ZARCO AND CARMEN GUERRERO The art of keeping traditions alive BY MIACHELLE DEPIANO

Many people migrate to Phoenix and they bring with them their art, culture and traditions. Carmen and Zarco Guerrero, well-known artists and cofounders of the Cultural Coalition, are no exception. continued… OCTOBER 2016 |

up close The pair is doing their part in keeping the indigenous traditions of Dia de los Muertos not only alive, but also relevant and modern. By partnering with smaller community programs, local performance artists and community service agencies, they created a growing cultural network that teaches the Phoenix community about Dia de Los Muertos, an indigenous celebration that traces back to the Olmec civilization in Mexico. The Guerrero family has long had an artistic influence on numerous levels. The family traces its genealogy back to the Acjachemen peoples displaced by the Spanish at Mission San Juan Capistrano and includes many notable musicians and artists including Zarco’s grandfather, a Mesa sign painter who had aspirations of being a painter; his father, a formally trained portrait painter; and his uncle, who was Frank Lloyd Wright’s photographer. Carrying on the tradition, Carmen and

Zarco’s son, Quetzal Guerrero is a wellknown international musician. Carmen, originally from Recife, Brazil, graduated from Oberlin College in Ohio with a degree in economics. She is a classically trained pianist and also plays the guitar, the accordion and the vibraphone. She, along with Zarco, was a member of Zum Zum Zum, a popular world beat band in Phoenix from 19822000. She dabbled in photography for a short time, and had an exhibit while they were in Japan in 1979, the year she and Zarco were married. Today, Carmen’s primary artistic focus is on beading. She learned beading from her grandmother when she was about five years old, and loves creating mandalas using design inspirations from Brazil. “I’m fascinated with mandalas and the round form,” Carmen says. “Beading is my meditation now.” Zarco is a musician and a wellknown mask artist. As a child, he grew up watching the creative process in his father’s studio, seeing blank paper and charcoal become a portrait. “I wanted to know how I could that,” Zarco explains. “To me, it was magic, just like making a dove disappear.” Zarco, whose father taught art classes, began taking classes in junior high school. He had a fascination with turning drawings and paintings into sculpture, and he began creating sculptures using plaster. “My first subjects were my parents and grandparents,” Zarco says. At the age of 20, Zarco went to Mexico to study sculpture and muralism, and there he found his passion for masks as an art form. “Masks were, in ancient times and today, an essential element in celebrating indigenous culture,” Zarco says. “It was a paradigm shift [for me] because the mask is meant to be worn, meant to dance.” In the 1970s, the Cesar Chavez Farmer’s movement was a big influence on Zarco, both personally and artistically, as the movement promoted social activism through art. Zarco founded the organization Xiconindio, which eventually became Xico. Xico’s main focus was on the art of printmaking, but the UPTOWN |

Guerreros wanted to start an organization that focused on the performing arts and instilled an awareness of the indigenous culture. So, they formed the Cultural Coalition (www.culturalcoilition.com) in 1996. The Cultural Coalition’s mission is to provide cultural programs that foster community engagement through the education, promotion and development of local indigenous arts and artists. The Dia de los Muertos celebration is the culmination of the fundraising, outreach and educational programs conducted throughout the year. “For the first 20 years, the Cultural Coalition was very esoteric with very small community celebrations,” Zarco says. “The challenge now is that it’s become much more mainstream.” Corporations are eager to sponsor the Dia de los Muertos festival, but the Guerreros are selective. Zarco believes the Cultural Coalition has a responsibility to the community to promote healthy food options for the festival and to keep the social message of the celebration true. “The food is an essential part of the Dia de los Muertos celebration,” Zarco explains. “The smell is important to bringing the spirits back. They are looking for the smells. They are medicine we need to heal our bodies.” The 2015 Phoenix festival brought almost 10,000 visitors. “Our challenge now is the crowd, and giving the people a heartfelt presentation of what we think the celebration should be,” Zarco says. The Cultural Coalition believes in using public spaces to provide the education and the presentations, such as Title I schools, libraries and parks. Artists are paid for their time, a point that Carmen is very proud of. “Most nonprofits ask artists to donate their art or time,” Carmen explains. “We believe artists deserve to be paid. Sixty percent of our budget goes to paying artist fees.” This year, the Cultural Coalition’s Dia de Los Muertos Phoenix Festival is on October 23 at Steel Indian School Park. New additions include performances by the Borderlands Theater and Aztec drumming.

Nick Morrison’s life-changing decision after his brush with death PHOTO BY MARK MORGAN

W

ork can be a pain. But for Nick Morrison, when pain turned into a neardeath experience, he knew it was time for a drastic change. “I was working in financial services in Oregon, but was miserable,” says Morrison. “On a particularly stressful day in 2011, my arm kept cramping.” As a former college golfer, soreness was nothing new, but this was different. “I had a heart attack – at just 23,” says Morrison. “In the hospital, the doctor gave me two choices: re-think my career or die young.” Morrison quit his job, and – after recuperating in his native Idaho – relocated to the Valley in 2012 with just a suitcase and golf clubs to his name. He was able to combine his expertise in finance with his passion for people, as a corporate recruiter. At the same time, he joined GET Phoenix, a local nonprofit that provides networking and development opportunities to young professionals. Today, he is a senior recruiter at VincentBenjamin and on the board of directors for GET Phoenix, where he also chairs its membership committee. “What didn’t kill me really did make me stronger,” laughs Morrison.

I

nspired by the finer things in life, native Phoenician Ilsa Manning put her sense of smell to work. Balancing baby and business can be challenging but for new mom, Ilsa Manning, it makes it all worthwhile. For years she worked a 9-to-5 at some of the biggest international fragrance companies in the world, honing her understanding of the chemistry of the industry, while refining her sense of smell. It wasn’t until the birth of her daughter, that she found the courage to do what really makes sense – launch her own fragrance company. But launching a new business with a newborn and another on the way can be challenging, Ilsa admits. “My advice for other mommy entrepreneurs is it can be overwhelming at times and there are never enough hours in the day, but you can’t be whole as a mother if there is a part of you yearning to start a business,” Manning says. With the aim of encouraging empowerment in future generations of women, Manning also donates 5 percent of the net proceeds from sales to Girls on the Run, a nonprofit that aims to create a world where every girl is free to pursue her dreams.

She is of counsel at Tyler Allen Law Firm, PLLC, a mom, an animal lover, a volunteer and a woman of practical fashion. “My style could be described as comfortable, versatile and flexible,” Benjamin says. “You never know what the day will throw at you, so you have to be prepared for anything.” As a busy attorney, Benjamin’s often long workdays dictate her clothing choice. “You have to have a comfortable, nice pair of work pants to get you through any long day – and it’s a plus if it works at home, too!” Take a look into Benjamin’s closet and you will see nothing but black, white, grays and timeless pieces. “I believe that you should invest in one really good piece versus several pieces that are not as perfect.” And, although she owns just a few staple purses (one brown and one black), Benjamin believes that they are the key to any ensemble. “No matter what you are wearing, the bag just pulls everything together. In my opinion, it just makes the outfit,” she explains.

How did you get involved with volunteering for animals? I have always been saving animals. I was that person that stopped on the side of the road to save the dog or cat walking around! They have just always been something that I’ve been drawn too. What is your favorite season to dress for? Winter. I love to layer! Even if we only get to do it four days out of the year, I love it. What is something you can’t leave home without? My cellphone and sunglasses. They are always in my hand before my keys! A good pair of sunglasses goes far out here. ies are timeless, but are they the most stylish? Just like the endless list of tie knots, tie alternatives are also of the plenty. Take it from Dr. Jim Kelly – a rocking dentist rolling out innovative alternatives to the mainstream half Windsor. “Some days my shirt is unbuttoned at the collar, revealing chains and pendants. Other days I wear a skinny tie followed by a ghost tie the next day. Maybe it’ll be a pendant where the tie would be,” Kelly adds, “Just no bolo ties any day.” Originally from Pennsylvania, Kelly recently relocated to the west coast to be closer to family and friends and, of course, enjoy sunnier days. “It is much easier to dress how I want to here in Arizona. It's the same rock ‘n’ roll style, just lighter fabrics and colors when needed,” Kelly says. Rock ‘n’ roll defied the dominant culture in both music and fashion. The counterculture’s pulse was the idea of rebellion against social conformity. Ever since he was 10 years old, Kelly took the fashion path less travelled. “My fashion has been has been a culmination of the influence of rock ‘n’ roll music and rock ‘n’ roll culture in my life,” he adds, “My style says I am a non-conformist and that I have success on my mind,” he explains.

Where do you gain fashion inspiration? My Fashion sense and inspiration comes from the English Mod scene of Carnaby Street, Soho, London, circa 1965-1969, and it's permutations throughout rock ‘n’ roll culture over the years to the present. Where do you shop in the Valley? Most of my shopping I do online. Zappos and Top Man, UK are my go-to online stores for shoes and skinny-fit dress pants. When I do shop in a retail store it is Nordstrom, Steinmart, Good Will and other thrift stores. What are some of your hobbies? Music, rescuing and helping animals, fitness, traveling and hanging out with my wife, Sherrie, and baking on Sunday mornings. UPTOWN |

Those “Money-Saving” Car Repairs Are Actually Costing You More SHAHE KOULLOUKIAN, OWNER OF MAZVO AUTO CARE CAR CENTER, EXPLAINS HOW A LITTLE VIGILANCE CAN LEAD TO A LOT OF SAVINGS. You’re driving down the road, humming happily along with the radio, when suddenly your car has an unpleasant surprise for you. Maybe it’s the “check engine” light; maybe it’s a funny sound coming from under the hood. You panic – who should I call? What should I do? How much is this going to cost me? Unfortunately, that reaction may end up costing you more money in the long run, says Shahe Koulloukian, owner of Mazvo Auto Car Care Center. “Calling or using a shop out of convenience always puts you at high risk to get cheated, especially during an emergency situation,” he cautions. Another way you may inadvertently be putting a bigger dent in your wallet? Hopping from one repair shop to another for the sake of cheaper car repairs – or following the discounts, so to speak. When you use a coupon, or call a shop to get an instant quote, they know that the price they give you has to be very low to get you in the door. Once there, however, you may be presented with an entire list of “necessary” vehicle repairs – whether you truly need them or not. “They enticed you with a ten-dollar oil change, but it’s just an opportunity to sell you something,” Shahe

cautions. “Don’t fall into the trap of low-price oil change coupons; that’s the game they play to get you in.” So how can you guarantee that you’re getting the best care – at the most realistic prices – for your car? First things first, advises Shahe: learn to be prepared. Build a relationship with your auto shop before you’re in need of emergency repairs. That way, when the need arises, you can make the call and get a straight answer from someone you trust. Ask friends and neighbors for referrals. Visit the shop and take a good look around – it should be clean and well-equipped. Clutter, spilled fluids, disorganization, dirty restrooms, and shabby equipment generally indicate a poorly managed business, which could mean poor quality of workmanship. Most important, though, is the way they treat you. A reliable auto shop will welcome your inquiries and answer thoroughly, says Shahe – and if they constantly interrupt or dismiss you, walk away. “Get into the habit of asking questions,” he recommends. “Verify warranties, find out whether they’re using original dealer parts or after-market, ask who will be working on your vehicle – a

young student or a veteran with decades of experience. Are they trained in electrical theory and mechanical and computer systems?” Providing information and education to customers is a cornerstone of Mazvo Auto Care’s philosophy, and something personally important to Shahe, who ensures that his staff helps each client understand not only what their car needs, but why. The world of auto repair is still susceptible to incompetence and scams, and finding a shop you can trust is not an easy task; it’s not going to happen overnight. But when you do find a trustworthy repair shop, they’ll be able to keep you advised of what’s coming next, what you need now and what you can hold off on for the future – which translates to money saved in the long run. “It’s better to be warned about what’s coming than to be frustrated because you didn’t know,” says Shahe. “You need a repair shop that takes pride in solving problems, not selling you new ones.”

llison DeVane is revolutionizing the way people consume caffeine. That may sound like a bold statement, but in less than two years since debuting Teaspressa, a caffeine-packed tea concentrate that is a healthier alternative to espresso, at the Phoenix Public Market/ De Soto, the Valley native already has the coffee industry buzzing. Her rapid rise has been unconventional, or perhaps the epitome of a modern day success story, including a reality show appearance and fellowship with one of the most famous female entrepreneurs in the world along the way. Now as the new owner of her own storefront, DeVane’s journey is just beginning. DeVane got her first taste of the coffee and tea industry when she was 16 years old, working as a barista and in local cafes. After receiving her degree in business marketing from Arizona State University, she explored a variety of career paths, from bank teller to social media manager, but nothing seemed to fulfill her professional ambitions. “I found myself bored or falling astray from being focused at work but then came to realize that I just needed to work for myself,” says DeVane. “It would be the only way I would feel fulfilled or be inspired to work my hardest.” Although she jumped around between full-time positions, she continued to work as a barista as a second job simply because she loved it so much. “I absolutely love making coffee. Something about being in a store, talking to customers and making their day with a cup of coffee was just was amazing to me,” DeVane explains. With nearly a decade of experience working with coffee and tea, she knew the ins and outs of the industry, including a void in the seemingly saturated market. Like many, Devane loved her daily pick-me-up, but not the side effects of headaches and jitters that frequently followed her coffee consumption. “I found that tea was a healthy alternative and that some blends had just as much caffeine as coffee, (plus) provided multiple health benefits,” she says.


But for DeVane, what tea provided as a healthy caffeine fix it lacked in satisfaction. She craved the smooth and creamy textures of espresso-based lattes and the certain art involved in crafting the perfect cappuccino or macchiato. It was this longing that was DeVane’s "aha" moment: to create a new type of coffee-like drink based from tea, and to turn her passion into a career. “I knew that coffee was a tough industry to get into especially with all the great competition in town, so I wanted to stand out and focus on tea,” she explains. Though trial and error, DeVane experimented with tea and espresso hybrids that wouldn’t compromise the health benefits of tea or the body of coffee. The result was Teaspressa’s concentrated tea, with a thicker consistency than traditional tea to allow it to be prepared like popular espresso drinks. “Making tea is exactly the same as my methods of making coffee so I never lost the ritual I loved,” says DeVane, who as a talented barista has also mastered foam latte art and proudly showcases her creations on Teaspressa’s social media sites. Teaspressa officially debuted at Tea and Toast in DeSoto Central Market in early 2015 and soon expanded to the Phoenix Public Market. The brand fit in nicely with the communities of small, locally owned businesses in the heart of Phoenix’s coffee culture. “The culture of Uptown is a vibrant moving force like my business,” says DeVane. “I am inspired by all the new things, specifically small businesses, happening in the city and especially inspired by all the people I meet. I am so thankful to be also working with local businesses here too!” Just three months after launching Teaspressa, DeVane, got her first big break and national exposure by competing on Shark Tank, the popular reality show in which budding entrepreneurs pitch their business ideas to a panelist of celebrity investors. She describes the experience as a “extremely mentally and physically straining process,” but one that served as a lunching pad to take Teaspressa to the next level. After several rounds of auditions, DeVane made it to appear in front of the celebrity panel comprised of Mark Cuban, Lori Greiner and other business bigwigs

- no easy feat in itself. The judges admired her product and passion, but with the company in its infancy, DeVane admits she wasn’t quite as prepared with her pitch. “It was absolutely incredible and overwhelming,” she recalls. “Throughout this whole process I don’t think I was necessarily ever ready, but what Shark Tank did was make me take all the necessary steps I had to in the business by pushing me there.” She ultimately left the show without securing an investor, but despite her elimination, her effort paid off in big ways. The episode aired a few weeks later, and sales skyrocketed as online orders poured in.

“THROUGHOUT THIS WHOLE PROCESS I DON’T THINK I WAS NECESSARILY EVER READY, BUT WHAT SHARK TANK DID WAS MAKE ME TAKE ALL THE NECESSARY STEPS I HAD TO IN THE BUSINESS BY PUSHING ME THERE.” “There were a spike of sales, emails and social media shoutouts from the waves as the show traveled from the East Coast to the West Coast. It was an incredible experience and my phone was restlessly ringing straight for two weeks.” During the course of DeVane’s reality show run, another opportunity was brewing for Teaspressa. Prior to auditioning for Shark Tank, she applied for a new fellowship program with The Tory Burch Foundation (www.toryburchfoundation.org). Led by the world famous fashion designer and foundation’s namesake, the organization empowers female entrepreneurs by providing business mentorship, networking opportunities and access to capital. businesses applied to the yearlong Fellows Program, which Burch herself narrowed to 30, including Teaspressa, to compete in a social media vote. The voting period coincided with DeVane’s Shark Tank appearance, helping to drive votes and secure her spot in the Tory Burch Foundation’s inaugural Fellows Program. “I am honored to be one of only 10 women in the U.S. selected to be a part of such an empowering mission,” says DeVane. “My company has organically grown thanks to the power of social media and I am blessed for all of the support and opportunities as a result.” As part of the program, DeVane received a $10,000 grant and access to networks and mentorships, including meeting Tory Burch. “(Meeting Burch was) incredible. Her presence alone was inspiring. She had a calm, collected and passionate energy,” recalls DeVane. “Her best advice given was to learn to fully utilize your resources and to not to be afraid to ask for help from others.” The grant funding combined with the profits generated from her Shark Tank sales allowed DeVane to expand Teaspressa in remarkable time, including opening her own storefront Teaspressa Tea House in partnership with Ruze Cake House in Old Town Scottsdale. “The new storefront immerses you into our brand; it brings our products to life and provides tangible access to who we are, our culture, our passion and the healthy solutions we have created for the community to enjoy,” DeVane says. Her brand has expanded to include Luxe gourmet flavored sugar cubes created in collaboration with Ruze Cake House, as well as brewing equipment, gift sets and more. Even with all Teaspressa’s recent success, DeVane has her eyes on the future, with hopes of growing into larger wholesale accounts, expanding to bottled cold brew teas and developing more tea technology. Most of all, she hopes consumers will see Teaspressa as a household name and a common alternative to traditional coffee and tea drinks. “One day the common customer (will) know exactly what a tea latte is,” says DeVane. “That is how I know I have made it!” For more information on Teaspressa, visit www.teaspressa.com.

Something old and something new come together to form Arizona Falls. The historic site was originally the area’s first hydroelectric power plant, in operation from 1911 to 1950. Arizona Falls, formed by a natural 20-foot drop along the Arizona Canal between what is now 56th and 58th streets, reopened in 2003 as a restored hydroelectric plant and neighborhood hangout. The purple border is back! aul and Amy Goldschmidt’s upcoming Goldy’s Bowling Bash has been a long-time coming in their crusade to help Arizona’s children. Since beginning his Major League Baseball career with the Arizona Diamondbacks in August 2011, first baseman and four-time All-Star Paul Goldschmidt has considered Arizona home. So when the Goldschmidt’s came up with the idea to have their first event through Goldy’s Fund 4 Kids, their passion to help kids through Phoenix Children’s Hospital (PCH) was the perfect fit. I used to bowl with my family when I was a kid, and we used to play a lot in high school, but last time I bowled, I wasn’t too hot,” Goldschmidt says. “I thought, I want to do something different to help raise money for Phoenix Children’s Hospital, and I don’t see a lot of bowling tournaments.” This first-ever event, Goldy’s Bowling Bash, will take place on Nov. 10 at Lucky Strike in Downtown Phoenix. After more than four years of involvement with Phoenix Children’s Hospital, Paul and Amy recently became honorary chairs of the Hope Lives Here campaign, which aims to raise awareness and money for the new Phoenix Children’s Hospital Center for Cancer and Blood Disorders. Goldschmidt enlisted the help of some of his famous friends to slip into their bowling shoes and head to the lanes, including Luis Gonzalez, Mark Grace, Jim “Bones” Mackay, Drew Stanton, Dustin Pedroia, Andre Ethier, Brandon McCarthy, Justin Upton, Miguel Montero, Paul Konerko, and David Peralta, with many more planning to attend. Goldy’s Bowling Bash will start at 5:30 p.m. with a cocktail reception and dinner for everyone, along with warmups for the 12 teams and their celebrity captains participating in the tournament. After the bowling action, and followed by a trophy presentation to the best (and worst!) players and celebrity captains, the after-party kicks off with more food, drinks and dancing. A silent auction will go live prior to the event and is available to anyone who wants in on the action. he Gold Ball, one of the Valley’s most exciting black-tie events, will be held Saturday, Oct. 29, at The Phoenician Resort Grand Ballroom. With the theme “under the autumn moon,” The Gold Ball is presented by HonorHealth Foundation and sponsor Republic Services. The annual event will feature a live and silent auction, and dinner. Guests will also enjoy dancing to live music from The Instant Classics. Rhonda Forsyth, president of HonorHealth, will be honored at the event. Forsyth has dedicated more than 30 years to the John C. Lincoln Health Network, now HonorHealth. She joined John C. Lincoln in 1987 and served as CEO of each of the network’s Phoenix hospitals before becoming president and CEO of the Health Network. With the merger of John C. Lincoln Health Network and Scottsdale Healthcare in 2013, Forsyth became president of HonorHealth. She is being honored for her many years of dedication. The Gold Ball has raised more than $8.3 million to benefit the community services and programs of HonorHealth Desert Mission. Proceeds from the event will continue to support Desert Mission’s many health and human service programs. ucumbers and wine – when you see those two words together, you likely don’t invision the makings of a delicious cocktail. But, that’s why we leave mixology up to the pros. Case in point, Christopher’s and Crush Lounge, a Biltmore spot known for its amazing food and award-winning wine list. Mixologist Travis Nass, along with the restaurant’s co-owner and sommelier Paola Embry, recently revamped the cocktail menu, adding unexpected drinks in the mix. “The menu focuses on using a variety of wines along with different spirits to create a diverse, unique cocktail list that everyone should be able to enjoy, with a few surprises along the way,” explains Christopher’s and Crush Lounge Executive Chef and Owner, Christopher Gross. One of the standouts on the list of selections is the seasonal Sauternes situation ($13). This light and refreshing sipper is inspired by the desert heat. Think cucumber vodka, lemon juice, (here comes the surprises) tarragon leaves and Roumieu Lacoste Sauternes (a sweet wine), served up. “The Sauternes and the tarragon are both underutilized cocktail ingredients that create amazing flavor profiles,” Gross says. “The Sauternes adds a unique sweetness that is different than any other sweetener and the Tarragon adds a delicious, complex herbaceous note.” So think outside of the wine glass, and head to Christopher’s. Common Ground Burrata Grassroots Kitchen & Tap

Burrata is one of the hottest food trends in the country, and Christopher Collins, chef and owner of Grassroots Kitchen & Tap is one of the select Arizona chefs who makes it fresh daily. The crafting of this Italian cheese is both a science and an art form. “First, I ladle 190-degree water over mozzarella cheese curds until they become soft and pliable,” says Collins, who stretches and pulls the cheese until it forms a thin sheet. A rich blend of cheese curds, heavy whipping cream and kosher salt is then spooned into the layer of cheese. The outer layer envelopes the creamy center and is twisted securely at the top. Finally, the burrata is immersed in an ice bath until it becomes firm. Grassroots offers Collins’ creamy Common Ground Burrata ($10) as a sharing appetizer with garnishes that hold their own. Tomato jam spiced with Sriracha chilies brightens the plate alongside wild baby arugula tossed in housemade Champagne vinaigrette. John Anthoney’s locally made ciabatta, lightly toasted, offers a textural contrast that completes the dish. Grilled Spanish Octopus Prado at Omni Scottsdale Resort & Spa at Montelucia

Prepared by the Prado culinary team under the direction of Executive Chef Michael Cairns, the Grilled Spanish Octopus ($18), while technically an appetizer, is also fitting as a salad due to its clean, refreshing base of celery hearts that serve as a crisp bed for the tender octopus. “This dish is the epitome of our culinary point of view – to offer seasonal, Spanish-influenced fare for an approachable American palate,” Cairns says. “Our aim is to reflect the unique flavor and heritage of Spain’s Andalusian region while utilizing the finest and freshest local ingredients made available by Arizona’s vast farming community.” The success of the dish starts with the preparation of the octopus itself, which is expertly grilled to seal in flavor while ensuring it retains a tender, never chewy, texture. The octopus is then combined with a locally sourced celery salad that includes Brussels sprouts, which is tossed with housemade red wine oregano vinaigrette and roasted red bell peppers. Pork Ramen Clever Koi

Nosh on hearty Asian-inspired comfort food at this stylish Phoenix eatery serving up the likes of steamed buns, dumplings and flavorful noodle dishes, such as the Pork Ramen ($14.50). Handcrafted by Chef Jared Porter, the ramen’s spicy, “swiney” broth is a two-day labor of love. “It’s so simple, you really have to nail it, so we spent a full year tuning, tuning and tuning until the recipe was just right,” Porter says. To create the soup, Porter starts by charring a bunch of split hog bones on the stovetop, then he transfers them to a stock pot with a mixture of aromatic herbs and oven-roasts them for 48 hours to create a true pork bone broth. After straining the broth and seasoning it with miso and soy, next comes even more porcine decadence. “Next we add Tender Belly pork belly that’s been cooked overnight for 12 hours in an oven, skin on, and then it’s flash-fried so you really get the full crosssection of pork essence; the crispy, bacon-like skin on the outside, then a layer of fatty marbling that’s melted down into the lean protein meat,” Porter says. The soup also features housemade kimchi and an egg cooked for exactly six minutes, so you get both the firm white part and the runny yolk. Garnished with sliced bamboo shoots and green scallions for a little texture and salty brine flavor, the pork ramen is the ultimate comfort food. 4236 N. Stock & Stable The perfect pasta dishes need not only come from Italian bistros and restaurants. In fact, one of the best pasta dishes in the Valley is from none other than a modern American gastropub: Stock & Stable. Anything but traditional, pasta never tasted so garden-fresh as with the Smoked Corn Manti ($12), a hand-folded Turkish-style dumpling. While searching for a signature shareable pasta for his new neighborhood hangout, Chef Joe Absolor turned to this pyramid-shaped pasta stuffed with sweet, smoky corn. “I love using corn in unique, off-the-cob ways, like on a pizza,” Absolor says. “So when I came across this Turkish-style ‘Manti’ dumpling with its unusual pyramidal fold, I thought it would be the perfect way to create a pasta dish, but with really fresh, crisp flavors more like a salad than a traditional pasta cooked with heavy butter and simmered veggies.” Starting with a housemade durum and semolina pasta, the dumpling is filled with a smoked corn and ricotta cheese puree, and then topped fresh asparagus, radish and corn kernels. “We also add toasted pepitas versus a more traditional Italian nut like pine nuts, and then I add some feta cheese, which is normally used with salads, but I love how the chunkiness of the feta contrasts with the silky-smooth dumpling filling.” 5538 N. 7th St., Phoenix; 602.313.1001; www.stockandstable.com.

T. Cook’s at Royal Palms Resort and Spa

One of the Valley’s hottest seafood dishes – T. Cook’s John Dory ($38) – is actually not from anywhere near Arizona at all. “The John Dory, my personal favorite item on our menu, is a firm saltwater fish originally from New Zealand,” says Todd Allison, famed executive chef at the Royal Palms Resort and Spa. A mild whitefish, the secret to the John Dory’s success lies in Allison’s careful preparation to ensure that while the outside of the fish stays perfectly crisp, the inside is beyond tender – every bite literally melts in your mouth. “The key is to slowly pan roast the fish along with its accompaniments, which includes braised baby fennel, sunchokes and cipollini onions,” Allison says. “The secret ingredient is barrel-aged sherry bourbon.” An added bonus is that the herbs and even some of the vegetables are often from right outside the kitchen, thanks to the resort’s on-site garden. Allison recommends pairing the John Dory with a glass of Chateau St. Jean Robert Young Vineyard Chardonnay. “The flavors match up nicely with the sharp acidity of the sherry butter sauce, creamy and sweet cipollini onions, and the light hint of anise from the fennel.” 5200 E. Roasted Brussels Sprouts

The Gladly Death by eating your greens? For many Phoenician foodies, veggies are not exactly priority one. But maybe that’s because they haven’t been to The Gladly. If you’re munching on the eatery’s Roasted Brussels Sprouts – served in a generous dollop of sweet corn “grits” – it’s easy to forget all the vitamin K, vitamin C, potassium and fiber you’re eating, and instead lose yourself in the layered flavors and textures. Known for his “well-traveled comfort food,” lovable Valley chef Bernie Kantak’s merging of cultures (and use of a healthy ingredient with the Brussels) hits a high note with this dish. “An Italian grandma and a grandpa from the American South had a baby,” Bernie jokes about the best-selling dish at this Biltmorearea hotspot. And then he reveals a secret: They’re not actually grits. Instead, the base of the dish is white polenta with flecks of roasted corn throughout. The creamy base arrives piping hot and is crowned with crackly roasted Brussels sprouts and shavings of Pecorino Romano. Butternut Squash Cheese Cake Atlas Bistro

Looking for a decadent dessert with “fall” written all over it? Atlas Bistro’s Chef Cory Oppold delivers it in spades with his Butternut Squash Cheese Cake ($9). “This dessert features the best elements of the holiday season and the autumn harvest,” Oppold says. “It is seasoned with cool weather spices, earthy goat cheese and a touch of sweetness.” To create the dish, Oppold slow roasts and then purees a creme anglaise with organic butternut squash from McClendon’s Select, a certified-organic farm in Peoria, Arizona. “We try to keep it local whenever we can, which brings a little something extra to each of our dishes,” says Oppold, noting they also source their goat cheese for the dish from Black Mesa Ranch in Snowflake, Arizona. The dish also features a dried cranberry orange zest compote for tartness. It is then finished with graham cracker crumbles, which give it a deconstructed crust element and add a crunchy texture. here’s something captivating about the gentle flickering of fireside flames and the ambiance that emanates therein. You could even say a fire’s glow is transfixing. In line with this notion, local artist Adam W. Carter has taken fire pits to an enlightened level with his Zen Fire Garden, introducing an interactive, yet meditative, element into the traditional backyard blaze. The Zen Fire Garden was born both out of Carter’s appreciation for the meaning of Zen and the use of fire in his metal and sculpture work. “Fire is an intimate part of my steel sculpture and metal work, and it made sense to merge these two aesthetics,” Carter says.

Yet the garden was designed to do more than provide warmth on cool nights; it also incorporates a personal interaction with fire while encouraging a meditative state. “The intended use is as a fire element for aesthetics and warmth similar to a fire pit,” he says. “Though, it does transcend this idea as it allows adults to interact with and manipulate the fire in a safe manner.” In the center of the structure, where the flames arise, is a soft bed of sand. Akin to a traditional calming Zen garden, you can draw in the sand (using the proper tools, of course). But there’s more: Once a design is drawn into the sand, the physics of the garden allow the pattern to ignite before anything else. What you’re left with is a glowing centerpiece that reflects whatever artistry you’ve scripted in the sand, creating an experience that’s serene and seemingly hypnotic. Like the philosophy of Zen, Carter’s luminous creation and metal sculptures are rooted in balance – the garden, specifically, in balancing form and function. “Balance is key,” Carter says. “As Zen embodies self-control and personal expression, I find that both of these ideas lend themselves to my designs.” Carter’s Zen Fire Garden is a one-ofa-kind creation. he reinvention of Cadillac into a contemporary luxury brand continues with the latest introduction to the lineup with the first-ever XT5, an all-new replacement for the outgoing mid-size SRX crossover vehicle. The SRX was first introduced for the 2004 model year and has been the sales leader for Cadillac. The XT5 is powered by an all-new, 3.6-liter, 310-horsepower V-6 engine. The engine includes cylinder deactivation that allows it to switch down to four cylinders when the vehicle doesn’t need the extra power and can also shut off completely when the vehicle is stopped to save fuel. It’s connected to an all-new eight-speed automatic transmission. This is the only OCTOBER 2016 |

engine and transmission offered for the model. Front-wheel drive is standard with all-wheel-drive as a $2,645 option, however that is not available on the base trim model (also called XT5); other trim models include Luxury, Premium Luxury and Platinum. Designers at Cadillac have paid special attention to presenting the XT5 with a more sophisticated execution of the exterior design. The grille has a softer look with more rounded edges, and it features the prominent new Cadillac escutcheon. Front LED headlamps and rear taillights carry the thin, vertical look seen on both the Escalade and on Cadillac’s new CT6 sedan. Overall, the look is luxuriously elegant and looks absolutely striking. Like the SRX, it’s still a five-passenger crossover with no options for a third row of seats. Second row seats recline slightly and can slide fore and aft to maximize cargo space or add passenger legroom. Driving the XT5 is a pleasant experience. It feels steady and planted on the highway with excellent handling, minimum body roll on corners, and overall impressive road manners riding on standard 20-inch wheels. The roomier cabin is exceptionally quiet and the ride comfortable. The 3.6-liter V-6 delivers ample power and acceleration with instantaneous power for passing on the highway. If there is one concern that stands out, it’s the rearward visibility that’s compromised with thick rear roof pillars and a very small rear window. However, some help is available with standard blind spot monitoring. From the intoxicating pheromone released by supple ventilated leather upholstery, real carbon fiber interior trim pieces, and real wood veneers, the cabin is sophisticated, upscale and decadent. Overall, the new XT5 feels refined, luxurious and substantial, and it definitely brings back that feeling of driving something special. It’s a feeling Cadillac once had years ago and is now desperately trying hard to bring it back – and seems to be doing so quite well.

Staying at Historic Kalaloch Lodge No visit to Olympic National Park is complete without staying at Kalaloch Lodge, which sits along Olympic National Park’s western boundary. Kalaloch, which means “a good place to land” in the native Quinault language, is exactly that — a good place to land. The historic lodge was built in 1925 as a seaside resort. The land was added to the national park in 1953 and the National Park Service purchased the lodge in 1978. Today, the quaint Kalaloch Lodge includes Creekside Restaurant, 10 rooms and a gift shop. But the cabins, particularly the seven Bluff Cabins, are the best accommodations. The forest normally gets up to 12 feet of rain annually, creating an oasis with massive conifers and plants, called epiphytes, which make everything look like something out of a fairy tale. Some Canadian brands sold at WHITE SUN include Simply (comfortable every day and resort wear), Frank Lyman, Simon Cheng, Joseph Ribkoff and more. The go-to retail location carries an assortment of items with a sophisticated woman in mind who wants a color-coordinated, polished, and puttogether look, while keeping it refined.

“White Sun offers any woman in Scottsdale or Phoenix an enjoyable way to dress with confidence while perfectly expressing her inner artist and her own style,” Pollock says. The women’s fashion concept, which is geared toward women 35-up who want a colorful and sopisticated look, opened its doors to the public early last month at outdoor shopping and restaurant center Biltmore Fashion Park.
