Healthy Smile

Q. What in the world do healthy gums have to do with a healthy smile? Dr. Michael Smith: Just below the gums’ surface is the tooth’s root and jaw bone, the foundation for your teeth. When the gums are unhealthy, you lose that support, which can result in tooth loss and even bone loss in the mouth. Q. I’ve heard that gum disease doesn’t hurt until it’s too late; how do I know my gums are infected if they don’t hurt?
Dr. Mike: The early stages of periodontal disease are often silent. This condition can go unnoticed until the problem gets bad. Bleeding gums, unpleasant odor, red and swollen gums that may feel tender to the touch, and a bad taste in your mouth can all be signs of early gum disease. Q. Why is flossing so important to having a healthy smile? Dr. Mike: Unremoved plaque on your teeth can travel below the gumline, causing bacteria to build up. This leads to infected gums and, if left untreated, eventually causes tooth decay. Flossing removes plaque in those hard to reach places between your teeth that you can’t get with a toothbrush. Q. Does a Waterpik replace floss? Dr. Mike: A Waterpik is best used in conjunction with flossing. It helps to flush out plaque and food particles between your teeth that brushing or flossing may have missed. However, the Waterpik won’t get rid of hardened,
sticky plaque, whereas flossing and regular teeth cleanings will. Q. Why are my gums puffy and red; and why do my gums bleed when I floss and brush? Dr. Mike: Redness, puffiness, and bleeding are all signs of gum irritation and a possible infection below the gums. These are some of the first signs of periodontal disease. Q. Why do my kids, who have no filter at all, tell me my breath stinks? Dr. Mike: Kids are great at giving it to us straight. They are curious and generally know when something is not right. Bad breath can be a sign of gum disease. Different odors point to different problems. For example, periodontal disease has a different odor than other systemic diseases like sinus, lung, and diabetes. As with the other warning signs, a dental consultation and treatment can help with persistently bad breath and its causes. Q. What steps should I take to prevent or treat gum disease in order to have a healthy smile? Dr. Mike: I advocate the 2-2-2 Rule as established by the American Dental Association. Brushing for 2 minutes, 2 times a day is the minimum. Ideally, you should brush after every meal, though. In addition to daily flossing, use a Waterpik after every meal if you can. See your dentist regularly—2 times a year for regular cleanings, or up to 4 or more times a year for periodontal disease, depending on the severity and progression of the disease.

I don’t know about you, but I’ve been spending quite a bit of time at home this past month. I’ve been making a ton of progress on my book, getting some fresh air by taking walks around my neighborhood and spending a lot of time playing chef in the kitchen. Though I’m hopeful that things in the world will take a turn in a healthy direction, April might not be so different in that staying home will be the norm. But now, in my coaching practice, I get to engage in the same type of questioning. I also loved teaching law students and creating curriculum. Now I get to do that with each of my clients,” she says.
Paying it Forward
From Breakdown to Breakthrough Lawrence’s story of going from a corporate lawyer to a business coach is one of self-discovery. The stress and burnout of her job as an attorney was something she originally accepted, thinking it was simply part of life, until it resulted in a full-blown panic attack. It was then that she had a breakthrough moment. “For me, part of my identity was tied to being a lawyer. What I realized was being a lawyer was a vocation I had for a period of life. But I have lots of vocations. And, ultimately, my identity is Regina,” she says. It took Lawrence three years to fully leave her former career. Her next step of becoming a business coach seemed like a natural fit, since her background required her to create legal strategies for businesses. In 2017, she started Regina Lawrence Coaching, offering one-on-one business coaching and she has since started hosting coaching events. “Making a major pivot from corporate legal practice to being a full-time business owner was intense, challenging, but ultimately, so fulfilling,” she says. “I went from being in a corporate structure, having a boss and place of work to go to, to then becoming my own boss and learning all the little nuances of running my own business.” Lawrence admits that she misses aspects of the practice

Often times, Lawrence’s job is about giving clients permission to explore types of questions like “What are you good at that gives you joy?” or “What would be fulfilling to you?” or “What do you really love in life?” By asking the right questions, she helps her clients create their true entrepreneurial vision. Along with weekly coaching, Lawrence’s clients gain clarity on the type of business they can create that will align with their life’s purpose. “The answers we are seeing from a business coach are often inside of us,” she says. “It just requires someone to ask the right questions to pull those answers out of us. I am able to see what they already know and help them to see it too.” Lawrence utilizes her legal background, along with years of online marketing and brand building experience, to aid clients in building a custom, strategic and systematic plan of action that includes creating a niche, a brand, an online and community presence, and products, services, and offerings they can bring to the public. “I essentially take clients from inception of the idea to a full launch of the business,” she says. Making the transition from corporate job to entrepreneur herself helps Lawrence assist her clients in making their own life transitions and creating a business that is fulfilling to them. “Everyone starts at the same starting point. I believe that we are in this life for specific purposes and the business that we get to create should be in alignment with our life’s purpose,” she says.
A Joyful Life Success for Lawrence is doing something that brings her soul joy, makes a major impact in someone’s life, and compensates her for the value she brings to the table. She has studied neuroscience of the brain, human behavior, holistic nutrition, spirituality, and meditation to enable her clients to gain a deeper understanding of their life’s purpose and to build a soul-centered business. Charles Sidi is trading entrepreneurship for art, proving its never to late to follow your dreams

Serial entrepreneur Charles Sidi is taking a break from the world of real estate and product development to focus on his artwork. Sidi has worked in building design since age 19, winning awards throughout the years for his work, and he created BizBox, a mobile pop-up store for retail brands. He recently decided to pursue a career in the creative field to relieve stress and ignite passion while utilizing his natural artistic abilities. “In 2019 as I turned 50, I decided it was time to embark on a much desired art career which allows me to have space and freedom of thought,” says the Manchester, UK, native, who moved to Phoenix in 2006. Sidi’s work is unique in its style and concept, focusing on the suspension of time and the preserving of nature. “I take a natural object such as a flower and then photograph it in a number of ways in natural light and then take that image and put it into photoshop where I manipulate it,” he says. “I add hundreds of layers and opacities usually on a black background so as to give the feeling that these hundreds of real flowers are floating or suspended in motion.” There is a serenity to Sidi’s work and the more you look at it, the more you see. The artist is currently working on a series of pieces that involve floating fruit including lemons, peppers, and cucumbers. “When I am creating my artwork I am at peace with myself and it allows me to delve deep into my subconscious which is where the magic happens,” he says. Drawing inspiration from post-war pop artists of the 20th century, Sidi gravitates to simplicity and is constantly developing his skills and techniques via online tutorials and practice. The self-taught artist’s work can currently be found at Artist Studio 1.0.1 and {9} The Gallery in Phoenix.

CARVING HER OWN PATH Chaz Rayner creates beautiful masterpieces out of salvaged Arizona trees

Arizona native Chaz Rayner learned the value of hard work when the recession took its toll on her family’s construction businesses. “It was a significant hit to our family, but I remember my mom pulling up her bootstraps and rather than wallowing in self-pity she reinvented herself and got to work,” she says. At one point, Rayner and her husband lost 50% of their income due to the company she worked for closing overnight after 25 years in businesses. She was faced with a baby, debt, and no job, but remained positive and did exactly what her mom taught her. “When life threw me a curve ball it didn’t take much to figure out it was my turn to adapt and carve my new path,” Rayner says. Not wanting to be away from her baby boy, Rayner dusted off an old scroll saw (a random gift from her mother) and binge watched YouTube videos on woodworking to create signs. “My first sign wasn’t great – it broke in several pieces, but I loved the sense of accomplishment I felt making something with my hands,” she says. Thanks to the visual aspect of Instagram, Rayner was able to document her creative process and The Woodsy Fox was born. When a restaurant caught wind of her woodworking skills, she was hired to create charcuterie boards for their New Year’s Eve menu and thanks to word of mouth, Rayner’s naptime side hustle became a thriving business. She now sells her boards and signs through her Etsy store. Her passion for reusing and recycling local natural resources is demonstrated by donating 5% of all proceeds from each board to The Phoenix Tree Bank, an organization that helps plant trees in barren neighborhoods and parks. Today, the most rewarding part of her days are spent with her son rummaging around lumber mills and making beautiful home accessories. “Life has changed our path so many times that I’ve thrown my roadmap out the window. The best part of what I do is that my son is watching his mom build not only pretty things but a business,” she says.

Shaking, stirring and pouring out some seriously delicious liquid courage from behind the bar at Pomo in Phoenix is Jared Schwartz. Before Pomo, the self-proclaimed “beverage inspirer,” was handcrafting cocktails at Valley haunts like Windsor and Federal Pizza. “I love the revolving door of people who you get to meet and build relationships with in this industry,” he says. Schwartz has worked for several independent restaurant groups over the years that actually encourage staff to self-express through clothing. For Schwartz, that means maintaining a relatively relaxed style while presenting himself in an elevated way. His closet is filled with all things tailored, clean-cut and understated. Shoes and jackets are his weakness and, admittedly, he can be spotted around town shopping – Schwartz shops local whenever he can – for new clothes “all too often.” Schwartz gravitates to what he knows when shopping alone, but fortunately for him his industry buddies keep him up to date on the ever-changing trends. However, there is one trend he vehemently opposes. “I just can’t for the life of me get behind the Balenciaga sock shoe trainers.”
What cocktail describes your style? The Final Ward because it’s classic with a twist. Your must-have summer item: Hats! I love summer and the adventures the season brings, but the sun and I just don’t get along. What do you wear for a night out? Start with a crisp pair of Converse, preferably Comme des Garçons x Converse, a Scotch and Soda button-down, a cuffed pair of 7 For All Mankind denim jeans and a jean jacket. What are the most valuable items in your closet? ATHLEISURE ALL THE WAY Nicole Benedetti’s laid-back style is a nod to her career in the fitness industry

Unless she’s going to an event or out for a night on the town with her husband or friends, Nicole Benedetti lives in Lululemon leggings. Her self-described “simple, low-maintenance and athletic” look is influenced by her day job as general manager of StretchLab Arcadia. “I like to think of myself as a simple woman who doesn’t need a super flashy life, so my style reflects that,” the Arizona native says. As GM of the assisted stretching studio, Benedetti manages a team of 12 and a client base of more than 230 and plans the studio’s social media, marketing and monthly events. She also does the latter for some of her favorite brands, including Lifeaid and Lululemon. Whether on or off the clock, Benedetti can be spotted in leggings, a loose-fitting T-shirt and No Bull sneakers. Athleisure describes the bulk of her clothing and as of recently, thanks to her advice, her husband’s clothing as well. “I love giving my husband style pointers,” she says “I’ve definitely thrown out some of his clothes and replaced them with some stylish Lululemon athleisure.” In addition to her husband, she advises everyone to explore all their options when it comes to fashion “Be authentic to you and your style, but also don’t be afraid to step outside your comfort zone and rock the style you never thought you could.”

Belgium-raised pastry chef Jenna Leurquin recently opened a second location of JL Patisserie in Central Phoenix, with the first located in Scottsdale. The retail store and cafe serves French-inspired pastries, breads and croissants. All items are made from scratch, utilizing high-end ingredients while featuring locally sourced, seasonal components. Inspired by Leurquin’s time in France while attending le Cordon Bleu, where she studied pastry and cuisine and went on to specialize in patisserie and bread baking, all breads and croissants at JL are naturally fermented with their sourdough starter. JL also partnered with a local roaster to design a custom blend of coffee, which is served at the Phoenix location. The eatery is also currently developing a brunch menu. www.jlpatisserie.com.
Pomo Restaurant Group recently opened Pomo Pizza, a new casual dining concept. Located at Biltmore Fashion Park, the 1,500-square-foot restaurant is a full-service eatery with an open kitchen with bar seating and a large pet-friendly outdoor patio. Pomo Pizza is a spinoff of Pomo Pizzeria and specializes in varieties of pinsa, pizza Romana and classic-style pizza. The pinsa Romana is a style of focaccia flatbread that predates pizza, with a crisp bottom and airy center. Pizza Romana is a truly authentic Italian dish that is made with natural yeast and 48 hours of leavening-maturation. Postino recently launched a community-focused initiative, ramping up its to-go program and helping people at home prepare delicious meals. The locally based eatery is offering curbside pickup specials including a date night-in package ($25), featuring an appetizer, bruschetta board and salad; a kickback pack ($45), which includes a board of bruschetta, three appetizers and a cheese board; and for wine lovers, a wine to-go two- and four-pack ($30 and $55 respectively). Recently, SoHo-inspired MercBar unveiled a stylish new lounge area, an extended bar and event space, and small plate offerings. The menu includes an artisan cheese board, cauliflower tater tots, rosemary truffle popcorn, chicken satays and one extra “egg-cellent” dish for the spring in the Beet Juice Deviled Eggs ($9). The dish is made by hard boiling Hickman’s eggs and then separating the yolks from the whites. The whites are then brined in fresh beet juice while the yolks are mashed with mayonnaise, Dijon mustard and a super-secret combination of herbs and spices. The resulting velvety-rich yolk cream is spooned back into the whites, which are now vibrant magenta, and topped with Korean chili flakes, truffle oil, salt and pepper. Pigtails’ Pebbles Flipstone will made you feel like a kid again (but with a grown-up twist)

When The Whining Pig opened its Desert Ridge location in 2018, it marked a new era for the brand. While other locations only serve beer and wine, the Desert Ridge space boasts a semi-hidden cocktail bar within The Whining Pig called Pigtails. “The response was overwhelming, we opened a stand-alone Pigtails bar in Downtown Phoenix earlier this year,” says Kyla Dahl, bar manager of Pigtails. Accessible via a dark hallway, Pigtails offers a twist on the traditional cocktail menu. “To best help guests navigate it based on their tastes and mood, it’s divided into four categories: light and citrusy, refreshing and fun, bold and boozy, and cool and nerdy,” Dahl says. “Cool and nerdy is our take on experimental offerings.” Among them is Pebbles Flipstone ($11), inspired by Nikka Coffey Gin. “The spirit smelled like Fruity Pebbles to me, and tasted faintly like them to fellow bar manager and expert mixologist Bud Shaw. As a result, we were eager to develop a composed drink reminiscent of the cereal,” Dahl says. To make, Fruity Pebbles are steeped – like tea – into water. The water, with sugar, is used to make simple syrup. “We mix the gin and syrup with grapefruit and lime juices as well as bitter aperitif Bruto Americano, which we’ve infused with cherry,” Dahl says. “The combination balances the sweetness while bringing out each flavor of the cereal.” Cream is then added, and the ingredients get a dry shake until frothy. Michael Dei Maggi is the executive chef of the Talking Stick Resort Arena, overseeing all arena culinary operations for the arena as well as for the Phoenix Suns and the Phoenix Mercury games.
Why do you cook? I want to see childlike wonderment in a person’s eyes when they see, smell and taste my food. What inspired that perspective? I grew up in a half-Italian, half- Slovakian household eating globally inspired food regularly. Also, my father’s work took us to Europe often, where food is a celebration. I distinctly remember visiting the two-Michelin starred Le Manoir aux Quat' Saisons in the United Kingdom at 7. The childlike wonder I had during that meal is what I live to give others. How did you get your start? I worked at Lighthouse Inn, a historic property in Connecticut, after high school. Their chef helped me through the nearly year-long process to get accepted into Le Cordon Bleu Paris in 1999. What has been your journey since? I’ve had the honor of working at multiple Michelin-starred and James Beard-nominated restaurants in New York, California, Texas, and Arizona, including a stop at Cindy’s Waterfront at the Monterey Bay Aquarium, where I spearheaded a culinary operation in collaboration with the aquarium’s Seafood Watch sustainability initiative. Why did you join the arena? This opportunity is unlike anything else I have done in my career. Talking Stick Resort Arena will soon undergo a $230 million transformation. We are not only upgrading the eventgoer and fan experience via our culinary offerings, but we are aiming higher: We want to become the preeminent culinary and entertainment experience in Arizona and in the NBA. Can you share any plans? Expect an upgraded culinary experience throughout the premium club spaces and suites with an eclectically curated menu. Smoked Eggplant Spread
Flint by Baltaire A twist on baba ganoush, first eggplant is charred with live almond wood on a custom grill. Next, it is steamed and processed into a silky smooth eggplant pulp. The flavors infused into the eggplant through the wood fire alone make the dish a winner, but chef Travis Strickland’s inspired toppers of sharp, ripe pomegranate seeds as well as crunchy pine nuts, refreshing mint and Aleppo pepper, which is an almost fruity spice, come together to make each bite a true explosion of Middle Eastern flavors. Queso Fundido
Sierra Bonita Grill There are many Mexican-inspired dips in the Valley, but this is one of the only that uses Menonita cheese, a cheese first made in Chihuahua, Mexico, by Mennonites (hence the name). It is mild and made from a combination of both pasteurized and unpasteurized raw cow's milk, making it ideal for melting. The Menonita is mixed with several housemade cream cheeses in a cast-iron skillet before being baked until bubbly and golden brown. The skillet is topped with spicy chorizo, diced tomatoes and green onions, and it is served with homemade tortilla chips for dunking. $12. www.sierrabonitagrill.com.
Deviled Egg Dip & Chips
Windsor Rich and creamy – and sometimes too tasty to share – this dip is made using whole hardboiled eggs, spices, salt, pepper and dijonaise. Once combined, fresh-from-the-oven smoky tender belly bacon bits and crumbles of salty Gorgonzola cheese are added. The intoxicatingly savory ingredients are then all mixed together, spooned into a bowl and topped with another helping of bacon before arriving at the table with housemade crispy potato chips. $9.50 www.windsoraz.com.

Once relegated to sports bars and big-box chain restaurants, dips have come into their own on appetizer and small bites menus across the Valley. Now elevated and often elegantly served, these spreadables can easily be the stars of the meal. Here are some local favorites, and for now, be sure to play it safe and smart when ordering – divide and conquer when it comes to sharing dips by portioning them out on your own plate.
Joyride Taco House This explosion of cheesy goodness starts with the marriage of three craveable cheeses: buttery and mild Monterey Jack, Asadero and Oaxaca. While similar, Asadero hails from southern Mexico, while Oaxaca is from the north side. Oaxaca is also drier in texture and harder, making it an ideal complement to the softer cheeses. Once combined, the cheeses get a heaping of roasted peppers and mild pico de gallo (called pico gringo at Joyride) for a slight kick before being melted to perfection and served with housemade tortilla chips. $7. www.joyridetacohouse.com.

Pimento Dip
Short Leash Hotdogs This classic Southern dish isn’t very common in the Valley, making Short Leash a must-visit destination to get your fix. The star of the dip is the pimento, a red, heart-shaped chili pepper that is sweet, succulent and adds just the right amount of zip. To make, diced pimentos along with red onions are mixed with a combination of smoked Gouda and cream cheese as well as mayonnaise and several spices including garlic powder, onion powder, cayenne pepper, salt and pepper. Traditionally this recipe uses cheddar, but the owners’ family recipe uses Gouda, a truly original spin. Once baked, the luscious result is served with fried naan. $8. www.shortleashhotdogs.com.
Garlicky Hummus with Kisra
butter. While still hot, the chicken is shredded and combined with sharp American cheddar and a copious amount of blue cheese crumbles before being baked until bubbly. Fez Restaurant & Bar Known for adding Moroccan flair – not to mention spice – into its dishes, Fez does not disappoint with this take on hummus. The base is a standard chickpea recipe, but then things get kicked up several notches with the addition of enough garlic to kill a vampire. The dish is served with Kisra, which is thin, spongy fermented bread native to Africa and especially popular in Morocco, Chad and Sudan. It is slightly sour and the perfect consistency to sop up every bit of the hummus. Artichoke, Shrimp and Crab Dip Babbo Italian Eatery As decadent as it is delicious, this seafood lover’s dream starts with large chunks of fresh lump crab and shrimp. The salty and slightly sweet crab and mild, perfectly cooked shrimp are then combined with both sharp, piquant and utterly Italian Romano cheese and pepper jack cheese, which is a blend of buttery Monterey Jack and combination of peppers including jalapenos, serrano peppers and habanero peppers. COMIDA AT THE COLONY Revolu offers modern Mexican street fare at a new Phoenix location

Revolu Modern Taqueria and Bar opened in Peoria in 2016 by owners Jeremiah and Deena Gracia who each have more than 25 years of restaurant experience. In December 2019 the couple opened a second location on 7th Street north of Missouri Avenue at The Colony. “We saw a need for modern Mexican street food in the area,” Jeremiah says. “In the short amount of time we’ve been here, we’ve received a lot of love from the uptown community.” Revolu is named for a popular street in Tijuana, Mexico, near San Diego where Jeremiah grew up. “Revolu is very personal,” he says. “The restaurant and the menu are inspired by my memories of being raised by my grandparents in San Diego.” Jeremiah moved to Arizona in 2006 for a corporate restaurant job, where he met Seattle native Deena. After several years of dreaming, the couple opened Revolu. Revolu is known for its street tacos. Favorites include the lobster taco with chili lime aioli and roasted corn, el potato head with cheesy chipotle mashed potatoes, surf and turf with grilled steak and blackened

shrimp, and piggy in a poncho, a grilled beef hot dog with bacon and cotija cheese. Gluten-free and vegetarian tacos are also available. Tacos are $3.75 each or three for $14, served with cilantro rice and black beans, while select tacos are available for $2 each on Taco Tuesday. In addition to street tacos, the fromscratch menu includes shareable appetizers such as street corn nachos ($13) and carne asada tots ($13), as well as fajitas, burritos, salads, bowls and desserts including a churro sundae ($9) and cinnamon sugar donut holes with Mexican chocolate and raspberry sauces ($8). Weekend brunch offerings include chorizo egg hash ($14), chilaquiles verde ($14) and tres leches French toast ($12). Revolu’s extensive beverage menu offers several types of tequila and tequila flights. Signature cocktails include the Michelada ($7), a popular Mexican beverage made with beer, tomato juice, lime juice and a variety of spices; Mexican and Mezcal Mules ($10); mimosas ($7); and a variety of margaritas, including the popular Deena-rita ($10), named for the owner, made with tequila, fresh lime juice and Mexican Squirt grapefruit soda. The husband-and-wife team, who have four daughters between the ages of 7 and 16, can often be found at the eatery, making connections with their diners. “We are local and independent,” Jeremiah says. “We like to be in the restaurant and get to know our customers. We offer a casual, colorful and fun family-friendly atmosphere.” Revolu’s normal hours are Tuesday through Thursday and Sunday from 11 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m. and it is closed Monday.
