PORT, Sport, Sport, Sport, it’s all over the bloody place. Olympics, Euros, Eurovision. Even I’m beginning to catch it. I’m particularly amused by the Guardian, who are famous for getting the more intellectual (hmm!) sports persons to write columns for them. They famously came a cropper with Graham Le Saux when he started playing for bully boys Chelsea. When his team mates spotted Graham reading the Guardian instead of talking about tits or the length of his Lamborghini, they decided he must be gay and eventually every team they played spent more time commenting on Graham’s sexual preferences than actually kicking the ball around. These days their cycling columnist is skinny, chinless, time trial specialist Bradley Wiggins and the Guardian is practically wetting itself because it looks highly possible that our Bradley could win the ‘Tour de France’ which starts on 30th June. He has just polished off wins in the Criterium du Dauphine, the Paris Nice and Swiss tour of Romandie. So, green with envy, I’ve decided that what Broad Sheep needs is a columnist who is a serious Olympic contender. I’m prepared to put the full weight of the Broad Sheep inc. behind this bid for gold. I want the best and I intend to get it although some expense will be spared. So here’s a rundown of the contenders. 1. Me. My personal triumphs have mostly been in the pole vault. I picked pole vault at school because nobody else much was interested in it except my mate Geoff Sykes. This was in the days before carbon fibre poles, before fibreglass poles, before aluminium poles, when we had to use bamboo poles such as you might find down the garden centre. Geoff turned out to be better than me. So year after year I came second. Then in the fourth form, by a strange twist of fate Geoff sustained a broken wrist the day before sports day and I won. However, the current pole vault Olympic record is six metres plus, so with a personel best of six foot I’m not a serious contender. 2. Roger, the philosopher. Roger is a particularly sad case who claims that hiding in order to miss school sports day four times in a row is his greatest sporting achievement. Not a contender. 3. Hugh, mad columnist. Hugh claims he once sacrificed two knights and a bishop in order to pull off a spectacular chess win over the chess master who wasn’t really concentrating at the time. Since this is not an Olympic event, it’s no use to me. On the other hand, he also was once picked as 11th man in the school cricket team – bowled out for 0. 4. Ian, poet in residence. Surprisingly Ian’s sporting achievements closely mirror Hugh’s. He also was once picked as 11th man for the school cricket team, although unfortunately they declared before he managed to get to the crease. 5. Nicola, ex-owner and proof reader. Nicola seems more hopeful and has a plethora of sporting achievements to her name. She claims to have been good at diving, been in the Farmer’s Arms Darts team and once played goalie for the school hockey team which lost 60. But more fabulous than all of these achievements is her first place in the apple-bobbing at Goodworth Clatford Gymkhana, mounted on her faithful pony, Darkie. 6. Sam, the original Page 4 columnist. Sam as you

might know is a sailing nut so it comes as no surprise that at school his only sporting interest was rowing. The best thing about rowing, he says, was that you could head upstream to the local pub not to mention stopping under the trees to have a quick fag. (Not sure if this is public school slang for having a cigarette or something else). 7. Clare, the person who holds it all together. Clare seems to have an abiding hatred of the school PE teacher who she remembers, sitting in the changing rooms smoking, while the class is sent out in the rain to run cross country. However, later on in her teens she did some oneday eventing, (it’s that thing Princess Anne used to do on a horse stupid) and when she was eight, she got her halfmile swimming badge, so this all looks rather hopeful. 8. Green Rachel, green pages. Rachel wears track suit bottoms around the house, but after I pointed out to her this is hardly an Olympic sport, she remembered that she used to have a very small horse called Goldie that was very good at bending. In fact Goldie was so good at bending that she and Alison someone and Maisie something else were all part of a team that ended up at some unspeakable Thelwell style horsey event at Wembley and were introduced to Prince Phillip. Aha, I’m beginning to see a sort of plan emerging. Nicola pony apple bobbing, Clare one-day eventing, Rachel and Goldie bending, (no I haven’t got a bloody clue what it is either). Let’s see what the others can conjure up. 9. Nicky, keeps the books. Nicky spent all her school career trying to avoid sports, so they just randomly entered her for things. At various times she was forced to do both the high jump and shot putting. “How did you do Nicky?” “Oh, I see, you were that good”. Not a contender. 10. Mark, film critic. Unlike Nicky, Mark did not spend his time at school avoiding all sports, but did spend a lot of time avoiding rugby. “Sir I’ve forgotten my kit again”. However, he was good at swimming which is encouraging. However his only real love is riding motorbikes and enduro racing which definitely doesn’t qualify as an Olympic sport. Nasty, oily, smelly, noisy things. Not a contender. 11. Mr Pernickety. Aha, why does it not surprise me that Pernickety was a sprinter 100 yards or 200, just as long as it takes to get rid of the pursuing pack of irate chefs and restauranteurs. So you’ve read about all the possible contenders. What do you think? As far as I can see it’s no contest, we’re gonna have to go with the gee-gees. I’m not so sure about the eventing, it might have to be something a little less strenuous. I think we’ll try for the team dressage, which is basically just poncing about on horseback but first off I need to grab myself a nag so I can join in the fun. My first port of call (as always) is E-bay, but would you believe it they don’t sell horses on E-bay! What kind of stupid oversight is that? They sell everything on E-bay, why not horses? Anyway I’ve found this other site www.horsemart.co.uk. How about this one. Marley is a confident pony with plenty of character. He is more likely to look what’s inside a plastic bag to eat than spook at it. Has been to a Pony Club team show-jumping and completed a pleasing dressage test. (Sounds good to me). Price £950. (Bloody hell, that’s almost as much as an electric bike).

ORDS, images, phrases rise up in the mind from – well from where? Some psychologists say that thinking can’t happen without words, whereas others maintain that most of the thinking happens before you get to the words. How about the imagery in Tom Waits’ “Swordfishtrombones” the title track of his classic 1983 album? I’ve played it at every Sheep Music (July 20-22) since the Ark and I still have no idea what it means, though I’ve photoshopped what it might look like. Where do the images come from? What is he saying? Concentrate! The verses echo down my years, as also does the chorus of my teachers yelling “Concentrate!” at me. Then they threw blackboard rubbers at my head, resulting in Concussion instead. I give you two diagrams for “Concentrate!” Both are represented on a dart-board. One is an uptight circle of spears pointing inward to the centre, like - seen from above - New Bornean tribesmen surrounding a lone missionary and pointedly rejecting being turned into Borne-again tribesmen, and the other: concentric patterns of ripples spreading out and multiplying across a silent pool. I imagine the pool as a remote and virgin stretch of water nestling in the Welsh hills where in another song it’s “summertime and the fish are jumping”. You are half asleep by the pool, rod in hand, there’s a little splash - either a pebble-thought has just dropped into the centre of the pond or a big fishy idea has risen up from the depths to catch a long-legged fly of a phrase, but all you get when you open your eyes are circles of thought-ripples moving silently out from the centre ... or in the other dream the froth of spittle round the mouth of the irate teacher and the exocet-shaped blackboard rubber homing in on your head .... Koncentrate! (Duck!) The circle of spears method of thinking is psychologically ineffective, and only serves to scatter your brains even further - literally if the teacher scores a bulls-eye with the rubber - but the radiating thought-ripples are a metaphor for the pattern of creative thinking – provided you are far enough away from the teachers. I am comforted by the thought that mine are all dead by now. I am all for the pool; it’s a place from which my darting shoals of word-fish cannot escape. I can trawl for them with a child’s butterfly net or land them verb by verb, noun by noun with a proper rod and line, then lay them out in a row and read the future from their entrails like a Roman augurer before eating their flesh for supper. Fish are good for the brain. I trawled the net for “swordfishtrombones”, that vast sump of knowledge, as shallow as it is wide. I dredged up a rare “binders-ronk” which is Norwegian slang for “paperclip wank trombone”, and landed a “rusty trombone” too which is even obscener .... (Google it - you know you will). They were drifting around like fragments in one of those swirls of plastic garbage in the middle of the Pacific, but though the internet is vaster even than the limitless cycles of any ocean, fuller and yet more full of words than there are plankton in the sea, and more diffuse and entropic even than Tom Waits’

Like a long-legged fly upon the stream, his mind moves upon silence. (W.B.Yeats) swarming imagination, it doesn’t bloody know what a swordfish trombone is. I imagine the thing to be one of those bass instruments with an enormous bell-end which has a handle on the slide so’s you can push the thing right out to the limit, beyond arms length, subsonic, like yer man used to play in Edward II & the Red Hot Polkas, one of Sheep Music’s favourite bands, but its real meaning seems to have sunk without trace, probably in the Tenkiller Lake in the song, adding to the underwater debris of lame shopping trolleys, rusting machetes, bottles of Ballantine’s emptied straight down the throat, and the twisted pipework of cast-off wind instruments that lie about in the mud at the bottom of the human sumpconscious. When Jon Humphreys asked TW where he got his imagery from he said “They come to me for free and then I sell them on to you.” So probably even Tom Waits doesn’t know what a “swordfishtrombone” is. Perhaps this enquiry is wrong from the start and poetic imagery is meant to ripple out in an exponential diffusion from the original thought like the mysterious Yeats at the start, whilst day-to-day language merely reduces words to their basic utility. As a further experiment I googled William Blake’s “To see the world in a grain of sand ..” I got. “A world in a grain of sand”: regional metamorphic history from 40Ar/39Ar laser probe analyses of proterozoic sediments from the Canadian shield. Precambrian Research, Volume 91, Issue 3-4, Pages 287-294 Q. I am no further forward but I am enjoying the trip. (c) Hugh Colvin 2012

MR PERNICKETY in the Marches Mr Pernickety’s Guides are essential reading for the discerning diner in the Marcher towns of Ludlow and Hay-on-Wye. All Mr Pernickety’s reviews of eating places are untainted by financial consideration. Praise is given strictly when merited, clear disapproval expressed only when deserved as a prophylactic against the disappointment of users’ gastronomic expectations. This advice will more than recoup a modest outlay of £2.50 from brave shopkeepers in both towns.

food page John Spice’s at the Green Dragon Hotel, Hereford

M

ISTER Pernickety is an optimist – almost irresponsibly so at times – and it hurts him to write unhappy things about restaurants he is reviewing. There have been a few instances, he admits, where he has struggled to find complimentary things to say, and in the case of John Spice’s at the Green Dragon, the potential offered by the building and circumstances of the place make its sins much more grievous. It is a tragedy in itself that Hereford – a good old city, in Mr P’s view – has so little to offer gastronomically. He feels that if those who run the city were to encourage restaurateurs to invest in big, open-fronted brasseries, two or three of them spilling into the attractive but often empty spaces of High Town, an altogether more attractive and aspirational air would be added to the city. However, Mr P is not here to grumble about the shortcomings of the Council. The Green Dragon Hotel is the city’s premier hotel, in theory. It has plenty of bedrooms (of a pedestrian nature, available from £30) and some potentially fine public rooms – the Garrick Lounge (now furnished with bulging leather sofas which might have escaped from the lower end of the DFS catalogue), the Ballroom done up like a superior village hall (occasionally occupied by travelling carpet sales people and the odd good music gig), a spacious vestibule, and a large well-panelled dining room with a handsome ceiling. But the hotel has been allowed to decline badly over the last twenty-five years, and ended up being handed around from chain to chain like an unwanted pass-the-parcel. It has been operated independently for the past nine years, and the decline has continued apace. The decision to turn the dining-room into a combination of fifth rate curry joint and low grade works canteen is incomprehensible. Having read online that, with John Spice’s, the Green Dragon had brought “a new concept in dining to Hereford”, that over 40 dishes were on offer to eat as much and in any order, and that “our international team of chef’s (sic) is reflected in the eclectic menu available on our fixed price buffet”, Mr P and his intrepid son, Master Pernickety set off to explore the international possibilities on offer. Entering the three-quarters empty dining room Mr P was struck at once by the unmistakable aroma of overboiled cabbage, strongly redolent of distant school dinners. The other customers were seated in a cluster, all of a higher age range and, presumably, members of a coach party staying at the hotel. There appeared to be very few, indeed no other ‘walk-in’ diners. From a sea of empty, faux-woodgrain Formica topped tables with faux-leather high-backed chairs, the Pernicketys chose one by the window looking onto Broad Street. They were welcomed by a friendly waiter in a colourful waistcoat, who recommended a red wine called ‘Marlow’. Mr P opted for a Spanish Tempranilla, - adequate at £4.50 for a large glass. Master P, who is ‘into’ India, ordered a pint of Cobra. They were told that for the inclusive price of £11.95 they could go to the canteen-style stainless steel buffet, collect a plate and help themselves from any of the hot containers. The eclectic mix of 40 dishes from the ‘international chef’s’ consisted of a choice roast beef, cottage pie, and three colours of curry – brown, orange

24

and beige. Master P opted of course for the Indian dishes, while Mr P reeled from the shock of lifting a stainless steel lid to find a few greyish-brownish thin slabs of what was labelled ‘roast beef’ floating in warm brown water. Gritting his teeth and thinking of his duty to his readers, he helped himself to a couple of slices, to some ‘roast’ potatoes which could only be described by his older farming friends as ‘beethy’, with some green beans as limp as wet string and wrinkled slices of carrot mixed with peas, like Val Doonican’s car, in forty shades of green, from emerald through eau-de-nil to pale grey. Mr P has to report that the food was worse than it looked. Eating the alleged beef, he found, was like chewing old dish-cloths, while Master P, a self-proclaimed expert on Indian cuisine, was struggling with the three curries he had piled onto his plate. The orange one –chicken, apparently – he declared bland, but edible; the brown one – possibly lamb, maybe mutton – was just a tasteless, stringy goo while the beige curry, one inch cubes of paneer Indian curd cheese, he pronounced inedible (adding, in fairness that even in India it’s ‘pretty rank’). He also had alloo, curried potatoes with – no doubt to emphasize the international nature of John Spice’s cuisine – mushy peas. For pudding there was a choice of chewy lemon drizzle cake, small slabs of Bakewell tart and Millionaire Shortbread accompanied by three shades of catering icecream with four types of sprinkles. Master P suggested that at least they helped to take way the taste of the curry, although Mr P had no such luck with the roast beef. Mr Pernickety can no longer see any good reason for entering the doors of the Green Dragon – still less John Spice’s – not even to use the facilities. Mr Pernickity

Wood Fuel in a Changing World W

50

OOD fires have been central to people’s lives for hundreds of thousands of years. Then came the march of coal, electric heaters appeared in the thirties, by the sixties people were installing ‘modern’ central heating systems that were quick, easy and cheap to run, but outmoded in turn when new ‘energy efficient’ boilers appeared on the market. Change doesn’t just pause in the way we might like it to pause … it carries right on, sometimes at breakneck speed. There is a balance to be struck with any fuel. You can’t just chop down forests, and forget about the long-term effects, anymore than you can fill the air with coal smog or expect oil wells to refill themselves. In the face of change, what is the place of wood fuel today? The Hearth At the centre of old Celtic and English life was the ‘Hearth.’ It had social significance … being an excellent place to chew bones, tell stories, drink mead etc ... but was also essential to survival, especially during harsh winter weather. There remains a symbolic importance attached to keeping the glowing embers of the fire alive. Some people still love the rhythm and security that tending a wood fire or stove brings, but many others have lives that don’t allow for tending a fire all day or sweeping the ashes. With so many people to keep warm in winter and such busy lives, how can wood energy be truly relevant and sustainable today? “People do understand that wood sources need to be sustainable” says Mandy Brick at Light Foot Energy, “ and some people are still emotionally attached to their stoves and the rhythm that maintaining a fire brings to their lives. But a lot of people under 40 don’t feel they have the finance and time that a stove demands.” Local Solutions As ‘big oil’ roots around for new supplies, there is a clear need for people to take cleaner and more sustainable energy solutions seriously. You don’t have to think big … small and local possibilities are popping up all over the place. Take a place like South Herefordshire. Woolhope Woodheat is a 100% community owned wood co-op. It’s also a proper, well thought out enterprise with workable social and environmental objectives and sound economic principals too. By providing a market for wood fuel, Woolhope plans to bring unmanaged woodland back into balanced, productive use, providing fuel whilst increasing wildlife habitat and biodiversity and reducing carbon emissions. Not only that but the co-operative gathers, dries and chips its own wood fuel to high quality standards and this fuel will be used in clean burn, super efficient boilers, also supplied and maintained by the co-operative. To qualify for a boiler Your building or premises must meet certain criteria. The boilers are designed to replace oil, LPG or electricity, where current bills exceed £5,000 per year, and you have to be in Herefordshire. But if you meet the criteria

and you want to work with a green, community-based organisation, Woolhope can offer you a great deal: a heat price 20% less than oil, guaranteed for 20 years and they will install, service and maintain a top quality clean burning woodchip boiler at your premises free of charge and provide it with locally sourced fuel. Even if you don’t qualify for a boiler … You are eligible to purchase Community Shares The co-operative opened community share offers for the wood supply operation early this May. It is the first scheme of its kind in the UK and the documentation is impressive and beautifully produced. You can get in contact with the team right now and ask to read the share offer. Eventually the co-operative hopes to use 2,000 tonnes of sustainably sourced local wood annually, saving an estimated 900 tonnes of CO2. Anyone can join the co-operative. Members have a single vote, however much they invest, and receive a good annual return on their investment. Local investors will be prioritised for co-operative membership.
