Pitch

To: Katie Jeffries

From: Madison George

Subject: Drinks with the Jags

Hi Ms. Jefferies,

I really love the stories you’ve been doing about new hot spots in Jacksonville. Last week’s episode about the new bars in Atlantic Beach was so well put together!

River & Post has a great bar with some of the most unique cocktails as well as the best view of downtown Jacksonville, and it’s hosting Cocktails for a Cause to raise money for three nonprofits in Jacksonville including Hope Haven, Pit Sisters, and North Florida School of Special Education. The event will be held at River & Post on Nov. 9, 2018.

Jalen Ramsey, Myles Jack, and Blake Bortles as well as several other Jacksonville Jaguars will be our featured bartenders. Each of the players are working alongside one of our mixologists to create the cocktail of his choice, which will then be auctioned off during the event that is open to the public. The players will be at River & Post, Tuesday, Oct. 23, 2018 from 12-4 p.m.

We know that our quarterback is a fan of anything with gin, Myles Jack wants to make a Jags-themed margarita, and Ramsey is considering a hot toddy.

We would love for you to come out to our restaurant and help our specials guests put the final touches on their creations! We will arrange for you to have individual interviews with some of the players and our mixologists while at the restaurant. We can even help you come up with a Katie Jeffries signature cocktail! While you’re here we can give you a tour of our restaurant, a sneak peek at our new rooftop renovations, and of course arrange for any equipment/crew you may need to assist you during the process.

Let me know if you’d be interested, we would love to have you.

Thanks

Madison A. George

An Appetizer That Will Sure Impress Your Guests : Fig & Cheese Crostini This recipe spruces up the flavors of traditional crostini with my go-to, keep in my pantry for any emergency, fig preserves. This jar has made its way onto more appetizers than I can count: almost always as a version of this cheese and spread combo, either served with crackers, baked on puff pastry with apples and nuts or simply slathered on a warm slice of sourdough. Ingredients 12 baguette slices cut about 1/4 thick 1 1/2 cups grated cheese such as farm cheese or gruyere 1/4 cup blue cheese crumbles 1/3 cup fig spread recipe by Heidi Larsen from foodiecrush.com

1 sprig fresh rosemary 2 tablespoons honey Instructions Preheat oven to 400 degrees F. Spread baguette slices on a baking sheet fitted with parchment paper or a Silpat baking mat. Top baguette slices with grated cheese, then a teaspoon or so of fig spread, then blue cheese crumbles. Bake in oven for 5-7 minutes or until cheese has melted and edges of baguettes are golden. Remove from oven and drizzle with honey and top with rosemary leaves. TIP: Make sure to layer the cheese on the bread before the jam.

Letter from the Chef

Well, I need to tell you a few things. One day, just maybe, you will be a chef somewhere. You will need to train and motivate the people who work for you, guide them, lead them, teach them, and inspire them. One day, you will spend more time looking at a profit-and-loss statement than you do your station. You will spend more time in the front of house than you really want to; spend time outside of the kitchen promoting your restaurant, give interviews, agonize over food and labor costs, kiss your wife goodbye while she sleeps because you have to be at the restaurant early for some insane reason, and somewhere in there make sure you are serving tasty food. You will miss weddings, birthday parties, graduations, all kinds of things. You will alienate your friends and family because you don’t write or call enough. There are no sick days, personal days, breaks; this is not like a 9-to-5 job; get over it. Maybe the next job you have, you will suck it up instead of leaving them short a line cook on a busy night.
