For most people living in or visiting Thailand on holiday, the picture postcard beaches are a major attraction. But for those that need something a little more thrilling, there’s an exciting alternative for family fun in the sun - waterparks. According to the Themed Entertainment Association (TEA) attendance at waterparks saw a 6% increase on last year levels and this figure appears destined to rise again. With the nation’s economy slowly improving, more families have disposable incomes and are keen to pursue the latest leisure offerings as a way to beat the heat in Thailand. In turn, as the entertainment sector continues to mature across Asia, so do its attractions and the quality of what’s on offer. This positive cycle is a great thing for waterpark fans as continued growth and improvement in the industry means more adrenaline-filled rides to choose from across the Kingdom. So having adopted the correct riding position and obeyed all lifeguard instructions, we scoured the land for the most fun you can have (legally) in a pair of speedos...
BANGKOK
SIAM PARK CITY
Located in the Khan Na Yao district of Bangkok, Siam Park City is the oldest waterpark in the country having first opened its doors to the public back in 1980. Though undergoing a complete renovation in 2007, it still remains dated in its appearance, not that children will mind particularly. With five separate areas, it has rides to suit all ages and budgets with Siam Water Park being the most popular destination. Notable rides include the ‘Super Spiral’, and the infamous ‘Speed Slide’, where its unassuming coloured lanes mask breakneck speeds and a very watery crash landing. It also holds the Guinness World Record for the world’s largest wave pool at 13,600m2.
FANTASIA LAGOON WATERPARK @ THE MALL BANGKAE
Who says waterparks have to be built on the ground? Look up if you’re hoping to find Fantasia Lagoon as it’s situated on the rooftop at The Mall Bang Kae, south of central Bangkok. After satisfying your shopping urges below, head upstairs for entertainment on their huge waterslides and exciting whirlpools. If you’d prefer to stay dry, check out Fantasia Island, the adjoining indoor theme park guaranteed to push your adrenalin levels to the max.

Bangkok is the latest venue for the international entertainment brand, Flow House. Situated at the Centara Grand West Sands Resort overlooking Mai Khao beach, this park has enough to keep everyone happy. With a unique concept based on seven inspirational parts of the world, the park is designed to inspire. From their popular ‘Boomerango’ and ‘Superbowl’ rides, to the six-level wave pool or the aqua-play pool for kids. But don’t worry, if the pace gets too much, try floating in the 335 metre lazy river or relax at the hydrotherapy pool.

Samui’s first waterpark opened in 2010 and has since gone from strength to strength. A recent 10,000m2 extension has doubled the fun and the park now includes seven waterslides, four pools, and a host of new attractions sure to keep the younger members busy til sunset. For adrenaline junkies check out the Air Bag Jump, Go Kart racing or the high wire Tree to Tree zip line.

Designed as a ‘day-cation’ entertainment venue, this waterpark has placed Thailand firmly on the international waterpark scene.

HUA HIN SANTORINI WATER PARK
Set in 50 rai (8 hectares) of land, Santorini Water Fantasy, Hua Hin was opened in 2013 and is 30 kilometers away from the centre of town. Aimed at the whole family, the park offers fun and rides suitable for all ages. There are various slides, pools and waterways to experience, the highlight being the ‘King Cobra’ slide. Designed for two people, speeds up to 50 kph are possible as you journey down towards the cobra’s mouth.
VANA NAVA WATER PARK
Vana Nava Hua Hin, is the first waterpark in Asia to be developed around a ‘Water Jungle’ theme and is located in the resort town of Hua Hin. Claiming to be the first ecologically and community aware waterpark in the region, the resort has transformed an empty plot of land into a tropical jungle, with over 200,000 living species from across Thailand in its 20 Rai (3.2 hectares) property. DAVE COVEY, HONORARY BRITISH CONSUL AND ALL ROUND GOOD GUY, TOOK TIME OUT TO TALK TO ONE COAST ABOUT HOW AND WHY HE’S HERE TO HELP. Thailand is well known as one of the World’s most popular tourist destinations, famed for its sandy beaches, bustling cities and the relaxed and welcoming outlook of the local people. The country offers wonderful cuisine and a rich cultural heritage. But this being said, Thailand also boasts treacherous roads which have been known to land unsuspecting tourists in ‘a spot of bother’. Enter Dave Covey. Dave is a Thailand veteran who has enjoyed living the island life with his wife Mook and their two sons (John & Ron) on Koh Samui for the last 15 years. He is also a decorated Military veteran who served in the British Army for 24 years earning himself the rank of Sergeant Major. Dave Covey is now retired from the army and serves as the British Honorary Consul for Surat Thani Province, the official eyes, ears and mouth on the ground for the British Embassy protecting citizen’s interests in the province, which in effect means Koh Samui, Koh Pha-Ngan and Koh Tao. It wasn’t Dave’s initial intention to become the British Consul for Surat Thani province, in fact he first came to the island to personally relocate and in the process set up a successful diving company and later managed the hyperbaric chambers on both coasts. Drawing on his own experience of military resettlement and using his contacts within the Armed Forces, Dave’s original company helped ex-military personnel gain qualifications as full PADI dive instructors. Between 2001 and 2004 Dave and others in the community found that they had to contact various charities or welfare organistaions in the UK when problems had occured on the archipelago that weren’t easily resolved. Most notably, motorbike accidents involving prolonged hospitalisation or serious illness including an outbreak of dengue fever. Dave had no idea that this had caught the attention of the British Embassy in Bangkok until he and Mook visited the embassy to apply for a visa and he was pleasantly surprised to find himself being interviewed for the post. He was formally appointed shortly afterwards, a position he has held for 11 years.
So if you fall off a motorbike, are arrested or generally find yourself up a certain creek without a paddle in Sunny Southern Thailand, then without doubt, Dave will be there to help you out. This is great for those of you who do find yourself in a sticky situation because our Dave will always go the extra mile to aid in whatever way he can but for Dave it’s not always such a good deal! On hand at almost any time of any day, the task of helping out the unfortunate British tourists in distress can be quite thankless and here at One Coast we are certainly giant fans of big Dave’s tireless efforts. Although he is only expected to work for around 10 hours per week, Dave often ends up putting in the kind of hours that a student doctor would be proud of. Not only this but Mook, his wife, can more often than not be found at his side assisting where possible if language is a problem. In short, a big thank you to Dave Covey, and if you have any minor visa or passport issues please Google them first, the British Honorary Consul has his work cut out already!

We’re nearly at the halfway point of 2015 and for many, New Year’s resolutions made with the best intentions back in January will be long forgotten. Unfortunately this isn’t unusual, a recent study showed that nearly 90% of all resolutions made, fail. Most people get discouraged by setting unrealistic goals, not tracking progress effectively, or simply forgetting, due to making too many ridiculous promises to begin with.
One of the most common objectives seen each year is the wish to improve our physical wellbeing by losing weight through eating healthy food or exercising more. This is understandable given the obvious health benefits of regular exercise and physical activity. Who wouldn’t want to feel better, have more energy, and potentially live longer? For example, exercise helps stop excess weight gain while maintaining loss, and can prevent a wide range of health problems including stroke, type 2 diabetes, depression and high blood pressure. It improves your mood by activating chemicals in the brain, and boosts confidence and self-esteem issues. Exercise can also help you sleep better and add a spark back in the bedroom with your increased energy levels. It’s not difficult to see that the rewards sell themselves, but unfortunately for many it’s the application of achieving them that can prove the stumbling block and explain the discouragingly high failure rate. Exercise requires effort. There’s no two ways about it, so unless you’re genetically blessed and can stay fit without trying, you’re going to need to put in some serious hard work. Of course this alone won’t guarantee results either, as you’ll need to make sure that all this exertion is focused on working-out properly and following good form guides. This information can be overwhelming and explains why that with the best of intentions, millions of people each year sign up at their local gym or hire expensive personal trainers to instruct, encourage and occasionally scream them towards their targets before slowly cancelling appointments, forgetting classes, and then returning to their pre-resolution state. Given this familiar cycle, the emergence of home exercise programs as an alternative to the gym has become a popular option. Unlike the aerobics videos of the past, today’s home workout programs are more complete fitness solutions and better suited at utilizing your time effectively while requiring little to no expensive gym equipment. Many feature multiple routines, diet plans, online interactivity and community support from other like-minded people that help people stay focused on their goals.

You are known amongst your friends as the “Power Woman”, how do you perceive yourself? I wouldn’t say power woman, I would say “A Networker”. I believe power comes with the territory. Tell us a little about your businesses ethos. I have always been fascinated with the word ‘business’ itself. Business, to me, is a journey of proactive initiations, facilitations, and executions - hence, the concept itself made everything seem without boundaries and the opportunities seem limitless. I’d also like to say that this is true. How did you get started? My parents owned a Thai restaurant in the US, in which I was obligated to be heavily involved in as a kid serving and catering dinner to multi-national companies. I grew up exploring many industries, but that was quite dynamic and fun. When I moved to Thailand, I worked for Pizza Hut as a pretty and helped my family with more labor-intensive restaurant works for years- that’s when I said I have had enough. In brief, I joined an import & export company, worked with a jewelry manufacturer, and then received a great opportunity to partner with a few friends to start importing wines from Italy. I handled the import process, distribution, and marketing. Then with another business partner, we explored the wine market further and started a retail wine shop in downtown Hua Hin that has been running for the past 5 years. The funny part was I started the shop before I was barely legal to enter a club, let alone handle an alcohol business!
‘Live in the moment.’ You have to be in the present, cherish the time, and love what you’re doing. That’s when you learn to accept things in life that don’t always happen the way you want to. I mean, this is it. It is what it is. With a credit to a friend, I’d like to quote his statement ‘Never forget who inspired you, supported you, and gave you opportunities.’ I live by this strongly – that person can be anyone, from anywhere, doesn’t matter the financial background. To me, everyone is valued with their character and experiences. Another belief I live by is to never settle for ordinary. I grew up knowing how different I am from others and I learnt to accept it. Trying to explain is simply pointless. I don’t think ordinary, I don’t care for ordinary things, I just simply do not care what others pursue because I want what I want. So far, my pursuit in life has been less than ordinary and I’m very happy with the journey to achieve what I envisioned.
What got you into PR? After being based in Hua Hin for a year, I moved back to Bangkok and worked a couple years with a PR agency, handling various selfcontracted events such as big Indian weddings, MICE events, and other projects, it was then I decided to start YSIS PR.
Lastly, no matter what profession or industry you are in, never forget to have a fun lifestyle. How do you define success? Being progressive is success to me. I don’t necessarily measure everything by wealth, but also growth in experience.
So is PR your main focus? Well...I also started another company called PS Ventures where we are contractors for small-mid size construction and renovations in private and government sectors. There are so many new exciting projects I’m working on that I wish to disclose but cannot! What philosophies do you have regarding success in business? Vision. Execution. Self-reliance. Many people say networking is important because it’s who you know, etc etc. I’d say networking is secondary- you naturally achieve the networks you want only if you execute.
Having started everything from zero or almost no fund, the hardship of bootstrapping makes you completely self-reliant. I am shameless to say I’m already very proud of what I have been able to achieve today! It would still be nice if I can make enough to own a lion in my house (joking, Lion’s should have their own houses). What do you do in your free time, if you have any? Building an empire is a lonely journey, and with that said, it’s not easy to find like-minded people who you can share or express your feelings. When you’re an entrepreneur, time is never on your side. I make time for my hobbies. That is traveling the world- I enjoy traveling alone, it gives me a sense of adventure. I enjoy visiting exotic locations or places that will make me rich in ‘experience’. At this point, I’ve been quite fascinated with Richard Branson’s Necker Island for a while now. I’d like to try the Virgin Ocean jet. Or a week on a privately owned island in Fiji. What makes you happy? Ah, the pursuit for happiness...That. elusive. pot. of. gold. The most significant aspect of life. What makes me happy is to be in a position where I can make things happen – it can be anything, small or big! I want to be able to consistently give things without wanting anything back to my family, people I like, people around me, people I don’t know; and animals!

The first thing anybody notices about Francois is that he is a man who is naturally blessed with the ability to make everybody around him feel immediately at ease. One Coast had the distinct pleasure of enjoying a long lazy lunch with the gregarious Frenchman, during which time the hours flew by as we learnt more about the real Chef, and were thoroughly charmed along the way. Francois started his lifelong love affair with cooking during a four year apprenticeship at a restaurant in the South of France. During the first year, as per standard training practice at the time, he performed menial chores for the chefs, and was never actually allowed to be involved in any part of the food preparation process. Once Francois finally stepped in the door, he would never really step out of what was to become his spiritual home – the kitchen. Francois’ impressive and inspirational career has spanned seven decades, culminating in his role as Executive Chef at Le Classique Restaurant in Dubai, a place to eat widely renowned as one of the best in Dubai, which is no mean feat given the quality of the competition. After 27 years of dazzling diners in Dubai, Thailand was to become Francois retirement home, and Hua Hin was where he originally chose to put down his Chefs knives and enjoy the good life. It wasn’t long, however, until the effervescent verve and vigor that the Chef takes with him wherever he goes was bubbling over and Francois found himself needing something to do with his days… it was time to get back in the kitchen, and that kitchens offerings are now to be found in Koh Samui.

With only a small sign to show that you’ve found it, Chez Francois is located just outside of Fishermans Village in Bophut. Once you have gone through the ornate but typically understated wooden door, the restaurant itself is intimate with only 3 tables and a small bar to greet you. The décor is simple and tasteful with handsome wooden tables that invite you to sit and socialise in the snug atmosphere. At Chez Francois the restaurant mirrors the proprietor almost exactly. What you see is what you get and there is no big show here. Service runs on the ‘Chef’s Table’ model and, although you cannot directly see all the food preparation, Francois is always there mingling convivially and easily with whatever crowd is in that night discussing his creations and making sure the diners are satisfied. While there is no set menu there is enough choice to satisfy everyone and special requests are catered for upon booking – which is necessary. Francois’ special blend of relaxed sophistication comes out in the food and wine that is offered and a small simple establishment creates an atmosphere bigger than the sum of its parts.

When it comes to food sometimes it’s hard put your finger on what separates a satisfactory meal from a meal that not only tastes fantastic but somehow really hits the spot, in a way that the average home cook will feel like hanging up his oven mitts and picking up the knife, fork and wallet to enjoy dining out and wondering what’s behind ‘that’ taste. With Chef Francois this probably stems from two simple things. Experience is paramount and Francois has this in spades but without passion experience can sometimes turn sour, literally. After many many years of grueling kitchen work it is lovely to see a man come out after every course he serves and still get a glint in his eye when he sees an empty plate and a smiling face. Passion tastes good and at Chez Francois it is served up with a smile and a red pepper reduction worthy of more than just a mention in any Michelin guide.

Like a silver-flamed phoenix; CHI Ultralounge is rising from the ashes as the reincarnated, re imagined spirit of the most iconic nightclub in Bangkok’s rich history; Bed Supperclub. Under the stewardship of Bangkok’s nightlife kingpin (and award-winning designer) Daryl Scott (Mystique, Tunnel, plus a dozen others across SE Asia) - CHI will breathe new life into the iconic ‘spaceship’ shell as it reawakens at it’s new home on Sukhumvit Soi 13. “I f igured since the former owners were dear friends, when they asked me to MC the [Bed Supperclub] closing, that’s when I thought, ‘Holy shit! Wouldn’t it be great to take on the original, disassemble it, relocate it and make it into something new?!” explains Daryl, who emigrated from New York City some 14 years back and has been at the forefront of club design and a major force of the nightlife scene ever since. “It’s a labor of love I tell you! ..and the end result will be a staggering effort that both pays homage to its beloved predecessor, and will blaze a trail for next-level clubbing in this city I love for years to come.” So what exactly IS an ‘Ultralounge’? The recipe is this; take your ordinary ‘lounge’ concept, then add a handful of ancient oriental mysticism, a dash of James Brown’s funk ‘n soul and top it off with a sprinkling of the treasures from Aladdin’s cave! While it’s predecessor also had ‘lounge’ propensities - aside from the iconic spaceship structure of the building - pretty much everything is going to change. “Nothing will be white. The building will be metallic silver, in the middle of a futuristic Zen garden, and we may even have an early evening outdoor lounge at some point, with plenty of landscaping and tropical foliage,” says Daryl. CHI will have a strong asian theme running throughout the venue. As with the original design; CHI will also be split into an restaurant and a nightclub, with dining to take place in what he describes as “the belly of a dragon - very futuristic, very chi.”

Guests on both sides of the venue will enjoy an immersive, unique experience with custom-tailored 3D video projections on the domed ceiling; created exclusively by internationally-recognised Thai artists Kor.Bor.Vor. Visual. The canopy itself will be alive with dragons, geisha girls, stars and kaleidoscope of imagery reflecting each night’s theme, bringing guests an illusionary ‘through the looking glass’ experience while they dine or dance. The décor itself is ‘uber feng-shui chic’, with many notable surprises in store; including a gold-plated DJ booth, raised and held in giant spiritual arms (it’s hand gesture signifies ‘Eternal Enlightenment’). A giant fish tank containing 4-foot Arawana dragon fish; and plenty of floorto-ceiling Feng Shui elements, along with state-of-the-art, Nexo sound, and of course, lighting. A feast for the sense… CHI are currently in the process of securing a unique deal with one of South East Asia’s most celebrated restaurants. This award-winning eatery will be creating exclusive culinary cuisine styled around CHI’s core concepts; world-class, future-Zen, modern Asian delights. There will be two seatings for diners and CHI’s flexible new layout will be able to accommodate more customers than previously while also being able to transform for after-dinner dancing.

Lack of ambition – not a criticism you’ll find levelled at the creative minds behind one of Abu Dhabi’s most ambitious projects to date, the Saadiyat Cultural District. In a region already dwarfed by award-winning developments and billboard renderings of a brighter tomorrow, it’s sometimes hard to tell fact from fiction. While the nation’s capital may be young at heart, (initial city plans dating back less than 50 years to 1967), they are old hats at engineering the impossible from the sands –and stand testament as true visionaries in this desert oasis. Given the sheer volume of steel now piercing the regions skyline, it was only a matter of time before their sights were set on expanding this vision further to the surrounding islands. Located just 500 metres from Abu Dhabi’s coastline, Saadiyat was the natural choice – and by incorporating an artistic bridge between East and West, they hope to turn one section of the island into a centre for global culture, and a shining beacon on the international arts scene. One Coast Magazine decided to take a closer look at the institutions destined to become architectural icons of tomorrow and what you can expect inside.

Opening in the fall of 2016, the heart of Saadiyat Cultural District and centrepiece of the island is the Zayed National Museum. Fittingly elevated above the rest of the cultural district at its highest point, the museum tells the story of the region’s history, culture and the unification of the United Arab Emirates through the life and person of Sheikh Zayed bin Sultan Al Nahyan, the founder of the UAE and considered the father of the nation. Central to the stories told in the museum are Sheikh Zayed’s strongly help values. These encompassed a passionate belief in education, conservation, environment, sustainability, heritage and culture, all underpinned by his humanitarianism and strong faith.
Designed by Pritzker Prize winning architect Lord Norman Foster, the Zayed National Museum’s distinctive towers are reminiscent of the wing tips of the falcon - a powerful symbol of the rich cultural heritage of the UAE. The building is designed to minimise energy usage by incorporating natural ventilation and lighting in the five towers, and using photo-voltaic panels and heat exchange technologies. The British Museum will also be providing expert curatorial and operational advice and counsel on the development of the Zayed National Museum to help realise their vision. With thanks to TDIC

L O U V R E With completion set for later this year, the Louvre Abu Dhabi will be the first universal museum in the Arab world. Born of an agreement between the governments of Abu Dhabi and France, it will display art, manuscripts and objects of historical, cultural and sociological significance from around the world. Universal themes and common influences will be highlighted to illustrate similarities arising from shared human experience transcending geography, nationality and history. As the Louvre Abu Dhabi’s values and identity are based on discovery, exchange and education, the ultimate aim of the museum is to allow visitors to realise for themselves how art developed in different cultures and civilisations around the world. Louvre Abu Dhabi is developing its own national collection, which will be enriched by loans from French museums including Musée du Louvre, Musée d’Orsay, and Centre Pompidou.

The ‘museum city’ of Louvre Abu Dhabi will be housed in a building designed by Pritzker Prize winning architect Jean Nouvel. He said of its design, “I wanted this building to mirror a protected territory that belongs to the Arab world and this geography.” Ever aware of context, Nouvel has a falaj-inspired water system running through the museum, inspired by ancient Arabian engineering. Louvre Abu Dhabi’s geometric lace dome was inspired by the interlaced palm leaves traditionally used as roofing material and resulting in an enchanting ‘rain of light’. The roof’s complex pattern is the result of the same geometric design repeated at various sizes and angles in ten different layers, five external and five internal. While it looks delicate and lacy, the dome is actually very heavy, weighing 12,000 tonnes and is size of five football pitches.
G U G G E N H E I M Set to open in 2017, the Guggenheim Abu Dhabi will be a pre-eminent platform for global contemporary art and culture that will present the most important artistic achievements of our time, with an aim to promote a ‘truly transnational perspective’. In conjunction with advice from The Solomon R. Guggenheim Foundation, the museum will build a permanent collection, organise exhibitions, generate scholarship and undertake educational programmes that will examine the history of art produced around the world since circa 1965. Major arthistorical movements will be surveyed through the lens of a transnational understanding of world cultures.
The landmark structure housing the Guggenheim Abu Dhabi was designed by world-renowned architect Frank Gehry, who describes his composition for the building as “intentionally ‘messy’, moving into clarity”. Open to the elements, the Guggenheim’s cones recall the region’s ancient wind-towers, which both ventilate and shade the museum’s exterior courtyards in a fitting blend of Arabian tradition and modern, sustainable design. Surrounded almost entirely by water, the building will have spectacular views of the Saadiyat Cultural District and Arabian Gulf. Richard Armstrong, Director of The Solomon R. Guggenheim Foundation said, “At its opening, the Guggenheim Abu Dhabi will be one of the world’s greatest contemporary art museums.”

P E R F O R M I N G A R T S C E N T R E The Abu Dhabi Performing Arts Centre is scheduled for the 2nd phase of the Saadiyat Culture District. It will house five halls – a concert hall, opera house, and smaller theatres while also containing the headquarters of the Academy of Performing Arts. Its designer, Pritzker Prize winner Zaha Hadid, has described it as, “A sculpture form that emerges from the linear intersection of pedestrian paths within the cultural district, gradually developing into a growing organism that sprouts a network of successive branches. As it winds through the site, the architecture increases in complexity, building up height and depth and achieving multiple summits in the bodies housing the performing spaces, which spring from the structure like fruit on a vine and face westward, towards the water.”

The anticipation of moving away, or travelling, can invite a myriad of doubts into a vegan’s already packing-planning-racing mind: what would happen when haircare runs out? Where to find cake? And, most importantly, how to deal with being apart from other supportive vegans at home? Beautiful temple wandering days and mountain waterfall hikes are, of course, ‘vegan activities’, but what about the other kinds of experiences that we long for in a never-before explored country?
The South
In the less-touristy south, there’s a distinct lack of western-style veggie eateries. But, don’t panic! Wonderfully cheap, the local vegan spots scattered throughout the country, marked by the trusty yellow and red sign, are the places to eat. Happycow thankfully manages to lead the most easily-lost of people to hidden, vegan cafés in small, unassuming places such as Kit Pung in Trang; take your pick of an all-day buffet-style, array of veggies, curries, rice, noodles, tofu, and soy-meat.

Upscale, yet unassuming, Vikasa promotes healthiness in all aspects; the resort’s strong philosophies reflect the ways many vegans view life and how to work towards positivity. The ‘Life Café’ holds an impressive number of raw selections and, oh wow, their raw desserts… Places where you can sink into a chair amongst cushions for hours, reading a book, working away on your laptop; each time eating a different raw dessert or exquisitely prepared vegan meal – the island’s west coast Sweet Sisters, and northern June’s Art Café, though not wholly vegetarian, are charity raisers, ecofriendly and have some impressive homemade vegan sauces and desserts. Find yourself at Sweet Sisters for the banoffee pie of your dreams, and if you’re leaning a little more towards for a zesty passion-fruit cheesecake, head to the Art Café.

Vegans unaccustomed to a wide array of specialty veggie restaurants all in one place will revel in utter delight at the vegan dishes Bangkok has to offer. The vegman app is a blessing in guiding fresh travelling vegan backpackers. A couple of side-streets just off Khaosan Road have three vegetarian spots: Ethos, with its ethics and todie-for apple crumble, a literal stone’s throw away is May Kaidee’s with their unique flavour combinations –they also have amazing veggie cooking courses! - and around the corner is the modern fusion food at Mango. Bangkok is brimming with vegan fast-food joints, health aware veggie cafes, cooking classes, workshops, temples, museums, galleries and spas. If you’re feeling brave - get exploring on a bicycle, if you’re feeling sensible - explore the city by river-boat or tuk-tuk!
Khao Yai National Park
Witnessing free, wild animals is awe-inspiring and lifechanging. Different National Parks hold differing sightings: some, gratuitous amounts of wildlife, others a glimpse. Khao Yai is the most famous for wildlife in Thailand: see elephants, birds, snakes and monkeys, and there’s even the tiny possibility of seeing a rare, wild tiger. Maybe you’ll see one, perhaps you won’t, but at least you know they are where they belong.
Chiang Mai
A quaint, yet energetic city that is the feeling of home. Nestled within the square of red-brick walls, Chiang Mai’s Old City’s streets are bursting with unique comfort and character: temples, cafés, veggie restaurants, handmade shops, art studios and galleries… the streets provide a narrative of what Chiang Mai is - a community of artisans, musicians, and historians. A Taste from Heaven’s facon burger rivals Beetroot Stories’ peanut butter chocolate shake, which in turn challenges Ice Love You’s vegan ice-cream buffet! Way, way out of the city, away from the motorbike adventures to mountain waterfalls, away from the serene meditation retreat at Doi Suthep, and amongst the bombardment of elephant camps, lies The Elephant Nature Park. Caring for abandoned, lost, injured and abused cats, dogs and elephants, this sanctuary is a safe place away from abusive circus tricks, riding and exploitative shows.

THE MERCY CENTRE
The true name for Bangkok in Thai means ‘The Great City, the City of Angels.’ There is no doubt that the city is great in terms of size, and with a population of over 8 million people, Bangkok is home to around 13% of the entire Thai population. Tragically for some of these people the city streets are the only home they will ever know. The Mercy Centre led by Father Joseph Maier has been working tirelessly for the last 40 years in an effort to help the street kids, the needy, the victims of abuse and the mothers and children living with HIV/AIDS that are all too commonplace a sight on the streets of this sprawling metropolis. For these people, Bangkok has its very own, very hard working angels. Arriving in Thailand in 1967, Father Joseph H. Maier first came to Bangkok to study the original Thai language. He went on to travel throughout the country, learning different dialects along the way, originally as a Parish Priest and later ministering to first generation Catholic communities in rural areas of the Country, most of which remain heavily poverty stricken to this day.

Father Joe soon returned to the Capital City and has been providing tireless support ever since. With the help of Sister Maria Chantavarodom, The Human Development Foundation Mercy Centre was formed and has been around in a variety of forms ever since. After a sizeable donation, The Mercy Centre was rebuilt in 2000 and is now proud to provide shelter for 180 children who have been abandoned, orphaned or the victims of human trafficking. Around 40 of these are also HIV/AIDS infected. More than 40,000 underpriveleged youngsters have learnt to read write and gained their preschool graduation certificates through the 23 Mercy preschools that operate throughout the city. These prodigious efforts have not gone unnoticed, not least by Her Majesty the Queen of Thailand who presented Father Joe with a lifetime achievement award in recognition of his incessant toil for the City. Under his patronage, The Mercy Centre does all of this and a great deal more whilst also working in tandem with government institutions in Thailand, Laos and Myanmar. Despite the accolades, it seems somehow fitting that Father Joe remains where he started all those years ago, living, working and everyday making life a bit better for someone in the slums of the Klong Toey district in the City of Angels.

TECHNICAL SIMPLICITY Modernist Cuisine, Molecular Gastronomy, A little bit of Heston Blumenthal or Ferran Adria, whatever you call it, its been around for years now and most credible chefs know a bit about modern techniques and ingredients as well as their traditional training. But often they get it wrong and never try again. At Rock Salt we don’t shout about the techniques used to bring out the best in our ingredients. What do you care? Chefs may get excited about these ‘techniques,’ but customers couldn’t give a crispy duck whether your Pork Belly has been cooked for 3 hours or 3 days, just as long as its got some decent crackling on it! We like to keep things appearing simple from the outside. Our menu wording doesn’t aim to bog gle minds or show of f. But behind the appearance of a plate of simple food, there can be, and often is weeks worth of painstakingly accurate preparation. The reason for this is… geeky obsessions aside, all about flavor. If we can refine a technique which makes some element of a dish outstanding, it is worth the effort. Make that the routine the standard in the kitchen and it gets easier and easier every time you do it. O ur pre fe r re d f l avor co m bin at ion s are c l a s sic . A nd our ingredients on the plate are limited to just the 3 elements. 4 is getting crowded. The cost of high quality produce also dictates how any restaurant menu is structured. Less is always more. There’s more than one way to skin a rabbit. (Never skinned a cat so I wouldn’t know). But if you can take only 3 elements that go well together, lets say Salmon, Horseradish and Beetroot. (Ok 4 with Lemon as an afterthought, just for a garnish.) How can you make these classic flavours literally explode into your diners face, take them by complete surprise and re-invent a classic combination resulting in a par ty in you mouth without detracting from the original idea? Well how about this?
Ingredients: The Gravlax Side of fresh, good quality Salmon. Pin-bonned. 1kg Salt , 1kg Sugar. 1 large bunch Of Dill 50ml Chase Smoked Vodka or any other premium vodka. Apple wood chips and a ‘polyscience’ smoking gun. Or a piece of very dry wood and a pair of tweezers. The Horseradish Cream 250g Crème Fraiche 40g Horseradish Sauce or fresh Horseradish Chopped Chives, Salmon Roe (Optional) Salt and Pepper Lemon Oil One Lemon Zested 150ml of Extra Virgin Olive Oil

MINERAL MAGIC The Beetroot Caviar 2 Large Beetroots Juiced 2 tablespoons Runny Honey 2.5g Sodium Alginate and 5g Calcium Lactate (these are a natural powder processed from sea weed, available from Colibri foods in Samui or Theodore in Bangkok, or order from Amazon!) Time needed to execute the dish: 4 days (don’t worry, its mostly waiting)
Making Gravlax: To start the gravlax you need to get a deep tray big enough to hold the piece of salmon. Larger pieces of fish are easier to slice and give more reward to the wait. Don’t only think about the fish being contained, but also about a large amount of oily fishy liquid which is about to be extracted from the fillet over the coming days of salting; liquid which will contaminate your entire fridge and its contents if you underestimate it. Use a big tray! Depending on the size or amount of the fish fillet you are curing, you will need equal amounts of salt and sugar, we use sea salt and of course you can use brown sugar if you like, both are great. But I find that its just as good with regular table salt and white sugar. One whole side will take about a kilo of each, so don’t be shy with the mix. And lots of chopped dill mixed in with this salty sweet powder. You can really taste the dill later, so don’t skip this. Make a bed of the Salt , Sugar and Dill mix for the fish to lie on, skin side down and then pack the S,S&D all over the flesh side until it is completely covered. Wrap the whole tray with several layers of film and put at the bottom shelf of your fridge for 4 days. The salt will kill the bacteria in the fish and preserve it , so don’t worry it is going to go off. After the 4 days, wash the fillet thoroughly and dry with clean kitchen towels. Gently massage 50ml of Chase smoked vodka into the flesh and put back in the fridge uncovered for a couple of hours. Once the fish has dried and set up again use a very sharp knife, slice the fillet into 2 mm slices. Starting at the heel of the knife and finishing at the tip in one smooth action. If you find you are ripping the salmon and it is not cutting cleanly, your knife is not sharp enough. Try tip to heel with a little more weight on the blade to get a cleaner cut. Store covered in the fridge. The gravlax will keep for up to 10 days or more in a reliable fridge. Making Beetroot Caviar: Add 1 tablespoon of honey to the beet juice. Add 1g of the Sodium Alginate Powder and blend to incorporate and hydrate the mixture. This will thicken the juice. Let it sit in the fridge for a couple of hours to disperse the air bubbles, or as we do at Rock Salt , remove the air instantly in a chamber vacuum machine. In a large bowl, pour 1 litre of cold water add 5gms of the calcium lactate (aka calcium chloride). Blend with a stick blender to hydrate. Let this sit in the fridge, which also helps activate the calcium. When ready, take a large hypodermic syringe (from pharmacist or first aid kit), or even better use a caviar droplet maker (available online) and make little droplets of the beetroot mixture into the calcium water bath. Observe the magic. Once you have enough, remove from the calcium bath with a seive and rinse in fresh drinking water to get the salty taste off. (This also stops the little balls from fully gellifying and gives them a liquid centre… which is pretty cool). Making Horseradish Cream: Take a large bowl and turn out a 250g tub of good quality crème fraiche. Prefereably D’isigny if available. Mix with 40g of the horseradish sauce, the zest of a lemon and a pinch of Maldon Sea Salt. Mix thoroughly until all lumps are removed. Making Lemon Oil: You can just infuse a good quality E.V olive oil with washed, un-waxed lemon zest. But to really maximize the lemon flavor, we put zest and oil in a vacuum bag, seal under low pressure and then gently heat it in a water bath to 65 degrees Celsius for 20 mins. Strain the zest and reserve the oil.

Plating & Smoking The Dish: Roll 4 -5 slices of the gravlax and mount on the plate, drizzle the fish with lemon oil. Place a quenelle of the horseradish cream on top. Sprinkle with Salmon Roe, the Beetroot Caviar, chopped chives and lemon zest for garnish. Using a glass cloche cover the dish and pipe in smoke from apple wood chips using a smoking syphon, alternatively; hold a smoking ember under a large glass until enough smoke collects in the glass and place it over the fish. Leave in the smoke to infuse into the fish and crème fraiche for a couple of minutes. Serve for your diner releasing the smoke around them. Best eaten with fresh brown bread.

THE BANGKOK HILTON
There is only one redeeming feature about this fine establishment – the price. If you’re planning on staying in Bangkok make sure to get the correct Hilton, i.e. the one with windows, no shackles and a 5 star trip advisor rating. However, if you don’t have the cash and are desperate to say you’ve stayed at this prestigious address then any manner of shady ventures could provide you with a long if not permanent stay here. Bang Kwang as it is also officially known, is home to offenders on death row or sentences of over 25 years. And there are a lot of foreign prisoners here. The long term residents can expect leg shackles for the duration of their stay while those on death row have them permanently welded on making escape pretty unlikely. Fans of routine especially in the culinary sense will fit right in here and enjoy the once daily feeding of white rice in vegetable soup that can be expected and enjoyed… if you can keep it away from the stronger prisoners. More adventurous diners may care to enjoy the maggot, cockroach and even rat options available to the hunter gatherer types in here. Thai’s call this prison in Bangkok ‘The Big Tiger’ because it ‘prowls and eats.’ English speakers call it ‘The Bangkok Hilton’ because they have a sick sense of humour and understand irony. Best avoided unless you are so lazy you appreciate nothing better than free food and board.
HOTEL CALIFORNIA
This fine establishment was, and still is, a popular hangout with legendary American group ‘The Eagles’. We’ve been told they sing about it at every performance these days – sometimes twice for good measure. By far my two favourite features at this hotel are the classical mirrors carefully located on every ceiling and the complimentary pink champagne on ice. In fact stay away from most of the other drinks, we tried ordering a nice Sauvignon Blanc and they thought we were after vodka, which apparently hasn’t graced the menu since 1969! Opinions divided on the subject, some clients think the hotel is heavenly while others compare it to hell. On the plus side the check-in times are extremely flexible but there is a major minus to this – you can never leave. . .

S O U N D WAV E S Mark Ronson - Uptown Special When you look at the track list and who worked together with Mark Ronson, you see plenty of stand out performers in their own right. Which makes me think that they were brought in not just to provide a bit of spice but they are actually the talent. You look at David Guetta, who once was just and DJ/producer who catapulted himself into mega stardom by adding house music to the vocals of some of Americas hottest artists, this way you have a sure fire chart buster dance album. So this isn’t new, and a great idea if your adding talent to a current dance music fad. Electro house and EDM where in high demand and Guetta delivered what the mass market was after with Track after track. Mark Ronson unfortunately doesn’t. Uptown funk is excellent, foot tapping thru to quick where’s the dance floor? I need to dance - excellent, it apparently came about from a jam at bruno mars LA studio. That must a been some moment that they shared because its already up there in the hits of the new millennium. Shame the rest of the songs pale against it.
Madonna - Rebel Heart Ahh Madge as she fondly know back in her native, er England? An eventful few years hasn’t done anything to dampen the spirit of the previous all American girl. I was quite surprised to enjoy Madonna’s 13th album so much, she was almost back to her best. The last couple of efforts from her where almost trying too hard to sound modern and in touch with current trends though in Rebel heart her voice sounds youthful and enthusiastic as ever. Admittedly there were few disasters in there - but this is a double album with 25 tracks and a good average throughout. Madonna made light work of the ballads and also works with two of dance music biggest stars in Avicii and Diplo. The former apparently supplied two teams of three technicians to prepare music for her arrival. She then took control and kept them through the night writing and changing melodies, so if there’s doubt who is control over her music there isn’t now, fair play.

Hed Kandi - Deep Disco Wow so Hed Kandi shows no sign whatsoever of slowing down with their compilations. After such titles as twisted disco, nu disco and disco heaven I guess it was only time before they released deep disco. ‘Deep’ might be the IN word in house music at the moment and as a result everyone is climbing on board. Online record stores confusingly list regular house and other sub genres into the deep house section as they know it’s the most popular genre to view and theoretically sell more tracks when placed there. This is very annoying when shopping for music but also waters down a genre with lots of music that shouldn’t be associated with it.

Hed Kandi does however excel in disco their early albums where ground breaking, and my opinion that they were practically responsible for funky houses metaphoric rise which took Europe by storm earlier this century there popularity was so that a birth of club nights and tours followed and a reported 5 million of their compilations sold. This one doesn’t disappoint. Strong tracks, not just making up the numbers are ever present many of which I’m using in my sets. I wouldn’t call this deep or disco or a hybrid of the both, but a melting pot of all the strong flavors we associate with the brand, just with a current twist.
When you look at the tracks that are on this compilation you see lots of big name anthems, but from last summer. If you are putting together a compilation like MOS do, you need clearance from the record labels of the tracks involved, that takes time and money even if you are Ministry. So your are inevitably left with music that has been played over on over again. The release is normally for around Christmas leaving any purchase in the New Year with dated music. I thought Ministry this time were offering something slightly different to my preconception, there were remixes giving a new edge to tracks we heard regularly last year. Even a period of UK garage remixes and old skool, which is always welcome. I started listening to the first CD and found myself being pleasantly reminded of songs that I had worked with over the last 6-12 months, the journey - which this really is then started to span into different genres before the first CD was out - there’s nearly 4 hours of music here and which nicely switches between genres, then I got it - Ah the weekender - Friday, Saturday then slowly into Sunday – clever and changing melodies, so if there’s doubt who is in control over here - there isn’t now, fair play.
