Fine hair has plenty of benefits. It’s quick to dry and style, doesn’t shed as much as thicker hair and looks stunning when bobbed. However, fine hair is also more prone to breakage. That’s why Rodney Gentry at Sachi Studios advises paying particular attention to your hair care routine when you have fine hair. “With fine hair, the strands have a smaller diameter, which means they are more vulnerable to damage. As such, it’s important to care for your hair the right way. Avoid any unnecessary heat treatments and go easy on the amount of product you use, as you’ll simply weight the hair down.” There are plenty of ways in which those with fine hair can add volume. Dry shampoo can work wonders, as can volumizing powder. Curling the hair without heat – by using a curling donut, for example – can also deliver impressive results. It’s important to use shampoos, conditioners and hair masques designed specifically for fine hair, according to Rodney Gentry. “Using products that have been made with fine hair in mind should maximize protection for your hair while also not weighing it down. This becomes even more important when coloring the hair, as coloring can make the hair dryer and thus more prone to breakage.” Rodney Gentry advises using heat protector spray religiously before blow-drying or curling, while also minimizing washing to preserve the intensity of the color for as long as possible. Christina Spicer steps up as co-CEO of Girl Scouts–Arizona Cactus-Pine Council
Christina Spicer was in the second grade when she asked her mom if she could join the Girl Scouts, a request that would influence the course of her life in more ways than she could have imagined. But Spicer’s mom, who hadn’t been involved in anything similar as a child, was skeptical at first.
“She only agreed because my best friend’s parents let their daughter join,” Spicer says. “During the first Brownie meeting, my mom sat in the back of the room with her arms crossed. However, after a few meetings she could see the magic that was Girl Scouting – and a year later, she was our troop leader!”

Pulse UP CLOSE And Spicer felt the magic too – as someone who was diagnosed with dyslexia at a young age and grew up in a single-parent household touched by mental illness, Spicer spent her younger years searching for a community. “Girl Scouts was the first place I knew I truly belonged,” she says. “It taught me at a young age the importance of having good friends and mentors, something I still carry with me today.” But in fourth grade, Spicer and her mom relocated from California to Mesa, Arizona, which proved a challenging adjustment. And in middle school, Spicer dealt with a life-threatening eating disorder which led to her being hospitalized twice as a teenager. When her mother looked her in the eyes and said, “Stop killing my daughter,” she knew she needed to devote herself to healing. Little did Spicer know that this experience would allow her to touch the lives of hundreds of girls just like her. One day during her recovery, Spicer’s eighth grade PE teacher gave a lesson on eating disorders that left her uninspired – so she asked to get up in front of the class and share her own story of survival. “My testimony was so powerful that I spent the next five years – through the rest of middle school and all of high school – visiting high schools statewide. This experience really sparked a passion for caring for the girls and women in my community,” she says. After earning a bachelor’s degree in communications from Arizona State University – the first person in her family to graduate from college – Spicer started her career as director of the Clear Choices program at notMYkid, where she helped others share their personal narratives in a way that helped themselves and others learn and grow. “It was such a full-circle moment given all the years I spent telling my own story,” says Spicer, who along the way earned a master’s in nonprofit management, co-founded women’s mentorship organization CAMEO (Caring and Mentoring Each Other) and worked at Teach for America Phoenix, growing its annual fundraising by $2 million. In 2014, Spicer experienced another full-circle moment when she accepted a position with the Girl Scouts–Arizona Cactus-Pine Council (GSACPC), which aligned perfectly with her passion for building safe communities for women. “It felt like my whole life had prepared me for this,” she says. “The Girl Scouts really fueled my belief in the social sector, and I knew I wanted to dedicate my life to the community that helped mold me.”
Building a Better World In her time working in fund development, and later serving as deputy director of the Phoenix-headquartered GSACPC, Spicer has been involved in numerous impactful programs, including a fundraising event in honor of International Day of the Girl. “It was such an honor to lead our Million-Dollar Day of the Girl campaign – we literally raised $1 million for GSACPC in a day. The campaign gave our council the opportunity to show the positive impact Girl Scouting has on girls’ lives and the contributions they make to better our local community.”

After nearly a decade with GSACPC, Spicer, now a mother of two, is ready to take on her newest challenge – serving as co-CEO of the organization that helped make her who she is today. “Girl Scouts is such an incredible organization, and I’m humbled and excited to step into this role,” she says. “These are unique times to lead, and I’m honored to do so with my executive partner, Mary Mitchell, who has served Girl Scouts for nearly 25 years. Together, we can show our girls the power of shared leadership at the highest level.” As of October, Spicer will actively lead over 11,000 K-12 girls in more than 90 communities across Central and Northern Arizona. And thanks to support from the community – especially the 6,500 adult volunteers who offer their time and energy in support of their Girl Scouts – the organization will continue to inspire curiosity, kindness and leadership in the next generation of girls. “The future of Girl Scouting in Arizona is stronger than ever,” Spicer says. “Our beautifully diverse jurisdiction is full of girls who can benefit from the safe spaces we provide to help them discover their strengths and rise to meet new challenges. We’re committed to telling more of their stories so girls from all backgrounds and lived experiences see themselves represented throughout our organization.” And for her younger self, who shared her own story of strength and recovery with so many, Spicer has one piece of advice: “Allow life’s challenges to fuel your passions. Debbie Hillman Toll believes that everyone deserves access to healthcare – both physical and behavioral – no matter their circumstances. “I actually started my healthcare career in human resources,” Toll says. “This was back when integrating physical and behavioral health care was fairly new. I quickly became interested in the different ways integrated care could have a significant impact on people’s wellbeing. And that evolved into opportunities to make a real difference for people the more traditional healthcare system was leaving behind.” Toll then began working closely with her company’s chief executive officer, a path that led her to the chief administrative officer role at Mercy Care. Through her work at Mercy Care, Toll directly supports access to health care services for Medicare and Medicaid-eligible families, children, seniors and individuals, with special consideration for the underserved and those with complex health needs regardless of race, color, religion, ethnicity, national origin, sex, sexual orientation, gender identity, age or disability. The married mother of two is a also member of Dignity Health’s Community Benefit and Health Equity Committee and the Greater Phoenix Economic Council (GPEC) Health Innovation Committee, and became the chair of the Arizona March of Dimes executive board in 2021. Thanks to a $35,000 grant, she launched an initiative with March of Dimes in 2021 that is focused on supportive pregnancy care, an evidence-based care model that brings pregnant individuals together for prenatal care with their obstetric provider(s). Toll was also part of the team who recently selected more than two dozen nonprofits statewide as recipients of Mercy C.A.R.E.S. Community Reinvestment grants. In total, the program awarded $3.6 million to support organizations that address addictions, housing, school-based services, women’s health and food insecurity. “Through Mercy C.A.R.E.S., which stands for Community Action Resources Education and Service, we identify projects that address important community needs and ensure support for our most vulnerable citizens,” Toll says. Among this year’s grantees, awarded funds $10,000 to $500,000, are ACCEL, Jewish Family & Children’s Service, Hushabye Nursery, Scottsdale Community College, and Activate Food Arizona’s Farm Express.

Chelsea Carroll, head golf coach at South Mountain Community College, is chasing the championship title

Chelsea Carroll has her father to thank for her love of all things golf. “When I was 7, my dad would take my two younger sisters and me with him on his weekend golf rounds – though we were far more interested in riding in the golf cart, playing in the sand bunkers and rolling down the big hills,” she says. Her early memories on the course stayed with her, and when the young athlete didn’t secure a spot on her high school volleyball team, golf was at the top of her mind. She joined the golf team, and by her sophomore year, Carroll knew it was her destiny. “I came from a family that’s always valued hard work and giving our best in whatever we do. It involved a lot of early morning workouts, lessons and failures, but I was eventually recruited by the head coach at Rogers State University,” she says. After graduating, coaching at her alma mater and working as an assistant teaching professional at Troon North Golf Club, Carroll’s career brought her to South Mountain Community College in 2019. She started part time as the head coach of the women’s team, which at the time had only two players. But Carroll had bigger things in mind – today, the program has grown to 11 athletes and is ranked in the top 25 junior college golf programs in the nation. Now, as head coach for both the women’s and men’s teams, Carroll’s goals are simple: to win the National Championships, which the men’s team accomplished this summer under her leadership. “The next goal is to bring home a national championship for the South Mountain women’s golf team – the first one ever,” she says. The future looks bright for the South Mountain Cougars, thanks in large part to Carroll’s love of the sport and her passion for service. “Coach John Wooden is a big inspiration to me. He won seven national championships in a row and always emphasized falling in love with the journey, not the destination. He was more than just a coach, he was a teacher of life,” she says.

Hudson Mapes is in the business of helping people feel better about the way they look every day. As the practice manager for Aesthetic Assets Face & Body Rejuvenation Center, Mapes takes a classic boy next door with a bit of edge approach to his wardrobe, which is a little different than how he dressed as a child. “Growing up I had a preppy style thanks to my influential mother,” he says. Today, Mapes gravitates toward neutral tones and not just because they’re in style – he is colorblind and has a difficult time differentiating colors. Mapes often mixes high-end and affordable items in his looks. When shopping luxe, he favors brands such as Prada, Saint Laurent, Tom Ford, Hermes, and Ludovic De Saint Sernin. And his love for designer duds continues from head to toe. “You can never go wrong with a good pair of white leather shoes. The majority of the time I’m wearing a pair of Prada on my feet,” says Mapes, noting he also loves Christian Louboutin loafers. Besides a killer pair of shoes, Mapes never leaves home without a good piece of jewelry from his favorite designer, Jacqueline Dadanian. “I’ve usually got a few pieces from House of Jacq and Cartier on with any outfit I’m wearing, regardless if I’m at work or hanging out on weekends,” he says. “Style to me is innate!”
How do you feel about social media and style? I love following creatives of all sorts on social media. I pull new style ideas and find things that resonate with me and my style through photographer, stylists and model accounts. I love to watch runway reels. What’s your signature look? On my days off if I’m out running errands, I like to throw on a pair of jeans – usually Levi’s or 7 for all mankind – and a Prada button-down with Tom Ford tank under. If I’m going out, I’ll throw on a pair of dress pants with a solid shirt.

Building relationships is at the heart of Caitlyn Salloum’s career. As the founder of Key Wealth Management, a financial planning firm that specializes in entrepreneurs, women in transition and clients in retirement, Salloum’s day-to-day is client-focused and so is her style. “I’m all about cute, classy and timeless pieces. If I buy something, I want the ability to wear it and still get compliments on it a decade later,” says Salloum, noting she aims to keep her style sharp and sophisticated when visiting clients. Along with great accessories – Salloum is known for her extensive collection of statement earrings – you can typically find her wearing a vibrant dress from a local boutique. “With the switch of some earrings and heels, you can turn a professional dress into a fun and social look,” she says. The busy mom knows how to dress for ease while maintaining her style, even when she’s headed on a vacation. “If you catch me in an airport, I’m still sporting a dress and glitter sandals,” says Salloum, who has traveled to nearly 50 countries. “I want to land and show up ready to head to brunch, lunch or dinner, especially in the case there are delays or changes of plans.”
What is your must-have fashion item? I love a good shawl! You will always see me with one of these, whether it’s a casual white or blue cotton during the day to keep me warm in a cold conference room or a fancy Louis Vuitton one to classify my outfit and break the chill at night. What is your most prized possession in your closet? Most would think it would be my Chanel bag that my husband bought me for an anniversary gift but it’s honestly my wedding shoes. This summer saw the opening of Guy Fieri’s DTPHX Kitchen + Bar in the all-new Caesars Sportsbook at Chase Field. The concept prioritizes good food and fun, two pillars that Fieri has built his life around. “I’ve been to Arizona so many times for work, fun and everything in between,” Fieri says. “In addition to vacation trips, I’ve enjoyed popping into town to see some amazing sporting events – the Super Bowl, the NBA Finals, the D-Backs playoffs, NASCAR – big events that the area always does a first-class job hosting. You’ve got amazing weather, a very underrated food scene and a bunch of great folks who know how to have a good time.”

In addition to hitting up his friends’ restaurants – Scott Conant, Beau MacMillan and Aaron May, to name a few – Fieri has fond memories from the 30-plus Arizona restaurants he’s visited on Diners, Drive-Ins and Dives (DDD). “One of the misconceptions about DDD is that we’re just about giant burgers, but I’ll tell you, Arizona is a prime example of how that’s not the case,” he says. “Take Chino Bandido, a mashup of Chinese and Mexican food, one of the funkiest joints I’ve ever experienced. DeFalco’s, Barrio Cafe, Matt’s Big Breakfast, the list goes on. I’ve threatened more than a few times to move to Arizona and I’m sure I’ll start doing it again by the end of this interview!” So when Caesars Entertainment and Derrick Hall, president and CEO of Arizona Diamondbacks, approached Fieri, he jumped at the opportunity to open a restaurant Downtown right next to Chase Field. Located on the second floor of the 22,000-square-foot Caesars Sportsbook – the largest freestanding sportsbook in Arizona – Guy Fieri’s sit-down DTPHX Kitchen + Bar serves up scratch-made classics to sports bettors and non-sports bettors alike. With nine betting windows and 13 self-service betting kiosks, the venue is an ideal place to catch a game while enjoying fan-favorite dishes like Fieri’s Trash Can Nachos or the crispy wings tossed in Guy’s Signature Bourbon Brown Sugar BBQ sauce, not to mention the selection of beer, wine and cocktails. “To me, it doesn’t matter if you’re in the thick of the Vegas strip or catching a ball game in the desert, you deserve a great experience and that’s our goal,” Fieri says. “And seriously, the Trash Can Nachos are a must. People may think that serving them in a ‘trash can’ is just a gimmick, but it isn’t. By layering the chips and toppings in the can, we make sure you get all the good stuff in every bite. They’re a go-to for all my family and friends – we’ve been crushing them for years!”

Available via delivery app, the virtual dining concept makes Fieri’s signature eats – from wings to burgers to fried pickles – more accessible than ever. But no matter how many different concepts Fieri has a hand in, his first business will always hold a special place in his heart. When 10-year-old Fieri tried a soft pretzel for the first time on a family trip to Lake Tahoe, he was inspired to start The Awesome Pretzel Cart, a three-wheeled bicycle cart that he built with his father. After washing dishes and selling pretzels in his hometown of Ferndale, California, for years, Fieri saved enough to study abroad in France, and it was there that his passion for food evolved into the desire to one day own his own restaurant. Today, Fieri and his team at Knuckle Sandwich, LLC, have far exceeded his goal, opening 75 restaurants around the world, from Las Vegas to South Africa to Dubai. “Before I started my Food Network journey, I was doing just fine,” he says. “I had a bunch of my own restaurants, doing food the way I wanted, that
now. It’s not like I had my sights set on TV, but it happened, and the DDD phenomenon kind of came naturally as I treated the restaurants and restaurant people just like I treated my own colleagues, friends and family. Talking food with food people – camera or not – is just what I do, and that struck a chord.”

But for my entire career, I’ve always felt that you need to be prepared to take advantage of opportunities when they pop up.” His best-known show, Diners, Drive-Ins and Dives, has long celebrated the diversity of the American culinary scene, spotlighting over 1,000 independent eateries in more than 400 cities. Over the years, Fieri’s tireless enthusiasm and larger-than-life persona have sparked something of a pop culture phenomenon – there are even websites dedicated to helping superfans embark on a cross-country road trip that follows the path of Fieri’s iconic red Camaro. “It’s crazy to think that I’ve been on this DDD whirlwind for over 15 years
It’s not just about bleached hair and bowling shirts – at the end of the day, DDD was founded on the conviction that mom-andpop restaurants serve as essential pillars of the community, places that feels like a home away from home. And Fieri knows better than anyone about the sense of family that exists within the restaurant industry. “Like everyone, we’ve been focused on pandemic relief recently. Our brothers and sisters in the restaurant business have been hit hard over the past two-plus years and continue to see the strain,” says Fieri, who was inspired to set up the Restaurant Employee Relief Fund to help those in need, raising over $21.5 million to distribute in the form of $500 grants. That’s right – when Fieri isn’t overseeing a global brand, the Mayor of Flavortown makes time to look after his people, from hosting charity tournaments on Guy’s Grocery Games to visiting patients at children’s hospitals. And when wildfires touch ground in California, you can bet the longtime Santa Rosa resident will be behind the grill, feeding firefighters on the frontlines. The Disaster Relief Trailer, one of the Guy Fieri Foundation’s (www.guyfierifoundation. org) signature programs, has served over 120,000 meals in relief of disasters like the 2017 Tubbs Fire, the 2018 Camp Fire and the 2020 LNU Lightning Complex fires, in addition to catering appreciation events for first responders. The Foundation, which was established in 2011, strives to inspire the next generation of chefs through culinary education and scholarships while celebrating veterans and other local heroes. “Every time there’s a need, I try to be a guy that steps up. It’s just that simple,” Fieri says. “It’s the right thing to do. I’ve been really lucky and am very grateful for it all, so whenever I can, I try to pay it forward.” So Scottsdale! August ‘22

ANNOUNCING THE VALIDATION CENTER Dejaye Botkin is spearheading A Mobile Wellness Experience. Dejaye Botkin is a Licensed Professional Counselor and the Founder of Extinguishing Fear. She is proud to announce her new project, the Validation Center. Dejaye has been working as a licensed psychotherapist since 2005 on the front lines of the behavioral health industry. “For over 20 years, I have been working with families in crisis. In my early years, I learned that family secrets keep everyone in the household sick, and family members who do not seek treatment often end up with addictive behaviors and repeat patterns of dysfunction with their own children,” she says. During her twenty-year career, Dejaye has been recognized for starting behavioral health programs in New Jersey and Arizona helping teens and their families recover from crisis. Dejaye points out, “Therapy has been stigmatized by many people who assume attending counseling means you must be dealing with a specific problem or have a mental health diagnosis.” She says, “Our environment is full of division and chaos, and there needs to be a safe haven to reset our mind, body, and spirit - and therapy offers this resource. She reminds us, “Never assume therapy will not work for you. You may not vibe with a particular therapist or modality, but if you keep searching for a fit, you will find a path that is right for you. CONFIDENCE WITHIN Carly Klein restores beauty from the inside out. Like it or not, our culture focuses on appearances more than it should, and the rise of social media influences isn’t helping. A NEW VISION
Abby Bradford pursues her dream as a professional painter

The idea of turning a passion for painting into a profession came to Abby Bradford later in life. In fact, it wasn’t until she was married with three children when she made the bold move. The notion was always percolating in the back of her mind, and eventually she found the inspiration to enroll in classes at the Milan Art Institute in 2019, an intensive art program – offering online and in-person classes – started by John and Elli Milan in Queen Creek, that has recently relocated to Georgia. Not only did the intensive four-month Mastery Program set Bradford on a new path of building a business as a creative, but it also sparked an interest to teach and mentor other budding artists around the world through Milan’s online academy. “I am behind the Milan Art Institute one hundred percent, and love what they do to help artists succeed. To them, there is no such thing as a starving artist,” Bradford says. The artist’s intense commitment and drive has been a key element to her development. “As soon as I finished the (Mastery) program, I started painting every day – even if only for 15 minutes – as well as building my website and being present on social media. I found it important to be consistent, and over years have built a following,” she says. Bradford also credits her continued growth and success to a network of fellow artists she met through Brightside Studio in Phoenix. Offering studio space, art classes, a storefront that sells art supplies, and a coffee shop featuring local Cartel Coffee and live music, Brightside is the community of creatives and art lovers alike. “Brightside has everything you want as an artist. But you don’t even have to be an artist; it is just a great space with a cool vibe for all,” Bradford says. Selling online through her website and Instagram, Bradford paints colorful portraits of mainly women and animals. One of her favorite pieces, New Vision, can be thought of as an allegory of her own life. Depicting a scene of a woman gazing outward, a stream of small white dots flowing from her eyes and into the air, New Vision is more than a representation of a new vision for her life. “New Vision symbolizes the future; it is about having a new perspective,” Bradford says. “As I painted it, it opened my eyes to what I want for myself in the future, and the possibilities are endless. Rolls Royce, Bentley, Ferrari, and Lamborghini all have SUVs showcasing beautiful, luxurious features like quilted leather and handrubbed African Rosewood. Now, Aston Martin, the legendary British sports car maker, launched its first SUV: the DBX. The brand has taken the styling vocabulary of its low, sweet super sports cars and successfully turned it into an SUV morphology. Each year, droves of snowbirds from the Midwest descend into Scottsdale to escape their harsh winters. Isn’t about time we return the favor? Lake Michigan, which features more than 200 miles of sandy white beaches, is bursting with beachfront towns that cater to every level of traveler, and the region especially sparkles during the summer and fall. Among the best spots for those seeking fun both on and off the water is New Buffalo in Southwest Michigan’s aptly named Harbor County. While many towns across Lake Michigan are primarily made up of full-time residents, second homeowners from nearby cities like Chicago, and short-term vacation rentals, New Buffalo is unique in that it has several boutique hotels and resorts nestled right along the water, notably The Harbor Grand Hotel and the Marina Grand Hotel.
Where to Stay The Harbor Grand has views for days and a sophisticated, modern feel that echoes accommodations one might find in the Hamptons. The public spaces are airy with light woods, while both the rooms and suites – all with harbor views – have darker elements including full wall treatments, handcrafted art, and custom bathroom tiles. In addition to Journeyman, New Buffalo is also home to Beer Church and Ghost Isle Brewery and is just a 20-minute drive to Michigan’s most lauded wine country. Beer Church, a small batch brewery with an impressively long list of beers ranging from stout to ale to seasonal specialties, was an actual church in the 1800s. The brewery has an excellent tasting portfolio as well as some of the best Neapolitan pizza in the area. Ghost Isle is equal parts brewery, cider house and restaurant located along 156 acres of protected wetlands known by locals as Ghost Island given its history of rumored paranormal activity. There is also a wine country, which became popular in the area in great part thanks to Round Barn Estate, a working brewery, busy distillery and full-scale winery celebrating its milestone 30th anniversary in 2022. The estate is dog-friendly with live music regularly, a massive restaurant operation, elegant vineyard cabanas, and the option to mix and match a tasting of food, wine, cocktails, spirits, beer, and adult slushies. Tabor Hill Winery & Restaurant, Free Run Cellars, Dablon Vineyards, Domaine Berrien Cellars, and Gravity Winery are also nearby, making a day of wine tasting exceptionally convenient for those who wish to partake.
Outdoor Adventures The only thing more convenient than the vast attractions near the lake is the lake itself. There are 10 public beaches scattered across New Buffalo offering a combination of grassy and sandy dunes, ample picnic space, and lookout points. Of note are Dunes State Park, which has a boardwalk with concessions, and Weko Beach, which has a boardwalk as well as a playground. There are also several public beaches with direct access to lush forests, a rarity and welcome juxtaposition of what one might expect along the shore. The Americano’s summer cocktail menu takes flight thanks to Salvatore Viola

This spring, The Americano expanded its beverage team to nearly double its size. “While it is a dream to have so many creative minds behind the bar, there was learning curve to getting our collaboration just right,” says Chris Cuestas, spirit specialist at The Americano. According to Cuestas, it wasn’t until one recipe moved from concept to cocktail that the team fired on all cylinders. That cocktail is the Salvatore Viola ($19), which loosely translates to “violet savior” from Italian to English. “Salvatore Viola is a riff on the classic Aviation cocktail, which is known for its distinctive purple hue and traditionally made with gin, maraschino liqueur, creme de violette, and lemon or lime juice,” Cuestas says. It starts by upgrading the creme de violette. Cuestas and his team collaborated with pastry chef Tina Gamel to develop a shrub – syrup made from fruits, aromatics, sugar and vinegar – using violet syrup, Champagne vinegar and blueberries. “We finish it with cinnamon, which when used sparingly makes the blueberry pop,” Cuestas says. The shrub is combined in a shaker with Monkey 47 Gin, which is less floral than many gins with a hint of berry, as well as lemon juice and Stambecco Maraschino Cherry Amaro in place of maraschino liqueur. “We then add egg white and dry shake the mixture to create a layer of foam before pouring into a martini glass and garnishing it with edible rice paper butterflies, butterfly pea tea leaves and dried roses for added drama,” Cuestas says. Refreshing with a luxurious mouthfeel and both herbal and berry notes, Salvatore Viola was the springboard for the team’s entire summer cocktail menu and a must-try when dining at The Americano. Landon Post is the executive chef of Sanctuary Camelback Mountain, A Gurney’s Resort & Spa. At the award-winning luxury resort, he oversees the day-today culinary operations and its signature restaurant, elements.
Tell us a little bit about your background. Although my family is originally from Kansas, I’ve lived in Arizona all my life. I learned to cook with my grandmother and growing up I always had that interest in food. Over the years it became my passion. Once I was old enough to be able to work in a restaurant, I started as a dishwasher. Working in the kitchen motivated me to learn more, and I knew that I wanted to be a chef. How did you accomplish that? When I decided I wanted a career in the culinary world, I enrolled at Le Cordon Bleu in Scottsdale. In my pursuit of culinary knowledge, I also decided to spend time in Napa Valley, where I studied wine, and I developed a love of that too. FROM MAINE WITH LOVE Mason’s Famous Lobster Rolls debuts at Scottsdale Quarter

Without a doubt, Maine is the lobster capital of the United States. Lobster were so abundant in the area in the 1700s that they were known to wash ashore in piles, leading them at first to be considered a food for the poor and working classes. However, by the 1800s when chefs in the emerging culinary regions of Boston and New York City started using it in recipes, lobster took its rightful place in the upper echelon of ingredients. Among the most popular of its many preparations: the lobster roll. Longtime New England lobsterman – the proper name for a professional lobster trapper – Dan Beck fancied himself a connoisseur of lobster rolls, so much so that in 2014 he invested his savings in Mason’s Famous Lobster Rolls, a fast-casual concept on the East Coast offering freshly made iterations of the famed sandwich. Fast forward to 2021, and Beck has opened 17 locations in partnership with franchisees nationwide, yet none farther west than Colorado. Enter East Coast native Chad Dodd – who is now a Valley resident – and his wife, Andrea Clinton.

There are six preparations of lobster rolls on the menu including: the Classic served chilled with mayo and lemon butter ($22); the Lobster Salad Roll served chilled tossed in celery, mayo and lemon dressing ($22); the Connecticut served warm and tossed in butter ($22); the Lobster BLT with bacon, lettuce and tomato ($22); the Bar Harbor served in any of the other styles but with 50% more lobster and the tail on ($27); and the Shrimp Roll with shrimp in place of lobster tossed in mayo, celery and lemon ($16). The menu also features lobster-infused entrees and sides including Lobster Salad ($22), Lobster Grilled Cheese ($16), Lobster Mac ’n’ Cheese ($16), Lobster Bisque ($8), and select non-lobster items for kids including hot dogs ($6). In addition to soft drinks and water, there are local beers including Huss and SanTan available as well as select wines by the bottle and glass.
