE OPENING RUGBY LEAGUE WORLD CUP CLASH!
After a year of waiting, we finally got to enjoy the Rugby League World Cup! The opening game was hosted at Newcastle’s very own St. James’ Park this October, as England took on Samoa in a free scoring clash of Rugby League heavyweights. Rugby fans turned out in their thousands to show the teams what playing at St James’ Park is all about!
THE GREAT NORTH RUN MADE A TRIUMPHANT RETURN!
Talk about a comeback! The Great North Run returned with a bang as its famous city-to-coast route returned for the first time since 2019! Over 60,000 runners took to the streets to compete in the biggest half-marathon in the world with thousands of spectators lining the streets to cheer them on. The GNR once again raised millions of pounds for charity and cemented its place as one of the most famous running events in the world. Not bad for something originally created as a fun run!
LINDISFARNE GOSPELS
The Laing Art Gallery had a number of incredible exhibitions this year, but this one is a monumental moment for the city and an absolute must see! The Lindisfarne Gospels have made their way-back to the North East for the first time in 22 years. A vision in red and gold, this incredible Anglo-Saxon manuscript is well over a thousand years old, having been created on Lindisfarne’s Holy Island sometime around 700AD. The exhibition (available until 3 December) highlights themes of personal, regional, and national identity. As a city, we are incredibly proud to bring home this fascinating piece of heritage!

PILGRIM STREET CHANGES SHAPE
It can’t have escaped your notice, big things have been happening on Pilgrim Street this year, as this generational transformation of a key street in the city picks up pace. Three huge city blocks are in various stages of development, with the 14-storey Bank House shooting out of the ground at the south end of the street, and works progressing at pace at the north end, just off Northumberland Street, stunningly changing the cityscape. In April Newcastle City Council approved plans for HMRC to move their North East base into the city, and bring more than 9,000 jobs onto Pilgrim Street in a move which will benefit businesses across the city enormously. It’s a tremendously exciting time, we can’t wait to see what next year brings!

We’ve just hosted the opening ceremony and fixture of the Rugby League World Cup, we’ve previously staged fixtures from the Rugby World Cup, the European Rugby Champions and Challenge Cups, and each year the world’s biggest halfmarathon begins in our city.” The FA is expected to confirm its final selection of host cities in January 2023 while UEFA, European football’s governing body, will announce the Euro 2028 host nation in September 2023. From Alfie Joey reading kids stories, to watercolour painting, puppet-making, yoga sessions and ukulele lessons, not to mention the adrenaline rush that was the Tyne Bridge Zip Line, or the live performances from talented performers which wowed the crowds. Plus, if that all seemed a little like hard work, there were always loungers, deck chairs, giant games, and bean bags to lounge on in the suntrap that is Wesley Square, with even more new and vibrant seating further downriver! The Quayside was a hive of activity, with our stunning planters given a bold refresh by Bobzilla, and brand-new blooms overflowing to add a splash of green to the vista. On top of all this we added a snazzy installation from French artist Florence Blanchard to the stairs on King Street, and a trail to challenge the kids outside the Innside Hotel. Roll on next year… what will we think of next?!
