lthough the summer has to be my favourite time of the year, the autumn and those magical weeks leading up to Christmas, has to come as a close second. Despite the various problems faced by farmers and retailers, the change of season also heralds a cornucopia of autumn fruits and vegetables. Daniel Nowland has made the most of one of autumn’s most iconic vegetables and offers not one, but three delicious recipes for preparing butternut squash (p.12). Slowly but surely life is returning to normal and Emma Beatty in her Culture Vulture column is full of ideas for shows and events to attend (p.40). While if it’s a tipple you are after, Joe Grant suggests beer can be every bit as good as wine to accompany a meal (p.8) - you just need to try a few, to see which ones work the best with each dish, now that’s good way to spend the autumn! AUTUMNAL PLEASURES Words: Daniel Nowland

T

he changing of the season is always a fun time for those who love to cook. The new climate, the colours of the trees and the seasonal produce are always a novelty, especially in the time between autumn and Christmas.

Root veg really is the star of the show in autumn, and many of the products that you may see on supermarket shelves all year from countries such as Mexico or Peru, will suddenly be from Lincolnshire of Suffolk! Although perhaps a little cliche for autumn, I wanted to talk about squash and give you some ideas for their versatility.

The squash family includes many shapes and sizes from the massive pumpkins we see in October, to the artistic looking delicata or spaghetti varieties. The most readily available variety is probably the butternut squash, mainly because it is extremely versatile, has a great ratio of edible flesh and is easy to prepare. Some of the more obscure varieties can taste fantastic, but take some skilled kitchen surgery to get the best from them. The other big benefit of butternut squash is that providing it is roasted for long enough, the skin is deliciously soft and perfectly edible.


I always begin with roasting the squash, as this seems to deepen the flavour and create a gentle sweetness. We love to use butternut squash this time of year in the deli, and these are some of my favourite recipe ideas… 1 Cut the squash in half along it’s vertical, longest side and scoop out the seeds from the centre. Rub it all over in olive oil, harissa and sea salt, before roasting it low and slow in a baking tray in the oven for around 1 hour at 170c. The dark, spicy and knarly quash is then delicious as the centre piece in a meal in place of a steak or roasted meat. 2 Half and de-seed the squash before cutting

into random shaped wedges. Rub with a little olive oil, salt and pepper, and then roast for 30 minutes at 180c. Serve at room temperature on a bed of rocket, with crumbled feta, walnuts, quality olive oil and a drizzle of balsamic. 3 De-seed and cut the squash into large wedges and rub with olive before roasting for 30 minutes at 180c. Scoop the flesh away from the skin and mash it with a little smoked chilli and sea salt. Mix roughly with a little top quality mozzarella and some chopped roasted tomatoes. This mixture is then my favourite filled pasta filling, but also delicious smeared onto toasted sourdough as an appetiser. 13

My other concern has been plastic packaging but again, suppliers are starting to use more compostable packets and containers, to the point that I’m going to stop selling certain brands that continue to use plastic. The other area that we’ve been able to expand, is the re-fill offering, so that customers can either bring in their own container or we can supply them. So far, we have re-fill laundry liquid, washingup liquid, surface cleaner and personal care products, but we are expanding the range all the time, its cheaper for the customer and better for the environment of course.

Sprightly Steps is a livelier class full of fun and energy. There are three levels of tap, two levels of ballet and a vibrant musical theatre dance class – so there really is something for everyone.

It is a good idea to ask your child to write a list of questions that concern them about returning to school. This is an opportunity to re-assure them that, thankfully, Covid 19 has harmed very few children indeed.

Many children have had very little contact with their friends. More introverted children may be exhausted from returning to school and many may take some time to adjust.

AGREE A PLAN Now is the time to set up a new routine with regular meals, homework, chores and leisure time. Habits are essential to regulate our moods and make us feel secure.

TALK TO THE TEACHER (ESPECIALLY IF IT IS A TRANSITION YEAR) Take any opportunity to talk to the teacher or school about your child’s special needs, personality, strengths and weaknesses. This may be a challenge, due to Covid 19 restrictions, but not to be overlooked.

TRY SOMETHING NEW Children will look to us to set the mood. We have all experienced stress and maybe loss during the lockdown. A positive ‘we can do this’ is the best attitude. Having 6 months of no school is not going to be corrected overnight! It may be quite some time before children have caught up with where they need to be. ROASTED SWEET POTATO AND GOATS’ CHEESE SALAD A satisfying salad that makes for a nutritious vegetarian main. It’s delicious served warm, with a glass of refreshing dry white wine, or enjoy cold the next day for lunch. Preparation time15 minutes. Cooking time: 25 minutes

SERVES: 4 INGREDIENTS 500g (about 2 medium to large) essential Waitrose Sweet Potatoes 1 tbsp olive oil 50g pecan halves 2 tbsp extra virgin olive oil 1 small red onion, finely sliced 130g tub pitted black olives, drained and roughly chopped 1½ tbsp balsamic vinegar 250g pack pre-cooked red and white quinoa 115g bag baby spinach 125g soft goats’ cheese, crumbled Squeeze lemon juice

METHOD 1 Preheat the oven to 220˚C, gas mark 7. Cut the sweet potatoes into 3cm chunks and toss with the olive oil in a large roasting tin. Season and roast for 25 minutes, stirring halfway. Put the pecans in a smaller roasting tin and place in the oven for the final 6 minutes of the cooking time. 2 Meanwhile, heat the extra virgin olive oil in a small pan over a low heat and very gently fry the red onion until softened, about 4-5 minutes. Tip in the olives and balsamic vinegar, warming through, then season and set aside. 3 Heat the quinoa according to pack instructions. When the sweet potatoes are done, take out of the oven and stir through the quinoa to combine. Transfer to a large serving plate with the spinach, then roughly chop the pecans and scatter over. Spoon over the red onion, olive and balsamic dressing and top with the goats’ cheese, a grinding of black pepper and a squeeze of lemon juice. Cook’s tip: There’s no need to peel the sweet potatoes, as the skins are a good source of fibre. Just give them a rinse or light scrub, if need be. Portsmouth Climate Festival will be an opportunity for the city to explore issues related to the four main goals of COP26.

Portsmouth is about to hold its first ever Climate Festival, to raise awareness of climate challenges in the city. It will highlight the implications of climate change for Portsmouth and the opportunities for us to make a positive difference.

“During the Second World War, Canadian soldiers were billeted in Bransbury Park and they used to use the clubroom at the back of the pub.

The former Cumberland Tavern and the site where the famous Birdcage Club once stood are now home to flats managed by Chinneck Shaw.

“When the clubroom was demolished and the panelling was taken off the walls, we found cut throat razors that must have been hidden there during a police raid or something.”

Sadly the building eventually burned down. Joseph Court now stands in its place - and a blue plaque reminds us of its remarkable place in music history. As a man with so much time for the past, it seems only fitting that George chose Chinneck Shaw to manage his 18 flats. “They are one of the oldest firms still trading in Portsmouth and I am very happy with the way they look after my properties.

THE DIRECT SERVICE – A FULL EXPLANATION Many of you have read in the newspaper or on social media about direct, simplicity or pure funerals. Although headed under different titles, these are essentially the same form of funeral, merely renamed by the company providing the service. It is our responsibility to provide whatever type of funeral is required by the families we serve and support, it is also important that we are also honest, open and transparent in the service we provide. For the sake of explanation, we shall call this type of funeral a ‘Direct Service’ A direct service is one, where the deceased is taken to from the place of death to the funeral home, placed into a coffin and taken to a local crematorium early in the morning for cremation. However, it’s important that a family know exactly how this is carried out. Important questions need to be asked and of course, for funeral directors to provide clear and transparent answers. The service provided will vary considerably from one funeral director to another, although invariably no one can attend the service, nor can their loved one be dressed in their own clothes, something that may cause a family concern to say the least. Likewise, the style and design of the coffin is at the funeral directors discretion. On the day of the service, the coffin is invariably conveyed to the crematorium in a van or 50

similar vehicle, as opposed to the hearse. The coffin is then taken into the chapel by a member of staff using a trolley. Although no attendance at the funeral is governed by the crematorium concerned, we at Mayfields funeral Directors offer two direct service choices. The first choice is to use our silver estate car and two members of staff, whilst the second choice is to use a hearse, funeral director and four liveried bearers. Regardless of which service is provided, we will dress the deceased should you wish, observing dignity and respect at all times. We will also inform you of when the service has been arranged to take place, so that should you wish, you can sit at home in quiet, observing your own thoughts and memories of your loved one. Our advice, should you be considering a direct service, is to discuss it with us. We would be pleased to answer each and every question you have and most importantly, provide honest and open answers. If funeral charges are an issue, a direct service may not be the only way to arrange the service. Come and talk to us, we will always try to help and support you though this time.
