I

LOVE food—haute food, hot food, cold food, weird food. I even love airplane food (I can’t believe I’m admitting that). But if I had to choose a favorite, it’s holiday food. I could literally eat an entire serving dish of stuffing by myself in one sitting. I would happily drink gravy out of a straw. All year long I look forward to making my butternut squash chowder, baking sugar cookies, and eating my mom’s sweet potato casserole (topped with gooey, golden marshmallows).

Not only did I get to play around with recipes and taste delicious foods, but it brought me the opportunity to speak to some of the city’s best chefs, gaining invaluable insight into how the pros master cooking and entertaining for a crowd. I also got to try some very tasty cocktails (tough job!) and discuss all the reasons

The Thanksgiving Day Parade—originally the Macy’s Christmas Parade—originated in 1924 as a collaboration of Macy’s employees. Their beverage director, Obadiah Lack, likes to create drinks that epitomize the season—what lack doesn’t do is take the cocktails too seriously. They’re as amusing as they are delicious. The New York Film Festival The 53rd Annual New York Film Festival attracted thousands of film buffs and featured 100 movies, including the “Centerpiece Film,” Steve Jobs, starring the exceptional Kate Winslet, Michael Fassbender, and Seth Rogan. This compelling drama—which centers on the women in the Apple founder’s life, including his daughter Lisa-Brennan Jobs, who he named his first computer after—has a savvy and fast-moving script by Aaron Sorkin. When asked how he prepared for the role, Fassbender joked, “I studied Ashton Kutcher,” who played Steve in 2013’s Jobs. Steven Spielberg’s exciting blockbuster, Bridge of Spies, starring Amy Ryan, and Tom Hanks as a Brooklyn lawyer who gets thrust into the middle of the Cold War, closed the festival. The Experimenter The 17-day film fest raises money for film preservation and celebrates American and international cinema. The festival also recognizes and supports new filmmakers. The “Misfits” Prince Charles is among the collectors of controversial British artist Rich Simmons’ work. His painting of Superman and Batman kissing set tongues wagging at the SoHo Contemporary Art gallery on Bowery Street. The show, entitled “Misfits,” uses pop culture imagery to project Simmons’ opinions and keen sense of humor. The self-taught artist has created a new genre of street and pop art that is often inspired by retro and vintage 50s imagery. ntertaining during the holidays can bring plenty of fun—as well as plenty of stress. It can be overwhelming to say the least. We decided to seek the advice of the pros—the food and beverage experts who manage to make entertaining for a crowd look easy—and asked them for their best tips and tricks to ensure a smooth, sensational holiday feast.

The Michelin-Starred Chef

Shaun Hergatt, Executive Chef at Juni, New York (juninyc.com) As the Michelin-starred Executive Chef of Juni, the exquisite restaurant in the Chandler Hotel, Shaun Hergatt knows everything about preparing a flawless meal. He offers three tasting menus, including Herbivore, Omnivore, and a Chef’s Tasting Menu, each of which change based on the micro-seasons and the foraged ingredients he receives each month. With such constantly-changing dishes that are designed to suit all palates, Chef Hergatt is an expert on pleasing everyone. So how does the chef recommend giving a gourmet boost to traditional holiday classics? “What I like to do is mix a little chopped black

truffle into my stuffing, which I make with chestnuts and mushrooms. It captures an earthiness, and celebrates the season through a gourmet Thanksgiving spin.” Another delicious twist on an old favorite: “Instead of biscuits, I like to serve butternut squash scones,” says Chef Hergatt. “They’re always wellreceived.” As for the to-brine-or-not-to-brine dilemma, Chef Hergatt says you should definitely brine, pointing out that “you need to make sure that the salt has gone all the way through the meat, and isn’t just on the surface.”

So how does this pro recommend keeping cool and calm when cooking for a crowd? “Keep it simple,” he says. “Don’t overproduce. Limit yourself to make sure that you’re not just cooking a lot of mediocre things.” Instead, “make sure the things you put out are special, and thought-through.” Finally, when the meal is over, the dishes are done, and the family’s gone home, there’s still one thing left to consider: How to make use of all those leftovers. Chef Hergatt’s solution? “Breakfast! Chop up your leftovers and mix them with scrambled eggs; use this hash to top off toast.” We’re sold!


The Drink Master

As Beverage Director at Balena—the acclaimed Chicago restaurant featured by Zagat and Thrillist—Keith Whitten oversees a wine list of over 100 bottles, not to mention a separate beer and cocktail menu. He definitely knows his drinks. And when it comes to choosing a wine pairing that provides a balance to a variety of dishes, he says “you

cannot go wrong with sparkling.” In particular, he recommends a champagne-style wine from Contratto called Brut Millesimato 2010 Vintage. “The bright acidity and lively texture of sparkling wine make it great with a variety of food,” he says, “and the Contratto is a more full-bodied, broad-shouldered wine perfect for heartier fall fare.”

For reds, he recommends the Barbaresco from the producer Moccagotta with its notes of rich red fruit and slight tannin, which pair well with meat-heavy dishes. “Try to go with fruitier reds with vibrant acidity,” he adds. And when it comes to cocktails, he offers us the two recipes below for celebrations of all sizes.

Directions The white rum gives a spirited backbone while allowing the rich flavors of the Chartreuse and the Allspice Dram to meld. You really get a full spectrum of savory and sweet spice. Add the egg white and all ingredients into a shaker, and give a long dry shake to build a good frothy texture. Add ice and shake again to chill. Serve into a coupe glass with a little grated nutmeg to bring out the autumnal flavor. Of course Thanksgiving is only one of several holiday meals. We asked Carl to recommend favorite dishes from her cookbook, and her recommendations included Pork Loin Stuffed with Prosciutto and Fig-Rosemary Butter. “It’s really delicious to serve at a holiday dinner party, and looks really pretty on a platter. I like to serve it with Farro with Wild Mushrooms and Haricots Verts with Dijon Vinaigrette.” She also points out that while “both of these dishes are really flavorful side dishes,” they are “also really healthy!” And for dessert? “Something a little decadent, like Bittersweet Chocolate Pudding Cakes with Grand Marnier Whipped Cream and Chocolate Shavings. Always a crowd-pleaser!”

Perhaps the most difficult part of entertaining in New York is our very limited space. However, Carl points out that “all of my Manhattan kitchens have been tiny, but I’ve managed to throw many dinner parties anyway!” The secret? “Again, planning ahead is crucial. The more you can make in advance, the more you can avoid dishes piling up! Also, don’t try and do it all yourself. I am a huge fan of having friends help out by bringing a dish, or at least helping out by bringing a bottle of wine. Just because you’re the host doesn’t mean you have to do everything!”

Anna Watson Carl’s love of cooking and entertaining has taken her on quite the culinary journey, working as a personal chef, teaching cooking classes, writing for food magazines, and creating a blog named after her beloved childhood table that made its way from an antiques store in Nashville in the 70s to her home(s) in NYC—on which she’s hosted countless dinner parties and wowed many a guest. The blog’s overwhelming success led to an equally successful cookbook, in which she shares her secrets for bringing people together through simple, delicious food.

One of the first things guests at Carl’s yellow table notice is that the décor is as delightful as the food. So to make an autumn table look festive, she recommends “food elements like little pumpkins or gourds or pretty little Delicata or butternut squash, on the table as an arrangement.” Come December, she’ll “switch from oranges and browns to reds and silvers and golds. I love using slightly shimmery table runners for something fun and festive, and putting fresh cranberries in the bottom of glass candle holders and placing votives on top. It adds a nice pop of color to the table.”

Naturally, we needed to pick Carl’s brain on holiday entertaining. How does the entertainer extraordinaire avoid being overwhelmed? “Plan ahead!! When I’m making multiple dishes for a holiday dinner party, I always make sure a few of them can be made totally in advance. I also try to create a menu where some dishes are cooked in the oven, some on the stovetop, and some require no cooking. For Thanksgiving, for example, I’ll make my stuffing, cranberry sauce, and maybe a roasted sweet potato dish the day before. I’ll roast and carve the turkey the morning of and prep ingredients for a salad, and then just reheat dishes and toss the salad right before we sit down. That way you’re not doing everything all at once—and, most importantly, you can actually spend time with your guests once they arrive!”

But what if you want to shake things up a bit, serving your family and friends holiday classics that have been modernized and amplified? We decided to do just that, putting a creative spin on our favorite holiday dishes. Then, we went to the experts at Flatiron Wines, our go-to source for all things vino, and asked them to choose a wine that would pair perfectly with each recipe. Here are the delicious results:

Butternut Squash Cornbread Stuffing

“Breakfast” Latkes

Stuffing is a guarantee on Thanksgiving (thank goodness!), and butternut squash is almost certain to make an appearance. If you’re smart, cornbread is on the menu as well. But we decided the best way to serve these three favorites is to combine them into one super side dish and watch your guests swoon. Ingredients 4 ½ cups cornbread, cubed ½ butternut squash, peeled and cubed 6 tablespoons unsalted butter 1 yellow onion, chopped 1 cup celery, chopped 4 tablespoons olive oil 2 cups low-sodium chicken broth, warmed Salt and pepper Directions Preheat oven to 400˚F. Toss cubed squash in 3 tablespoons olive oil, season with salt and pepper, and spread evenly on a baking sheet. Roast abou t 20 minutes, until tender and lightly browned. Remove and lower oven to 350˚.

minutes. Season with salt and pepper. In a large bowl, combine cornbread and cooled roasted squash; add onions and celery, and toss gently. Add in about ¼ of the chicken broth, toss gently with a fork, then alternate adding a ¼ at a time and tossing with fork until entire mixture is moist and well mixed. Transfer mixture to a buttered baking dish and bake for 25-30 minutes, until browned and crispy on top.

Wine Pairing: Domaine Michel Caillot, Meursault, 2012, $44.99 A good white Burgundy like this, according to the Flatiron Wines experts, “has that great combination of richness and minerality,” which means it pairs perfectly Add remaining olive oil and 3 tablespoons with “robust, buttery dishes.” In fact, they butter to large sauté pan; sauté celery and point out that is works well with the entire onions until lightly browned, about 3-5 Thanksgiving meal.

So these latkes aren’t necessarily for breakfast—especially since we plan on enjoying them with a glass (or two) of wine—but who doesn’t love breakfast for dinner? By turning them into latke waffles and topping them with our favorite bagel accoutrements, these are pretty much the perfect food. You’re welcome. Ingredients 3-4 medium Russet potatoes, peeled 1 yellow onion, peeled ½ cup flour plus 2 tablespoons 2 tablespoons baking powder 4 eggs 1 ½ teaspoons kosher salt 1 8-ounce package cream cheese, softened slightly ¾ cup capers 1 pound smoked salmon, cut into 1-inch squares 2 teaspoons chopped dill Directions Coarsely shred potatoes and onion in a food processor then transfer to a cheese cloth and squeeze out all excess liquid several times until mixture is as dry as possible. Place mixture in a large bowl and add baking powder, flour, and salt, and stir well. Add eggs and stir well again until entire mixture is evenly coated.

Heat a waffle iron, and once hot, spray with nonstick cooking spray. Spread a heaping spoonful of latke mixture evenly onto iron and cook until golden brown and crisp. Repeat until all mixture has been used, keeping finished latkes warm in an oven on 250˚. Lay all latke waffles out on a serving platter. Add a dollop of cream cheese (a melon baller works well) to each, then top cream cheese with chopped salmon and garnish with capers and chopped dill. Wine Pairing: Domaine Netofa, Basse Galilee Rosé, 2014, $19.99 The fruit in this dry rosé “balances out the saltiness of the cakes while the acidity cuts through the fat of the salmon,” says our wine expert. Wine from this kosher Domaine in Galilee is the ideal choice for all Hanukkah entertaining.


For New Year’s Eve

Pumpkin-Gingerbread Pie

Mini Lobster Cakes with Caviar

Directions Preheat oven to 350˚. In a small bowl, combine pumpkin, pumpkin pie spice, brown sugar, and egg, and stir just until combined. Slowly stir in cream and combine well.

In a separate bowl, prepare gingerbread mix according to directions. Pour batter into pie crust, then spoon pumpkin mix over batter and swirl lightly. Bake for 55-60 minutes. Serve at room temperature. Wine Pairing: Vietti, Moscato d’Asti, 2014, $16.99 Our wine pros note that “light, refreshing wine” is the best way to go when it comes to decadent holiday desserts, “so you can save room for another slice.” This delicate, airy Moscato has enough sweetness “to stand up to the richness of the gingerbread, pumpkin, and cream.”

Ingredients 1 pound fresh lobster meat, chopped 1 large egg ½ cup panko bread crumbs ½ cup mayonnaise 1 teaspoon Dijon mustard 3 green onions, very finely sliced 1 red bell pepper, very finely chopped 1 tablespoon parsley, very finely chopped 1 teaspoon Worcestershire 1 teaspoon lemon juice Salt and pepper to taste 2 tablespoons vegetable oil 2 ounces black caviar

Wine Pairing: Jean Milan, Champagne Blanc de Blancs “Special,” NV, $48.99 We couldn’t agree more with their choice here: “New Year’s equals champagne, of course!” But they point out that champagne isn’t just about partying. It can pair well with foods like lobster and caviar, and this “Special” cuvee from Jean Milan is 100% Chardonnay “that is aged in barrels before undergoing the secondary bottle fermentation.” The result? “A rich, golden, luxurious champagne that makes lobster taste even more exquisite.” We’ll toast to that!

Directions In a large bowl, gently combine all ingredients except oil and caviar and mix well. Form into small cakes—about 2 tablespoons each. In a large skillet, cook lobster cakes in vegetable oil in batches

(adding more oil if necessary), about 4 minutes on each side. Keep cakes warm up to 45 minutes in a 200˚ oven until ready to serve. Before serving, top each cake with a small dollop of caviar.

heila Rosenblum has become a force in the horse racing world. The Manhattan mother of two and owner of Lady Sheila Stable owns over 20 racehorses, and is now a fixture at the Belmont Park Racetrack nearly every week, cheering on her growing list of champion racers. With some of her closest friends, Rosenblum oversees two all-female syndicates, including Lady Sheila Stable Two, which has eight partners, and Triumphant Trio, with three partners. She and racing world doyenne Vivien Malloy, a dear friend and Bergdorf Goodman heiress, own horses jointly. Rosenblum’s star horse, La Verdad, is a fiveyear-old mare who has made over $1.35 million to date. “She’s won all these awards for races from all the New York tracks: Belmont, Aqueduct, and Saratoga, and her three-year-old sister, Hot City Girl, just won a $350,000 race,” she says. “It’s very exciting.” At the time of this interview, La Verdad was among the favorites for the Breeder’s Cup in Lexington, KY, in late October, and a contender for either the Filly & Mare or TwinSpires sprints—a potential $1 million purse. “This year’s been pretty incredible. I recently had four major wins. You know, it’s rare for anyone to have such a great streak, especially someone who’s relatively new on the scene like me,” she said on a recent afternoon in the living room of her Park Avenue duplex. Two of her “beauties,” as she calls them, Matt King Coal and Championofthenile, are tied for the speediest Beyer Figures, a system for

rating Thoroughbred performance. “Out of all the two-year-olds, that’s pretty incredible,” she says. Championofthenile has the same sire as Triple Crown-winner American Pharoah. A cozy room off the living room in her skybox-like apartment is bedecked with racing trophies and plaques; the shelves are full, so newer ones go upstairs.

and friends-of-friends who bought into her syndicate through referrals, but the word has since spread. “There's a partner from California, one from Colorado, one from Phoenix, one from Florida, one from Long Island,” Rosenblum says. “It’s a very colorful group of big personalities.”

Among the investors in Rosenblum’s syndicate are Dottie Herman, president of Douglas Elliman, philanthropist Iris Smith, humanitarian Diane Davis, and Jill Zarin, the former Real Housewives star, all of whom are close friends. At first, it was friends

She works with trainer Linda Rice, also an investor in both syndicates, and one of the top trainers in the country. Rice just happens to be female; she was hired on merit, and because Rosenblum wanted her horses in


New York. “I like having them close, and with Linda stationed at Belmont, it was an ideal pairing for an involved horse lover like me. I love to see them, feel them, and go in their stalls with carrots from the farmer’s market and really bond with them.” A relative newcomer to the sport, Rosenblum’s entry into the horse racing world was somewhat accidental. Born in Basel, Switzerland to a Roman Catholic Swiss mother and a German Jewish father, the family later moved to Miami, where her father, a physician, established his medical practice. At age 13, Rosenblum left home to study at the School of American Ballet, then went on to study at London’s Royal Ballet School before returning to the New York City Ballet’s school.

two of her horses, Kara’s Match Point and Erik the Red, after her two children, daughter Kara, a freshman at Penn, and Erik, her 16-year-old son, who, she says, is the family artist-in-residence and an entrepreneur-in-training. Trial and error have taught her a few things. “I did everything you’re not supposed to do,” she laughs, “like don’t name horses after your kids, because you could get too attached to them, and then you can’t let them go.”

She’d always dreamt of having something to do with horses— not necessarily racing—but as a ballerina, riding was not permitted. She later gave up ballet and went into modeling with the Wilhelmina and Ford agencies, which gave her more of the well-rounded lifestyle she’d been seeking. “Horseback riding and skiing were the two things that I always wanted to do; I thought they would be really exciting,” Rosenblum says. “I just happened to love animals and always wanted to ride a horse. It’s as simple as that. So I did! I started by taking riding and jumping lessons, and broke a shoulder immediately,” she says, laughing. Deciding jumping was not her forte, she got involved in dressage, and spent time in Wellington and Palm Beach, FL. She makes sure her horses get long breaks from racing, and that they’re well tended and happy. Sometimes, a tough business decision has to be made. “Do they have the heart?” Rosenblum offers as one example. “There could be a great horse that trains well but just doesn’t give a darn when it’s racing. They need the right balance of drive and spirit to be a winner, and even more to be a champion. So you only really find that out as they start racing,” she says. “And I have to learn to be a little bit tougher and get better at culling them out, but it’s not easy. Linda will say, ‘Sheila, we’ve got to let this one go.’ I say, ‘I know, I know, but…’ But she’s right, and I’m still learning.” The sport is subject to a great many obstacles and variables, and she attributes her recent winning streak to perseverance and plain luck. “I have no blueblood background in the horse world, no family in the horse world. I’m the only one,” she says. “My kids think I'm a rock star because of it. I’ve always been an advocate for doing the right thing, and I’m an advocate for New York horses, too,” she adds. “I love New York and I love my horses predominantly in New York.” She is also an advocate for children’s rights, and sits on the board for the March of Dimes. Generally, Rosenblum would not ride a racehorse, and she isn’t used to jumping, but she did both during her Resident Magazine photo shoot. “I have the most beautiful race horses, so I’m glad I did it. It was lots of fun,” she says. When she saw the chestnut chosen for the shoot, she said, “Oh damn, it’s a Thoroughbred and just ‘off the track.’” Thoroughbreds are rather temperamental, she explains. “A temperamental personality like mine and a temperamental horse are probably not the greatest fit.” But it worked out. “I jumped it a couple of times, three major jumps, and we almost went over a bush, which was the horse’s intention, not mine.” Recalling the shoot, Rosenblum laughs, and says, “I’m either a little insane, or a little bit of a thrill-seeker. Maybe both. But it really is a joy to see it all come together.”

The other partners are philanthropist Iris Smith, Douglas Elliman CEO Dottie Herman, Diane Davis, Jessie Laiken, equine artist Donna Bernstein and former Real Housewives star Jill Zarin. As Jerusha, Megan McGinnis is charming and sings like an angel and Paul Alexander Nolan manages to make the somewhat irritating Jervis more tolerable. She doesn’t know the man’s identity—he calls himself John Smith—and his only requirement is that she send him one letter each month. He doesn’t correspond directly with her and she imagines he is an old man. In fact, he is the young, good looking, and wealthy Jervis Pendleton. He is charmed by her letters and meets her through a schoolmate of hers who happens to be his relative, without revealing to Jerusha that he is her benefactor. The main appeal of the story is the blossoming

Now, Deaf West Theater has brought to Broadway a remarkable revival of the show, with pairs of actors, one hearing and one deaf, playing key roles. For example, Sandra Mae Frank (who is deaf) plays Wendla Bergmann, using sign language, while Katie Boeck sings and speaks the part. This is done for other characters as well. For example, Moritz Stiefel is portrayed by the deaf Daniel N. Durant and the hearing Alex Boniello. Even some of the hearing actors sign their lines, occasionally with the words appearing on a blackboard. The signing fits in with the energetic choreography by Spencer Liff. The gorgeous score has never sounded better. The adult figures are played by a distinguished group: Academy Award-winner Marlee Matlin, Camryn Manheim, the mellifluous voiced Patrick Page, and Russell Harvard. Imaginatively directed by Michael Arden, Spring Awakening is a triumph. It is running through Jan. 24 at the Brooks Atkinson Theater (springawakening.com).

The upbeat jam, produced by Grammy Award-winning producer, Symbolyc “S1” One (Kanye West, Beyonce, Jay-Z), and written/vocal produced by R&B crooner and Knight protégé, Avehre, was released on Friday, September 25th, 2015. “Just a Little” is the first mainstream dance record from Knight in nearly 20 years. The song serves as the lead single from her 12th solo studio album, slated to be released in 2016.

Bassist Nigel Rivers, who’s played for the likes of John Legend and Erykah Badu, assists on the up tempo groove. “S1 and I have been cooking up something that we believe will go down in history,” exclaims singer-songwriter Avehre. “This album will feature some of the biggest names in musical history; both past and present. It’s an honor to be a part of the future working on this album.”

“We just wanted to have fun,” says Knight. “Most of the singles I’ve released prior to ‘Just a Little’ were ballads. I wanted something new. Something that we could dance to.” If “Just a Little” is a taste of what is to come from Knight’s LP, it’s no surprise that listeners will be asking for a second helping Knight plans to release the video for the single as well. In addition to the LP to drop in 2016, Knight is also the newest ambassador for VH1’s “Save the Music” Foundation. The foundation, established in 1997, is a nonprofit organization devoted to restoring musical programs and raise public awareness about the importance of music and a child’s education.

he New York Art, Antique and Jewelry Show hits town Nov. 20-24 at the Park Avenue Armory, and proprietor Scott Diament expects it to be a stellar year. “I would say we amassed one of the best dealer participation lists of any show anywhere, with the adding of Richard Green Gallery, based in London, and Berko Fine Paintings from Belgium, and last year adding Butchoff Antiques, and a number of others that are now showing with us in New York,” Diament said. This year’s design chairs are Campion Platt and Elle Cullman. The committee includes Tony Ingrao, Randy Kemper, Lisa Jackson, and Alex Papacristidis.

Diament’s company, Palm Beach Show Group, is one of the world’s preeminent production companies with 11 shows annually, including Baltimore, Los Angeles, Chicago, Dallas, and

New York, which they took over two years ago from its previous operator. “For us, it’s very exciting to steward the progression of the show, and to put that on the doorstep of, arguably, the best building in America, and in one of the greatest collecting areas on the planet Earth,” he said. Other New York exhibitors he’s excited about this year include Georg Jensen, which will be showing one-of-a-kind curated items not available at their retail outlets; Fitzgerald Fine Art; M.S. Rau Antiques, from New Orleans; Suzanne Syz, from Switzerland; Jonathan Cooper, from London; and Veronique Bamps, from Monaco. For a display at the front of the show, Diament selected a piece from U.K.-based Wick Antiques, a rotating wooden display case, open on four sides, believed to have been in the Philadelphia Exposition of 1876, that will hold a special item. Another new development at this year’s show will be three on-site dining options from the celebrated restaurant Le Cirque: A bistro, a grab-and-go spot, and a coffee bar. Diament, a certified gemologist with a string of jewelry stores, founded the Palm Beach Show Group after exhibiting at shows in Europe and noting the contrast with those in the United States. “They cared about the carpet, they cared about the flowers,” he said. When he heard that there were plans to build the Palm Beach Convention Center, he and his partners decided to secure Presidents’ Day Weekend and bring in a European-style fair. The first fair took place in 2004 with 230 dealers from around the world, and at that time became the largest art, antique, and jewelry show in U.S. history, and

remains so today. The man who runs these shows is no stranger to collecting. “I literally have a thousand items,” Diamant said. “At every show I go to, I end up buying something. I almost have some kind of problem,” he laughed. A recent favorite is an MB&F watch with the works on the front of the watch, in sapphire and reddish-gold, with dual time, which he finds very handy in his line of work. Another is a circa 1970s minimalist desk, of steel and wood with an aeronautical look, that he was sitting at as we spoke. He owns a Martin-Baker ejection chair that came from a bomber plane, and samurai swords from the year 1480. “The list goes on and on,” he said, because his tastes are eclectic. His children take after their father. “I come home with stuff all the time, and my kids absolutely love it,” he said. “They really appreciate antiques; they can handle antiques, they can handle glass, they come to the shows. They definitely have an appreciation for arts and culture.” Scott Diament

If you’re looking to dive deeper into the culinary culture of a country, here are three spots worth the stop: So, I may regret when the word’s out on this one. Yes, Lisbon is big on many people’s list, but overall Portugal has remained relatively under the American radar. My first trip in, I cruised along the idyllic Douro Valley, stopping along the way to hit the many old-world wineries, where tastings, tours, and perfectly-paired meals followed, at a leisurely pace. I never saw a single American, until my last winery, where I met someone from my hometown. Oddly, the Azores are even more elusive. 900 miles off the coast of Portugal, the nine islands are green, volcanic, and remote, perfectly fertile for food and wine production. There’s a lot of seafood on the islands, but what really hits you upon arrival is the beef. It’s an agricultural culture, not unlike New Zealand or Ireland. So, meats, creamy cheeses from cows, sweet bread (Massa Sovada), a vibrant wine culture, and a tea plantation with the only industrial

tea plant in all of Europe are but a few of the Azores offerings. The culture is so fertile, it draws acclaimed and Michelin-star chefs in from all over the world for ten days in the summer for the 10 Fest Azores. Chefs like Denmark’s Brian Hansen and our own T.J. Dell Donne from Johnson & Wales have their way with local ingredients, alongside eight other chefs over a ten-day period. Redzepi served up far more than sushi in every small plate. A few fan favorites were the raw, as in semi-alive, botan ebi with wood ants, which adds a bit of citrus. The shaved monkfish liver literally—as in it is not a saying, but a fact—melted in your mouth. The koika cuttlefish, served with a bowl of rose petal doshi broth, was simply beautiful.

A decade ago, Spanish chef Manuel Maduro was one of the first to take a chance in the once gang riddled neighborhood of Casco Viejo. The historic district and World Heritage site is now the epicenter of trend.

Casco’s culinary scene is exploding with restaurants like Donde Jose (dondejose.com). Young chef Mario Castrellon has no intention of expanding or replicating his little urban oasis. All of his focus is on his intimate 16-seater. Donde Jose just has two seatings of 16 a night, where the chef comes out personally and explains each dish and pairing. Castrellon is all about the Panamanian cuisine, culture, and products. Donde Jose may just be Panama’s new NOMA. Time will tell...

The Shang The Shangri-La Hotels and Resorts’ first outpost opened in Singapore in 1971, and it is now Asia’s leading luxury hotel group. Today, there are more than 90 Shang hotels stretching from the Asia Pacific to North America, the Middle East, and Europe. The Shangri-La Toronto is the newest addition to this collection, and exemplifies the brand’s hospitality, tranquility, and unique standards of service. Once inside the lobby lounge, guests are greeted by four enormous Chinese calligraphy paintings by Wang Xu Yuan, depicting women from the Peking Opera. The hallways leading to the 202 spacious and perfectly-appointed guestrooms are dotted with Japanese prints and objets d’art. My corner suite had dramatic views from all windows, and the shades, lighting, and temperature were all linked to state-of-the-art control panels. The living room featured a cozy seating area, TV, desk, bar, and luxurious full bathroom. The massive master bath was a marvel of pale green marble counters and white marble floors and tiles. While shaving, I discovered a TV seamlessly hidden in the mirror, and the tub—which was big enough for two— had floor-to-ceiling windows on two sides. Soaking at night with all of Toronto twinkling beneath me was one of the highlights of my stay. The highest level of accommodations here is the $10,000/night Shangri-La Suite. At

Bosk is the hotel’s critically-acclaimed signature restaurant. For a serious culinary treat, try Executive Chef Damon Campbell’s tasting menu, and be sure to have the wine pairings chosen by sommelier Mark Moffatt. Start with the Chefs Snacks, which include truffle custard and a caviar donut. When dining a la carte, I suggest the Pacific Sablefish or the Lamb Loin Duo with Tomato Fondue. Although the wine list has more than 700 international labels, it’s the lobby’s champagne wall that got my attention; it contains the finest selection of champagnes in the country, including the hotel’s house champagne, Perrier Jouet, and a rare Dom Perignon Jacquesson Cuvee 736. You can indulge in flights of different champagnes and buy them by the glass. I ordered the caviar, paté, and a selection of artisanal cheeses to go with my glasses of Dom and Cristal. This hotel experience truly is Shangri-La.

George Clooney and Johnny Depp are among the stars who have been spotted in the ShangriLa when visiting Toronto. When Jessica Chastain wanted vegan food, she found it at this oasis of luxury with Asian accents. Here you’ll find CEOs, A-list stars, and movie moguls all comingling, especially during the Toronto International Film Festival held each fall. Guests have spotted Reese Witherspoon celebrating with the cast of Wild on the Hotel’s Garden Terrace. Applause filled the room when Terrence Howard did an impromptu performance of “My Girl” in the Shangri-La’s festive lobby lounge, which features live jazz every night. The lounge’s Fazioli piano is wittily inscribed with lyrics from Canadian singer Joni Mitchell. The expansive and romantically-illuminated lobby, with its cozy seating, would make a perfect setting for a James Bond film. I enjoyed small plates of delicious steamed dim sum, crunchy chicken, and beef sliders, all served around two chic, minimalist fireplaces. Don’t

Finding the Right Doctor for Your Needs ••• By Dr. Irene Grafman

O

ver the years, the one thing I have realized is how hard it is to find the “right “doctor for our individual needs. Living in Manhattan, it seems there is a doctor on every corner—how difficult could it be to find a good one? Most of us look in the insurance book or ask a friend. But what does that really tell us about the person we are entrusting our health to? Being on the inside—and as I get older—having to find the right doctors for myself and my family has taught me that not all doctors are created equal. When I graduated from dental school and started practicing, I had an idealistic view of the profession, I wanted to work in different offices to learn as much as I possibly could. What I learned is that doctors vary greatly. By the time I started my own practice, there were two things I knew: 1) If I want to offer my patients the treatment that is best for them, along with the quality of work that improves their health, I could not have patients’ treatment dictated by insurance companies; 2) I still have so much to learn.

I began taking all kinds of post-graduate education courses to help me become what I realized was a better technician. I learned how to do beautiful, white, natural-looking fillings, crowns, and veneers. But when someone came in who had deeper problems than a discolored tooth, I still felt I could not fully help them. I began realizing that people who complained of always having new cavities, or those who are constantly breaking their crowns or veneers, have something deeper going on. So I began taking courses that focused on not just how to fix teeth, but how to evaluate and treat the entire mouth—and then the entire person. The more I learned, the more people I was able to help. I realized there are reasons why some people are more prone to cavities, and why some veneers always seem to break. I learned there are reasons why our teeth are crowded, why our palates may be high and our arches very narrow. I learned that my job is not just to fix your tooth, but to diagnose why it happened and prevent you from having problems in the future.

Knowing what I know and being in the medical field, I choose my doctors very carefully. My best referral source is a doctor I respect. I ask who they would send their family to. Doctors know who is a great practitioner and gets results. If you get a recommendation from a friend, don’t go to their doctor simply because they’re nice; ask specific questions, including if their problems got resolved, and if the doctor really listened and addressed their concerns. Many doctors have a specific area they have special training in, so do your research and find the ones that know how to best treat you.

It’s becoming more and more evident that physical, behavioral, and environmental factors of health are inextricably linked. Psychologists work together with medical doctors to help patients optimize their health. Essentially, psychologists are behavioral health interventionists. We have the ability to listen to and understand information, discuss the treatment of problems with clients, and help them adopt health-promoting behaviors as well as disease prevention and management strategies.

What are some examples of health-promoting behaviors?

Regular aerobic exercise, eating a balanced diet, minimizing sugar intake, not smoking, drinking alcohol in moderation, regular sleep, annual physical examinations, hand washing, and seat belt use are all considered health-promoting behaviors.

Eat right. Exercise. The usual advice, huh?

Yes, but here’s the difference. Take adherence to a healthy diet and regular aerobic exercise. Doctors have been telling people for years to eat healthy and exercise. Unfortunately, most people haven’t been taught how to engage in these health-promoting behaviors. How to set goals, how to boost their confidence, how to motivate themselves to go to the gym even when they don’t want to, how to curb emotional eating, how to adopt a more positive attitude, how to problem solve, how to get back on track when they experience a setback, etc. The good news is that these skills can be learned.

I understand that you teach these skills to individuals of all ages and groups. What can one expect when they come to your office for the first time?

When you first come to my office, I will ask you to fill out several self-report forms that assess a range of problems and symptoms. In addition, I will ask you questions that are designed to evoke change (e.g. What makes you think that you need to do something about your ______?). The purpose of this evaluation is to collect as much information about you as possible, so I can learn quickly what you would like to address. Together, we will develop a plan of action. Treatment can be relatively short-term or as long as you find it helpful. It is focused on how you are thinking, behaving, and communicating today.

Your treatment focuses more on the present and less on early childhood experiences? In short, yes. When it comes to accomplishing your current goals, it isn’t always necessary to engage in lengthy discussion of how your parents, siblings, and peers treated you. By way of learning and practicing new skills, exploring personal strengths that can help you to succeed, and identifying people in your life who can offer support, it is easier for you to create change. Rather than get bogged down in the “why” the focus is more on what is important to you in your life right now.

What’s the best way to go about developing goals? For starters, goals need to be specific, measurable, action-oriented, realistic, and timely. “I will walk around outside during lunch for 20 minutes while making phone calls” is a much more attainable goal than, “I will walk more.” It is also important to address any barriers that might get in the way of achieving a goal. This is something that I do with my clients—we troubleshoot. And they know that I will ask how things went in our next session, which fosters accountability. A key takeaway is that when we attain a goal we increase our self-efficacy.

What is self-efficacy? It is the confidence we have in our own ability to perform a specified behavior. Success has the power to raise selfefficacy. Have you heard the phrase, success begets success?

What’s a practical example? Consider replacing that orange juice with sparkling water. The significance of this behavioral change for an individual who wants to lose weight goes beyond the 90 calories he/she spared for opting for water. This behavioral change promotes health self-efficacy, and in turn, increases the chance that he will continue to engage in health-promoting behaviors. Overtime, these small changes add up. Just like with kids, it is important for adults to reward or compliment themselves for positive behavior change. When we experience positive reinforcement we are more likely to feel confident in our ability to make additional positive changes. The more confidence you have to make a change, the more successful you will be.

Any suggestions about ways to strengthen our confidence? Ask yourself, on a scale of 0 to 10, how confident you are that you will be able to change a behavior that you wish to change? If your answer is above 0, ask yourself, what makes this a ___, and not a zero? What would it take to make that number 2 or 3 points higher? Recall things you did successfully in the past. Remember how you did those things. What did you do to make them happen? Think about how you can use successful techniques from the past to accomplish what you want to do now! How to Reduce Dark Circles Under the Eyes By Roxana Kerns, M.D.

W

hether you inherited dark circles from your parents or acquired them in the aging process is important to know how to reduce dark circles, treatments available and what is suitable for you. What are dark circles? Sunken eyes, hollows that undermine the youth of your eyes, increased pigmentation in the periorbital sulcus,( around the eye) they all contribute to what we call “dark circles”. In time, as the elasticity of the skin diminishes, sagging in the periorbital area can increase the intensity of the dark circles and induce wrinkles or saggy eyes. Migration of the periorbital fat to lower face compartments leaves behind loose skin directly on the orbital bone creating hollows under the eyes. Poor lymphatic drainage and herniation of the priorbital fat superficial to the muscle will lead to under eye bags. Under eye discoloration induced by sun exposure, saggy skin and hollowy or and baggy eyes all contribute to the “Dark Circle” complex that affects each and every one at certain point in age.

How to reduce dark circles? Increased pigmentation or discoloration in the periorbital area either due to sun exposure or allergies can be diminished with medicated skin preparations like hydroquinone 2-7%, kojic acid or vitamin C medical grade. We recommend prescription strength

brightening serums and creams available in Obagi line. Is Dr.Brandt’s another skin care line you use? A must have sunscreen with SPF 45 or more should be applied daily, every morning in a thin layer on the area under treatment. Avoid direct sun exposure of your eyes and wear sunglasses to protect the eye area against UV and premature sun damage. IPL or intense pulse light Laser can be used to reduce the concentration of melanin cells responsible for the dark discoloration of the skin; a series of 3-6 treatments are recommended every 4 weeks until the pigmentation subsides. Sunscreen SPF 45 or higher and sun glasses are recommended to prevent further increased pigmentation due to sun damage. Dark Circles as sunken eyes or hollows under eyes can be treated by Dermal Filler injections, Fat injections or PRP (platelet rich plasma) injections. Fillers are an important tool in the battle against dark circles. By placing Hyaluronic acid Fillers in the periorbital area an instant correction of the hollows under the eyes improves the dark circles . When repeated injections are necessary to achieve full correction or if more than 2 syringes of Dermal Filler (either Restylane or Juvederm) are needed to correct dark circles, Fat injections may be recommended. Autologous Fat ( your own Fat harvested in aseptic medical conditions) is the best treatment for dark circles and sunken eyes,

with a good longevity (2 plus years) and beneficial skin regenerative powers. The injected Fat corrects wrinkles, gives volume to sunken eyes, improves elasticity. PRP or Platelet Rich Plasma will use growth factors from your own blood, spinned into a centrifuge and concentrated 5-7 times to increase their regenerative powers and treat wrinkles, firm sagging skin and fill in sunken eyes. Under eye bags can be treated surgically by blepharoplasty and non surgically by laser skin tightening or RF treatments(radio frequency). Laser and RF technology work by inducing thermal damage in the deep dermis, stimulate fibroblast and elastin and production of collagen with an overall effect of tightening. Dark circles treatment can be limited to a quick injection of a dermal filler in a medical office (painless, with no downtime that will last at least 8 months) or it may need a combination treatment of Skin Care, IPL, PRP or Fat injections and Laser skin tightening. A

llow me to introduce you to Alison Minton’s Chris and Holly. Alison Minton is The Accessories Editor of New York Social Diary. Chris and Holly are her twolegged winged friends. Chris, her cockatoo, even asks questions. Alison originally got Chris when she was planning an event; little did she know that her life was about to change forever. Many aviation folks love and have birds, because of the obvious flying connection. Alison thought it would be fun to have parrots at the cocktail hour of the event, which was for the airline industry, so that people could take photos with them. She contacted a bird store in Greenwich Village that had brought birds to another event she had attended, and the owner invited her down to visit. It was a jungle in there—swings all over and birds on every swing. There was a playpen with baby birds of all types; she started petting a baby African Grey, and the next thing she knew, a baby cockatoo waddled over to her and grabbed her finger and wouldn’t let go. That was Chris. She couldn’t get him detached from her finger, and he looked up at her with his big brown eyes and cuddled next to her, and she was smitten. As he fell asleep in her arms, she handed over her credit card. He knew a sucker when he saw one. Alison started working for a private club for airline executives, and she used to take Chris to work with her. She put up a swing in the office and brought in a bird tree, but he preferred sitting on the back of her chair. Chris got well socialized, being around people all the time. One day, Alison volunteered to help out for an event for a veterinary school, and the organizers were having a photoshoot of famous people and their pets for Town &

Country. They asked if she knew any famous people. JetBlue was the hot new airline at the time, so she asked the people at JetBlue if the founder, David Neeleman, wanted to be photographed. David had about nine kids, but no pets, so he agreed to pose with Chris. Chris was about a year old and had never modeled before, but it was obvious at the shoot that he was born to be a star. Alison didn’t know how, but he knew how to pose and follow directions. He had the time of his life in front of the camera. A friend in advertising recommended an animal agency, and Alison took Chris to see the agent. Now, every once in a while, Chris gets a job, including Saturday Night Live and the Neiman Marcus catalog. Chris loves everything about working, from eating from the craft table to the pretty models he gets to work with, who he always hones in on and flirts with. Alison calls him the Leonardo DiCaprio of birds. Amazingly, as naughty as he can be at home, he’s a total pro on set. As soon as he realizes that it’s “work,” he gets his game face on and suddenly acts mature and quite well behaved. She thinks his two days rehearsing for Saturday Night Live was his favorite experience. He even met One Direction, and they serenaded him. The set designers made him a toy, and they created a special area for him to hang out in. He ate pistachio ice cream during breaks and everyone kept coming over to meet him and take photos with him, like he was the big star (which he thinks he is). He got paid and bought Alison new shoes with his paycheck. Chris and Holly have enhanced Alison’s life with unique experiences she never would have had—but especially Chris. They have been to

almost every news station in the city for his appearances in different programs and segments; he’s even friends with some of the news people on Facebook. In fact, Chris has a Facebook fan page and a private Facebook page. He also has a blog and a Twitter account. Having Chris and Holly has also made Alison aware of the plight of captive birds. Before she had them, she didn’t know that the bird trade industry is just like puppy mills. Additionally, cockatoos can live up to 100 years. Because they live so long and are so difficult to care for, they are the most rehomed parrots. The average cockatoo has 15 homes in its lifetime for an average of two years each. The lucky ones go to live out the rest of their lives at a sanctuary, but many of them end up living in dreadful conditions, locked in cages for years, in a closet or basement. Parrots are flock animals and need companionship. They have special dietary needs and they need stimulation. They are not the best pets for most people. In nice weather, Allison puts a harness on Chris and takes him out for walks in the park. People often stop to chat and play with Chris, and it’s a great opportunity for her to educate them about parrots and the care they need. She is glad he can be an ambassador for his species. Alison knows that Chris and Holly are the stars, and she is riding their coattails to fame and fun.

ill Rau began working at his family’s New Orleans antique dealership, M.S. Rau Antiques, at the age of 14. He became president of the firm, now in it’s 103rd year, in 1995. “There was nothing different that happened the day I became president than the day before,” he says. “That was when my uncles officially retired, but it was business as usual. “Mr. Rau is considered one of the foremost experts on European and American antiques, fine art, and jewelry, and is a member of the Wedgwood Society, the American Cut Glass Association, the National Association of Watch & Clock Collectors, and the Music Box Society. So how can one person be knowledgeable in so many niche collectible categories? “That’s a good question,” he says, laughing. “I have a theory that I believe to be true, that the rules for all collectibles only vary by 25 to 30%. If you are an expert in 19th century paintings and you want to learn about Old Master paintings, I think what you have to learn is only about 15%, because 85% of those rules are the same. But if you’re an expert in painting, and you want to learn about jewelry, that might be the biggest difference—say 30% difference— but the majority of the rules are still going to be the same.”

Those general rules? Is the piece in good condition, is it rare, is it unique, does it come with papers, does the origin matter, is it signed? “Those rules are going to be the same whether you’re talking about jewelry or paintings; beyond those, you just have to learn the 30% difference,” Rau says. “I was blessed because I grew up in the business, so I learned a number of things very early,” he adds. Mr. Rau’s vast knowledge will be on display at the New York Art, Antique & Jewelry Show, Nov. 20-24 at the Park Avenue Armory, where the firm will bring the best examples of its wares. Highlights include Pope Paul VI’s diamond cross and ring valued at $1.9 million, a 10-carat blue diamond—the only one for sale in the world at the moment; an 18-carat jasmine sapphire (almost as rare as the blue diamond); a rare painting by Van Gogh that they just bought; an “exceptional” pietra dura plaque of inlaid marble made to look like a pastoral scene with people in it; an “extraordinarily important” porcelain collection, the Twinight Collection, that has been displayed at the Metropolitan Museum; and a fruit bowl ordered by the King of Prussia to be given to the Pope, one of a pair, the other of which is in Germany’s Charlottenburg Palace.

And talk about taking your work home—Bill Rau has an extraordinary collection of his own; a favorite is an English “Freedom of the City of London” box that belonged to Henry Morton Stanley, the British explorer who, upon locating missionary David Livingstone, asked, “Dr. Livingstone, I presume?” “I’ve always had a fascination with explorers, and he was among the most important explorers in history,” Rau says. Stanley, an orphan, also had a New Orleans connection, having gone there at age 18, and being adopted by a family headed by a man named Henry Stanley, whose name he took in gratitude. Bill Rau is the third generation of his family to run the business; will his two daughters, both in their 20s, also join the firm? “The jury is still out on that question,” he laughed. “If you find out more than I know, call me back and let me know.”

Thus, when Thanksgiving arrives, there’s more abundance than ever before. Interestingly, some of those who found abundance were not even looking—yet the more ideal state of living fell into their laps. The common denominator, since the beginning of the year, has been that they aligned themselves with the light through selfness acts (donations and charity work) even more than usual, therefore connecting to the divine energy and improving their overall wellness. I’ve provided people—both in person an on my website (punyin.com)—with suggestions that can help them attain higher levels of peace if they know how to capitalize on the timing of the year of the sheep, which ends on February 3, 2016. This is the window that can help people reset their own energy, following insight found in the Chinese written character “peace,” which happens to contain the word “sheep” and

Until then, the general approach in feng shui is to create a helpful energy zone in your home—ideally in the east or west direction. The east direction—sunrise—represents the wood element (Yang Chi) and is the fresh start energy of the day—therefore beneficial to the early riser. Start by taking a moment to tap into the sun’s energy and create a spiritual

connection, while contemplating the words “clarity,” “strength,” and “perseverance.” For those who require energy in the evening and onward, using the west direction—sunset— with the strong sun energy can be a good way to refresh and regroup your mental energy. In addition, take the time around Thanksgiving to contribute financially or physically to organizations that feed the hungry. In order to ensure a blessed year ahead, acknowledge the blessings already in your life, including your health, freedom, and the relative peace/ safety most of us enjoy in America. Over the years as a feng shui master, it has become clear to me that people who nurture a grateful heart tend to have more blessings. Even if at times there are challenges, those with faith tend to ride the waves in a more dignified and respected manner. In short, a heart with gratitude is a heart that is balanced, drawing good people and good things in. Enjoy your Thanksgiving, and set your heart to embrace the blessings to come.

Get your “ducks in a row.” In a market flush with buyers, it is imperative to have all that you need prepared in advance so when the time comes to make an offer there are no delays and the offer process goes smoothly. I recommend buyers who wish to take advantage of the low interest rates to get a pre-approval letter from a mortgage or bank home loan lender prior to beginning a property search. This way, you know upfront what amount a bank will be willing to lend and can begin a search with greater confidence. On behalf of my buyer clients, I always submit the home loan pre-approval letter with an offer. It strengthens the offer. When an apartment is pinpointed to purchase, I recommend making sure the building is verified as a mortgage friendly building. The mortgage broker can check the address, prior to submitting an offer. Obtaining a knowledgeable real estate broker is key since it is extremely helpful to have one (at no cost) who is there to guide the way, assist with all the buyer’s needs, negotiate a deal, and prepare all that is required throughout the, sometimes complicated, process.

What are a few things about buying in New York City which is unlike any other city? Whether a co-op or a condo apartment, buyers in NYC are most often surprised at how much work is involved in the purchase process. Co-op apartments can have extensive Sales Application Packages and require a Board interview and approval. I often have co-op and condo Board Packages over 6 inches thick! Listen to your real

estate broker and take their lead. A broker is responsible to prepare and present each Board package in such a way that no questions will be asked by the Board. You don’t want any red flags to pop-up. Thoroughness is key and disclosure of all financials is the norm. Many condo buildings require full disclosure of all liabilities and assets too, including complete, personal bank and investment statements. Understandably, most buyers are not comfortable with providing intimate details of their financial make-up. However, don’t worry, it’s the industry’s standard process and kept confidential between the buyer’s broker, the building’s managing agent, and Board members (they’ve all been through it).

oliday meals: Filled with fun and flavor, loaded with fat—which inevitably leads to guilt. So is it possible to enjoy the season’s festivities without gaining ten pounds? Of course it is. We decided to seek guidance from the master of healthful, flavorful cooking—Franklin Becker, Executive Chef of NYC’s The Little Beet and The Little Beet Table, and recipe developer and partner of Hungryroot. Chef Becker—a native Brooklynite who’s written three books on healthy cooking and has competed on Top Chef Masters and Iron Chef America—knows everything there is to know about preparing healthful foods that people actually want to eat. Here’s how:

Franklin Becker: The holidays are a time

of excess. Excess spending, excess drinking, and of course, excess eating. But there are ways to at least curb the latter. Baking and then roasting sweet potatoes, like we do at the Little Beet, and finishing them with sea salt and olive

oil, evokes the same feeling of holiday sweets without the added sugar and butter. Cooking a mixture of your favorite root vegetables— sweet potatoes, carrots, celery root, and parsnips—with water, olive oil, and garlic, and then mashing them and seasoning with a little salt, pepper, and nutmeg will satisfy anyone looking for mashed potatoes with about one fourth the calories. Additionally, roasted sunchokes with thyme, olive oil, and chili pepper are sure to satisfy the roasted potato lover.

Except for kids, of course [laughs]! But cauliflower is a great alternative to potatoes as well. Add some leeks to it and the flavor is incomparable. By brining your bird, you can increase moisture without added fat, and can roast a lean bird. Also, the addition of fresh herbs and acid from lemon, orange, or other citrus is a great way to use less fat in your cooking.

RM: There’s usually at least one vegetarian at

FB: Stuffed mushrooms with mushroom, kale,

and pine nuts is full of umami, and a great vegan hors d’oeuvre. Add a touch of microplaned parmesan and really send people over the edge with excitement. Just remember to hold the tray up high as you make your way to the table.

RM: Similarly, how about something for those FB: Everything [mentioned above] is gluten-

free, but the item most missed during the holiday season is stuffing. By combining quinoa, kasha, brown rice, and wild rice with squash, lentils, mushrooms, cranberries, sage, parsley, and sofrito, you can create a satisfying, delicious stuffing that everyone will enjoy and ask for seconds of.
