up close Easily identifiable by his beard, unique eyeglasses and colorful vintage wardrobe, Shore is frequently found putting on a multimedia event, investigating new historical leads or hosting a night of old-fashioned bingo at the The Clarendon Hotel and Spa, where he is a concierge. It’s a job that suits Shore well, allowing him to personally engage visitors in Phoenix’s rich background and indulge in his vintage Atomic Age style. “I’ve always had a penchant for dressing based on emotion,” Shore says. “Not [based on] ‘does it make me look good’, but [rather] ‘does it make me feel good?’” Shore sees his style as part of his branding. “Even in photos taken of me from the back, people know it’s me,” Shore explains. “It’s my own introduction.” Originally from Odell, Indiana, a town of 25 people, Shore developed his independent sense of style at an early age. “Mom always let me dress myself,” he says. “She never interceded, even if she didn’t like it.” Shore left Odell to attend Purdue University, and graduated with a Bachelor of Arts in Communication in 1990. “Odell was a great place to grow up, but not to grow old,” he explains. Shore was accepted to the Library School at Indiana University and received his Master of Library Science in 1992. Subsequently he interviewed for several jobs including one in New York City, which he chose, working for the Brooklyn Public Library. Shore traveled from branch to branch in Brooklyn, with Coney Island being his favorite. He developed his talent for talking to people and uncovering their stories and personal journeys. “People would say I’d talk to a stump,” Shore says. At the end of 1999, Shore was faced with making a major lifestyle change due to a deplorable housing situation and a large increase in rent. Shore found a vintage 1960 apartment to rent in Phoenix and took a job working for the

City of Phoenix Public Library in South Phoenix, an area that people told him wasn’t safe. “It’s all perspective after living in New York City,” Shore explains. “I didn’t see ‘danger.’ What I did discover is that there is a very strong oral tradition in that community.” Just as he did in Brooklyn, Shore listened to the stories that were passed down in the local community in the course of his work at the library, and it wasn’t long before people began saying he knew more about Phoenix history than they did. Shore transitioned to the Maricopa County Library District in 2006, where he travelled from one branch to another.

The next year, he worked on a project that removed the Dewey Decimal System and reorganized the library, using book stores as a model. This project received press coverage on National Public Radio (NPR). “The project was a success,” Shore says. “Patrons came in and found their way easily.” However, the change was also controversial. “I received both death threats and kudos,” he says. “People questioned my upbringing and my intellect. But I felt good because I was bringing about change, change for the better.” In 2009, after completing the project and seeing the national attention that it received, Shore decided in it was time to become a consultant to libraries, but his timing was bad. The libraries couldn’t afford his consulting services due to budget constraints in the flailing economy. “It was a time to look at what my passions were: community building, information, and theatre,” Shore says. Realizing a job didn’t exist that would allow him to combine those passions, Shore decided to create his own opportunity. His first multimedia presentation, which was about the history of Sun City, set the tone for how Shore presents today. He uses photos, film clips, and music to create an engaging multimedia experience. His sources often come from people he meets at events or who read about him. “People are my best source,” Shore says. “People will talk about things not in magazines.” Shore has a number of upcoming community projects, such as giving historical presentations to fourth graders in the Paradise Valley School District and developing an Entrepreneurship for Creatives workshop through Gateway Community College. He will also be hosting a multimedia exhibit “A Month of Marshall,” in September at Chartreuse (www.chartreuseart.com). Sami Carroccio and SniffAZ’s mission for change BY KELLY POTTS PHOTO BY MARK MORGAN

H

elping animals has always been a passion for Sami Carroccio, starting at just age five when she cared for stray kittens she found behind her family’s home. After volunteering with various Valley animal rescues since 2005, Carroccio set out for for an organization that tackled the root of the animal overpopulation problem. She stumbled upon SniffAZ, (www. sniffaz.org), a not-for-profit, all-volunteer Valley organization established in 2012 dedicated to funding low cost and no cost spay/neuter services. Carroccio has been recently named to SniffAZ’s Board of Directors. “I loved SniffAZ’s mission and the fact that it is 100 percent volunteer run so I was thrilled to join the volunteer team,” Carroccio says. Since the inception of SniffAZ in 2012, euthanasia in Maricopa County has been reduced by 71 percent. SniffAZ’s raised funds and donations have resulted in over 2,600 spay and neuter surgeries, saving 1,300 shelter animals. On November 10, Sniff is hosting its annual event, where community members can sponsor or donate an auction item for the event. All proceeds go toward helping Sniff continue to spay and neuter animals throughout Maricopa county.

Where are a few of your favorite spots around the Valley? A few of my favorite spots around the valley are the Phoenix Art Museum, Helton Brewing Company, Joe’s Midnight Run, and The Parlor. What’s something that would surprise people about you? I played the violin as a child for 10 years and recently picked that back up. What do you like to do in your spare time? I enjoy hiking and kayaking throughout Arizona, weight lifting, cooking, reading, seeing performances and going to exhibits and museums. I absolutely love the outdoors and often drive up north to Prescott or Flagstaff. UPTOWN |

iana Brandt makes the mouths of her 30,000 Instagram followers water with each delectable photo she posts on her account. Her passion for food and the culinary curators behind each dish takes center stage on her growing social empire, AZFoodie. From Facebook and Instagram to Twitter and her blog, AZFoodie is a hub for food fanatics. Brandt makes food delicious to the eyes. Her secret? Good lighting and the perfect angle. Her love of food fostered at an early age. Brandt's parents travelled the world and brought an array of flavors home with them. Various cultural influences were present in the meals her family ate together. Brandt fell in love at first bite. AZFoodie provides Brandt and her fellow foodies an outlet to wine, dine and bond, directing them in the most delicious direction. “I have built really strong friendships through AZFoodie. That's what food is all about to me, bringing people together,” she adds, “I consider myself quite lucky to get to break bread with so many amazing people.”

Can you tell us about your pop-up dinners, Eatables? Eatable Events is all about giving the chefs the opportunity to get creative in the kitchen. They collaborate with other chefs, test out menus and ideas. We take the chefs out from behind the walls of their restaurant and [really] get to know them. What are some of your other passions and hobbies? With the two kids, I feel like I have no time to do anything else but it’s important that I do something to take care of myself. hat started as a profession in photography for Lisa Forester quickly switched to a passion for hair and makeup. After doing a model’s hair and makeup on set when she was photographing for a local modeling agency, Forester found that she was a natural at the craft. From there, photographers started calling her to do makeup and hair on set and, before she knew it, her new passion turned into a full-fledged career. Since then, Forester has worked with countless pros and celebrities in the industry, ranging from Annie Leibovitz and Walter Chin to Mark Seliger and Keanu Reeves, to name a few. Her personal style is classic, simple and understated with a dash of cowgirl chic. “I love cowboy boots! I grew up riding western so pretty much lived in them as a child,” Forester says. She gravitates toward wearing Hermes, Ralph Lauren and Kanye West’s new line (Yeezy), and some of her favorite makeup brands include IT Cosmetics, Anastasia Beverly Hills and Smashbox. The mother of two and selfproclaimed “morning person” also enjoys going on long walks with her husband and visiting Los Cedros in Carefree, Arizona, to horseback ride.

What are a few beauty products that you cannot leave the house without? This is easy, lipgloss! And Jo Malone Pomegranite Noir [Cologne]. What is one of your favorite upcoming trends for makeup? I am thrilled to see makeup trending back to natural these days, I was not a big fan of all the contouring. What was that? Where does your love for the beauty industry stem from? I think I always had an eye and appreciation of everything beautiful, hence my love of horses. I also painted as a child so it seems the painting was meant to be, now I paint faces.

s the co-owner of Keep It Cut (www.keepitcut.com), a relaxed yet urban subscription-based haircut establishment, it is Jacob Meltzer’s job to keep up with the latest hair styles – but it’s his choice to keep his wardrobe stylish. Metlzer’s daily duties as an entrepreneur of a small growing business vary and so does his “uniform.” He adapts his clothing to the situation at hand, whether that is processing payroll, meeting with staff or fixing an unexpected maintenance issue at one of the salon locations. You can typically find him in something comfortable and effortless in a bright color or pattern. “After giving up my corporate job I can tell you one thing I don't wear anymore though – my dress shirt and tie,” he says. Although his style, both professional and casual at the same time, goes from work to play without a hitch, Meltzer can often be found in his trail runners and running shorts on his time off. He enjoys adventuring to new places, exploring nature in Northern Arizona and attending local beer festivals.

What would you say is the most popular men’s style right now? Summertime means the hair comes off. The disconnected haircut is most popular right now, with short sides and back being tapered up to a much longer top. The top is then combed over to one side, leaving a part on the opposite side. To add effect, some men even have the part cut thicker to make it pop visually. What is the most important thing to remember when styling your hair or facial hair? Everyone has a style that will make them look great, but not everyone can pull off every style. Don't try to put a square peg in a round hole. Work with a stylist to find a cut and style that matches your face shape and personality. With the right cut and a little hair product, everyone can look and feel incredible.

FROM PIROUETTES TO PÂTISSIER Executive Pastry Chef Sarah Chisholm shares her journey from ballerina to Phoenix’s top baker

W

hen Sarah Chisholm moved to Phoenix from Chicago in 2011, she never imagined that in just a few years she would be leading a team of pastry chefs at downtown Phoenix’s largest gourmet bakery. In fact, as a professional dancer, she never intended to work in the restaurant industry at all. Today, the 25-year-old Arcadia resident is the executive pastry chef at St. Francis and Phoenix Public Market Café, spearheading the restaurant’s new wholesale bakery division. But it was through a series of unpredictable – and at times, unnerving – events that changed her destiny from Ballet Arizona company member to successful pâtissier. From a very young age, Chisholm pursed her lifelong passion of becoming a dancer. “I was reprimanded in school for always needing to move and losing focus quickly, so my mom took me to an open (ballet) performance and asked me if I wanted to try,” says Chisholm. “I was

three and I never stopped.” As a teen, Chisholm attended the fine arts high school at the University of North Carolina School of the Arts under the direction of Ethan Stiefel, best known outside of the dance word for his performance in the 2000 hit movie Center Stage. “I was exposed to phenomenal teachers and professional companies actually came to scout us,” she says. At age 18, she started her first professional career with Miami City Ballet, a world-renowned company known for its Balanchine technique. The highly respected ballet method was developed by its namesake, George Balanchine, who was one of the 20th century’s most prominent choreographers and founder of the New York City Ballet Company. “For me, dancing Balanchine was the height of dancing ballet. He is known as the father of American ballet and without a doubt changed the world of dance,” she explains. UPTOWN |

It was through her passion for Balanchine that ultimately drew Chisholm to Phoenix. When she learned that Ballet Arizona was holding open auditions under the creative direction of Ib Anderson, one of Balanchine’s proteges, she jumped at the opportunity. At just 19 years old, she was the only dancer selected from 200 hopefuls at the audition. “What’s amazing is if you would have told me six years ago I would end up in Phoenix dancing for Ballet Arizona and Ib Anderson, I would have thought you were absolutely crazy.” Chisholm spent the next several years as a Ballet Arizona company dancer, working on major tours, traveling to New York

City and Chicago for performances. She danced the main roles in several pieces created by Anderson, as well as other distinguished choreographers including Alexei Ratmansky and Alejandro Cerrudo. But everything changed in June 2014. Chisholm fractured her leg in three places, an injury that would ultimately end her career as a professional ballerina. “In reality I would have never been able to jump, point my foot or dance the same. So I was faced with something I hadn’t planned on thinking about or feeling until much later.” At only 22 years old, the world she spent her life building came to a sudden end. UPTOWN |

So much more than a job, the strict discipline and physical demands required by ballet had come to encompass every aspect of her life. For the first time, she faced a new and uncertain reality. “(Ballet) is a lifestyle and the work never stops when you leave the rehearsal studios or the stage,” Chisholm says. “It was my lifestyle and the only one I knew. I spent my entire life working towards the goal of dancing as a professional and I had made it, but now what?” The time following her injury was one of introspection and discovery. She often felt lost, even depressed, as she came to terms with finding a new sense of self. “The feelings of starting over were all overshadowed by the heavy reality that I had lost my identity,” she recalls. “I identified as a ballerina and so the hardest thing was to connect with Sarah.” Rather than let herself be overcome by these feelings, she faced them head on with the determination instilled in her by her ballerina upbringing. While it may have been the end of one career, she was still at the age when most of her peers where just embarking on their own paths. “Who do I want to be? Am I going to let the past be the highlight of my life, or just a steppingstone towards the good things coming?” she asked herself. “I realized that I was in the doorway to become more than just a ballerina, to add to my life’s story. Now when I see dancers going through similar things or friends who are deep in their own troubling times, I offer the advice that this moment is a massive opportunity.” At the time, Chisholm didn’t know that her massive opportunity had already begun to knock. Raised to appreciate food at its finest, Chisholm was already a budding baker. “I always loved to bake. My ballerina mind likes to put things in order. It likes to go into the tiniest detail and define it. It likes precision and pretty things.” Growing up with homemade meals prepared by her mother, who studied cooking in Paris, Chisholm always associated the comfort of sharing meals with friends with the feelings of love and appreciation. So it was natural that, even when she was still dancing, she and her restaurateur boyfriend, Aric Mei, would host “Sunday


Social Club” at their Arcadia home. As owner and designer of The Parlor Pizzeria in Phoenix, Mei introduced Chisholm to a social circle of some of Phoenix’s best chefs and industry leaders. But even with a houseful of foodies, it was Chisholm who was in charge of the baking. It was during one of these dinner parties (“After lots of wine and no dessert planned – woops!”) that Chisholm created her now-famous “Ballerina Cookies.” Among those in regular attendance was Aaron Chamberlin, the owner and head chef of St. Francis and Phoenix Public Market Café. He took notice of her signature cookies and demanded she bring them to his concepts. “Aaron was finally like, ‘When are you going to come into the restaurant and make these for me?’” laughs Chisholm. “He gave me an opportunity to realize I could make a career of what I loved doing: feeding people and loving them through food.” She started working for Chamberlin soon after her injury, learning handson with former St. Francis pastry chef Katherine Dwight, whom Chisholm describes as “an incredible teacher.” She quickly honed her craft, specializing in notoriously difficult and increasingly trending French macarons. She experimented with new flavors, creating a decadent selection including chocolate tea, salted caramel and lemon hibiscus macarons. Chisholm continued to pour herself in her new destiny, learning everything she could about the intricacies of pastries. In the summer of 2015, she spent two months in Europe, working in kitchens and discovering new techniques to bring to the Valley. “That was another massive learning experience for me. I went to see what else was out there … to see for myself how pastry fit into the lifestyle and from there, find out how I could fit pastry into our lives here in Phoenix.” This hard work a dedication paid off. Earlier this year she was named the executive pastry chef of St. Francis and the Phoenix Publix Market Café, as well as tasked with overseeing the brands’ new wholesale division. “Really what Aaron and I set out to do was create the best bakery in Downtown Phoenix,” she explains. “The goal has always been to make the best

pastries we can. Fortunately we have had great response and support from the community, so it just made sense to start delivering our pastries around the Valley.” Today her pastries are available in local cafes and coffee shops such as Cartel Coffee, Mornin’ Moonshine and Peixoto Coffee. She credits the success of this new venture both to the outstanding quality and popularity of her fresh pastries and the overall local-eccentric attitude of the growing Phoenix food scene. “There’s so much innovation and (the Phoenix food scene) still relatively young. I love how many local farmers are sustaining the restaurants here,” says Chisholm, noting that one can measure the growth AUGUST 2016 |

of the industry in just the five years she’s been a Phoenix resident. “There is so much possibility and creativity and drive to help our city’s culinary presence progress quickly.” The most important ingredient in her success? The love and care she puts into her work, along with the passion and dedication for self-improvement no matter what life has in store. “To be successful you have to manage yourself constantly. You have to never be satisfied. You have to know where your current limits are and then obsessively push to raise them. You have to believe you can do it, and if you don’t believe, than you fake it until you do.”

Locally owned and operated Grimaldi’s Pizzeria will be featuring a wine currently only available at the pizzeria. The Grimaldi’s team traveled to Italy in 2015 to create a unique blend of Tuscan red wine. The end result was Mille Gradi, an easy drinking red blend that is light enough to pair with the Kale Chopped Salad or a board of bruschetta, but robust enough to hold up to one of their famous meat topped pizzas. Mille Gradi was a joint project between Grimaldi’s and the renowned Rocca delle Macie Estate, owned by Sergio Zingarelli, and is a blend of three grape varietals: sangiovese, syrah and merlot. Rocca delle Macìe was established in 1973 and is a family owned winery in the heart of the Chianti Classico zone. Grimaldi’s signature wine Mille Gradi is Italian for “1,000 degrees” which signifies the hot coals that Grimaldi’s uses to cook their pizzas. Mille Gradi will be available at all Grimaldi’s locations by the glass, carafe or bottle. The influence of good wholesome home cooking from my grandmother, mother and nanny. Early in my life I was a vegetarian and created many dishes that I would eat in my own home. I have revised many of those recipes used them as the foundation of some of the most popular dishes on my restaurant menus today. FAVORITE FOOD MEMORY:

I have two favorite food memories: one, my nanny’s southern fried chicken, mashed potatoes with gravy, and string beans done the real soul food way; and two, the James Beard House dinner that I prepared in 2014 in New York City prior to opening mw newest restaurant Mariposa. Leaving the Bay Area in 1995, I was inspired by the ethereal beauty of Sedona, but found the food scene was very backwards and stale, almost like it was an afterthought. hat is better on a hot day than a refreshing margarita? If you’re craving more than just your average sweet and sour tequila mixture, plan on having your next drink at Rico’s American Grill. We suggest ordering the strawberry jalapeno infused margarita – a seasonal favorite that’s made in a unique way. At the core of the recipe is a slow infusion process that Rico’s prepares inhouse, starting with the use of fresh strawberries and jalapenos to infuse the mixture over a period of seven days. “Once the flavors, aromas and spices have seeped in, creating a harmonious blend of spices and sweetness, we drain the tequila from the fruit and use that as a base spirit,” explains Manager Patrick Wilson. “We top it off with fresh lime juice (squeezed daily in-house to eliminate the processed sweet and sour base) and agave nectar resulting in a spicy, refreshing seasonal margarita.” The finished product ($12) is an explosion of flavors. “You have the slight heat of the jalapenos warming up the taste palate, the tart of the lime juice on the tip of your tongue and the agave nectar smoothly binding together all the ingredients,” Wilson says. his summer, nearly 50 years after the original Pininfarina-styled Fiat 124 Spider roadster launched in Turin, Italy, Fiat revives the legendary nameplate. The original Fiat 124 Spider came to the U.S. in 1968, and 170,000 were sold when it was discontinued in 1983. There are 8,000 still registered in the U.S. today and 40 percent of those are owned by millennials and Gen Xers. That 124 Spider was a front-engine, rear-drive, two-seat roadster that was as charming and lovable as Italian flair can get. Designers of the new 124 Spider went to great lengths to re-establish that

look, feel and thrilling drive experience. For its product, the folks at Fiat looked east, to the people who know a little bit about small roadsters — namely, Mazda, who has put nearly 1 million MX-5 Miatas on the road over the past 26 years. The new 124 is basically a Miata, reskinned and with an Italian accent. The vehicles are built alongside each other in Hiroshima, Japan. Outside, the look is classic Italian. The grille is hexagonal with honeycomb mesh, flanked by deep-set headlamps with LED surrounds. The rear makes a strong presence but reminds me more of a Viper. Inside, the interior looks as though it was lifted intact from the Miata but with Fiat badging. I give the nod to Fiat for upgraded leathers and materials, with seat trim available in either black or saddle (a rich tan color). I especially like the speakers in the headrests. One of the best features is opening and closing the convertible top, which can be easily handled with one hand from either front seat. The Spider is powered by a turbocharged 1.4-liter engine with up to 160 horsepower, connected to either a sixspeed manual or automatic transmission. Handling is crisp, the ride a bit on the soft side for a sports car and power surprisingly excellent. The Spider is available in three trim levels: Classica, Lusso and Abarth, all priced under $30,000. There’s also a special launch edition – Prima Edizione Lusso. Priced at $35,000, this trim comes in a unique blue color and is limited to just 124 models. Among the oldest wineries in Napa, Francis Ford Coppola acquired more than 1,500 acres of the property with profits from The Godfather in 1975. However, the brand name and remaining 94 acres were bought by another company, who began making lower-quality wines under the Inglenook label for decades. In 2011, Coppola succeeded in acquiring the rest of the land and restored the brand to its original glory. To really indulge in the entire property, consider the “Inglenook Experience” reservation option for a tour of the chateau, vineyards and Infinity caves (yes, actual caves!), culminating in a seated cave tasting.

The Valley is filled with culinary masters that have created a smorgasbord of charcuterie dishes that push textural boundaries. Load up the thin marbled and toasted bread and you’ve easily got the makings of a great start to an incredible dinner.

Creamistry, allows customers to create their own individual ice cream treat, made fresh right before diners’ eyes with the help of liquid nitrogen. Ice cream goers can choose a size or specialty (ranging from shakes to floats and more), next they select an ice cream base (including premium, organic, Greek yogurt, non-dairy, vegan and gluten free options) and one of nearly 40 flavors (ranging from birthday cake and sea salt caramel to Madagascar vanilla bean and blood orange sorbet) and finally they select toppings (candy, fruit, nuts, cookies/cake).
