Welcome to the wonderful world of British photographer Nadia Lee Cohen. At only 23 years old, this London College of Fashion fresh grad is fast making waves in both the fine art and fashion worlds with her delicious mix of carefully contrived portraiture amid impeccably precise lurid landscapes awash with vintage nostalgia and dripping with retro charm. Nadia’s distinctly oversaturated opus of unfaltering attention to detail has since landed her the prestigious Taylor Wessing Prize at the National Portrait Gallery in London, resulting in numerous exhibitions and high-fashion features from those in the know. An incredible entry to a bourgeoning career, the unattainably talented photographer, stylist and model (herself) obviously has huge success ahead of her. The first of the virtuous heroines is Manorah. The youngest of 7 sisters and a Kinnaree princess with the wings and tail of swan, Manorah is more beautiful than any mortal women. Legend has it that one day a young hunter happened upon her and her sisters while they were bathing. Having removed her wings and tail, she appeared as a mortal maiden. Transfixed by her beauty, he captured Manorah as a tribute to his prince. She and the prince eventually did fall in love and marry. However, jealousy and intrigue surrounded them. She was later scapegoated and set to be sacrificed by fire. Before they could, she begged for one last dance. Wearing her wings and tail, she danced and flew away to freedom. KEY THEMES: grace, ingenuity, flight, freedom, brightness, radiance. TREATMENTS: Rejuvenating and returning radiance. SCENTS: Calming lavender. The second is Mutthana, and the story says Suthed, a powerful angel, fell in love with her, who was renowned throughout the heavens for her graceful form and figure. When she didn’t return his feelings, he became infuriated. In his rage, he cursed Matthana to transform into a fragrant rose, a flower before only found in heaven, and banished her to the mortal world of the Himmapan forest. Only once a month for a day and night during the full moon is Matthana able to return to her original form. The curse could only unravel if she found true love, allowing her to live as a mortal woman forever. When she does find love with Taochaisen, she is confronted with jealously and is falsely accused of infidelity. She begs Suthed for help, and he agrees provided she becomes his. She declines again, and is cursed to remain a rose for eternity. KEY THEMES: passion, transformation, roses, love, desire.

Thirdly, Rodjana, the beautiful youngest daughter of King Saamon, defied his expectations when choosing the ugly Phra Sun Thong as her betrothed. Believing that he was not worthy of his daughter, the king banished them both. After discovering Phra Sun Thong was merely wearing the ugly Ngorh mask to hide his true golden beauty, the king mends their broken relationship.

The C-Class has grown to take account of people’s increasing average height. With an 80-millimetre increase in the wheelbase (2840 milli­m etres) compared with the previous model, the vehicle is 95 millimetres longer (4686 millimetres) and 40 millimetres wider (1810 millimetres). The resulting increase in space benefits the rear-seat passengers, who now travel in even more comfort, and creates room for the new front axle and future hybrid components. A Kolkata native, Gaggan showed his passion for cooking from an early age and, till this day, presents many of his mother’s home style recipes. After finishing his diploma in Hotel Management he worked in Taj Group at Orient Express and Zodiac Grill. As a young chef of just 22 had the honour of cooking for former US President Bill Clinton. He has also travelled with His Excellency Abdul Kalam, the former President of India, personally taking care of all his culinary needs.

Taking the helm at contemporary Indian restaurant Red Bangkok he quickly established a reputation as a talent to be recognised; food critics soon heralded his food as revolutionary. Indeed, the international press compared Gaggan’s work to that of chefs at international Michelinstarred restaurants. Eventually seeking fresh challenges, he became chef de cuisine for Bangkok’s Lebua Hotels and Resorts, where he was part of one of the most thriving F&B operations in all of Thailand. However pursuing his dream, he along with three other friends, decided to create ‘Gaggan’. While the restaurant was being renovated, Gaggan left to a once-in-a-lifetime chance – he interned with the research team of Spain’s famed El Bulli, under the inspiring Ferran Adrià of Catalonia. Gaggan was the first Indian and just the second Asian ever to enter through the hallowed doors of this extraordinary laboratory. Although he was only able to spend a few short months there, he considers his time at the nirvana of culinary knowledge one of true enlightenment. Gaggan is a chef with simple recipes made elegant by exotic presentation and futuristic cooking techniques. What he does with passion is translate those recollections of his roots into modern, innovative dishes; providing simple solutions that are authentically Indian, but also success to bridge the culinary divide between East and West.

For the Marinade

Tandoori lambchops

Ingredients 1. Baby free range Lamb chops , chilled not frozen (4 pcs) 2. Coriander leaves 20 grams 3. Mint leaves 20 grams 4. Green chilli 10 grams 5. Lemon oil 20 grams 6. Salt to taste 7. Ginger 5 grams 8. Garlic 2 cloves 9. Small food grade plastic bag for vacuum pack

Method Mix all the ingredients to make a smooth paste and rub the chops with it. Put the marinated lamb in the plastic bag and vacuum seal it. Now in a sous vide bath cook for 60 minutes at 65째C. Finishing After the sous vide take the meat out of packet and barbecue them in tandoor oven, till chargrilled approx 4-5 mins. In a plate place nasturtium flowers and leaves as per photo place the lamb chops and then smoke it with sandal wood smoke

First prepare the cucumber foam in a syphon. Put the remaining ingredients into a shaker and shake well. Pour into a funky glass and top with the cucumber foam. Add one piece of dry ice to it for effect.

How did you end up in Samui and what made you want to create the Yogarden? After spending a short time here in 2003, we made the decision to move to Koh Samui from the UK. Samui struck an instant chord in my heart; I fell in love with its natural beauty and lovely people. I had a small child at the time and taking the opportunity to bring him up in this environment surrounded by beaches, mountains, warm outdoors and lovely Thai people, just seemed completely right. My husband established a landscape design company, while The Yogarden was a long awaited dream come true. I wanted to bring together my love of yoga, good healthy food and a welcoming environment that gave people an inviting, unique space to do yoga and relax. Throughout the years we looked at a variety of options around the island but when the opportunity arose in Fisherman’s Village for the beautiful ‘boran’ (90 year old teak house) I knew instantly it was meant to be. The house needed a lot of work and attention to bring it to the current state but it has been a labour of love and totally worth it. People love it and so do we. The garden was naturally my husband’s creation while the house has an ‘energy’ about it that magnifies all the reasons we created it. What was your very first encounter or memory with yoga and what made you fall in love with it? I tried yoga many years ago when I lived in San Francisco. I often felt intimidated by the atmosphere of some of the studios so it wasn’t until I became pregnant, while living in East Africa, that I truly connected with yoga as a regular practice. It was a very special time in my life and doing yoga while pregnant gave me such a unique opportunity to connect with my baby. This chapter of life will always hold a very special place in my heart. I realized how much more yoga was than just a physical exercise. My practice of yoga has changed throughout the years but it continues to teach me so much about myself and the endless connections we, as humans, make in our lives. I’m so grateful for that. I often get to see people who fall in love with yoga when they try it for the first time at The Yogarden. Many times I get amazing emails from customers who have really transformed their lives after discovering yoga here and thank us for our part in their discovery. It is quite a privileged & rewarding job I have at the end of the day!

Is there a pose you find the hardest to master and any tips and tricks on getting your zen on? Every body is different and so even dedicated masters of yoga may find certain poses tricky. I have seen some people who have never practiced yoga before do very complex asanas in their first class while some might struggle with very ‘simple’ ones for years. It’s important to realize this and move away from judging ourselves compared to others. The key to yoga asanas is “practice”. This is why it is aptly called this. If you return with dedication to your practice, as with most things, you will see poses become easier. Even more important is to allow yourself to enjoy the journey getting there. It is, ultimately, as significant as reaching it. This is part of the holistic way in which yoga can teach us things about ourselves. Many of these lessons learnt on the mat can often benefit us in our daily life. When you learn to appreciate all the subtle changes that yoga can provide, I think you can be the master of your own zen. Yogarden has grown considerably in a short amount of time since it was launched – what are the plans for you and the Yogarden in the future? We have been very fortunate since we opened. Our reception from both the local community and visitors to the island has been really fantastic. Although we are a very small studio in comparison to others on the island we have been able to grow organically at a pace that suits us. We have so many people who join us from all corners of the globe and now we see people returning for a second and third time. We get customers who have been recommended by their friends who only visited once and this feels like the most natural way to progress. We are now welcoming well-known teachers from all over the world for workshops and trainings and word seems to be spreading quickly. We will soon have on-site accommodation options for more retreats and hope to expand upon what we have already achieved without loosing the charm and intimacy that makes our studio so special. It’s hard to predict the future of The Yogarden. We have so many promising possibilities but we will take each day as it comes

One Coast catches up with Samujana’s General Manager KURT BERMAN for a glimpse into his inspirations and the highlights of handling the high life.

How did you arrive as the GM of Samujana, one of Koh Samui’s most incredible villa residences? My journey to Samujana started in South Africa and has seen stops in London, Dublin, the Turks and Caicos Islands, Seychelles, Antigua, Maldives and most recently, China. I am therefore quite comfortable with palm trees and warm beaches as my office! Was globetrotting always something you aspired to do? I have always been a bit of a nomad and would spend hours in my childhood poring over an atlas trying to imagine what life was like in exotic sounding places like Zanzibar, Bangkok or Shanghai. Growing up in South Africa during this time meant that the chances of actually being able to travel abroad were virtually impossible, but I was fortunate to have these opportunities open up just as I was ready to leave the nest. You were not always a hotelier, so tell us something about your past that no one knows about you…high school gymnast, trained as a chef? Surprise us! I actually started my career as a chef and reached the level of Executive Chef at a 5 star resort before venturing out of the kitchen. You would certainly not find me swinging from the high bar or leaping over a pommel, but I am know to swing a mean 3 iron and can hold my own with a drum set. I am also passionate about rugby (watching not playing anymore) and grilling (anything over hot coals on a sunny day by the pool). I also love the simple solitude of SCUBA diving. No cellphones or emails down there! Who has been your inspiration in life? I admire legendary hoteliers Adrian Zecha, Isadore Sharp, Bob Burns, Onno Poortier and Ian Schrager. I also respect people who get up after being knocked down like Nelson Mandela, Bill Clinton and Malala Yousafzai and I am inspired by crazy geniuses like Steve Jobs, Richard Branson and the legendary photographer Robert Capa. Having been in hospitality for some time, you must have a few stories to tell! Spill the beans! I have arranged many private events and special requests for A-list movie stars, musical artists, high-profile personalities, presidents, legends, kings and queens. From arranging a fashion shoot for Stella McCartney in the Caribbean to a million-dollar wedding for a 30-year old billionaire in the Seychelles. I have carried Will Smith’s golf clubs, held the elevator door open for Tom Cruise, arranged private boat transfers for Alicia Keys and cooked dinner for all James Bonds. If you were to do one thing in life, that you have not yet done or experienced, what would it be? I want to visit Antarctica, publish a book, master Italian, own my own business and visit all 500 hotels on my list. Does that all count as one thing?

EVERYONE LOVES THE CHANG Elephant Nature Park is a unique project set in Chiang Mai province, Northern Thailand. Established in the 1990’s our aim has always been to provide a sanctuary and rescue centre for elephants. The park is located some 60km from the city, and has provided a sanctuary for dozens of distressed elephants from all over Thailand. Set in a natural valley, bordered by a river, and surrounded by forested mountains the area offers a timeless glimpse of rural life.

Rain Forest Restoration: One of the most exciting developments at the park is a specifically designed program which focuses on the planting of trees in the surrounding area. The ecological balance of plants and animals will be encouraged by the re-introduction of the rain forest. Some 25 acres of the mountainside will be planted every year for the first 5 years. Cultural Preservation: To maintain, as much as possible, the cultural integrity of the local community. By creating employment and purchasing agricultural products locally Elephant Nature Park are assisting the villagers in sustaining their distinct culture. Park managers are recruited locally to oversee the park’s progress.

After dreaming of a beach wedding since I was a little girl, it was incredible to find my perfect venue in Koh Samui.When I discovered Samujana‌I knew this was what my dreams were made of. Today, I married my best friend and everything was as I had imagined. The white orchids and callalillies that lined the aisle, the rose petal path guiding me down to my future husband who stood under the billowing canopy in front of sweeping sea views. The reception that followed left us breathless. A stunning assortment of our favourite sushi, served on hand carved ice blocks and placed along what seemed like an endless table, surrounded by all of our guests and adorned with intricate flowers with hand-chosen trinkets, the stuff of whimsical fairytales. The evening was made all the more spectacular as we dined underneath a magical display of fairy lights and lanterns, illuminating the smiles of all my family and friends as we ate, drank and danced the most wonderful night of our lives away. We kissed, we celebrated, we got married!
