EATS

JOURNEY TO FINE DINING Would you like a Porterhouse for Two? ‘Why, yes, thank you.’ The Porterhouse is famous for this savory sensation for two, which contains over sixty ounces of meat. Lamb chops, filet mignon, and a New York strip, all cut by International Chef Joseph Gargano himself. The Porterhouse also serves a selection of the finest USDA prime only steaks, a wide array of seafood specialties, and boasts a sensational wine list of over 70 selections, the largest of any steakhouse in the Hot Springs area. The Porterhouse Steak & Seafood, as well as all the remainder of the Belle Arti Group of Hot Springs (which includes the Belle Arti Italian Ristorante and Lucky’s Bar and Grill) was founded by Chef Gargano.

6

He began his study of cuisine in his hometown of Palermo, Italy. From there, he traveled to England to finish his internship. After his internship, and nearly thirty years ago, he came to America. While living in California, he met and partnered with Master Chef Marselio, who was the chef in the White House for Vice President Mondale. “There he learned the true meaning of Italian cooking in America,” said Penny Gargano. “It is totally different than in Italy.” “In Italy, the pasta is eaten while raw,” said Chef Joe. “It’s eaten “al dente” which means hard as a tooth or tooth style.” From California, Chef Joe took a greyhound bus to New Jersey, where he lived for nearly fifteen

years running a store in Brooklyn. In 1992 he met his wife, Penny, in Greenwich Village. They had both looked at purchasing the same restaurant, and then gone to eat at the same restaurant across the street. After that, they ended up purchasing the restaurant together, and getting married. “I said to Joe, ‘You know, we really should think about moving south because life is a little more gentle there’,” said Penny. A few weeks after that, Joe took a trip to Hot Springs, Ark. and looked at the Belle Arti. He fell in love with it, and went back home and put everything they had up for sale, came back to Hot Springs, bought the restaurant, and never looked back. “Twelve years ago on Thanksgiving Day, we left for Hot Springs, Ark. having three days to pack and have never regretted it,” said Penny. “It has been an amazing adventure.”

MUSIC

SOUTHERN ROOTS OF ROCK Originating right here in Arkansas, Fallen Within has become quite a sensation across the south. With pulse-spiking music and grinding guitars, they have toured across several states and even toured with the band Saliva. The band has been together for eight years and as indicated by their appropriately titled third album, Eight Years New – they are still going strong. “We were just a bunch of friends that wanted to play together, then people started coming out and buying our CDs, and it became a bigger deal then we had ever anticipated,” said Derrick Brandon, lead singer. The band plays mostly originals with some covers in the mix. They have released four CDs to date, and are set to release their newest CD in January. Fallen Within derives from a song played by the band. “We had a song that I had written

8

named Fallen Within, and our first show got booked before we were even ready for it. There ended up being around three hundred people at that show, so we ended up calling our band that name for the night, and it ended up being the name of the band forever,” said Brandon. The band consists of five people, Ed Clopp rocking the bass, BJ Chatman banging the drums, Matt McQuay strumming the guitar and singing back-up vocals, Ken Best bringing the lead guitar, and Derrick Brandon singing lead vocals. “It does not matter who we play for, or what we play for, it doesn’t matter how many

people, from ten to ten thousand, we will rock them all the same,” said Brandon. Their newest CD is a mixture of ballads, mid-tempo rock, and party rock. “I can give out my promise that it’s the best one yet,” said Brandon. This is a completely new take on Fallen Within. “If you think you’ve heard us before, then just wait for this new album, it is the best yet. I can guarantee it.” To learn more about Fallen Within, you can visit their website at fallenwithinband.com and check them out on Facebook. You can also see them live in concert as the featured entertainment for the Hot Springs Hot Spots’ New Years Eve Party. See page 7 for more information!

ALBUMS ON REVIEW Contribution Courtesy of & Written by Jeff Rodgers

EL TEN ELEVEN TRANSITIONS

From the first few seconds in, you will have trouble believing that this is just two guys. El Ten Eleven’s 5th full-length album, Transitions, opens with a dizzying 10 minute title track that leaves you scratching your brain as to how many different time signatures and foot pedals were used to create such a sound. Progressive chords, loops, and unrelenting percussion leaping from acoustic to digital makes for an amazingly slick sound. If you’re unlucky enough not to catch one of the many live shows they have planned for this year, chances are you can hear their instrumental melodic rock on television somewhere. Shows including The Real World, All Things Considered, Market Place, Chopped, CSI Miami, The Glenn Beck Show, the MTV Video Music Awards and a Lexus commercial are just a few examples of the spread of El Ten Eleven fever.

GIFTS FROM ENOLA A HEALTHY FEAR

So it would be too easy to pull the “I have heard this all before” card with this band (as those are my initial thoughts upon hearing them for the first time), but after a few more listens, I do think that this band deserves better. Their latest release, A Healthy Fear, isn’t bad per se, and shows a real promise for a band that could do great things in the future. But, as of right now, it’s just... Well, it’s just another indie-rock band. I honestly expect them to grace the front window of your local Hot Topic store soon.

BAD BRAINS INTO THE FUTURE

In my mind we should all know who the Bad Brains are by now. The Bad Brains have been making amazing punk rock laced with soulful Rastafarianism melodies since 1977 — you do the math. The latest release, Into the Future, is filled with blistering fast, hardcore guitar riffs and pin-point drumming that makes this, easily, one of the best Bad Brain albums to date. Like a good wine, this band is getting better with age. Whether you are an existing Bad Brains diehard – or a fan of rock and roll, reggae, punk, or metal – you should be able to find a track or two that suits your musical tastes. Welcome back, Bad Brains.

HHHH ABOUT THE CONTRIBUTOR: Jeff Rodgers is a long-time native of Hot Springs. He has been an avid drummer for many local punk-rock bands. He is a professional photographer and graphic designer. The only thing he loves more than music is photography. Do you agree with our Reviews? Leave your feedback on our reviews at hshotspots.com. Submit your own Reviews! ART

A NIGHT IN SHORT FILM The film submissions are only accepted from Arkansas residents or Arkansas natives. This gives a chance for Arkansas’s film makers to be highlighted and seen.

The Arkansas Shorts jump started a program called “Inception to Projection” that provides students from area high schools with the opportunity to learn about film, and learn how to make films. “They come together and learn how to make a film, they make a film, and that’s the inception and the projection is that it is then shown at Arkansas Shorts,” said Solleder.

“When it started six years ago, it was a fundraiser only for the Valley of the Vapors Independent Music Festival, then it just grew into its own program and now, its own event,” said Bill Solleder, Executive Director of Low Key Arts. Now, the event is a fundraiser for both the V.O.V. and the Low Key Arts.

“It’s amazing to get kids that have never shot anything, and teach them how to do it from the ground up, and then to see those kids and their eyes when their film comes up on the screen of the movie theater,” said Solleder. “It’s precious.” The program is

Introduction, character development, climax,

and resolution: all in ten minutes or less. Everything you seek in a two hour feature film compacted into a short film. Short films are a true test of a film maker’s talent. The Arkansas Shorts film showcase is a display of many talented film makers who have given you everything you could hope for in a film in less than ten minutes.

funded by a grant provided by the Arkansas Arts Council. Students from universities all across the state submit films to the Shorts. Most students that submit are film and media majors, and film making is their career choice, so it is very serious competition, and a lot of talent is being submitted. “The real motivation of the shorts is to not just encourage Arkansans in general, but to encourage students that are interested in film making to do films and to have somewhere to showcase them,” said Jim Miller, film maker and event curator. “There’s a big difference

between posting a video that you’ve done on Facebook and having it shown in a movie theater with one hundred or more people.” They accept narratives, documentaries, experimental, children’s, and anything that one can think of. Every year there are more submissions, and with more submissions, it becomes more and more competitive. There is a small screening committee that will choose the films that will be showcased. There will be about two hours of programming and approximately twenty films. Last year there were about forty submissions. “What’s really special about it is, in the past, we’ve had submissions from directors as young as five and as old as seniors in their seventies, and it runs from beginners to professionals,” said Solleder. “So we have screened a five year old [child’s] film next to someone in Los Angeles doing it professionally in Hollywood, that’s what is really special about it, I think.” The submission deadline is December 7 for this year. This is a special night for another one of the Low Key’s projects, “Document and Present.” Matt McCormick and Jim Miller along with students from a previous “Inception to Projection” class, directed a documentary on the Valley of the Vapors Music Festival and will premier it after the shorts. They filmed seven days of the festival, and turned over one hundred hours of footage into a forty minute film.

A STILL FROM THE DEBUT FILM DOCUMENTING THE V.O.V.

The Arkansas Shorts will be at Central Theater on January 5. There is a reception at 7 p.m. and the films will begin at 8 p.m. Tickets will be sold on a first come first served basis. “People don’t realize what kind of talent has grown here and gone elsewhere and the same goes for the people that are still here,” said Miller. “There are a lot of really talented film makers that need more motivation to get their stuff out there. So, hopefully the shorts is part of that.”

THE ART OF SULTRY & PLAYFUL THAT’S BURLESQUE

Birthed from magic and imagination, Foul Play Cabaret has been capturing the hearts of many with their diverse and sultry shows, proving that the only thing hotter than the water in Hot Springs, Arkansas is the women.

1919

A kiss on the hand may be quite continental, but diamonds are a girl’s best friend. Music blaring through the room and a silky cur tain hangs on the stage. From behind the cur tain pops a long leg, seductively adorned in fishnet stockings and black high heels. Out swings the hour glass figure of a woman strapped in a corset, and ruffles on her panties. Welcome to burlesque. Her arms are up, covered in gloves to her elbows, then they slide down her body and she turns to greet the crowd. Flashing a smile, and walking slowly toward them she pulls the fingers of her gloves and rolls them down from the elbows. The crowd is hooked, and can’t take their eyes off of her. That’s burlesque.

Burlesque can be described in one word: seductive. The art of seduction is one that not everyone possesses – but can learn. Everyone has something sexy about them, they just have to find the confidence to explore it. Burlesque is an art all about empowerment, and showing your sex appeal. Contrary to popular belief, it is not all about the clothes coming off (although, some might say that is one of the benefits). One may choose to remove or leave on any amount of clothing they wish. It is about being comfortable with you, and being entertaining. “I was sitting around the kitchen table drinking wine one night with Violet D’Vine, and I asked her, ‘You know, I’m thinking about doing a fundraiser for Low Key Arts. But... it’s burlesque. Are you interested?’ And she said yes and it was done,”

said Ruby Lead. “We called Miss Doris Night the next day, and it was just on after that.” The Spa City Sweetheart’s Burlesque Review was the group’s first performance, and from that, the Foul Play Cabaret was born. Since then, the troop has done many shows, gone on tour, and added members. This year alone, the troop has performed in seven states. The Low Key Arts will host its third annual Spa City Sweetheart’s Burlesque Review fundraiser event on February 15 and these gorgeous Foul Play dames are sure to be the highlight again this year, among other burlesque lovelies. Creating the performance is the most important part of the show. “Having an idea of what you

want, and finding a song that goes with that idea. Or, finding a song that makes me want to move and figuring out what could I put with it to make that happen” said Miss D’vine. “Sometimes you’re just like, I want to wear blue and I want a really sweet, lovely song to go with it.” Finding the music to dance to is probably one of the most crucial par ts of burlesque. “I listen to music all day long, so I hear songs that I would like to dance to, and just do it,” said Miss Night. “I like to practice when I’m taking things off,” continues Miss D’vine. “Whenever you’re on stage, and the music is playing and there is a crowd of people in front of you, it just finds its way off. It comes off when it’s supposed

to, but the movement, everything else, what to do; it all comes at that moment.” “We were talking about doing a couple of shows within Hot Springs in the beginning. We didn’t want to burn it out. Then, it just started to go so well and everyone continued coming to the shows,” said Vincent Vagabond. “So, we decided to do a monthly review, but do a different theme every month, so we’re not bringing the same act in. These girls put so much work into this.” The Foul Play Cabaret will be performing on December 21, at Maxine’s, and again on New Year’s Eve. Everyone is encouraged to attend, and be wowed and entertained. Catch what is thrown at you, mind your manners, and wipe your chin. These ladies will surely make you drool.

GARVEN WOODLAND GARDENS

A BRILLIANT DISPLAY By Kory B. Oswald

GARVAN WOODLAND GARDENS IS TAKING CHRISTMAS DECOR TO ANOTHER LEVEL THIS YEAR, AROUND FIVE LEVELS ACTUALLY.

This year, the gardens boast a 50-foot tall, 18foot wide “Holiday Tree” with 100,000 lights. But the magic doesn’t end there, the tree not only offers a unique holiday aesthetic, but it dances and plays music as well. “We’ve been doing holiday lights at Garvan Gardens for 12 years, this is just the newest feature that we’ve added for this year’s show,” Garvan Woodland Gardens Executive Director Bob Bledsoe said. “We have some real artists, and we create everything that we do out here and it shows an unusual level of craftsmanship and artistry that you just don’t see every day.” “The tree was built with more than five miles of linear steel. and stands in the center of the Rose Garden amphitheater, surrounded by more than 2 million Christmas lights, and 20 acres dedicated to the holiday show at the gardens,” Bledsoe said. Garvan Gardens started the Christmas show around 12 years ago as a way to bridge the winter and spring months, and continue offering something unique to the public. Since then, the holiday cheer at the gardens has blossomed. “It’s grown into, probably, the biggest and best show in the south, certainly in Arkansas. It’s huge,” Bledsoe said. More than 65,000 people walk the gardens throughout the holiday season, which lasts from Nov. 17 through Dec. 31. The tree has its own viewing plaza within the Gardens and is also be view from Lake Hamilton. Hours of operation are from noon to 9 p.m. and the lights come on at 5 p.m.

Though the new Holiday Tree comes down after Christmas, and the gardens are closed during the month of January, Garvan Woodland Gardens offers fun for the entire family throughout the rest of the year. With more than 220 acres dedicated to botanical beauty, more than 150,000 voyeurs pass through the garden gates annually, and the aesthetics differ every time, Bledsoe said. “It’s a year round show, and it changes with every season. Depending on the weather, and Mother Nature, it’s different every year,” he said. “We’re doing things that make the experience enhanced year round.” The spring display includes more than 100,000 tulips that will start blooming around the first of April alongside Dogwoods, Kurume and species azaleas, tree peonies, wildflowers, camellias, and a kaleidoscope of others. The Garvan Woodland Gardens are planted in the Ouachita Mountains of Southwest Arkansas. They were donated to the University of Arkansas, as a gift to the public, from local industrialist and philanthropist Verna Cook Garvan. The Gardens have been held in trust since 1995, and open to the public since April 2002.

Every Christmas season, tuba and euphonium players of all ages and geographic areas gather to pay respect, through William J. Bell, to all the great artists/teachers who represent their heritage. Every TUBACHRISTMAS performance features traditional Christmas carols especially arranged by American composer Alec Wilder, who died Christmas Eve 1980.
