A Passion for Real Estate Law Christopher Combs, president of Combs Law Group, has a deep-seated commitment to his craft Christopher (Chris) Combs lives and breathes real estate law. After earning a bachelor’s degree in political science from Arizona State University, he studied at the University of Arizona James E. Rogers College of Law, where he penned articles for the Arizona Law Review, a student-run academic legal journal. Combs would go on a medley of different adventures postlaw school. And while each was different in its own right, they all focused on his passion for law. For instance, he was a captain in the United States Marine Corps’ Judge Advocate Division, “a distinction reserved for the few who have what it takes mentally, morally and physically,” according to Marines.com. In 1990, he established Combs Law Group, a boutique real estate law firm in the Biltmore neighborhood. Combs and his team of experienced real estate litigators and trusted transactional advisors offer premium legal representation to large companies, small businesses and individuals. From real estate and commercial disputes to disclosure issues to foreclosures and forfeitures and beyond, Combs Law Group specializes in it all. “Real estate law is fascinating to me, and it has so much history. For example, an “X” on a rock was deemed in early English law to be a signature to comply with the statute of frauds.” Combs continues, “Also, the law of adverse possession arose because the King of England wanted land to be used, so land had higher value with increased tax revenue.” When he isn’t in-office helping clients with their legal needs, Combs leans on his experience as a former Arizona Law Review member and writes. More specifically, he answers the public’s law- and real estate-related questions every Sunday in The Arizona Republic. If you miss his column, don’t fret. He has given lectures in Asia, Mexico and Canada and has represented foreign investors in the Valley from these countries. Apart from real estate law, Combs is an avid sports fan. Some of his favorite teams include the Phoenix Suns and Pittsburgh Pirates. Combs is a former member of the Pittsburgh Pirates minor league baseball organization, and while he served in the United States Marine Corps, he was on the All-Marine Corps basketball team.

Christy Whitman, New York Times bestselling author and certified law of attraction coach, helps people achieve greatness As a writer, energy healer and law of attraction coach, Christy Whitman is called to help people pursue their dreams. Born and raised in Scottsdale, Whitman earned a degree in organizational communication from Arizona State University

before moving to Chicago, where she worked in marketing for everything from Pepsi to pharmaceuticals. “By my mid-20s, I had accomplished most of what I’d learned was the standard of success, but I was unfulfilled,”

Pulse UP CLOSE Whitman says. “I felt confused, disconnected and dissatisfied. This hunger to experience something greater led me on a conscious spiritual quest.” With time, Whitman discovered meditation, energy work and the universal laws that govern manifestation. “I started to create success and abundance in my corporate job that was beyond my wildest imagination, simply by applying the principles of energy and attraction,” she says. And yet Whitman still felt she lacked passion and purpose in her corporate career, until the idea for her first book came to her while meditating. “For seven nights in a row, I woke up at 1:05 a.m. and began writing,” she says. Almost overnight, Whitman was a published author and began speaking at bookstores and other venues. When people started to approach her about staying in touch and asking her questions about their journey, Whitman’s interest was piqued. “This was over 20 years ago, and I had no idea about the then-fledgling field of life coaching, but it intrigued me,” she says. “I loved being a facilitator of transformation and how great it felt to help others achieve things they had been struggling with in life.” Through her practice, Whitman helps people gain an understanding of energy and manifestation, which can help one direct their creative power toward their goals. In 2007, Whitman took a leap and left her corporate career to work full time as an author, coach, speaker and energy healer. Since then, she’s written seven books; certified over 3,000 life coaches; married her husband, Frederic; had two children; and helped thousands of people realize their personal, professional and financial ambitions. Whitman wrote her second New York Times bestselling book, The Art of Having It All, specifically for women who won’t settle for anything less than their most fulfilling lives. “Nobody has the power to tell us we don’t deserve all that we want, nor can anyone define what ‘having it all’ is for any one of us,” she says. “We get to be inspired by what we want in each key area of our lives and move towards those desires and dreams.”

Believe and Achieve Whitman’s career journey also inspired her to address professional life and finances in her book Quantum Success, which instructs people on how to recognize and act in harmony with the infinite possibilities they hold. “When someone connects to their power by aligning with the energy of success, doors that used to appear shut open with ease.” One facet of this, Whitman says, is understanding that achievement can be effortless and joyful when fear and doubt stop obstructing one’s progress. “Success doesn’t have to be two steps forward and one step back. Lela Reynolds balances the responsibilities entrepreneurship while prioritizing mental health

After graduating from Arizona State University with a degree in communications, San Diego native Lela Reynolds began a fruitful career in the wine industry. She worked for a few California-based wineries before accepting a position in distribution at Breakthru Beverage Arizona. When 14- to 16-hour workdays became her new norm, her mental health began to show for it. “I woke up one day thinking, ‘I can’t do this anymore.’ The way I saw it was if I am going to work those crazy hours, I would rather work them for myself,” she says. Reynolds still logs long days. But, as the proud owner of three small businesses, she does it for herself now. She owns Cavaliere Couture, a line of equestrian-inspired athletic wear, and its sister company Couture-Ish, which prints quippy sayings on loungewear, wine glasses, and face masks. Her third business, Social Exchange Marketing, is a social media and marketing website design company specializing in the equine industry. As a highly decorated rider, Reynolds knows the equine industry well. It seemed like a no-brainer to bring her extensive knowledge of and passion for horses to two of her three businesses. “Horses bring so much joy to my life, and I’m lucky to have the connections with them that I do,” she says. Unlike before, Reynolds works hard to ensure her mental health does not fall to the wayside. Counting exercise as an essential release, the entrepreneur took up indoor cycling which she now teaches at Mountainside Fitness. Being a proponent of body positivity also helps Reynolds keep tabs on herself mentally. She turns to her social media (Instagram, @lelaalice) and blogging to talk candidly about self-worth and offer support to those who struggle with it. “For me, social media is all about being real,” she says. “I don’t use it to post the perfect; I use it to post the ugly moments, too. It is within those “ugly” moments that you encourage and help others to know that they are not alone.”

Liz Agboola’s move to Arizona resulted in a noteworthy career in public service

Nigeria-born, New York-raised Liz Agboola is a tell it like it is kind of gal. Honesty and transparency are her X-factors — and they come in handy in her various life roles, like mother and CEO. “As a single parent, I’m not afforded time in the day to offer superficial answers and explain the nuance of things. My daughter gets the honest, raw truth on everything, with lots of love and patience,” she says. “As a CEO, not much is different, and I feel our group appreciates transparency and honesty.” Since moving to the desert more than a decade ago, Agboola has made a name for herself in public service, specifically homelessness services and community mental health. With her family, she established Senior Placement Services (SPS), which provides housing resources for vulnerable veterans and homeless individuals unable to live independently due to long-term illnesses and medical conditions. “Working with family is…. Well, I am the youngest of five children, and I am the only girl, so you can just imagine,” she says. It wasn’t long after SPS’s debut that Agboola launched Moses Behavioral Care (MBC). MBC is a group of community-based mental health facilities that offer 24-hour, long-term care for the serious mental illness population in Arizona. “MBC’s efforts are motivated by our promise to uphold mental health as a critical part of overall wellness, including preventive services for all while offering integrated care and treatment for those who require assistance with activities of daily living,” Agboola says. From extinguishing fires to visiting clients at various hospitals and shelters to connecting with neighborhood leaders and nonprofits about their mental health needs, no one day looks the same for this CEO. Some days are certainly more exasperating than others. “Seeing significant changes in the lives of those we serve is worth getting out of bed in the morning,” Agboola says of her motivation. Her community work is another around-the-clock job. Agboola is involved in several local philanthropies, including St. Joseph’s Hospital and Medical Center, St. Joseph's Westgate Medical Center, and Valleywise Health Foundation, where she is a board member and program chair for the new Emerging Leaders mentorship program.

As the owner of Moxie Multisport, a triathlon training center and retail store, Blake Uptain maintains an intermix of sporty looks during the day and favors clean and monochromatic styles at night. “At work I try to sport the latest athleisurewear while representing Lululemon as an ambassador,” he says. One to test his limits and seek out fitness challenges, Uptain is always ready for whatever activity comes his way. His wardrobe essentials include fashionable sneakers, joggers, stylish yet sporty sweatshirts, trendy baseball caps, and lightweight jackets. “I follow a lot of men’s fashion on Instagram and pick and pull pieces from different sources to create the look that fits my style,” Uptain says. The entrepreneur favors brands like Ted Baker, Hugo Boss, Joe’s, and Creative Recreation. “I have always liked Ted Baker – I found it in early 2006 in Vegas and have been hooked on the brand’s pieces since,” he says. With a closet that resembles organized chaos, Uptain advises to always dress for yourself, be comfortable, and don’t be afraid to step out of your comfort zone.

What are your favorite trends? I try not to jump on a trend, more so I like to keep it classic and understated as I feel that never stops trending. What is your must-have fashion item? I think every guy should own his own tux. It’s like having a classic watch, it will never be a bad idea to rock it. What will we see you in on weekends? When we do go out for a dinner date or drinks, I wear a nice pair of denim, a Ted Baker jacket, and a crisp button-down.

Bohemian and edgy, with a hint of glam and play, define Valley native Kimberly Carson’s fashion sense. The holistic esthetician and owner of recently opened Colette Skin Studio draws style inspiration from the 1960s flair in France and coastal beach vibes in California. If given the chance, she would love to trade closets with Kate Moss for her vintage styles or Jeanne Dumas for her French influence. “My signature look is a flowy floral dress with Grecian sandals in summer and boots and a sweater in winter,” she says. “I’m a big fan of high-waisted jeans with a silk shirt as well.” A vintage lover at heart, Carson prefers to shop at small businesses including Vintage by Misty and Fashion by Robert Black. “My style icons are Catherine Deneuve and Brigitte Bardot in the ’60s,” she says. “They always seemed chic and alluring.” Carson’s career in the beauty industry inspires her to look polished and fashionable. Jewelry and complementing makeup are a vital part of that equation. Gold earrings, cuffs, cool bangles, and a red lip that can go from day to night are just some of the ways she completes a look. “I’m a dressy girl, my motto is ‘life is worth dressing up for,’” she says. What is your must-have item? A great bag. DeMellier makes beautiful ones as well as Saint Laurent A chunky gold necklace has also been a staple these days. What is your most prized possession? My grandmother’s fur. I don’t wear it often, but it reminds me of her. She loved fashion. That and my Gianvito Rossi lace high-heeled boots that are sexy and edgy. What are your favorite brands? Shop Doen from California, their dresses are romantic and special. Rouje has some sweet French dresses and sweaters and A.L.C just fits me perfectly. I also like Saint Laurent and Chloe.

Chris and Lori Harder Serial entrepreneurs

With their hands in 10 different companies from digital marketing to vegan snacks, Chris and Lori Harder have learned that communication is key. But when Chris first left corporate America to help Lori, a world fitness champion, build her brand, they didn’t think they’d make it six months. “It reached a boiling point. We had to sit down and ask each other how and when we wanted to be communicated with,” Chris says. “It didn’t matter then if what we said was true – it mattered that we said it in a way the other could receive.” After their fair share of both failures and wins – including full or partial ownership in eight companies worth over $1 million – Chris and Lori draw on their experiences to help others. On her podcast, Earn Your Happy, Lori shares inspirational stories to motivate women to take charge of their life and build a community, themes furthered in her bestselling book, A Tribe Called Bliss, and her rosé flavored seltzer company Lite Pink (www.litepink.com). Chris’ podcast, For The Love Of Money, embodies his belief that “when good people make good money, they can do great things.” A self-described dreamer and philanthropist, Chris also offers mastermind programs on chasing abundant lifestyles that allow people to make the world a better place. Though navigating a business relationship alongside a marriage of over 15 years has its ups and downs, the Harders, who recently relocated to the Valley from Los Angeles, wouldn’t change a thing. “Working with your partner is both a blessing and a curse – while building companies invites additional stressors, there’s nothing more exciting than chasing down a dream with your soulmate,” Chris says. “Working your tail off together and crawling into bed to chat about the wins is a blessing.” Lori adds, “There’s nothing better than building something together. At construction and design company Modern Nest, Brendan and Jillian Bader create beautiful homes for families across the Valley. The couple met at Cocopah Middle School and started dating while attending Arizona State University, where Brendan studied construction management and Jillian studied early childhood education. Determined to start a business, Brendan tapped into his passion for building by buying and refurbishing bankowned properties in the Valley. Style lover Jillian, a kindergarten teacher at the time, frequently chipped in with design ideas. After the couple lost their first daughter at birth in 2012, Jillian left her teaching career to spend more time helping Brendan with his growing business. “During a very difficult time, we realized the joy that working together brought into our lives,” Brendan says. “It quickly became evident how much better we were as a team. What blossomed was a sense of strength in our marriage and our business.” With time, Modern Nest (www. modernnesthomes.com) attracted a following for crafting timeless homes that balance comfort and quality construction with dramatic accents. But Brendan and Jillian noticed they often struggled to find the right home furnishings for their luxury spec homes and client remodeling projects. “In an effort to style our homes with pieces we truly love, we decided to jump into the retail space,” Jillian says. “Although developing a new business during a pandemic was terrifying, we felt in our hearts that this was what Scottsdale needed. Since opening our store, Market by Modern Nest, in Old Town in December, that’s exactly what we’ve heard from our customers – it’s the best compliment.” With a curated online retail store (www.marketbymodernnest.com) launching this year, the future looks bright for the Baders, who say their secret to success is patience. “Have grace for one another,” Jillian says. “There will be tons of opportunities to disagree but showing respect and love in times of conflict comes first.”

The dynamic duo behind Hustle PHX, Oye and Crys Waddell, are a perfectly matched pair. They’re also proof that great things can come from an unpleasant situation – the high school sweethearts met in summer school after failing geometry. “We have a rhythm and a flow,” says Crys, the artistic mind of the operation. “My creativity with his leadership and execution is the perfect recipe.” Oye discovered his passion for leadership and community development while growing up in inner-city Los Angeles, where he watched his friends become involved in drugs and gangs over time. Even as a teenager, he knew there must be a better way. “I believe some of the best natural entrepreneurs in the country are in underserved urban communities. They’re called hustlers – visionary risk-takers who have the God-given skills of an entrepreneur, but lack the resources needed to create sustainable businesses that benefit the broader community,” says Oye, who founded Hustle PHX (www.hustlephx.com) to equip these innovators with financial and intellectual capital. “We want to let the hustlers hustle – for the common good” Crys serves as Hustle PHX’s creative strategist. Among her favorite initiatives is the Hustler’s Game, a fundraiser game night that educates attendees about how economic disadvantages disproportionately affect people of color. This year, Oye and Crys look forward to growing Hustle PHX, bringing their programs to Tucson and expanding their loan fund. And, as always, they plan on working meaningful time together into their schedule – something that’s even more important with four children. “With everything going on in life, sometimes you can get lost,” Oye says. “Don’t assume that you’re getting quality time just because you’re working together.” Crys encourages couples in business together to draw on each person’s unique abilities. “We all have different characteristics, strengths and weaknesses. Patrick Sullivan Jr. and Ashley Leroux live by their company’s motto – it’s fun to feel good. “My dad battled chronic health challenges for nearly 30 years, and his poor health had a significant impact on me,” Patrick says. “As a kid, I was a goofball who told jokes and did skits to cheer up my family, especially my dad.” After learning that Pat Sr.’s ailments were due in large part to nutritional deficiencies, the father-and-son team founded Jigsaw Health (www.jigsawhealth.com) in 2005. The supplement company specializes in magnesium, a mineral that nearly 80% of the population is deficient in. “Our desire is the same today as it was 15 years ago – to help others find pieces to their health puzzle,” Patrick says. In 2019, the couple retired from their careers as professional musicians – they first met while playing in the band at Scottsdale Christian Academy – to focus on Jigsaw Health. Ashley’s official titles are director of sales and lyrical wizard, roles that allow her to build relationships while entertaining others. “I write various parodies and original songs for our fun advertising videos,” she says. “Whether it’s a #FunnyFriday song or a commercial script, using my creativity to bring a smile to someone’s face is my absolute dream job.” The company also caters to pickleball enthusiasts with the Jigsaw Pickleball Cocktail, an electrolyte drink for hydration and recovery. “The sport is fun, social and great exercise,” Ashley says. “Now, almost all of our business meetings are held on a pickleball court. We’re even working to build an indoor court at our headquarters by the end of the year.” In addition to creating and having fun together, Patrick and Ashley actively strive to embrace their differences in both business and life. “There’s a musical called, I Love You, You’re Perfect, Now Change,” Patrick says. “Ashley and I take a different approach – ‘I don’t need you to change, just let me poke fun at you.’”

Ed and Mary Purkiss

In December 2000, with three children under 10 and a successful call center to run, life looked much different for Ed and Mary Purkiss. “Life was good, and we had no plans to change course,” Ed says. But when Ed noticed a small lump in Mary’s breast, everything changed. After getting it checked out, Mary found out she had breast cancer and needed to schedule a mastectomy. Her cancer battle and the resulting healing and reconstruction process would go on for more than two years and include six total surgeries. “We sold our business at the time to focus on our young family and fighting the disease,” says Ed, who got used to spending hours in doctors’ offices. “Both adept in technology and business ownership, while sitting in all those offices we couldn’t help but notice how medical professionals hated dealing with anything that kept them from patient care.” Within a year, the Purkisses found themselves as paid consultants to radiation oncology practices, eventually handling their doctors’ technology and electronic medical records needs as well. By 2008, they launched Iron Medical Systems (www. iron-medical-systems.com), a cloud product that allows doctors to safely work anywhere from any device. “We first developed the Iron Cloud, an infrastructure for the radiation and medical oncology arena, but within a year we launched our Managed Medical Cloud, which allows large software providers and hospital groups to use our programs and services,” Ed says. Now running a global business, Ed and Mary – who is cancer free – continue to provide technology solutions for medical professionals. They recently founded SMS Gorilla (www. smsgorilla.com), which aims to demystify text message campaigns. “There could be no blessing more wonderful than to spend every minute of every day growing our future together – as lovers, partners, parents and friends,” Ed says. “Although our personality types are almost polar opposites, it is those very differences that we bring into our relationship as complementary strengths.” So Scottsdale! One of Valley’s biggest foodie events returns as Devour at Home

Since 2009, the Devour Culinary Classic, which has been honored by the New York Times as the Best Southwestern Culinary Festival, has brought together culinary and beverage leaders one weekend each year to shine a light on the tasty talent across the state and establish Arizona – Phoenix in particular – as a burgeoning foodie destination. “The restaurant industry, perhaps more than any other in the nation, has suffered the most significant sales and job losses since the COVID-19 pandemic began, especially chef-driven and independently owned eateries and bars,” says Kimber Lanning, CEO of Local First Arizona and founder of Devour. “So while we want to ensure we are within all WHO and CDC recommendations, and as such will not have a traditional multiday food festival as usual, we were determined to do something to support our community’s epicurean talent.” Enter Devour at Home. Through it, Valley residents will have the opportunity to enjoy Devour-level culinary creations on both Feb. 27 and 28 from the comfort of their dining rooms, or even their couches. “Each day will feature a refined roster of the Valley’s most sought-after restaurants offering a limited quantity, prix fixe menu,” says Lanning, noting the menus will be displayed on the Devour website in coming weeks. “Each order will include enough food for a party of four, with Devour’s signature wine glasses, warming instructions, chef bios, a beautifully designed 2021 Devour at Home placemat and a commemorative thermal tote.” Preorders for Devour at Home will be open through Feb. 19 at 5 p.m. Orders will be available for pick up at each restaurant on its participation date from 4 to 6 p.m. Once the weekend begins, Devour will host an interactive plating contest as well as ultra-VIP virtual experiences with participating chefs. Ukraine native Lana Nguyen’s creations are inspired by her desert home away from home

Growing up, Lana Nguyen’s parents encouraged her to take up art as a hobby. She’s since transitioned from preschool artwork to a successful career in a colorful mixed media style that reflects the vivid landscape of the Sonoran Desert. As a child, Nguyen often heard her parents say “You will never be bored if you have a hobby,” a credo that stuck with the Ukraine native. Nguyen’s hobby officially turned into a career path when she came to America at age 18 for an athletic scholarship to University of the Incarnate Word in San Antonio, Texas, where she double majored in interior design and art. After graduation, she worked as an interior designer but always gravitated to art in her free time. It was her move to Arizona, a place she enjoyed traveling to, that propelled her career forward. “I found myself in the heat and sunny desert deciding to start fresh, shifting my focus solely toward my own art and the local art community in Arizona,” she says. Nguyen has experimented in ceramics, sculpting, drawing and painting, but she found her true passion thanks to a 2014 Christmas gift of alcohol-based inks. “It became one of my favorite mediums in a heartbeat,” says the mixed media artist, who also creates in resin and acrylic. “There was absolutely no pressure in creating anything at that time, so I treated my new discovery as my new hobby and would spend all of my free time experimenting.” In recent years, she’s become known for her signature colorful collage style. No matter what she’s creating, though, Nguyen’s work is entirely based on her mindset and sense of peace. When the mood hits, Nguyen is exceptionally productive but when artist’s block takes hold, she steps back and lets her mind wander elsewhere, often turning to nature and her travels as inspiration. “There is always this fine line of being obsessed with the thing you love and working hard at it, and needing to stop to take care of yourself and allow more room for inspiration to come in.” Nguyen’s artwork has traversed the globe, landing in homes and commercial spaces as well as local stores. Locally, her larger scale works are showcased at Creative Gateways Gallery in Old Town Scottsdale. Her smaller scale, cactus-inspired pieces are available for purchase at Dandelion Home + Gift in Scottsdale, and For The People in Phoenix. Looking toward the future, Nguyen anticipates growing her blossoming art business. “In five years, I would love to continue spreading joy through my pieces by meeting new people and traveling to new places,” she says. “Perhaps, there will be a sign outside saying, ‘you will never be bored if you have a hobby.’” Learn more at www.lanartanddesign.com.

Something’s fishy at the Shops at Gainey Village…in the most delicious way possible. That’s because in late 2020, the fifth location of Lure Fish House opened in the Scottsdale center, marking its first in Arizona. The 6,300-square-foot seafood-centric lunch and dinner hot spot – which is bold and bright with modern decor, wood paneling and pops of ocean blue throughout – is owned by husbandand-wife team David and Patricia Cortina. “I grew up in Malibu, where surfing, fishing and enjoying fresh, local seafood was a way of life,” says David, an avid surfer and fisherman who first got his start in the restaurant business as a teen. “In 2010, we opened the first Lure in Camarillo, California, using our own family recipes and going so far as to design much of the space with our extended family.” The concept caught on and within a few years, the Cortinas opened sister locations in Santa Barbara, Ventura and Westlake Village, with a location in Los Angeles to open by year’s end.

“The vision for each location, especially our ambitious Scottsdale eatery, is to bring guests an upscale, elegant experience they might have at a fine dining seafood restaurant, but in a contemporary, airy, bustling setting for a fraction of the cost,” says David, noting the family has a home in the Valley, which led to the idea of opening a location in the area. The menu is led by chef Roberto Ucan, who got his start as a line cook at the first Lure in 2010 before honing his skills as a sous-chef at Mastro’s Ocean Club in Beverly Hills and as managing chef at Avra Beverly Hills. Ucan returned to the Lure in 2019, first as managing chef in Santa Barbara and now as the corporate chef for the growing brand. According to Ucan, one of the secrets to the restaurant’s success is its use of a la plancha (a flat griddle most often used in Spanish and Mexican cuisines) versus a traditional grill to cook fish, which makes for far juicier results. The succulence is especially noticeable with the wild gulf shrimp ($24), wild pacific rockfish ($18), wild pacific sea bass ($28) and wild Alaskan halibut ($31) entrees. The copious side dish options – from pineapple coleslaw, almond pesto cauliflower and cilantro corn salad to sweet potato fries, local sauteed Brussels sprouts and parmesan potato cake – are also regular patron pleasers. “Beyond all of this, we also offer a bevy of bowls and our take on fish and chips as well as seafood pastas, ceviche, fish tacos, chowders, a full menu of desserts and a great cocktail program with mojitos, margaritas, beer, wine and more,” David says. IT RUMS IN THE FAMILY Spiribam brings a unique taste of the Caribbean to America

In 1887, Homère Clément founded Rhum Clément, a coveted rum native to Martinique. “Homère was a brandy enthusiast who took inspiration from the distillers of the great Armagnac’s of southwestern France to perfect his method of rum production, known today as Rhum Agricole,” says Benjamin Jones, Clément’s great-nephew,. Inspired by his great-uncle, Jones launched Spiribam in 2017 with the mission of bringing boutique, fine Caribbean rums to the United States. Since its debut, Spiribam has grown its portfolio to feature award-winning rums from across Martinique, St. Lucia and Mauritius. Of course, one of those rums is Rhum Clément. “Today, our Clément brand crafts a variety of white and aged Rhum Agricole as well as a range of liqueurs, the most popular being Creole Shrubb, which is a blend of white and agricole rums distilled with macerated Creole spices and sun-bleached bitter orange peels that bursts with aromatics,” Jones says. Beyond the famed Clément offerings, Spiribam also represents Chairman’s Reserve, Admiral Rodney and Bounty Rum – all from St. Lucia – Rhum J.M from Martinique, and Beach House and Arcane from Mauritius. Chairman’s Reserve, soft and well-balanced, was created by the Barnard family, owners of St. Lucia Distillers for many years. He famously won the Battle of the Saintes – a 1782 battle in the Caribbean Sea between the British and the French – which ultimately safeguarded British control of the Caribbean. Today, there are four Admiral Rodney rums: HMS Princessa, HMS Royal Oak, HMS Formidable, and limited-edition Officer’s Releases N° 1. Bounty Rum’s are a blend of double distilled rums from Guyanese molasses. Medium bodied with distinct clean and smooth mouth feel make them particularly popular in cocktail recipes. Rhum J.M was developed by Jean-Marie Martin – hence the J.M – in the 1840s in Martinique and bursts with spice as well as notes of dried fruit, toasted vanilla, caramel and cinnamon. MEXICAN LOVE POTION Barrio Queen’s Tolache is the perfect addition to date night

Barrio Queen is crafting up romance on its cocktail menu, just in time for Valentine’s Day. “In Mexico today, when we talk about giving or sharing a toloache, we are talking about an aphrodisiac,” says Julio Mata, Mexico native and Barrio Queen creative chef. According to Mata, toloache is an ancient plant dating back to the Aztecs and was known to cause hallucinations as well as intense “warm and fuzzy” feelings after eating. Later, Mexican shamans and those who practiced brujeria – or “witchcraft” – used it for medicinal purposes and in actual love potions. “We aren’t looking to make our patrons hallucinate, but we did develop a cocktail meant to amp up romance, so we named it in homage,” Mata says. Toloache ($13) starts with blanco tequila, an unaged tequila that it is agave-forward with hints of citrus; triple sec, which is an orange liqueur; and lime juice. Mixologists shake the ingredients, then strain them into a tall glass with ice. “Then the magic happens,” Mata says. “We boil dried hibiscus flowers to release maximum flavor before straining, adding sugar and chilling. The result is called Agua de Jamaica. We also make our own blueberry puree and combine with the Jamaica in a shot glass.” The cocktail is brought to the guest, where the hibiscus-blueberry syrup is poured tableside. “Our vibrantly colored potion not only adds a depth of flavors, but it slowly swirls into the glass creating a seductive show,” Mata says. What got you started in the kitchen? When I was 8 (while growing up in Wyoming), my mom signed me up for Big Brothers Big Sisters. My “big” had a restaurant in Casper. By 14, I was bussing for his restaurant while being introduced to basic cooking techniques. So you’ve been working in restaurants ever since? Not exactly. In Wyoming, there is a huge oil industry. So at 18 I went to work at an oil field. By 20, and after a few brutal winters, I decided I’d rather cut and burn myself in the kitchen than ever work in 40 below zero ever again. Tell us about your culinary journey since that decision. I moved to Arizona in 1999 to attend The Art Institute of Phoenix’s culinary program. In the years since, I’ve honed my skills at Vincent on Camelback, 5th and Wine, Morton’s, Fleming’s, Roaring Fork and Zinc Bistro – to name a few – before joining Modern in 2018. Any mentors along the way? There is a special place in my heart for Steven Butler, who was my executive chef at Fleming’s. He not only became a dear friend, but truly mentored me on butchering, grilling and the business side of running a kitchen. What are some standout dishes on the menu? I recently added a fork-tender short rib to the menu that I am especially proud of, and we now have four 30-day wet aged cuts from the famed Linz in Chicago, including a center cut filet, center cut bone-in filet, prime center cut New York strip and a perfectly marbled prime bone-in rib-eye. What would readers be surprised to know about you? I have a secret ingredient in some of my dishes: infused vinegar. One of the most underrated flavoring agents, infused vinegars can change a dish with a few drops.
