Coral Collection The coral of most interest to jewellers is called precious or noble coral.What’s made coral so attractive to jewellers for many centuries has been its seemingly inexhaustible supply; its relative softness, which lends itself to elaborate carvings such as intricate cameos; and the way it can be polished to a glossy, lustrous finish. The Necklace and the Earrings are an inspiration from vintage Jewelry designs. Both are classic creations that can be often worn and never will be out of style. The earrings have high quality South Sea Pearls along with custom-cut coral in a barrel shape with Black Onyx rims and beads. Necklaces have a gorgeous crisscross weave carved on the coral, encrusted with White Diamonds edged with Black Onyx, along with a lovely 18 karat White Gold chain attached to the pendant.

White Agate Collection Agates are a type of chalcedony, which is cryptocrystalline quartz. The stone is carved into cameos, sliced, cut, and polished into cabochons for rings, bracelets, pins, and pendants. Sometimes our designers favour agates over traditional gemstones like Diamonds, Rubies, and Sapphires because they appear more naturalistic. In this collection, we have custom-cut the white agate in order to mount it into an 18 karat Pink Gold Bangle. Sylvio Giardina’s “Black Mirror” FW15-16 turns women into a free soul… Sylvio Giardina’s work is always infused with signs of artistic splendor that easily resonates with women. In his new creative project, a small, dark, slightly convex object with a black tinted surface fascinated Sylvio: it was the “Claude mirror”, which abstracts landscape sceneries, while unifying shapes and lines and blurring details.

Furne One, designer and owner of brand, Amato Haute Couture, has never been in higher demand. In The Midst of Life’s Storms

Y

ou can change your zip code, the direction of your business, even your outward appearance, but if you don’t change your state of mind, then the same circumstances that have always held you back from achieving success in your life and your business will persist.You will fall victim to the common pitfall of distracting yourself with external changes when the inward reality is that nothing has actually shifted. Developing your inner capital then is one of the most critical aspects of the changing business world. It is also the biggest return on investment you will ever receive. Unfortunately, many business people struggle to decipher what it really means to achieve their top inner game. Let’s be honest, none of us has ever taken a class in inner management. No business school I’m aware of even bothers to address the topic.The only people I’ve known who have had access to any type of inner management skills training are professional athletes. And that was solely because those athletes recognised the need for it. Even in the elite athletic world, where most are on par with their competitors physically, have the same level of training, follow similar diets, etc., the winner is always the person who’s playing from their best inner game. Just like athletes, in business your top inner game is likely needed when you have no choice but to perform at your best — for example when you find yourself pitching your top value idea to a potential investor, giving that crucial make-or-break speech, being interviewed by the media, or giving a big presentation. The inner game, whether for athletes, entrepreneurs or executives, is the same construct. The context is different, but in both settings, we must face the same inner battles when having to perform at our best. 46

body&mindmindful lifestyle Being Mentally Present As an entrepreneur myself, I’ve learned that in those peak performance moments, it comes down to staying mentally present. If I can avoid thinking about the future (i.e., outcomes) or avoid thinking that has me stuck in the past (i.e. worrying about messing up like I did the last time) - I know I can perform at my best. Bottom line: in order to win in the fast, paced, ever changing business world, you must remain centred and present.

Here's a personal example: Having developed two global martial art brands, I’m often asked to be interviewed by journalists, podcasters, etc. As an introvert by nature, I don’t relish these requests. To be honest, I don’t feel that I’m very good at that sort of thing. I give my best performances when I’m coaching on stage. I also know, however, that being on the right podcast saying the right thing at the right time can be very beneficial for my brands. But given my introverted nature and the fact that giving speeches and interviews is not something I’m fond of, I can quite easily become overwhelmed by anxiety. I then find myself worrying about what to say next. Over time, I’ve learned that staying in past-or future-based thinking often leads me into trouble, and my ability to perform in the moment begins to degrade. I start to lose my train of thought or stumble over my words. I’m sure you can imagine how damaging that can be. If I don’t sound like I know what I am talking about and do so with selfassurance, people listening will lose confidence in me and my brands. The lesson I’ve learned from these experiences is that there’s a sort of paradox around performing at your best: developing your inner game means that in order to bring out your best performance, you must focus your mind, detach from the past, and remain unconcerned about the future. Let me say that again: I cannot stress enough the importance of not getting caught up in past or future-based thinking that will actually distract you from performing at your best.

Learning To Be More Present So, how do you make that happen? First you must distinguish between observing your thought process rather than engaging with your thoughts. In other words, you need to develop the ability to notice your thoughts and not be run by them. For example, during an interview, I may notice that I’m becoming focused on the future (what to say next) or concerned with past mistakes (previous mess ups when answering the same question I’m being asked in that moment). In order to successfully ‘notice’ my thought process, I must first recognise that I’m projecting into the future or holding onto the past. Once I’m able to do that, I can then gently physically anchor myself back in the present moment, the only place where I know I can be fully present in the experience at hand.

An anchor, is a physical re-centering technique, that can be something as simple as squeezing your hand into a fist, or my personal favourite, and what I use all the time, to reach across with my one hand to grab my other hand’s thumb with a gentle squeeze. The purpose of anchoring is to connect a physical movement that can be performed during a crucial performance, like a speech, presentation etc., that enables you to get back to the present moment. In other words, it distracts you from your over thinking mind, and enables you to come back to the present. Of course as noted earlier, first you have to know when you are drifting off into past or future thoughts. When you do notice, using a physical anchor as described earlier, is a great tool to use when a you are finding it hard to let go of past and future thinking. With enough practice, the process virtually becomes automatic.

fter hearing about Natthakanya 'Apple' Saengpho, CEO of the Paradise Group, One Coast Magazine was interested to find out if all the ‘Talk of the Town” was true. Natthakanya 'Apple' Saengpho as CEO of the Paradise Group has walked away with four awards from the Thailand Property Awards. An incredible feat in itself but then she was also personally honored by the United States Agency for International Development as one of the Outstanding Women Business Leaders of Thailand for Green Growth – an award designed to encourage environmental development. One Coast Magazine was lucky enough to meet up with K. Apple, to ask her a little bit about her exciting life.

How long have you been on Phuket? I have been in Phuket about 18 years, since1998. Can you tell us a little about how your business relationship started and evolved with Dr. Allan? My business relationship started and evolved as a Thai Director with Dr. Allan Zeman since 2002. We started the First Luxury Villa Project and Commercial Boutique Shopping Mall named ‘The Plaza Surin’ which was the key into lifestyle in Phuket, offering resort wear, home to decorations, jewelry and a health spa. After 2004, we started to set up the Architectural and Interior Design Project Consultancy Company to develop our own projects; Andara Resort & Villas - 26 luxury villas, Andara Resort Residences Hotel - 37 units and our most recent project is Andara Signature Resort Villa - 8 ultra luxury villas. Which were the first projects you completed together with Dr. Allan? The first project was “Andara Resort & Villas” - 26 luxury villas in Kamala Sub-district, Kathu District, Phuket Thailand and the winner of the Best Villa Development in Thailand 2009. What was it in Andara Signature that managed to get both best residential architectural design and best landscape architectural design at the Thailand Property Awards in September? 1. Because our design teams for Architectural and Interior Design are composed of talented and well experienced designers, but also because under the lead of our Chairman Dr. Allan Zeman, our policy has always been to address and solve any, even minor design issues and correct any detail before completion. Matthew thank you very much for taking the time to meet with One Coast Magazine and letting us have an insight into your interesting life and the project that you are currently working on with your father, Port Takola Yacht Marina & Boatyard, a New International Class Project in Krabi, Thailand.

I was born in North Carolina, U.S.A. but grew up in Bangkok, Thailand. Where did you undertake most of your university education?

I attended Salt Lake Community College for general education before transferring to complete B.S. of International Studies at the University of Utah. Is this the first project you are working on together with your father?

Yes, it is but I have also assisted my father with his hyperbaric medicine clinics before.

Second is that the marina is located in a sheltered location with deep channel access that is ideal for a safe mooring. Third is that the marina is in a prime area. It is within 10 minutes drive to an international destination, Ao Nang, and about 40 minutes drive to Krabi International Airport. This is very convenient to commute to and from the marina. There is also accommodation, entertainment and dining venues within close proximity. Last, is that there is modern infrastructure support which is not always a case in this part of the world. Krabi Province itself is very charming. It has a picturesque landscape of limestone cliffs and many stunning islands all within short sailing.

Your father is also an honored Naval Admiral; can you tell us a little about him?

How many phases are there before the marina is totally completed?

The marina itself is planned in 3 phases. We plan to complete all berthing in phase 2 and to complete the boatyard area in phase 3. As for a timeline for the total project, I really don’t know at this stage. Which is your favorite part of Thailand?

I actually enjoy Krabi province for reasons mentioned above. I enjoy the coastal lifestyle here. I always say that Krabi is ideal for working and living. The surrounding environment is beautiful. It's relaxed and not hectic as in an urban or a major tourist city. Its relaxed and calm environment gives you a sense of consciousness that allows you to focus on what is important in your life.

My father, Admiral Suriya na Nagara, held many administrative positions in the Royal Thai Navy, including the director of underwater medicine division, chief of preventative medicine, director of Bangkok Naval Hospital and director of H.M. Queen Sirikit Hospital. In 2008, he was appointed as the surgeon admiral and was responsible for the construction of the $40 million treatment and OBD center, and the $14 million Underwater Medicine and Cardiac Center renovation.

Which is your favorite part of the rest of the world?

How many other brothers and sister are in your family?

What do you have for hobbies?

I have two younger brothers. Michael is practicing his medicine in Australia and Mark is exploring the broadcasting industry. Who first had the idea of turning your family’s estate into an international Marina?

It was my father's idea. He carefully studied the family’s estate geographic location, surrounding environment, ocean landscape, and the growth in the yachting population. After such analysis, he became convinced that it was ideal to become an international yachting destination. When did this project actually start?

The conceptualization and studies started about 7 years ago. This is a family private business so it took us time to reach where we are today. It is also because we want to ensure that Port Takola gives a quality service and a pleasant experience to visitors. Why do you consider the location to be perfect for a marina?

There are several reasons. One is that Krabi Province is part of the Andaman’s Golden Marine Triangle or the Phang Nga Bay, which is one of world's finest yachting destinations .

The world is so large and it is full of character and culture.This is what I like most about our world so it is difficult to pick a specific part. Which restaurant would you choose if you wanted to show some friends the best food in your area?

I’m not really a food enthusiast but there are many good seafood and traditional cuisine to dine.

I enjoy listening to music, audiobooks, following Arsenal Football Club and boating of course. How are you getting on with the 1st phase?

We are making good progress. We are really excited to see Port Takola actually take off. Can you tell us a little about what it will be when completed?

The marina phase one will consist of 50 wet berths stern-to a 4 meter wide modern concrete pontoon. Electricity and water are available. The boatyard will offer about 50 dry storage areas and will be serviced by a 38-ton hydraulic trailer. Quality shower and toilets have been top priority and will be available at the beginning. A casual all day café will serve from morning till late. Offices are available for marina business to set up as well. What other important features are going to be close to the marina?

Apart from our residential offering at a later stage, I believe our shuttle boat service from the marina to Krabi town will establish transportation connectivity.This will increase ease of commuting between Ao Nang and Krabi Town.

With all this work on the marina do you still have time for your family?

Port Takola is a family business so we meet often to discuss and interchange ideas about the marina. I think the marina actually brings our family closer rather than further away. It really gives you a sense on how important family values are. Where do you see yourself after the marina has been completed?

Of all the materials used by human beings, there is perhaps none greater, nor more versatile than wood. Reclaimed wood is possibly one of the answers to the world’s recycling. Designers are now steering more towards the pure, classic basics when choosing all the key elements for their interiors. The industry has long been tiring of poor quality rehashes of furnishings and decorations that were making the rounds over the last decade. So the rebirth of the use of earthy materials was inevitable!

In an effort to make the optimum eco recycling effort when approaching modern day building designs, architects too are making a conscious effort when choosing green building materials. In living spaces, designers are creating grand statements when using reclaimed wood to construct the base of standing lamps or for the bordering frame on a round wall mirror. This not only functions as an art statement but creates interest without competing with the other furnishings in the room. There's something really artistic about combining modern with rustic, the perfect tension between elements. As one jewelry designer after another keeps designing such fine costume jewelry, there is no shortage of the elite ready to splurge millions in order to acquire that shiny stuff. Who understands it better than a world renowned Hong Kong-based haute couture jewelry designer Wendy Yue! She knows it’s a persuasive business to be in but she can’t rule out the fact that it ultimately comes down to your genuine creative vibes when designing. And her glaring work especially interpreting flowers in various scintillating forms speaks for itself. After all, she is the sole person in the world today credited with doing this type of magic. In an exclusive interview with One Coast, we sit down with her to find out how she went on to bring to life a brand of such sheer magnificence. Yue’s obsession with colors was what made her fall in love with jewelry. She found the phenomenon of having so many natural minerals with such a kaleidoscope of colors quite mind-blowing, prompting her to start designing jewelry. Strangely though, it all ensued thanks to one of her friends working for a jewelry company at the time when she geared up to start her line of work. “It’s the one and only form of art that translates my wild imaginations the way I anticipate. I love color and I love nature. I love gemstones for its huge variety of colors that always comes across as eye candy, the way each can be cut to reflect different colors and forms, and how a piece can be soldered and sculpted into one beautiful artwork. I’m just so passionate about creating jewelry,” she says. There is a sense of greater fulfillment if one makes an effort to achieve something on his or her own. That’s why she never ever felt an urge to go to a fashion school to learn the craft. “I believe you learn more with experience. Through my time working in different roles from a jewelry salesperson to designer and later as a manufacturer, I gained so much hands-on knowledge about every detail that’s quintessential to jewelry making,” Yue says. Just looking at the designs, one is automatically transported to a world where nothing but the idea of harmony seems to be the overriding motto. Notably, that’s the reason why people become overly excited to see her sublime jewelry anytime as she explains, “I think that the fact that it’s so bold and happy is where the answer lies. Who doesn't want a fun and happy jewel! I don't take my jewelry extremely seriously; it’s similar to my life philosophy. I feel that it’s so instinctive, primitive, organic yet exquisite—what a lovely combination to have the most fun with it.” Yue doesn’t have to put too much strain on her brain to look for waves of inspirations. Rather it comes easily to her. “I get inspired by nature, my personal life experiences and travels, ancient mythology, and my Chinese heritage,” she says. “I just love to let my imagination flow free. Since I was a child I’ve been running in the wild even in the old Hong Kong. Did I tell you I’m the year of the Monkey? That’s why I've been in the wild for so long with all these natural things in mind.”

For the stones that she uses in her jewelry she sources each one of them from faraway places she travels to, or people she comes across and the various trade shows she routinely attends. Though she doesn’t shy away from visualizing a woman’s figure which she thinks comes naturally because she is a woman herself, it hardly concerns her with regard to design parameters. “I believe comfort is what I really aim for.” Besides, Yue’s creations are all about confidence which is what women look for in their jewelry. “My designed wonders are for a woman who is very passionate about bold designs and someone who already has everything but still craves for something very special,” she says, adding that she doesn’t back the idea of celebrities showing off in her jewelry. She just loves to create for everyone who loves jewelry like mad. In the middle of our conversation, a question about her design mantra arose out of nowhere.To which, she replies coolly, “The key is to dare to be bold, dare to design something that you love.” With the fashion industry thriving on a massive scale as well as experiencing one of the cherry on the cake moments in the Middle East, one interesting phenomenon to be noticed is how every big fashion brand is eager to chip in and set up their base in the region and give customers

what they are looking for. It’s no wonder the region is very important for Yue to keep investing in. “One can clearly see that women here go hunting for extravagant pieces of jewelry. I believe it really shines through their regular look, and is without doubt the perfect complement to their skin tone and figure,” she says. The other mesmerizing aspect of life in this part of the world that often intrigues Yue is concerning women’s taste in jewelry. “I think there are two extremities…they can go from very conservative to very extravagant.You can never tell, and that's what I love about this huge diversity,” she feels. Being part of this regal culture by all accounts, she still loves to keep her personal style statement simple and comfortable while carrying it effortlessly with a piece of jewelry that gives her overall look a BANG effect! Likewise, Yue’s latest collection really fulfills that desirable emotion of a woman. “The collection evolves into smaller scale pieces. So you will get to see more opals,” she says. Yue doesn’t believe in making plans for her brand. Rather, she likes to go with the flow or as things happen. While not designing, she spends her time working vigorously on interior design and home remodeling. What an amazing feat!

For years, men have enjoyed designing women’s shoes and still continue to do so with the same degree of passion that one anticipates from a creative genius. However, there is a big shift going on which, I think, was really called for.

It relates to an ever more growing trend that now luckily is ubiquitous — which is to say that a number of women shoe designers have cropped up designing elegant shoes and mind it they are giving a hell of a lot of tough competition to their male rivals in the game. This contrasting picture must be seen in the right context and no one can question the fact that women’s needs could be better understood by women themselves. Maybe it’s the emotional connection they share with one another. Whatever it is, the designs being cooked up under their tutelage are just striking and refreshing drawing the attention of celebrities and fashionistas in large numbers who are supposedly excited about trying on their shoes. So they are equally designing powerful, alluring collections that are eye-catching and therefore are in huge demand everywhere. And those in the know are fully supportive of what they are doing. It’s no surprise they seem to have made a stronghold in their endeavors to shape the footwear industry today. Here one such influencer comes - Charlotte Olympia Dellal, an internationally renowned British shoe and accessories designer with a distinctive edge, who is turning the page in full gear and catching everybody’s attention as she keeps designing one great collection after another. What drew you to start designing shoes in the first place? How did the journey begin? I always knew I wanted to be a fashion designer. As a child I enjoyed watching old movies with my mother and I especially loved the movie stars from the silver screen who made me fall in love with glamour from a young age. The essence of my brand comes from my love of old Hollywood; I love the glamour from the 40's and the playfulness of the 50's. It was during my foundation course at London College of Fashion that I came to discover that I wanted to specialize in shoes and went on to do a footwear degree at Cordwainers College. What does your brand stand for? I create classic designs with a modern silhouette and would describe my aesthetic as feminine and glamorous with a touch of humor. Did you attend any design school to develop your craft? Yes, I did a BA in product design and development at Cordwainers, the world-renowned college for footwear and accessories in London. Here I was able to explore my interests alongside technical training in the craftsmanship of beautiful shoes. Did you work with any male footwear stalwarts in the industry before launching your own label? No but I interned with Giambattista Valli when he was creative director at Ungaro and then when started his own brand. Being exposed to a big fashion house and Giambattista's talent gave me some insight into what goes into building a luxury brand. How self-assured were you about seeing your designed creations create a stir in the market? Did you have any kind of doubt regarding it all? From the beginning it was very important for me to establish a brand aesthetic and to have a strong identity. This, I think, made it easier for me to go ahead without harboring any sort of negativity in my mind. Where do you get your inspirations from? So many things inspire me; from places, people, art, movies to fabrics, textures and colors. I like to give my collections a soul and a story. I love collecting beautiful things and I translate this by transforming everyday objects into something wearable. I’m constantly collecting ideas whether it's for a current collection or saving them to develop for future projects. I especially love movie stars and pin ups from the 40's and 50's, Rita Hayworth is my favorite. Who has been your role model? My grandmother was a very elegant and glamorous woman, she looked like she could have been a movie star and came from that era I love. Her hair was always perfectly set and she never went anywhere without lipstick which inspired me to do the same. DIONNE_GREEN How important is the color factor you choose for your collections? I love color and it’s a very important factor in my designs as well as materials and texture. I rarely design in black that always comes after. What about the comfort factor? How much does it count according to you? I enjoy making beautiful pieces that look good on and off the foot. However, I don't design with a 'form over function' mentality; being a female designer I have the advantage of being able to try on all my designs throughout the sampling process to make sure they walk well. It’s very important to me that they can be worn throughout the day and into the night. What’s the secret behind your increasingly popular brand it has become today? I’m very lucky that I absolutely love what I do, but it takes a lot of hard work, passion and dedication. When I started Charlotte Olympia, it was important for me to create a brand aesthetic and have an identity. This came from staying true to my design philosophy and creating what have now become signature silhouettes for the brand. It’s also important to have a business plan and grow organically by introducing products at the right time, but at the same time seizing opportunities that come my way. I have learnt that surrounding myself with a great team who understand and believe in the brand is vital and that hiring the best people when possible to help grow the business is a key factor. Which signature line of yours has remained on top since they first came out? My 'Encore' collection consists of signature shoes including Dolly, a classic platform court shoe with a modern silhouette and the Kitty, a feline feminine flat with a sense of humor.They are essentials that I believe every woman should have in her wardrobe.

To what extent do celebrities wearing your shoes matter? It’s great seeing different women wearing my shoes, whether it's on the street or on the red carpet. What’s your take on so many fantastic women shoe designers popping up everywhere? It's great to see more interest in footwear today. Several years ago, there were only a handful of women shoe designers. I’m optimistic that more women will chip in. How vital do you think it is when it comes to women taking a lead role in society as a whole? It's important to have a balance; society should recognize that it needs both men and women in leading positions. What’s your own style statement? Dress from the feet up! When did it occur to you that you should get into designing other accessories products like bags? I designed my first bag, the transparent Pandora clutch box, because I wanted a clutch to match my shoe designs. Being transparent it’s the perfect clutch to go with any outfit. To this day I always take it with me when I travel. My bag collection developed from there organically, to also include more elaborate and playful designs. Last year, I launched my first collection of leather handbags called ‘Handbags for the Leading Lady’ – again it was the right time for the brand to introduce leather goods. Is the concept of coming up with your own clothing line one day on your mind? At the moment – I’m focusing on expanding my range of products and expanding the retail footprint of the business. But I can’t rule out this possibility if it has to happen. How supportive has your family been in terms of establishing your global empire today? I’ve taken an organic approach to growing my business, but my father taught me the importance of a business plan and to think ‘big’. I’ve a fantastic team in my studio and try to surround myself with the best people to help grow the brand. I’m also lucky that my husband is incredibly supportive and often helps me with my business when I need his advice. What are your future plans for the brand? I would like to continue to open stand alone stores in key locations around the world and broaden my range of products. In the last year alone, we have opened four new stores and launched leather handbags and SLGs, sneakers and we are about to expand the “Incy” collection for children with some exclusive styles for boys. Which are your favorite holiday destinations you go to and feel restored again? Rio de Janeiro, Brazil (where my mother is from)…Rio is my home away from home. The first and last thing I do when I arrive is have a run up and down Ipanema beach followed by a fresh coconut and admire one of the most beautiful views in the world. Taking watchmaking to new heights…

RM 51-02 TOURBILLON DIAMOND TWISTER This new high jewelry tourbillon takes all of its cues from the swirling form of a twisting spiral, a shape expressed in many organic forms around us in the natural environment. The spray of diamonds emanating outwards in 14 rays from the tourbillon escapement at 6 o’clock can also be associated with the spiraling vortex one perceives in myriad galaxies of the Milky Way, an allusion to a whirlwind (the English translation of the French word tourbillon) or the spirally formed patterns of organic growth found within certain sea creatures, plants, trees and animals. The baseplate of the manual winding tourbillon has been created of Black Onyx, a variety of cryptocrystalline quartz chalcedony composed of silicium dioxide, (SiO2). Onyx varieties with rectilinear black and white parallel stripes are actually a part of the agate family, whereas the fully black type is what one commonly calls true Black Onyx. Keeping with the technical nature of all watches created by the brand, the RM 51-02 has a free sprung balance and skeletonized bridges in PVD treated grade 5 titanium with various hand finishing techniques such as anglage and black polish used throughout the movement. An additional security system in the form of a torque limiting crown prevents any possibility of accidental overwinding that might damage to the winding stem or exert extreme pressure on the mainspring barrel. Each spiral ray of the RM 51-02 is perfectly set with a single row of diamonds; the case is set with white diamonds, and black sapphires have been added to accentuate case details. As a final flourish and with an eye for detail typical of Richard Mille’s fastidious approach, the crown has also been set with 3 rows of diamonds to complete the brilliant richness of this shimmering new timepiece. The proud owner of two-Michelin stars and 17 restaurants worldwide, his name sits atop locations ranging from Madrid to Verbier, to Istanbul and Abu Dhabi. A culinary trend-setter of authentic Catalonian cuisine, he passionately interweaves food and stories from his native Spanish homeland with diners. p&c by Sergi Arola at the Shangri-La Qaryat Al Beri represents his first venture in the Middle East market, where culinary competition is fierce.Yet it has already garnered the attention and plaudits of foodie fashionistas with its creative blend of Spanish tapas favourites imbued with Sergi Arola’s Michelin-starred magic. As the signature restaurant at the Shangri-La Hotel, Qaryat Al Beri, the glamorous location guarantees an eclectic experience, pitting cutting-edge modernity against a traditional backdrop of the Sheikh Zayed Grand Mosque. One Coast magazine sat down with the flamboyant Spanish chef and restaurateur to find out more about his gastronomic journey to the top. Why did you start cooking? What or who inspired you to become a chef?

When I was 12 I began cooking at home with my grandfather. I wanted to become a musician and work in a restaurant to pay for my guitar. It had simple food. I cleaned dishes, chopped, did everything pretty much. Then I went to culinary school in Barcelona in 1988 but I was not a good student. I thought that if I went to school I would be a better chef, and that would give me more time for music. I think my compromise with music is important. I write my own lyrics and my own songs. I really like music; it is as important as my cuisine. Music was my first love and will be my last. Why did you pursue a career in food rather than music?

I was a better chef than a musician! For me music is a personal thing, an enjoyment. In life you have to be honest with yourself. At some point you need to understand what and why you do what you are doing, and only then can you make a decision. I am happy with mine. What talent would you most like that you don’t possess?

How long did you work there?

Three years with Ferran Adrià, and three months with Pierre Gagnaire but I met him before Ferran. It’s not necessary to work with someone to become influenced by them. Maybe there are 100 guys working with Ferran, and they are not all influenced by him. I became a chef because in the mid-1980’s I worked in a restaurant washing dishes to earn money to support at home. At some point the chef there had a cookbook of Alain Chapel and Roger Vergé. I saw the pictures and suddenly wanted to do this kind of cuisine. How important were the influences of Ferran Adrià and Pierre Gagnaire to you?

When you are with Ferran Adrià or Pierre Gagnaire, or any of the top masters like Michel Bras and Alain Ducasse, you need to understand that they are much more than just the recipes. Recipes are nothing; it’s all about the attitude, the cooking style and the working method. So from Ferran, I learnt the importance of discipline and the working method. And from Pierre, the attitude and the passion. Ferran is a scientist and he follows that method strictly. He uses whatever he needs to arrive where he wants to be. But Pierre is like jazz; he is pure passion.

Did you always want to become a chef?

It’s the combination of both these learnings that give sense to my job. In the same way, my influences come from the mix of the attitude of Alain Passard and the method of Alain Ducasse. So in life there is time for each. The passion I felt for the cuisine of Ferran in the 1990’s is not the same as I feel now. It’s part of the learning process. Lots has changed for me in 20 years. You need your own life experiences to understand and evolve.

No! It is a very difficult life. It is hard work and debt and many, many sacrifices. This can take a long time to accept.

What do you look for in your own apprentices?

No, I am happy with the ones I have. My life experiences have made me very content. I do not feel the need to want more. I have my family, a nice car, a nice watch, and my Harley. I am satisfied. I do not need a collection of things.

You have shared the kitchen with some incredible chefs. How did that start?

In early 1995, one of Ferran’s assistants asked me to come work for him. When I arrived it was incredible. This was the kind of food I wanted to make for the rest of my life. Ferran showed me two things: to be critical with the different aspects of my new dishes, and to learn how to reflect and respect the different aspects of your business.

Passion. I can tell straight away by watching them in the kitchen if they have what it takes. What’s your signature dish?

Tapas for me is the best food. It is everything. I am not a big fan of signature dishes as they can change. But probably my spin on patatas bravas – the most copied plate in the history of Spanish cuisine and also one of the most popular after classical paella.

From Barcelona to Madrid and even beyond Spain, what destinations have most inspired your cooking?

Of course my beautiful country inspires me; Spanish cuisine, especially Catalonian, is very close to my heart. It is what I know from being a young boy – the roots of my cooking. I am also a big fan of 1980s classic French cuisine, which was my initial cooking education and professional experience. I believe that we take inspiration from everywhere and my travels simply enrich and inspire my cooking. Istanbul was another great source for information, as was Mumbai. Launching my restaurant in each of these locations allowed me to play with local produce and adapt my cooking style. What do you think of Thai food?

Asian food for me, especially Thai and Vietnamese is the most intelligent. It is what we all want. It has a purity to it.The simplicity of quality ingredients make it very special. I find Japanese overrated and Chinese does not have an identity in the same way.

Where else do you like to travel?

I’m very lucky, I have restaurants all over the world so travel is a big part of my life. I can be in Spain one day and then if I visit my restaurant in Verbier, Switzerland I can go skiing, which is amazing. I also like to go to my restaurants in Istanbul and Mumbai – each place has its own beauty and appeal. What can you tell us about P&C by Sergi Arola at the Shangri-La Qaryat Al Beri? The philosophy is very clear because what we want to deliver is fun on the table. The menu is all about tapas and Spanish food, and we’re going to change the menu at least twice a year to combine some of the most classic Sergi Arola tapas with new creations. Why Abu Dhabi?

Abu Dhabi has something that's very important for me - authenticity. I like to feel my boots on the ground and this location has that. I am not a fan of giant skyscrapers either. Spanish and Arabic cultures both have a strong heritage and we both enjoy sharing food – the Spanish have tapas and the Arabs have mezze – it is a shared passion of eating. And I also feel like I'm in Ibiza!

Where can we find you away from work?

It is very rare I will spend a day without being in the kitchen. It is my studio, my place of work and where I am most creative. That said, every morning I begin the day indulging another side of my creativity: my guitars. The day always starts with a jam session. Phuket Island is a wonderfully eclectic destination in so many senses. The island hosts a diverse population of Buddhists, Muslims, Chinese descendants, Phuketians, non-Phuketians, and a large number of long-term expatriates all living together on this 534km2 island. Despite having faced a steady influx of tourism for a few decades, which resulted in widely urbanized areas such as Patong Beach and the outskirts of Phuket Town that host endless shopping centers and attractions, those who spend any significant amount of time in Phuket will know that the island still has that old provincial charm where traditions, cultures, and a sense of community still play a significant role in everyday life. 116

However, with today’s advanced scientific technology, studies of these animals can be done in the wild and yield a much more realistic result than when studying them in captivity.We no longer need to forsake the animals’ freedom and wellbeing in the name of education.

Still, there is no denying that tourism is the life source of Phuket today, and more and more locals and businesses are increasing their commitment toward the sustainability of Phuket as a destination. Social responsibility is a common language and many stakeholders on the island work tirelessly to fulfill their role, whether they are businesses, local authorities, communities, visitors and individuals. But even though words and actions promoting conservation and sustainability have become part of Phuket norm today, it is painfully obvious that there is one particular aspect that is still very much lagging, and that is the use of animals for entertainment. Upon stepping out of Phuket International Airport terminal building, visitors to our beautiful island are immediately bombarded with billboard advertisements for elephant shows, tiger interactions, and dolphin and seal shows, to name a few. And if you have not noticed, the animals used are often listed as being endangered or are reaching that status with continued poaching. Sadly, vacationers often view these seemingly exciting entertainments as a unique part of their travel experience, and many choose not to question the nature of these establishments. Business operators also choose to maximize this view by dramatizing and sanitizing the image of these activities as educational, conserving and good fun for kids to appeal to tourists. The ugly truth is many of these animals have been captured from the wild and forced to live a very unnatural life in order to entertain the crowds. Babies are often separated from their mothers at a very young age and intimidated into submission. Death is often also the result of capturing, training, transporting, and working these majestic animals in the name of profit. Sadly, and many people are not aware, but those who choose to attend these establishments are directly helping to prolong this cruelty. It is a blatant cause and effect that must be stated and recognized, as this is the root of the issue. Although we often hear business operators claiming that the animals in their care have a good quality of life, are treated well, and receive good medical care, those who have looked deeper into these topics know that the reality is so grim it is unspeakable. For example, the annual dolphin drive hunt in Taiji, Japan, continues to this very day despite having been exposed and condemned for its cruelty years ago through the award-winning documentary ‘The Cove’. Wild pods of dolphins are driven by banger boats toward Taiji Cove and trapped in by nets. The beautiful ones are selected to be trained and sold to dolphinaria world wide, and the rest slaughtered for their meat. How Thailand Can Save Africa’s Elephants

hailand remains one of world’s largest markets for ivory products, and because the country continues to allow the ivory sales from Thai domesticated elephants, it creates loopholes for traders to launder illegal ivory from Africa. This contributes to more than 33,000 African elephants killed every year for their ivory to feed illegal black markets including China, Hong Kong and Thailand. Now, San Francisco-based wildlife organization WildAid is hoping to persuade Thais and foreign tourists that ivory is now a thing of the past.

“Elephants are Thailand’s national animal,” Jaa says. “My family has raised elephants since I was young — they are my friends, brothers and part of the family to me. That’s why I’m very happy to be part of this campaign with WildAid. We are urging everyone to stop buying, stop killing, so elephants can survive.” Also joining Tony Jaa are three of Thailand’s most popular sports stars: National Football team Coach “Zico” Kiatisak Senamuang, and two rising National Football players, “Messi Jay” Chanathip

WildAid’s global mission is to reduce the demand for endangered wildlife products including ivory, rhino horn and shark fin. To do this, the organization collaborates with over 100 Asian and Western celebrities, athletes and business leaders including Duke of Cambridge (Prince William), David Beckham, Yao Ming, Jackie Chan, Edward Norton, Sir Richard Branson, Maggie Q and Li Bingbing to carry out campaign messages using the slogan, When the Buying Stops, the Killing Can Too. "Poaching problems are largely demand-driven,” says WildAid CEO Peter Knights. “If we just address the supply side of the ivory trade, we are just putting band-aids on the symptoms.” Ivory is prized by some as symbol of wealth, power and beauty. Those who wear ivory believe it brings power and enhance social status. But not everyone knows the true story behind ivory. A 2015 survey conducted by WildAid Thailand found that just over half of Thais are aware of the elephant poaching crisis happening in Africa, and 55% are not aware that buying and selling ivory products in Thailand fuels elephant poaching. Building on the success of “Ivory Free” campaign launched in China and Hong Kong 2 years ago, WildAid is spreading the campaign message to Thailand.

Songkrasin and “Kong” Kroekrit Thaweekarn. Together they star in a campaign ad in which they team up to defend elephants from being killed. Coach Zico says of the campaign, “Thais have been associated strongly with elephants since the past, and the Thai national football team also has an elephant as its symbol. I believe Thais are willing to help elephants, and one of the easiest ways to do this is to never buy ivory products.” The Ivory Free Thailand campaign ads will be featured on-air soon, with other campaign activities scheduled throughout the year. Try this mouthwatering Thai Grilled Red Snapper recipe created by Samujana’s chefs:

Thai Grilled Red Snapper

Simply seasoned and grilled over open flames…

Ingredients: 1 x large fresh Red Snapper, cleaned and scaled* 2 x garlic cloves, thinly sliced 1 x handful of shredded ginger 2 x fresh lemongrass stalks, sliced 1 x handful of spring onions, roughly chopped 3 x red Thai chillies, seeds removed and sliced 6 x fresh lime leaves, roughly shredded 1 x handful of Thai herbs (basil, coriander), roughly chopped A splash of sesame seed oil, Thai fish sauce and coconut oil Fresh limes for squeezing Sea salt and cracked black pepper

* Have your fishmonger scale and clean the fish. To ensure that your fish is as fresh as possible, do the quick 5-step check: • The eyes should be moist and clear. • The fish should be firm and springy and it should appear shiny. • Smell the fish; it should not have a strong, “fishy” odour. Fresh fish should smell of the ocean! • Check the gills which should be wet and appear bright red or bright pink. • Check for separation, the flesh on a fish fillet should be tight with no separation. If there is any liquid on the meat it should be clear and not milky or slimy.

To prepare the fish: Score both sides of the fish by cutting deep incisions into the flesh, making sure not to cut through the bones. Season with a sprinkle of sea salt and pepper and rub into the incisions. Mix all of the other ingredients in a bowl (except the limes) and push into the belly of the fish and all of the incisions in the flesh.

To grill: Fire up the grill and allow it to get hot. Once hot, place the fish on the grill and squeeze fresh lime juice onto the fish. After a few minutes, flip and repeat. If preferred, you could also wrap the fish in foil or banana leaves for a steamed effect.

To serve:

Place fish on wooden board or banana leaves and serve straight from the grill, with green papaya salad and sticky rice. It is best eaten with your fingers and enjoyed with chilled local beer and fresh lime. O N E CO A S T

just out Sicario USA / Lionsgate 2015 / Dir. Denis Villeneuve So, this one isn’t for the kids. Far from it. But thrillers are there to thrill, and this one delivers in spades. The title means ‘assassin’ and is drug cartel slang, taken from first-century Judea, and although never spoken in the film itself it is brought in at the end to tie up the issues here of where justice stops and revenge starts, along with the kind of double-think required to hop over in to another countries territory without asking in order to literally wage war on drug gangs. Our protagonist is Kate, played heroically and very convincingly by Emily Blunt, an FBI agent that comes from a very different world of kidnap-victim recovery. She unwittingly wanders in to a very dark forest indeed – a place of dubious morality and where procedure is tenuously observed at best. After a shockingly bad

experience discovering a safe house full of corpses, she asks to help track down those responsible. In doing so she allows some very shady characters in to her life. Her boss will be the utterly malevolent and obnoxious Matt Graver, played superbly by the ever-growling Josh Brolin. Alongside this charmer is Alejandro played by Benicio Del Toro, a well-mannered and even protective figure with a traumatic past. Supposedly a Colombian civilian consultant, there’s clearly more to him than consultation. A plan is hatched in reaction to the safe house massacre in order to force a mistake by the cartel and thus reveal who the real bosses are and thus lead to valuable intel and hopefully arrests. Kate goes along with this, but realizes too late that she has been sucked in to a world of few rules, where murder is common-place and justified as a means to an end. All the while there is another story behind all this, with Alejandro waiting patiently for his moment.

So it’s a relief and a pleasure to find him on form here, back in possibly his most comfortable place with science fiction, giving us a Robinson Crusoe tale of an astronaut stranded on Mars with very little but his wits to save him as he awaits months for his eventual rescue.

Just Out The Martian USA / 20th Century Fox 2015 / Dir. Ridley Scott It’s odd how a man of Ridley Scott’s talent is prone to coming up with very lukewarm offerings on a regular basis. A visionary at times, it’s hard to reconcile that the director of Exodus: Gods and Kings, Robin Hood, A Good Year and G.I. Jane also gave us the classics Alien, Thelma & Louise, Gladiator and perhaps the jewel in the crown, Blade Runner.

The film is leant further solidity as the main character, botanist astronaut Mark Watney, is played by the everdependable Matt Damon, probably one of the most universally liked film stars currently working and able to convincingly play these kinds of roles while keeping an everyman-ish, believable air about him. He manages to keep the audience onside and you genuinely care about whether he makes it off the planet (no mean feat in our celebrity-obsessed times, I can think of a few A-Listers I’d happily maroon millions of miles from Earth). Based on the novel by Andy Weir the story is very well paced and thought out, although realism is occasionally bent a little to provide important plot points – ask anyone at school from about the age of 8 and they’ll tell you there’s no air on Mars, so quite how a massive dust storm is whipped up is anyone’s guess. But a lot of it is accurate and provides some intriguing problems for Watney to solve – namely food, air and water. As he famously says to his electronic diary, “I’m going to have to science the shit out of this”.

The style of the films lends heavily from Michael Mann and is none the worse for it, with fast paced, convincing gun battles punctuating a general feeling of unease throughout. The characters are very well written and played by actors fully invested in the story. All three leads bring their A game – indeed Blunt does spectacularly well not just to match her two macho male counterparts, but to shine as she displays grit and determination while also being prone to the horrors around her and often finding herself vulnerable. It is a terrific performance and yet more proof that Hollywood’s output would be far richer for providing it’s female actors with strong leading roles. This is how thrillers are supposed to be – white knuckle rides in to completely believable worlds no sane person would want anything to do with. That it can ask pertinent questions about right and wrong, where the line should be drawn and what truly constitutes ‘justice’, makes it all the more intriguing and enjoyable.

There’s levity provided when he discovers there are episodes of Happy Days to watch and one of the astronauts has left behind a collection of 70’s disco, providing a soundtrack that will have you laughing until the final credits. Not quite enough to qualify this as a ‘comedy’ however, for which it was bafflingly nominated by this years Golden Globes. As you’d expect from a Ridley Scott film it is stunningly shot, and the set design is completely convincing, combining a believable Martian landscape, the futuristic and high-tech along with some space DIY as Watney uses plastic sheeting and duct tape to save himself. With this combination of sci-fi and just enough realism you can’t help thinking The Martian will inspire a lot of the films younger viewers in to careers in science at the very least, something NASA were clearly aware of as they leant the film limitless co-operation and happily coincidental press releases about finding water on Mars just as the film was released. Above all though this is a thoroughly enjoyable film and the creators obviously had just as much fun making it as you will watching it. Whether Ridley Scott keeps this run of form with his upcoming Alien film or Blade Runner sequel remains to be seen, but meanwhile this is further proof that with the right story, he’s one of the best there is.

BOXSETHEAVEN Never be clueless again about the shows everyone's talking about. Resident TV show addict Brett Turner weeds out the best from the rest of the box sets out there available to watch and download, mixing bang up to date stuff with old ones you may have missed.

Classic Box Set Curb Your Enthusiasm USA / HBO Eight Seasons, 2000 – 2011 Awkward social situations are usually something we gloss over and try to forget as soon as possible. Seinfeld creator Larry David on the other hand sees it as a veritable goldmine of comedy, and eight series so far of brilliance show just how right he is. Filmed in a verite documentary style we follow Larry around his daily life as he goes from one deeply awkward situation to another, completely unable to see why his almost sociopathic need to do the obvious or say what’s actually on his mind is almost always completely wrong and inappropriate. Largely improvised, he’s is surrounded by people playing versions of themselves that are completely believable as foils and straight-guys to his idiocy. Primarily this is his long-suffering partner Cheryl (Cheryl Hines), always either baffled or just plain

incensed by Larry’s determination to do and say what he feels is right no matter what the cost. Jeff Greene (Jeff Garlin) is his best friend and confidante who often has the unenviable task of defending Larry’s exploits, all the while often entangling him in his extramarital affairs and expecting the same loyalty in return. We often sympathize with Jeff’s misdemeanors however, as he is married to Susie (Susie Essman), his utterly foul-mouthed, no-nonsense, terrifying spouse, able to scare a man witless with her stare. As the show went from cult to mainstream hit, wellknow celebrities often made guest appearances on the show, playing themselves or warped fictional versions. Most memorable are turns by Ben Stiller, Lucy Lawless, David Schwimmer and Michael J. Fox, whereas Richard Lewis, Wanda Sykes and Ted Danson recurrently show up throughout. It’s testament to the shows genius that they all fit in seamlessly. Subjects covered range from the social conventions surrounding tipping in restaurants (a frequent subject), the awkwardness when in a rush but expected to Just like the film, the opening of each episode says that it’s a true story. That’s the first lie we’re told as we’re taken along with a tale that twists with every episode, each one more enjoyable than the last.

NEW Box Set Fargo USA / FX Season One 2014, Season Two 2015, Season Three scheduled 2017 For many, the thought of re-telling the story of Fargo in a stretched out TV series after being perfectly done by the Coen brothers in a classic two hour film is nothing short of sacrilege. Those fears and premature criticisms were soon forgotten after the first series, a terrific tale brilliantly acted and gorgeously shot.

Martin Freeman is the weak-willed and put upon doormat Lester Nygaard, forever being henpecked and berated by his wife Pearl , looked down upon by his far more successful brother Carl, and still bullied by old schoolmate Sam Hess. One day Lester snaps, subconsciously goaded by psychotic, cool-as-ice hitman Lorne Malvo played by a perfectly cast Billy Bob Thornton. The only one to smell a rat is local cop Molly Solverson (Allison Tolman), doggedly refusing to buy Lester’s story. As events spiral out of control through one lie after another, Lester slowly transforms in to the successful version of himself everyone taunted him that he should be – all the while becoming more scared and paranoid than ever before. All of the characters are equally oddball in their own way, with the leads the standouts. Martin Freeman is cast against type, usually such a likeable everyman. Here he’s a sniveling weasel, weak-willed with a destructive streak as a result of so much pent up frustration his whole life. He’s brilliantly drawn, and his transformation through the ten episodes is amazing to watch.

‘stop and chat’ when passing someone you know on the street, to more complex situations. At a funeral Larry looks in to an open casket to find the departed is being buried with a golf club that Larry leant to him. In another Larry hires a street walking prostitute in order to be allowed to use the car pool lane on the freeway. Racial awkwardness is a big hit as well – Larry is appalled to overhear someone using the ‘N-word’ abusively, repeats the story in public and is immediately set upon as a racist himself for merely using the word. In possibly the funniest story arc, Cheryl takes in a black family made homeless by Hurricane Katrina, whose surname is ‘Black’ - with predictable results. The list goes on and on. So unappealing was the concept when I first heard of it I had to wait for the show to receive countless awards and praise before I gave it a chance. These days I have to stop myself putting it on the TV too much in an effort not to spoil it and remember all the episodes too well. “Prett-ay, prett-ay good”.

Meanwhile there’s Billy Bob Thornton, basically playing what seems to be himself if he were indeed a gun for hire rather than an actor. Utterly psychotic yet often completely likeable, he has all sorts of colourful ways to demonstrate his lack of concern about anyone or anything, casually emptying his bowels in a toilet while being threatened by a thug in one moment, in another menacingly warning off a traffic cop after being pulled over for speeding and in doing so scarring the poor guy for life. He shares traits with The Terminator, doing exactly what he wants, when he wants, along with a singular wit that’s a joy to behold. Season Two has just finished, based in the 1970’s so with none of the characters from the first series. It’s a completely different case but the standards of writing and acting are just as high. The main themes are the same - what happens when normal people cross over into the dark side of life and how easily bad decisions can reap horrific results – and it’s also highly recommended. The canvass for all of this is a bleached-white snowy landscape, filmed to cinematic standards (as much of American TV is these days), and the look of the film is as much a star as the cast. Filmed in the outskirts of Calgary, it’s a desolate, forbidding universe that you’ll thoroughly enjoy visiting.
