Greetings from the GM After all of the unbelievable weather in March, Mother Nature hasn’t been as kind. We are all very excited that May is finally here and with it the return of all of the summer fun! April was a great month with lots of one of a kind Salina Country Club activities. I hope you were all able to make it out to the Easter Brunch and meet the Easter bunny, or to any of the other special days that were offered at the club. May is going to be even better! There is so much going on this month. I invite you all to come out and take advantage of what your club has to offer: • Let’s celebrate Mom with a fantastic Mother’s Day Brunch on May 14th. • The Pool Opens this month (weather permitting) on May 19th. • A Salina Country Club tradition continues the Summer Kick Off, on May 20th. Golf will also be kicking things into high gear this month. Junior programming continues, Golf Leagues begin to heat up, and Randy’s Tuesday Night Clinics – a hugely popular addition – will continue as well. Not to be left out, Tennis programming also begins in May. Don’t miss the Tennis Social on May 29th! May is going to be an exciting month at the Club! I hope you’re able to make it out for some of the great events we have planned and to enjoy some much warmer weather! Thank you all for being members of Salina Country Club! It’s a very exciting time for our Club and I’m very grateful that you’ve chosen to join us! See you at the Club, Brad McMillan

The Setup

This is the time of year I love. Everything is in a state change and growth and the club starts to come alive more and more each week. Our herb garden will soon start producing fresh herbs for the kitchen and the bars to utilize. Our junior golf and tennis will be starting and before we know it, and the pool and snack bar will be open for the membership to enjoy. Chef ’s new menu has been out for a little more than a month and we have received some positive results on the new offerings. Please do keep an eye on the menu as we will be making a few minor adjustment as we remove a few items that are not as popular and replacing them with some options that we believe the membership will enjoy. Thank you to everyone who came to the club to enjoy the Easter festivities. We had over 400 members and their families join us this year and it’s a pleasure and an honor that you choose to spend your time with us. Now is also a good time to start making your Mother’s Day and Summer Kick Off reservations. We are expecting large turnouts for these event so contact the club and reserve your table and time. Our first alcohol tasting featuring liquors made from the Agave plant started off our tasting series with a small but passionate group that had a wonderful time learning about and tasting six different liquors. Our next event in this series will be held on June 22nd and will feature juniper based products. Come down to the club and enjoy a relaxing evening with us as we continue to bring in new and exciting products for you to sample. Steven

Chris’s Comments

The Bermuda is finally awake from its winter nap and the entire course is looking green again! This is one of my favorite times of year when the course is ready for the new season and everything is finally growing, including Wanda’s flowers. This is also the time of year where we began aerifying the greens. Due to this process, the course will be closed on May 1st and 2nd. The entire process is a lot of work, but the results last the entire season and I believe will help meet the expectations the club members and give you the golf course you deserve.

With that in mind, the fairways on #12 and #14 are behind the others because we sprayed them, just like every other fairway, to remove all the cool-season grass over the winter. Since these were over-seeded a couple years ago there are some thin areas that will eventually fill in. We have fertilized them in hopes that they will fill in faster. To further the process we plan to sod the bigger areas. This issue will get better each week now that the temperatures are getting warmer and the Bermuda is actively growing. We did this so that in the fall and next spring there will be a consistent height and not an uneven surface. The crew and I are always working towards providing you the best playing conditions, not just the current season, but for future years as well. I hope to see you on the course soon and if you ever have any questions or concerns please don’t hesitate to stop me and ask.

In the Kitchen

April ended up being an active 30 days!!! Last month Steven hosted an extremely fun and informative night of tequila tasting. Even with all the happenings in the kitchen, I was able to pop in and soak up a little knowledge. When it is poured over ice it’s aromatic and flavor forward. I learned everything from how it’s made to how it’s harvested, and the different varieties such as resposado to anejo to blanco. Please join us for the next spirit tasting series that Steven has planned for June 22nd. I guarantee you will not want to miss it! This month we also did an exciting new “Fresh Catch” tasting! Steven, Chef Mike, Chef Tim and myself crafted a signature menu to celebrate the waters of both the coasts and the gulf. Together as a unit we gathered some of our regional favorites and integrated many ingredients indigenous to our community and made something truly magical! Please keep an eye out for future tastings that will be available at the club. Also, we are in the works of planning a Chef ’s Table Supper Club right here in the kitchen! This will be an extremely limited and exclusive event. You will be able to witness the organized chaos of dinner service and view your meal as it is prepared right before your eyes. If everything goes as planned I will be side by side with a guest chef to introduce to our extended family and friends. Lastly, please keep in mind that the team I work hard every day, with Brad’s assistance, to give you a great experience and upholding the standard of consistency, while holding ourselves accountable to maintain above average health practices. If anyone would like to come say “hi,” the kitchen is always open. I hope to see you all soon, Chef E

Kat’s Column Hey Everyone, I am the new sales/marketing intern here at the Salina Country Club. I have had a blast over the past three months working on new menus, advertisments, and meeting some of the amazing and interesting members! If anyone needs help creating new advertisments for an event you are hosting, feel free to let me know. Summer is just around the corner, which means it is time to sign up for junior summer sports! I’m really excited to be help cordinate this year’s program and I’ve appreciated all of the wonderful comments about last year’s summer sports! This year we will be bringing back our popular Tennis and Golf programs, as well as a new SCC Summer Sports Program. This new program is a lot of fun because it includes golf, tennis, swiming, and lunch! If you have any questions, or would like a packet emailed to you, feel free to email me at katlyndavis@troon.com. Thank you, Kat Davis
