George’s Paragon Seafood Restaurant George’s name is familiar around Sanctuary Cove - you’ll find his cafe across the road from this seafood restaurant, and a more casual pizza bar next door. But if it’s fresh seafood dishes with a Mediterranean twist that you’re after, this is the place to go. Lunch and dinner, George’s serves up an extensive menu of fish, crustaceans and mussels, alongside pasta, prime meats and poultry. Diners return time and time again, craving not only the food but the stunning waterfront view.

Any South-East Queenslander will agree that our seafood is second to none - the spoils of world-famous Moreton Bay, the Coomera and Nerang Rivers and the Coral Sea all arrive fresh to our doorstep for our tasting pleasure. Not one for playing by the rules, executive chef Grant Madgwick puts his unique spin on fresh seafood dishes, serving up a modern Australia, Italian, French and Asian fusion that delights the senses and leaves you wanting more. Rosé, Prosecco, Pinot Noir and Chardonnay are the styles/varieties that we are seeing ‘on trend’ at Corker Cellars. Rosé is a very versatile wine that really suits our lifestyle and cuisine here in Queensland. The wines of Provence, France are the guiding light in this category. Prosecco is a cheaper alternative to the more expensive French Champagne, usually a little lighter in alcohol content, and a fun wine to drink. Pinot Noir and Chardonnay growers in both Australia and New Zealand are recognising site selection, clonal vagaries and concentrating on regional expressions to make some of the best examples on the global stage. The French are keeping a close eye on us!

When my mother was pregnant with me, she was prescribed a pint of Guinness Stout a day by her doctor. It was inevitable that my career path had leanings towards the liquor industry! Fast forward to my late teens where, in Adelaide, I was lucky enough to gain employment with the Vintage Cellars Group, when it was still a family-owned independent premium wine retailer. I then travelled, working vintage in New Zealand then returning to Adelaide to run a record store, still with a hand in the wine industry, helping make a little wine and promoting festivals. I moved to the Gold Coast (when the digital age put an end to the music retail industry) and ran into Ioseco owner Max Alferi, who needed some experienced wine staff. Max was a past director of Corker Cellars. TELL US ABOUT THE CHANGING DEMOGRAPHIC OF AUSTRALIAN DRINKERS. WHAT TRENDS ARE YOU SEEING IN THIS RESPECT ?

Overall consumption of alcohol has steadily risen over the last few years, with an increase in the per-bottle average spend. Premium wine has shown good growth and drives both the domestic and export markets. 8

Pairing the right wine with a meal can be a revelatory moment. Some classics are pan-fried salmon with a crisp dry Rosé, chargrilled steak with a full-bodied Coonawarra Cabernet, or even Pinot Noir matched with duck. When you get an idea of the complimentary aspects wine can have on the dining experience, you will get an elevated sense of enjoyment and be on the path to gastronomy. IN YOUR OPINION, WHAT ARE THE BEST LIQUID CHRISTMAS GIFTS TO GIVE?

This Christmas, I will be giving out bottles of Champagne - the perfect celebratory tipple. Magnums are a fantastic gift and ideal to take to larger gatherings - eye catching too! Single malt whisky is a family favourite and the resurgence in quality has been phenomenal. IF YOU’RE HEADING OFF ON A SUMMER PICNIC OR OUT ON A DAY ON THE WATER, WHAT ARE YOU TAKING WITH YOU TO ‘STAY HYDRATED’?

An esky full of beer to enjoy with friends is a perfect start. The craft beer space is very crowded at the moment, so my samples fridge is chock-o-block! I love a good Riesling, so something from the Clare Valley would come along for the ride. Once the sun drops into the ocean, I would open a bottle (magnum, of course) of Charles Melton Nine Popes. Charles was the first to make a GSM blend in the Barossa and this wine is possibly Australia’s finest.

Take a walk through The Marine Village or spend an afternoon at the Country Club and you’ll notice there’s one thing Sanctuary Cove visitors all have in common: an impeccable sense of style. But which trends will we be seeing more of as the warm weather creeps in, and how should we be embracing them? Stylist Susie McWatt Forbes has a few good ideas. “This summer, I’m expecting to see a lot of creativity when it comes to colour,” she says. “A bold, block shade teamed back with nude accessories. Pastel pinks, sage greens and butter boldly paired with tan accents. And, for the lovers of monochrome, lots of black and white worn with pastels for a twist.” When it comes to tones on trend, Susie’s pick for the season is emerald green - particularly with denim, rich, spicy hues and white. “Go bold, and keep accessories minimal,” she adds. Linen makes a triumphant return, in everything from singlets to shorts, longline dresses to sassy playsuits. Try a linen suit - structured jacket and extra-wide leg relaxed pant - for events and you’ll nab ‘Best Dressed’ time and time again. “This super natural fabric ticks all the boxes,” Susie says. “A tip: pop it in the dryer just before you put it on.” Fans of animal print know this staple will never truly die, and it’s back this summer as popular as ever. Try teaming it with a bold fuschia, orange or emerald green for a bit of summer magic. From sensational playsuits and jumpsuits to mini and midi dresses, anything goes when it comes to summer silhouettes. “Know your style and pick what works best for your body shape,” says Susie. “Remember to change up your look, too. Go from sporty to boho to fun and flirty with a view bang-on accessories.”

Now for the question on everyone’s lips: how can you perfect a polished summer look with minimal effort? “I like to have some never-fail combinations in my repertoire that I know I can always fall back on,” says Susie. “A nice pair of natural espadrilles or wedge ropy heels and anything shell - whether it’s earrings, an ankle bracelet or a bold neck piece - paired with an off-theshoulder style is always a winner. “A high-waist pant in a crazy print is definitely a summer must-have. Just add a flouncy top and plenty of attitude - and you’re good to go!” And finally, which accessory will carry us through to autumn? “My current favourite would have to be a headwrap,” says Susie. “Think bold and beautiful, a headwrap can act as a splash of colour, a talking point and help you take care of a bad hair day!”

When you think about those headlining magicians and incredible illusionists of the past hundred-or-so years, the name Harry Houdini will most definitely spring to mind. But did you know that awardwinning Sanctuary Cove master magician Matt Hollywood has links back to this iconic illusionist and stunt performer? Matt’s great grandfather was a turn-of-theCentury magician named Luke Stirling, or “The Great Stirlini” as he was known on stage. Around 1911, Houdini visited Melbourne on an Australian tour and Matt’s grandfather was involved in Houdini’s shows, assisting with his stunts. Matt has strong and very fond memories of his great grandfather, Luke.

“He would do incredible things with fire,” Matt recalls. “I’ll never forget it. “When he was 96 years old, I was 10 and he taught me a coin trick where - with a POP! – the coin would just instantly vanish,” Matt says. “That trick still tricks other magicians today. I include it in all my shows as a way of ensuring my great grandfather’s magic lives on.” Originally from Melbourne, Matt has spent the past 17 years living on the Gold Coast but jokes that he’s still waiting for the day that he’ll be able to call himself a ‘local’. While his fascination for magic never wavered from those early childhood memories spent growing up with The Great Stirlini, Matt admits that it took him a while to take the “scary” leap of faith to become a fulltime magician. In fact, he spent a decade working as a police officer in Melbourne, all the while honing his magic tricks and performing sporadic shows around his cop roster. It was on that fateful move to the Gold Coast, however, that Matt decided to boldly pursue his life’s passion to perform magic. And it has definitely paid off. After a decade travelling the length and breadth of Australia performing magic shows at corporate gigs and gala events, Matt found the perfect ‘home’ for his business in The Marine Village at Sanctuary Cove six years ago.

My wife and I love cruising out to Tipplers, dropping anchor, then going ashore by tender to enjoy a great lunch at the Tipplers Café. Good friends of ours, Scott and Rebecca, have operated the Tipplers Café for a number of years now, and it’s a great day out where everyone is made to feel really welcome. As for what we pack, well, we never know if a day trip to Tipplers will just be a ‘day trip’, so I always pack an overnight bag - just to be prepared! WHAT ARE YOUR TOP TIPS FOR STAYING SAFE ON THE WATER?

Always check the weather reports prior to your trip. Before leaving the marina, check over the engine, electricals, make sure the VHF radio works and ensure you have enough fuel and water for the trip. Being originally from England, I have a certain allegiance to the Princess brand. On my last trip back to England a couple of years ago, I went and spent almost a whole day being shown around the Princess Yachts manufacturing base in Plymouth. The size of each of their sites in the city is incredible. Princess also employ in excess of 4000 people, all part of the manufacturing process. Great product, exceptional quality build. WHERE’S THE BEST PLACE FOR A BOATING DAY TRIP? I would

recommend anywhere from the shores of Wave Break Island on the Gold Coast up to Tangalooma in Moreton Island. This is about a two-hour trip for local Gold Coasters but well worth the effort for crystal clear waters and the ability to have a snorkel on the wrecks.

I honestly wouldn’t want a huge boat if money were no object. Instead, I’d like a Whitehaven Harbour Classic 40. It’s a ‘picnic’ boat - it’s a party for 10, dinner for five and, with two double beds, sleeping for four. WHAT MAKES BOATING ON THE GOLD COAST UNIQUE?

There are lots of places to explore, and it’s a very pretty environment. I feel like I’m in heaven here: I love boats, I love theme parks and I love the sun. I couldn’t be happier!

IF YOU’RE TAKING YOUR WATERCRAFT FURTHER AFIELD, WHERE DO YOU LIKE TO GO? Hamilton Island is absolutely one of

our favourite locations. Most of the reefs and islands on the way up are a pleasure to visit as well.

obviously a Horizon and I would tend towards some of the new FD range especially the new FD 102 that is due to hit the water for our FD open house in Taiwan (January 14-15, 2020).

canal estates, it is so unique! There are not many places around the world that you can have your boat in your backyard and have access to the Broadwater and ocean within 10 minutes.

WHERE’S THE BEST PLACE FOR A BOATING DAY TRIP? I love a day at Jumpinpin or Wave Break Island. Clean water, sandy beaches and great spot for the kids to get out and play or wet a line. IF YOU’RE TAKING A BOAT FURTHER AFIELD, WHERE DO YOU LIKE TO GO? In summer, the waters of Tasmania are amazing. In

winter, the big boats mostly migrate north for the colder months and the hundreds of gorgeous anchorages throughout the Whitsundays right up to Cairns and Port Douglas are the absolute best way to escape the cold of winter. 720 Skylounge; it’s as big as one might go while remaining intimate on the water and driving yourself. You can typically get into marinas and anchorages that the larger 30-50m yachts can’t get into.

so many locations to hide from the weather, increasing your days onboard. It’s the ideal ground for boats 25ft - 75ft. There are also plenty of marinas to grab a berth for the night - you can meet friends for lunch and stroll back to your boat and enjoy all the amenities.
