Caerphilly food and drink guide ...has been an idea long in the making! Sharing our passion for local food and drink, this guide is a collaboration between local producers and the Caerffili Cwm a Mynydd Rural Development Plan, highlighting some of the beautiful produce available in Caerphilly County Borough. This guide contains listings of the producers, retailers and markets that grow, make, stock and sell local produce right here in Caerphilly. There are a few suitably foodie activities that are taking place throughout the year thrown into the mix too! Our producers love to share their passion for their produce, and included in this guide are a couple of producer profiles that will help to put a face to the taste of the Valleys So go on, tuck in!

Local Food! We love our food here in Caerphilly, whether it’s the heritage of our world famous Caerphilly Cheese (every year the town has a huge Cheese Race as part of the Big Cheese event), award winning hand crafted ales, lagers and ciders, to hand made chocolates and ice-cream, we love it and it seems others do too because the taste of ‘Made in Caerphilly’ can be found everywhere from Spain to Scandinavia, and of course throughout south Wales and the UK too – Not bad going eh!

Some tasty tidbits! Braces Bakery in Croespenmaen can produce 6000 loaves of bread every hour! Hapus Ice Cream’s ‘secret recipe’ Real Dairy Ice Cream is the only ice cream to win the National Ice Cream Competition’s ‘Champion of Champions’ a record 4 times! Hafodyrynys based Blaengawney Cider, maker of award winning Hallets cider is probably the highest altitude cider orchard in Wales! 6


Where to Buy Buying local has lots going for it! It can mean less food miles between where our food is made and where we eat it and it also helps support the local economy too. It doesn’t have to cost the earth either, and there are a few places locally where you can get hold of some of the tasty goodies mentioned in this guide (plus loads more too). Don’t forget, the producer directory section has addresses, websites and contact information for each business and they will know where you can buy their locally produced wares!

The Visit Caerphilly Centre Perched overlooking the impressive 13th Century Caerphilly Castle you’ll find the Castle Lounge coffee shop at the Visit Caerphilly Centre. The visit Caerphilly Centre is quickly becoming the home of local food in Caerphilly. From Caerphilly Cheese, Castle Chocolates, Plant2Plate savouries and Celt beers and lager as well as a host of local themed crafts and a great cup of freshly brewed coffee, it’s a great place to see and taste Caerphilly!

Caerphilly Farmers Market Next door to the Visit Caerphilly Centre you’ll find the Twyn, home to Caerphilly’s monthly farmers market. The farmers market is part of a growing number of food markets across the area that feature everything from bread, cakes, pastries, honeys, preserves, chocolates, tasty ready meals, meats and more. The Big Cheese - 24th 25th & 26th July 2015 Set in the shadow of one of Europe’s biggest castles, the Caerphilly Big Cheese really is the Biggie! Over 80,000 people make their way to Caerphilly over the weekend, starting with the Great Cheese Race on the Friday evening. Watch teams race around Caerphilly with giant truckles of Caerphilly Cheese, always an entertaining sight. The Big Cheese is also home to one of the largest food and drink marquees in Wales, with a mouth-watering range of local and regional foods. Philly with Chilli (v) Glamorgan sausage with Caerphilly cheese with a red onion, chilli, cider relish! Serves 4

Prep time – 45 minutes Cook time – 45 minutes

For the sausages l 25g butter (we used Castle Dairies) l 115g leeks, trimmed, finely sliced (prepared weight) l 175g fresh white breadcrumbs l 2 tbsp chopped fresh parsley l 1 tbsp chopped fresh thyme l 150g Caerphilly cheese finely grated (we used Caws Cennarth) l 2 free-range eggs, separated l 1 tsp English mustard l 5 tbsp sunflower oil l Freshly milled sea salt l Freshly ground black pepper

For the red onion & chilli relish l 2 tbsp sunflower oil l 2 medium red onions, finely sliced l 1 red chilli, finely chopped (we used Caerphilly Chilli Co) l 2 garlic cloves, crushed l 70g light brown muscovado sugar l 5 tbsp Craft cider (we used Blaengawney Cider Farm’s Hallets Welsh Cider) 11


Method 1.

For the sausages, melt the butter in a large non-stick frying pan and fry the leek over a medium heat until softened but not coloured. This usually takes around 5 minutes.

2. Put 100g of the breadcrumbs along with the parsley, thyme and grated Caerphilly cheese into a large mixing bowl and mix until well combined. 3. Separate the egg yolks from the white, and beat the yolks together with the mustard, salt and pepper in a bowl.

9. Chill the sausages in the fridge for 30 minutes. 10.

While the sausages are cooling, heat the oil in a large non stick saucepan and fry the onions until they are softened and beginning to change colour (around 20 minutes).

11. Stir regularly and add the chilli and garlic to the onions and cook for a further 5 minutes. 12. Sprinkle the muscovado sugar over the onions and pour over the real cider.

4. Remove the softened leeks from the heat and add to the bread crumb mixture.

13. Bring the relish to a simmer and continue cooking until it becomes thick and glossy and the liquid well reduced.

5. Add the egg yolks and mix together with a wooden spoon until well combined.

14. Remove from the heat and allow to cool for a few minutes before serving.

6. Line a baking tray with clingfilm and divide the mixture into eight portions and roll into sausage shapes placing each sausage onto the tray.

7. Sprinkle the remaining breadcrumbs over a large plate and whisk the egg whites lightly into a bowl until just frothy. 8. Dip the sausages one at a time into the beaten egg whites and then roll in the breadcrumbs until evenly coated, then place back onto the lined tray. 12

As the relish cools, add some oil to a large non-stick frying pan and fry the sausages for around 10 minutes over a medium heat, turning regularly until golden brown and crisp all over.

Serve the sausages with a good spoonful of the chilli cider relish, fresh salad and green beans for a tasty meal.


Big Ginger Pigs High above the Rhymney Valley, overlooking Bedwas and Caerphilly, you’ll find a curious bunch of characters with striking ginger hair and a fondness for rolling in mud and generally living the good life. Meet Caerphilly’s own prize-winning Tamworth pigs – the stars behind the Big Ginger Pigs brand. It all started 14 years ago, when Liz Shankland and Gerry Toms came across a traditional stone farmhouse which was for sale with some land. Their journey started with chickens and turkeys, led to sheep and goats, and eventually on to pedigree pigs and the creation of the Tudful Herd. The herd has won recognition across the UK and abroad. Liz competes successfully at numerous agricultural shows and the pigs have won the prestigious Tamworth Champion of Champions (the best Tamworth in the UK) three times in recent years. Liz is also the author of the Haynes Pig Manual and Haynes Smallholding Manual and teaches animal husbandry at Humble by Nature, the rural skills school set up by TV presenter Kate Humble. As well as selling pedigree breeding stock throughout the UK and further afield, Liz and Gerry also produce the most wonderful slow-grown pork. Unlike most pigs, the Tudful Tamworths enjoy a healthy lifestyle, living outdoors all year round, eating and growing at their own pace. Sausages and burgers are sold at local rural markets, while larger quantities of succulent, rare-breed Tamworth pork can be ordered and collected direct from the farm or delivered to your door. Lamb boxes and bronze turkeys are also available at various times of the year.

Wheelie Good Coffee Coffee Punks has a mission, and that mission has taken to the streets to bring the best quality coffee direct to the people! Glen Adams started Coffee Punks after learning the secrets of the perfect espresso following a dream trip to the home of coffee, Seattle! Returning to the Welsh Valleys full of beans and wanting to share his passion and the perfect cup, Glen embraced the challenge of transforming a run of the mill VW van into a travelling baristas dream wheels! Glen does have a little insider knowledge on the coffee making front, as the other side of his business consists of supplying, repairing and servicing coffee equipment and has fuelled his desire to make every cup a great cup. Coffee Punks signature ‘Flat White’ has proved a hit with customers too, probably because this fast moving coffee is made a little slower than what you’re used to in some high street shops. Coffee Punks coffee is made with beans transported and stored with care and ground freshly before every cup, and served with passion and to exacting standards. A Happy Ending! Tucked into a hillside overlooking the lower Rhymney Valley, perfected over four generations, this is more than just a Sundae treat. Machen has long been the home of ice-cream around these parts and Sian and Richard Powell’s Award Winning Hapus Ice Cream is the happy ending to a story started over 60 years ago. The story of Hapus began with a gentleman named Primo Bernie making his way from Northern Italy after the Second World War with the knowledge and secrets of delicious traditional Italian ice-cream that were trusted to Sandra and Bruno Minoli in the 1960’s and then in 1988 to Sian’s parents Sue and Lewis Richards. The ice-cream that Sian and Richard produce at the ice-cream factory and parlour at the family farm continues the ideals that have made it the only ice-cream to win the ‘Champion of Champions’ silver cup challenge in the Ice Cream Alliance ‘National Ice Cream Competition’ (that means it’s the best ice-cream in Britain) four times! Sian and Richard believe passionately about making the best ice-cream possible and only use locally sourced organic milk and double cream from a family run dairy, coupled with the best quality ingredients and a passion to support other local producers, have created a business with a big heart, a warm welcome, and a great taste where the food miles of your sundae can be counted in yards not miles. We recommend trying the Rum and Raisin – it’s the best Rum and Raisin in the country, and that’s according to the Ice Cream Alliance 2014 awards not us! Of course, you could try them all….

Wern Ganol Smallholding There is no denying that David and Fiona Spoor and their family love a challenge! Whether it’s converting two dilapidated cottages into the family home, rearing Herdwick sheep, creating Victorian kitchen gardens or looking after their growing flock of rare-breed chickens, working full time jobs and parenting too! The family’s most recent venture has been to turn a 4 generation family secret known by just three people into a fully fledged business made with all the right ingredients (many from the small holding they have brought back into production). Encouraged by a chance entry into the ‘Great Roath Bake-off’ Competition with a recipe first baked in the 1930’s by his Great-Grandmother, David, blown away by the comments from the judges (it was described by some as the best fruit cake they had ever eaten) took the plunge & launched Wern Ganol Smallholding’s handmade cakes. All the cakes are made in small batches in the farmhouse kitchen, using produce and eggs fresh from the garden to tried and trusted recipes and are all finished in a wood fuelled oven. The range has expanded from the fruit cake that started it all, and now includes an award winning ‘New Zealand Carrot Cake’ as well as Welsh Cakes, Scones, Empire Biscuits, a new range of Macaroons and a selection of tasty minicakes for afternoon tea too! Spring Lamb Burgers Serves 4 Prep time – 25 minutes Cook time – 15 minutes l 250g Miced local lamb (we used local lamb from Morgan Thomas butchers) l 100g White breadcrumbs l 4 Spring onions chopped finely l 1 Egg l 4 Bread rolls l Salad leaves l Mint jelly (we used The Preservation Society’s from Rudry Market)

Method 1. Add the lamb, breadcrumbs and chopped spring onions together in a large bowl, crack the egg into the mixture and mix together until well combined. 2. Divide the mixture into four equal parts and roll into balls. 3. Take each ball and flatten to form the burger patties and place in the fridge to cool for 15 minutes. 4. Meanwhile, slice the bread rolls in two and arrange salad leaves on the bottom half and spread a good helping of mint jelly to the top half. 5. Heat a dry non-stick frying pan and fry the burgers for 6 minutes each side or until thoroughly cooked. 6. Place the cooked burger onto the leaves and top with the rest of the roll. Serve with a fresh salad and some chunky oven cooked sweet potato wedges. You could even top your burger with some Caerphilly cheese for an even more local flavour.
