EDITOR’S NOTE Now that 2020 is officially underway, it’s time to make sure you’re keeping up with your most important resolutions, such as jetting off to some of our favorite resorts in our favorite resort wear brands! With Valentine’s Day and the most important time of the year – New York Fashion Week – just around the corner, we have just the date night looks and runway ready styles for you! Hear from famed fashion designer Dennis Basso, who talks to us about his latest collection and how he has stayed at the top of the glamorous style game for over three decades. This month we spoke with actor Jerry O’Connell, who is back in his native New York to star in Roundabout Theatre Company’s A Soldier’s Play, a Pulitzer Prize winning production which shows the trials and tribulations of African Americans during WWII. Jerry, America’s funny guy, who is known for his film roles in Jerry Maguire and current television series, is married to America’s Sweetheart, Rebecca Romijn. The always joking Jerry, who is proud to be a part of such an important project, is also a big-time family man. After landing his first role as a pre-teen, Jerry eventually moved to Los Angeles and never looked back. When he’s not on set, Jerry is spending time with his twin daughters, supporting his wife, and most importantly, watching Wendy Williams! During our interview, Jerry asked if I had Instagram and proceeded to like my posts – he really is as laidback and funny – or even funnier than you thought! While A Soldiers Play allows Jerry to tap into his more serious side, his natural charm and energy is uncontainable, both on and off stage. When it comes to advancing gender equality, Jay Rosenzweig, found of the annual Rosenzweig Report, is helping to ensure that the future of the corporate world is fairer – and more female. This Canadian philanthropist and businessman is also the founder of Rosenzweig & Company, a global recruitment search firm based in Toronto. From serving as board cochair of One Young World, a global forum for young leaders, to being involved in projects such as the Winston House, where creative types – including a few celebrities – can get together and be inspired, Jay is always doing a million things at once – and doing them right! Rosenzweig, a superstar Renaissance man, also has some serious songwriting skills! Wherever 2020 takes you, enjoy every mouthwatering moment with our top restaurant picks and getaway guides. Just make sure to focus on what matters most during this month of all things love. IG @allthefamenoneofthefortune

SABRIA CELAJ
Helping You Achieve Your Best Brows By lauren bens
W
ith personalized service and an eye for facial structure, Sabria Celaj, known as the ‘Eyebrow Guru’, is helping her clients look and feel like their most fierce selves! Sabria, who has her own space within a swanky spa called JTAV on the Upper East Side, is shaping brows – as well as the confidence of her customers! “Skincare and brow shaping go together, so after getting a facial, clients can also get their brows done,” explained Sabria. I believe that less is more. You don’t have to spend 45 minutes doing makeup and 25 minutes doing brows. For a lot of my clients it’s all about natural beauty.” Sabria first started her journey of becoming the best brow guru in New York with clients coming to her home in Westchester and then built up a clientele at a hair salon in the city. She recently decided to move to a larger, more private area, so she could give her loyal followers a true VIP experience. “I give everyone attention and listen to them. It’s all about customer service. I redo most eyebrows every four to six weeks but I train my clients how to do a little clean-up in between. I also offer tinting in

order to define lighter hairs without having to use a lot of brow pencil.” This guru, who grew up playing with a pair of tweezers and a pair of mini scissors, always imagined herself shaping brows. “I didn’t have much confidence. I had a small face and big, bushy eyebrows, which I thought took over my face. At the age of ten I used to take a toothbrush and brush out my brows or would pretend shape my brows with a tweezers. This was really a calling for me. It’s so important for my clients to leave my spa and my chair feeling good about themselves. Their feedback is very important to me.”
now a leading brow specialist known within the beauty business, she once almost gave up on her career, but was saved by a social media star! “Tanya Zuckerbrot, MS, RD and CEO and founder of F-Factor who has a large Instagram following, helped me a lot. The day that she came in I was going to throw in the towel and she was like, I need my brows done. She wanted to videotape it and I didn’t know anything about the importance of influencers at the time. She posted it and it wound up getting a lot of hits. Now my original clients tell me to make sure I don’t forget about them! For me it’s really all about honesty and giving them a positive result with their brow design.”
When it comes to giving clients their most beautiful brows, Sabria first determines the shape of the face. “If a face is oblong or long, too much of an arch will give them an angry look, and it’s all about giving them a soft look. It has to do with having balance with your eye shape and eyebrow bone. I definitely see more men coming in as well. For men, I just tweeze them using a brow pencil. I make feather-like strokes. It just makes them look polished and put together.”
Doing brows is also very personal for Sabria. “I get really into it. I also listen to my clients. I comfort them and try to restore their spiritual health or just talk to them, mom to mom, and assure them that everything is going to be okay.”
While Sabria, who is originally from Brooklyn, is

Flawless Icon cuts out the cutting by offering non-surgical procedures including laser hair removal, laser lipo, VelaShape for cellulite and many other treatments which will have you looking great – no retouching needed anymore! Unwind at this upscale spa where you will experience personalized attention in a sleek space which started out being laser focused on the latest laser hair removal technology such as the Candela Gentle Max Pro Laser, Fields now offers a variety of non-invasive options – even vaginal rejuvenation - so you can look and more importantly, feel your best. We spoke with Melanie, a licensed laser specialist, certified medical and clinical electrologist, certified clinical medical assistant, and licensed aesthetician. After all, new year, new you! How did you first get the idea to start Flawless Icon? What inspired me to open Flawless Icon was the lack of med spas that catered to African American skin for laser hair removal. In my search for a laser hair removal clinic in 2015, I couldn’t find one that specialized in dark skin. I visited one that burnt my skin not once, but 5 times. It helped my ingrown situation but it caused scarring and hyperpigmentation to my skin for life, so It was my purpose to open a facility. As I expanded, so did my services. What are people looking for today when it comes to beauty treatments? People are looking for the most effective, fast way to enhance their beauty without going under the knife, and nonsurgical is where it’s at. Which the need to be perfect in this world full of social media being so judgmental the industry has grown so fast that new technology comes out almost every week. What has made your med spa so popular? Flawless Icon services differ than other med spa because we not just only cater to one skin type we have mastered the Fitzpatrick scale well enough to treat the fairest person to someone with the darkest skin. With that being said, we have to be up to date with the latest technology for all skin types, which we are.
Explain your upcoming plan to franchise Flawless Icon? Our upcoming plans for Flawless Icon is to Franchise worldwide. We’re currently opening a location in Haiti and we look forward to opening one in Turks & Caicos, Virgin Islands, and more within the United States. What are your signature treatments? Laser Skin Rejuvenation, Vaginal Rejuvenation, Laser Hair Removal, VelaShape for cellulite, IV therapy for anti-aging and hangovers, B12 injection for energy/depression/sleep apnea/detox/skin, skin and nails, laser lipo and HCG rapid weight loss. flawlessicon.com

HAPPY FEET
From Toes to Head — At Aline Pilates By Simon Stanton Photographed By Amelie Belanger
“The feet are the trunk of the tree -- they are our base to hold up the rest of the branches of our body,” says Carey Macaleer, the owner and lead instructor of Aline Pilates, the most specialized, curated experience in the technique. Her studio, located in Brooklyn, NY, trains a wide clientele, from celebrities to athletes, fitness veterans, newbies, the elderly and pre-and-post natal programs for women. They come for Carey’s expertise and her unique perspective when it comes to Pilates and health. For one, it starts with your feet. “Foot alignment is the ‘secret sauce’ in Pilates,” says Macaleer, a trained dancer who discovered the technique when she was just 12-years old. “ Having correct alignment from your five metatarsals to the knee to the hips is going to help ease hip and low back pain. Believe it or not, it will even help with your neck or upper back pain.” Macaleer’s studio is known to create specialized programs for everyone, including one-to-one

training, group sessions, a customized “Wellness Hour” that goes deep into the needs of her clients, as well as pre-and-post natal sessions that provide exercises to help strengthen the pelvic floor and prepare the body for the stress of labor and recover in its aftermath. At the root of all her training practices is the belief that it all starts with the feet. Though her repertoire includes many techniques, she recommends five specific exercises, which involves curling, pressing, raising and pointing toes, stretching calf Achilles and feet (which prevent Plantar faciatis) and flexing at ankles. “Pilates works so many different areas of the body - it’s a full workout, but working the feet is the hidden secret,” she says. “Once you get your feet moving and aligned, it opens up a whole new connection to the core that you did not know existed. It all starts in the feet,” she says matter-of-factly. “It confronts all our issues and ultimately all our success.
Macaleer opened Aline Pilates three years ago, and since then it has become one of the most popular studios -- so much so, she will be growing the business in the coming year. Her team of veteran trainers and her passion for helping and improving all her students has made Aline the go-to experience for Pilates aficionados, young and old. “I teach women, men, professional athletes, marathon runners, prenatal, postnatal clients, even people over 80 years old, who are some of the strongest!” says Macaleer. “Clients come to us with individual goals. These could be as simple as strengthening their core or toning their body, but a lot of times it represents something else happening in their bodies, whether it’s recovering from a sports injury or strengthening their body after the birth of a child. We have a firm belief that by introducing Pilates into people’s everyday routines, they will become stronger both mentally and physically,” says Macaleer.” alinepilatesnyc.com

GENEVIEVE ROSE ATELIER A-List Approved Headpieces By Lauren Bens Photographed By christian Carroll
From bridal crowns and tiaras to trendy royal inspired headbands and everything in between, headgear is the hottest new accessory! Genevieve Foddy, an Aussie from Melbourne, is now styling the heads of all the A-listers. Genevieve studied at the London College of Fashion, where she learned all about the specialized skills needed to master the styles of British society millinery. Upon moving to New York, Genevieve talks to us about creating handcrafted hats and fashionable fascinators looking to the races – or a royal wedding! What inspired you to start your brand? I’ve always been interested in fashion history and historic costume and am a bit of a royal watcher (they wear so many great hats!). I’m also really interested in preserving traditional craft skills so when I moved to London and had the opportunity to study millinery I jumped at the chance. The more hats I made and studied the more I became interested in taking this very old-school craft and item of clothing and giving it a modern twist, while acknowledging it’s vintage magic. I moved back to New York in 2013 and worked for a milliner who makes beautiful day-wear hats, fedoras, sun hats. It was an incredible experience to learn that type of hat making and that side of the business but I missed the kind of millinery I had first worked on in London. Bridal and Derby headpieces are very feminine and intricate and require a lot of very fine hand-work and delicate materials. I really like the precision and delicacy of that kind of sewing and wanted to bring that style of headwear to America. Do you think hats have become more popular in the US lately? Are royal influences at play? Day wear fedoras and sun hats have always been popular in America - just think of the laid-back, large straw hat California beach look, or edgy an New York street style fedora.

christening or garden party to wear a fabulous headpiece. Hats are a great way to add exciting pop or embellishment to basic outfit and they make you look and feel taller and more confident. There are so many events now, such as the Polo, the Kentucky Derby and the New York spring social season, where a special occasion hat is entirely appropriate, that I think it’s a trend stylish American women can really make their own. What are your most popular styles? For summer 2020 I’m seeing a lot of interest in large straw sunhats and small fabric bucket hats. These styles cover most of your summer hat needs, from cocktails by the pool in a large protective hat, to running errands in town with a cotton bucket hat stashed in your bag ready for duty. Ready-to-wear hats, as with clothing, are speaking to the customer’s desire for form, comfort and practicality, with a stylish edge. Popular special occasion and derby styles are leaning towards large classic shapes in neutral colors, with sculptural elements such as large bows and dramatic flowers. These are beautiful, timeless pieces that can be worn time and again with a variety of outfits, and always looks both classic and fresh. The most popular trend in bridal pieces at the moment, and also a significant trend in special occasion hats, is a modern reinterpretation of the headband. 2020 brides can choose from delicate, narrow bands with tiny pearls and petals to statement-making ‘hat-bands’ - large, wide and tall headbands, popular on the European runways the last few seasons. Made in a variety of seasonal colors, hat-bands are a great choice for special occasion dressing if you do not wish to commit to a full, large hat.
American women are now experimenting more with special occasion headwear which I think is very much due to the influence of the Duchess of Sussex. And it’s a trend that I would love to further encourage!
Why are hats the hottest new accessory? Hats are a perennially classic accessory that will never go out of style. They add instant personality and flair to any outfit, provide sun and heat protection and are the perfect conversation starter! There are so many fresh, new shapes, styles, materials and colors available now that it has never been easier - or more fun - the find the perfect hat for every person and every occasion.
In the UK women take any formal occasion, such as a wedding,

JERRY O’CONNELL Coming Back to Broadway By julie sagoskin Photographed By Neil Tandy
W
ith a successful film career and a beautiful family, Jerry O’Connell is now taking a big bite out of the Big Apple as a lead character in A Soldier’s Play, currently playing at Roundabout’s American Airlines Theatre. From his iconic character in Jerry Maguire to his scary good part in Scream 2, Jerry is always ready for his next role. “I typically work in television as an actor, and I don’t usually get to work on socially important projects, so when this play came around, I was like, let’s go. I begged them for this role, and I’m so glad I did. I had seen the movie when it came out 36 years ago. The play was off-Broadway 38 years ago, so I wasn’t familiar with the play. They don’t just give Pulitzers out – I’ve never worked on a Pulitzer Prize-winning anything, so there’s just a foundation there. Our director, Kenny Leon, said this was going to be the most important thing I’d ever work on, and he was right.” Jerry’s role in A Soldier’s Play, which was originally put up at the Negro Ensemble Company 40 years ago, resonates now more than ever before, and this
affable actor is proud to be a part of this show. “The show seems more topical and appropriate for today than it was back then. It goes to show you what a powerful play Mr. Fuller wrote. We all feel like we are performing for giants who have done so much, not only for theatre but for the world. It’s an honor.” The show might indeed be socially significant, but Jerry also enjoys the “sexier” showstopping part of the show – when co-star Blair Underwood takes his shirt off! “Every night the crowd is jumping and cheering and going wild. I watch from behind the curtain, and I must say that I get into it as well! This play will really unite us all for life because we’ve been through a really emotional experience together.”
resident.com | 43
cover
With star performers in the play, including David Alan Grier, Jerry was forced to up his own acting ante. “Blair has a long monologue in the beginning of the show – it’s like a ten-minute monologue of just him talking. Usually everyone is off book holding a script and he wasn’t holding a script on the first day. We were all like, oh boy, this is going to be one of those shows, so we all worked twice, maybe thrice as hard. I was told that I was going to be in it a couple months before we stared, so I had eight weeks to prepare. It’s a dialogue-heavy play, so a lot of the work was memorization for me. I live in LA, so I drive a lot and was always reading it in traffic or in line at the DMV.” The always-jesting Jerry, who sometimes gets preshow jitters, currently has a show on WGN America called Carter, and said that being on the stage is definitely different than appearing on set. “I have a lot of fun when filming for television. We will do 15 different takes of the same scene and have time to goof around. It’s just loose and fun. The stakes in this show are a little higher. It’s more nerve-wracking. It’s a scary experience, but you’re supposed to do scary things in life. I get jitters the week before open when the critics come. It’s especially important for plays to get well-reviewed. I just want to do a good job. Now that we’re in it and doing it, it’s more about having fun with Blair and David and the rest of the cast.” This is Jerry’s third time on Broadway – he starred in a long-running show called Seminar with Alan Rickman as well as another play that closed immediately, so while it might be fun, Jerry knows better than anyone the fickleness of Broadway. As he says, “You’re only one bad review away from closing shop. Still, from a professional standpoint, I love coming back to New York and doing Broadway. Looking at your watch at 6pm and knowing that you have a show at 8pm, there’s just no other excitement like it. You’re just sharper as a person. It makes me hyper focused. Even as a successful actor, you are faced with abject unemployment
44 | resident.com
where you sometimes have nothing to do. If I didn’t have kids, I’d stay in bed and watch Wendy Williams all day, but having a structure like this is cool.” Jerry, who grew up in Manhattan, and started acting at 11 years old, found his true self while on stage. After taking an acting class downtown at HB Studio, Jerry lucked into a country call search and got a callback. And another callback. And another callback, until he finally earned his role in Stand by Me. “Really early on, I felt like my personality was finally comfortable in a setting, and that was on set. In class, I was always told I was hyperactive and to be quiet, but on set, I was encouraged to be energetic and just be me. My mom paid this guy who lived near us to help me during the audition process, and it really helped me when practicing my sides. My dad was like, it’s a small, independent movie; it’s never going to get released, so don’t tell anyone about it, and here we are, over 30 years later. My co-star was River Phoenix, and his mother told my mother I should get an agent and do this legitimately. I got a kids’ agent named Iris Burton and wound up doing a show for Scholastic.” After graduating from New York University, Jerry wanted to go to the West Coast and try something different. “I just had an ease with auditioning. My agent was like, you should get more into scripted work. I eventually got a television show called Sliders on Fox, which ran for four or five years. When I first moved to LA, the biggest change was having to switch dentists from my uncle! That’s when he knew I was out there for good. He also told me to have a little fun out there and not to get married too soon. I was 33 when I got married, which in LA, was pretty young still. I met my now wife, Rebecca Romijn, at an agency party when she was in a relationship. I met her again when she was single at a party, and I muscled my way into her table, and her friend told me to get her number; we’ve been together ever since.”

Jerry, who juggles his personal and professional life, misses his wife and 11-year-old twin daughters while he’s doing the show, but he goes home almost every weekend. “I go back to see my family and take my kids to school, make sure they’re not vaping. I miss them a lot. My wife really makes me laugh. I think I annoy her the amount of times I call her while I’m here.” It looks like he might soon be a “dadager,” as Jerry explained that both of his
kids are in drama at school. “They’re both great, but one is really showing a lot of interest in it and is really quite good. I joke that I want that Olsontwin money, but they have to stay in school. They were in Matilda in school, and it was fun giving them tips and stuff. It’s a family business. My wife is currently working on Star Trek Extremes at CBS All Access. We travel a lot, also with the kids. We did a little trip to Europe. We were just in Madrid and Portugal. Portugal was great; it has a maritime theme, and the food was amazing. It’s like a hidden gem. Our family also includes five dogs. My wife knows all these adoption groups, so we’re always taking something in. We’re super involved in Much Love Animal Rescue in LA and the ASPCA. Hallmark is good about rescuing dogs, and they have a show that my wife hosts. You meet a lot of people in animal rescue, so we always have animals in our house. Not to sound like the grinch, but when my wife brings home a new animal, I’m like no, but then I love it and take care of it and can’t part with it.” This affable actor, who grew up in the city and was given his first role as a pre-teen, is excited to be back on Broadway, especially since it’s in his hometown. “I stay in the apartment I grew up in in Chelsea. I love being in New York and taking the subway. I love going out to eat here and getting a reservation at Pastis. When you live in LA, you’re in a car all the time. The second you leave your house in New York, you find yourself going out to battle, and I find it inspiring. There’s no time to be tired here. It’s all about the energy. My 11-year-old girls love Broadway – all they want to do when they come to New York is see Mean Girls or Aladdin. It’s such a fun community to be a part of because we all go to this one bar called the Glass House Tavern. If I’m with Mr. Grier, I can get into Bar Centrale, a secret Broadway speakeasy. Life is too easy in Los Angeles; they have these self-driving cars now. I live in Calabasas where the Kardashian’s live. I love them actually; I’m always trying to be on the show. You can probably see me in the background. I think it’s exciting that they’re there. Kris even gave my wife some clothes for our kids in line at the Target X Missoni sale. She’s the best.” Catch Jerry in A Soldier’s Play during its limited run, which ends March 15th, before he jets off to his next project! Osaka Miami
Osaka Miami Have you ever wanted to taste an unusual yet flavorful combination of culinary techniques and ingredients? Then you must try Peruvian Nikkei cuisine! Newly opened in the Brickell House Condominium, Osaka Miami showcases the fusion of Japanese techniques and Peruvian flavors. The restaurant ultimately explores the food of people from the Japanese diaspora that settled in Peru in the 19th and 20th Centuries, remastering their traditional dishes by using local ingredients. Inspired by the different regions of Peru and classic Japanese interior design, the décor of Osaka Miami fuses the old Inca ruins with oriental Feng Shui style and contemporary chic. At the heart of the dining room, the restaurant features a beauteous Nikkei bar accented with adobe walls and wooden floors, leading you to a small appealing terrace. The interior is also complemented with designer installations from famous artists like Cristina Colichon, who crafted copper-weaved artworks that now proudly hang from the restaurant’s ceiling. The atmosphere at Osaka Miami is cheerful yet relaxing, with funk, soul and house music. You will also find DJs spinning rhythmic tunes on some nights. Just like the restaurant’s interior, the dishes are perfectly balanced. Peruvian Executive Chefs Rogger Quispe and Juan Alfonso Urrutia make flavors and textures play with each other, creating an intricate fusion that gradually melts in your mouth, especially with the extra layer of flavor from their amazing Peruvian sauces. The menu offers plates that are meant to be shared and features fresh vegetables, Kobe beef, seafood, duck and chicken. KOCHI
Serving up the Tastiest Tasting Menu in NYC By Jeanine Zelkas Photographed By Melissa Hom
K
ochi is a new gem that has just opened in Hell’s Kitchen. At its helm is Chef-Owner, Sungchul Shim, whose impressive resume includes stints in the kitchens of Per Se, Bouley, and Neta. At Kochi, diners are the lucky recipients of his combined innate talents and years of finedining experience. His regularly changing ninecourse tasting menu, which is a bargain at only $75, features skewered dishes and celebrates the traditional festival food of the Korean royal court which is considered the highest form of dining. Chef Shim elevates this traditional cuisine of his native country with innovative and playful interpretations using

French and Japanese techniques on locally-sourced and seasonal ingredients. The beverage program includes inventive cocktail pairings and a wine, champagne, soju, and sake menu. The minimalist brown and natural stone toned decor of the 30-seat dining room offers a welcoming and warm atmosphere that allows the food to shine. Seating options include tables along a windowed wall, as well as stools at the chef’s counter - a white marble bar where diners are treated to the added benefit of a front row to the action unfolding in the open kitchen.
On both nights I dined at Kochi, there was an elegant flow to the service of Chef Shim’s nine charming dishes. His modern version of Tarak-Juk, a traditional milk and rice porridge that was part of the Korean royal court cuisine, was first to arrive. It consisted of a delightful little deep-fried corn fritter ball partially submerged in a light milk soup of potatoes and pine nuts garnished with hemp seeds and chopped pine nuts. Opting for the supplemental caviar, which we did, rewards with a a royally appropriate topping of osetra caviar and gold leaf.
Most dishes highlighted a skewered component. A spear of asparagus tempura dipped in its accompanying thick rich sauce of ricotta and fermented soybean paste was fantastic; as was Mul-Hwe, a traditional spicy raw fish dish served cold with accompaniments. Kochi’s version featured three delicately sublime raw scallops pierced by a stick and perched on a bed of finely julienned crunchy cucumber and radish salad. An ethereal quality as well as a spicy kick is at once added by the surrounding airy sauce of tiger’s milk and spicy sweet red pepper chili; while balance in texture was achieved by the crunchy salad and topping of pickled onions that offset the scallops and sauce. Skewered truffle chicken terrine in its unctuous slow-cooked chicken broth was oozing with umami, and punched up by delicate shavings of portobello mushrooms and black burgundy truffles; while Kochi’s bossam, a Korean pork dish, consisted of tender flavorful pork belly that had been boiled in spices, then sliced and served with spicy pickled perilla leaves, picked daikon, and a thick spicy cashew nut dipping sauce. Using Japanese binchotan charcoal, an activated charcoal that generates extreme heat with virtually no flames and no smoke, Chef Shim created wonderful char and flavor on a rare ribeye patty wrapped around a chunky king oyster mushroom. Another standout result of this cooking technique was char-grilled Spanish mackerel, skewered and laid upon a bed of crispy eggplant nuggets. It was topped with threads of crispy leeks, enhanced by traditional Korean rice wine, and was incredibly delicious. My favorite course was the complex and exciting bibimbap, a bowl of warm brown soy butter rice harmoniously mixed with sea urchin, spicy pollack roe, glazed salmon, crispy candied anchovy slivers, toasted seaweed puree, and topped with a small piece of salmon rolled in crushed sesame cracker. It was a symphony of taste and texture. A tasty ice cream pop made from black sesame rice porridge and coated with crispy rice and sesame seeds had a pleasing slightly sweet and nutty flavor that succeeded in ending an extraordinary meal on a perfect note. 652 10th Ave. (at 46th Street) New York, NY 10036 646.478.7308 kochinyc.com

CHEF LIU
Cooking up Creativity at Kōyō By Lauren Bens
C
hef Liu, who hails from a Taiwanese province, is now serving up the tastiest sushi dishes in New York at Kōyō! Chef Liu, who has lived in Sunnyside, Queens, for almost two decades, continues to travel in order to be exposed to different food cultures – trust us, you will taste his inspired passion in every palatable plate! “When I moved to the United States my father told me to study and go to college, but I wasn’t so great at studying! I got my first job while in high school as a part-time dishwasher in Manhattan, and that’s how I met my mentors, Jimmy Lau and Nick Kim. Together they owned one of the most popular, new sushi style restaurants called Neta, where I witnessed all the chefs working with a real passion. My teachers showed me how to look at things from a different angle, try different restaurants and to inspire myself. You can find beauty while walking on the street, even from the leaves falling from the trees.” Chef Liu, who is known for his creative culinary cuisine, worked at the renowned Eleven Madison Park while waiting for his teachers’ new restaurant to open. He also noticed some very big differences when it came to operating a kitchen and serving different delicacies. “This was my first time working in a non-Japanese establishment. Being in a Japanese kitchen is like being in the military. It’s so organized – you see people working hard just to peel a potato, it’s all about perfection. When you work with a Japanese chef, you have to understand what they need before they ask you. Even the yelling and screaming styles are different. When Shuko finally opened in Union Square, it really introduced new techniques and was a more upgraded space and experience than Neta. As an assistant sushi chef, I had to combine my experience from Neta and Eleven Madison Park. I also had to learn the basics, such as fileting fish, cutting vegetables and even making coffee for the teachers. This was a very old-school type of training. Even after work we would still talk about food and the menu. Everything in the new space was cleaner and more organized. They also had a high counter, which was a new concept at the time. We were one of the first. This allowed the customer to be at the same eye contact level as the chef – traditionally, Japanese guests have to watch you. This was a big step in equalizing everyone.” Before Kōyō opened in November, Chef Liu made one more stop on his culinary tour working at Ichimura at Uchu. He is excited that he can now ride his bike to work – after all, Kōyō, which is located in Astoria, Queens, is right in his own backyard! “Kōyō is super special to me, it’s a true family. It’s a very small restaurant, as there are only six to seven us working there, including
myself and the owner. I followed the owner for many years, and we provide one of the best family staff meals. Every day is different. Before I took the job, I said we need to treat the staff as best as we can. We also change the menu every season based on whatever is available. The fish market gives me information based on the conditions in the sea as well as weather changes and possible hurricanes, so that I can choose what to order and what kind of dishes to put on the menu. We get everything from Adachi, the second largest fish market in Japan – they have two large fish markets. I stayed on the island for one month and just ate! I traveled the whole island, from north to south, in order to find the best fish and the best wagyu beef. I was so incredibly inspired.” The restaurant, which has two seatings, also offers two menus. The sushi omakase menu is $135 and
includes Sunomono, Suimono, 12 Pieces of Nigiri, Cut Maki and dessert. The mouthwatering kaiseki omakase menu, which is $175, includes a salad dish, a caviar course, a prawn head from Japan and tempura. Chef Liu likes to showcase different cooking skills. He even puts wagyu beef with wild vegetables in a uda box before dipping it in different condiment sauces. Most restaurants use wagyu beef from the grill or pan seared, but by steaming the vegetables without seasoning, people can enjoy all-natural flavors. They also provide a ponzu sauce and a citrusy, sesame seed sauce. “At the end of December, we switched from the fall to winter menu. We introduced a codfish roll in a tempura style with winter truffle from Spain. I get bluefin tuna from Spain – 95 percent of restaurants are using tuna from Brooklyn or Spain, only a couple places are using tuna from Japan. I think we really
have to give more credit to tuna from Spain. It has more consistency and less mercury, yet they’ve never given Spain tuna a certificate. In 2015, while working at Suko, I introduced my favorite rice from Tokyo, called kinmemai. I was first introduced to this rice on a farm in Tokyo. The texture is amazing and it’s super healthy, tasty and also nutritious. From the food to the presentation to the service, I just want the customer to have the best of the best.” Kōyō might be a small space with just eight seats at the sushi bar, but Chef Liu ensures every guest enjoys an unforgettable experience.

CHEF DAVE PASTERNACK At ESCA
By Aleksandar Nikodin
C
hef Dave Pasternack is the owner of three premium New York City restaurants, as well as the co-owner and Executive Chef of Hell’s Kitchen’s ESCA. Having prepared dishes at ESCA for over 20 years, Pasternack found a partner in Victor Rallo, and the duo revamped the restaurant from the ground up. Their new vision included renovating the interiors with a new bar, tables, and chairs, installing a new patio, and adapting the menu for the modern palate. Direct from Fisherman “I’ve worked in New York City since 1983; I’m a native New Yorker,” Pasternack says with a chuckle, “I was born here. I was raised here. I’m just hoping not to die here.” With his hand on the city’s pulse, Pasternack has developed a keen sense of identifying trends through the tides of restaurant openings and closings. One constant variable stuck out in his mind. “I thought there was a need for good fish restaurants in New York because it’s a pretty limited market.” ESCA is the third sea food restaurant Pasternack and Rallo have opened in the city with the goal of satiating the city’s desire for top-tier fresh seafood; the other two, Barca and Surf, are

in Staten Island. Practically raised with a fishing pole between his palms, Pasternack has an encyclopedic knowledge of sea life, and customers reap the benefits. “I’m very particular about the type of fish I acquire. That’s the key; that’s the game,” Pasternack says as he details his process, “I purchase from all different people. I deal directly with fishermen. I have some people who are importers. They bring stuff in from all over the world. It’s a combination.” Inventing Crudo It’s no secret in the industry that Pasternack knows fish; in fact, among chefs, restaurateurs, and seafood connoisseurs, he’s widely recognized as the first to introduce Crudo— a direct Italian-to-English translation of Crudo is “raw”, but in the culinary world it’s synonymous with raw fish. “I went on a trip to Croatia and a friend of mine took me out for raw fish. It’ll be 20 years next month. It took off right away. I think the only raw fish people knew was sushi, and that was it—they were looking for more.” His instincts were on target, the raw dish was immediately a hit with foodies, where it’s remained a staple in many restaurants, which Pasternack discovered when dining out with his wife. “I was in a restaurant last year, and the waiter
came over and she was like, I’m gonna tell you about our specials. Do you know what Crudo is? My wife was kicking me under the table like, Don’t you say anything!” Casting the Line As Pasternack begins ESCA’s new chapter, the most vital change is the reconfiguration of the menu and complimentary wine list, to appeal to the contemporary crowd’s tastes. “I made it a little bit more diverse; I made it more meat-oriented. I brought back some of the classics from the old menu because I know people demand it. There’s a pork chop and veal chop now, and every week I do some kind of meat ragu for pasta.” The menu aligns with the restaurant’s easy-going and welcoming aesthetic. “I knew the market wanted more casual, so I made it more casual. I try to use the word ‘user-friendly’. We’re geared more to how the world is today.” 402 W 43rd St. New York, NY 10036 212.564.7272 esca-nyc.com IG @davepasternack
VICTOR RALLO Surf, Barca Birravino, Esca & Undici Taverna Rustica By Carlos Lacayo Eat! Drink! Italy! Victor Rallo is a restauranteur based in New York and New Jersey. He owns and operates Birravino in Red Bank, and Undici Taverna Rustica in Rumson, both of which have received numerous awards for excellence in cuisine, service, and their extensive Italian wine lists. He also runs Surf in Red Bank and Staten Island, and Barca in Staten Island. An Italian wine expert, Rallo published two wine books, Napoleon Wasn’t Exiled and 21 Wines. Vic hosted his own television series called Eat! Drink! Italy! with Vic Rallo, a cooking series on PBS where he celebrated Italy’s food, people, history, wine, and culture by showcasing some of their most popular dishes and drinks. It aired for five seasons. Esca, Premiere Fish Restaurant “The biggest problem in the restaurant business is finding good help. You have to find people who understand customer experience,” states Rallo, and lucky for him, his latest venture Esca, the Italian seafood restaurant he bought out from the Batali & Bastianich Group with some of the best help in the business, James Beard awardwinning Chef Dave Pasternack. The pair remodeled, repainted the exterior, and opened up the dining room, replacing the booths and banquettes with a backlit wall of wine, a serving and slicing counter near the entrance, and a shaded 60-seat patio with direct access to the dining room. As to the food, the New Jersey native states, “the quintessential Esca experience includes a crudo, possibly a crudo taster, and antipasto or a pasta followed by a Secondi (main course).” According to Rallo, the Branzino Al Sale, which is the Mediterranean Sea bass cooked in salt and finished with some sea salt and a crack of black pepper served with sides of Contorni or Italian-style vegetables is the clear best seller. When it comes to wine pairings, he said, “The cuisine at Esca is fish-driven so what I like to do is find wines that are very high in acid that balances with the food.” Restaurant Business in Vic’s Genes Rallo has been in the restaurant business ever since he was a child. His parents owned Rallo’s Pizzeria, where he was bussing tables by the time he was 12. His parents encouraged him and his brother go to law school, but upon passing the Bar Exam, Rallo went right into the restaurant business, as it was where his heart was. “When you’re born into the restaurant business it never leaves you; it’s in your genes,” Rallo states. What’s Next for Rallo “There’s more to do,” says Rallo, “I’ve been asked to shoot another season of the show and to write another book. But right now, I’m concentrating on getting all of my restaurants strong so that they’re sustainable. The future looks great for all of them.” 402 W 43rd St. New York, NY 10036 212.564.7272 esca-nyc.com

ANDREA CORREALE Elegant Affairs By Carlos Lacayo Celebrity Clients Elegant Affairs was founded by celebrity caterer Andrea Correale over two decades ago. Since its inception, Elegant Affairs has served the likes of Leonardo DiCaprio, Nick Cannon, P. Diddy and Debra Messing as well as corporate giants such as Amazon, American Express, American Heart Association, Google, HBO, Jimmy Choo, and Ralph Lauren. Andrea’s knowledge of innovative food preparations led to an invitation from L’Oréal Paris Academy to be one of their lifestyle and entertaining experts, shortly followed by similar invitations from Ehow.com, Sam’s Club, Lenox China, and OK! TV. “Elegant Affairs is my baby. I breathed life into her 25 years ago and watched her grow all these years. I’m really proud of what I’ve accomplished, and I’m not done!” said Correale. Rent-A-Waitress Andrea’s first adventure into the hospitality world was through her company, Rent-A-Waitress, which had a staff of 40. By the time Andrea finished the Hotel and Restaurant Management program at New York Institute of Technology, she felt ready to move on to the next phase of her professional development. Once she completed her degree, a full-service off-premise catering and event planning company was born. It grew into a company sought out for its commitment to excellence. FEMA Disaster Relief In 2012, Elegant Affairs was called upon by FEMA Disaster Relief following Hurricane Sandy. Andrea rallied her team to set up an onsite kitchen with food service that was up and ready to serve in less than three days. Andrea and her team served thousands of meals every day. “This project, although not glamorous, gave us the opportunity to use our skillset to do good for the community by feeding 4000 people breakfast, lunch, and dinner daily,” Andrea said. “It warmed my heart to see all my staff rise to the occasion and deliver an outstanding product under less than optimal conditions.” She confided that it was especially rewarding to provide neighbors, relief workers and New Yorkers of the communities surrounding her hometown with a warm meal as they faced the daunting task of picking up the pieces Sandy left behind. Being a part of the disaster relief effort was a unique occasion, a moment in time Andrea will remember with gratitude and appreciation. New Recipes for Valentine’s Day Known for her innovative food presentations, Andrea is always coming up with festive new recipes to fit any occasion. This Valentine’s Day, she picked her favorite fuchsia drinks including Pink Champagne Punch, Pink Berry Sangria and Cupid’s Cranberry Mojito. As far as

dining late from work was Montiel’s mantra, as this opportunity allowed him to observe the cooks and learn to prep in the kitchen. This helped him climb up the ladder; and with a family to support, he flourished in every available position. “The dishwashing ended up launching my career!” laughed Montiel. My American Mother Montiel’s advancement through the restaurant industry was swift, from I Coppi in the East Village to the Upper East Side’s Amaranth, and finally Tappo on the Lower East Side where he met his culinary mentor, Chef Jody Williams. “Jody taught me about purchasing, portioning, prepping, and how to run a team,” said Montiel. After leaving Tappo, Williams displayed her faith in the young chef, by bringing him to work alongside her at Giorgione and Gusto. “She was more than a mentor, she was like a mother to me, ‘my American mother!’” With Williams at his side, Montiel progressed to Sous chef at Giorgione, and 9 years later, he was appointed his first Executive Chef position at Gusto. Contemporary Mexican Cuisine In 2018, Montiel joined the Cantina Rooftop team as the Executive Chef, where he thrived due to his solid foundation of authentic Mexican recipes working in tandem with his adopted Mediterranean techniques. With a confidence molded by experience, he created a fresh contemporary Mexican cuisine, and a menu that rotates every 3 months. “For example, this Spring we will feature squash blossom quesadillas as soon as they are in season,” said Montiel.

odd jobs to support his family. “I came to America at the age of 16 with $25 in my pocket and an English vocabulary of 12 words! My biggest obstacles by far were the language barrier, supporting myself, and getting somebody to offer me a job at the age of 16 with no measurable experience,” said Montiel. It wasn’t long before he broke into the restaurant industry as a dishwasher at Naci Yangin’s Italian restaurant, Diva, in SoHo. Although grateful for the opportunity, Montiel found it difficult to survive at minimum wage, even when working 60 hours a week, but he had to persevere as he bought a oneway ticket to America. His Grandparent’s Restaurants Creating a reputation as an innovative chef, Montiel still finds time to reflect on the original events which shaped his cooking style, and future. In a show of appreciation, he reopened one of his grandparent’s restaurants La Unica in Hidalgo, which had closed after they passed away. “I knew in my heart that one day I would reopen their restaurants in their honor.” Not one to rest on his laurels, Montiel and his boss, Pedro Zamora, plan to open a series of Taquerias and restaurants as partners. JAY ROSENZWEIG Social Justice & Entrepreneurial Superstar By julie sagoskin Photographed By Vito Amati
W
hen it comes to advancing human rights and equality, both around the world and in the workplace, superconnector and entrepreneur Jay Rosenzweig sees marrying his passions for business, sports, music and social justice as powerful engines to get there. Rosenzweig, a business consultant, lawyer and humanitarian, founded Rosenzweig & Company in 2004, a global talent strategy firm. The company specializes in serving clients by being more nimble and innovative than big-firm competition. Hunt Scanlon, a leading publisher in the industry, calls Rosenzweig & Company “the leading international boutique.”
Jay Rosenzweig began advocating for diversity and fairness in the workplace years before it was fashionable. In 2006 he began the annual Rosenzweig Report, which tracks how many women are being hired for the top jobs at public corporations. “When I discovered back in 2006 that only 4.6 percent of the top executive jobs in Canada for example were held by women, I was shocked and those numbers are similar in the US,” Rosenzweig says. “I knew the number would be low, but I didn’t realize it would be that low. The good news is that 14 years later, those numbers have doubled, but the bad news is that we’re still at less than 10 percent. We’ll keep doing this report, year after year, until
I can hopefully work my way out of a job once we get fair and equitable representation for women in executive suites.” Rosenzweig’s passion for social justice goes far beyond gender equality. To understand where it comes from, one need only go back to his college days. While studying at McGill University in Montreal, where he received two law degrees as well as a philosophy degree, Rosenzweig found a life-changing mentor named Irwin Cotler. “He made a major impression on me then and still does today,” Rosenzweig says.

Cotler is a law professor and human rights advocate, who has represented political prisoners such as Nelson Mandela and Natan Sharansky and been immersed in virtually every significant human rights struggle over the past five decades. He was also a forward-thinking Attorney General and Minister of Justice of Canada from 2003-2006. “Irwin Cotler instituted a myriad of progressive laws, including marriage equality legislation,” Rosenzweig says. “He also helped exonerate a record number of wrongfully convicted prisoners. He transformed our Supreme Court into the most gender representative at the time. He was also the first man on the women’s caucus. Cotler is extremely passionate about equality and is one of my greatest inspirations.” Cotler founded a human rights organization called the Raoul Wallenberg Centre for Human Rights. Cotler still runs it and Rosenzweig is an active board member. “We are representing the Nelson Mandelas of today all around the world,” Rosenzweig says. “We are combatting hate, antisemitism and racism in all its forms. We speak out to prevent current and future genocides. We work to protect democracy around the world at a time when we are witnessing a global resurgence of authoritarianism. And, of course, women’s rights are an important cause for us.” A recent highlight at the Raoul Wallenberg Centre is the Jens Söring case, a man who spent 33 years in a Virginia prison for a double murder he did not commit. Rosenzweig, being the superconnector that he is, set up an introductory lunch meeting in Manhattan between two friends he was sure would hit it off,
74 | resident.com
Cotler and Jason Flom, an iconic music executive and founding board member of the Innocence Project. By coincidence, Flom’s phone rang and it was Söring calling from prison. Flom passed the phone to Cotler and he spoke with Söring and pledged to help. After a prison visit, Cotler urged publicly for Jens’ immediate release, developed supporting pleadings for him and other strategies to gain his freedom. “We got the incredible news a few months later that Jens was free! We were elated. Jens was granted parole, and is now a free man, at home in his native Germany. We are not however 100 percent satisfied yet, as we believe the final step should be a complete declaration of Jen’s innocence as part of the administration of justice. But don’t get me wrong - Jens is finally a free man, and that is what is most important,” says Rosenzweig. Looking back to the beginning of Rosenzweig’s career, it’s apparent he’s followed a progressive path all along. He’s always had a passion for justice and equality, and began by articling at a Toronto based law firm representing those wrongly convicted. This was at a time when DNA technology was becoming more and more reliable, and quickly became a tool to exonerate the innocent. But then this ambitious young lawyer suddenly saw a business opportunity in the world of high-end talent acquisition. He took a job with a boutique firm that was ultimately acquired by Korn Ferry, the world’s largest firm in this specialized sector. “It was an unexpected pivot, but a great opportunity,” Rosenzweig says. “I promised myself that if I left law permanently, I would find ways to help people
and give back. I took to the business quickly with this boutique firm, and then suddenly I was a young partner at Korn Ferry. I stayed a few years, but I’m an entrepreneur by nature, so I started my own firm to serve clients better than I could at a big global firm. My vision – which has been realized – was of a firm that could provide the most senior, research based, comprehensive and customized service to our clients for their most critical needs.” Rosenzweig & Company has done work in places like Dubai, Brazil, Hong Kong, and all across Europe and North America. The firm recently placed the head of digital for a global, multi-billion-dollar financial services company; was hired by a private equity firm to find a CEO for an US$80-million business they now own; and was hired by a venture capital firm to find a CEO for a ground breaking medical device business. The list keeps growing and repeat business is common. The aforementioned multi-billion dollar global corporation just hired his firm to find a head of innovation for them. Jay Rosenzweig is also deeply involved in the emerging tech space. He advises dozens of businesses in this regard, including start-up founders and the venture capital firms who invest in them. The work he does ranges from helping to build first class teams, providing connections for fundraising purposes, business development and overall strategic advice. “I help them scale up so that they can ultimately achieve the success they aspire to, whether it be greater revenues, profitability, or a lucrative exit. Most of these businesses are based in Los Angeles, Silicon Valley, San Francisco, New York and Toronto,” he says.

Advocating for gender equality and diversity dovetails into the tech sector because the industry skews male. To that end, Rosenzweig helped his friend Jodi Kovitz build #movethedial, a tremendously successful and fast growing global movement to help advance women in tech. “Beyond the moral imperative of equal opportunity for all, it stands to reason that the more diversity around the decisionmaking table, the greater the opportunity for creativity and vision and results,” he says. His branded Rosenzweig Report has received much attention globally. It has been cited in government reports, university research, various books and widely in the media. “We’ve gotten endorsements and contributions from important influencers such as Sheryl Sandberg, Deepak Chopra, Andrew Yang, Van Jones, Zainab Salbi, Chrystia Freeland, CEO’s and Board Chairs of banks, Toronto Mayor John Tory, and many more,” Rosenzweig says. In addition to pinpointing the issues facing women, Jay believes men don’t want to be pigeonholed into a particular role, either. “Everyone has their own desires, personalities and aspects of life that motivate them, and that includes men. Whether they admit it or not, many men hate being boxed into the notion that they need to get their lunchbox and go to work. Some are more nurturing and prefer to be the “CEO of the family”, where they thrive, while the wife is the primary earner. There are many combinations and permutations which work best in the context of any given couple, individual or family. All these stereotypes need to be reassessed so that people aren’t forced into roles that don’t suit them, and therefore make them unhappy.” Jay, who lives in Toronto with his wife and three children, says his number one priority is family. “My greatest source of pride and accomplishment will always be my family. Being there for my wife and kids is the most important thing in my life. I’m fortunate to have the infrastructure and support at home and at work to juggle family and full-time work, but I realize others need more flexibility.” He’s on the advisory board of a NYC-based business, Werk, that addresses this issue. Werk develops flexible strategies for the workplace that help employees balance their lives effectively. The team worked with a professional services firm that couldn’t figure out why they were having trouble recruiting and retaining great talent. Werk made them realize that they could recruit and retain greater talent if they offered flexible work arrangements.

“On the business development or sales side, you don’t necessarily need to work from 7am to 7pm – it might be that a few strategic calls can literally make your year,” Rosenzweig says. “If an average load at a professional services firm is 10 projects, why not give a rock star consultant five projects if she or he is only available 50 percent of the time? Sharing time is a concept that can work well for certain jobs. Again, we don’t need to stick with old workplace paradigms. The firm we advised implemented a new program, and they now have a much better recruitment and retention rate.” Rosenzweig doesn’t stop there. He advises dozens of businesses and non-profits in areas such as health, climate change, transportation, education and politics. He’s worked with his friend Dikembe Mutombo, the Hall of Fame basketball player, to raise money and improve healthcare in Africa. He served on the board of One Young World, a global forum of young leaders from 200 countries when it was held in Ottawa. Rosenzweig is working with Director X, famous for creating iconic videos for Drake, Rihanna, Jay-Z and many others, on an initiative called Operation Prefrontal Cortex. They, together with a broader multidisciplinary team, aim to reduce gun violence in Toronto through the implementation of meditation programs in high-risk schools, community centers and prisons. Studies show that meditation drastically improves the areas of the brain that regulate emotions and decision making. Rosenzweig signed on recently to partner with an anti-gun violence program in the U.S. started by

artist Tay Da Prince. Tay, together with his uncle John Legend, is officially launching the program with a song called Love One Another, which will be released in the coming months. Jay was there for the filming of the video, which will be released along with the song. “I got a call from the crew telling me I made the cut and will be in the video, let’s see! It’s an absolutely beautiful song.” Rosenzweig is a founding investor and advisor in Winston House, a center for creatives on the west side of L.A. “It was described by Billboard Magazine as driving the growth of the West L.A. music scene. Started in founder Corey McGuire’s loft, which can only hold 100-150 people, it has had the likes of Justin Bieber, Ed Sheeran, and Billie Eilish come through to experience music, and community, and inspiration in the most authentic ways.” Winston House is now expanding into a much bigger locale in Venice Beach over the course of the coming weeks. Says Rosenzweig enthusiastically: “It is about to go next level!” Another interesting business out of Los Angeles whose advisory board Rosenzweig sits on is FullCycle, founded by Ibrahim AlHusseini. “Ibrahim has an interesting story. He is a child of Palestinian refugees who grew up in Saudi Arabia. He then went to college at the University of Washington. Profoundly disturbed by the planet’s rapid resource depletion, he determined to act as a catalyst for change. Ibrahim’s vision for FullCycle is to create an investment fund that accelerates the deployment of climate restoration technologies. “It has been my privilege to work with Ibrahim and his team to help them achieve that vision. I also can’t help
but think that there is something hopeful about a Jewish-Canadian working in such close harmony, and with such mutual respect, with a PalestinianAmerican,” Rosenzweig says. While on the topic of climate change, Jay is also working on a massive project to save the planet with partner Ken Kragen, the master of accomplishing the impossible, who organized both We Are The World and Hands Across America. It is called Hands Around The World. The first piece of this game-changing effort is a ‘We Are the World’ type anthem that is being composed by India’s Academy Award and Grammy winner, A.R. Rahman (Slumdog Millionaire),” Rosenzweig says. The group gathered last week in LA to begin recording this song, with a star-studded group of artists. The day before, they gathered to celebrate the 35th anniversary of “We Are The World,” in the very same studio it was recorded. “It was a spectacular event,” he says. “It inspired us the next day to put everything we had into this new initiative, which is literally focused on saving this planet.” Jay is passionate himself about writing songs, and you can even find his songs on Spotify and Apple Music. This family man, entrepreneur, mentor and superconnector is continuing to plot moves that will have positive transformational impact in the world. So, look out for what’s next! jayrosenzweig.com

NEW YORK REAL ESTATE MARKET 1st Quarter 2020 is a Buyer’s Advantage By w. a. muller
B
uyer’s Market. Seller’s Market. This is always changing. But today, buyers are at an advantage when it comes to NYC Real Estate, according to Paul Johansen, a Licensed Associate Real Estate Broker at Douglas Elliman. We sat down with him to find out why now is the best time to buy in NYC. Resident: Why is this first quarter of 2020 proving to be a good time to buy in NYC?
80 | resident.com
Paul Johansen: In Manhattan, Deal Count is down 5% from 2018 and 17% from 2017, with $PSFT also down 5% and 10% respectively. Also, with mortgage rates at historic lows, banks are clamoring to write loans. Combine this with current sellers averaging 7 ½ months on the market above $8M and 5 months on the market below $8M. You have every part of the market pointing in the buyer’s direction.
Resident: Does this mean everyone will get a good deal if they buy now? PJ: The numbers don’t lie. The market has slowed, but many buyers are confusing a slow market as being a bad time to buy. Every day there are price reductions, so this means sellers are ready to make deals. It doesn’t ensure the deal of the century, but odds are people who buy now will be gloating, while those who don’t will look back and say, ‘I wish I had bought in 2020.’”
if they are basing their purchase on timing the market they do so at their own peril. Thinking you are good enough to purchase at the bottom has lost buyers millions. Think about the number of New York real estate stories that start with, “If I’d only bought…” Being smart and not buying into an overvalued market is one thing but buying into our current market where we have already pulled back for multiple years signals another. It might not be the bottom, but its close. Resident: How important are life events when it comes to buying or selling? PJ: Unfortunately, the “market” does not care about your life. It continues on no matter what. We get married, we have kids, people passaway, we have to relocate, we want to move to the suburbs. These life events happen, and people will need to sell their homes. In today’s market, odds are that sellers are not going to get what they want. Think of it this way, every time a seller DOES NOT get what they want, a buyer DOES.
price,” but what they forget is the utility of the home and the savings homeownership can provide over renting. Remember, if you are renting, there is no chance to make money on your home. Your rent is basically the same as flushing the money down the toilet. However, buying gives you a chance to build wealth while enjoying the utility of your home. Resident: For a final though, what are the top things people should know if they are serious about buying in today’s market? PJ: The first thing to do is get your finances in order. Second, do your market homework. Next, define success. Do you want to live in a doorman building, live close to the subway, have storage and parking? Write down what is important to you. Lastly, don’t force it – but don’t overanalyze either. You’ll know when you have found the right place. It might be the first place you see, or it may take months. But when the feeling hits you and it checks all of the unemotional boxes, don’t overanalyze. Just know it’s time to buy!
Resident: In NYC, so many people live in apartments, so does buying really make sense, even in a buyer’s market? PJ: Yes! So many buyers look at their return on a home as “selling price minus purchase
Resident: What is the first step NYC buyers should know when looking to buy? PJ: The first step is understanding your hold period, which is the length of time you hold onto your real estate purchase. Buyers need to judge their risk by their hold period: the longer the hold period, the less risk. The average hold is now 13 years and historically, no other real estate market has endured an economic downturn better than NYC. Just look at how NYC came back after 9/11. Resident: We often hear buying and selling is all about timing. How do we know now truly is the right time to buy? PJ: I hear from buyers all the time who say: “It’s not the bottom of the market.” And often, my response is, “So what.” Buyers need to understand

PURPLE MATTRESSES & BEDDING Dream in Color By Thomas Lau Shiozaki

ith our busy lives keeping us awake at night, it’s important to get a good night’s sleep so that we can achieve all of the dreams we dream! Your dreams are definitely going to be much more vivid when you purchase popular bedding products from Purple. Purple was launched by the Pearce brothers, Tony and Terry. Tony, a rocket scientist, and Terry, an engineer, combined their expertise to create an extraordinary line of sleep products. Tony and

Terry developed their patented high-tech carbon fiber for sporting goods and wheelchairs over 20 years ago, which was licensed to companies like Nike, Johnson & Johnson, Jansport and Dr. Scholl’s. During this time of innovation the Pearce’s invented the Purple Grid, the signature honeycomb-like material found in Purple’s mattresses. In 2016, they launched Purple via Kickstarter and was one of the top 50 most successful campaigns ever. In just two years, this digitally-native brand went public, hit $200
million in sales, and garnered 1+ billion views on social media. One of their all-time fan favorites is the Hybrid Premier Mattress, also known as “The Ultimate No Pressure Mattress”. This amazingly soft and durable material which is able to stretch 15 times its resting size, always goes back to its original shape and never makes a body impression. This incredible stretchability is due to Purple Grid. Their mattresses even come with a 100-day trial.
Besides the high-quality materials of cover, coils and foam, what makes this mattress really shine when it comes to getting a good night’s sleep is the Purple Grid, which is found in every Purple mattress. It took over three decades for the Purple Grid to get to its current and very cozy stage. The top layer of the square grid adapts to bodies for support and stays cool for comfort, ensuring a wonderful sleep every night. For every Hybrid Premier Mattress, you can choose between the Purple Grid’s 3” weightless support or 4” zero gravity float. At the very base layer, there are individually wrapped responsive-support coils which enhance overall responsiveness and durability of the mattress to support your body and let you rest peacefully, in true Purple style! Good things always come in pairs, and a good pillow always goes well with a Purple mattress! The new Purple Harmony Pillow is definitely a match for the Hybrid Premier Mattress. The Purple Harmony Pillow also has the patented Purple Grid Hex (Purple Grid in hexagon), which allows the pillow to breathe through 1500+ open air channels in orde to cool the head throughout sleep. The Purple Grid Hex is made of durable material, which adapts to your head and neck, while still keeping the shape of the pillow overnight and over time. To make your new mattress last longer, a mattress protector from Purple is a must. All Purple Mattress Protectors are water-resistant. Purple Protectors also stand out due to their super stretchy material, which keeps your mattress soft - non-stretchy protectors must go! MIKE WOLFERT
Reaching the Top with The Cliffs Climbing + Fitness By Julie Sagoskin
H
e might have always been an adventure seeker and accomplished athlete, but Mike Wolfert has reached new and exciting heights since founding The Cliffs Climbing + Fitness in 2005. Mike graduated from Colgate with a psychology degree in 1997 and landed a job with a traditional marketing agency, 21st Century Marketing. There he worked on an online marketing proposal during the dot come boom, which wound up increasing 21st Century’s profits by 500 percent. He eventually joined the dot com world in the Bay Area. While working out west, Mike had an eye

opening, life changing experience during a visit to Yosemite. “Seeing the giant granite cliffs for the first time changed me; I quit my job, moved out of my apartment and was soon living in my car and climbing full-time” said Wolfert. He was climbing daily and then started getting picked up by TV shows, sponsors, and getting flown around the world to climb big objectives while living a transient lifestyle. With the opening of his first gym in 2005 in the town of Valhalla in Westchester, New York, Mike was able to marry his passion of climbing with his sales and marketing background. “It was a way
that I could support myself and still keep doing what I loved most, climbing and sharing that passion with others,” explained Mike. The Cliffs expansion efforts continued to ramp up with a 25,000 square foot flagship location in Long Island City and an outdoor seasonal wall in Brooklyn Bridge Park. Last year they opened a 40,000 square foot location in Center City, Philadelphia, featuring a fitness center, saunas, and specific climbing training equipment such as a treadwall that acts as a vertical treadmill with climbing holds. The Cliffs also plans to open in Gowanus and Harlem in the next year.
own or with a partner after just 90 minutes. “We see everyone from 4-year-old kids to adults of all ages, shapes, and sizes. We have walls that anyone can achieve success on without needing a fitness or climbing background. We also offer yoga, after school programs for kids, parties for all ages, corporate team building events, outdoor climbing trips around North America, and a full retail store with professional gear.” “I was sleeping in the parking lot of the first gym I built until I could afford an apartment. At that time my goal was just to build a space that was as welcoming to the local community as climbing was to me when I first found it in Yosemite. However, as with mountaineering and the constant drive to challenge myself with the next bigger objective, that drive led me to think about what the next big step forward was for climbing gyms. Where gyms were once built in lonely industrial parks in the suburbs, we moved The Cliffs to the center of Long Island City, Queens. I want to make each space more exciting and continue developing a new standard for the amenities we provide to the community. The Cliffs, and indoor rock climbing as a whole, has really evolved.” In addition to being a place where you can get fit, The Cliffs also creates a feeling of comradery. “In climbing you’re working together to solve
a problem. It’s really a group experience. Even on ropes, you’re trusting yourself to someone else and creating these bonds that are difficult to create in everyday, adult life. You build relationships and create goals together. It instantly becomes a community. I knew that what we built was something special when some of the members started coming in on their rest days with no intent to climb, but just to be around their friends. In cities like New York especially, climbing offers active opportunities which are otherwise limited. You have work and home, and The Cliffs helps you fill that space in between.” As the popularity of climbing continues to grow, The Cliffs takes pride at being at the forefront of creating a new generation of climbers, “We’ve been doing this since it was a fringe counterculture activity.” This athletic adventurer who began his career as an accomplished athlete, guide, marketer, and entrepreneur, Mike continues to be an active climber, both in gyms and on mountains around the world. He continues to enjoy mountain biking, kayaking, mountaineering, ice climbing, and extreme skiing. Mike lives with his family near the first gym he opened in Westchester as he continues striving to reach new heights in both his personal and professional life. thecliffsclimbing.com
“Climbing has really shifted mainstream and The Cliffs has been at the forefront since the beginning. As the fastest growing indoor sport on the planet, climbing tends to appeal to a group who are interested in a more fun, experiential way to stay fit” says Wolfert. “It’s the workout without the work. SCOTT GERBER Nightlife Nobility By Julie Sagoskin
W
hen it comes to nightlife, nobody does it better than Scott Gerber, CEO and principal of Gerber Group! This hospitality group is behind some of the hottest hotel bars and restaurants including Mr. Purple, The Campbell, Irvington, The Sunken Lounge, Connie and The Pool Bar at the buzzy TWA Hotel at JFK Airport and more. From F&B venues in hotels, as well as standalone properties, Gerber Group is only getting bigger and better! “I started off as a commercial real estate broker representing high-end retailers and my brother followed me into the business. He was given the opportunity to work with Ian Schrager and we wound up opening up The Whiskey at The Paramount for fun as a side deal because we were both in real estate. It was super successful and fun and so we started opening new places with Ian as well as places on our own. We partnered with Starwood in the 90s to develop the W Hotel brand - if you fast forward to today, it’s now been 28 years since we started doing this. My brother is not a partner anymore since he started a brand called Casamigos, so I bought him out about eight years ago now.” When it comes to standing out in the hospitality business, Scott explained that the most important thing is ensuring that each space is stylishly designed – as well as having top service. “If we’re in a hotel, the music and lighting design have to be great, but it’s the service level that really makes the difference. This is what you will remember about our places after a few weeks, and it really is the biggest differentiating factor in the restaurant business. People might like or not like the food, but it’s the people we work with that really makes us successful. I’m very hands on, I get a report every morning of everything that went on. We also have a reservation system like Uber, so you can rate us. It’s a good way to manage our staff or compliment them or address them. I like to go to the bars once a week. I travel to Atlanta once a quarter and Washington, D.C, I’m very aware of what goes on.” Gerber Group has grown considerably over the past couple of decades, and with Scott’s dedication, it’s not hard to see why. “We’re very opportunistic. We have
102 | resident.com
a lot of hotel partners who know about us so when they have opportunities, they come to us. We opened 12 Stories in the InterContinental Hotel at the Wharf in Washington DC last year. The developer had been to one of our other rooftop properties, Mr. Purple, and loved it, and so that’s how we made that deal. Another example - Tyler Morse used to work at Starwood and was familiar with our work. He asked if we would be interested in operating three of the F&B venues at TWA Hotel. We run The Sunken Lounge, Connie and The Pool Bar at TWA. When Hotel 50 Bowery opened a few years ago, they had a big restaurant on the ground floor and club in the basement. After six months they replaced the operator with someone trying to stabilize the property. We were too busy to take over when they first asked but we loved the deal, so we told them we’d have to wait to look it over. We finally got involved in October when the timing was right. It’s really a beautiful space. We’re going to be replacing some furniture and lighting in May. There are two rooftops and terraces and we’ll be launching a club with a live music venue – we’ll even do some pop ups on the weekend. We’re developing another property at a new Arlo Hotel right now, as well as Nautilus in South Beach, which is a restaurant and bar. We’re also looking at deals in Charleston, Vegas and more in New York. If we think a hotel is going to be complimentary to what our business is, we’re definitely open to discussing a possible deal.” Scott is very selective about who his group chooses to work with, and he can afford to be, as many hotel brands come directly to him based on the knowledge that a Gerber space will most likely add value to their hotel. “We are supposed to be an amenity to
the hotel, something that makes guests choose their hotel over others. One of the factors that goes into that choosing what hotel to stay at is whether they have a great restaurant or bar. It’s so important for us to have a great relationship with our partners. A perfect partnership involves a combination of factors such as hotel developer, space and location. It’s especially crucial to attract locals. I would say most of our spots are visited by 50 to 60 percent locals, then 20 to 30 percent of those staying in the hotel and another 20 percent visiting the city. A lot of our partners are public, so they’re concerned about how their property is run and they know that they can rely on us to do the right thing. We don’t have underage people drinking in the bar, we don’t allow smoking and we always have security to protect our guests.” Gerber Group is flying higher than ever before, especially now that they have opened TWA Hotel at JFK Airport. “Tyler Morse of MCR was previously at Starwood and was familiar with us. We bumped into each other and he said we should check out this property he was doing. It was an incredible opportunity to have a rooftop pool at the airport overlooking the runway. It’s an iconic property, there’s a lot of nostalgia about it. It’s ideal for architectural buffs and people who love watching the planes. People are coming to this property just to see it, even if they aren’t traveling. There’s 50,000 square feet of meeting space, so if you don’t want to spend your time in traffic getting into the city, you can do a meeting there and then fly out the next day.” Another cool project under the Gerber belt is The Campbell at Grand Central Terminal. Scott and his
team took over the iconic and historical space and made the atmosphere a bit more casual. “It’s one of the most beautiful rooms in the world, and I was thrilled when our proposal won. Now, if you want to meet someone for a drink you can come wearing jeans and a jacket. We relaxed the dress code a bit and have a more casual vibe. The lighting is better, as is the air conditioning and heating, and the furniture is a big upgrade. We really restored this special space.” One of the biggest challenges in the hotel bar business today, according to Scott, is hiring great help and keeping up with costs as the cost of labor keeps increasing every year. “You can’t keep putting the price on the customer, so it’s important to manage expenses. Personnel is the most important thing to us, that’s why we support people outside of the workplace. We might send them to a soccer game or movie or support their charity. If we treat everybody with respect and do the right thing, they want to stay with us. We have busers whose children now work with us.” This native New Yorker who grew up in the South Shore of Long Island, now lives part-time in the city and part-time in Connecticut. “I love trying new restaurants when I’m not at my spaces and traveling with my family. We love to get out and go to Montana. We also just got back from a safari in Cape Town and Botswana. We ski a lot and spend time visiting our daughter in Wake Forest and our oldest daughter who lives in San Francisco. I love working but it’s always good to recharge.” gerberbars.com

ASHLIE ATKINSON Becoming An A-lister & A Brooklynite By Lauren Bens Photographed By Emily Assiran
Y
ou might recognize her from her standout role in the Oscar nominated biopic drama BlacKKKlansman, where she played Connie Kendrickson, a racist housewife turned terrorist, as well as in USA Network’s award-winning drama series Mr. Robot, opposite Rami Malek and Christian Slater, but Ashlie Atkinson, who has been in numerous films and theatre productions, is just getting started! After reuniting with Spike Lee in BlacKKKlansman (he had previously directed her in 2006’s Inside Man) Ashlie found herself on the A-list and was recently seen in Netflix’s Juanita. The only thing she might love more than acting, is living in her adopted hometown of Brooklyn! Ashlie, who is rebooting her career into high gear,
104 | resident.com
explained that she loves playing Janice, her character on Mr. Robot, because she is so joyful – in all the wrong ways! “I have always loved villains that have real joy when things are going their way — I mean, they’re getting their way and wreaking havoc, of COURSE they’re happy! It’s why I always loved Jack Nicholson’s Joker as a kid; he has a childish glee in destroying everything. It’s only when his plans aren’t working out that you really see him be menacing.” Growing up in Little Rock, Arkansas, Ashlie knew that she loved acting, though she had her doubts about starring on the big screen. “I was always doing school plays and children’s theatre, but I didn’t think it was a particularly ethical use of a life — and I think part of *that* perception was that I
thought I would just immediately become a star, which is obviously what happens when a fat teen from Arkansas wants to be an actor, duhhhhh. So, I went to Barnard College here in NY to be something else, something that could change the world! The only problem was, I wasn’t really good at anything else. And I finally got kicked out of there and ended up back in Arkansas at Hendrix College, where the faculty and my peers were committed to the idea that a life in the service of art is a good life, a life that contributes to the community. And my mentor at Hendrix suggested I go back to New York to go to the Neighborhood Playhouse for actor training. So, I did. And that was where I learned everything.” Appearing in the buzzworthy movie Blackkklansman last year definitely helped bring her into the limelight.
While she expected the movie to be major – Spike Lee and Adam Driver were involved – she didn’t expect to be any part of that buzz. “I had some things I was really trying to say about “nice” white women who prop up the white patriarchy while being fatally dangerous to black people. And I know Spike wanted to talk about those things. I was thrilled to be able to have that conversation on a larger stage. And as far as preparation goes, the real challenge — and I know this is super messed up — was to find things I get as excited about as Connie gets about harming or killing black people. It’s so insane, her point of view, that it’s impossible to find a way where I can twist things to where I agree with her. So instead, I have to find a thing I can substitute for that so I can pretend in my head that that’s what we’re talking about. Otherwise, I’d never be able to give her the terrible joy she requires. Like, in the bedroom scene? I’m literally thinking about buying a house. Like we’ve talked about it for so long. And now we’re doing it! Is it a mistake? Once we do it, we can’t take it back!” While some of her upcoming projects are currently a secret, this witty actress did spill the beans about a biopic she’s signed on to, as well as a jukebox musical she’s writing and a web series she’s doing with her best friend, Jennifer Laine Williams. What she definitely won’t tell you, however, is where she lives in South Brooklyn, where she’s lived since 2004. “I don’t say more because I hope nobody moves to my neighborhood — the rent is still reasonable! I love this city so much, I have never felt like I belonged anywhere as much as here. And I’m not saying that there aren’t bad days here, because WHOA can you have a bad, bad day here. And I recognize that as a function of my privilege, my bad days are not as bad as a lot of people’s. But there’s always the possibility that you will turn from the street onto the avenue and someone or something will be there that changes your entire life — a lover, an opportunity, a chance. I think, deep in their hearts, New Yorkers know their city as a chaotic goddess, and every now and again out of the whirlwind, she tosses you a gift.” Additional film credits for Ashlie include: Martin Scorsese’s and Paramount Pictures’ Oscar-nominated drama, “The Wolf of Wall Street,” Walt Disney Studios Motion Pictures’ “Bridge of Spies,” IFC Films’ and Kelly Reichardt’s “Certain Women,” Magnolia Pictures’ “Compliance” and Universal Pictures’ “Inside Man.” Makeup: Tommy Napoli Hair: Ben Martin Stylist: Lisa Tinglum

ERIC MITCHELL
Taking Names on the Media Relations Battlefield By w. a. muller
E
ric Mitchell, CEO of media relations firm Life Flip Services, talks about the importance of storytelling, building relationships, and leading from the front How has your military training served you in business? My service in the Marines is a very big source of pride for me. I still regard myself as an infantryman in the Marine Corp, not a media relations executive. I don’t have a broadcasting background. In my mind, I’m a grunt, and I’m not supposed to be here, and I treat it that way every day. I think that’s where my excitement comes from. I love what I do because I haven’t been in it my whole life, so it hasn’t beaten me down. To me, it’s fun. How do you define great leadership? Great leadership is leading from the front. Not being afraid to do every job in your own company. And making sure you’re looking to the people on your left and on your right. Those are the folks in your company that you have to trust the most. I’ve worked with some strange executives. They’d hire people but they wouldn’t let them do the job because it’s “their baby” and they’re afraid to let it go. So, a good leader relies on the team, instead of trying to be the team. What is good PR? It’s about telling a story that’s different than anybody else’s. A unique story makes a brand unique, especially an underdog story. I look at a company like
106 | resident.com
Nunbelievable. Their story is amazing. Who would have imagined that Tony Robbins would become involved with two nuns from a San Francisco soup kitchen and launch an organic cookie company? But, that’s a true story. And I love telling those stories. In business, what is your “secret weapon”? Establishing personal relationships. I consider that I have a friendship with all my clients and I want them to be long term. I hang out with them. I go on their media tours with them. We have dinner together, stay in the same hotel. They get to know me and my family. That’s how I built business, and, to me, that’s how it should be for everybody. Go back to that old school method and avoid being digital. Everybody does everything so virtual nowadays. The reason why we do so well on TV placement is because I go to New York once a month and I’ll take the show producers and bookers out to breakfast or to lunch or to dinner or leave them Starbucks gift cards, because I know how hard they’re working. Everybody is sending happy face emojis, but you still need to do a hug or a handshake. Handshakes are still very much good business. What do you do better than anybody else in the PR/media relations business? TV placements. I’m really good at getting clients on TV, not just promising it. I’ll be cocky on this one, because it’s true. With my partner, we deliver something nobody else can: we can place clients on TV, on radio, and on podcast. You can’t beat
that. Nobody can promise and deliver those three together. But we can because we’ve developed the personal relationships. Tell us something about yourself that very few people know. I love musicals. I’m a huge fan of Moulin Rouge – that’s my favorite musical. It’s weird, I know. Do you have a favorite quote? “The most important thing is to try and inspire people so that they can be great in whatever they want to do.” From Kobe. He was an inspiration to the world and will be greatly missed. Would you like to give a shout out to your fellow veterans? Transitioning out of the military is a nightmare for every serviceman. We’re told one thing will happen, and then we transition through and it’s not that way, from jobs, to housing, to medical They need someone who is going to stand and help them. Nobody helped me, so the only way I know how to remedy it is by being one of the voices that helps them call for assistance. What do you want the world to know about Eric Mitchell? That I’m a father of four, married for the last 16 years, I’m a Marine Corp veteran, I love musicals and the Trailblazers, and that my family is everything. I wouldn’t be here today if it wasn’t for my wife and kids.

GRIT DAILY
Live Journalism Hints at a New Chapter for Art Basel Miami and Audiences are Loving It By w. a. muller Photographed By Stephanie Agudelo
I
t was not just a banana taped on a wall that sold for $144,000 that made a splash this year at Miami Art Week. For the first time in its history, quality “live journalism” descended onto the scene, thanks to Grit Daily Live!, the live journalism wing of New York-based Grit Daily News, which might have just augmented Miami’s purposeful art game forever. Looking at the work of someone like Bradley Theodore, the opening fireside chat Grit Daily showcased on their stage, is inherently a mesmerizing experience. Many would argue that is exactly what art should be, something experiential rather than discussed. But rather than merely look at art -- Grit Daily’s experiences dive right inside the artist’s mind. Grit Daily’s stage style is engaging, lopping off the front end of boring questions like “what is your name” and tell us about yourself.” Instead their team pulls at cultural strings where art shines best: Collaboration, community, and how we interact with each other. And who would argue against that? Because entering into the mind of an artist is like opening Pandora’s Box—you never know what you’re going to find. As the expressers of culture and the collective unconscious, entering into the mind of a sophisticated artist sends one down a rabbit hole, leaving them to ponder and question whether they did something wrong. Maybe they did, but while at once you may question the very foundation of your own self-hood, it unleashes a whirlwind of creativity and momentarily expands the minds of the audience. As journalists at Resident magazine, we are trained to ask questions no matter their consequences. As long as they get us closer to the truth, we are doing our job.

Grit Daily Live! peeked into the box this year, and half-bit into the apple, barely opening the palace gate. But what they uncovered (and discovered) was an audience of non-artists enthralled and captivated while listening, watching, and immersing themselves into the art in front of them. Imagine a stage that is engulfed with artwork all around it. Think a room of mirrors, but instead, filled with trippy and abstract art. The room was filled with discussion and genuine smiles as the audience was able to engage in
meaningful conversations with the artists following the panel. In 2020 Grit Daily Live! aims to build on the unique foundation their team has infused into Miami Art Week’s ecosystem. In a world of increasingly abstract art ridden with hidden messages and meanings, perhaps collectively some of the significance art can bring to one’s life has been lost.
delving into the depths the artists mind and in turn having their minds opened. Not all of us can look at a piece of art and grasp the subjective meaning it had to the artist. Maybe it is not heresy to ask the visual artist what went into her or his piece. The artists’ art is the bridge into that different world or mindspace, but their spoken word, especially when in conversation with each other, allows the layman’s mind to get to the other side.
As stated earlier, Grit Daily Live! witnessed an audience
