I

’ve spent several holiday seasons visiting other cities (all wonderful cities), but most of my life in New York during the holidays; I firmly believe that there is nowhere in the world like New York City in December. The air smells like festivity. The mood feels like hope. The people, the stores, the lights, the energy—it all amounts to a palpable and beautiful sense of happiness, enjoyment, and holiday spirit. I can’t get enough. My mom and I have a holiday tradition that we’ve kept since as long as I can remember, spending an entire day devoted to enjoying the season in the city. We begin our day at the holiday market at Grand Central, followed by a visit to Macy’s for a peek at Santa (he IS the real one), a stop at Lord & Taylor to admire their windows, and a leisurely stroll down Fifth Avenue for window shopping, actual shopping, and of course picture-taking at the Rock Center tree. We love this day, and we’ll never get over that feeling. Many years involve including tea at the Plaza in our tradition. Oftentimes we’re joined by family members, eating scones and sweets and taking in the holiday spirit of the Plaza’s Palm Court, which epitomizes the season and the city. So this is one of the major reasons I was so incredibly excited to feature Chef Todd English and his Todd English Food Hall at the iconic Plaza for our December cover story. It couldn’t be a better fit. Beyond that, I’ve enjoyed Chef Todd’s food for many,

many years, and when I’ve been lucky enough to meet him in the past, he’s always been such a charismatic, engaging presence. His food is amazing, of course, but beyond that, he’s just a really great person. I’m thrilled that he’s joined the Resident cover story family—and the fact that it’s for our December holiday issue makes it that much more perfect. In addition to the interview with Chef Todd, inside you’ll find our Holiday Gift Guide, which really just turned out to be my personal wish-list. So if anyone’s looking for a last-minute gift for me (no pressure), just look inside these pages and pick something. Anything. I want it all—and I hope you will too. This truly is my favorite time of year in New York City, when I wouldn’t want to be anywhere else or with anyone else other than my friends and family (including my Resident family). The tradition of lighting a Christmas tree at Rockefeller Center has been around for over 70 years. The tree continues to stand as a symbol of hope—from the Great Depression, when workers lined up beneath it to collect their paychecks, to the winter after September 11th, when people of all backgrounds gathered to witness the transformation of the tree into red, white, and blue. The tree will remain on display through January 6, 2016.

On December 5, The Imagine: John Lennon’s 75th Birthday Concert at Madison Square Garden will feature performances by Aloe Blacc, Eric Church, Sheryl Crow, Brandon Flowers (The Killers), Peter Frampton, JUANES, Kris Kristofferson, Pat Monahan (Train), Tom Morello (Rage Against the Machine), Willie Nelson, The Roots, Chris Stapleton, and Steven Tyler. odern Family star Jesse Tyler Ferguson will return to Broadway this coming spring in a new production of Fully Committed. Fall in New York City “Fall in New York is like April in Paris, everyone wants to be here,” said Patrick McMullan, the city’s top celebrity and society photographer who takes the pictures for this column. The cultural diversity of the season that features the openings of the Metropolitan Opera, The New York Philharmonic, Carnegie Hall, American Ballet Theatre, and New York City Ballet makes the city vibrant.

Adding to the mix is the 53rd Annual New York Film Festival that attracts thousands of fans to see both big studio films and smaller independent movies at Avery Fisher Hall. Among those films were Carol, a lesbian love story starring Cate Blanchett and Rooney Mara, who said, “Sex is sex, male or female; it’s all the same to me.” Cate added, “Carol’s sexuality is a private affair. What happens these days is if you are homosexual you have to talk about it constantly. There are 70 countries around the world where homosexuality is still illegal; so it is still an issue. We’re living in a deeply conservative time.”

Waltz said, “I consider Bond movies to be an extension of popular theater, a kind of modern mythology.” Craig, who tends to over-intellectualize the world’s favorite spy, stated, “He’s very lonely. There’s a great sadness. He’s sleeping with all these beautiful women but then they leave and it’s…sad. A

rt Basel in Miami opens the first week in December, providing a fantastic excuse to escape to South Beach for some warmer weather for a few days. From December 3rd to December 6th, curators, artists, art buyers, museum directors, and art appreciators from all over will flock to Miami to see the masterpieces of all varieties. The world’s top galleries will present the work of their top artists at the fair, including wellestablished galleries, historically important works, as well as emerging artists and experimental artwork to watch. The show is divided into nine themed sectors to organize the content. The main exhibition hall features artwork of a variety of mediums: Paintings, sculptures, installations, photographs, and films; and the large-scale installations and sculptures will be found in the Public sector, set in Collins Park and open to the public. There will also be several talks

featuring fascinating lineups of experts and art connoisseurs from around the globe. The Conversations series begins with the Premiere Artist talk, featuring artists Trevor Paglen and Jenny Holzer, on the first day of the fair. It’s no surprise that one of the most anticipated exhibits will be by the New York based artist Nari Ward, whose survey exhibition “Sun Splashed” features an eclectic mix of found objects. As art continues to occupy and further explore digital mediums, the London gallery Pilar Corrias will feature three different and important video artists and will be a great booth to stop by. Another noteworthy artist whose work incorporates technology in a unique way is Daniel Keller, represented by Berlin gallery Kraupa-Tuscany Zeidler. Finally, the compelling modern art and photography by African artists at the Stevenson Gallery is a must-see, hailing all the way from South Africa. There’s so much to see at the gallery booths inside the convention center, but don’t forget to enjoy art alfresco while you’re in lovely Miami! Specifically, there will be 27 magnificent installation pieces in Public, the outdoor sector of the show. Artist Sam Falls has created the “Healing Pavilion,” using crystals and gemstones, such as amethyst and jasper, to

positively affect occupants. Another stunning outdoor feature is SoundScape Park, designed by Frank Gehry, where video art projects onto a 7,000 square-foot screen and surround sound plays through a state-of-the-art system. Be sure to stake your claim to one of the provided ground pillows in SoundScape Park to hear the sound art of Mariele Neudecker, whose Figure of 8 (a work created from peaceful noises in a rainforest in Ecuador) will play at 6 pm the first night of Art Basel Miami. T

he revival of The Gin Game at the Golden Theater is one production that theater lovers should not miss. The 1978 Pulitzer Prize-winning two-character play by D.L. Coburn is set on the back porch of a dilapidated nursing home. The two elderly characters, Weller Martin and Fonsia Dorsey, are basically discarded like the junk surrounding them. To pass the time, Weller offers to teach Fonsia to play gin rummy. Much of the humor is contained in their repartee as she turns the tables on him. The underlying sadness of their situation is revealed in the course of their games. That these subtle performances are being given by Jones at 84 and Tyson at 90 is amazing. Leonard Foglia’s direction is praiseworthy.

On Your Feet!, the bio of Gloria and Emilio Estevan at the Marquis Theatre, is a singing and dancing treat, with a pulsating score by the Estevans and lively choreography by Sergio Trujillo. The script by Alexander Dinelaris travels through some well-trodden paths: The artists finding their sound and then struggling to find an audience. The twist here is that their fight was not to be pigeonholed into the Spanish language market and the script also deals with the plight of Cuban immigrants. Gloria’s father is first shown as a soldier in the U.S. Army and later bedridden with a terminal disease. Most of the drama in the second act deals with the traffic accident that almost ended Gloria’s career. Ana Villafane was born to play Gloria. Josh Segarra is credible as Emilio, though Elisio Roman as Gloria’s father has a better singing voice. Andrea Burns is superb as Gloria’s mother. Mark this down as another hit for director Jerry Mitchell. Emile Zola’s novel Therese Raquin was a forerunner of those steamy James Cain adultery/murder stories, such as Double Indemnity and The Postman Always Rings Twice. Like those works, Zola’s cries out for a film noir approach. Unfortunately, the Roundabout’s production at Studio 54, directed by Evan Cabnet from Helen Edmundson‘s script, looks and sounds like “Masterpiece Theater,” complete with British accents. Beowulf Borrit’s set and Keith Parham‘s lighting are beautiful, as is the leading lady, Keira Knightley, but–despite her obvious talent–this is the wrong vehicle. A heavy breathing melodrama, it often evokes titters at inappropriate moments. Nevertheless, as

the husband/victim’s mother, Judith Light creates another indelible portrait.

Trip of Love is a singing and dancing valentine to the 60s, the turbulent time of assassinations, the Vietnam War, the Civil Rights Movement, and the British Invasion (okay, the last one was peaceful). The results are mixed, ranging from great songs to some duds. At least there’s no script into which the musical numbers are dropped. Director/choreographer/creator James Walski does better with the trivial material (like a witty takeoff on beach blanket movies) than with the meaningful songs. His worst idea is having the excellent Laurie Wells sing Jacques Brel’s “Ne Me Quitte Pas” while two men in back of her are stripping to their underwear. After that, the guys put on uniforms, as if the Vietnam War is the reason they are leaving. (Is it a menage-a-trois? At least that’s French). At the beginning of Sylvia, a middle-aged man named Greg (Matthew Broderick) finds a cute blonde in Central Park and brings her home, to the dismay of his wife Kate. The title character is played by Annaleigh Ashford and she is a dog, albeit one that often speaks to the audience and sometimes to the characters on stage. Much of the time she acts like a canine, causing embarrassment, as when she buries her nose in a visitor’s crotch. While her doggy ways irritate Kate, Greg becomes obsessed with the animal. In fact, his professional life and marriage both seem at risk. Versatile Robert Sella plays a man, a woman, and a marriage counselor of indeterminate gender. Julie White is fine in the un-showy role of Kate and Broderick is still in his Leo Bloom mode. A.R. Gurney’s script and Daniel Sullivan’s direction provide a steady stream of laughs. Ashford won a Tony last season and may be a contender again with her delightful doggy act.

in the room. Pamela Jacobs: Here’s a little known fact about you: You actually went to college on a baseball scholarship. Did you ever think you’d play professionally, or was being a chef always the plan? Todd English: Becoming a chef was never a plan, actually, because back then, it was not a profession that most people sought after. I always loved to cook, though, ever since I was a kid, and even had a garden of my own since I was a teenager. I grew up watching my Italian mother and Julia Child, and was always fascinated and passionate about cooking. PJ: When you first started cooking professionally, where did your influences come from? Were there specific places you’d been and/or other chefs that were significant to you from very early on?

efore international food markets and culinary halls starting popping up throughout the city, the Todd English Food Hall opened in The Plaza, New York’s most iconic hotel. With it, it brought a unique, unprecedented approach to dining in New York City, and more of the world’s best food to one of the world’s best hotels.

from the Culinary Institute of America with honors, apprentice in Italy, and become the Executive Chef of a restaurant in Cambridge, Massachusetts at the age of 25. After that, the accolades and awards poured in—including being named one of People Magazine’s 50 Most Beautiful People in 2001. It’s been quite the ride for Chef Todd English, and it’s still going at lightning speed.

Of course a concept this grand couldn’t be brought to us by just any chef. It required the experience and prestige unique to one man—the chef named the James Beard Foundation’s National Rising Star Chef in 1991 and Bon Appetit’s Restaurateur of the Year a decade later; the owner of restaurants and brands spanning the globe, including Olives from Vegas to Abu Dhabi, Figs from Boston to Palm Beach and Kuwait, and culinary concepts at Walt Disney World, on Cunard’s Queen Mary 2, and in three major U.S. airports.

It’s no wonder, then, that we were more than a little excited to have the chance to sit down with English at his buzzing Todd English Food Hall and chat about his past, present, and future, while watching the charismatic man charm everyone

This man, of course, is Chef Todd English, and he proved—most definitely—to be the right man for the job. To make just one restaurant in New York a lasting success is a challenge to say the least; to build a culinary empire around the globe and curate a food hall with nine diverse food stations that lives up to The Plaza’s reputation and serves countless New Yorkers and tourists every day is a whole other level of success. But Todd English is no ordinary chef. His first job in a professional kitchen was at the age of 15, after which he went on to graduate

TE: From early on, I have always been incredibly passionate about traveling. I love to learn and experience new things from different cultures, which has played a huge part in what influences my culinary decisions. I take what I learn from each travel experience and try to put my own spin on it when I recreate the dish in my kitchen. I find it very important to maintain the origin of the dish, while enhancing and altering the flavors. I was also fortunate to be able to work with Julia Child when I moved to Boston, and she was truly an inspiration. PJ: Now you have restaurants all over the world—Vegas, Mexico, the Bahamas, throughout Florida and Massachusetts, and even Dubai. What unites them all, and makes them—no matter where they are or what they serve— unique to you and your brand? TE: I like to cook with a lot of flavor and love, and I want to always create a warm and fun dining experience. I always try to respect the authenticity of the international dishes on the menu, as well as adding a modern touch—essentially, a spin of the common classics using indigenous and seasonal ingredients. PJ: Of course, some of the most beloved of your restaurants (and certainly for our readers) are here in New York. Is cooking for New Yorkers different than for diners in any other places in the world? TE: New York is known for the amazing culinary variety it has. In this one city, you find the best cuisines from all over the world. When cooking for New Yorkers, it is incredibly important to be innovative and open to evolving with the times. Producing quality food is my main priority—no matter what state or country it is in—but New Yorkers have very high expectations (and rightfully so), so it is important to ensure we live up to that standard at all times. PJ: Are there certain stations in the Todd Eng-


lish Food Hall—or specific dishes within the nine stations—that are personal favorites of yours? TE: I don’t eat pasta like I used to, but a good plate of spaghetti will always be a favorite of mine. I take great pride in all of our dishes from the different stations, but with my Italian heritage, the pasta station is definitely one that I hold close to my heart. PJ: The Todd English Food Hall is an incredible culinary experience, and must have been a huge undertaking. How long had you been thinking about doing something like this, and how did it first come about? TE: The TE Food Hall was something I dreamt about for more than a decade, as I spent a lot of time traveling in Asia and Europe, and wondered why these types of markets did not exist in America. When the owners of The Plaza asked me to look at the space, I proposed the idea of a food hall market like I had seen in many places throughout the world—but one with an American sensibility. PJ: The Plaza is a classic, iconic New York institution. Did that play a big factor when coming up with specific plans for this concept? Meaning, do you think different choices would have been made had it been located somewhere else? TE: It may have been a bit different if the location was, let’s say, Brooklyn—or even Midtown. But in keeping with the classic style of The Plaza, we wanted the Food Hall to reflect the same timeless elegance and design. PJ: I’ve seen you give cooking demos several times, and you always seem to really enjoy it. Does that play a big role in who you are as a chef and a personality—teaching others and passing on your love of food? TE: Yes, certainly. I’ve always loved the theater of cooking and teaching and spreading the gospel of good food. PJ: It seems like you’ve done literally everything a professional chef can do: Restaurants around the world, television, multiple cookbooks, numerous charities, and an international Food Hall in what’s arguably New York City’s best hotel. Having opened in 1945 as one of the country’s first tiki bars (think kitschy but oh-so-glam), the Tonga Room is pure fun: Tribal wall coverings, bamboo tables, and giant drinks in coconuts. But that’s just the beginning; the tropical tiki palace is complete with a lagoon pool with a floating stage that moves throughout the night, on which an orchestra plays, and actual thunder and rainstorms (no umbrella necessary), much to the delight of Fairmont guests, San Francisco tourists, and local residents.

The Fairmont Sonoma Mission Inn & Spa— with its ancient thermal mineral waters and overflowing sense of enchantment—is an oasis in every sense of the word. Here, it feels as though the city (and your worries) are a million miles away. What makes it so special? It’s hard to know where to begin. All guest rooms and suites are impeccably designed to maximize the sense of serenity, but I can’t imagine anywhere more ideal than my signature Mission Suite. While the private patio overlooking the quiet courtyard proved to be the perfect spot for enjoying a glass of wine, I had a difficult time tearing myself away from the interior of the suite, with its working fireplace and in-room two-person Jacuzzi tub. The suite was the embodiment of wine country beauty and bliss—and that’s just the beginning.

As befits its location, there’s a huge emphasis on food and wine here. The lobby—inspired by wine country living—gives way to 38º North, a relaxed yet elegant open wine bar/lounge offering over 50 fine wines by the glass, an array of small plates, and comfortable, communal seating. The pièce de résistance, however, is Santé Restaurant, a Michelin-starred culinary masterpiece that in itself is worth a trip from San Francisco, or anywhere in the world, for that matter. Utilizing local produce and meats of the highest quality, the perfectly executed dishes—paired equally perfectly with the best wines available from an award-winning wine list—prove more than memorable. I still can’t stop thinking about the seven-course Chef’s Tasting Menu that had me weak in the knees before I’d even gotten past the two amuses-bouche. Kauai has seven distinct microclimates, from the desert-like west to the tropical rainforest interior. First, it’s held outdoors—the only oceanfront luau offered on Kauai—and the professional dancers showcased dances throughout the Polynesian culture, including those that originated from New Zealand, American Samoa, Tahiti, and of course, Hawaii. While Machu Picchu is the main reason for the visit, a stay at the hotel only enhances your immersion into the Andean culture. any travelers think that Frankfurt am Main is just a commercial hub—but a recent trip to the Frankfurt RhineMain area revealed a wealth of history and culture, making it an ideal place for family vacations. The skyline bears such a resemblance to New York’s that the city has been called “Main-iihattan.” Our guide said that Frankfurt is considered the most American city in Germany, which is perhaps why I felt so at home there.

Afterward, we took a boat trip on the River Main, past Frankfurt’s seven bridges.

Our first hotel stay in the area was in the centrally-located Fleming’s Deluxe Hotel. The name comes from the fact that the hotel chain was started by Ian Fleming’s chauffeur. One unusual feature is an original working Paternoster—an elevator that is in constant motion; you hop on and hop off. Needless to say, I took the elevator with the buttons.

We started the next day with an excursion to Lohrberg, the only remaining vineyard within the city borders of Frankfurt, where we tasted the local Apple Wine. All around us were activities for groups of schoolchildren. Lunch was served at an outdoor table at the scenic Lohrberg Schänke.

Frankfurt is the birthplace of Johann Wolfgang von Goethe, so naturally there is a statue of him. It is also the city where Anne Frank was born and where Oskar Schindler lived, and the Jewish Holocaust Remembrance Wall contains the names of Holocaust victims from the area; there are similar memorials in other cities. Germans are justifiably proud of their cultural contributions, but also admit their dark past. Significantly, in the current refugee

After settling in, we enjoyed a walking tour through the Town Hall Square. The Helaba Bank Tower offers panoramic views of the city. We had dinner at Frohsein restaurant (a delicious Wiener Schnitzel: Breaded and fried veal cutlet). I had my first taste of a Hugo cocktail, a popular drink in Germany that I liked so much that our guide suggested I open a Hugo bar in New York. (It is made with Prosecco, fresh mint, and elderflower syrup).

Frankfurt has more than 60 museums and galleries; 16 are located near the river (Museumsufer). With time for only one, we chose the Städel Museum. It is Germany’s oldest museum foundation with a collection covering 700 years of European art. There is a room of Max Beckmann’s paintings, including one of a synagogue in Frankfurt. A temporary exhibition of Hogarth’s prints was of particular interest, since I had just seen Stravinsky’s opera, “The Rake’s Progress,” which was based on some of these prints. On our third day, we drove to the capital city of Hesse region and a well-known spa town, Wiesbaden. From there, we took a picturesque cruise on the Rhine River, passing by a number of vineyards that produce Riesling wines before we reached Rüdesheim.

One of our most interesting side-trips was to the Eberbach Abbey, a former Cistercian monastery which was founded in the 12th century. At its height, the Abbey had 100 monks and more than 200 lay brothers living and working there. The picturesque Abbey (where (continued...)

In Wiesbaden, we stayed at the luxurious Hotel Oranien. Then, we dined overlooking the town at the Opelbad Restaurant. The Romans had conquered the area and the former Roman outpost, Saalburg, conveys what life was like there about 2,000 years ago. The fort is part of the Limes, a UNESCO World Heritage site. A lesson in archery made clear that if I had lived during that era, I would have gone hungry. I didn’t that day because we had lunch at the Landgasthof restaurant, where German Emperor William I used to dine. Our timing was perfect for our visit to the delightful town of Seligenstadt. Once every four years, there is a traditional “Geleitsfest,” during which townspeople of all ages dress up and parade in the costumes of their ancestors, with horses and donkeys. At the end of the procession, there is a ceremony at which a city official recites a script and then drinks wine from a massive spoon called a “Löffeltrunk.” We were assured that there were no special effects; he was really imbibing all that alcohol. The open-air museum of the state of Hesse, Hessenpark, offers another trip into history, perfect for families with children. Visitors can learn about more than 400 years of rural life by stepping into houses with their original furnishings or attend craft and farming technique presentations. There are also craftspeople working and selling their wares. Bad Homburg boasts of its “champagne air,” and its mineral waters attracted royalty, including the German Emperor Kaiser Wilhelm II. You

are still treated like royalty at the Steigenberger Hotel. A visit to the elegant casino (built in the 19th century) confirmed that I had no more aptitude for gambling than archery. However, I did not lose at dinner. The on-site restaurant Le Blanc features a high quality fusion menu. There is a glass partition, so you can see the gamblers on the other side. Of particular interest to me was the free outdoor performance of A Midsummer Night’s Dream in German that was going on right outside the casino. During our stay in the region, there were arts events all over. While our tight schedule didn’t give us time for a concert, we did manage to sneak into a classical pianist’s rehearsal. As a reminder that Germans love their beer, we visited Glaabs Brauerei, the oldest brewery in the region. Founded in 1744, it still utilizes the traditional method of open fermentation. Since our departure time was approaching, we traveled to the very modern Hilton Frankfurt Airport. We had our farewell dinner (and my last Hugo) at Käfer’s Bistro Restaurant in Departure Hall B. Then, we spent the night in style at the luxurious Hilton Frankfurt Airport Hotel. I had previously stayed at the Hilton Airport Hotel in Copenhagen, and these are great places to stay when you’re getting on or off a flight. You just roll off your plane or out of bed and the terminal is nearby. From New York, flights are direct to Frankfurt on Lufthansa. Think of it: In about the same time it takes to sit through a Wagner opera, you can be in Germany.

Swissôtel Shows Resident its Roots

I

n the 1980s two iconic giants, Swissair and Nestle, founded the Swissôtel, and over the next 30 years would grow to be world renowned for Swiss hospitality. With locations in 25 countries, including four in Switzerland, Resident explored the Zurich and Geneva properties. We departed from JFK on Swiss Airlines (Swissair ceased operations in 2002) following a very nice visit to the VIP lounge, and after a comfortable flight, landed in Zurich. Surrounding the lake are walking paths and parks in which to lie down and relax or take a boat ride for a tour of the lake. One thing that is a “must-see” is the Live at Sunset concert series in the summer months. If the Hamptons had a venue, this would be it. The arena, located just outside the city and tucked behind farmland, is relatively small compared to others, but it’s pure luxury all the way. Here you can enjoy mainstream performers while experiencing not only a remarkable sunset, but also an evening cocktail or two.

Swissôtel Metropole Geneva was something much more on the grand scale. Built in the 1850s, you can feel the magnificence of this landmark building with views overlooking Lake Geneva. I had anticipated more of a traditional look and feel with my room, but instead was very pleasantly surprised. The room was updated and contemporary but not overly modern. The first thing I noticed was the incredible view of Lake Geneva behind the two French doors and decorative balcony. The second thing I noticed was there was no television—but instead a large,

almost 10-foot mirror. I thought about it for a minute and wondered if I actually minded there was no TV. Then I found a remote. Puzzled, I started pressing the on/off button and aiming it aimlessly around the room. Soon enough, there it was. The television was hidden in the mirror. As you enter the room, one thing you can’t miss is the shower. Surrounded by glass—so your view of the lake is never obstructed—the shower is more like a personal spa than just a shower. With its built-in rain and steam features, they may, in fact, have to drag you out of the room. Metropole’s Gusto Restaurant offers modern Italian cuisine, which changes by the season and offers outdoor terrace dining in the warmer months—perfect for breakfast. The Mirror Bar, opposite the lobby, is a great spot to relax and enjoy light dishes and drinks. In the evening, 5 Lounge on the roof is the place to be. With its exceptional views, you can enjoy top-notch cocktails while watching the city light come alive. Swissôtel Metropole really has the perfect location. Across the street sits a park that lines the

lake. After having closed out 5 Lounge, I decided to grab a glass of Riesling and take a stroll along the lake. To my surprise, the park was bustling with people. Some having midnight picnics, some playing cards, and others, like me, just taking a stroll along the lake. It seems any time of year is a great time to visit both Geneva and Zurich. The temperature can easily get up in the 90s in the summer, and you can still see the snowcapped Alps in the distance. Come winter, both cities are transformed into winter wonderlands. Finally, another special thing I noted was how Swissôtel is connected with the community. We had the opportunity to visit a farm in Wagan an der Aare, a small rural area between Zurich and Geneva. This is where Swissotel gets its Purovel essential distilled oils for its spas. They are very rooted with the local economy, and do everything possible to help sustain that relationship and maintain their rich cultural heritage. So very Swiss, indeed.

Designer Jonathan Adler Taking notes from his own getaway in Palm Beach, Adler has created a tropical haven for the sophisticated traveler yearning for a tailored experience. The rooms’ entryways have silver bamboo detailing with shades of cerulean, nickel, and chrome accents that draw your eye into the space and then back out to the ocean views. The curtains over the sliding glass doors that lead to the balcony are the deep navy of the sea, with crisp white borders that have the feel of an oceanside cabana. Among Adler’s gestures to the history of this setting is a glamorous portrait of Lady Daphne Cameron by photographer Slim Aarons, which hangs on one of the living room walls. In terms of decor, using the current trend to engage the eye, here are a few insider tips: • Start with the lighting and the music to set the tone. • Repurpose as much as you can; take old magazines and convert them to magazine holiday origamis, magazine page pinwheels, etc. • Take many photos of your loved ones while celebrating and convert them into great memories by using apps that create animated, awe-inspiring memories. Great ones include: Phonto (a free app to edit photos and add text), PicFlow (creates photo collages and videos for free), and Video Filters (a free app to change the mood of your holiday video into a variety of moods). 1/2 cup + 2 tbs water 1/2 cup + 1 tbs whole milk 1 1/2 tbs granulated sugar 1 pinch salt 5 tbs butter 4 large eggs 1 cup + 1 tbs all-purpose flour

Using a pastry bag fitted with a 1/2 inch tip, mound about 1 tbs dough on a parchment lined baking sheet. keeping each mound of dough 1 inch apart. Bake 20 minutes until golden brown. Reduce heat to 250 degrees F and bake an additional 20 minutes until dry. Place baking sheet on a cooling rack and allow to reach room temperature.

Pumpkin Cream 1 vanilla bean split in half 1 cup whole milk 1 cup pumpkin puree 4 egg yolks 1/2 cup granulated sugar 1/4 cup cornstarch 3 tbs unsalted butter Combine vanilla, milk, and pumpkin in a medium pot and bring to a simmer over low heat. Whisk yolks, sugar, and cornstarch in a separate bowl until the sugar has fully dissolved. Temper the egg mixture by stirring in about half of the simmering mixture into the egg mixture. Pour the egg mixture over the simmering mixture and cook 1-2 minutes, stirring consistently until mixture thickens. Stir in butter off the heat until fully incorporated. Cool mixture before using.

Apple Cider Caramel 3 cups fresh apple cider 1/2 cup granulated sugar 1 tsp pumpkin spice mix (optional) Combine all ingredients in a sauce pan and reduce to a syrupy consistency. Fill each profiterole using a piping bag. Arrange on a serving plate and drizzle with Apple Cider caramel.

Preheat oven to 350 degrees F. Combine water, milk, sugar, salt, and butter in a medium sauce pan and bring to a simmer over low heat. Sift flour and add all at once stirring vigorously, using a spatula until mixture is smooth and pulls away from the sides of the pan. Allow mixture to cool one minute off the heat, then add eggs one at a time, stirring each egg into the dough until fully combined after each addition. Once all eggs are incorporated, continue stirring one minute or until mixture is smooth and shiny.

With the new menu, Chef Creger, formerly of Le Cirque and Grandisca, keeps the classic French dishes Artisanal is best-known for, but adds his flair, using epicurean ingredients such as black and white truffles, Wagyu beef, quail eggs, and caviar to enhance them. Guests can now enjoy new hors d’oeuvres and fondue options, including the new Truffle Fondue, which features Artisanal’s signature threecheese blend with black truffles folded in to the mixture and white truffles shaved on top. Also new to the menu are an array of delicious grilled cheese sandwiches, including their signature five-cheese blend, named “Best in New York” by Time Out Magazine. fter leading the kitchen at Bobby Van’s Steakhouse, Chef Christopher Miller is launching Four Cuts Steakhouse.

A Brooklyn native, Chef Miller has over 20 years of experience. Upon receiving his culinary degree from the University of Washington, Chef Miller took his first positions at Mortimer’s and Ben Benson’s Steakhouse. After working in those esteemed restaurants, he became the Executive Chef of Bobby Van’s, a position he held for over 13 years where he developed a reputation in New York as the “steak whisperer.” Four Cuts, named after the four traditional cuts of steak—the ribeye, the strip, the tenderloin, and the t-bone—will offer diners traditional steakhouse cuisine in an intimate setting. The operation of the restaurant will be led by its General Manager Rodolphe Siffredi, who most recently worked as a steakhouse consultant for both Desmond’s Steakhouse and Parca Prime Steakhouse.

Four Cuts’ space in the Sutton Place neighborhood was completely re-designed by C3D Architecture, which set out to create a unique look for the Four Cuts space by combining the sleek look of modern design with rustic elements associated with traditional steakhouses, creating an elegant, welcoming dining room. In addition, Marlaina Deppe of Novo Arts has provided a special wall garden, which has been installed on the columns in the main dining room. Franco Lucic of LMF Group designed the walnut wood paneling featured on the restaurant’s walls and on its columns, which accentuate the wall gardens. Along with the wall gardens and wood paneling, there will be custom artworks for guests to admire on the walls of the restaurant. When guests sit down for dinner, they are able to enjoy a wealth of traditional steakhouse classics from Executive Chef Christopher Miller’s menu. Working side-by-side with Chef Miller will be Sous Chef Joaquin Linares, formerly of

Wolfgang’s Steakhouse and Benjamin Steakhouse. Diners may start their meals with Four Cuts’ signature Seafood Platter which includes jumbo lump crab meat and shrimp served with cocktail sauce, lemon, and mustard. Spotlight on ComedianMagician Jeff Hobson With his title as “Host of Las Vegas,” his various television and live performances—including appearances on HBO, Showtime’s Comedy Club Network, and Fox Family’s Masters of Illusion among others, and entertainment for several Fortune 500 companies—Jeff Hobson has clearly been recognized as a master in his craft. He amazes audiences with his ability to make objects dissolve into thin air, but he wins them over with his sharp and inclusive humor, his demeanor on stage. And this quality gives Hobson a unique comedian-magician angle for the winning combination. We got the chance to speak with Hobson about his favorite onstage illusions, his humble beginnings, and the future of entertainment. Here’s what he had to say. Olia Golovkina: Do you see yourself as more of a comedian or a magician?


RD

JH: Well, I saw a magician when I was very young and I decided right then, ‘You know what? That’s what I want to do for the rest of my life,’ and I never looked back. I’ve just been living a dream. Heck, I don’t even know what else to do! I think if I didn’t do my magic or comedy, I’d probably be homeless.

OG: Wow. So what drives you? JH: Being an only child, I grew up fast, and I knew that the life that my family had I didn’t want to have for myself. The 80’s came around, where Detroit sort of lost its prestige as the auto-maker, and I could tell that the city was quite depressed, my family was quite depressed, and so I delved into magic as an escapism…I just took it upon myself and practiced every

OG: What was the name of the magician that you saw? JH: His name was Wally Wilson and he was a Detroit police officer who went to schools and performed a magic show with the message of safety involved for the kids…well, I saw this guy [when I was young]–I didn’t know who it was, I didn’t know his name, didn’t remember anything—then in later years I was friends with this magician…and I didn’t put the two and two together that he was the same guy…it’s just a weird thing. I knew the guy but didn’t know that was the guy who started me on my magic career. And I wish I would have known and did my math and figured it out and thanked him before he died.

JH: Well it was a natural progression of things because, to educate magicians at the time when I was a child, you couldn’t just look on the internet, obviously, you had to find books that were buried in libraries. And, ironically, magic is the second-most written-about hobby in the world—hobby in the professional world, Jeff Hobson - The Trickster second only to photography—but the books on magic are 95 percent underground, and they’re self-published, privately-published, and passed around in the day, three to four hours a day after school, and trade. So I started reading these books and next thing, one show leads to another, and next next thing, when I was 11 I did my first show. I thing, I’m 15 years on the Vegas strip and now charged ten cents per person. [Laughs] I made on Broadway for my second season. a dollar ten that day, I had to split it with my partner, who I wanted to do the show with, so OG: So being part of [an ensemble] production we both made, you know, 55 cents, that was like the Illusionists versus doing your own show, do you like one over the other? a big deal.

JH: Sure, sure. And then at age 12 I got offered five dollars to do a birthday party…one show led to the next show, then I started doing family shows and birthday parties and family events

OG: Is there one trick or one magic performance that you would never want to divulge any information about? JH: Well, the best thing that I believe I’m skillful at—and I’m probably best known for after the curtain comes down—is my ability to steal people’s belongings and then give it back to them afterwards. Being from Detroit, I’m just a natural thief [laughs]…especially stealing people’s watches. And there’s nothing better for me. My entertainment, when I perform, is to look at people’s faces with their jaw dropped and eyes bulging and the shock that they see me give their watch back and they didn’t know it was missing. I just love that. I just relish it. It doesn’t get better than that, every night. OG: And for you, do you see yourself going in a new direction [with your magic] in the future?

OG: So you went to his show and you started doing [magic] on your own and then eventually you started doing your own shows?

OG: That is a big deal! The first profits!

as opposed to doing my own one-man thing. And it’s less pressure when there’s more people in a show…When you’re doing a one-man show, you’re it for an hour plus, for an hour and a half. And you have to be on constantly so it’s a little more difficult.

JH: Actually, because we [magicians] all know each other, it’s a family thing. It’s fun to be backstage. We’ll have poker games after the late show. Some nights we’ll get together as a family, we’ll go out to breakfast together…so I do prefer going with other people I suppose,

JH: I am the last of the baby boomers. The baby boomers just started to retire just in the past few years, and they’re going to be continuing to retire for the next twenty or so. And I believe that there is a huge gap in what is now the entertainment industry for those baby boomers…in the past few years more channels opened up on television that show retro-television… because I think a lot of people realize that entertainment was classic at a certain point in time, when we had Johnny Carson and those sorts of things. And a lot of people— those baby boomers—are now missing that nostalgia…so if I had to say, I would love to do television, and I would love to do something retro for the boomers, and I think I’d be good at it. So that would probably be my goal I think. That or writing my own one-man show for Broadway and traveling in the theater circuit. OG: About the Illusionists , is there something that you could tell our readers— something that they would never guess about the show—that they would see if they attend the performance? JH: Well, I’ll tell you this…when we were on Broadway last time, we got feedback pretty often saying, ‘We had no idea. This is so much better than what we expected. We weren’t expecting all of this type of magic. We were expecting the old-fashioned girl-in-the-boxcut-in-half sort of thing,’ but we don’t even do anything like that…so I would say: Expect the unexpected.

This is the perfect must-see place to bring someone special for a holiday night out. The 1966 and 1967 concerts are with another historic group: Wayne Shorter, Herbie Hancock, Ron Carter, and Tony Williams. Davis and the group continued to play pieces from the past (such as “Stella by Starlight”) as well as ones that the band members composed, such as Shorter’s “Footprints” and Carter’s “R.J.” By 1969, Shorter was still in the group but the others had been replaced by Chick Corea, Dave Holland, and Jack DeJohnette. Miles was moving into rock fusion territory. The later recordings are with the “Dark Magus”

the work by Andersen’s new bass, which has a lion carving. Once Eckemoff begins a project, she engages all her talents: The set comes with her art work and poems about the king of the jungle. Her follow-up album, Everblue, is even better. She recorded this with Andersen again on bass as well as Jon Christensen on drums and a terrific saxophone player, Tore Brunborg. Eckemoff has been building up an impressive body of work. For the holidays, I like music that brings people together. This year’s choice is Lara St. John’s Shiksa. She is a leading classical violinist from Canada and the album is a collaboration with pianist Matt Herskowitz. Nine of the 14 songs (from Jewish, Roma, and folk origins) were arranged by St. John and Herskowitz. The others appear in new arrangements by contemporary composers Martin Kennedy, Milica Paranosic, John Kameel Farah, Matt Herskowitz, Yuri Boguinia, Serouj Kradjian, David Ludwig, Gene Pritsker, and John Psathas.

At the time of Davis’ first appearance at the Newport Jazz Festival in 1955, he had no group, so one was assembled at the last minute—but what a group! Thelonious Monk on piano, Gerry Mulligan on baritone sax and Zoot Sims on tenor, Paul Chambers on bass, and Jimmy Cobb on drums. Two of the tunes are by Monk (“Hackensack” and “’Round Midnight”) and he is in top form, as is Davis. The other piece was “Now’s the Time” by Charlie Parker, who had died earlier that year. (Immediately after the performance, Davis was signed by Columbia Records.)

If you were as disturbed as I was by the obnoxious dentist who killed Cecil the lion, here’s a way to honor the noble creatures: Buy Lions, a double-CD set by pianist/composer Yelena Eckemoff (actually, her set was released before Cecil’s death). Eckemoff works with jazz musicians but she is more of a classical composer. Somehow, it all fits since she works with top-flight musicians—here drummer Billy Hart and bassist Arild Andersen. She was inspired to compose

Tchaikovsky’s Nutcracker is a perennial Christmas treat. It is invariably performed on the ballet stage, or by orchestras and pianists as a suite. Duke Ellington’s Swinging Nutcracker is a jazz version. Now, Stewart Goodyear has released the complete Nutcracker ballet in his own arrangement for solo piano. His talent as an arranger matches his skills at the keyboard. The Steinway and Sons label not only earns kudos for the clear sound but for fitting 82 minutes of music on one CD.

“Different kinds of light have different kinds of properties, and we react differently to each one,” he explains. “It’s kind of like eating different kinds of food—like if you eat at McDonald’s, you feel different than if you eat at Per Se. So you feel differently in each kind of light, and I think my work is less about the exploration of light itself, and more about the exploration of the human condition under the light.”

The Nevadabased festival is where Meeker’s current fascination with the human reaction to light began, when he designed the temple lighting in 2011. “The temple is the one place where everybody goes at Burning Man; it’s the spiritual anchor of the entire event,” Meeker says.

He’d offered to light the temple simply because he wanted to be a part of it, and thought he could add something. “I started to realize that people react differently to different kinds of light. People have a real experience, people were drawn to this like it was a candle, like there was an inexorable pull that they could not get away from,” he recalls. The festival’s founders told Meeker that this temple had more visitors at night than any other temple in the history of the event. Meeker returned to the Whitney again more recently—at its new

Meatpacking District location—in collaboration with renowned artist Carolee Schneemann. His overhead sculpture was the very first work of art ever hung in the new building. “That was a freaking phenomenal honor!” he says, laughing. He’s also exhibited at the Southampton Center, and in 2015 he created a massive public installation, a site-specific sculpture suspended from the 125th Street Bridge called “The H in Harlem.” “It was a wonderful thing to be able to do in my community,” the Harlem resident says. He doesn’t have a precious attitude toward his works. The Burning Man temples are actually burned at the end of the festival, and that includes his lighting, for which he uses minimal materials to limit the environmental impact. Meeker’s recent National Arts Club exhibition featured one chandelier made of repurposed glass marijuana pipes that he called a “Bongolier.” “It was just kind of a goofy thing,” he laughs. “I thought it was kind of a fun way to repurpose glass pipes; rather than using them, we were making something kind of great out of them.” Meeker is also a well-known lighting designer whose company is regularly commissioned for White House state dinners, and whose clients have included the Clintons, Robert De Niro, Michael Douglas and Katherine Zeta Jones, and Joan Rivers, who gave him one of his first high-profile jobs when she hired him to light her daughter’s extravagant Dr. Zhivago-themed wedding at the Plaza Hotel in 1997.

Eating Healthy •for the Holidays ••

oliday time can be difficult, with lots of temptations and calorie-laden feasts. Between the holiday sweets lying around the office, preparing the holiday meals, and then attending the holiday parties and dinners, it seems almost impossible to avoid putting on holiday weight. But, just because you’re trying to eat healthfully, doesn’t mean that you need to avoid the festivities or accept the extra pounds. With a little planning, it is possible to maintain your weight during the holiday season. • Watch your portions! Divide your plate in half. Fill one half with vegetables. Divide the remaining half of your plate in half again. Fill one part with lean protein and the remaining part with the starch at the meal. • Prioritize. Holiday meals usually have lots of foods that you will find appealing. But are there foods that specifically define the holiday for you, i.e., candied yams or honey glazed ham? Pass on the usual calorically expensive fare like chips and dip, and opt for the holiday specific food as your treat at the meal. • Slow it down. Decrease your speed of eating It takes 15-20 minutes for your stomach to stretch and send a signal to your brain that says you are full. If you eat too fast you will eat too much and that leads to “eating to pain”. At that point you know you overdid it. Tip: do not “pre-load” your fork; you can even try to eat with your non-dominant hand. Also, conversation is calorie free! Talk to the people around you. If the holiday party is buffet style, don’t rush straight for the food table. Greet your friends and family, and settle in before even looking at the food. Remember, these meals tend to be long.

Rather than inhaling your food and then going back for more, try to make your plate last the whole meal. • Avoid skipping meals. Though we are sometimes tempted to “save calories,” this tactic can lead to overeating. Eat prior to the big meal. Eat a regular breakfast and lunch, then eat something right before you go to dinner. Now the “battery” on your will-power will be fully charged. If you go into the meal too hungry you will eat faster and longer. So prevent yourself from getting too hungry—do not save up the calories by not eating all day. • Dessert is not a meal. It is a supplement to the end of a balanced meal. Try to choose the fruit or sorbet option. If that dense chocolate cake is calling your name, take a small piece, but then stop. It is ok to treat yourself (as long as it is in moderation), and there is no point in feeling guilty when you are eating something you love. Just remind yourself that there will be even more holiday eating. • Increase exercise. Since you will be eating more during the holidays, increase your physical activity. Go out for a stroll after a big meal, or hit up an exercise class the morning before a holiday dinner. • Watch what you’re drinking. Don’t waste your calories on beverages. Avoid sodas and juices, and beware of alcohol. Alcohol not only contains empty calories, but it can also further stimulate the appetite. A good alternative is some sparkling water with a citrus twist–sparkling water has zero calories. • “Calorically Cheapen” your meal. There are no “good” or “bad” foods. People always say foods like cheesecake are bad…I say it is delicious, but expensive. Everyone

understands money and high calorie foods are “expensive” and low calorie foods are “cheap.” Now when you are making your mashed potatoes, use skim milk instead of half and half…you just “calorically cheapened” that dish. If you are going to eat a piece of pie…forget the a la mode and you just “calorically cheapened” that dessert. This will not only help minimize the damage but also help prevent you from feeling deprived. • Be a healthy host. If you’re making the meal, provide some healthy alternatives, such as baked sweet potatoes instead of candied yams. At the start of the meal, pass the food around once and then place the serving dishes on a side table. This way, you will be less likely to mindlessly take more food during the meal. And don’t forget, you can send home leftovers with your guests. (If you are not the host, but the dinner is pot-luck, bring a healthy dish that you know you can eat, like a big salad or a raw veggie platter with a yogurt or cottage cheese-based dip). • Maintain. Thanksgiving through New Years is a very difficult time. Don’t expect to lose weight during this time period or you may be in for disappointment. Am I a Candidate for PRP (Platelet Rich Plasma) Treatment? As they drive around the Hamptons, LiLi warns of pedestrians in the crosswalks and deer up ahead. She enjoys accompanying Pat on errands (including picking up gifts and prizes for “Play for Pink” for the past several years) and especially loves outdoor events. Pat is on the benefit committee of “Play for Pink,” and every Spring LiLi goes with her to Hampton Hills Golf & Country Club, where The Play For Pink Breast Cancer Golf Tournament—which benefits The Breast Cancer Research Foundation, founded by Evelyn Lauder in 1993—will be held on June 16, 2016 for the 17th consecutive year. It’s the largest ladies golf tournament in the Hamptons, and of course LiLi and Lulu will be there, to meet and greet. Success in marketing depends in great part on being noticed and being remarkable. LiLi does a splendid job of supporting that role— and sometimes starring in it. She regularly appears on Pat’s social media pages, including Facebook and Instagram (Patricia Stein Redin). Just one look at that face and you’ll see why she’s the beloved Montauk princess.

n this month’s column, it’s my pleasure to introduce my friend Pat Redin and her Chow Chow, LiLi. Pat, her husband Eric, and LiLi live in Montauk Manor, a condominium/hotel in Montauk, where LiLi rules the roost.

In the early years of their marriage, Pat and Eric lived in Gramercy Park, both of them working at Madison Avenue advertising agencies. After several years, they moved to Long Island and had two children, son Connor and daughter Maris. In 2005, after 18 successful years as Senior Vice President of Sales for a marketing company, Pat launched R2MP Ltd., with the mission of providing marketing and production services to a broad range of clients, from Montauk to Manhattan and beyond, their primary focus being on program management and identifying project cost-savings for a major communications company. The dramatic shift from being mostly on the road as a salesperson to working remotely

allowed Pat to adopt Yogi Bear, a male Chow mix from a rescue organization. The experience with Yogi was so rewarding that, in the span of 13 years, Gigi, LiLi, and finally Teddy (all Chow rescues) joined the Redin pack. LiLi, at 14 months, was the puppy of the group, yet quickly assumed the Alpha role.

Now, at eight years old, LiLi is Pat’s only pup, as well as her full-time office mate. They like to spend time together in the Manor’s majestic lobby, relax on the patio, and lounge by the pool while Pat works on her laptop. LiLi has become a bit of a local celebrity, and is quite the conversation starter. “She looks like a lion,” people often say. And of course, the usual, “Does she shed?” Yes, she does! All year long, in fact—but frequent brushings keep her beautiful. When the work day wraps up, Pat and LiLi like to head out to the Manor’s western lawn, where Pat takes photos of the often magnificent sunsets over Fort Pond Ray, while LiLi chases birds and bunnies off the grounds, and takes long walks

aste of Prospect Heights” was hosted by 280 St. Marks Avenue on Wednesday, November 4th, to celebrate the launch of sales of the neighborhood’s newest condo. The 32-unit, Brooklyn-bred building will sit five stories tall and incorporate private, outdoor space in every single residence. The building will feature finishes and fixtures by local artisans including art from Fiercely Curious, a communal table by a local woodworker Brian Klotz, custom light fixtures by David Weeks, and of course, custom wallpaper by Flavor Paper. The event, which took place in the sales office at 631 Vanderbilt Avenue, showcased some of the area’s culinary offerings including famous fried-rice onigiri from Bar Chuko Izakaya, brisket and mac n’ cheese from Morgan’s Barbeque, and roast beef crostini and “shots” of butternut squash soup from Stocked. Local violinist and composer Tom Swafford, who can often be seen playing his violin around town, performed for guests as well. Brooklyn brewery beer was also served.
