local lingo Cruizin’, or cruisin’, is one of the most popular, highly used slang heard frequently throughout Hawai‘i. Mainlanders might think it means driving down a street as a recreational, social activity, but here, it’s the one word that pretty much sums up the laidback vibe here in the islands. Taken from the word “cruising,” to cruise means to have no stress, no worries, and nothing to do, but hang out. When you are cruizin' in the islands, you are as far from the day-to-day hectic lifestyle as you can get. You are without an agenda and free to live in the moment and just go with the flow—unplugged! While on vacation, kick up your feet and do as the locals—be cruizin’.

twilight hunter Short legs and an even shorter neck give the ‘auku‘u, or black-crowned night heron, a laidback but regal look. However, this demeanor is misleading, for there is nothing relaxed about the way these water-loving species attack their prey. When hunting, the heron waits patiently motionless at water’s edge until an unsuspecting fish, frog, mouse, insect or small bird comes by and then snatches the prey quickly with its long sharp beak. Despite its name, the night heron also likes to hunt early morning as well as dusk, and spends its time in aquatic habitats from mountain streams to ponds and the shoreline. Since much of its wetland habitat has been lost, ‘auku‘u are often seen hunting in golf course ponds, fish farms and even resort ponds awaiting the arrival of its next meal.

gentle giant If you are unfamiliar with a whale shark, you might shudder at the thought of a colossal shark possibly lurking nearby—but, fear not. Fortunately for swimmers, this slow-moving, gentle giant won’t bite. The whale shark is a filter feeding shark and not an uncommon creature to encounter in the warm tropical waters surrounding the Hawaiian Islands. The species, believed to have originated approximately 60 million years ago, is not a cetacean, so the “whale” part of its title is a bit of a misnomer. Instead, it is the sole member of the genus Rhincodon. This shark, however, is the biggest “fish” in the sea, and has been known to reach over 40 feet long and weigh in around 47,000 lbs. The whale shark poses little threat to humans with a diet consisting primarily of plankton. If you are lucky enough to spot a whale shark swimming lazily in the ocean with its giant mouth open wide, don’t panic—just keep your distance, and enjoy the show.

crunchy or smooth When hiking, you may notice two very distinct types of terrain made of lava. ‘A‘ā is the name given to rough, crunchy broken lava by the ancient Hawaiians who most likely said just that, “ah-ah,” as they walked over the sharp rocks barefoot making travel difficult and slow. ‘A‘ā is basaltic lava made of busted lava blocks called clinker characterized by a jagged and abrasive surface. In contrast, pāhoehoe is the smooth, ribbon-y type of lava that is unbroken. Both are found in abundance on the Big Island from Hawai‘i Volcanoes National Park to the many hiking trails that lead to hidden beaches. You can also see both types of lava used in building traditional rock walls at homes, resorts and shopping centers throughout the island.

a shore thing Skimboarding is a fun watersport to enjoy a delightful day at the beach that doesn’t require perfect waves to surf. Skimboarders begin by standing about 20-feet back from the shoreline, and then run toward a wave holding their skimboard. Once they hit the wet sand, the board is dropped and the skimboarder will jump onto the board and skim along the waves with the intention of making a smooth transition into the ocean. After banking off the incoming wave, the skimboarder will ride the wave back to shore and do it all over again. Maneuvers and tricks can be incorporated while skimming across the water’s surface, making for an enjoyable watersport for all ages and skill levels. It’s a bit tricky to get a hang of at the beginning and timing is important, especially if the board gets stuck on the wet sand and you go flying face first. Fractures and dislocations of the lower limbs are not uncommon so play safe.

night blooms A rose is a rose is a rose, but a tuberose, to clarify all misconceptions, is not. The tuberose (Polianthes tuberosa) is a native flowering plant to Central America and is named for the shape of its rootstock. A member of the agave family, the tuberose flower is recognized by the heady effect it has on the olfactory senses. While most flowers tend to lose their scent after being picked, the night-blooming tuberose has a strong, exotic and sweet fragrance that continues to produce itself. The slender stems contain clusters of waxy, white funnel-shaped blossoms and grow extremely well in warm climates—especially in Hawai‘i. Tuberose is used in tropical arrangements and are favored by many lei makers. Various beauty products, including perfumes, oils and lotions, are made from the flower’s rich floral scent. Of all the captivating fragrances that may linger in your memories, the tuberose may very well be one that will capture Hawai‘i.

LAY OF THE ISLAND

The land you're standing on is very special. For millions of years, forces of nature have worked to create and shape these very islands, as each one slowly, but surely, rose from the sea. Welcome to the island of Hawai‘i, also known as the Big Island, the newest and youngest of the Hawaiian Islands. Here, you can witness many facets of awe and wonder as you explore valleys carved eons ago or newly formed coastlines, all waiting for you to discover their immense beauty, their historical and cultural importance, and their relevancy to our island’s vibrant future. Bigger than all the other Hawaiian Islands combined, the Big Island is an island of contrasts and contradictions. Maunakea looms as our tallest volcano at 13,803 feet, but extends another 19,700 feet below sea level making it the tallest mountain in the world when measured from the base. (Mount Everest is the highest mountain.) Yet, only a hundred feet or so shorter, Mauna Loa is considered the world’s largest volcano, both in terms of mass and volume. Kīlauea, which until recently was one of the world’s most active volcanoes, is not even the youngest. Right off the southeast coast of the Big Island lies Lō‘ihi Seamount, a submarine volcano slowly growing larger, and poised to make its emergence above the sea surface in only a mere hundred thousand years, give or take. Whatever type of adventure you’re looking for, the Big Island delivers in spades. If you’re looking to step foot into some of the world’s best and most colorful beaches, with your choice of white at Hāpuna Beach State Park or Manini‘ōwali Bay (also known as Kua Bay), black at Punalu‘u, grey or green sands at Papakōlea, you’ve come to the right place. If you’d rather explore massive peaks, dense jungle rainforests, subterranean lava tubes

28

(Thurston Lava Tube in Hawai‘i Volcanoes National Park), dry, arid deserts, and almost all types of landscapes in between, the Big Island has it. Thrill-seekers might prefer catching a big wave or soar high above the trees on a zipline over stunning waterfalls. For adventurers who prefer less adrenaline inducing activities, gently float down an old cane field irrigation ditch in a tube in Hāwī. And nature lovers can look for sightings of native birds in a peaceful forest. Whatever you’re seeking, whether its relaxation and respite on a gorgeous beach or unforgettable adventure, the Big Island is an extraordinary playground for all. Everything about the Hawaiian culture, traditions, history, language, food and, of course, genuine aloha is truly what makes this place so singular. Learning about King Kamehameha, the great unifier of all the Hawaiian Islands, and his journey from a young chief to commanding statesman, is a historical significance felt greatly on the Big Island, his birthplace. The Big Island is home to one of the most diverse populations in the entire United States. Along the way, you’re sure to experience the unique culture of many ethnic groups of people who have made Hawai‘i home over generations. From the ancestors of former sugar cane workers, including Japanese, Chinese, Portuguese, and Korean residents, to more recent immigrants such as Anglo-American, Marshallese, and other Polynesian Islanders, each culture has brought its own flavor here. Taking the time to see how they’ve blended into a beautiful mélange is one of the joys of the different experiences found here.

ALOHA Much more than “Hello” & “Goodbye” words AMBER NIGHTINGALE

Aloha. A ubiquitous word that has become entwined with the identity of Hawai‘i, aloha symbolizes more than an amicable greeting, luxury seascape holiday, or nostalgic gift shop find. With an enchanting allure unique to the Hawaiian Islands, the Aloha Spirit contains deep cultural roots that embody a universal message. Whether experienced by faraway visitors or homegrown locals, aloha holds a legacy of its own.

30

What is the Aloha Spirit? Attempting to describe the Aloha Spirit is near impossible, like explaining the feeling of a rapturous scarlet-tinted sunset, or the soothing remedy of human touch. It goes beyond definition and is without a location—an omnipresent energy that lives everywhere. Outwardly (excluding trendy island ware) the Aloha Spirit may be perceived in simple acts of kindness, hospitality, truth, integrity, and steadfast patience in otherwise agitating paradise-laden traffic jams. Core values in family, reverence for nature, and the foundational understanding of the connectedness that binds humanity, all allude to the transcendental Aloha Spirit. “The spirit of aloha affects everything we do, not so much in words, it doesn’t come from the mouth— it comes from the action. To show you have aloha is from your action and how you deal with things. Aloha is the center of all things Hawaiian,” describes Na‘auao Pane‘e, a Hawaiian Language teacher at Brigham Young University. Hawaiian History, Ethics and Western Influence Ancient Hawaiian values were centered on a foundation in the Aloha Spirit. As a core element in cultural ideology, practices and spirituality, aloha directly translates from the root word hā, which means “the breath of life.” This breath penetrated every aspect of Hawaiian existence and resulted in a way of life where appreciation, gratitude and the spirit of generosity prevailed. Some may disagree with the genesis since aloha isn’t actually alohā. Some etymologists believe it’s more likely to have originated from the Samoan word “alohfa” or the Māori word “aroha,” which both words mean love. Mary Kawena Pukui in the Hawaiian Dictionary defines aloha as “love, affection, compassion, mercy, sympathy, kindness, grace, charity and greeting.” Aloha ‘āina (love for the land) was also an essential understanding that illuminated a sincere respect for

the earth. Hawaiians emphasized the recognition of mana (spirit) found within nature’s bounty, and that how we relate to it is imperative. Communing with nature was a metaphor for family values, such as honoring kupuna (elders) and ancestors, while guiding children in the aloha tenets. Underlying these interpersonal relationships was the pivotal connection one had with their self. By cultivating a perceptive awareness and understanding of one’s own being, Hawaiians affirmed all areas of life would prosper. When Westerners arrived in Hawai‘i, this sturdy foundation of aloha was hugely compromised. In 1778, Captain Cook’s famed discovery occurred, which led to an influx of Western thought and influence. The concept of aloha became a way to coin the dignified nature of Hawaiian culture. Along with ships, sailors and disease came Christian missionaries who found common threads in aloha ideology to suffuse their religious beliefs. Many Hawaiian rulers were Christianized and a new set of community, cultural, and political values soon took precedence. For decades that ensued, the arrival of immigrants and other settlers led to a diluted expression of the Aloha Spirit that barely permeated island culture. However, when Hawai‘i became America’s 50th state in 1959, a revival in the acknowledgment of aloha arose. Tourism, Politics and Commercial Culture With its newfound statehood, Hawai‘i quickly became the exotic travel destination of choice for intrigued mainlanders. It was a time of profound transition, and the strikingly increasing rates of visitors spawned a new status for Hawai‘i—it was birthing a tourismbased culture. Clearly, Hawai‘i emanated an idyllic quality that the other states did not, and tourists craved the multicultural ambiance. Suddenly, the Aloha Spirit became a commonplace column heading in newspapers and a key topic of

31

The Aloha Spirit is a shimmering emanation of Hawai‘i that is infinite and irreplaceable. political discourse. In 1986, the Aloha Spirit was written into state law, found in the Hawai‘i Revised Statutes—which still exists today. It states, “The ‘Aloha Spirit’ is the coordination of mind and heart within each person. It brings each person to the self. Each person must think and emote good feelings to others.” These basic doctrines of aloha instilled a remembrance in the governmental arena that perpetuated cultural roots and defined Hawai‘i’s unique subjective paradigm. Lively lū‘au, poi pounding, hula performances, and surfing all exuded the island tourism niche that embraced the spirit of aloha, which also fashioned a destination image that glimmered commercialism. Finessed in beach resort branding, mass produced souvenirs, and as an epochal greeting that’s still standard, aloha did admittedly shine as an asset that fueled a healthy economy and lured inquisitive tourists. This commodified version of aloha is one that is recognized by most. Has aloha evolved into a marketing scheme to drive tourism? Some academics might suggest, pointing its finger in objectivity, that the Aloha Spirit has been manipulated to fabricate a culture with profitable aims, while acting as a political band-aid to relieve multicultural tension. Aloha becomes like wearing a modish frame of rose-tinted glasses that promises a therapeutical antidote to life’s challenges. Has aloha retained its cultural virtue? Live Aloha Despite its modernized quasi-commercial status, the Aloha Spirit is not confined to a showy storefront t-shirt or cutesy morning coffee mug. It contains within it an unshakeable heritage that is bound by nothing and undeniably beautiful—a pure

32

essence that cannot be dominated or destroyed. Perhaps the external expression of aloha has been forcibly resized to fit the ever-changing needs of contemporary society. This present-day rendition of aloha does not devalue it, but rather presents a warm memento of a rich spirit with profound cultural and universal significance. Revered hula master and international Hawaiian cultural presence Puna Dawson illuminates, “The Aloha Spirit is from within. It is that spirit of truth that can be found in every culture—not just Hawaiian. It is an understanding and appreciation for life…all of life’s gifts, and how we share them with one another. Aloha begins with you.” The Aloha Spirit is a shimmering emanation of Hawai‘i that is infinite and irreplaceable. It’s the gentle reminder to breathe, close your eyes, enjoy the breeze, hear the birdsong, and smile candidly at a stranger. Aloha resides in forgiveness, nurturing a friend, reverence for nature, counting your blessings, and loving who you are and others. For me, it’s a heartfelt inhalation that enlivens appreciation for the beauty of creation and our shared experience as human beings. Aloha is a mutual understanding for those blessed to live on the islands—a decree that cannot be reckoned with. Although the Aloha Spirit can be found in abundance on the Big Island with seriously few residents living without, it is not bound to Hawai‘i, but instead encompasses a global relevancy. It ripples across the sapphire ocean to inspire a righteous vision where family, natural resources and the connection with oneself and others are cherished. Throughout history and the present stylish informality of aloha, the essence remains the same. May you experience the true legacy of the Aloha Spirit—feeling its eternal breath of life.

Lying in plain site midway across Saddle Road, Pu‘u Huluhulu offers respite in a hidden oasis amongst a sea of lava

35

36

Like an ecological lifeboat in a sea of lava. Hawai‘i was once a secret in our world. The most isolated island archipelago on a vast blue planet, it evolved for millions of years hidden from modern humans in the timeless expanse of the mighty Pacific. Inevitably, on a day like any other, a solitary lookout from a small ocean going canoe, would spot a cloud bank in the distance. What at first must have resembled ancient green and white mountain gods floating in the sky, would reveal itself as a lush fertile landscape. A paradise cloaked in snow-covered volcanoes, cloud-coved rainforest, and sun-laden beaches. Over the course of centuries, these settlers would slowly unravel the secrets of these mysterious islands. As travelers, pioneers, misfits, and wanderers old and new still wait in anticipation for their first glimpse of these heavenly silhouettes presiding over distant horizons, Hawai‘i is still a land full of secret valleys, hidden beaches, and exotic adventures. In the bustling tourist town of Kona or the laidback streets around Hilo, it’s hard to discover these natural treasures. But head off the beaten track and you can immerse yourself in unparalleled climates, ancient valleys, and hidden hikes. One of these secrets lies in plain sight on the Saddle Road between Hilo and Kona. Across from the turn off that meanders skywards to the mighty observatories of Mauna Kea, sits the Kīpuka Pu‘u Huluhulu Trail, rescued by the cinder cone it sits upon. Like an ecological lifeboat in a sea of lava from the 1843 and 1934 lava flows, Pu’u Huluhulu rises above the barren vistas characteristic of the saddle region between Mauna Kea and Mauna Loa. It’s easy to pass by this unassuming tree-lined hill on your trip across the Saddle or as you turn upwards toward the observatories thinking about the

grandeur that awaits, and missing this diamond in the rough. Although deceptive to the eye, this little kīpuka (volcanic oasis) is actually a 38-acre wildlife preserve and ancient Koa forest. From its top, only about 200 feet, the views of the surrounding countryside are surreal, in that—one must imagine—the pristine forest you are secretly nestled in, once covered the entire landscape in all directions. Grazing cattle and lava flows destroyed most of the saddle, but the Pu‘u Huluhulu cinder survived. Today the forest service carefully manages this tiny enclave. Fences and effective management have created a safehaven for native birds and plants to thrive, otherwise feral pigs and wild goats would happily have laid waste. Native birds like the ‘akepa (Hawaiian forest bird belonging to genus Loxops) and ‘akiapōlā‘au (Hawaiian honeycreeper), which have become quite rare, can be seen and heard here. Kalij pheasants, wild turkey, i‘o (Hawaiian hawk), nēnē (Hawaiian goose), and pueo (an endemic short-eared Hawaiian owl) are also regular visitors. Of the three trailheads to the Pu‘u Huluhulu hike, two are located right off the main Saddle Road (mile marker 28) and one lies just off the Mauna Loa summit road. They are of varying difficulty. The easiest route is to park in the Saddle Road lot and walk around the right side of the cinder cone. Eventually you will find a trail that heads up into the forest. A slightly steeper and slippery trail also begins right at this same parking area. Finally, the Mauna Loa parking area offers a rugged steep trail as well. All of these trails connect and lead to the top. If you are in halfway decent shape any trail will work well, but take the easy path if hiking is no picnic for you.

37

However, if feeling secretly tucked away surrounded by the same native plants and animals that the first mariners discovered is in your repertoire, then get hiking! It’s hard to describe why Pu‘u Huluhulu has such a special feel and form, but the difference in smells, sights, and perspective, compared to the monotone uniformity of the saddle landscape, is quite remarkable. Some of the largest remaining koa trees on the island can actually be found here. Make sure to bring a picnic and plenty of time to enjoy. You can criss-cross the varying trails and explore the entire cinder cone, taking in spectacular views as you crest each side of the forest. Pu‘u Huluhulu actually means “furry hill.” Perhaps the many shades of lichen adorning the gnarled, tentacle-like branches of the thick koa forest seem wild and untamed. The lichen even has tiny flowers upon close inspection. Another beautiful flower that is easy to find, though rare elsewhere on the island, is the pua kala. Known as the prickly poppy, these endemic poppy plants have beautiful white flower petals and vibrant yellow centers. Once you see one, you will always recognize them. Although they aren’t

38

generally cultivated, the Hawaiians used their sap for its mild narcotic properties to treat toothaches, ulcers, and nerve pain. My favorite part of this hike is finding a grassy, tree-lined turn in the trail and resting under the shade of an ancient Hawaiian wonder, listening to the sweet melodies of a Hawaiian honeycreeper or other native bird and the rustling of wind as it whips across the expansive saddle. Secure in the knowledge that this 38-acre oasis continues to provide a respite for humans and wildlife alike. At just under 7000-ft, it’s also a great place to acclimatize for a trip to the lofty summits of Mauna Kea or Mauna Loa. Like all pristine areas, make sure to respect the mana (spiritual power) of this place by looking after it and recognizing the value it offers. Most importantly, close any gates you go through, which helps keep the many invasive creatures from getting into this prized bounty. No matter how many trails I discover off the beaten path, oftentimes harder to find than the Pu‘u Huluhulu hike, I am always drawn back to the secret world it has preserved.

MAKING A n o i h s fa

STATEMENT The Rise of PXG Apparel words SYDNEY MARIE LUTES

40

S

hortly after entrepreneur Bob Parsons founded Parsons Xtreme Golf in 2014, his breakthrough golf clubs with “a sweet spot the size of Texas” began to turn heads throughout the world of golf. While PXG lacked the clout of decades-old brands, they nonetheless disrupted this centuries-old sport with unparalleled quality, engineering, and performance that quickly became an unmistakable presence on the Tour. After four years of redefining golf club performance, philanthropist and businesswoman Renee Parsons pioneered PXG’s avant-garde apparel line continuing the brand’s reputation as boundary breakers. Renee saw an opportunity after years of shopping for golf attire in clubhouses filled with racks of uninspiring slacks and skorts and tired polos. Not to mention the disappointing quality and performance that often didn’t match the price tag. Taking a page from Bob’s book of success, she followed her instinct to reimagine something better and create it. It was an exciting endeavor and challenge for Renee to pursue what she was passionate about—her love of golf and a healthy obsession with fashion. In 2018, she designed her first collection that blurred the line between high-performance activewear and

high-fashion runway resulting in an extension of the brand that continued to shake tradition with innovation. With the debut of five seasonal collections and another on the way, Renee infused lackluster golf attire of men’s polos and women’s polo dresses with chic designs of monochrome palettes, A-line skirts, and modern logo taping. It wasn’t long before notable personalities and influencers were supplementing their PXG clubs with head-to-toe PXG Apparel looks, making a big splash with golf fans across multiple countries. Renee’s design behind PXG Apparel transcends the greens and sand traps with sports fashion capsules that inspire all modalities of movement and effortlessly transition from activity to activity—whether that be an early morning Pilates class or après golf. Woven into every thread is months of research, development, sourcing, and production. This allows the brand to spearhead new technology, secure state-of-the-art materials, and develop beyond-the-trend, luxury apparel that boosts performance and elevates personal style. As the President and Executive Creative Director of PXG Apparel, Renee says adieu to the days of

41

uninteresting, stiff, and unflattering golf attire subject only to the country club. PXG Apparel marries fashion with function for ultra-luxe activewear meant to elevate your life on and off the course, and the most recent Spring Summer 2021 Collection showcases this mission perfectly. Featuring over 80 pieces—a staggering 30 pieces more than last season’s capsule—this collection stands as a testament to the success and desire for Renee’s creations. Inspired by the landscape of her home state of Arizona and the community’s resilience during the past year, this season spotlights bold, powerful designs that evoke confidence and strength. The exclusively PXG Apparel Paratrooper Blue color headlines this season’s assortment and signifies the hopefulness of blue skies and wide-open possibilities on the horizon. Anchoring this collection are luxuriously soft, technical fabrics that add refinement to loungewear and edgy details that insert forward style into classic pieces. From fresh PXG logo taping to jacquard knitting, traditional polos and performance jackets get a touch of éclat that elevates much more than game of play. Within this season, Renee displayed an effortless ability to capture what’s trending in modern men’s and women’s fashion while also designing each piece with performance and quality at the forefront. As a golf-equipment fanatic, Bob Parsons created PXG clubs because he experienced how the smallest improvement in quality lends game-changing results on the course. Without the limitations of time, margins, and price points that typically limit these enhancements for well-established golf brands, Bob set out to do it right. Bob is the “go big or go home” type and wanted noticeable differences that improve performance—changes that are measurable and visible for the golfer like hitting it longer, straighter, lowering their handicap, which ultimately gives the golfer, professional or not, confidence and makes the game much more enjoyable. Renee adopted this same philosophy of uncompromised excellence as she began designing performance-driven gear. Each new season debuts innovative technology with the most recent collection featuring UPF protection for long days on the course, ergonomic seams that flow with the body’s natural movements, and snap plaquettes for a sleek, expert fit. Because PXG controls the production process from sourcing to manufacturing, they ensure that every pocket, seam, and button is meticulously secured to enhance performance, not inhibit it. Trending toward modern fashion, the Spring Summer 2021 Collection also beckoned in the age of sustainability. Using select recycled yarns from landfill-bound materials such as fishing lines and nylon carpets, Renee engineered eco-friendly fabrics that maintained the breathability, luxe stretch, and softness key to performance. As they gear up to launch their upcoming collection, PXG Apparel has vowed to incorporate expansive sustainability efforts into the heart of their production—a hole-in-one for consumers and the environment. With this past collection’s record-breaking success despite the lingering global pandemic, PXG Apparel is rapidly expanding in number, innovation, and categories. Whether it’s the dedication to excellence or the forward-trending style, PXG has allured top talent into the fold, making the debut of the Fall Winter 2021 Collection ever so tantalizing. Renee’s ability to make waves in a world so set in traditions and formalities such as the fashion and golf industries displays her instinctual boldness that parallels the influential core design of PXG Apparel. In a world shaped by hundreds of years of customary codes that govern who hits first, what you wear, and when you speak (which is not during a player’s backswing, for newbies), Renee continues to deliver a progressive energy that boldly paves the way for new tradition. While the extent of golf fashion seems to begin and end every April at the presentation of the famous Green Jacket in Augusta, Renee and PXG Apparel are redefining the idea of iconic activewear one polo, pullover, and side-slit skirt at a time.

RENEE PARSONS President & Executive Creative Director PXG Apparel

44

YOU OBVIOUSLY HAVE A FONDNESS FOR HAWAI‘I AND SPEND A LOT OF TIME HERE. HOW HAS HAWAI‘I INFLUENCED YOUR AESTHETIC? Hawai‘i has always been a spot I’ve held very close to my heart, a place that truly is our home away from home. Whether it’s the Hawaiian culture, or the natural beauty, I often find myself in awe of its aloha spirit and breathtaking landscapes. At PXG, our fan-favorite Aloha capsule collection highlights this love of the islands and pays respect to its iconic flora. Featuring hats, polos, and hoodies with a beautiful Hawaiian print, the collection harmonizes our love for both golf and Hawai‘i. WHAT ROLE DO YOU THINK FASHION PLAYS BOTH ON AND OFF THE GOLF COURSE? Fashion is the most natural form of expression: it reflects something of ourselves at a particular time, in a specific place and state of mind. What we wear can enhance our mood, put us in character, and serve as armor for the day or circumstance. It’s no different on the golf course! Many golfers today, from pros to novices, are demanding more from their apparel than just performance...they want something elevated, edgy, and dynamic. I saw an opportunity for PXG to fill this void in the golf apparel market, to extend beyond that market with apparel which would fashionably fit on or off the course. Fabrication, fit, fashion, edge, performance—PXG apparel offers it all and sacrifices nothing! WHAT WAS YOUR BIGGEST CHALLENGE IN PIONEERING PXG’S LUXURY ACTIVEWEAR BRAND? I learned quickly that the power and establishment of an existing brand could truly be a double-edged sword in a new, but related venture. The recognition and respect that PXG commands in the golf world is significant. PXG is all about performance. Period. And I apply this mantra to PXG Apparel as well. WHAT HAS BEEN YOUR PROUDEST MOMENT AT THE PRESIDENT AND EXECUTIVE CREATIVE DIRECTOR OF PXG APPAREL? I’ll never forget the very first collection that I presented to Scottsdale National Golf Club members during a tournament held at the club in 2019. I was just getting my sea legs, to be honest, and the end-to-end process wasn’t yet smoothed out. But it was the first tangible, physical

manifestation of a dream I had held for so long—there in front of me. We have the world’s best community at SNGC. They are serious golfers, loyal, and an extension of our family in so many ways. I put a small collection of pieces on display at the clubhouse, and everyone went wild for them! The women especially were so excited, and it was just a fun, rewarding experience. Even though we didn’t have all the details nailed down, people loved, bought, and were wearing the pieces right away. I knew I was on the right track and that we were on to something. GOLF ATTIRE HAS COME A LONG WAY, ESPECIALLY FOR WOMEN. WHAT PROPELLED THE FASHION FORWARD MOVEMENT IN GOLF FOR MODERN STYLES AND BETTER FIT? I started with the idea of simply modernizing the polo dress! Sport technology is improved, and we’re making it better with each collection. Design has advanced in every way imaginable, and our manufacturers are top-of-theline. I want PXG to transcend golf—to move with you on and off the course. That requires a level of attention to colors, fit and style that is unique to PXG apparel, and a new standard in the sports fashion industry. WHAT IS THE DRIVING INSPIRATION BEHIND THE UPCOMING FW21 COLLECTION? We are always inspired and driven by the consumer and wanting to meet their needs and expectations, but more importantly fulfill the desires that they have not yet identified. I don’t want to give away too much detail before the launch of FW’21, but we experimented with different fabrications and expanded on key silhouettes while keeping signature details. This collection will have a real urban edge that feels modern and exciting! WHAT ARE THE HERO/SIGNATURE PXG APPAREL PIECES THAT EVERYONE NEEDS TO ADD TO THEIR GOLF ATTIRE? I think it’s important to have pieces within your wardrobe that are versatile and dynamic; that can make the transition from the golf course to your everyday life. One of my favorite pieces, the front slit pant, gives a sleek silhouette and can be paired with the performance polo in paratrooper blue for a round of golf, or with the varsity V-neck cardigan and heels for a dinner out with friends. Other signature pieces include our big logo sleeve sweaters and the PXG hooded jacket. The sweater makes a bold and elegant statement on or off the course, and

45

"Act with intention, honesty and purpose. Go get it!" its lightweight jersey fabrication is not only ultra-soft, but easy to move in. The jacket cinches at the waist and is the perfect outerwear piece to go over any of these looks. Its fabrication is water-resistant, windproof, and breathable ensuring maximum protection and comfort. AS SOMEONE WHO SO GRACEFULLY AND POWERFULLY TRANSITIONED FROM A SUCCESSFUL CAREER IN HOSPITALITY TO THE WORLD OF FASHION, WHAT ADVICE DO YOU HAVE FOR THOSE ON THE LEDGE OF CHASING THEIR DREAM? Surround yourself with strong support, but don’t shy away from the challenges you may face at the same time. Welcome those tough questions early and often. Take them on with gusto and take them seriously. Poke holes in your ideas and then patch them up before you take the next step. Draw on your experience, listen to your instincts. We are all layered, complicated, nuanced human beings with enormous capacity. Pivots in life are not only unavoidable—they are necessary to evolve and grow. Take the calculated risks, resilience will get you everywhere. Seek out experts and listen to their wisdom. Act with intention, honesty and purpose. Go get it! FOR THOSE WHO ARE UNFAMILIAR WITH PXG APPAREL, WHAT SHOULD THEY EXPECT IN QUALITY, PERFORMANCE, MATERIAL? PXG Apparel marries performance with style, prioritizing both, while sacrificing nothing, which makes us unique in the sports fashion arena. Made for golfers by golfers, the clothes work with you, adjust to your environment, and enhance/enable your activity along the way. They also look simply great—the women who pair one of our sweaters with a designer heel appreciate

46

the seamlessness with which PXG Apparel carries you through your day with actual style. The men who wear our Fairway Camo pullover appreciate its light fabric, packed with tech features that not only protect you from the sun, but always make sure that you stay fresh and dry, thanks to moisture wicking and quick dry stretch material. WHAT IS YOUR FAVORITE PART OF THE JOB? I love collaboration and working with others. It’s been so satisfying to build talented teams that are creative, innovative, and excited to challenge themselves with setting a new standard for the golf apparel world. I am amazed at how they have tackled this past year with positivity and perseverance. I look forward to having in-person meetings this next year, but regardless, our company is made up of incredible women and men who are dedicated to constantly pushing boundaries in order to offer the best to our customer. WHAT ARE YOUR GOALS FOR PXG APPAREL? Our goal is to continue growing our retail presence nationally, while at the same time expanding our international footprint. With upcoming stores in new markets including Dallas, Philadelphia, and South East Florida, as well as expansions focused on Japan and the UK, we want to give more access to our customers to experience firsthand the quality of our products. WHAT IS THE BEST ADVICE YOU’VE EVER BEEN GIVEN? I like that this is the last question because I can end with what my father told me, which I think is incredible advice for anyone in any position—be direct, get to the point and lead transparently.

Healing

PLANTS Carved in culture and history words KRYSTAL KAKIMOTO

When the ancient Polynesians packed their canoes in preparation for their long journey of discovery, they included an array of fruits and vegetables to not only nourish their bodies, but also to heal themselves as necessary during their long voyage. To this day, locals use these carefully selected “canoe plants” to not only restore their health, but to prevent disease and illnesses, passing along the critical knowledge the Polynesians carried with them. Noni (Morinda citrifolia)/Indian Mulberry Known as a “cure-all” to the native Hawaiians, the fruit, bark, leaves, and juice of the noni plant is held in the highest esteem for its multiple uses in health and healing. In ancient times, the fermented juice of the noni fruit was drunk as a regular tonic to maintain health. In addition to a health boost, the unripen version of the noni fruit was said to have been served to women nursing infants to encourage lactation, though today a physician should be consulted if pregnant or nursing before consuming. Along with ingestion, the ancient Hawaiians also applied the juice from the pungent noni fruit topically to cure many ailments from arthritis to headaches, while large chunks of the noni flesh were said to have been put into deep wounds to encourage healing and inhibit infections. Today, noni fruit, also known as cheese fruit,

and juice can be found in some stores and farmers markets while other companies have utilized the noni plant in many ventures including fruit leathers, powdered pills, and dried leaf tea. Keep an eye peeled for the plant growing roadside. ‘Alaea Salt Across cultures, salt has served not only as a highly prized flavor additive, but also as a sacred part of society with abilities to purify and cleanse our bodies and spaces. In ancient Hawaiian culture, ‘alaea salt was created by harnessing seawater from deep underground wells and transferring the water to holding pools of packed earth where the water was allowed to sit and concentrate. This concentrated seawater was then transferred to shallow ponds where the top salt was raked off, rinsed, and dried before being mixed with volcanic clay rich in iron oxide. This valuable commodity contained trace minerals including potassium and magnesium, which were important to maintain both electrolytes and blood pressure. ‘Alaea salt was also added to water and used in many purification ceremonies including the blessing of new homes, canoes and temples. At the time of the ancient Hawaiians, many households created their own salt, but today, finding traditionally made ‘alaea salt can be very difficult.

49

‘Olena (Curcuma domestica)/Turmeric Known in ancient times for the tremendous amount of mana (spiritual energy or power), ‘olena, which means yellow, is a humble root with many medicinal uses for the Hawaiian people. This perennial herb, growing only about 3-feet in height, is a member of the ginger family whose dark yellow “roots” were known for their antibacterial and anti-inflammatory properties. As a raw supplement, grated ‘olena root could be taken for its anti-inflammatory benefits. The fragrant root could be grated and squeezed to extract the juice, which was used to soothe ear infections in keiki (children). Or, if drank as a diluted juice, the ‘olena extract could be used as a general health tonic known to combat consumption, asthma, and congestion in the body. Today, the ‘olena plant can be found across the state except for the island of Kaho‘olawe, but rarely found in the wild except for the moist, forested valleys. In recent times, ‘olena root can be found in many health food stores in its natural form or also in powdered capsules or pill form. ‘Awa/Kava Native to the Western Pacific islands, ‘awa was known across the Pacific as a plant utilized for its many benefits including to serve as a cure for colds, headaches, and anxiety. The ‘awa plant, scientifically known as Piper methysticum or “intoxicating pepper,” was prized for its roots that grew soft and thick. The root was traditionally chewed and spit into a ceremonial bowl to be mixed with coconut water or spring water. The mixture sat before being stirred and strained through hibiscus bark, and was typically warmed up using hot stones before being allowed to cool down to drink. As a drink, ‘awa could be enjoyed socially for its sedating, muscle-relaxing effects that were known to cause euphoria, but no feelings of hangover the following morning. The drink could be also taken to combat stress, anxiety, insomnia as well as alleviate the pains of urinary tract infections and menstrual discomfort. ‘Awa is still a vital part of many societies across the 50

Pacific enjoyed as a social drink and as a medicine with many ‘awa bars popping up in cities. Along with enjoying ‘awa as a drink, it can also be consumed as an additive to some commercially-made drinks or in capsule form as a health supplement. Kukui (Aleurites moluccana)/Candlenut Grown throughout the islands, the kukui tree had many important purposes in ancient Hawaiian society, so much so that it was named as Hawai‘i’s state tree in 1959. Growing to a whopping 49 to 82 feet in height, this member of the spurge family features wide branches, pale green leaves, and nuts approximately 2 inches in diameter. The dark outer shell was often utilized as ink in traditional tattoo practices, while the inner kernel found within the hard shells were burned in shell lamps or ti leaf torches often tended to by the children in a family. This same kernel was also pressed to extract the rich oil that has been proven to be rich in alphalinoleic and fatty acids and used as a topical ointment massaged into weary muscles or applied to soothe burns or chapped skin. This same kernel could be mashed and ingested to serve as a powerful laxative. Today, kukui nut oil can be found at local health stores in extract form to be used as skin serums popular with many locals. The mainstream cosmetic industry has also caught onto the beauty benefits of kukui nut oil and this powerful skin aid can be found mixed into many beauty products from body lotions to face masks. Roasted kukui nuts mashed with salt, also known as ‘inamona, can be found in stores and online used in dishes as a topper or additive to the local staple, poke. There are definitely some great options to get your fix of poke on Hawai‘i Island. While in Kona, check out Umeke's Fish Market Bar & Grill or Pau Hana Poke. The knowledge the Polynesians carried with them on their canoes as they embarked on their journey to the Hawaiian Islands has proved itself against time to heal and nourish the mind and body for generations. As with any natural remedies or supplements, do careful research and make sure to talk to health experts before trying for yourself.

A

mountain shielding a sunset. A wave crossing untouched sand. It’s one thing to imagine these scenes in our minds, but it takes incredible skill to transcend the imagination and turn these ideas into tangible images that we can see and touch. Timothy Allan Shafto, an artist using koa wood and resin as his medium, turns our beautiful island home into immaculate works of art. But his work goes beyond representations of the obvious beautiful landscapes of our islands, sometimes veering into more abstract pieces where the wood and paint help to create a piece just as visually stunning as any representation of something literal. Unbound by convention, the artwork takes unexpected twists and turns, some with a piece of wood splitting an image in two to become a diptych, where others might use wood in circles or rectangles to create patterns. There’s even the series of resin surrounding a beautiful piece of solid koa, Timothy’s homage to the wood itself. Whatever the inspiration, each piece is a unique examination of our island home and the natural resources that make it special. After honeymooning on Kaua‘i, Timothy and his wife Tiffany DeEtte Shafto, of Tiffany’s Art Agency, moved to the Islands in 2004 and were instantly enamored by the beauty of Hawaiian koa wood. Koa is a precious material – the trees only grow here in Hawai‘i, and have long been revered not only by artists and collectors, but also Native Hawaiians for generations. Meaning “brave” or “warrior,” the wood was used by ali‘i (Hawaiian royalty) and was for many years kapu (forbidden) for commoners to use. However, over time, forests were converted into pastureland, and koa saw a big decline. The species has been on the recovery ever since, but is still a precious commodity. To source his material, Timothy has built relationships with sawyers over the years who find fallen koa trees, helping the wood find a new life in his art pieces. His work doesn’t only use koa, though, or even wood. Timothy also uses marine grade resin as his paint to create splashes of color and movement that complement and highlight the wood he has selected for each piece. The resin he uses has UV inhibitors

that are color fast, so the vibrancy of the colors won’t fade over time. Each piece requires multiple rounds and hours of sanding, creating a satiny smooth surface that allows the colors to jump out at you, and the wood to shine. It takes Timothy about twenty two steps to create each piece, not including the totality of his life’s journey, which also influences his work. “It’s been my whole life process. I’ve always worked with my hands,” he says. Timothy creates his pieces in a studio located within a converted Quonset hut that used to process macadamia nuts along the north Kohala coast, where he says that an idea will hit him, and he is not satisfied until he has a tangible representation of that initial inspiration. He has no cell phone, no email in which to reach him, and instead his wife Tiffany is his main conduit to customers and appreciators. “This is my happy place,” he says, surrounded by portions of ancient koa trees and multiple pieces of equipment. “Shut the door and lock me in.” When asked if he misses pieces once they are sold, Timothy shares that for him, it’s all about the process. When inspiration strikes, he needs to get into his shop and work on the idea until it reaches completion. He enjoys the experimentation, finding new and different ways to shape the wood, or pour the resin. This allows him to stay creative, and once a piece leaves his studio, he doesn’t spend time missing them because “I know there will be more.” Timothy also credits all the amazing people here on the Big Island who have helped him grow as an artist. “All the people I’ve met along the way have shortened the learning curve. We have an amazing community.” That community has also helped his art reach broader and broader audiences. However, before the art goes out into the world, it needs one last final evaluation. Each piece of his art is clean and refined, and must be just right before he considers it complete. But for Timothy, there’s one extra step. “Art is not done until it connects with someone else, and for me, that’s the best part.” All it takes is one glance, and for those who have seen his work in person, connecting with it comes naturally.

Q&A HOW DID YOU INITIALLY GET INTO WOODWORKING?

WHAT DO YOU LOOK FOR WHEN SOURCING THE WOOD FOR YOUR PROJECTS?

HOW DID THE PROCESS EVOLVE OVER TIME FROM JEWELRY BOXES/FURNITURE TO HANGABLE PIECES OF ART?

HOW DO YOU INITIALLY FIND YOUR INSPIRATION? DOES THAT IDEA CHANGE OR EVOLVE OVER TIME AS YOU CREATE THE PIECE?

Koa. I’d always wanted to do woodworking (had done metal, glass, and stone fabrication previously) and had bought some woodworking tools before we moved to Kaua‘i. It was there that we spotted a simple box made from the most beautiful wood we’d ever seen. But my wife (a designer) didn’t like the style. So we started by making jewelry boxes together.

Our jewelry boxes won awards at our first couple of shows so we decided to keep going. It’s led us into furniture, then I got into woodturning and we found a way to collaborate by creating platters with translucent details. We had a show in the lobby of the Four Seasons Resort Hualālai in December of 2013 and I really wanted to try mixed-media paintings with the same resin we used for our platters. A few sold at the show and I’ve been evolving the paintings ever since.

54

The koa I use comes from dead, fallen, and dying trees. It’s an endemic wood found nowhere else in the world and leave it to Hawai‘i to develop a wood that actually shimmers like a cat’s eye gemstone. The depth of figured koa is unparalleled and always inspires me to do my best to honor its beauty.

Often there’s an idea that won’t leave me alone until I get it out of my head—it’s the process I enjoy the most. Mother Nature is continuously providing inspiration—from the landscape here to the colors of the sunsets, water, and forests—I do my best to capture the feeling this place creates for me. My ideas are always changing and evolving. Sometimes a sculpture has to come out. Sometimes a new direction in the paintings. I can’t keep doing the same thing every day—it becomes boring. The cool thing about the paintings is that while I can get close

to achieving my vision for the piece, the resin moves and does things on its own, which keeps it exciting and fresh for me. I like to say the paintings are 90% me and 10% chance. WHAT FEELINGS DO YOU HOPE TO EVOKE IN SOMEONE THROUGH YOUR ARTWORK?

I hope my work brings the viewer/appreciator joy. I hope they find some aspect of themselves that it resonates with and each time they look at it reminds them of a happy time in their lives. WE ARE LUCKY TO LIVE IN HAWAI‘I. HOW DOES OUR BEAUTIFUL ISLAND HOME INSPIRE YOUR WORK?

It’s everywhere in my work. From the incredible Hawaiian koa wood, to the colors I choose to work with, to the incorporation of sand in some of my pieces, this place inspires every part of me. WHAT ARE SOME OF YOUR INFLUENCES?

Obviously Mother Nature, but also my wife. After spending eight years in the studio with me, she started an art agency seven years ago representing me and

other local artists and often asks me for specific works for shows. It’s always fun to make with a location in mind. And sometimes its my collectors. They challenge me with something new and I love working to figure it out and make something that truly speaks to them. WHAT’S SOMETHING THAT CAN INSTANTLY IDENTIFY YOUR WORK AS A TIMOTHY SHAFTO PIECE?

The combination of koa wood and resin—and sometimes mango wood or sand. I haven’t seen anyone else doing it in this way and I believe it is unique to me.

LOOKING AHEAD, HOW MIGHT YOUR WORK EVOLVE IN THE FUTURE?

Totally unknown. I love doing the paintings. Working with my hands is a way of life for me and I hope it always will be. WHAT DO YOU WANT TO TRY NEXT?

Large scale outdoor sculptures. I have ideas…

DUOS

Legendary pairings on the culinary scene words BROOKE REHMANN

What makes a dining experience transform from a simple night out to a fabulous evening of memory making that you want on repeat? How does a restaurant team combine the unseen magic of the back of the house, where chefs and kitchen staff all contribute to create delicious meals, with the prompt and attentive service delivered by the front of the house? The best of the best makes these efforts feel seamless, where a diner need never think about these processes that make their dining experience a fun, enjoyable meal. While there are numerous restaurants on the Big Island that are outstanding, a few stand out above the rest for exceeding the normal expectations. We all want good food, good service and nice ambience, but when a place makes you feel like you are a guest in their home and treats you like family, it makes for more than a memorable meal—it’s a great time! And like Fred Astaire and Ginger Rogers, Batman and Robin, and Abbott and Costello, it’s the perfect partnership that makes magic happen. Though each of their stories is different, there are core values that tie these dynamic duos together—teamwork, respect, trust and passion for hospitality.

“Whether you want a fine dining experience, or just a hot dog and a beer, if you can match that moment, you’ll create memorable experiences."

CHEF NICK MASTRASCUSA AND CHUCK WILSON OF KŪKI‘O

Working with your best friend has its advantages. Executive Chef Nick Mastrascusa and Manager of Restaurant Operations Chuck Wilson have been working alongside each other for almost 12 years, each able to read the cues of the other, and each able to bring a sense of joy and excitement to their environment. Chef Nick Mastrascusa grew up in Uruguay and was heavily influenced by his grandparents’ Spanish and Sicilian roots. Though no one in his family had a professional food and beverage background, his father enjoyed fishing and hunting and sold cured meats to local butchers. The idea of hunting and fishing, though, was not just for the sport, but for the celebration it would bring to the dining table, as family would gather around and share delicious meals together. When it came time to decide on a career, Chef Nick found the culinary world effortless. “If I did it the rest of my life, I’d be happy,” he says. Similarly, Chuck Wilson started working in the restaurant business in his home state of Missouri at an early age, cutting bread at a local family-owned restaurant, where he saw what a dining experience could do for people, and instantly fell in love “I wanted to be a part of that magic,” he says. Over the years he became a sommelier, developing the philosophy that the wine glass is the extension of the plate. Following a few stints at major Las Vegas dining establishments, he eventually joined the Four Seasons Resort Hualālai and, together with Chef Nick, launched Beach Tree in 2009. It was there that this “dream team” came to life and has grown over the ensuing years. “Both of us are about creating memorable experiences,” Chuck says about his work with Chef Nick, who agrees. It’s all about the setting, the lighting, the service, the music— all the elements that make each experience unique and just right. “Whether you want a fine dining experience, or just a hot dog and a beer, if you can match that moment, you’ll create memorable experiences,” Chef Nick shares. As soon as Chuck heard who the opening chef at Beach Tree would be, he knew they would be a winning combination. “My older brother’s name is Nick. The restaurant was opening on my birthday. It was perfect.” This auspicious beginning set in motion a friendship that continues today. “It’s unusual to stay together so long,” Chef Nick adds. Though they spent some time apart,

Chuck says he always knew they would get back together. “Chuck has something really rare,” Chef Nick shares. “He has the gift of people. I don’t know how he does it, the specific steps, but very quickly he can make you feel really good. It’s pretty admirable to see in action—I’ve never met anyone who could do this better than him.” Meanwhile, Chuck has glowing words of his own. “What Chef does is so much more than food. He has a natural leadership. Even though he’s younger than me, I’ve learned more from him than I have from anyone else. It’s a calming nature.” For the two of them, work isn’t always just work. The two plan bespoke trips with their residents to renowned food and wine destinations, including the Champagne area of France. There they share their own knowledge, and explore the cuisine and vineyards in a hands-on way. “We share those experiences to elevate them,” Chef Nick says. Though COVID-19 disrupted their travel for 2020, they already have a trip tentatively planned for Spain in the fall. Though the two are quick to speak well of the other, they also credit their incredible team, who help their visions come to life. Investing in the right people has proven to be successful, and even though there are the occasional growing pains, they find that their team surprises them in pleasant ways on a regular basis. Whether it’s creating memorable dishes or moments at the restaurant, or bringing in a farmers market to their community, the two are always looking for ways to have fun, and share the memorable moments that make dining so enjoyable and meaningful—and, both agree they couldn’t do that without those who work with them. Chef Nick shares how even though the two of them are friends and get along incredibly well, they still work at a business and have to execute at a very high level. It’s rare, he says, that the front of house and back of house would be so in sync, and that they would be so friendly, but it’s all about how by working together, they become an invincible team. “Once you celebrate those gifts (that each possesses), you put the two together and it becomes unstoppable. Let us show you what we can do.” Kūk‘o is a private residential community on the North Kona coast. For more information, visit kukio.com.

Matt & Yuka Executive Chef Matt Raso and General Manager Yuka Raso not only make for a dynamic pair due to their working relationship, but also because of their personal one as well. Having originally worked together at Nobu Dallas, the two eventually fell in love and navigated their careers to the shores of O‘ahu, before landing here on the Big Island at one of our island’s most iconic dining establishments. Originally the home of renowned Hawai‘i Regional Cuisine chef Alan Wong, CanoeHouse has long been on the culinary map for locals and visitors alike, and the married couple knew they had big shoes to fill when they accepted their positions. However, both immensely talented in their own respective sphere, they have been able to exceed this challenge easily, creating memorable meals and dining experiences during their tenure. What is it like to work so closely with your spouse every day, I wondered, especially in such a fast-paced, emotional environment as a restaurant kitchen and fine dining front of house? For Yuka, she says she’s incredibly happy to have him by her side. “I can’t imagine having this career without him.” Matt has a similar thought as well in that they share the trials and tribulations as one team, and they can trust each other implicitly. “I don’t have to question when she wants to start a project—I know that she’ll see it through to the end.” Chef Matt also knows he can trust her with the guests, and that her bubbly personality wins guests over immediately. “She makes people feel comfortable right away,” he says. “I love sharing with guests that it’s his food,” Yuka says. “It makes me so happy when guests tell me that it’s the best food on the island.” Hearing from guests who hail from big food cities like San Francisco or Los Angeles that his level of cuisine stands up to their favorites there fills Yuka with a lot of pride and happiness. A trait that connects the best partnerships seems to be the level of trust, and the ability to have a shared vision for where they want to take the restaurant. To Chef Matt, this is a huge advantage. The two see the restaurant as an extension of their home where they want each guest to feel like they belong, feel special, and that this is more than just a restaurant. Their goal is to make the vibe feel more relaxed and less stuffy, and that’s completely by design. They forgo the fancy tablecloths, the bread service, all the touches and hallmarks of a typical fine dining establishment. “The fact that we can come to the table and be us, I think it allows people to relate, and allows

60

guests to feel like regulars right away.” The two know that if either one of them makes a mistake, the other will have their back, helping to ensure the continuation of their vision, regardless of the hiccups that might occasionally occur. Even though the couple has moved around several times, it is the aloha spirit that keeps them in Hawai‘i, as well as the fresh produce, and the ability to put their own stamp on the restaurant. CanoeHouse features the MY Menu (MY standing for Matt and Yuka), which are dishes that they started together, signature dishes, and things that Chef Matt knows Yuka likes. The concept is based on a Japanese omakase (chef’s choice) menu, where they are cooking the dishes specifically for each guest. Their philosophy also extends to the idea that because they are working hard to build a level of trust with each guest, they hope you will consider their recommendations on the dinner menu. Some diners might be initially reluctant, but Yuka has such faith in Matt’s ability to delight each diner’s palate, that she shares she will happily take care of things if someone doesn’t like one of her recommendations. Chef Matt enjoys this, as he likes to surprise his guests with things they weren’t expecting, and to see their delight in those surprises. Throughout his time spent on the Big Island, Chef Matt continues to be influenced by the local culture, including the paniolo (cowboy) culture of the ranchlands. “In my head, the way I describe the food I want to do is ‘Japanese cowboy,’ and that’s the direction I hope to take the restaurant.” The vision is not quite a steakhouse, but more family style, more relaxed, with people talking to each other, experiencing things together. “You shouldn’t have to feel service. If you’re at someone’s house and the food appears, and then all of a sudden, it’s three hours later, then that’s the kind of experience we’d like to create,” shares Chef Matt. “We have the ambiance and setting,” says Yuka. “All we need to do is create a great food and service experience. We want the guests to leave happy.” “With smiles on their faces,” Chef Matt adds, finishing the idea of the restaurant the two of them set out to create. Together. CanoeHouse is located at Mauna Lani, Auberge Resorts Collection. They are open for dinner daily from 5pm to 9pm. For reservations, call (808) 885-6622 or visit aubergeresorts.com/maunalani/dine/canoe-house.

Jim & Teddy

CHEF JIM BABIAN AND GM TEDDY LYAU OF PUEO’S OSTERIA Located up the hill overlooking the Kohala Coast is the small town of Waikoloa Village, home to one of the island’s best restaurants, Pueo’s Osteria. Run by Chef/Owner Jim Babian and General Manager Teddy Lyau, this dynamic duo keeps guests coming back for more. Growing up watching cooking shows such as The Galloping Gourmet and The French Chef with Julia Child and helping out at his father’s supper club, Chef Jim discovered early on his passion for cooking. Teddy started in the restaurant scene bussing tables, washing dishes, and eventually worked his way up to general manager by the time he turned 25. Though their lives took different paths, they both ended up at the Four Seasons Resort Hualālai in 2012, where Teddy loved Chef Jim’s style. Later, when Pueo’s was opening, Teddy heard about the plans and became intrigued. Chef Jim wanted Teddy to join him, but wanted Teddy to feel comfortable to come when he was ready, and not steal him from his job at the

62

time. They have been together at Pueo’s for over five years and going strong. “The thing with us is chemistry,” Chef Jim says. “When we were at Beach Tree, it was so much fun. When he came up here to dine, we reconnected and chatted—he could see the potential in what we were doing up here.” And after Teddy joined, that’s when the ideas started exploding. “He just took things to another level.” One of Teddy’s favorite ideas he and chef came up with is their regional food and wine dinners where Chef Jim and his team would transport guests to a culinary destination without the need for a passport. Focusing on one area of Italy, for instance, the Lazio region where Rome is located, Chef Jim would create dishes inspired by the region, with Teddy selecting wines that paired perfectly with the food. Served al fresco and at communal tables, these special dinners are what sweet dreams are made of. “There were no restrictions, no borders, no rules.

"Passion drives passion. Our mission statement of great food with knowledgeable and personal service stems from the kitchen all the way out to the floor."

Each dinner had to be better than the last time,” shares Chef Jim. “With Teddy, we could stretch the limits of what could be accomplished and pull them off at a high level.” “Our professional relationship is 80% Jim, and 20% me—80% his brains, and 20% my back,” Teddy says with a laugh. “I’ve grown the most working with him. He reminds me how to train my thoughts to what’s important vs. what’s urgent. It’s easy to lose sight of the important things when looking at the day-to-day operations, but he reminds me to get those important things done.” For Chef Jim, working with Teddy allows him to push himself and his team even further. “We don’t ever settle; we get better year over year.” Together, they have shaped a unique, diverse and skilled team, the combination of which they both believe will continue to further build on their hard-earned reputation as one of the best restaurants on the island. “In our core leadership meetings, we get to levels that we wouldn’t get to on our

own. Teddy keeps me so inspired, helps me stay sharp. Together we keep looking to innovate so we can continue to grow.” For Teddy, it’s not just the chemistry of working together well, but also Chef Jim’s thirst for more. “Passion drives passion. Our mission statement of great food with knowledgeable and personal service stems from the kitchen all the way out to the floor. I knew from day one that we were a dynamic duo.” Chef Jim agrees, adding, “I told Teddy I couldn’t do this without him. We were put together for a reason, to make great experiences for our employees, but also for our guests as well. I feel lucky and blessed every day.” Pueo’s Osteria is located in Waikoloa Village at 68-1845 Waikoloa Road. Open for dinner Tuesdays thru Saturdays from 4pm to 11pm for dine in, and until 8pm for takeout. Reservations are strongly recommended. Please call (808) 339-7566 or visit pueososteria.com.

Rio & Arnie

CHEF RIO MICELI AND GM ARNIE McLAIN OF ROY’S WAIKOLOA BAR & GRILL

When it comes to iconic Hawai‘i chefs, Chef Roy Yamaguchi of Roy’s restaurant chain fame, certainly ranks near the top. His eponymous restaurant located at the Kings’ Shops in Waikoloa has a new head chef, Big Island native Rio Miceli, taking the helm of the kitchen, alongside Roy’s Waikoloa Bar & Grill veteran Arnie McLain guiding the front of house dining experience. Though this dynamic duo has only started recently working together, their combined experiences make for a truly interesting team. And, really, anyone paired with Arnie is going to be dynamic as he is a walking legend among the faithful regulars of this much-loved establishment. Arnie has been at Roy’s Waikoloa Bar & Grill for 25 years, seeing the brand go through many changes. He speaks highly of Chef Roy, noting he’s always ahead of dining trends. “Roy is a visionary. He’s always trying to do something better than the day before, to never be status quo. It’s the driving factor for me and why I’ve stayed for so many years.” But for Arnie, bringing in Chef Rio is something he’s ecstatic about for his fresh style and creative talent to take the classics and create new favorites. “He’s going to bring that ‘Wow!’ back,” Arnie says. Chef Rio is excited to make the menu even stronger, taking the reins of a brand that has been delighting guests since the 1980s throughout Hawai‘i and beyond. It’s not easy to put your stamp on beloved dishes, but Chef Rio sees this as a fun challenge. Together, they are looking to build the staff after a devastating year for the restaurant business by nurturing the staff they currently have, as well as grow their team together. “We’re going to introduce a few things at a time,” Arnie says. “The regulars are always looking for something new, in addition to all the classics. I know Chef Rio is really good at what he does. I’m really excited for this next chapter.”

The two have a vast history of food and dining experience, both working their way up to their leadership positions from the ground up, jumping in to take charge as situations needed it. For Arnie, he prefers being handson with the staff, both front and back of house. He hosts, he busses, he washes dishes—his motto being that if the staff sees him doing it, they’ll want to do it better. It’s all about creating memorable guest experiences, so that they come back again and again. Meanwhile, Chef Rio keeps sight of important details—clean cooking stations, nurture passionate and driven cooks, and give them autonomy over their own stations. He’s currently working on assessing the current staffs’ strengths and weaknesses, and to further build on their strengths while working on the areas that need more support. Both Chef Rio and Arnie have known each other through reputation over the years, even before they worked together. “I’ve always loved Arnie,” Chef Rio says. “From what I’ve seen, he definitely holds to his philosophy—he’s very hands-on and gets into the trenches. I’m hoping some of his skills will rub off on me.” While they continue to build a strong team together, Chef Rio is also hoping both of their philosophies and styles will keep them moving forward. “Other than that, I’m going to make food that tastes good. It sounds basic, but I’m ready to put in the work to make it happen.” And for Arnie, he wants to keep the guests coming back for more. “I throw a party for 150 people every night. If I do my job right, my goal is that everyone leaves happy.” And trust us, you most definitely will. Roy’s Waikoloa Bar & Grill is located within the Kings’ Shops in the Waikoloa Resort. It is open for dinner daily from 4:30PM – 8:30PM. Reservations are strongly recommended. Please call 808-886-4321 or visit royyamaguchi.com/roys-waikoloa.

HOT SPOT

words BROOKE REHMANN

Ola Brew Co. Taproom The growth of Ola Brew Co. is just short of miraculous considering nearly half of the life of the company has occurred during a pandemic. Established in December 2017, and co-founded by Brett Jacobson, CEO, and Naehalani Breeland, President, Ola Brew has a mission of revitalizing the agricultural economy of the Islands by purchasing locally sourced produce and botanicals and incorporating them into their beverages. The latest endeavor for this community and employee-owned brewery was a crowdfunding effort in late 2020 to expand operations, widen distribution regions, develop new products, and reopen their taproom which welcomed back guests in September 2020. Since opening its doors in December 2017, Ola Brew Co.’s Taproom has become the spot for locals and tourists alike to enjoy magnificent brews, mouthwatering food, and breathtaking views in an open-air atmosphere. While many of Ola Brew’s products are available in stores across the state and also Southern California, a major draw of the taproom is exclusive access to brews not-yet released and

66

menus that reflect the changes in seasons. Along with a rotating menu of beers on tap, Ola Brew Co.’s entire line of hard seltzers is also available to enjoy at the Taproom. One must-try is their Hawaiian Ginger that was built for the serious ginger lovers. The full flavor and spicy bite of ginger attacks and refreshes the palate but a gentle balance is brought to the seltzer with the addition of organic orange and lemon juices that results in an all-around delightful beverage. Another crowd-favorite is their Hawaiian Hibiscus Lavender that hints at a crisp glass of rosé from Southern France. Earthly hibiscus is blended with the subtle aromatics of lavender and rosemary creating a complex yet easy to enjoy seltzer. For the lovers of a well-made hard cider, the Taproom offers a range of hard ciders that are both fun and unexpected in their flavor profiles. Their signature Kona Gold Pineapple Cider is available on tap and constantly draws customers in with its tantalizing aroma and juicy sweetness of sun-ripened, local pineapple. Another stunner available at the Taproom is their Dragonfruit Lychee Cider which

blends Island-grown dragonfruit with lychee from Honaunau fermented in a dry style with a similar mouthfeel to a glass of champagne. Hard tea is another offering of the Taproom and an example of how Ola Brew Co. is riding the wave of beyond-beer categories for guests to enjoy. For something off-the-beaten-path, Ola Brew Co.’s Hawaiian Tulsi Berry Hard Tea will delight with its balanced sweetness and kick of caffeine. Beginning with a base tea of Kona Coffee leaves, this hard tea is flavored with a combination of blackberries, raspberries, the Tulsi plant, also known as Holy Basil, culminating in a balanced beverage set against earthy lavender that offsets the sweetness of the berry creating a truly magical tea. Food is a major component of the Taproom where chefs utilize the freshest local ingredients in dishes meant to be enjoyed with items poured from their taps. A great dish to share is the Onion Rings that feature thick cuts of local onions dipped in batter that contains the brewery’s signature Ma‘a Lager. Served with a choice of their house-made sauces, the lightly crisped onion rings are a perfect between-sip treat. For those in the mood for a savory taco, Pork Tacos are a fantastic choice and begin with a base of ground seasoned pork which have been raised on spent grains from the brewery. The tacos are topped with crisp lettuce, zesty onion relish, and refreshing garnishes of cilantro leaves, lime juice, and house-made Hawaiian chili pepper aioli. Their vegan taco option is equally delightful and start with creamy slices of avocado gently dusted with their house-made seasoning. The taco is topped with a crunchy slaw and drizzle of their Hawaiian chili pepper aioli that brings the

right amount of heat to the dish. A generous list of flatbreads is also available to enjoy while drinking their custom brews. The Ali‘i Fungi is consistently a winner and begins with scratch-made Bechamel sauce topped with savory roasted garlic, sweet roasted red onions, earthy Ali‘i mushrooms, and finished with spicy arugula leaves. This Big Island-born brewery has seen tremendous growth over the past years but their future looks bright due to continued increases in demand and new products in the works. This past April, Ola Brew Co. introduced their Okolehao to the public at the San Francisco World Spirits Competition where they won the prestigious Double Gold honor in the category of “Best Other White Spirit” and went on to be named Best of Class at the competition. As Hawai‘i’s only indigenous spirit, Okolehao is an exciting addition to the offerings of Ola Brew Co. and there are plans to begin offering their okolehao in the Taproom in the months to come. For Brett and Naehalani, Ola Brew Co. was never just a marketing ploy, but a decade long commitment to the community and their dedication to revitalizing Hawai‘i’s agricultural economy and creating innovative revenue sources for Hawai‘i’s farmers. Ola Brew Co. is open seven days a week and invites guests to visit the Taproom and be a part of their community. Ola Brew Co. Taproom is located at 74-5598 Luhia Street in Kailua-Kona. For more information, call (808) 339-3599 or visit olabrewco.com/tap-room. Open Monday to Thursday 12pm to 8pm, Friday and Saturday 12pm to 9pm, and Sundays 12pm to 7pm.

night markets Looking for something fun and unique to do on Friday nights? ‘ULU Ocean Grill + Sushi Lounge, located within the Four Seasons Resort Hualālai, is currently offering a Friday Night Market experience where the chefs present their interpretations on street food dishes from around East Asia in a fun, lively atmosphere. Guests can relax along the beachfront location and be transported to the continent of Asia as Chef Richard Polhemus and his team offer a revolving menu, highlighting some of their own personal favorite dishes from the region, complemented with local produce from around the Hawaiian Islands. This unique experience attempts to recreate the fun and excitement of the East Asian night market experience, where a variety of roadside stalls line up to sell their own specialty dishes in a busy, exciting atmosphere, but reimagined in a way only the Four

Seasons Resort Hualālai could pull off. Past dishes have included savory Korean seafood pancakes, crispy Korean fried chicken, delectable pork belly bao buns, as well as Szechuan style beef stir fry, using Szechuan peppercorns, known for their floral and numbing qualities, flown in from a specialty market in New York City. Chef Richard and his team are enjoying the inspiration of this concept, and hope as COVID-19 wanes, to have the chefs serving the food outdoors in front of the guests, similar to the stall set up in your favorite East Asian city. “We’ve been having fun with food,” Chef Richard says. “We’re always trying to keep things fresh. WHAT WE LOVE NOW

Only slightly off the beaten path is the Pāpa‘aloa Country Store & Café, situated along the dramatic Hilo-Hāmākua coastline. This historic building and store has been serving the community in various forms for over 100 years, back through the sugar plantation days, though the recent iteration opened in 2015. Half of the store is still a general store with everything from shampoo and sunscreen to liquor and ice cream, with a small counter for takeout plate lunch meals and baked goods. The other half is tucked behind the community’s modest post office, overlooking the blue Pacific as it serves as a sitdown restaurant, café, and music venue. The food, including the smoky BBQ Tri-tip Sandwich that uses local beef, is cooked to perfection, sliced thinly, and covered in slightly sweet and smoky Aunty Donna’s BBQ sauce, then sits on a bed of lightly dressed slaw on a soft bun. Other standouts include Fresh Fish Tacos, Fish & Chips. Chicken Katsu Plate, and Poke Bowl served with your choice of raw or seared

70

fresh fish, white or brown rice, and comes with avocado, furikake, cucumber, Asian coleslaw and spicy mayo—yum! The café also serves up many local staples like Lau Lau and Loco Moco. Their indulgent garlic butter fries alone is definitely worth stopping in for. This charming eatery also serves good burgers and pizza for those craving something more mainstream and great live music, too. And for those with a sweet tooth, desserts are baked fresh daily, and include sticky buns à la mode, or smaller bites such as lip-puckering liliko‘i (passion fruit) tarts or honeydripping macadamia nut baklava—truly the perfect ending to any meal. Just be sure not to miss the country store, hidden on the makai (ocean) side of Highway 19. A thatched shrine built and restored on an artificial island in Kamakahonu (Eye of the Turtle) is guarded by wooden images (ki‘i). King Kamehameha I settled here in 1812 and maintained his royal residence until his death here in 1819. King Kamehameha dedicated Ahu‘ena Heiau, a temple of prosperity, to Lono, god of fertility. Significant history was made on the royal compounds when Liholiho, who became King Kamehameha II, dined with the great queens Keōpūolani and Ka‘ahumanu, breaking one of the most rigorous kapu. This bold act brought on the abandonment of the ancient kapu system and opened the door to Christianity.

Pu‘ukoholā Heiau CULTURAL SITE on KOHALA COAST

This quiet and peaceful park allows visitors a glimpse into traditional Hawaiian religious practices and the fascinating life of the most revered Hawaiian king. Built by King Kamehameha to honor his family war god, Kū and to fulfill the prophecy of uniting the Hawaiian Islands, it tells the vibrant tale of the unification of the Hawaiian Islands during one of the most important periods in Hawaiian history. Thousands of men, including Kamehameha himself, worked for nearly a year in the construction of this temple. It is said that the workers formed a long human chain from Pololū Valley, over 20 miles away, to Pu‘ukoholā. They passed lava rocks down this human chain, one by one, and used them to skillfully build Pu‘ukoholā Heiau without the use of any bonding agents such as cement or mortar. Historians are not completely sure why it was abandoned, but a popular theory is that the water table decreased and minimized access to fresh water in this location. In addition to providing a glimpse into life in ancient Hawai‘i, Lapakahi offers stunning views of the coastline and ocean. Lapakahi is free and open from 8am to 4pm daily, with the exception of state holidays. Brochures are typically available when you enter the park.

The charming old-school island town of Hilo, seemingly frozen in time, has many waterfalls that are not only easy to find, but require just a short walk to view. Waiānuenue Falls, famously known as Rainbow Falls, is one such waterfall that stretches about 80-feet long and is probably the most easily accessible on the island—just a short walk from the parking lot and only a few minutes from downtown Hilo. The falls' name was inspired by the multi-colored prisms seen in the mist of the falling water and comes from ānuenue, meaning rainbow, and wai meaning water. The water spills over an ancient lava rock cave that is said to be the home of the Hawaiian moon goddess, Hina. Depending on the amount of rain, the waterfall sometimes descends at a trickle or it could be gushing over the edge with many ribbons after a storm. When his wife discovered this, he somehow ended up falling to his death, creating ‘Akaka Falls. The trailhead is located just off the parking lot. The paved route, which includes multiple steps in places (not wheelchair accessible), makes an easy to follow loop offering stunning viewpoints of the two waterfalls. Parking is $10 per car.

Green crystals sparkle like jewels in the sun next to a magnificent turquoise sea in this unusual, most beautiful crescent beach formed during an early eruption of Mauna Loa. One of only four green sand beaches in the world, this beach gets its distinctive coloring from olivine sand eroded out of the enclosing volcanic cone. Swimming can be dangerous and there are no facilities, but once you kick off your tennis shoes and have a refreshing soak, you will appreciate the awesomeness of nature’s gift. Take Hwy 11 to South Point Rd in Ka‘ū and go south 12 miles. From here, continue NE on the dirt road to the boat launch and hike the final two miles to this majestic beach. This area is very remote and if you choose to scale the embankment to the beach, only enter the water if you are very experienced. Be aware of strong currents. Palm trees line this inviting lagoon where green sea turtles rest on the black sand. Near the boat ramp at the northern end of the beach lie the ruins of a heiau (temple) and a flat sacrificial stone. The swimming area is very rocky, and it can be dangerous to swim. Restrooms and camping are available. Ki‘i pohaku (petroglyphs) can be found near the County Park Pavilions within a protected area surrounded by a rock wall, just past the parking area. Make sure you look for these ancient carvings as they are easy to miss. There are also three ancient heiau in the immediate vacinity of Punalu‘u. Nearby is Ninole Cove, a small beach with a grassy area and lagoon good for snorkeling, with sand channels that make for easier access.

For over 40 years, Mauna Kea Beach Hotel has been the most celebrated resort in Hawaii. And Mauna Kea Golf Course, carved out of ancient lava flows by Robert Trent Jones, Sr., is consistently ranked among the top courses in the world. Created on what was once a barren black lava field, today’s lush fairways tumble across seaside cliffs with unfolding ocean and coastal views. This course which emulates the legend of Hawai‘i as a golfer’s paradise, boasts the famed 3rd hole, where surging blue inlet waves thunder against a rocky black shoreline for an experience you’ll remember forever. Without changing the essential character of his father’s design, Rees Jones completed a tee-to-green renovation in 2008.
