One Coast Magazine recently visited Gary Klungreseth from Cloud Nine Art to see what all the commotion was about and we found out this is certainly not just Art for Art Sake. Gary who originates from the UK but spent many years in Sydney has been a collector of fine art canvases for some time and it was apparent to him that a few finely chosen pieces of Art can completely transform a House into a Beautiful Home. Marni’s new collection has multiple definition..
The new FW16-17 Marni collection is completely out of scale and subsequently it plays with perceptions and proportions, creating its own ground from a gentle distortion of familiar elements. The expression is firm yet emotional. Romanticism gets sliced, tweaked, reconfigured. Sport is a hint. Embellishment recurs. The decisive silhouette is highlighted by the rounded, sculptural sleeves that can be fastened with big buttons, by the crinkled ribbons that close on the back creating a billowing sense of unravel. Folding, knotting, fastening lands a processual quality. Roundness is pervasive. Curved cuts define lines that barely touch the body while following its shape. Trousers have a precise, rounded profile. The tension of different elements is solved with ease and spontaneity. Solemn capes and strict coats alternate with short, decorative dresses. Stirrup trousers, intarsia jumpers and compact knit tops add dynamism. Technical faille dresses embroidered with big sequins have an eerie preciousness. When it comes to fur, it’s a mink mini-cape, a contrast mink collar.

The eyes are constantly stimulated by the way pattern and volumes interact. Classic motifs are blown-up, getting abstract: marker swirls as feminine camouflage, outsized gingham grids, faded lozenges, colorful geometries, Parshke flowers. Bright embroideries on mannish wools add further layers to the play of visual textures. Materials of different weight and identical pattern are mixed in the same pieces, creating a subtle counterpoint of densities. Fabrics are compact and firm, or fluid and light: ripstop cotton, bonded crepe, wool silk crepe. The palette is an instinctive combination of blacks, whites, reds and greys with dashes of tobacco and burgundy. Shoes are pointy pumps and boots have sculptural heels in either metal or metal and wood. Bags play with proportions and decorations: miniaturized styles with outsized straps; compact shoulder bags with embellished chains and embroideries. The stress on roundness is sealed by jewelry pieces: various plays around the theme of the sphere and the bead mixed in clusters with semi precious stones such as amethyst, quartz, pyrite, for earrings and necklaces. Sunglasses have bold frontals with cutout layering. The collection certainly captures the essence of what bold style could be.

An interview with
Heinz Beck Internationally-renowned, Heinz Beck is one of world’s most respected chefs, holding five Michelin stars and an impressive portfolio of celebrated fine dining restaurants. In 1994 Beck took the helm at La Pergola, situated in the luxurious Rome Cavalieri Waldorf Astoria hotel, the only three Michelin starred restaurant in Rome and hailed by many as Italy's best. As a master of modern gastronomy, his food is considered a blend of his early training of German discipline with one of the most sensitive and innovative interpretations of the nuances of Italian cuisine. No stranger to the Middle East, he also has two restaurants in the UAE – ‘Social by Heinz Beck’ in Dubai's Waldorf Astoria, which showcases his fine-casual dining concept, and ‘A Taste of Italy by Heinz Beck’, at The Galleria Mall on Al Wasl Road in Jumeirah, his first more traditional, casual eatery. How did a German chef end up running a Michelin 3-star restaurant in Rome? I started cooking while studying at Hotel Culinary School in Passau. My first work experience was in 1980 as apprenticeship and Commis de Cuisine at Hotel Holzapfel, Bad Fuessing, Germany. After this, I spent some years working in other restaurants then I met my mentor Heinz Winkler who taught me a lot and involved me in several experiences abroad. In 1994 he also put me in touch with the GM at Hilton Cavalieri (this was the former name of the hotel) and I came to La Pergola. My intention was to stay in Italy for a few years.. I celebrated my 22nd anniversary this year. Where did your love affair with Italian food begin? In Italy. When I arrived in Rome, I spent time visiting typical Roman restaurants in order to deep understand local traditions. Then I started studying Italian cuisine and Italian gastronomic history. I felt in love with the variety of ingredients available and their seasonality. From there I started to develop my own cooking philosophy. Did you always want to be a chef? Who has influenced you the most? No, as I often tell, at the beginning I wanted to be a painter, but my family opposed and I had found a job that allows me to express my creativity and my passion for art. I can list two main influencers: my mentor Heinz Winkler and my wife Teresa, who taught me the love for family. Because cooking, for your guests as well as for family and friends, is always an act of love. You have won many awards, what is the secret to your success? What motivates you today? I constantly try to renew, always telling new stories, ideas and dishes: this feeds my motivation every day. In addition, I’m lucky as I work with a professional team of young and talented collaborators, eager to evolve, so it is an ongoing team play, to always have something new to tell. How important are your Michelin stars? Is it more difficult achieving the first or maintaining the third? They are two different steps, both difficult, both important incentives to do our best because the common denominator is always to satisfy guests’ expectations. What are the biggest challenges you’ve faced as a chef? To create emotional, balanced, tasty dishes without sacrificing the wellbeing of my guests. Why is healthy eating so important to you? Is it a challenge to create exciting dishes that are also good for you? Eating helps to prevent us from catching diseases. For example, malnutrition is a disease; vitamin deficiency is a disease. Cancer is often, although not always, connected to eating. What can we do to prevent this? Our cuisine has to give to our bodies the perfect food combinations that respect the complete energy requirements of our organism. Food needs to nourish us. It needs to be well prepared for an organism undergoing evolution. Our organisms have evolved because we live longer thanks to an ever-changing lifestyle. Changing our lifestyle and benefiting from ever-improved medicines, we must take better care of our organisms by eating healthily, so as not to develop pathologies which derive from unhealthy nutrition like Type 2 diabetes, cholesterol, cirrhosis of the liver, and high blood pressure. Therefore, when I prepare my menus, I have to be extra careful not to invent dishes that create problems or damage to my guests’ health.This is the goal I’ve been striving for for more or less the past 15 years, since around the year 2000. 20

Do you think your food is still evolving? How has it changed since you first began? From a traditional style we moved on to serving imaginative side dishes. From there we started to use modern cooking techniques and then moved on to paying attention to health issues. Lately, we’ve started to lighten our dishes to bring out their various individual flavors. The more you lighten a dish, the greater emotions its flavors have. Are there any ingredients you could not cook without? Vegetables (artichokes in particular), herbs and fish. With so many restaurants all over the world, how do you manage them all? I try to organize business trips in advance, taking advantage of the closure days of La Pergola, not to miss daily evening services. With Tokyo and Dubai, I have no way to visit them assiduously, so, in addition to the scheduled visits, the daily feedback I get from each restaurant and the direct streaming inside the kitchens, I plan weekly conference calls to monitor developments, to listen to and give directions to my staff. How are your different restaurants inspired by their location? Which customers do you find most difficult to please? Knowing the eating habits and listening to the opinions of customers helps to better understand their needs, which are obviously different depending on the country where the restaurant is located. Basically, in all my restaurants I propose Mediterranean cuisine with the aim of enhancing and promoting the Italian culinary art in the world. At the same time, however, I focus on the study of local traditions and so I introduce typical ingredients in dishes or create recipes ad hoc looking to satisfy the expectations of the customers. It also happens that a dish, even if created, for example, in Tokyo, is inserted into the other restaurants menu. And vice versa. Always focusing on balance and health.

What are your thoughts on Thai cuisine? Do you have any future plans in Asia? I think Thai is a good cuisine. Rich in fruits and spices. I currently manage two restaurants in Asia, ‘Heinz Beck’ and ‘Sensi by Heinz Beck’, both in Tokyo.

How often do you visit your restaurants in the UAE? What do you think of the growing fine-dining scene here? Normally, four times per year, but in case of events planned in UAE I’m invited to attend to, I try to take advantage of these occasions also to visit restaurants, if possible. Dubai is a dynamic reality that welcomes expertise and entrepreneurs from several countries. Here everybody can find what suits best and take a broad view of the world. I like Dubai and its growing fine-dining scene. What do you do to relax away from the kitchen? Do you have a foodie guilty pleasure? Honestly, I don’t have so much time to get relaxed. Anyway, when I have the chance, I like to visit museums, to take a walk in the centre of Rome and to go to the opera with my wife. Foodie guilty pleasure: chocolate.

Jiggers Co.,Ltd. Simon Brown originally from Twickenham in the UK first started his bar consultancy business in London, this was 2001 when professional bar supplies became a major part of his life. He placed experienced bar consultants at various 5 star hotels and resorts primarily in the Middle East, Africa and South East Asia. Professional bar equipment was essential for the consultants to carry out their training as virtually all these locations lacked a local bar supplies company. Having seen this large void, Simon set up a bar supplies company in Dubai in 2006.This was the perfect time to set up such a business in this hugely growing market and the geographical location made it easy to trade elsewhere in the Middle East, Africa and South East Asia. The business grew for several years becoming a well-known and established supplier in Dubai and indeed the Gulf region, providing all the major barware for most for the leading new hotels, bars and restaurants. Simon met Angkarn, his wife in 2010 proposing to her at The Peninsula Bangkok just a few days after they met. "I still can’t remember if she actually said yes!” he said, "both of us have three daughters through previous relationships, this brought us even closer together as we shared so many similar experiences!" Angkarn moved to Dubai shortly after their marriage and helped Simon immensely with the hard work of visiting so many hotels, restaurants and bars sampling so many great and awful cocktails and thus selling them the tools to make them. In 2014, Simon and Angkarn decided they had completed what was possible in this location and decided to create a similar company in the Far East. Bangkok was an ideal location to create such a vehicle as the market was just entering the Cocktail Culture phase and no-one held stock or offered a complete range of bar operating supplies. “Jiggers Co Ltd” was born in early 2015, based in Bangkok they hold stock of a wide range of professional bar operating equipment, that’s used in many of the leading hotels and resorts throughout the world, much of which is either manufactured in various Asian based factories or indeed custom made locally in Thailand. Jiggers also brand barware for some of the world’s leading spirit and beer brands. The company grew quickly within the local Thai market place where they amassed some premium customers both in Bangkok and indeed most of the leading resorts in Phuket, Samui, Chiang Mai and internationally, both regionally in Cambodia, Vietnam, Burma and also in the Indian Ocean after they gained notoriety in providing outstanding equipment to numerous existing resorts. Jiggers are about to provide a superb high end range of equipment to a new exciting resort opening late this year in the Indian ocean. In the past few months Jiggers have re-entered the Gulf market, providing equipment to some exclusive hotels in Doha and the Omani upcoming resort of Salalah. Both Abu Dhabi and Dubai are proving to be a growing market for Jiggers where they previously only had associations and are about to ship some of their Thai manufactured products for the opening to a very high profile Downtown Dubai hotel. Previous knowledge and established relationships within the UAE market has given Jiggers a huge advantage to trade again in this fast growing region and they are looking forward to future exciting projects there and indeed some near Jiggers home base here in Thailand. posed for power? You built your case all weekend so you could walk into the boardroom Monday morning and win the toughest negotiation of your career. And then, before you even have a chance to present, some guy who watched football all weekend strolls in and absolutely steals your thunder. He’s got swag. He’s got attitude. He’s got the room eating out of his hand. He always wins. He’s not in charge yet, but you and everyone else knows he soon will be. Trying your best is rarely good enough to survive today’s challenging corporate environment. You must have consistent wins to stay on top in your profession. Every time you ‘spar’ with your competitors, you are expected to score a victory. What is it about some people that ooze power? If you look closely, they naturally display confidence through their non-verbal cues, from their body language, tone, inflexion, and other elements of voice. Is that a skill we can learn ourselves? Can we look confident, and imbue presence so others sit up and take note? Crucially can we even achieve this, if we are still wrestling with self-doubt inside? It turns out we can! We all try to achieve this, by trying to control the “wild mind” that races in our heads in stressful situations. But just telling yourself to calm down, when you know you are not, isn’t a very successful strategy.We know this through experience, as we have all tried this at some point, and failed.What is needed, is for you to change the relationship you have with your embodied-self.You do this by first by recognising that your mind isn’t just something coursing through your head — instead, think of it as existing throughout your entire body. From this perspective each and every cell in your body brings to you its own intelligence.Your mind is literally embodied. But before you can get this right, you need to first acknowledge that your body and mind are linked and how, by doing certain actions with your body that can influence your mind. This way of being, largely contradicts how most people think today. That’s because since the 17th century when French philosopher René Descartes separated the mind from what the body does (dualism),Western philosophy, and more generally Western society, has been dominated by the idea that our mind is distinct and functions independently from our body.

Increasingly however, science is disagreeing with this notion, while mind and body are distinct, they are not separate. Both have a profound influence over the other. This was illustrated by a study conducted by researchers, Dane Carney, and Andy Yap from Columbia University and Amy Cuddy from Harvard University. The study was built on the theory that animals like the peacock for example — express personal power through open, expansive postures — and powerlessness through expressing closed, contractive postures. The researchers wanted to know, what happens if humans posed in powerful stances? Would posing as powerful help a person be more powerful and would others see them in the same light? It turns out that it could. In fact, both women and men who posed in high-power nonverbal displays experienced increased testosterone, decreased cortisol, and increased feelings of power and tolerance for risk. People posing in low-power poses experienced the exact opposite changes.This 2010 study is significant too, as it suggests by changing body posture, changes your body chemistry too. In other words, if your physiology changes, you change the way you feel, which in turn changes how you think. Confidence, is not simply how you are thinking, but rather how you are embodied. Our minds and bodies are different, but they always go together. That is why it is crucial for professionals to develop a keener sense of what I call their “mind-body interface.” To be posed for real success, we must understand and experience how what goes on in our minds impacts what goes on with our bodies and vice versa.The way you hold your body then, the physical stance or attitude you display, tells others that you are the powerhouse in the room. Better yet, it tells your mind that too. There is a growing body of science to support the idea that simple
physical gestures can impact your mental attitude. For example, a study by Brinol, Petty and Wagner published in the European Journal of Social Psychology examined the ways posture influences our self-confidence between two groups of people. The first group of people were asked to sit up straight, and fill out a mock job application that asked them to list their strengths and weaknesses that would be pertinent to the job. Then they were asked to rate themselves. A second group of applicants were asked to sit slumped over and complete the same application. The applicants who were slumped over had lower self-confidence as expressed by their answers than those who were sitting up straight. So there you have it, just by how you sit, can change your level of self-confidence. Researchers Shubert and Koole, in another study, discovered that a person’s self-esteem was heightened by the simple act of making a fist. As the body adopted a protective stance, the mind felt better able to focus on the problem at hand. Research has also found that putting a pencil in your mouth and turning your lips into a smile, impacts brain chemicals that make you feel good. What does this suggest? Your body attitude has a clear and definite effect on how your mind responds. Try this next time. When you are under pressure during a difficult negotiation at work, sometimes just shifting your body will focus your mind. Make a fist when you are responding to a difficult caller on the phone. Smile when you feel overwhelmed by a project. Put your mind and body in sync the next time you feel vulnerable. You will be surprised at how quickly your body rushes in to cue your mind that it is indeed confident, and ready to take on any of life’s challenges.

By the time I was in my 20’s, I weighed over 120kgs and I had enough of being FAT. I started my TRANSFORMATION from being Fat to Fit and succeeded so well in burning my fat and staying fit that in 2 years’ time my coach encouraged me to compete in an amateur body building competition which I ranked 3rd place in.
So you try other things and attend all sorts of fitness activities like Yoga, Zumba, Spin class, Muay Thai or even Crossfit but you’re still not shedding as much fat as you hoped.
From then on I never looked back. I changed my career path and dedicated my life as a Personal Trainer to help those who struggle with Fat Loss and have I have personally helped hundreds of folks achieve their Fat to Fit Goals!
This leads you to try something extreme - You swear off carbs and promptly put yourself on a juice detox in hopes that this will starve the fat off you! Does the above sound familiar? Ok, I’ll be honest with you. Healthy results don’t come overnight. Everyone is different but if you really want a big overhaul and want to see some major changes in your body you will need to commit to at least 6 months of regularly exercising and maintaining a healthy lifestyle. Some younger folks might be able to change their bodies quicker, but in my experience this is about how long it takes. How do I know? Well, keep reading and I’ll share with you my personal Fat to Fit Story. My name is Stefan Lamping and I am writing this report to help you understand how to you can LOSE FAT and KEEP IT OFF! I am a Former Fatty so I know what I’m talking about! My story in a NUTSHELL: I started off being FAT and self-conscious. I was un-coordinated, due to being FAT, and not good at any sports during my painful teenage years.
I had to learn the hard way. I tried every diet I came across. I worked out for 2-4 hours in the gym everyday and after all that pain and suffering-- I really didn’t lose as much weight as I wanted! I got discouraged time and time again and would stop working out and severe dieting so I would end up getting all the fat I lost back again. This vicious cycle continued till my path crossed this fitness/ body building guru. It was only then that I was able to learn how LOSE FAT and KEEP THE RESULTS! I think he felt bad for me; he could see I was trying to do the best I could. He told me he had watched me come into the gym for 2-3 hours every day for months and he finally decided he needed to help me. We eventually became friends and he showed me some tips and tricks on how to be super effective in the gym and how to eat properly to encourage fat-loss. It’s been more than 10 years since. Since then, I have studied lots, became a Personal Trainer opened up my own gym called Maxfit Bangkok and have focused my time and energy into helping many others reach their fitness goals specifically in the areas of fat loss and muscle building.

So what’ the secret? It’s pretty simple really, and it will come down to 3 main things: It will take work and dedication. You will have to work hard to BURN YOUR OWN FAT! And you will need to follow what I have to share. Here’s my 1, 2, 3 to Losing Fat and Getting Fit: 1. Weight Training Weight training is an activity that is crucial to going from Fat to Fit. If you don’t build enough lean & healthy muscle to keep the fat off, as soon as you stop exercising or go on a holiday, you will get your fat back! Weight training can be done incorrectly however, and you can lift weights all you want, like I did, and still not get results. You must lift weights correctly to build muscle and thereby get stronger. Check out this link for more info: www.maxfitfatloss.com/?p=263 2. Correct Cardio It’s simple really. You burn more fat when you are doing higher intensity activities. But our bodies can’t exert “high intensity” energy for long periods of time—thus High Intensity Interval Training (HIIT) was born. HIIT allows you to exercise at very high intensities for a much longer period of time than steady state cardio.You might be able to run for 60 seconds (or perhaps even a couple of minutes) but you will slow down and start jogging or walking shortly after. Perfect day to day example of how you can implement HIIT into your workouts is to run in place “as fast as you can” for 30secs and then jog in place at a relaxed paced for another 30secs. Do this about 4-8 mins and you’ll already feel your heart rate go up. 10-20mins of HIIT is all you really need for fat-burning cardio! 3. Proper Nutrition Incorporate these 10 Habits into your daily lifestyle and it will solve almost 90% of your health problems: Habit 1: Eat breakfast! Never skip this meal! Habit 2: Have a protein source every meal (3-4 hours). Never eat carbs by themselves. Habit 3: Eat vegetables with every meal Habit 4: Eat veggies and fruits with any meal; “other carbs” only after exercise. Habit 5: Eat healthy fats daily. Habit 6: Minimize beverages with more than 0 calories. Habit 7: Eat whole foods whenever possible. Habit 8: Plan ahead and prepare meals in advance. Habit 9: Eat a variety of good foods as much as possible. Habit 10: Follow these rules 90% of the time. Can you first tell us where you are originally from?
What other hobbies do you have?
I was born and raised in Ratchaburi (an hour drive from Bangkok) and I finished my university degree at Mahidol University International College (major Travel Industry Management). After college I decided to base my life in Phuket, the perfect place to work on my career and enjoy the best lifestyle at the same time.
We only live once ... I will never be shy to try something new! Like... part time columnist, photographer, painter, and more in the future...
Your best title being the very proud mother of two wonderful girls. They are my most proud project. I try my best to bring them each up to be a person with a good heart. Let them appreciate nature, art, sport and realize the value of money. I am trying to achieve the best but we will see the result.
We know now that you are based in Phuket, but why Phuket? I love to be in a place that surrounds me with inspiration, Phuket offers me this! Phuket has many unique spots that are fun to discover, where cool people go to shop, eat and be inspired! This island has so much to offer to us. I have been living here with my family for many years and we would never dream of leaving this island. Once you arrive in Phuket, it will never be your last trip... One of your hobbies is flying which is quite unusual for a lady in Thailand, tell us how this started and why is it now your passion? Something I have acquired from flying… we are never too old to learn something new and try fresh adventures. It certainly gives me a whole new perspective of life. My flying plan is ...to have fun and enjoy the freedom of the sky!
Abstract artist? What is it you actually paint? My work tends to be spontaneous, based on the feelings immediately surrounding me. Painting sort of became a way for me to learn, relate, and formulate a personal perspective. When I paint, I explore my perception of connection with the natural world... colours of the Sea and Sky!" It was difficult to call myself an artist until others gave me the title. People would ask me if I was an artist and I would say no at first.Then, through the years’ others called me an artist and I gradually began to respond with a 'yes I am!'
You have become quite popular with your TV show; you can see by your enthusiasm that you really enjoy it. How did you become involved in this? I guess is started by me getting inspired when I was sharing all my beautiful experiences with my friends.
If tonight you are going to visit your favourite restaurant, where would you be going and why would you choose it? Da Marzio is my top choice... I have so many good memories with friends and family there.
Where is your special place in Phuket? Two Places that start the word with S...leave me anywhere near the SEA or in the SKY ...and I will be a happy girl!
" Sometimes I need to be in a beautiful place to clear my head " It is so important to give yourself that moment ...I talk to myself a lot when I'm sitting alone, I enjoy the silent peacefulness in my mind ... These moments make me think and realise what is important and what’s not!!! ... When your mind is clear ...the creativity side will take over and you will be surprised! I used to aim to enjoy these silent moments once a week but now I spoil myself by ... Having that moment everyday if possible ... Even only half an hour ... I give up with people who will diminish my positive energy ... Well! We all learn from our mistakes ... If we are clever enough --- we just have to remind ourselves not to jump into the same mistake again ...That s all!

Let’s start at the beginning Where are you originally from? Originally from Jersey, NOT New Jersey, I am from the one between UK and France, famous for the Jersey cow!
Your company LBG Le Boutillier Group was started when and what is the main mission of the company? LBG was started back in Singapore when I was 31 and at that stage it was set up to serve my main client at the time as I was delivering onboard security solutions and defensive tactics. I had no idea at the time the company would expand and grow and cover all aspects of corporate security solutions. We now have offices in Bangkok and Singapore and offer services globally.
Is this where your passion for surfing started and do you still surf in Thailand? Absolutely, I came from a surfing family, and my childhood was a combination of sleep, skateboarding and surfing. Actually, the main reason for me moving to Mae Rum Peung beach in Rayong was because that was the closest beach to Bangkok that had surf in the monsoon season. When did you first come over to SE Asia and can you tell us a little about what happened? I first arrived in Thailand when I was 21 as a backpacker. I went straight to Koh Phi Phi as I had met a guy who ran a dive shop and there was the promise of money and an incredible lifestyle. It turned out there was no money but there was certainly an incredible lifestyle and I stayed in Phi Phi for many years. Phi Phi was where my love affair for Thailand begun and I relay some of my best life stories from this period of life in my book. What is your book called and where can our readers find it? The book is called “And Then One Morning” I decided to pull it from shops when I reached 20,000 copies sold and now I distribute the book personally and donate books to organisations and distribute the money to a variety of charities. I originally wrote the book as a cathartic exercise to release some of my demons from the Thailand Tsunami of 2004. As I started writing I realised (partly driven from support from a close friend Dr. Nigel HywellJones) to turn several short accounts of some of the more traumatic experiences of the day into a book. It is an amazing journey to complete a book and often think about book no 2. You seem to have some incredible experience in martial arts, when did this start and where has it taken you? My passion for martial arts like many people started when I saw the TV series “Kung Fu” with David Carradine. I was hooked from that point and it has consumed almost every aspect of my life since. As a journey, martial arts has taken me to start my own business and also to grow as a person. As I have gotten older I have realised martial arts has now become my biggest path to self-growth and the pursuit of self-development.

Yes, I have had a close relationship with many departments of the Royal Thai Police force and still run training to this day. I am now in the process of introducing a new course called the combat intelligent officer to Thailand and the Philippines. This course was the developed by a gentleman called Rodney King a world famous martial artist and life coach. I am hoping this venture between my company and his will be successful in Asia for law enforcement agencies You have a passion and zest for life that is almost infectious where do you get your enthusiasm? Thanks for the compliment, I am very lucky to have been born with a genetic disposition for life, I am always happy and cannot remember a time when I was not. Indian Chief Dark Horse
Because Chrome ain’t gonna get you Home If you turn up at the local Biker Bar on the new Indian Chief Dark Horse, you can expect some questions. The Indian Chief Dark horse is a visually impressive motorcycle that will get you noticed wherever you ride. Introduced this year as a 2016 model, the Dark Horse is soaked in matt-black – Thunder Black Smoke, Indian calls it – with limited chrome. Even the handlebars are black. The visual effect is a muscular let's-hit-the-road bike that shuns those shiny, bar-hopping cruisers. Long, low and blacked out from front to rear, the Indian Chief Dark Horse is a head-turning cruiser with a tinge of menace that forces passers-by to stop and look. The Indian Chief Dark Horse – it’s called the lightest in the Chief range, but still tips the scale at over 350kg, not sure if I’d call that light? Although this is the entry-level bike being offered in the Chief portfolio, the Chief Dark Horse is still fully equipped with keyless ignition, ABS and cruise control as standard for relaxed highway cruising. And the double exhaust system produces a rich exhaust note which has been acoustically engineered to eliminate high pitched sounds. The large V-twin engine is the same Thunder Stroke 111 engine that powers the entire Chief range of motorcycles. The 1811cc V-twin makes a massive 138.9Nm of torque at 2600rpm. That means it’s got enough grunt to keep you amused wherever you ride, and the throbbing thunder of the V-twin will certainly make any bikers heart soar. Design and Styling: Look closely though, and you will begin to notice that the Dark Horse is sleeker and meaner than its larger, chrome-laden brothers and you will love its cruiser appeal. The black paint is suitably complemented by monochrome warbonnet graphics on the fuel tank, seen only on the Dark Horse. And overall, the design works well, particularly the unpolished and raw approach to its finish. It certainly is a handsome and attractive cruiser and is unmistakably Indian. And like the rest of the Chief range, the Dark Horse also retains the classic lines Indian Motorcycles are identified with, from the time this iconic brand started making motorcycles way back in 1901. Performance and Handling: Touch the starter, no key needed if the key fob is in your pocket and the fuel-injected Thunder Stroke 111 rumbles to life in a familiar V-twin growl. The engine has got perfect torque distribution across the rev range and it’s evident on the Dark Horse as well. On a straight line, the Dark Horse has got enough power to get any bikers adrenaline moving. And with a meaty midrange which means effortless overtaking on the highway without the need for downshifting. A closed-loop fuel injection system provides instant acceleration and shifting is easy and precise through the six-speed transmission. The standard ABS uses 300mm rotors front and rear to reduce speed with little effort. Cruise control is easy to engage and disable. Motorcycle manufacturer Polaris Industries purchased Indian in 2011. Indian motorcycles are manufactured in Spirit Lake, Iowa, with engineering at the Polaris centre in Wyoming, Minn. In sum, the Indian Chief Dark Horse is a visually arresting, comfortable ride for both short distances and long cruises. lifestylecoast drive The Nissan GT-R was first introduced in 2007, lovingly named Godzilla for its beast performance the GT-R has always been regarded as one of the world's best handling machines and for 2017 Nissan have tightened up the Godzilla once again, boosting the power to 565 HP and redesigning the cabin for a more superior feel. The GT-R's award-winning 3.8-liter V6 24-valve twin-turbocharged engine – each unit handcrafted by its own Takumi technician – now boosts 565 horsepower at 6800 rpm and 467 lb-ft of torque, that’s an increase of 20 HP and 4 lb-ft, respectively, from the 2016 model. The torque line is now smoother for enhanced ondemand acceleration, and the new Titanium exhaust system comes with Active Noise Cancellation and Active Sound Enhancement technologies. The aggressive GT-R engine sound has never sounded better. Acoustic glass and special sound dampening inside the cabin should also help reduce wind and road noise. The increases, which are the result of individual ignition-timing control of the cylinders and extra boost from the turbochargers, allow the new GT-R to possess superior acceleration in the mid- to high-ranges (3200 rpm and above). It comes mated to a thoroughly refined 6-speed dualclutch transmission that features smoother shifts and less noise. The improvements for 2017 can be divided into five key areas: driving performance, exterior design, interior refinement, ride comfort and advanced technology. Highlighting the 2017 GT-R’s exterior redesign is a more aggressive cast front fascia with a rocking new V-motion grille, which has a sexy matt chrome finish offering improved engine cooling as well as a deeper front line that helps keep that nose firmly bolted onto the road. The redesigned bonnet gains character lines that add strength, aiding high-speed stability while more pronounced side sills do a better job of channeling airflow around the vehicle.To further elevate its profile, the 2017 GT-R also will be available in a new brilliant Blaze Metallic orange. Inside, there's a Nappa leather-wrapped instrument panel and modified front seat designs for enhanced comfort. Furthermore, the paddle shifters are now mounted on the steering wheel itself, which allows drivers to make mid-turn gear changes without having to remove their hands from the wheel. Pushing performance boundaries to the limit Nissan have produced a car even more potent than before. There are few challengers to the crown of cool more deserving than the Italians. #PhuketSailing A record-setting 2016 Cape Panwa Hotel Phuket Raceweek Phuket recently welcomed more than 500 sailors and friends from around the world for one of the island's largest sailing events, the award-winning Cape Panwa Hotel Phuket Raceweek. A record fleet of 47 yachts enjoyed four days of exciting competition off Phuket's southeast coast with more than 25 nationalities competing for the coveted class titles. With skippers and crew from as far a field as the UK, USA, South Africa, Australia and New Zealand, as well as many from the Asian region – Singapore, Malaysia, Hong Kong, the Philippines – and of course Thailand, the 13th Cape Panwa Hotel Phuket Raceweek was one of the largest on record.

Leading the charge were the grand prix racing yachts in IRC Racing I, with regional sailing stars Ray Roberts (AUS) and Peter Ahern (AUS) going head-to-head in their near identical TP52 racing yachts. The forty-footers in IRC Racing II saw some of the closest racing while in IRC Racing III it was a competition between international and local crews.

Across the other classes racing was equally close. The new onedesign Platu class saw a multinational mix compete for their inaugural class title while the 19 multihulls were split over three classes with two champions defending their titles successfully. Home to three of Thailand's “Big Five” international regattas, Phuket is Thailand's regatta hub and with Phuket Raceweek held in the low season and increasing numbers of international sailors flying in to charter a yacht and race, Raceweek brings a welcomed boost to the island's tourism industry.

The 2106 Cape Panwa Hotel Phuket Raceweek will go down in history not only for its record fleet and number of sailors, but also for being one of the toughest yet. And after four days of racing the overall standings showed Australian skippers and crew underscoring their nautical dominance, winning four out of the eight classes. As well as international-standard race management on-the-water, Phuket Raceweek is famous for its onshore social programme – considered to be one of the best around. Four lavish beachside parties culminated in a spectacular Gala Dinner on the final evening where the overall series winners were celebrated.

If you allow your artistic mind to wander a bit with your creations, you would supersede your most basic expectations of your abilities. Utilising the sophisticated monochrome palette to enhance a space is quite fun. Adding textures to your creations of framed images can bring an almost theatrical finish to your work, without being too overwhelming. Black and white colour scheme designs, are already quite bold. A great way to really make use of this natural quality, is to scale it up when visualising your concept. A bit of science knowledge will tell you that the colour white reflects 80% of light and black a mere 5%. Using large pieces of decorative ornaments in the more dramatic colour black, can really pack a visual punch on a white backdrop. In the Chinese philosophy of yin and yang, opposite contrary forces like the colours black and white are interconnected and complimentary. Black and white designs together work to form a dynamic system in which the whole creation is greater than the separate colour elements. And so just like shadow cannot exist without light, this is also true to the contrasting colours black and white. Driving a smart and powerful look is easily accomplished by strategically placing decorative items like bowls, wall hangings, scatter pillows and soft furnishings in a room. Introducing a mixture of sharp lines and artfully placed pieces you will keep the entire design element effortlessly executed & strong. 72

GFAB Architects have gone a long way to create and build this sustainable villa development incorporating nature in all aspects. Indigenous rock from the site was harvested and crafted as a wall cladding for all villas and natural rock outcrops, native trees and vegetation were preserved and villas designed around these natural features. GFAB built substantial roof overhangs on all open air spaces to improve shade and air circulation thus reducing the dependency on air conditioning. Coco Brun’s prints taking the fashion world by storm‌

fashionwear Today big fashion labels secretly rely on stunning illustrations to never let the dry spell fall upon their good fortune. They seek to collaborate with the best creative minds who really can add zing to their product line so it sells well in the international market and continues to appeal to the fashion savvy consumers. And the one individual turning heads with her sketches for quite some time now is the renowned French designer and illustrator Coco Brun. In an exclusive interview with One Coast, we sat down with her to find out what led her to create eye-catching prints, what she loves about her work and much more. Coco’s connection with graphics wasn’t in any way inadvertent. From the very beginning, she delved herself into it leading her to study fine arts including ceramic objects and graphic design at the Duperré School for five years in Paris. More or less, this was all unrelated to fashion. However, after finishing her studies, she worked as a communication consultant for a number of leading fashion designers. And in 2004, after graduating she moved to London to set up her company, Inoui, a communication agency. Then in 2009, she founded “Forget Me Not”, Paris and London-based pattern design studio and has been its creative head ever since and designing magnificent collections of digital prints based on her own patterns, illustrations and compositions. “With these various experiences, I’ve had the chance to mix fashion, design and art which is why I’m naturally inclined to apply my pattern on different media and supports,” she says. To start with, Coco’s magic has already been cast on scarves, turbans, beachwear, and prêt à porter across a wide spectrum. But the journey towards it all began unexpectedly. “Initially, I went about producing illustrations as a favor to my friends working in the fashion industry who needed them for look books, magazines and websites. I assume it’s for this reason I’ve started to create more fashion images,” she says. “On the trail of those, I began to receive tremendous media attention leading me to create imagery for publications spanning both the independent and mainstream fashion press such as Vogue, Elle, Nylon, Dazed and Confused, ID, Spur, Marie Claire, Muse and many more.” When Baccarat sought her service, for this she made up her mind to settle on something utterly different from her own style.What then! Coco quickly grabbed the theme of Art Deco and in so doing drew inspiration from the first ring drawn by Mr. Chevalier. “I just love what Art Deco prints bring to the table and it was the first time I got the chance to work on this kind of art direction which resulted in the making of extremely graphic and elegant scarves,” she says. The other collaboration that she still feels pleased about was with one of the popular US swimwear brands “Seilenna” on the collection of high-end bathing suits. “It’s completely modern, entirely made in France and Italy, and printed in Italy. I designed each print. Of course I need to adapt them,” she says. “I make big prints and I quite like large elements with a lot of details. For me it’s something completely new. I learned a lot in the first season and I’m sure the second one will be even more beautiful.”

While making a design on scarves, she believes it’s important to have all of the elements together in one drawing. She then scans it and makes a final version in Photoshop. “When wrapped around the neck, a print artwork becomes completely different. So when you see someone wearing your design, it’s easily re-imagined, and this is what I find terribly fun,” Coco says. “Honestly it’s always a surprise when I receive the prints on the towels and other objects, so it’s very interesting to see how others will use them. That’s what’s so interesting about working with these materials.”

Even Coco realizes the scarves are a versatile fashion accessory that can be reinvented and worn in so many different ways. Since Coco has made waves in the interior and design worlds as well, her focus is to be collaborating more and more with the interior and pure design industries. “I’ve done already quite a few collaborations with packaging and I would love to make prints for products like rugs or ceramics. It’s definitely the next big step for me,” she says. She has numerous sources of inspiration taken from the worlds of art, cinema, design and literature. “I don’t necessarily respond to a specific story. I usually have a theme or general narrative framework in mind and then I see where inspiration and serendipity take me after chasing various ideas through a maze of images.” Also nature is passionately revealed in her work because it somehow touches her inner consciousness. That’s why she uses its elements a lot. “I think that nature is something mysterious that needs to be protected. It’s truly magical because it’s wild. There is an entire universe that’s very mystical and magical I’m interested in all of it…all that is symbolic, so those are what I use to create my designs,” she says. Her work has been recognized and published by high-profile publications like Taschen,Victionary and Gestalten. And Coco has every reason to love everything about what she does as she finds it relaxing. She loves mixing different techniques. “I draw everything by hand and use different techniques - watercolor, pencil, and acrylic to draw all elements of my compositions by hand after which I make the final montage in Photoshop,” she says. “Drawing is always a pleasure. I love artisanal work and all that is done by hand, and that’s why I’m happy to be in Paris (after traveling through Japan, Asia and the US) and to work in Italy, where they draw on a very ancient knowledge that I can learn from.” It’s just a matter of time before we see Coco making her own Arabic patterns and use them in her designs. “I’ve always loved the great Arabic ornamental tradition. It’s definitely on my mind.” While she denies having any particular style statement for herself, she is fond of accessories a lot. “You can rock even in a simple dress if it’s best accented with amazing accessories. I think shoes, bag and scarf are the key items,” Coco says. www.cocopit.biz

Since it’s a ‘fulfilling moment’ of her life in every way, there can be no room whatsoever for maddening second thoughts to crop up (especially regarding the label), which will only spoil the overall celebratory atmosphere. And for any bride-to-be, going through this sort of crisis is something she will never put up with. Fret not is the answer to it all! When Galia Lahav, world-renowned haute couture designer is here, there is no need to feel fidgety and lost at all. Frankly speaking, she is the ‘guardian angel’ for women getting hitched across the globe because of the marvelous bridal gowns she creates and they instantly fall in love with the lively designs. In an exclusive interview with One Coast, we sit down with her to find out what motivated her to become a bridal and evening wear designer, what it means to her who was later joined by her home designer Sharon Sever. A self-taught designer, she was always drawn to the universe of haute couture and she knew all along that the best way to manifest it is through bridal gowns and evening wear. “Designing bridal pieces is my biggest passion that I think of every second,” she says. “This is the soul of my life.” It’s a mix-up of both originality and innovative style that strongly rules the brand philosophy and this is what makes it so highend. And the intervening process starts from the design first and follows with the quality of fabric, handwork and the finished product. “Each dress reflects how passionate we are about our work in order to translate the dream into reality. It all comes down to getting the idea right,” Sharon says. Another important aspect of her extraordinary work involves visualizing a woman’s figure to design these tempting gowns for which she is always in the limelight. “It’s crucial, as we specialize mainly in custom-made sort of thing. Therefore, the client always inspires us,” Galia says. Talking about her definition of the perfect bride who will totally do justice to her glorious creations, Galia says she should be a fashionable woman with an exquisite sense of style - someone who is open-minded as well as bold enough to wear a creation that might be risky at times. In terms of inspirations that serve her palate remarkably, Galia gets all of that from great art (such as that of the great Antonio Canova who had extreme details and lots of passion and motion in his marble sculptures which she believes are simply breathtaking), music (especially classic), books, her next door neighbors, humanity and sexuality. They use only luxe fabrics in their collections. In fact, this is derived in a particular way as Galia explains, “All fabrics used are exclusively made for us. We specialize in body contouring and extremely fitted silhouettes that we achieve by using special blends made for us, which allows us to provide both beauty and comfort to the highest degree.”

And because we design fashionable attire for brides, we have to be up-to-date every time,” Sharon says.

Galia Lahav That there is this high level of interest from women in Galia's wonderful dresses, it is proof that most brides prefer bespoke couture as each wedding gown is a personal thing for them. Sri Lanka Teardrop Paradise
One Coast Magazine explores the rolling plantations, spiritual sights and rugged coastline of the Pearl of the Indian Ocean. It’s difficult to comprehend how much an island as small as Sri Lanka can offer; that it’s possible for such a landmass to bestow a diversity of riches so vast. From its eight UNESCO World Heritage Sites, looming granite Buddha’s, endless verdant tea plantations rainforests and parched lowlands; 2000 years of cultural heritage encircled by a palm fringed coastline and crashing waves, this resplendent island has stolen our hearts in a way I had forgotten was possible. Ceylon Tea Trails One of the most memorable stops on our tour was visiting Tea Trails, the world’s first bungalow resort – although I feel that simply calling these five immaculately restored colonial era tea planters' ‘bungalows’ does not do them justice. As Sri Lanka’s first Relais & Chateaux resort, Tea Trails had high standards to achieve, but thankfully for its guests it has exceeded beyond measure. The picturesque town of Hatton in the verdant Ceylon tea region where they lie, borders the World Heritage Central Highlands and inspires from arrival. A slash of mirrored silver slices through the green only disturbed by the slow brush of an oar on the lake or the occasional seaplane. The five uniquely-styled bungalows are connected with scenic walking trails offering hours of daily exploration. Breakfast in Dunkeld; taking in the early morning light over this breathtaking vista from the newest and most striking bungalow. Wander to the high colonial Tientsin, one of the first planter’s residences to be built in Ceylon in 1888 and famed for its spotlessly preserved rose gardens brimming with British flowers. Next it’s onto the stately Summerville, which stands sentinel above the valley, for your custom prepared lunch. It's all about the kids. As the Founder of the charity 'Hands Across the Water', in the aftermath of the 2004 Boxing Day Tsunami, I set out to build a home for the kids in an area of Thailand where I was working. These kids had lost their parents and for a number of them their extended family as well. For me it very much as all about the kids. When I tell stories of the kids, those in need, those without options, it invokes emotion, compassion and a desire amongst many to help. It’s for the kids right, how could you not want to help. Attracting the charity dollar from supporters in what is a very busy and crowded market is not easy, but there’s always seems to be an increased sense of compassion and good-will when what you are doing is raising money and support for those who, through no fault of their own, find themselves in need and often that need is the desperate kind. But the more time I spend working in this area and it’s now eleven years since I started Hands Across the Water, to support those thirty-two kids who were living in a tent, the more I experience the need of others, and it’s no longer all about the kids. 102

Ask yourself, who in society are among those who have the quietest voice and attract the least attention often suffering in silence, behind closed doors? If you said it was the elderly or the disabled, you wouldn’t be far off the mark. But what about when the elderly are disabled, their voice is seldom heard and there doesn’t seem to be too many charities out there making a lot of noise and working to support this vulnerable group within society. And why is that? Do we find as a society it’s more attractive to support the young and innocent, is it because they have their lives ahead of them, is it because they couldn’t have contributed to their lot in life and therefore are more deserving of help? The need for help of this often forgotten group who live without a real voice becomes desperately sad when they live within a society that doesn’t have the support and aged pension that is offered to our senior citizens here in Australia. We might not have the model right here in Australia, but health care, housing and a modest fortnightly income is provided for our seniors.
ecohelping hands Working in the Khlong Toei slums of Bangkok over the last six years as part of the expanded reach of 'Hands Across the Water', I have become increasingly aware of the silent suffering of those who are elderly and suffering from a debilitating disability. For some they deal with a condition that has been with them all their lives, others it might be a result of an accident, disease or stroke that has left them impaired in some way. The impairment for many and their advancing age means they can’t compete for the jobs that exists. How then do they live when there is no government support coming their way? I spent 22 years working as a forensic practitioner with the New South Wales Police attending scenes of crime collecting forensic evidence. I investigated horrific scenes of death dealing with hundreds of victims after the Bali Bombings and then the thousands of bodies after the Boxing Day Tsunami. Seeing those decomposing bodies lying in the temple at Wat Yan Yao will stay with me forever, there are sights that you can’t un see. But it’s not the hundreds of scenes of death that I investigated that plays on my mind, it’s the living conditions of the elderly in the slums of Bangkok. There is obscene wealth in Thailand but as you may suspect it is held by an incredibly small minority. The lack of equal distribution of that wealth is not confined to Thailand and in developing countries the distance between the rich and poor is often stark. When I walk through the slums of Khlong Toei, I am reminded of the remarkable resilience that is shown by those who live in that environment. Some of the stories that I hear, the sights that I see and the people that I meet, they stay with me. Long after I leave the slums and long after I return to the comfort and affluence that many of us share living in Australia. The work that we do to support the kids that I first met in 2005, continues. Our support has grown and we now provide a safe environment for 286 kids each night, across seven different homes that we have built or run in Thailand. We have 28 of our older kids now studying at university and this level of support will bring about change to their lives and hopefully their children in due course. Education creates the pathway for sustained change, that is clear. But what of the elderly and the elderly who live with a disability in the slums of Khong Toei? Education is not the answer for them. They are either due to age, circumstances, their disability or limited opportunities condemned to live the life that many have been living for years and in some case decades. The story became very real for me when I met Mr and Mrs Bai. Mr Bai was a man who had the scars and body of someone who had worked a long hard life. He had wispy grey hair, a tanned body and strong arms reflecting someone who had lived a life of hard physical labour performed in the outdoors. He was now in his late seventies and that strength was starting to diminish. His days, as they had been for the last ten years were spent caring for his wife, who was paralysed from a stroke and is fed four times a day through a nose tube. Their only income is from their physically disabled forty-year-old son who works at night, when work is available earning just over ten dollars a night.
Walking into their home for the first time, it was a sight that will stay with me forever, and I’d suggest that is a good thing. It serves as constant reminder of why I do what I do. The house was seven metres by six metres, that wasn’t the living area or bedroom, that was the entire house. The timber boards that served as the walls had gaps that you could pass your hand through and the house, as are all those in the slums are built on reclaimed land of the port authority of Bangkok, which is fine until it rains, which it does often in Thailand. The rains cause the water level to rise, which floods their home. But for Mr and Mrs Bai, we’ve manage to change things for them. I led a team into the slums last year and in a ridiculously short period of time we were able to relocate the family into a temporary home, empty the house of their possessions and then demolish the home. All of this took a couple of hours and by lunch time that same day local builders that we had contracted were in place and sinking concrete posts into the ground which would be the foundations for their new home. Forty-three days after meeting Mr Bai, he moved into a new home that couldn’t have been more different than what he had spent the last thirty years living in. The teams that I take into the slums to support families like Mr Bai are not builders and we’re not confused by our abilities and ambitions. We fund the building of the new home and employ local builders to do the building work so importantly it won’t fall down and secondly the benefit of the employment remains in the community. The benefit for those who join me in the work in the slums is hard to measure. It leaves an impression on your soul. You see sights that you can’t un see, and as I said that is a good thing. The people you get to share the experience with, the perspective they have on life, centres you in a way that is hard to imagine. Working with the elderly in the slums of Bangkok is one of, if not the most rewarding experiences I have had, maybe it’s because one day in the not too distant future we will all be beyond our working careers and it would be nice to think if we didn't have the capacity to care for ourselves that someone would be there to lend a hand. So, what started out as been all about the kids, what I’ve come to realise is that it doesn’t necessarily to have to be so.

Luxhammar Thermal Modification Technology for Wood Thermal Treatment of Wood Supports Sustainable Development As building products, systems and technologies evolve, one material remains in demand: wood. Wood costs less – economically and environmentally – and it’s one of the most beautiful, versatile, durable and renewable materials available. But the most sought after and durable in hardness and quality are the tropical hard woods which is also the reason behind illegal logging and the decline in our beautiful rainforests around the world. But the Finnish company Luxhammer led by Mr Tero Lallukka have come up with an amazing solution and one that has already been credited with the Challengers Award in Atlanta USA. Luxhammar Thermal Modification Process is an environmentally-friendly method of wood treatment which uses normal local soft woods and produces a durable, stable hard wood and one protected against wood decay without addition of chemicals. The process takes place in an air tight stainless steel kiln chamber, where piled timber on sticks is treated with high temperature up to 250°C (482 °F). The internal structure of the wood 104

is changing under the influence of these high temperatures and moisture. During Luxhammar Treatment sugars in the wood are being changed into a substance which cannot be eaten by fungus and moulds or digested by beetles etc. At the same time natural protective agents in the wood spread out through the material, and wood shrinkage and swelling are reduced. The whole Luxhammar Process takes approximately 24 hours depending on the dimension of the timber and wood species. Luxhammar Thermal Modification Process has the following 5 stages. 1. Initial heating The temperature inside the kiln increases up to 100° C (212 °F) . 2. Preconditioning and drying All the stress of wood will be relaxed and the wood will be prepared for the heat-treatment stage. When the raw material is green, it can be dried as well during the preconditioning phase
3. Thermal Modification The actual heat-treatment takes place at a high temperature of up to 250°C (482 °F), just for few hours. 4. Conditioning During this time the stress in the wood caused by heat-treatment will be relaxed and right level of moisture will be added to the wood to ensure proper usability in further processing of the wood material. 5. Cooling During the last stage the wood is carefully cooled down before it can be safely and smoothly removed from the kiln. Luxhammar Thermal Modification Process is innovative contribution to the industry as it allows getting very high durability and dimensional stability quality wood without adding chemicals. Moreover, during the treatment process wood acquires darker color which makes it visually attractive. Pad Thai Malagor Stir Fried Papaya with Pad Thai Sauce INGREDIENTS: 150g julienne of green papaya 2 tbsp cooking oil 20g sliced shallot 50g crispy pork belly 20g fried firm tofu (diced) 1 large egg 30g bean sprouts 30g Chinese chives, cut into 2-inch lengths 10g crushed peanuts 10ml fish sauce 10g sugar 10ml tamarind juice 5g chili powder (add more to personal taste) 4 lime wedges (to taste) PREPARATION - Heat wok on high heat and add the oil. As soon as oil is heated, add shallots and stir until the aromas are released. - Add crispy pork and tofu pieces and continue stirring; add the papaya and stir continuously. Crack the egg into the wok and cook for 30 seconds. - Stir the egg to combine well with other ingredients and add the Pad Thai seasoning sauce. - Add the bean sprouts and chives and continue stirring. - As soon as the bean sprouts are cooked, stir-in the crushed peanuts. - Turn off the heat and serve immediately with fresh lime wedges.
Satay Talay Seafood Satay INGREDIENTS: Fresh seafood: 1 tiger prawn 1 scallop 1 mussel 2 squid rings Seasoning: 5g pepper 5g sugar 5g turmeric powder 3g salt 20ml coconut milk 10ml soya sauce PREPARATION - Mix the seasoning together in a bowl to create the marinade. - Marinate seafood for 30 minutes. - Char-grill on a medium heat until cooked then serve with satay sauce and pickles.

So, after two seasons of the Shelby clan looking for power – all they crave now is respect. In seasons 1 and 2; Tommy Shelby and his family gang beat, bomb and burn their way to the top of the food chain. Now they’re rich, dangerous and have even made it into London. You could even say they are trying to go the way of Downton Abby. Of course there is still plenty of sex, treachery, violence and respect to be dished out. Tommy is still fierce. He goes to war against the Italian gangs and the Russian Empire across the sea and it doesn’t seem being a dad has calmed him down in any way shape or form.
Solomon’s (definitely steals the series once again) and Grace. The new additions are excellent also including Father John Hughes and Russian Duchess Tatiana. One of the best things of the series is the use of music. With a soundtrack including Leonard Cohen, Radiohead, Arctic Monkeys and David Bowie (who was big fan of the series). It’s unexpected and it totally works considering this is a drama set in the 1920’s. The acting continues to be exceptional and very intense. Every character is played to perfection with special mentions to Cillian Murphy and the always’s excellent Tom Hardy. Amazing, intense and I cannot wait for the next season.

The series is based loosely on the Australian hit movie of 2010 and has been remade now based in California rather than Australia. The story centers around "J" losing his mother to a drug overdose. He contacts his grandmother who he hasn't talked to in a decade, then she picks him up and he goes to stay with her. It quickly becomes apparent that they are no ordinary family. The series then becomes a vehicle to see if he gets sucked into the life of crime with his grandmother and uncles, or if he manages to stay on a straight path.
This family is hard to watch, they are so messed up. But for some strange reason, they do not depress you. The producers did a great job with this story and not going too far with the disturbing scenes and plot lines. Just enough drama to keep you interested but not so much that you feel gross afterwards. I think the actors are what carry this show with all doing a great job and not playing it OTT with some of the storylines. It's twisted, a little strange at times, but it keeps me watching for more. If you’re a fan of Sons of Anarchy and the original Point Break movie, this series is a must for you. As I am a fan of both of these.

just out THE SHALLOWS Blake Lively
The plot of the movie is quite simple. Lively stars as Nancy, a surfer who finds herself attacked by a shark and left stranded on a rock about 200 yards from the shore. The movie then descends into B movie territory basically becoming a battle of wits between Nancy and the shark basically becoming a solo vehicle for Lively. The Shallows is beautiful to watch. The cinematography is quite stunning, and when night falls or when we venture into the shallows, it really gets you caught up in the tension and danger of the scene. The Shallows manages to keep your attention throughout the movie and it is very rare that you get bored.
I will admit some of the dialogue is questionable sometimes but I expected a lot more downsides to the film to be honest. The shark has been created using CGI but it looks very convincing with one scene involving a GoPro camera that did make me look away from screen.. So the effects do have to be applauded. Overall you could do a lot worse than go see The Shallows. If I am honest I was expecting something pretty awful but was happily surprised at the pacing and tension of the film.
Considering Nancy is stuck on a rock for most of the movie I never once looked at my watch. This is testament to the good pacing of the movie.

THE superhero genre is a everywhere at the moment and it takes a lot to stand out these days. Suicide Squad, although the premise is different feels a bit rushed. The highly anticipated Suicide Squad, a sort of bad guys answer to The Avengers, attempts to introduce a collection of villains, bring them together, establish relationships and place them in a fight against a formidable foe in the course of just two hours and 10 minutes. While Jared Leto is new to the role of The Joker, we do know his character. We have also already met Ben Affleck's Batman. But both of these men don't get that much screen time in Suicide Squad. So we are left with a bunch of new characters to get to know and a strange plot.
The US government is looking for a way to combat any future non human threats. A bunch of dangerous criminals, some with special abilities, are apparently the answer -The Suicide Squad. The being they're called in to defeat is not very well explained, and to enjoy the film you really need to put logic aside and just go with it. The biggest missed opportunity of the film is its rating. With a bunch of baddies, I think it would have been a much funnier film if it had gone down the R-rated trail blazed by Deadpool earlier this year. The film feels like it's trying to be edgier and darker than the traditional superhero romps but doesn’t quite execute. Overall Suicide Squad is beautifully shot, the soundtrack is great and there are some great moments but feels like its missing its spark.

De Ja Moon A HIP Coffee Shop & Boutique Hotel in Chiangmai Walking along Nimmanheamin road is a must for everyone visiting Chiangmai. There're so many HIP coffee shops, restaurants, and hotels, you can walk along this road every day trying different coffee and foods. The variety of shops here will never bore you as each of them has its own unique tastes and styles. Today I visited De Ja Moon on Nimmanhemin Soi 17. This place stopped me in my tracks looking like a dark castle and it made me feel like I was under its spell. I couldn't resist to push open the glass door that was colourfully painted with hand drawings telling the story of the place itself. Chatting with the barista inside, "De Ja Moon" is a pun from "Déjà vu", which is a French word referring to a strong feeling that we have been here before or what is happening now has already happened in the past, but we can't explain exactly when and how. I guess almost everyone has had this feeling at some time. It's a sensation of familiarity. Sometimes, it happens to a person we first meet, but we feel like we met before and have already done what we're doing together now. After all, it could be a romantic feeling. So, the concept of De Ja Moon is "When memories coincide with a serene atmosphere the night of the passionate Moon has begun." To further romanticize the place, the word "Moon" and the moon symbols appear in the name of De Ja Moon, as well as all of the rooms and logo. 112

Photos and words by Jessi Cotterill De Ja Moon is a 3 story shop house. The first floor is a coffee shop, and the 2nd and 3rd floor are open as a hotel with 5 rooms altogether. Each room is designed individually, but all have Thai names related to the moon with a moon symbol in every room. The coffee shop is on the first floor and has just officially opened on July 15, 2016. Here they have great coffee and smoothies, and a variety of hot and cold drinks. The food is mostly quickly served from the ala carte menu. The prices are so reasonable and very friendly for students and digital nomads who are a big part of the population in Chiangmai, especially on Nimmanheamin road. My favourite drink here today is Green Monster; a mint smoothie with Oreos. It certainly refreshed and calmed me down after having black pasta with spicy Chiangmai sausages for lunch.The pasta mixed with local sausages is such a good combination of east meets west style of dish. The spiciness and the aroma of the herbs from the sausages blend in well with the pasta without any need of extra ingredients. I highly recommend this dish if you come here.
There're still many more places to explore on Nimmanheamin road. Here you can enjoy lunch in one place, then easily move to another for afternoon coffee, and end the night with some drinks in a local little bar at the corner of the road. When tomorrow comes you can wake up early to a getaway to the outskirts of the city for mountainous and green panoramic views. If you're the one who enjoys the slow life, Chiangmai is your best choice. So this afternoon, I'll be hanging around at De Ja Moon a bit longer for my espresso vanilla ice cream. Maybe the sweet bitterness from this dessert will give me an idea of the next place to visit that will enchantingly put me under its spell.
