Where History Meets Modern Elegance on the American Riviera
In the heart of Santa Barbara, where the stunning coastline meets the picturesque Santa Ynez Mountains, stands the Hotel Californian, unapologetic in both grace and style. More than just a place to stay, the Hotel Californian is the embodiment of the rich history and luxury in, what is often referred to as, the American Riviera.
The story of the Hotel Californian is deeply entwined with the city's history. Completed in 1925, the hotel was an early example of the Spanish Colonial Revival style prevalent in Santa Barbara. Just a week after it opened, a massive earthquake hit the city, necessitating extensive repairs to the brand-new building. Over the years, the hotel has undergone several transformations, reflecting both the changing times and fortunes of the surrounding area. Today, it’s owned and operated by the Foley Entertainment Group and stands as a 121-room symbol of luxury, elegance, and sustainability.
The hotel, comprised of three buildings at the intersection of State and Mason Streets, was rebuilt behind the façade of the original 1925 structure. It houses 62 guest rooms, each over 400 square feet and featuring balconies with ocean and mountain views. It also includes a 1,300 square foot rooftop pool and a 3,500 square foot event deck. The Mason building includes the lobby and 58 guestrooms. It
also houses the Djinn library bar and meeting rooms. The State building offers event and social catering venues, the Presidential Suite, and underground parking.
The interior design by Martyn Lawrence Bullard combines California Spanish Colonial Revival architecture with Moorish-themed elements, creating an exciting and stylish atmosphere. Guest rooms are available in four color schemes: yellow, terracotta, emerald, and eggplant, each featuring patios, verandas, or balconies. What makes his work stand out is his relentless drive to challenge not only himself but also the communities and beneficiaries of these festivals. Lee Schrager: The big jump from the corporate world to the foodie world was the South Beach Wine & Food Festival (SOBEWFF®). Living and breathing the food and beverage world every day for over 25 years made the festival a logical yet initially ‘chaotic’ extension of my career.
JE: How did the South Beach Wine and Food Festival evolve into an iconic event?
LS: It started without a plan, direction, or goal. I had the idea on a return flight from the Aspen Food and Wine Classic. We wanted to showcase South Florida, promote the hospitality school, and give students an opportunity to work with industry leaders. The success of the Food Network and the growing interest in food and dining also contributed to its evolution.
JE: How does the festival impact the local culinary scene?
LS: The festival brings dedicated foodies to town, who not only attend festival events but also visit local restaurants. It's one of the busiest weekends of the year for the local culinary scene.
JE: What initiatives are you most proud of?
LS: They are all like dear family and friends to me, each with unique personalities. Foodie Con, launched last year at the festival, has been incredibly popular. Bringing together digital influencers in one space has been fascinating.
JE: How do you balance a festival vibe while still offering a high-quality culinary experience?
LS: We have managed to capture both the Food Network pop culture fan and the Michelin fine dining experience. We listen to feedback and take it to heart, continuously improving our offerings.
JE: What is your vision for the future of the festival?
LS: As long as we continue to deliver new events, new talent, and a good product, and as long as people continue to eat and want to learn more, I believe we will continue to remain relevant.
JE: What is your advice for aspiring entrepreneurs in the culinary industry?
LS: My advice would be to stay true to your vision, be open to feedback, and never stop learning. The culinary industry is constantly evolving, so it's important to adapt and innovate while staying authentic to your brand.
JE: How do you see the South Beach Wine and Food Festival contributing to the future of culinary arts?
LS: I believe that the festival will continue to be a platform for showcasing new talent, trends, and innovations in the culinary arts. It has become a significant part of the food and beverage landscape, and I see it playing a vital role in shaping the future of the industry.
JE: Your journey has been fascinating, blending traditional business models with a progressive presence on social media. Was there a pivotal moment when you decided to assert your personal voice on social platforms, distinct from your professional role?
LS: I never sought formal approval for my social media presence. I've always been vocal, especially about LGBTQ issues, political stances, and my views on our governor. Balancing my personal opinions with my role as the face of Southern Glazer's Wine and Spirits is challenging. I'm aware that my views don't necessarily reflect those of the company or our 22,000 employees. Moving forward, I aim to be mindful of how I express my opinions, especially when referencing my professional position. This selfawareness wasn't prompted by company leadership but from personal reflections and conversations with friends and business associates. While I've never been reprimanded for my posts, I've been advised to be cautious, given my significant role in communications. My followers are aware of my stances, but I need to remember that my opinions aren't shared by everyone associated with Southern Glazers.

JE: What’s your most unforgettable kitchen mishap?
LS: Oh, there have been quite a few! But the most memorable ones usually involve my dogs. I remember one time in the Hamptons, I had spent hours in the kitchen preparing two roasted chickens. Exhausted, I went upstairs to rest for a bit and accidentally dozed off. Waking up to find the dogs absent from the bedroom was an immediate red flag. Turns out, they had managed to snatch the chickens I'd left out, presumably safe from their reach. I found them happily feasting away in different rooms. It seems most of my kitchen mishaps are less about the recipes and more about the dogs seizing an opportunity.
JE: What's the most unexpected item that I would find in your refrigerator right now?
LS: My husband eats very differently than I do.
So probably the most unexpected thing would be a lot of healthy food. To be clear, most of the healthy food is not mine. The ice cream, the ice cream would be mine.
JE: Who would you invite to a dinner party; dead or alive, real or imaginary?
LS: Oh, wow. First, I would have to be in charge of the seating, and it would definitely be a round table. No more than 12 people. I think a round table and a small group are so important. It allows food to do what it does best, connect people. Who would be there? Ricardo, my husband would always be there. I would invite Michelle Obama, Naomi Campbell, and Gianni Versace, who was a good friend of mine in the 80's and 90’s.

CS: From MasterChef to culinary pioneer: What unexpected challenges did you face transitioning from reality TV star to a restaurateur, and how did they shape your culinary philosophy?
CTA: Wow! This is a great question. This is the first time I've been asked about my transition from reality TV to becoming a restaurateur, and it's a fascinating journey to share. It isn’t like most people think. The shift was a complete surprise; nothing on TV prepares you for the real challenges of running a restaurant. In Israel, transitioning from MasterChef to restaurant ownership is rare, and I was one of the few to make that leap. Starting my restaurant was a learning curve—everything from menu planning to managing food costs and training staff was new to me. I often questioned whether my approaches were professional or just innovative due to my lack of formal training. Every day brought new challenges but also, surprisingly, a lot of joy. It's a journey of constant learning and adapting, which I'm grateful for.
CS: Coco Bambino, Casablanca's Milk & Honey and Branja: Each concept seems distinct. What drives your desire for culinary exploration and how do you ensure each restaurant retains your unique "Tom Aviv" touch?
CTA: Exploring what defines Israeli cuisine fuels my creativity. Despite popular beliefs, traditional dishes like falafel and shakshuka originate from other cultures, reflecting Israel's diverse influences. Israel, a young melting pot, has crafted a unique culinary identity over time, one that's still evolving. In Miami, I aim to introduce a "new Israeli cuisine," reflective of contemporary Tel Aviv's culinary scene, pushing boundaries beyond traditional expectations. Each restaurant concept challenges me to redefine Israeli cuisine for my audience, blending innovation with tradition in a “kitchen in process” that continues to unfold.
CS: I understand that "Branja" translates to "circle of friends." How does this concept translate into the restaurant's atmosphere, menu, and overall dining experience?
CTA: Absolutely, 100% accurate. The concept of Branja indeed revolves around the idea of a gathering – a clique, a circle of acquaintances

that could span any aspect of life, be it culinary enthusiasts or simply friends. The notion of being a melting pot is central to our ethos here in the U.S., and it's something we embrace wholeheartedly. Recognizing that our clientele would be diverse, especially as we venture outside traditional comfort zones both geographically and culinarily, we aimed to create a space where everyone feels part of our 'branch.' Interestingly, 'Branja' is a play on an Israeli slang term for a group of friends, derived from the English word 'branch,' like that of a tree. However, we've also encountered humorous moments with our Miami crowd, particularly the Latin community, who might initially misinterpret the name, leading to engaging conversations and explanations about its significance.
Choosing 'Branja' was deliberate, symbolizing our invitation to everyone to join our circle. Whether you arrive in your finest attire or casual flip-flops, whether you come to sa-
vor our dishes or simply enjoy drinks and the vibe, you're welcome. Our establishment is designed to be inclusive, catering to a wide audience – Israelis, Americans, Latinos, women, children, families, and singles alike. It's a place that prides itself on being eclectic without trying to be all things to all people. Instead, our focus is on inclusivity and diversity, ensuring everyone can find something in our menu and ambiance that resonates with them. Once you step into Branja, you're part of our extended family, whether you like it or not. And that, to me, is something truly special.
CS: You've mentioned Miami's melting pot of cultures inspiring you. Can you elaborate on specific Miami influences that have made their way onto the Branja atmosphere?
CTA: When I approached the creation of the menu for Branja, it was crucial for me to first respect the city I was entering, especially given
Miami's rich melting pot culture. My process of menu creation always starts with my Israeli cuisine as the anchor. This is evident in the spices, fragrances, presentation styles, and ingredients that I use. However, I consciously blend these with local tastes and ingredients to honor and reflect the diverse community in Miami.
For example, I incorporated elements from Latin cuisine into our offerings, such as an empanada filled in an Arabic style, demonstrating a fusion between cultures right there on the plate. We also use Patagonian Yuka and attempt to 'Americanize' some dishes—not to simplify them for the audience but to draw inspiration from the local environment and make connections with the diners here.
Bringing my dishes from Israel was important, but adapting them to suit the local ingredients was equally crucial. A prime example is my

fish in bread dish, which I've adapted in each country I've worked in by changing the type of fish and bread used, according to what's locally available and appreciated. This adaptation is a testament to the importance of being sensitive to the local palate while still bringing my unique culinary background into the mix.
Before officially setting up Branja's kitchen, I rented a space in Miami to start experimenting with local ingredients. This hands-on experience was vital for me to ensure that my menu was genuinely reflective of Miami's culinary scene and not just an imposition of my Israeli roots onto a new landscape. I actively sought feedback from locals, allowing their tastes and preferences to influence the menu. This iterative process has led to many changes over the year, adjusting dishes to become more approachable and resonant with our Miami clientele.
I like to think of myself as a bit of a rebel in the kitchen, preferring to do things my way. However, I admit that the feedback from our patrons significantly influences the final outcome. It's about finding the right balance between maintaining my culinary identity and
adapting to fit the local tastes, whether it's adjusting the spice levels, the music volume, or even the type of music we play. Branja, in Miami, is a reflection of this balance—different from what I've created in Tel Aviv but equally special and unique, a true representation of its environment.
CS: Shifting gears a bit towards local sourcing - it's obviously beneficial in numerous ways, but could you elaborate on your philosophy regarding adapting your recipes not just to the local culture and populace but also to the economic and business landscapes? How does that integration play out for you?
CTA: Absolutely, everything is interconnected. This extends deeply into the economy, starting with sourcing and supply chains. Specifically, in the realm of Israeli cuisine, which I often revert to, there's a heavy reliance on vegetables, fruits, and fresh ingredients rather than pre-processed goods. When I began, I noticed many restaurants opt for pre-cut vegetables because it's more cost-effective and simpler, typically sourcing these from abroad. However, this approach doesn't align with my culinary style.
While I respect those who find it efficient, it's not suitable for the integrity of my dishes. For instance, finding the perfect tomato for my salad is crucial; if it doesn't meet my standards, it's off the menu. This pursuit of quality often led me to focus more on identifying the right suppliers than on recipe development.
The emphasis on aesthetics and size over flavor in the U.S. market is notable, leading to produce that looks appealing but lacks taste. I prefer 'ugly' vegetables; they're often more flavorful. Adhering to this philosophy made sourcing challenging, especially from an economic standpoint. Surprisingly, obtaining tomatoes from a local farm just 45 minutes away can be more complex and expensive than sourcing from a large distributor with unclear origins. This dilemma raises the question of whether to conform to the norm or strive for better quality, even if it's not the most financially prudent choice.
Despite these challenges, I remain committed to my principles, favoring local and tastier options even if it means higher costs. I've noticed a gradual improvement in the U.S. regarding appreciation for quality ingredients, but it remains a struggle. The reliance on international

sourcing is significant, yet I believe in supporting local American farmers to strengthen our economy rather than others'. While I may pay more for locally sourced produce, the personal connection to the growers and the quality of the ingredients justify the expense. It's about staying true to the values of the community I'm a part of, and that's a choice I'm proud to make.
CS: As a self-taught chef, what advice would you give aspiring cooks who might not have formal training but possess boundless passion?
CTA: Absolutely, My journey wasn't through traditional culinary schools but fueled by passion, grit, and a bit of rebellion. Cooking is more than just mastering recipes or techniques; it's about the love of feeding people, the art of hosting, and the joy of making others happy with a meal.
For those aspiring to become a chef, the culinary world demands understanding. It's one thing to cook passionately at home and another to endure the pace and pressure of a professional kitchen. My advice? Dive in. Experience the chaos and adrenaline of a restaurant kitchen before investing in culinary school. This could help you discover if this path is for you, as there's a huge world for passionate cooks outside of running a restaurant.
If you find your place in the heat and pressure, then you're ready to commit. Professional cooking is about consistency and perfection, even if it means making the same dish every day for years. It's a grind but fulfilling if you love making people happy through food.
My suggestion is to work in the industry first. If you truly love it, commit. Study, not just through traditional means but also through books, tutorials, and online classes. Work un-

der chefs you admire and absorb everything. There are no shortcuts in this profession. I was fortunate to have support, but I also worked hard and learned from every mistake.
To those stepping into this world, be prepared for both the highs and the lows. If you choose this path, aim to be the best. Mediocrity has no place in a kitchen. The journey is demanding but incredibly rewarding. I would welcome you to the wonderful, crazy world of cooking.
CS: This coming week, you will be at SOBEWFF 2024, participating in the Fontainebleau Miami Beach Wine Spectacular Best of the Best event. What can you tell us about that event? What are you personally most looking forward to at SOBE this year?
CTA: Yes, indeed. This marks my third time participating in SOBEWFF. Last year, due to last-minute arrangements and our brand's opening activities, we hosted a smaller event. However, two years ago, I was part of the same "Best of the Best" event at Fontainebleau that I'm attending this year. Interestingly, back then, I presented a dish without having an actual restaurant. We brought our brand and concept, but our restaurant hadn't opened yet. It was a pivotal moment in the creation of our menu. One of the dishes, which still features on our menu, was introduced to the audience before we had a physical location. Attendees were intrigued about where to find us, and I had to explain we were not open yet.
Returning to Fontainebleau now, with a dish and a restaurant, feels significantly different and exciting. I thoroughly enjoyed the event last time, meeting other chefs and discussing potential collaborations, though nothing concrete emerged since we didn't have a venue for follow-ups. Now, equipped with our restaurant, I'm eager to see how this changes the experience. I anticipate it being distinctively enriching, reflecting on the journey from the initial concept to running a successful restaurant.
What excites me most is the opportunity to possibly reconnect with individuals who have dined with us, or meet chefs who have already visited. Previously, many didn't know who I was or what I specialized in; they simply enjoyed the dish. This time, representing

This event, titled "Best of the Best," truly lives up to its name, surrounding you with top-tier talent. I'm humbled and honored to be considered among such esteemed company. It's not just about personal recognition but about celebrating the collective excellence and dedication in our field.

Ultimately, for me, the essence of being a chef transcends monetary success. It's about making people happy, offering them a memorable experience that brightens their day. Yes, the financial aspect is important, but the joy and satisfaction of our guests are paramount.

CS: For our final question—I'm curious. You've achieved so much, having opened various restaurants in different regions, each with its own unique flavors and ambiance; last year, you were awarded Miami's "Best New Restaurant.” Considering everything you've done is an amalgamation of global cuisine, are there any flavors or regions you're still eager to explore? Or any future restaurant concepts you envision on the horizon?
CTA: Yes, absolutely. I have two responses to that. Firstly, India holds a special place for me as one of the most fascinating cuisines in the world. During my season on MasterChef, I struggled a lot with curry—it was a continuous challenge. Eventually, I won my season with a curry dish in the finale. Since then, I haven't really delved into Indian cuisine again. I love to eat it, but I genuinely want to dive deeper into it one day, which I believe will involve traveling
to India and working in local kitchens. And I will do it. When I tell people I plan to explore and work in restaurants in India, they sometimes think it's because I'm getting too old for new adventures. But I don't believe one can ever be too old to explore and learn.
Secondly, on a more basic level, I'm always working on concepts—not necessarily something specific but rather brainstorming ideas and creating opportunities. I believe in staying ready for opportunities rather than having to get ready each time. Currently, I'm exploring French cuisine, which I've always avoided, thinking it was too complicated or too heavy with butter. But I think I was actually afraid of it. Now, I'm working on combining the rich heritage of French cuisine with the vibrant, innovative spirit of Israeli cuisine, trying to merge them together. It's very interesting, and I believe French-Israeli cuisine could be a dream worth turning into reality.

Carece Slaughter, Resident Magazine: Chef Zimmern, your culinary journey is unique and inspiring. Can you share the moment or experience that ignited your passion for exploring diverse cultures through food?
Chef Andrew Zimmern:. For me, I don't think there's one thing that you can point to and say yes, that is when it happened. I think people who pick one incident are forgetting that it's actually the sum of experiences that led up to that moment. I describe it more like Jenga: that one piece is taken away, and all the others begin to topple, and you must find a new way of thinking about everything. For me, it was a combination of things. I think about growing up on Long Island in New York in the '60s and seeing the transformation from one way of life to another. As a young boy, I watched Bayman pull long boats from the dunes at five in the morning with my mother and head out to sea to pull nets for fish. By 1970, that way of life
was gone and erased. And I remember being with my father in Europe as a young man, 10 to 11 years old, in the early 70s, and eating in certain restaurants and certain styles of food; my father explaining to me that this way of life was going to be eradicated because of rules and regulations and modernization of life. In both cases, I'm not arguing for a return to the horse and buggy days. But we must recognize when we have hinge events or disappearing cultural totems that we need to mark, understand, and learn from them before they're entirely erased. It was those types of experiences as a young man that ignited that passion, and I loved food. I always thought that food was the way into so many issues. I didn't know at the time that food explained not just hunger and waste but homelessness and mental health issues, national security and international security, economic development and climate crisis, immigration reform and health care and criminal justice. It all can be seen through the lens of food.
CS: Reflecting on your time with 'Bizarre Foods,' what was the most unexpected lesson you learned about cultural acceptance and tolerance through the lens of food?
AZ: Oh my gosh, take a look at any episode and pick a story. Probably the most unexpected one was in Botswana. When a tribal people that I was living with were going to set some snap snares for birds, they wove a rope using their feet. The whole tribe sat shoulder to shoulder using their toes like a loom in their fingers, making string, a dozen pieces, for us to create snap snares. We set them, and then we returned to retrieve them a day later. Wanting to be helpful, I pulled my knife out. The way to fit in with any other group of people is to be helpful to show your usefulness. So, I took my knife out to cut the snares, and I mean, the four or five tribal members I was with just recoiled in horror. It was a very embarrassing moment. They don't cut rope or string. I have one ball of string

in my house, and it sits in a drawer. We use it once a year to tie the Christmas tree to the top of the station wagon and drive from the Tree lot to the house. But these people keep reusing this string until it turns to dust and can no longer be used. They were so appalled. I had done an excellent job impressing them for a week and a half. Up to that point, I was so proud of my behavior, but in just an instant I erased it all because I wanted to cut the rope. That has become a metaphor in my life. I can mark my life in many ways, but one of the ways I mark it is before and after that incident, which changed my way of thinking about everything.
CS: How has your food and cooking philosophy evolved over the years, especially considering your extensive travel and exposure to many culinary traditions?
AZ: My philosophy of food and cooking has evolved over the years. Obviously, I'm much more of a globalist because of my travel and exposure to so many culinary traditions. And I stopped valuing one way of cooking over another. Food is food as food, whether it's a three star Michelin restaurant in Paris, a jungle market in the Philippines, a dusty side street in the back alley of an overcrowded city in southern Africa, or eating in a home in South America.
CS: You’ve been a vocal advocate for social justice. How do you navigate the intersection of food and politics in your work, and what role do you see chefs playing in promoting social justice and positive change?
AZ: Yes, I am. I navigate the intersection of food and politics through my work, and I use my work to illustrate the problems in our civic and political lives. I think chefs are uniquely placed to do so because if you are a chef and are halfway awake, you sit at the intersection of healthcare and criminal justice of gender equality and pay equality of immigration, hunger waste… So many pillars of our social justice system that need fixing walk through our restaurant every single day. It's pretty extraordinary. And I believe that we need more chefs doing more to affect more change.
CS: In 'What’s Eating America,' you delve into many critical issues facing the U.S. What was the most surprising discovery you made while filming this series?
Well, the most surprising discovery was that I was a much better journalist than I thought I was. I felt I was ill-prepared to do that show. And it turned out I'm a very good journalist. And I'd like to do more in that area. Within the series itself, before climate crisis, I knew we had species of animals, varietals of fruits and vegetables that were simply gone. I wasn't aware of how close the problem was to my home until I visited Apalachicola, Florida and saw that there were no more oysters in what used to be the most productive oyster bed in the world, all due to the climate crisis. Even closer to home, in Minnesota, there are no more perch in Lake Superior. The warming water has caused the little baby perch to not be able to exist anymore, and they are either eaten by predators or are competing with other fish for food. Because of the fish being born on a lunar cycle, which is not affected by the- climate crisis, there are simply no more perch left. This is shocking because the perch was a part of the Friday night fish fries in the Midwest for hundreds of years. It is sad to see an entire cultural way of life disappear because of the disappearance of the perch from the US side of the Great Lake."
CS: Your show 'Family Dinner' on the Magnolia Network explores the dynamics of family meals. What do you believe is the most important aspect of a family gathering around food?
AZ: I think the most important aspect is simply doing it. We don't do it anymore. We are not just so many people who can't afford to do it. They are they're financially impoverished, and so many more are time poor. There simply is no Oh, are they believed to be no time to congregate,
I think the gathering is a family. And learning from one another, discussing what's going on in the world, exploring our days together talking about what's personal with us. If we're not doing with our family, then we become trapped. We, we become silos to ourselves, you throw in social media, you throw and look how everyone's just attached to their phone. We become individuals, we don't, and we cease to become family units. And that is extremely dangerous for our way of life, but it's even more dangerous for our mental health. And I think that mental health issues, people point to phones and social

media and COVID, and all these other things as the reason for the spikes in mental health, illnesses, poverty and homelessness. But I would argue, anecdotally, that it's because we're not connecting with other people. And the best place to do that is in the place where you live under your own roof. Gathering with whatever family you define for yourselves, it could be biological or nonbiological, is extremely important. Some of the healthiest human beings, in many ways, that I've seen are, were the were the men and women of the firehouses, and who, in whose buildings, I've had meals, because they, they live and work together, but they sit down to eat several meals a day together, and exchange. They have social time, they exchange ideas, and they feel connected, and they export that back into their biological families, those that have them. I think time poverty and the destruction of the family system is a malignant curse.
CS: As the head of Intuitive Content, what are some of the biggest challenges you face in creating engaging and meaningful foodrelated television content?
AZ: As the head of intuitive content, what are some of the biggest challenges you face in creating engaging and meaningful food related television content? Well, to be honest with you, I think it's a pretty technical dry reason. And it's it's the fact there are a lot of people trying to do it. I believe that intuitive content does it. As well, if not better than almost anyone out there. I think we've assembled some of the most incredible talent that I've ever come across in creating great content. And yet, at the same time, circumstance COVID, for example, the multiple strikes in Hollywood that also helped to fuel a buyers recession, the, you know, a network feeling that they'd rather go with something sports related than something that's, you know, in a silo that we've created, is, you know, those those things are the things that stand in our way, which is just the normal give and take of competition, you have to accept it. I think I should also point out that intuitive content, food related television is, while we do it, and we do that, in my opinion, better than anyone I know I'm very proud of our work. Is, is actually the one of the smaller silos of what we do.

We've grown over the last 10 years. That being said, our biggest project that we've done to date is a multi our natural history doc series that appears on PBS premieres June 19. It's called Hope in the water. And while it does touch food it is its its themes are essentially how do we protect our oceans while at the same time producing out of them? And I'm very proud of that. And thanks for letting me have this time with you.
CS: In the Post-Pandemic world, some experts feel that the future of the food and restaurant industry is still being determined. What are your biggest concerns and hopes for the culinary landscape in the coming years?
AZ: That it survives! We have a climate crisis that is existential for our food system, and I see a future 30 years from now where restaurants are simply enclaves for the rich and famous and everyday folks are priced out of even the humblest of eateries because dining out has become an unsustainable system.
CS: With Passport Hospitality, you’re shaping food service and restaurant development. What trends or innovations are you most excited about in the restaurant industry today?
The solutions to the problem above. Embracing sustainable systems and investments in carbon sequestration, aquaculture, and other innovations can assist companies that lean into solutions-minded restaurants, co-op restaurants, narrowly focused restaurants with small footprints and limited hours, niche client focus on restaurants and catering, all of that is very cool to me.
CS: You're involved in several philanthropic endeavors. Can you tell us about these projects? What are you most passionate about currently, and why?
AZ: I am on the boards or represent in some major capacity the UNWFP, The EWG, the Nature Conservancy, The Charlize Theron Africa Outreach Project, Services for the Underserved, Wholesome Wave, World Central Kitchen, the Coalition for Sustainable Aquaculture and The Giving Kitchen. I spend most of my time working in the nonprofit space.
At the UNWFP, I am thrilled about our pilot programs in Zambian schools that allow students to grow and eat their own food. The curriculum grows around it, and the country can be transformed through these programs, bringing massive stability to the whole region. On the flip side with the EWG, we just got a bill passed in California that will make it illegal to add cancerous chemicals to kids' candy and treats. Because CA is the world’s 6th biggest economy, the companies will be changing all products brought into or made in the USA, that’s a massive win. And with the CSA, we are piloting legislation to enforce rules and regs around off shore fish farming to make investment and production more attainable. David E Kelly and I are executive producing Hope in the Water, a docuseries premiering June 19th on PBS that provides solutions for how we can work to produce and simultaneously protect our oceans at the same time. That’s just to name a few.
CS: Looking back at your illustrious career, what do you consider your most outstanding achievement, and what future goals or projects are you most excited about?
AZ: Well, doing more to help people is all I want to do. Sounds cheesy, but it makes me happy and is more of a legacy than awards or money, that’s for sure. I think my relationship with my son is my proudest achievement. And I guess selfishly, I want to tell more stories in a whole range of media to positively affect outcomes for people and entertain. I don’t see those as being mutually exclusive.

Australian Chef Mitchell Hesse is adept, adaptable, and passionate about the customer experience. He began his culinary career in his hometown of Perth, Australia, helping his grandmother bake from a very young age. As a teenager, he apprenticed in professional kitchens, gaining invaluable on-the-job training and a formal degree. In his mid-20s, Hesse moved to London, England for a career-making job at Zuma, where he worked for two years before moving to the Miami and New York locations, eventually becoming senior sous chef for the group in Miami.
An interest in Asian cooking led Hesse to another lauded export from London, Novikov. He worked as the restaurant’s head chef from 2018 through 2020, at which time he landed as chef cuisine at the newly opened Cote Miami, the Michelin-starred Korean steakhouse from New York City.
Immediately following the pandemic, Hesse made his ultimate move and joined famed Miami-based hospitality group, Mr. Hospitality. Helmed by industry pioneer, Mathieu Massa, Mr. Hospitality conceptualizes, owns, and operates acclaimed restaurants and fivestar nightlife destinations in Miami, including prized venues –Queen Miami Beach, Marion, and El Tucán.

Resident Magazine: Can you share a bit about your culinary background and how you developed your skills to become the executive chef at Queen?
Chef Mitchell Hesse: I’ve been in the culinary industry since I was 16, starting in Australia. At age 26, I moved to London, where I started working for the Zuma group. I spent the next 6 years traveling between Zuma, London, Miami and NYC. From there, I helmed the kitchen of many Miami high-end restaurants, including Esitiatorio Milos, Novikov and Cote Miami, before being offered the Exec Chef role at Queen. I believe my global experience and working at many of these high-end volume restaurants really gave me the foundations to create a culinary program and lead a team of over 35 staff here at Queen.
RM: How would you describe the cuisine and culinary focus of the menu you’ve created at Queen?
CMH: Queen’s culinary focus is a modern Japanese grill. We looked at the classic Ameri-
can Steakhouse and reinterpreted the menu through a Japanese lens. All of our dishes take into mind the modern diet and we really wanted to make our female clientele feel that they could enjoy everything. The menu is designed to be shared family style with guests working their way through small plate’s, sushi, land, sea and with the star of the show in our Butchers Reserve where the guests can choose from USDA Prime, our personal Dry Aged cuts or for something more special Japanese Wagyu or Kobe. To finish was a very cosmopolitan dessert selection that shouldn’t be missed.
RM: How do you prioritize the guest experience at Queen, and what steps do you take to ensure customer satisfaction?
CMH: To ensure all guests at Queen have an amazing experience, everyday our team sits down before opening to go over the guests for the night. We take notes on each guest and make sure to pay extra attention to the details of those tables whether it’s making sure the staff celebrates their event with them or curating a particular dish to avoid the allergy so they can
dine in peace of mind and enjoy the festivities with the rest of their party.
RM: Can you share an example of a dish or menu creation at Queen that you felt particularly passionate about, and what inspired it?
CMH: I feel very passionate about the whole menu here at Queen, It's impossible to pick one dish. If I had to pick, the Duck L’Orange with orange miso and pickled apples, Avocado Tarte fine with truffle Aioli, Jalapeno and Lime caviar, and Lamb chops with Chipotle miso, whipped tofu and pickled cucumber are three of my favorite dishes. These were the first 3 dishes I created for the menu at Queen. They all have a little influence of my previous experiences from around the globe and have been here since the beginning. I truly believe Queen’s butcher reserve is the best in the city as we taste our steak program every day. The Robata grilled Omi Japanese Wagyu Filet is something truly unique encompassing an exquisite flavor profile and extreme tenderness.

Resident Magazine: Can you share a bit about your culinary background and how you developed your skills to become the executive chef of Queen Omakase?
Chef Max Kamakura: I started my career at 15 years old in my family’s restaurant. I come from a family of sushi chefs, and over the last 22 years, I have worked with many old-school sushi chefs, deeply learning the traditional culture. I’ve also incorporated various techniques and ingredients from my experiences in different countries and regions.
RM: How does your third-generation culinary background influence the menu creation and dining experience at Queen Omakase?
CMK: My third-generation culinary background greatly influences the menu creation and dining experience at Queen Omakase. I enjoy bringing recipes from my childhood and adapting them to the current menu. These recipes were passed down from my mother, grandmother, and great-grandmother, all originating from the influences from when my Japanese family used to get together on weekends.
RM: Queen Omakase’s menu rotates every 3 weeks. How do you go about creating a new menu every so often? What factors do you consider?
CMK: Creating a new menu every three weeks involves studying new recipes, techniques, and ingredients. Research is a key part of my routine, making the process of menu creation more enjoyable. The influences for the new menus come from global trends, the availability of fresh fish, or even rediscovering very old recipes.
RM: What’s unique about Queen Omakase that separates it from other omakase restaurants?
CMK: What makes Queen Omakase unique is the ability to offer clients a fun way to delve deeper into Japanese stories, methods, and techniques. The dining experience is complemented by relaxed conversations and engages all the senses with a touch of art and music.
RM: Can you share an example of a dish or menu creation that you felt particularly passionate about, and what inspired it?
CMK: One menu creation that I felt particularly passionate about was inspired by my daughter. She wanted me to take her to watch the Barbie Movie, and made me go to the movies dressed all in pink. This inspired me to prepare a pink powder from dehydrated beetroot, which, when added to the sauce, turns the entire dish pink.

Miami, the vibrant heart of art and culture, hosted Miami Fashion Week 2024 from January 24th to January 28th at the Gary Nader Art Centre. This muchanticipated event united industry leaders and fashion enthusiasts to celebrate a melting pot of fashion and diversity. The event began with a press conference along with a lunch at Kiki on the River. It ended with a dynamic panel discussion that explored the influence of sustainability on fashion. In between was a week of fashion shows presented by an outstanding lineup of designers, including special guest Karl Kani, making this edition of MIAFW genuinely unforgettable.

Karl Kani kicked off the week and set the tone for this fashion extravaganza through his streetwear designs and hip-hop image. This was a historic collaboration as Karl Kani took center stage in Miami for the first time while being the first streetwear designer ever showcased by MIAFW. His experience dressing iconic legends like Notorious B.I.G., Diddy, and Tupac translated during his presentation at the Elser Hotel. He ensured not to disappoint as his collection included bold designs that reflected his iconic status in urban fashion.
The week continued as we were captivated by collections presented by Yas González and Ágatha Ruiz de la Prada. González’s collection transformed architecture into wearable art as she captured her Cuban-American roots in every piece. On her personal Instagram @yasgonzalezofficial dedicated her runway to her mother as she proudly represented her love for her culture. Ágatha Ruiz de la Prada did not hold back as her collection showcased her signature style, flooding the stage with vibrant colors and joyful energy. Model Bella Barbosa, who had the pleasure of walking in both of these shows, gave us some insight about her experience:
“It was my first time walking in Miami Fashion Week, and the vibrant atmosphere created an unforgettable experience. From being backstage to strutting down the runway, the energy was electrifying. Julianne Michelle, Founder of Mommy’s Heart: I founded Mommy’s Heart after recognizing a vital need during my prolonged journey through the Family Court system. My aim is to offer other families the support and resources to which I never had access.
CS: How has your background in acting influenced your approach to leading a nonprofit organization like Mommy's Heart?
JM: Having been an actress since a young age, I was afforded unique opportunities to champion important causes. I’ve always loved serving my community, and I never foresaw running my own non-profit one day. I've also nurtured meaningful relationships throughout my career that have been instrumental in garnering support and momentum for our cause. We have many high-profile celebrities and in-
dustry leaders on our board and on our event host committees who have helped us raise awareness.
CS: Mommy's Heart has made significant impacts since its inception. Could you highlight some of the key achievements or milestones that you're particularly proud of?
JM: Mommy's Heart has accomplished some wonderful achievements this year, and fundraising is critical to supporting our efforts. We onboarded our first full-time licensed attorney, who is managing several parents' cases with the help of our talented law school students. We are assisting 13 parents with their legal needs in various states, including New York, California, Ohio, and Florida. Mommy's Heart also drafted legislation that will make it more difficult for abusers to weaponize the system against their victims. Our proposed legislation was introduced by NYS Assembly Member Rebecca Seawright to the Judiciary Committee in Albany, and you can read the provisions of Bill A08361 on the State Assembly site: nyassembly.gov.

The evening will include a seated dinner for approx. 30 esteemed guests (6 pm-8 pm) at $1000 per person, special guest speakers and VIPs, auctions, entertainment, and more.

JM: We haven’t made a significant difference in anyone’s life yet. We just started rolling out our legal and mental health services. We have saved parents tens of thousands of dollars on legal fees. We have facilitated reunification between

parent and child in one case. We are hoping to onboard local licensed attorney volunteers in New York, Ohio, California, and Florida, where we have our greatest demand.
CS: In what ways has your education at Columbia University contributed to your role as Executive Director of Mommy's Heart?
JM: I studied clinical social work at Columbia University and obtained my MSW and later my LMSW. It’s easy to neglect one’s mental health while facing the onslaught of the family court system. All you can think about is protecting your child, and the fear of losing your child can be debilitating. Being separated from your child or not knowing if your child is safe, healthy, or happy is a nightmare no parent should have to endure. My education and training experience while attending Columbia University School of Social Work taught me that if I want to effectively help others, I need to meet them where they’re at and not judge someone’s response to adverse events, as we all favor different coping styles, acknowledging that some may be more healthy than others. Coupling my education with my own personal life experience, I learned that while validating one’s feelings and experiences is very important, the emphasis should remain on looking forward and finding ways to create positive change. The family court retraumatizes abuse survivors and exploits innocent children for monetary gain. It has absolutely no regard for families. This is why we offer mental health services at Mommy’s Heart. We appreciate that our legal services are in the highest demand, but we also understand that families need nurturing, compassion, and plenty of emotional support to remain steadfast on their journey with warrior strength and will.
CS: Are there any specific challenges you've faced while running Mommy's Heart, and how have you overcome them?
JM: Addressing the growing demand for services is our main challenge while continuing to fundraise so that we can expand our services to meet the huge need. Putting one foot in front of the other and crossing off items on my to-do list each day helps our foundation move toward progress.
CS: Looking towards the future, what are your aspirations for Mommy's Heart? Are there any new projects or initiatives we can look forward to?
JM: Our goal is to be able to offer free legal representation in every state so that no parent ever has to fear reporting abuse again. I’d also like to provide free supervised visitation services to parents who are wrongfully court-mandated to see their children under supervision. These parents have no history of criminality, drug abuse, or violence, yet for unknown reasons, they are prohibited from seeing their children unless they pay per hour for someone to supervise them when with their children. Many parents cannot afford to pay for supervision, and because of this, many parents are forced to go months, even years, without any contact with their children. I’d like to recruit volunteer LCSWs and LMSWs who can facilitate supervised visitation at no cost to these parents to avoid unnecessary separation of parent and child.

JM: Mommy's Heart, Inc. is the only charity of its kind offering these aforementioned services to parents and children suffering from legal and financial retaliation by their abusers in the court system. There is a GREAT and growing need that has not been met. Mommy’s Heart aims to help all parents who are unable to receive help elsewhere due to the complex nature of their cases and the inability to find other agencies willing or able to invest the time and resources needed to advocate for their rights.

THE BLACK ARTS MOVEMENT ILLUMINATED AT THE BROOKLYN MUSEUM AND HARLEM FINE ARTS EXHIBIT

Currently on display from Febuary 10th to July 7th is Giants: Art from the Dean Collection of Swizz Beatz and Alicia Keys. This premiere exhibition offers a curated glimpse into the couple's extensive art collection and brings together nearly forty “giants” in Black diasporic art. “The collection started not just because we’re art lovers, but also because there’s not enough people of color collecting artists of color,” Swizz told Cultured magazine in 2018.
Born and raised in New York, the couple have been making music for decades and have cultivated diverse passions across music, art, and culture. For over two decades, the Deans have directed their art collection efforts toward supporting living artists, Including Nina Chanel Abney, Derrick Adams, Jordan Casteel, Barkley L. Hendricks, and Esther Mahlangu. The exhibition also offers twelve images by genius street photographer Jamal Shabazz, whose images honor everyday people navigating the streets of New York City from the 1980s to the present.
In tribute to revered older artists, the "On the Shoulders of Giants" section showcases the work of individuals who have made an enduring impact on the world. The legacy of portrait and street photography finds representation in the works of Kwame Brathwaite, Malick Sidibé, and Gordon Parks, with the Deans possessing the most extensive private collection of Parks.
According to The Brooklyn Museum: The exhibition’s title, “Giants,” refers to several aspects of the Dean Collection: the renown of legendary artists, the impact of canon-expanding contemporary artists, and the monumental works by such creators as Derrick Adams, Arthur Jafa, and Meleko Mokgosi. The term also evokes the strong bonds between the Deans and the artists they support and among the artists themselves. Along with examining the links and legacies among multigenerational Black artists, the exhibition encourages “giant conversations” inspired by the works on view—critiquing society and celebrating Blackness. Harlem Fine Arts Show
Are you looking to start or grow your Black diasporic art collection? Check out the Harlem Fine Arts Show from February 23rd to Febuary 25th, where there will be over 50 artists on display. This traveling exhibition features contemporary paintings, sculpture, and photography, establishing itself as the most extensive touring African diaspora art show in the United States. This year's theme is a dynamic celebration centered on the power of creative arts in health and healing and will honor African Americans in medicine.
Artist Branden Allen (aka HOBO INK) shared this with Resident Magazine about his participation in the Harlem Fine Arts Show: “HFAS is an incredible platform for first-time and longtime art collectors, allowing the Black community to be recognized as must-see emerging artists. It is also a great wealth-building tool, teaching how to invest in our community via the platform of artistry and collecting. My collection for the show is inspired by American blackness and our history of existence”.

Jean Shafiroff, philanthropist, television host, and author of Successful Philanthropy: How to Make A Life By What You Give, hosted a luncheon at Café Boulud at The Brazilian Court Hotel in Palm Beach, FL in honor the Samuel Waxman Cancer Research Foundation.
The luncheon was attended by a group of guests and supporters of the work of the Foundation. Those in attendance included Jean Shafiroff, Martin Shafiroff, Ava Roosevelt, Lee Black, Harry Cooper, Bob Roberts, Camilla Webster, Kim Dryer, Meg McCartney, Alex Hamer, Pamela O'Connor, Anka Palitz, CeCe Black, Rick Rose, Pamala Wright, Paola Rosenshein, Arnie Rosenshein, David Sweet and Christopher Twardy.
Jean Shafiroff spoke about the research work that the Samuel Waxman Cancer Research Foundation performs, “I am deeply moved by the incredible work the Waxman Foundation funds to discover new treatments for cancer. I am inspired by their Institute Without WallsTM program which requires scientists to work together to speed up the pace of research.” She also spoke about how Dr. Waxman treated and gave great advice to her father regarding his cancer who lived on until the age of 93.

FASHION FOR A CAUSE: THE 8TH ANNUAL BLUE JACKET FASHION SHOW CHAMPIONS PROSTATE CANCER AWARENESS

Held a week before NYFW, the 8th Annual Blue Jacket Fashion Show drew attention to prostate cancer awareness with a dazzling display of celebrity fashion and advocacy. The event, sponsored by Johnson & Johnson and benefiting ZERO Prostate Cancer, showcased the fashion industry's commitment to raising awareness and funds for prostate cancer research, early detection, and treatment.
The runway was graced by notable figures including Rodney Peete, Holly Robinson Peete, Billy Porter, Luis A. Miranda, Jr., and Young Paris, among others, each donning blue jackets by renowned designers to symbolize the fight against prostate cancer. The fashion credits were as diverse as the participants, featuring designs from Thom Browne, The Privilege, Arjona Collection, and many more, highlighting the fashion community's united front against this prevalent disease.

Prostate cancer, a leading cause of cancer death among American men, disproportionately affects people of color, with Black and Latino communities facing the highest risks. The Blue Jacket Fashion Show serves not only as a platform for fashion but also for education and dialogue, aiming to increase screenings and early detection rates within these high-risk communities.

HEARTBEATS AND HAUTE COUTURE: THE RED DRESS COLLECTION CONCERT IGNITES AMERICAN HEART MONTH WITH STARS AND STYLE

In a dazzling blend of fashion, music, and philanthropy, the American Heart Association's Red Dress Collection Concert, held at the Appel Room at Jazz at Lincoln Center in New York City, marked the beginning of American Heart Month with a star-studded lineup featuring Demi Lovato, Mickey Guyton, Sherri Shepherd, and a host of other celebrities. This event, which is the Association's national marquee event for its Go Red for Women® movement, not only celebrated the progress towards health equity but also emphasized the importance of investing in women's heart health. The concert coincided with the Association's centennial celebration, underscoring a century of lifesaving service.
The evening was kickstarted by Sherri Shepherd, the Emmy Award-winning host who shared her personal connection with cardiovascular disease. She introduced Grammy-nominated country star Mickey Guyton, who captivated the audience with her performances and fashion choices. Demi Lovato, the headlining act, delivered a powerful performance in custom attire, highlighting the importance of heart health awareness alongside cardiac arrest survivor and NFL star Damar Hamlin.
Fashion played a pivotal role throughout the event, with celebrities donning red haute couture to symbolize the fight against cardiovascular disease, the leading cause of death among women. FROM RUSSIA TO A NEW LIFE IN NORWAY - HVALDIMIR SHOWS HE’S BORN TO BE WILD

Hvaldimir, the whale, escaped from the Russian Navy, and his future is being charted by the scientists and veterinarians at charity OneWhale in conjunction with the Norwegian government
For years, the headlines have read, “Nobody knows what to do with him,” but now hope is on the horizon for Hvaldimir. After years of uncertainty, his future is being charted by the Norwegians, along with the scientists and veterinarians of his non-profit, OneWhale.
It has been a long, uncertain path toward freedom. First, he had to escape. In April 2019, a beluga whale wearing a harness was first sighted by fishermen in northern Norway. He tugged at the local fisherman’s boat fenders to get their attention.
Once freed, everyone expected the whale to swim away, but the friendly creature instead swam to Hammerfest, Norway, where he was named Hvaldimir by locals. Arriving in Norway at the same time, American filmmaker Regina Crosby Haug began documenting the whale and investigating his mysterious past.
While filming, Crosby Haug realized Hvaldimir’s life was at risk. “Here was a beautiful, innocent soul who didn’t choose any of this.” She recalls. Soon after, she created OneWhale, a non-profit with the mission to protect Hvaldimir. Although OneWhale’s focus is on getting Hvaldimir back into the wild, other organizations have offered proposals to place Hvaldimir in captivity or leave him at risk.
Yet so many unanswered questions remained about this whale’s past. Was he really a mili-
tary whale or simply a therapy whale, as once reported? Many people laughed at the notion that Russia’s spying was a threat. However, in February of 2022, that changed, and the world looked on in shock as Russia invaded Ukraine. Other countries bordering Russia were suddenly on high alert, including Norway.
Within months, there were reports of dolphins being used in Russia’s war machine. And soon, undersea explosions crippled Nord Stream 1 & 2 gas pipelines. Could it have been by trained whales who mapped out the sea floor with cameras? Or even forced to plant the explosives?
Although Hvaldimir was free, he was not safe. He has been struck by propellors and boats, and in the Spring of 2023, Hvaldimir suddenly traveled hundreds of miles to Oslo, Norway’s capital. Experts theorized that he is now of mating age and actively searching for other whales. Hvaldimir soon became emaciated due to a lack of food in the industrial waters. Crosby Haug recalls, “Those months could have been a death sentence to Hvaldimir, but we reached out to Norway's Directorate of Fisheries and have been working on a solution ever since.”
The solution, backed by scientists, veterinarians, and NOAH, Norway’s largest animal rights organization, allows Hvaldimir to be relocated to the arctic islands off the coast of Norway, which is home to over 500 wild belugas.

Victoria Pine Vinje, a Norwegian Marine Biologist and Arctic whale scientist, explains, “Belugas are known for highly social and welcoming behavior, so Hvaldimir should have a good chance of integrating.”
Frank Bakke Jensen, the Director of The Fisheries Directorate, indicated that they are willing to allow Hvaldimir’s move to a wild pod. “I am open to the idea if OneWhale and its partners can secure the necessary permits and funds.” Says Jensen.
But time could be running out for Hvaldimir. He is currently living on the southwest coast of Norway, and the spring mating season is coming fast. Crosby Haug explains, “We’re doing everything possible to be ready, hoping that 2024 will be Hvaldimir’s year.”
