The best part of their job is when they do hair extensions on someone for the first time., Its very rewarding. Sometimes their clients cry tears of joy and amazement, it can be very emotional. Without hair extensions, they would never be able to achieve the look they’ve always dreamed about having. they love being able to help someone reflect their inner beauty. Are hair extensions high maintenance? Once hair extensions are applied, your only responsibility is to brush your hair daily. Home care requires nothing special; extensions can actually be more low maintenance than most people think. Use of your everyday products, blow-driers and irons are perfectly fine. Three to six months is the average amount of time to wear these extensions before reapplying them, due to hair growth. Do hair extensions break your hair? Hair extensions can be great for your hair. With proper application and removal, clients find that their hair is actually growing, rather than breaking. Breakage comes either from the type of bond used or the individual who is applying them. A stylist’s patience is paramount when applying and removing extensions. That’s the potential for most breakage. The bond must be 100 percent keratin, a natural protein from which human hair is made of. Very few companies actually use keratin; many use glue or tape, which suffocates and breaks the hair. Do hair extensions look fake? Many stylists use synthetic hair, bulky wefts or strips, which look overly shiny and stiff like a wig. We use only 100% human hair, the best quality and takes longer to get, but lasts up to four years. All strands are small, individual pieces so they move freely, like your own hair. With the application technique they use, the extensions are extremely discrete. Blending is critical and strand placement is an artistic process that requires special training. Jo Paris stylists have received additional training to develop the cutting and blending techniques needed to achieve this natural overall look. very day, it seems we hear stories about various diseases such as breast cancer, ALS and Parkinson’s. However, Scottsdale resident, entrepreneur and advocate Sharane Dorrah is making it her goal to make sure that others also learn about something affecting more and more people nationwide every year: Lyme disease. Lyme disease is an infection caused by being bitten by an infected tick, and, at first, typical symptoms are a flu-like – fever, chills, sweats, muscle aches, fatigue, nausea and joint pain. If gone unnoticed and left untreated, the bacteria from the bite can spread to other areas of the body, causing severe and sometimes irreversible damage to organs and the nervous system.

up close According to the CDC, every year nearly 300,000 cases of Lyme disease are reported. Yet, the agency goes on to say that this number doesn’t reflect every case that is diagnosed in the United States each year because only a fraction of the illnesses are reported. Dorrah was diagnosed with Lyme disease nearly three years ago after two years of trying to figure out just exactly what was wrong with her. During that time, she visited nationally renowned medical facilities and numerous doctors, including neurologists and cardiologists. “I went from running a business and being a fully active, type A person to being someone who was sleeping 17 hours a day, being in excruciating pain, in and out of the emergency room and being so terrified of not even waking up the next day because of heart and lung irregularities. I had no idea what was going on,” Dorrah says. Specialist after specialist gave Dorrah different diagnoses, everything from just being over-stressed to food allergies and other infections until one doctor finally had her blood work sent to a lab in California that tests specifically for Lyme disease – and that is when her world and life changed. “I am not 100 percent; it’s still a fight every day, but I’m better and I’m getting there,” she says. “Like many people with chronic Lyme, I didn’t know anything about it. It was a very long diagnostic process with no cure. And the goal of remission is a long road that is not fully supported by insurance companies or the medical community, so I am working to help others who are in that position.”
Making a Difference And that is exactly what Dorrah has committed her life to doing – being an advocate for those who may not have a voice or know what to say. Dorrah is using what she’s learned over the last few years about the disease and turning it into something positive; her inner entrepreneur has created a new clothing line called Peskys. Treated with invisible and odorless insect repellant, the line will offer high-quality, fashionforward active apparel for women so they can enjoy the outdoors without worrying
about things like mosquitoes, ticks and other little bugs. Dorrah says she is using this line as her voice and a way to raise awareness of Lyme. “I feel like me being here is a gift and I want to pay it forward,” she says. “The Lyme community has been unrecognized for a long time, and I am just one voice in a choir of voices trying to raise awareness and create change.” When Dorrah isn’t working on launching her new clothing line, she spends time helping others deal with their Lyme diagnoses. She feels this is where her passion and time need to be focused – giving back to the community that has been there to support her. “Everybody who goes through something so life-changing and deep feels like they need a focus when they come out the other side. I feel so passionate about this because the disease is so misunderstood and unknown, yet it is so pervasive. Through education and awareness by my brand, I want to be able to help people avoid having to have my experience with Lyme,” she says. “If Lyme disease is caught quickly, then you can take antibiotics and move on with life. However, if it is missed or goes untreated, the infection goes systematic. A proven cure for chronic Lyme is not available, and there is not one standardized treatment plan. Most treatment options are expensive and not covered by

insurance. This can have people feeling confused and alone.” To this date, Dorrah does not know how she contracted Lyme disease. Looking back, she doesn’t recall a time where she was bit by a tick or ever pulling a tick off herself. While she now knows that other bugs can carry it, she really isn’t looking back to the how’s and why’s of what happened and is more looking forward to helping others. “Lyme forced me to stop, hit the reset button on life and start over,” Dorrah says. “I just recently started working full-time again, and dealing with my Lyme is still a very big part of my daily life. I spend a fair amount of time speaking with people who have been recently diagnosed with Lyme as well of those that have been fighting for years and are looking for hope.” For Dorrah, rather than being angry at missed diagnoses and time, she is staying focused on how she can help people locally and immediately, preventing further spread and creating a greater awareness for the masses about Lyme disease’s causes, effects and what can be done about it. he National Hot Rod Association (NHRA) is about to get a taste of local rider Valerie Thompson, a seven-time land speed record holder and often referred to as “America’s Queen of Speed.” She’s gearing up to take her talents on the bike for a full season of NHRA drag racing to see just how far she can get things moving on the track. “I’m in a great time in my life,” Thompson says. “This month we’ll be doing a new test session on the bike [an NHRA Pro Stock Motorcycle] and then preparing for the NHRA Gator Nationals in March.” For Thompson, the goal is simple: just race. Thompson will soon begin traveling for racing nearly full-time and is excited for the journey ahead. “The ultimate goal with NHRA is to place in the top 10 for starters and race my heart out. I would love to win a race, come out and separate myself from my competitors.” Thompson says one of the biggest challenges for her will be learning how to discipline herself with both race circuits – NHRA and land speed racing. She will continue to do land speed racing all while chasing her NHRA goals. What are some of your inspirations on and off the road? I draw inspiration from so many sources; it’s a hard question to answer. If I had to pick a word that describes both my personal and professional inspirations, I’d have to say “passion.” I’m inspired by people who have a passion for doing things the best they can do. If you weren’t racing, what do you see yourself doing? I’ve always dreamed of becoming an Olympic figure skater. I’d love to perform the freestyle movements of jumps, spins and lifts, all in a graceful manner. I get goosebumps just watching it. What is your favorite movie and/or television show about racing? I have two picks that quickly come to mind. My all-time favorite is easily “The World’s Fastest Indian,” the story of New Zealander Bert Munro who set a land speed record at the Bonneville Salt Flats in 1967 on his modified Indian motorcycle. The other one is a documentary called “Why We Ride,” which I got to be a part of a couple of years ago. It provides great insight into the passion of motorcycle racers and the soul of their machines. raig Matthew has an impressive resume. He is a former professional golfer, a FORD/Robert Black Agency model, a KWSS (93.9 FM) and Radio Phoenix co-host to radio show, “The Venus Vault Show,” and the co-owner of Scottsdale’s Altitude Coffee Lab (www. altitudecoffeelab.com). As if his list of achievements isn’t wow-worthy enough, he is also a musician. “I started playing guitar and piano at a fairly young age and it quickly became a passion,” he says. “It’s hard to really put into words how certain musical moments can grab hold of you.” When he isn’t at Altitude, Matthew is working with the musical talents at AfterMaster Audio Labs in Los Angeles. “I met Larry Rykman, [the] CEO of AfterMaster, at Altitude and in incredible turn of fate he invited me to record a song at his studio in L.A.” Since working with the AfterMaster’s team, Matthew has been busy writing and producing songs for his record, which he plans to release this year. Do you like having local musicians come into Altitude and play live for your customers? Yes! Though we are doing less music now, we have had quite a few very good players. My business partner, Paul Musikanth, and I have worked hard to create a good atmosphere at Altitude and I believe it caters well to live music. Do you play live anywhere around the Valley? I’ve put most of my musical energy into writing recently because I’m trying to take full advantage of the recording opportunity I have in L.A. I am, however, starting to put together a band and hope to play more live shows soon. Where do you gain your musical inspiration from? My songs are always related to emotions that I’ve felt during certain experiences, but the words rarely describe those experiences directly. style chameleon may be how one would describe custom dress designer and stylist Donna Berry. “My look is different all the time. I mix the feminine with urban, layer a lot and combine things that wouldn’t necessarily go together,” Berry says. After years of a career as a civil litigator, she left law to pursue her passion in the design program at FIDM in Los Angeles. After working at design houses like Monique Lhuillier, Berry set her sights on custom design, allowing her a personal artistic collaboration with clients. When it comes to her professional style, Berry says things are simple and a bit different than her personal look. “I need to be comfortable. I wear a lot of pants due to moving around and measuring clients. I tend to have more masculine, loose fitting clothing when I’m working but comfort is the most important factor.” The mom of twin boys says that she is usually dressed in an outfit, ready to go. “I almost am never in workout clothes or yoga pants unless, of course, I am at the gym. What was working at Monique Lhuillier like? Working at Monique was incredible! It was a completely creative environment, plus I was fortunate to work with many celebrities, some of whom were dressing for major events like the Oscars! Do you design anything other than custom dresses? I’ve created everything from suits to capes, but the majority of my clients are dressing for very special events, which tend to be formal and maybe once-in-a-lifetime, so my client is often looking for a show-stopping, artful piece designed and cultivated with only her in mind. What wedding dress trends do you see for 2016? Sheer will continue to be big and so will dresses with a lot of shine – ornately beaded gowns with the jewelry built-in, so to speak. Also, many brides will opt for subtly hued gowns, especially in blush.

Gold says that while she is very glad with where BUTI Yoga is today, it all started with a very traumatic experience. “I had a traumatic birth with my first daughter,” she says. “It was a home birthing experience in Hawaii where everything that could have gone wrong, went wrong. She was not breathing and my then husband, her father, was able to revive her, but we were both taken by helicopter to the closest hospital where we learned she had brain damage.” From that point on, Gold says that her normal way teaching of yoga, and life in general, became pretty robotic. After a healing session one night, Gold went in to teach her class and something new was created, something like she’d never done before. It was out of that atypical class that BUTI Yoga was eventually created. Gold moved her family to California, and with a previous background in public relations, she was able to spread the word about her new type of yoga and personal training skills. Gold quickly became well known in the fitness world, with appearances on television shows such as “The Today Show” and “Dr. Oz.” She also created a rolodex of celebrity clients including Julia Roberts, Jennifer Love Hewitt and Pink, just to name a few.
A New Venture It was the growth of her celebrity training and BUTI Yoga that led Gold to the realization that there are many other women searching for empowerment and strength, both personally and professionally. It was this realization that brought Gold to Scottsdale, where there is a solid BUTI Yoga following, and to her new business venture: a social club for women. This social club, B Tribe Scottsdale, is set to open its doors in April to members in the Valley. The B Tribe name came from an already existing network available to BUTI Yoga members, and, for Gold, it was an easy transition from the online BUTI Yoga community of support to the physical support for women. “We have this great online community, and in the forum, women could be themselves and feel accepted without feeling like they couldn’t embrace their own true reality,” Gold says. “It became very clear that if we focused on the community aspect of it and intertwined the
workouts and other benefits of personal growth, the social club would be the perfect place to bring these like-minded women together.” The B Tribe Social Club will be a place where women with common goals can enjoy one another’s company and be free to be themselves in a public setting. And there will be a lot of systems built into the club for the women to enjoy. “We will always have a social club director on the floor so they can make meaningful introductions between members,” adds Gold, which is a vital piece of the social club in her mind. “This is a great place for women to network, make positive connections or simply just come to relax and gather themselves in a comfortable environment.”
The Details on B Tribe As for the club itself, it is 7,000 square feet of space and has a paleo restaurant for enjoying healthy dining and a collaborative work space. The entire space has Wi-Fi, and there is a library area with floor-toceiling bookshelves and tables, chairs and areas for women to work. There are also library desks in a more private area for those wishing to get some work done with some additional peace and quiet. “Everything is built to facilitate an inspiring working environment,” Gold says. Outside of the working space, there is a large projector screen and comfortable seating area for movie screenings and TGIT (Thank Goodness It’s Thursday) television-viewing parties for women who want to watch guilty pleasure shows such as “Grey’s Anatomy.” On Friday’s, there is an open member dance party, giving women a chance to enjoy music and fun without the pressure of going to a nightclub. Members also have access to one of the two yoga studios (one heated and one at room temperature), a 12-person sauna, a relaxation room, a luxury locker room and showers. Gold says there is something for all of their members to do when they walk through the doors, whether they want to work, network, socialize or just relax. “We’ve created an environment where women want to come, where they want to be and where they can be themselves. So, what does membership entail? There are three different levels of membership. The first level gives you access to the yoga studios and locker room only and you can pay for certain other events per diem. The other two levels include the other areas of the club and social events. The highest level of membership allows members to bring a guest with them for free to see what B Tribe is all about. Gold also offers a free seven-day trial, with access to the club and specific events, for those interested in seeing if B Tribe is a good fit.
What the Future Holds In true form of anyone who is part of B Tribe, Gold is thinking big picture when it comes to expanding; the Valley is the first of a few places Gold intends to launch the social club. Gold has openings slated for New York City’s Meatpacking District and also in West Hollywood, two fabulous locations for helping women be the best they can be. “I want to bring about the sisterhood that I’ve been seeing more in life, that positive vibe that helps women thrive,” she says. “These social clubs will be a place where women can embrace one another, help one another out and do it all in a luxury environment.” The social club already has some members waiting for the anticipated opening. They were hand-selected from the directors and personally invited to the club. Those who wished to join were also given three keys to invite other women they thought would be a great addition to B Tribe. The club membership is growing even before the doors officially open, and now the club is looking for more women to jump on board. Interested in joining? A comfortable night’s sleep – something thing that many of us are after and that isn’t always easy to come by. The experience behind shopping for that elusive, perfect mattress is often compared to buying a car and it is an experience that two young Valley entrepreneurs wanted to change. JT Marino and Daehee Park, good friends from their days at Penn State University, wanted to start up a business of their own but were not sure which direction to take. After college, both found themselves working at a software startup in Palo Alto, California, wondering what their next steps would be. That was when a trip to a local mattress shop changed everything for Marino and Park. “My wife and I were shopping for a new mattress and we ended up going to three stores and it was a nightmare,” Marino says. “It was a lot of gimmicks, sales tactics and we ended up buying something based on price. After several months of trying it out, we still didn’t like it and the whole thing was just one big mistake, a big nightmare.” For Marino, that was the seed for the big idea behind Tuft & Needle, which today has grown to become one of the nation’s biggest up and coming mattress companies. Their mission? To provide a quality mattress at a fair price. Their prices range from $350-$750 and each mattress comes with a 10 year warranty. Both Marino and Park weren’t exactly sure where to start with Tuft & Needle, but knew cusomers were the priority. “In our previous jobs, we worked to collect a lot of feedback from our customers and we knew that would be vital to this process as well,” Marino says. The hardest part was not only trying to figure out how to make a mattress, something neither of them had experience in, but also finding a manufacturer willing to produce the product. Their mattresses are made from their own Adaptive Foam, which is poured and cut in America.
“No one really wanted to work with us. We knocked on a lot of doors and got a lot of no’s. However, it is those few companies that took a chance on us, those who said yes, who believed in our vision. Those are the good guys and those are the companies still sticking with us today,” Marino explains. Tuft & Needle officially opened in 2013, despite the families of both men being skeptical about them going into a business they knew very little about. “They thought we were totally crazy. The mattress business is very unsexy and boring and there were times we were unsure as well,” Marino says. “However, now, things are great, everyone is supportive and are big fans.” When it was first created, Tuft & Needle primarily sold the products online and eventually listed it on Amazon, mainly for the reviews. However, word of the product quickly spread like wildfire and it became the highest rated mattress on Amazon and, within months, the highest rated piece of furniture on the site. The SO SCOTTSDALE! |

mattress then took on a life of its own on the website Consumer Reports, where the mattress was once rated as the only “best buy” for the site during a period of time. Since their start, several other similar companies have popped up, but what separates Tuft & Needle from the competition is that the foundation of the business came from their own funding and the company has been growing from those profits ever since. “There has been quite a bit of competition since we came up and some of which who are heavily funded, so they can market themselves quite a bit more,” Park says. “However, we were the first to do this, and we have proprietary stand on it. What we have done differently is that we actively worked to educate our customers about the mattress industry, about how it works and we keep that at the forefront of all we do." Marino and Park add that while it has all been very exciting to see Tuft & Needle grow and prosper, it can also be very

stressful at the same time. With growth also comes the growing pains of owning and running a company. Personal growth and hiring are just some of the obstacles that the pair now have to face on a daily basis. “Neither of us had managed a company of this size before and we are definitely learning as we go but thankfully we have some great advisors working with us,” Marino explains. Although sometimes the process can be tough, growing is just what Tuft & Needle plans to do. When the company launched in 2012, it was just the two of them – Marino and Park. In 2014, the company bloomed to 12 people and last year, just under 80 people we’re on the team, with no signs of slowing down. What began as an online retailer and then a small showroom in downtown Phoenix, is now developing into a much larger retail space. “We have a showroom opening in Phoenix, which is a totally new type of initiative for us,” Park. says “We are taking
the retail space in a different direction, hoping people come in without any preexisting biases.” The new spot will be right along Grand Avenue, 36,000 square feet of space with a proper store front. The business partners say their hope is to play a part in helping the area where the store is thrive with some new life. By the time the space opens, Tuft & Needle will be up to nearly 100 employees. They aren’t just limiting their expansion to Arizona. Marino and Park are taking their mattress show on the road. Recently, the pair opened up their first brick-and-mortar store in San Francisco. “This is very exciting for us. We really don’t know how this will go, if our business model will work as a stand-alone company. However, we have the support of a lot of our friends and family and we are so excited to see how that does,” Marino says. Tuft & Needle to become a national name, working to help those people who feel they’ve been screwed over by the mattress industry,” Park explains. Mainly, the pair simply wants to maintain the growth of the business on the consumer side, while conserving the quality of the mattresses they provide customers now. They also have a few new products in development and are hoping to bring those to the public in the near future. “We are growing so fast so from a supply chain side of things, we are laser focused on being on top of the business,” Marino says. “When we began, we had five customer support people on our side. Today, we have about 40 customer support members and now that we are about to double in size, we will soon be hiring close to another 30-40 more people. Most challenging aspect of your job: There are literally hundreds of moving parts in any development, so it’s synchronizing the various needs, demands and opinions in a way that satisfies all of the stakeholders. Most rewarding aspect of your job: The most rewarding part is when the challenges mentioned above are solved, such as our work to revitalize Phoenix’s Uptown Plaza. It was harder and more expensive to commit to bringing the center back to its 1955 glory, with the red brick and the deep awnings and the neon signs, but the reward has been seeing the tenants, the neighborhood and the owners all embrace the end result. What’s the most important thing you’re working on right now, and how are you making it happen? Thinking about the future because it’s easy to be a critic, but it’s difficult to be prescient. The retail world is changing so quickly, so thinking about traditional anchor tenants like movie theaters and how that might change in a world with so many entertainment options. So with any acquisition, we need to define the new paradigm of where development is going and what will it look like in the future. What’s the hardest decision you’ve made so far? To start a new business at the age of 50.

In other words, I’ve been with The Village since before it even existed. Best advice you’ve ever been given: Treat people the way you want to be treated. It’s simple but it’s true. Most challenging aspect of your job: As we’ve grown, there isn’t enough time in the day to think strategically while still dedicating time to the facilities and the employees. Sometimes the biggest challenge is just carving out time to think. What you would say to someone just starting out in their career: Do something you absolutely love and don’t worry about getting rich. So long as you love your job and are excited to go to work every day, the rest will come. What’s the hardest decision you’ve made so far? To continue to invest in the Village Clubs during the depths of the recession. We had to have faith that the recession would end eventually, and we didn’t want to become just an average fitness club in the meantime. What makes The Village unique? The Village isn’t just a gym; it’s a healthy lifestyle business. What I mean by that is there is such a strong social element at every club; it’s all about relationships and connecting employees and members to create this second home that we all love. Where do you see the company in five years? Opening one or two more clubs while continuing to expand and improve the existing ones. It will also be interesting to see how technology and fitness continue to interact together, and continuing to partner with medical experts to design preventive fitness routines. What keeps you up at night? To never become complacent, to stay on top and keep the club relevant while adding value to the members.

Best advice you’ve ever been given (Both): Love what you do and do what you love. Most challenging aspect of your job (Diane): As we expand, the biggest challenge is putting systems in place to maintain our high standards. But delegating and trusting others to do what we used to do ourselves is probably the hardest. That and being patient. New initiatives you’ve implemented or plan to implement (Les): In this business you can never rest on your laurels, so aside from continuing to expand with new locations and innovative concepts, we have to make sure we are giving attention to our existing locations. For example, even though it opened in 2013, last summer we did a complete renovation of Hi Fi Kitchen & Cocktails to amp up the already impressive lighting and video system. What you would say to someone just starting out in their career? (Diane): Don’t worry about failing; it shows you what you are made of. I can guarantee anyone who is successful has failed at least once or twice. What’s the hardest decision you’ve made so far? (Les): It’s never fun to have to fire someone, whether it’s an individual or when it’s time to close an entire business and start over. Either way, it has an impact on other people’s livelihoods and we don’t take our future or our employees’ futures for granted. What makes your company unique? (Diane): I think the fact that we are so active in the day-to-day operations. Experience is huge. We have seen it all, and yet I’m still surprised. Biggest business risk you’ve taken (Les): I would have to say buying the property that Bottled Blonde and Livewire sit on back in 1996 when there were no bars or restaurants around us and several of the nearby properties were declared slum properties by the city.

Most challenging aspect of your job: Raising the money to grant wishes to every potential Arizona wish kid. With more than 540 Arizona children diagnosed with a life-threatening medical condition that would make them eligible for a wish, our goal is to reach as many wish kids as we can. Make-A-Wish Arizona can only do the work we do through philanthropy. We receive no government funding – only funds through individual, foundation and corporate generosity. Most rewarding aspect of your job: The faces of the wish kids and their families the instant they learn their wish will be granted. I also love to talk with the wish kids and their families during and after their personalized wish experiences, as you can easily see the impact their wish made, and the transformation a wish can have during a difficult time. What you would say to someone just starting out in their career: Be a lifelong student. Learn from those you admire and emulate them, and learn from those you don’t admire and do everything you can to avoid their behaviors you find irritating. Also, good grammar and spelling are important. If you don’t have those skills, start learning them now. If you do have those skills, be diligent about avoiding mistakes. And, probably most important: Bloom where you are planted. Find a way to excel every day. What’s the most important thing you’re working on right now, and how are you making it happen? Raising enough money to grant one wish a day this year – 365 wishes in one fiscal year. Every member of our staff and our board are working to make that happen. FRIDA KAHLO: HER PHOTOS Feb. 1-8, Heard Museum Attention: exhibition closing! It’s not too late to experience Frida Kahlo – Her Photos. Kahlo’s worldview becomes visible to viewers courtesy of well-known Mexican photographer and photography historian Pablo Ortiz Monasterio. The exhibition consists of more than 240 images from the 6,500 which are part of the Blue House archive. The photographs, along with Frida Kahlo’s personal items, were locked in a room of the Blue House, the residence where she spent most of her life, and revealed to the public in 2007. Plus, the tournament diverted 100 percent of its waste from landfills, living up to its tagline as the Greenest Show on Grass. The 2016 WM Phoenix Open, which mark’s the tournaments 81st year, will be held Feb. 1-7 at TPC Scottsdale. A field of 132 players will vie for the $6.5 million purse, the $1,170,000 first-place check and 500 FedExCup points. And this year, it promises to be even bigger and better with a slew of new additions.

rizona has a rich history of housing artists, and the historic Cattle Track Arts Compound in Scottsdale is no exception as it was, and is, the home and studio of three of Arizona’s most iconic artists: Philip C. Curtis, Fritz Scholder and Mark McDowell. And from Feb. 11 to March 31, Larsen Gallery will host a Cattle Track Legends exhibit. Philip Curtis’ striking portrayals in his magic realism paintings; stunning drawings on birchwood by Mark McDowell; and Fritz Scholder’s 1970s ‘real Indians’ depicted in paintings and works on paper will be presented at the Larsen Gallery exhibition. Larsen’s exhibition will coincide with Super Indian: Fritz Scholder at the Phoenix Art Museum, which features many of his most iconic 1970s works starting in late February. Enigma is a word often associated with Philip C. Curtis’ psychological paintings, which often leave more questions than answers for viewers. His more than 500 paintings and many more drawings and watercolors, as well as his influence on a host of local artists, deemed him the dean of Arizona artists. Curtis was a founder of the Phoenix Art Museum and lived at Cattle Track from 1947 until his death in 2000. “Fritz Scholder was also an enigma in that he never wanted to be known as an ‘Indian painter’ and yet his most

controversial images such as Indian at the Bar, depicting a Native American with a Coors can of beer. Scholder moved to Cattle Track in 1972 and lived there until his death in 2005. A relative newcomer to the Cattle Track Arts Compound, compared to Curtis and Scholder, Mark McDowell moved to Cattle Track in 1994. He built his own home on the property using recycled materials from various sources. He has maintained his painting and drawing studio as well and founded Tiny Satellite Press for the publication of artists’ works, including books, catalogs, portfolios and photographs. McDowell was friends with both Curtis and Scholder and collaborated with Fritz Scholder to produce his last etchings prior to his death. Scottsdale’s history is enriched with the story of the formation and expansion of the Cattle Track Arts Compound from the 1930s until today. Many artisans, writers, performers and even statesmen lived, created or performed on the Cattle Track property. The collaborative and artistic efforts of the Ellis family (founders of Cattle Track), beginning with George and Rachel and continuing with their daughter Janie, provided countless artists to thrive in the desert with notables Philip C. DID YOU ALWAYS WANT TO BE A CHEF? Absolutely not. It wasn’t until I was 16, as a butcher for my father’s meat shop, that I even handled food. While I could prepare any standard cut of meat with the best of them by age 18, when I got to ASU, I studied communication arts, not culinary ones. I took a few jobs at pizza shops, which ignited my passion. By the time I joined La Bocca as a line cook just 18 months ago, I had twice the experience of most people my age. That experience put me on the fast track – both to learn and to lead.

The stand-out for me has to be the Bocca Old Fashioned, where we make the Old Fashioned new using Buffalo Trace Bourbon, figgy pudding, orange bitters and cinnamon. It is beyond perfect with our bruschetta, especially the prosciutto and fig. WHAT ADVICE DO YOU HAVE FOR OTHER CHEFS JUST STARTING OUT? Aside from always tasting and always experimenting, I recommend local chefs learn a foreign language, even just a few key words and phrases. If you are working in a kitchen in Arizona, many of your team members will be diverse. There is no better way to earn respect than by giving it to them from the onset by understanding their language and culture. I’m fluent in Spanish and use it constantly within our team. Z88 has long been admired for its sleek atmosphere, eclectic artwork and altogether hip vibe. Its sophisticatedly sexy sips beckon for conversation over cocktails, and while their overflowing martinis are well-known, their list of classic cocktails has the perfect libation for a special occasion with a special someone. The Celebration Champagne is a brilliant pop of color with a festive kick – and we don’t just mean the bubbly. Comprised of Chandon Brut Champagne, Chateau Monet Frambois (raspberry liqueur), and peach liqueur, the concoction gets extra pizazz – and a fizzy, flirty touch – thanks to sparkling confetti sugar. “It gives the drink a sugar explosion of colors and bubbles at the top of the glass and also adds sweetness and flavor,” says General Manager Dale Jodoin. Although AZ88 opened its location at Scottsdale Civic Center Mall 27 years ago, the original location (actually named Elsa’s on the Park) opened more than 35 years ago in Milwaukee. It’s there where the Celebration Champagne was first, well, celebrated. Jodoin recommends sharing a savory appetizer while sipping the sweet Celebration Champagne. Try the baconwrapped water chestnuts or the spicy Hell’s Fire Chips, sprinkled with melted blue cheese and doused with hot sauce. f you’re looking to escape the crowds that descend upon Northern California’s major wine countries each year, look no further than Southern California, in the Temecula Valley Wine Country. n a world full of excellent midsize luxury sedans – Audi A6, BMW 5-Series, Mercedes-Benz E-Class – having to compete is certainly a feat of great proportions. One can only imagine the product planners at Jaguar attempting to win the wallets of luxury sedan buyers with their redo of the XF for 2016. The good news is that the 2016 Jaguar XF is an excellent motorcar and vastly improved from the first-generation XF that was introduced in 2009. The redesign sees a massive switch to 75/25 percent aluminum from an all-steel structure, shedding up to 265 pounds depending on the trim level. Overall, it’s 11 percent lighter, yet yields a 28 percent stiffer body. The new styling is largely evolutionary and reasonably attractive, more FEBRUARY 2016 |

purposeful than head turning. Most noticeable is an updated front fascia with large air dams beneath a grille that is otherwise a carryover from the previous XF. Unfortunately, the rear of the car is virtually indistinguishable from midsize family sedans like the Chrysler 200 or Ford Fusion. Inside, the XF has a completely new instrument panel that I found pleasant but devoid of freshness or originality, with requisite applications of brushed aluminum trim, stitched leather and wood veneer. Soft-touch materials are nice and the seats are supportive and comfortable. The new XF is loaded with state-ofthe art tech, including a new InControl Touch Pro interface and 10.2-inch screen with faster navigation and Internet-based features. In short, the infotainment system is excellent. Jaguar also advances connectivity between your smartphone and car through an app that lets you track the location, condition and information about your car from anywhere. The 2016 Jaguar XF is offered in four trim levels: Premium, Prestige, R-Sport and S (tested here). Initially, all trim levels are offered with just one engine: The 3.0-liter V-6, available with either 340 or 380 horsepower. I found performance to be more than adequate and averaged nearly 30 mpg on the highway with the rear-wheel drive model. Jaguar indicated that a 2.0-liter, 180-horsepower, turbodiesel four-cylinder engine will be available mid-2016. Unfortunately, Jaguar discontinued the superfast, supercharged 5.0-liter V-8 models with horsepower as high as 550. Although the styling isn’t a game changer, and, for now, it is offered with only one engine, there’s a lot to like and recommend about the new XF and it’s a significant step above its predecessor. anging from hundreds to thousands of dollars per pound, truffles are likely the most expensive mushroom you’ll find on a menu. As such, they have become synonymous with elegance and extravagance along with the likes of foie gras, wagyu beef and caviar. Whether placed delicately atop a dish or infused in oil, the uses of this culinary accoutrement are varied. Here, we’ve sourced some of the most tantalizing and creative uses of truffles at six local restaurants.

A testament to that is Chef Jose Garces’ take on the Mexican interpretation of flatbread, combining flavors that allow one to fall in love with something called corn smut (yes, you read that right!). The huarache de hongos is masa flatbread topped with roasted mushrooms, corn shoots, queso mixto, black truffle and a little something called huitlacoche. Huitlacoche (the aforementioned corn smut) is oftentimes referred to as the Mexican truffle. It’s essentially a fungus that grows on corn, but has been found to be perfectly safe and a sought-after delicacy with nutty, earthy flavors which mimic that of truffles. It’s truly the perfect complement in this savory dish.

This dish begins with crispy grilled polenta squares delicately placed on top of one another, creating a nest for a filling of seasoned mushrooms. The juices from the mushrooms soften the polenta just a bit, and truffle oil is laced atop the dish, creating an elegant presentation with a flavorful impact.

While sushi holds a very important place at Roka Akor, there is a great amount of beauty and tradition in the grilling practice, which evolved from the time-honored Japanese tea ceremony. A beautiful dish that incorporates the exquisite flavors of shaved truffles is the Muscovy duck breast. The rich, dark meat of the duck is lightly seared and rolled around haukai turnip and huckleberry and topped with a generous shaving of black truffle. Smooth and unexpected, this dish balances the sweet, mild flavor of the turnip with the hearty duck and refined flavor of the black truffle.

Highly anticipated steakhouse opens its doors in Scottsdale BY ALISON BAILIN BATZ

elieve it or not, we have Subway to thank for the opening of Scottsdale’s hottest new steakhouse, Eddie Merlot’s. “After I graduated from college in the 1970s, I went to a Subway restaurant while in Florida. Immediately inspired, I reached out to the founder of the cobrand – Fred DeLuca – and opened Subway’s first location in Indiana just three months later,” says Bill Humphries, who grew that franchise to nearly 750 across the Midwest by the mid-90s. In the late 90s, as Subway grew by leaps and bounds worldwide, so did high-end steak, martini and cigar bars. And while a fan, Humphries – now an elder statesman of the Subway brand and a member of several of its national boards – was surprised at how little these concepts marketed to wine lovers … or women. “I found myself inspired again. This time, to develop a high-end steakhouse that paid attention to both its male and female guests alike,” says Humphries, who opened the first Eddie Merlot’s in Fort Wayne, Indiana, in 2001. “And, in a situation of life coming full circle, Subway actually played a crucial role in making this concept a reality.” Turns out, the name “Eddie Merlot’s” was born during dinner with a fellow national Subway board member named Ed, who asked Humphries for a wine recommendation. The merlot that Humphries chose caused Ed to exclaim that he would only ever order merlot from that point on. The result? Ed would forever be nicknamed Eddie Merlot, and Humphries had a great name for his restaurant.
Humphries’ hunch about reimagining a traditional steakhouse into a femalefriendly, wine lovers paradise paid off. The brand now has 12 locations, including its most recent addition in Scottsdale. “We opened our first location in Arizona in January in the heart of North Scottsdale, nestled on the southeast corner of Scottsdale Road and Pinnacle Peak,” Humphries says. “Our goals are seemingly simple: to offer the best food, best atmosphere, best team and best dining experience the Valley has ever seen.” The menu features prime beef (which is the top two percent of U.S.D.A.-aged beef in the nation), wines from across the globe and creative signature cocktails.

The brand also has the distinction of being the only restaurant worldwide preparing its wagyu steak offerings with the bone and high marble score, which enhances flavor exponentially. For more health-conscious guests, the menu features bison filet mignon, which is less than 300 calories for a six-ounce cut, and all the steaks on the menu are free of hormones, antibiotics and steroids. The after-dinner drink and dessert menus are extensive, including two interactive offerings: a double-layered cognac vanilla brownie with hot fudge and creme anglaise, and a bananas foster dish dripping with banana liqueur, brown sugar and butter over vanilla bean ice cream, both prepared tableside (and with fire!). In addition to helping create its signature and seasonal menus, Humphries also worked with the Scottsdale restaurant design team to create a welcoming atmosphere at the new location through the use of signature decor elements including intricate “glow lighting,” twotoned woods and custom artwork that incorporates elements of stained glass, and colorful mosaics.
