WELCOME OUR SEPTEMBER MAGAZINE Who said British Summers are awful? It’s certainly been a scorcher this year hasn’t it? As World Cup fever and the Wimbledon tennis season both seem like a distant memory, I wonder if this year will be etched in our memories like the last big heat wave summer of 1976? I was 12 then and I remember being on holiday in Cornwall with my family, it was totally lovely, and will always be a cherished memory. This year I’ve struggled to keep my hanging baskets alive and like all the gardens around here, my grass has looked so brown for most of the past months. By the time you read this, I hope it will have perked up a little ! We have a lovely restaurant review for you to read in this issue; a short distance away, nestling in the Surrey Hills, the historic Beaverbrook Hotel has a few restaurant options but on this particular evening the beautiful ‘Garden House’ restaurant was the subject of review; a hidden local gem only a few miles away, it is well worth a visit. If you fancy a treat, you will not be disappointed; the location, the atmosphere, the history, the setting, and of course, the food were all fabulous! Calling all young artists. See page 29 for details on a national competition which could see your art work on display in the Natural History Museum! We send Good Luck to all the children starting school, and also to the young adults flying the nest and heading to Universities far and wide. May all your new adventures be good ones … That’s about it from me, until next time, do take care.

QUINTESSENTIALLY ENGLISH with an Italian Twist
Nestled in the Surrey Hills, the Beaverbrook Hotel resides within 400 acres of beautiful countryside. Built in 186670 Beaverbrook’s story is one of English high society at its most charismatic. Defined by colourful personalities, power politics and literary greats, the heritage of Lord Beaverbrook’s erstwhile residence has taken on legendary status. But that was then… Today, Beaverbrook harnesses the energy and charm of it’s heritage and blends it with beautifully designed spaces and places in which to dine, unwind, rejuvenate and indulge. In the main house The Dining Room offers a casually elegant dining experience with a locally inspired Japanese menu with a modern approach to Japanese cuisine by Head Chef Taiji Maruyama that incorporates the freshest, natural & seasonal ingredients. The Parrot Bar mixes up unique and artisan cocktails and serves up wines or spirits from their vast drinks menu along with

a tasty bar snack or two. With more developments due to be finished this year, there is something for everyone. Afternoon tea for one thing, rumoured to be the best south of London! We recently dined at The Garden House, in the beautiful grounds of the hotel. Tucked away within a magical walled garden, The Garden House is the epitome of English country charm, overlaid with an Italian influence. So warm was the evening, that we chose to sit outside on the terrace to dine. Immediately, you understand the close relationship between the house, restaurant and kitchen garden, where the ingredients for many of the delights on offer are grown and freshly picked. For starters we chose the Seared Scottish Scallops with Guanciale & Chopped Romesco and the Terrine of Loch Duart Salmon & Basil, White Carrot, Avocado
& Horseradish Sorbet. Yes. That’s right! Horseradish Sorbet - which beautifully complimented the Salmon and was absolutely delicious. Our main courses arrived and we had chosen the Chicken Milanese & Black Truffle with local Farm Egg, sautéed spinach with a side order of Green beans & Chives picked straight from the kitchen garden, drizzled with lovely aromatic lemon butter and the Fish of the Day which was freshly caught Sea Trout on warm salad of sweetcorn and beans, with Josper grilled chilli brocolli. The flavours and textures all worked so well together and were beautifully presented on simple plain white plates which added to the wonderful rustic homely charm of the setting. We finished with Slow Baked Cheesecake with passion fruit and roasted white chocolate and Caramelised Sicilian Lemon Tart with raspberries and clotted cream. They were truly melt in
the mouth! The Garden House and kitchen garden is all set in rolling wildflower meadows. You are free to wander amongst it all and it doesn’t take much to imagine that you are deep in the heart of Tuscany. Should you wish to extend your absolute pleasure and enjoyment, there is also accommodation in The Garden House. Imagine waking up in this remarkable and peaceful setting. Ideal for a special occasion, a romantic weekend away or just a getaway from the hustle and bustle of every day life for a night or two where you are made to feel the most special of guests. We finished our visit with a hot infusion of fresh mint from the garden and a stroll through the garden and meadows. It had been a very relaxing evening and we will most certainly be back. So until next time…. Ciao Bella Beaverbrook!

Wild Alaskan Salmon WITH CAULIFLOWER & CELERIAC MASH Ingredients Method ½ tbsp unsalted butter 1 echalion shallot, finely diced ½ small cauliflower (about 300g), in small florets 200g celeriac, peeled and diced 100ml semi-skimmed milk ½ lemon, zest and juice ½ tbsp olive oil 2 Waitrose 1 Wild Alaskan Sockeye Salmon Fillets
1. Heat the butter in a saucepan over a medium heat. Add the shallot, cauliflower, celeriac & a pinch of salt, cover with a tightfitting lid & cook for 15mins. Add the milk & simmer gently, uncovered, for 10mins until the veg are tender (don’t worry if the milk looks split). Whizz in a food processor until chunky; season with salt, pepper & the lemon juice, then tip back into the pan, cover & set aside. 2. Wipe out the food processor & add all the salsa ingredients to the small bowl. Pulse, season & set aside. 3. Preheat the grill to high (220˚C). Brush the oil over the salmon, season & sprinkle with most of the lemon zest. Place, skin-side up, on a parchment-lined baking tray. Grill for 3mins, then turn flesh-side up & grill for another 2mins. Pile the mash, salmon & salsa onto plates & sprinkle over the remaining zest.
Herb salsa Handful each flat-leaf parsley, basil and mint leaves 1 tbsp olive oil 1 small garlic clove, crushed ½ tsp dijon mustard Cook’s Tip ½ tbsp red wine vinegar If you don’t have time to make the salsa, spoon over some Waitrose 1 Pesto ½ tsp capers Genovese.

DRAMA Claremont Fan Court School
Show week for Year 6 is a wonderful celebration of the children’s time in the Prep School. Working on the production brings the School community together in a special way, with its success due to the huge effort made by the staff, parents and, of-course, the children. For
most children, it is the only time that they will appear in a production of this calibre and it is a week when lifetime memories are made. Our audience are in for a treat!’ Mrs Helen Hutton-Attenborough, Head of Claremont Fan Court Preparatory School.

Limited company or umbrella I have just won a contract to provide services to a large business and the agency has said I should set up as a limited company or use an umbrella company. Could you tell me what the difference is please?
Q. A.
If you are providing services under a contract, your options are broadly: · Set up a Personal Service Company (PSC) – this is likely to fall under IR35, which will mean PAYE will be applied (albeit subject to a 5% deduction) · Use an umbrella company - where PAYE will be applied, and the umbrella company will employ the contractor under an over-arching contract of employment. They will then engage with the recruiter or end client under a business to business contract. · Become an employee
Q. A.
What is IR35?
where a one-man company is working primarily for one client. IR35 is anti-avoidance tax legislation designed to tax people who put their contracts through a PSC, at a similar rate to those in regular employment. Normally, director-shareholders of small limited companies would be paid by a small salary, which will preserve their entitlement to state benefits and be a tax-deductible expense for the limited company. The remainder of their remuneration package is likely to consist of dividends, which are tax-efficient because they are taxed at lower rates of tax and unlike salary, are not subject to National Insurance. However, if the IR35 rules apply to the PSC, a salary will be deemed to have been paid to the worker at the yearend. The “salary” will be reduced by a 5% deduction for expenses; even if the contractor hasn’t incurred anything or actual expenses are less than 5%. But ultimately, being taxed on a salary rather than dividends, is much more expense in terms of tax and National Insurance and many contractors are keen to avoid being caught by IR35. IR35 is applied on a contract-by-contract basis, so the same contractor could have some contracts under IR35 and other contracts outside of it. Umbrella companies An umbrella company effectively becomes your employer, so they will operate a payroll so that you can withdraw your money as a salary. Using an umbrella company will mean you avoid IR35 and that someone else deals with the admin, but it will probably lead to higher tax and National Insurance deductions than a PSC. Employment Employment is almost certainly going to result in the highest tax and National Insurance deductions but is by far the least controversial route and could lead to no recourse from HMRC.

YOUNG SURREY ARTISTS!
GLOBAL CANVAS CHILDREN’S ART COMPETITION 2019
If you’re young, arty and concerned about conservation, why not enter this year’s ‘Global Canvas’ contest? Your colourful creation could end up on display at London’s famous Natural History Museum! The annual Global Canvas Children’s Art Competition was set up in 2004 by the Shalford-based David Shepherd Wildlife Foundation, to encourage young people to express their concern for wildlife and the environment through art. This year’s theme is ‘Habitats of the World’ and group entries are invited from Surrey children aged 16 years and under. Entrants can use creative media including art, sculpture, textiles, collage etc. to present a mini-exhibition reflecting the competition topic. “This year’s theme is a celebration of all the wonderful and weird places where animals make their homes whether that’s an ocean, a desert, or even a rotting log!” said DSWF’s Education Manager Jo Elphick. “Global Canvas gives young artists the chance to investigate the threats faced by wild animals and to their habitats and think about what they can do to help. We encourage an emphasis on wildlife, but all of earth’s
fauna and flora maybe represented in as creative a way as possible.” Entry to the competition is FREE and the winners will be announced at an exciting exhibition and ceremony at London’s Natural History Museum – a memorable day for all those shortlisted. Entrants will be vying for first second and third prizes, as well as a number of special awards. Last year’s competition attracted an amazing 4546 children, who took part from schools and children’s art clubs in 16 different countries, including Bulgaria, Canada, China, Colombia, India, Iran, Malaysia and Russia – as well as lots of entries from the UK. Entry to the competition is FREE and the closing date for entries is 31 January 2019 - so get painting, drawing, sculpting, printing, knitting, sewing and collaging! Remember Global Canvas is a collaborative group competition and entries must be in the form of a mini exhibition - please see DSWF’s website for details at https://davidshepherd.org/global-canvas.

DRIVER BAD HABITS
I am on a swerve, changing direction a wee bit in my motoring column. And how about this for a talking point? Motorists in our region are rated among the country’s guiltiest of bad drivers. So there... Who says so? Not me. It is the result of a countrywide survey by the well respected Accident Advice Helpline, one of the UK’s main injury claim specialists. They help thousands of road accident victims, physically and financially, in legally dealing with the disastrous outcomes of poor and careless driving. Road hoggery (my newly invented dictionary entry) is a curse we careful and considerate drivers abhor - and this survey, citing the South East as a culprit zone, pinpoints the rank bad and their risky attitudes. Bad habits apparently creep in less than two months after drivers have removed their L-plates. And spokesman David Carter revealed:”Our study found that lots of drivers are happy to admit bad practices when they are behind the wheel - and, sadly, we have to deal with the consequences.” So just what are the bad and dodgy habits? Before their first six months are up on their full licence some motorists will have stopped holding the steering wheel in the “ten-to-two” position and are unlikely to check their rear-view mirrors every time they make a manoeuvre. There’s more, says Mr Carter. The average driver, putting their own safety at risk by abandoning the seat belt inside three months, will have run a red light inside four - and, by month five, will be making dodgy illegal U-turns as second nature. “Bad driving habits,” he adds, “can compromise safety and
32 Looklocal Magazine - September 2018
our research suggests it is all too easy to let driving standards slip. In fact, a tenth of all those surveyed admitted to having had an accident due to getting slack with following the rules of the road.” So how long does it take drivers in the south-east to fall into dangerously and stupid bad habits? Here’s the Accident Advice Helpline list.... Holding the steering one-handed - three months. Abandoning the “ten-to-two” position - three months. Not checking your mirrors - three months. Changing direction without indicating - four months. Tailgating - four months. Hogging the middle of a motorway - four months. Overtaking dangerously - four months. Running a red light - four months. Driving without a seat belt - two months. Illegal U-turns - four months. Throwing litter out of a car window - three months. Fumbling for something in your bag while driving - five months. Parking on double yellow lines - four months. Pulling out in front, cutting up another car - five months. What the survey failed to reveal was how many loonies on the move in our -four-by-four territory do you see gabbing on their mobile phone or munching butties? Hands up ( but not if you are reading this while driving) if you are blameworthy for any of the above motoring sins. Come on...be honest. By Ted Macauley

GARDEN WISLEY Flower Show bursts into bloom
A six day floral celebration from 4-9 September 2018 The Royal Horticultural Society (RHS) is inviting all garden-lovers to attend a late summer floral celebration at the RHS Garden Wisley Flower Show, supported by Witan Investment Trust. Now in its 26th year, the highly-anticipated show is set to delight visitors with spectacular displays and shopping opportunities from 4-9 September 2018. Set within the picturesque surroundings of the garden, the show will host more than 50 specialist nurseries who will showcase their top quality plants, alongside new exhibitors for 2018 displaying horticultural delights, such as air plants, unusual shrubs and an urban rock garden display. The Show is the ideal place to go for expert advice, whether it’s from the specialist nurseries attending – many of whom are RHS Chelsea and Hampton Court Place Flower Show medal winners – or the inspirational talks and demonstrations taking place in the Expert Zone. An exciting first for this year is The British Flower Bus. Attending as part of its nationwide tour, the Bus is the focal point of a campaign led by renowned floral designer Jonathan Moseley to champion the resurgence of British-grown cut flowers. Show visitors will be invited to board the bus to watch Jonathan’s floral design demonstrations and discover all about the campaign. Another must-see is the National Dahlia Society Annual Show (4-7 September), which will provide visitors with the chance to view the very best in dahlia
cultivation and colour. It features more than 100 vibrant competition classes, and a special class for ‘The Wisley Challenge’, consisting of five vases of five blooms. Visitors to the Dahlia Show are invited to get involved and enter their own blooms into the ‘My Best Garden Dahlia’ competition, taking place on 8 and 9 September. On either day, entrants just need to bring along a single stem of any type of dahlia that they have grown, to be judged by a panel of experts. Show visitors will also be able to view creative displays from the Surrey area of the National Association of Flower Arrangement Societies (NAFAS), which features over 100 stunning floral art creations based on the theme ‘Something in the Air’. Matthew Pottage, Curator of RHS Garden Wisley, said: “The RHS Garden Wisley Flower Show is the ideal place to ignite a passion for gardening. From show stopping floral displays, to expert advice and unique shopping opportunities, there’s something to inspire each visitor. It’s also the perfect time to wander through the garden to see late summer horticultural highlights, such as the Exotic Garden, which has had its first full growing season, and is an immersion of lush foliage and exotic flowers.” Admission to the RHS Garden Wisley Flower Show is free to RHS Members, normal garden admission applies to non-members. GARDENING AUNTIE PLANTY TOMATO CLINIC
We have had quite a good harvest of tomatoes this year, but the extremely hot and dry weather has caused one or two problems. Here I share some of the tomato questions that I have helped to solve in the last few weeks. Splitting tomatoes This is a common complaint with both indoor and outdoor varieties. It’s caused by a bout of heavy watering or rain, after the soil has become very dry around the roots. The resulting sudden surge in growth causes the skin to split. The remedy is to keep the roots of your tomato plants evenly moist. The problem with leaving split tomatoes on the vine is that they will be vulnerable to fungal infection. Dark patches on the base of the fruit This condition is called blossom end rot, and is caused either by irregular watering, or a calcium deficiency. Again, bearing in mind the recent hot and drying weather that we have had lately, I would definitely suspect the former, but wouldn’t rule out the latter. Unfortunately, once the condition has occurred there is nothing that you can do to ‘cure’ the problem. Pick off all the affected fruits and improve your watering regime. It’s often a good idea to try growing smaller tomatoes as this condition rarely occurs with them. Still green on the vine The time will soon come when your tomatoes are very slow to ripen. If your plant has large leaves that are

shielding unripe fruits from the sun, you can remove these leaves without doing any damage to the plant. The alternative would be to remove the remaining green fruit, place several of them in a brown paper bag with a ripe apple. Set in a cool, shady spot and make sure there are a few holes in the bag. The ripe apples will emit ethylene, which should stimulate the green tomatoes to ripen. Yellowing between the veins If the leaves on your tomato plant started turning yellow between the veins, and yet the veins remained green, this is a sure sign of a nutrient deficiency. Alas, it is not improved by ‘normal’ feeding. What is lacking is magnesium, and an excellent way to remedy this is by spraying Epsom salts on the leaves. Epsom salts is hydrated magnesium sulfate (about 10 percent magnesium and 13 percent sulfur). Magnesium is critical for seed germination and the production of chlorophyll, fruit, and nuts. Magnesium helps strengthen cell walls and improves plants’ uptake of nitrogen, phosphorus, and sulfur. Valerie McBride Munro is a chartered horticulturist. It’s a tough challenge – cycling almost 400km on African roads to raise funds and awareness for Surrey charity the David Shepherd Wildlife Foundation. But in July a team of four conservation ambassadors got on their bikes and set off on the epic journey, pedalling across Zambia. The Wild Ride team included sporting mezzo-soprano star Laura Wright, former South African cricketer Jacques Rudolph and former professional rugby player Harry Rowland, led by DSWF’s education adviser and teacher Andrew White. The challenge took the team on a six-day ride through the wilds of Kafue National Park and down to the famous Victoria Falls in Livingstone – calling in at DSWF funded projects, a school and community groups along the way. Chaperoned by local wildlife rangers, the team pedalled across the African plains, dodging all kinds of wildlife – which included lions, elephants, crocodiles and hippos! The cyclists braved mud roads and many challenges, before arriving at Victoria Falls. “Cycling for six days through national parkland, extreme heat and on very questionable roads, the trip was a testament to the team’s mental and physical ability and challenged them to a new level,” said Andrew White. “But knowing we were raising money to make a real difference to DSWF’s work really spurred on our tired legs and kept those bike wheels turning!” The David Shepherd Wildlife Foundation is a highly

effective wildlife conservation charity based in Shalford, near Guildford, founded by the late, great wildlife artist and conservationist David Shepherd CBE FRSA (19312017), who had a particular passion for Zambia. DSWF works to fight wildlife crime, protect endangered species and engage local communities to protect their native wildlife across Asia and Africa. DSWF’s Head of Programme and Policy Georgina Lamb, who is David Shepherd’s granddaughter, said:“This area of Africa was always very close to grandad’s heart and the money raised by Wild Ride will help DSWF continue his vital legacy, fighting wildlife crime, protecting endangered animals and engaging with communities in the region.” The team’s Wild Ride wish list to help DSWF funded projects includes: · £600 – To buy an elephant keeper rescue kit, with tents, sleeping bags and radios. · £4,000 – To drill a borehole for a Zambian village community. · £10,000 – To build a classroom in the planned David Shepherd Conservation Education Centre in Lusaka National Park. · £30,000 – To purchase a 4x4 rescue vehicle for wildlife rangers. CHOIRS ON SONG FOR CHARITY
From a dramatic candle-lit procession to a feather boafestooned Musical Director, Surrey Music pulled out all the theatrical and musical stops in their ‘Life is a Song’ concert in July to raise more than £2000 for the family support charity, Home-Start Guildford. Spectacular lighting, a smattering of choreography and plenty of humour accompanied a packed and varied programme of choral delights from Elmbridge Choir and Elmbridge Ladies Choir, ensuring that the audience of 270 at Holy Trinity Church in Guildford was fully entertained from start to finish. Performing in Guildford for the first time, the two Cobham-based community choirs were delighted withthereceptiontheyreceived. ‘We thoroughly enjoyed performing in such a great venue,’ said Christine Parker, Musical Director of Elmbridge Ladies Choir. ‘The church was full and we had a very lively and appreciative audience, who were treated to some of our latest songs from our new repertoire.’ The concert was attended by the Mayor of Guildford, Cllr Mike Parsons, as well as several Trustees, volunteers and staff of Home-Start.
Ruth Jubert, Patron of Home-Start Guildford, and the Mayor both spoke of the importance and power of volunteering, particularly for charities such as HomeStart, which relies on a steady supply of volunteers to meet the demand for the charity’s services. Speaking after the concert, Ruth said ‘It was fabulous. Right from the dramatic entrance and Cliff’s exuberant conducting, you could tell it was going to be good! The best thing is that everyone on stage looked as though they were enjoying themselves too. All in all, a very happy event.’ Cliff van Tonder, Surrey Music’s Founder, CEO and Musical Director, was thrilled that the concert was such a success. ‘’Life is a Song’ was all about the joy and happiness we can bring to each other. As volunteers ourselves, we know only too well that the gift of time or a small act of kindness can make a big difference to people’s lives, and we would like to thank our audience for their support and generosity. ’ For more information about Surrey Music visit

42 Looklocal Magazine - September 2018
LET’S START AT THE VERY
BEGINNING Life’s lessons come from the most unlikely places. A few days ago, half way through the morning, I realized one ear was naked. Oh no!! I had lost an earring! At least I hadn’t been out yet. I thought about my morning, retraced my steps – once, twice, three times. No earring. Where could it have landed? Was I going to have to look into every single nook and cranny in my home, inside every planter and shrub in the garden, in this heatwave? Eventually, I gave up the search, sad and frustrated. Earrings are important to me – I feel incomplete without them. I put them on automatically first thing in the morning, and there they stay until I go to bed. First one earring, then the other, without thinking about it – just like brushing my teeth. Some time later, I was in the bathroom, and there it was, my dangly earring, in its usual overnight resting place! I laughed. I could have spent hours looking for where it might have fallen and never found it – because it hadn’t ever fallen. I had made an assumption that I’d put the second earring on as I did every morning, and never thought to question it. We’re assumption-making creatures Something isn’t going well and we assume we know why. I didn’t get the job – I’m no good or they’re biased. That person spoke a bit abruptly – they’re unfriendly or I’m not good enough. Often, though, if something isn’t working in our lives, its roots probably go quite some way back. There may be habits that we’ve slid into without realizing it – or maybe intentionally – that have taken us down one path when we’d rather find ourselves on another. Assumptions we build stories on that feel so real, we don’t question their validity or origins.
That’s the real problem. We usually don’t go back far enough when we create our stories. If we did, we’d often find the answer staring us in the face, like my earrings. Words to look out for in our misleading self-talk include ‘always’ and ‘never’. What if we used ‘sometimes’ or ‘rarely’ instead? How would our stories be different? Or we could ask ourselves Is that absolutely true? What other stories could we make up that would serve us better? If we assume something is impossible, we won’t try it. If we assume there is no solution, we won’t look for it. If we assume something is wrong, we won’t look for what is right in it. If we assume we know the answer, we won’t look for (or hear!) the truth. Assumptions lead us down a one-way track, usually in the wrong direction. What are your assumptions?
