FIRST WORDS

Chairman’s Message Dear Members, These past two months have passed by very quickly, but not without a flurry of activity. Firstly, let me thank all who helped make our Club Day celebrations a successful and memorable one. I am sure golfers enjoyed the Chairman’s Trophy under the unblemished sky that morning. The official opening of our newly renovated Water Sports Centre (WSC) was also a resounding success. It was encouraging to see so many people sailing, kayaking, dragon boating and stand-up paddling. Many of us in the Committee were heartened by the huge turnout and interest shown. Kudos to the Sports Committee and staff for organising the event. The WSC is indeed an excellent facility for water sports and recreation, and I encourage all members to utilise it. In March, we joined the nation in mourning the passing of Singapore’s Founding Father, the late Mr Lee Kuan Yew. Many of our members penned tributes for the Club’s dedicated condolence book, which mirrored the nation’s outpouring of grief for an extraordinary leader who stood at the forefront of Singapore’s history. Mr Lee was clear in his vision of a garden city even as Singapore embarked on industrialisation as a fledgling nation. We Seletarians should preserve his legacies by continuing to care for the environment, and our pursuit of the Audobon certification for golf courses signifies our commitment to green practices and environmental conservation.

SELETAR BUZZ • MAY 2015 | JUN 2015

In April, one of our longest-serving Chairmen, Mr Goh Yong Hong passed away peacefully at the age of 76. A man with great dedication, he served as Chairman from 1998 to 2010, but was part of the Management Committee for years prior to that. During his tenure, Mr Goh oversaw both the Club’s relocation from its old premises to our current location, as well as the two renovation projects in 2000 and 2004 to mould the golf course into the beautiful landscape it is today. For that and the rest of his deeds to Seletar, we will always remember him. Moving forward, our History & Heritage Project is moving into full swing as we have engaged the Straits Times Press to encapsulate the Club’s past and present in a coffee table book. We even managed to get interviews with veterans of the British Royal Air Force who served at Seletar during those early days. I am sure our members also have many stories to tell, so I encourage everyone to contribute their old memorabilia or photographs for this project. This June heralds our annual Seletar POSB Junior Open. It promises an exciting tournament with our present suite of juniors, so I hope the Club will continue to lend its support for them. At this juncture, I would like to give special mention to our cover girl, Jennifer Yan, who has achieved so much in her golfing journey. Jennifer began as our junior golfer who showed precocious talent at a young age. Since then she has garnered several accolades including

two silver medals at the Asian Games and the 2010 Youth Olympic Games. She was also the champion for both the 2013 Ladies’ and Girls’ British Open Amateur Championship. Currently, she is competing professionally in LPGA tournaments in the USA. Despite her accomplishments, Jennifer remains humble and has proudly acknowledged Seletar as her home ground for golf. In recognition of her outstanding achievements and hard work, we presented her with an honorary membership at the Chairman’s Trophy Lunch. On the staff front, the Club continues its Customer Satisfaction Programme, which saw frontline staff completing the first phase of the programme. Recently, the Fast Improvement Training (FIT) scheme was created to identify areas for improvement and subsequently implement simple measures to enhance processes and operations so as to elevate the overall experience of members at Seletar. Finally, I would like to thank our General Manager, Mr Anthony Leong for his contributions to the Club, as he will step down from his position on 31 May 2015. We wish him all the best in his future endeavours. Anthony will stay on for another two weeks to ensure a smooth transition when his successor, Mr Philip Tan, joins us on 1 June 2015. I am sure Seletarians will make him feel at home. Khoo Teng Chye Chairman

One of the tributes illustrated in the condolence book

March 2015 was a sombre day at Seletar Country Club as we grieved the passing of Singapore’s Founding Father and first Prime Minister, the late Mr Lee Kuan Yew. During the period of mourning, all events were cancelled for the week. Throughout that time, the Club had also set up an area where members could write their tributes in a condolence book. Needless to say, all of the pages filled up within days with fond memories, thank yous and even drawings.

More tributes penned in honour of the late Mr Lee

After Mr Lee’s funeral which was held on Sunday, 29 March 2015, members within the Club stood in a nation-wide minute of silence in remembrance of a great man who had moulded Singapore from a backwater village to the metropolis that it is today. Rest in peace, Mr Lee. Your deeds will never be forgotten.

Seletar Remembers Mr Goh Yong Hong (1939 - 2015)

M

ost of our staff and members remember our former Chairman, Mr Goh Yong Hong, as a man of great passion and compassion. The former Chief Commissioner of the Singapore Police Force was a man who cared deeply for the staff and their welfare. “Mr Goh never tolerated members who mistreated staff. He was completely dedicated and committed to the Club, and was often very involved in many of Seletar’s projects,” said Head of Operations Melvyn Fones, who had served under Mr Goh in the early 2000s. During his reign, Mr Goh oversaw many projects that moulded Seletar Country Club into what it is today. One of his legacies was the Seletar Tiger Tavern, which was sponsored and supported by Asia Pacific Breweries. Today, the Tavern is a hub for members and their family to gather and enjoy good food and music. Another of his memorable projects was the major renovations which were done to the golf course as well as what was then called the Seletar Sailing Centre, both in 2000 and 2004. Mr Goh was a man of clear vision, and he endeavoured to ensure our Club maintained its family-friendly spirit without compromising on comfort and luxury. Mr Goh’s passing on Friday, 10 April 2015 left many at Seletar grieving. Yet although he may no longer be with us, his legacies live on.

n the beginning of the year members may have noticed that the hands of the Club’s clock tower have not moved for a while. We are proud to announce that its repairs have been completed. The new clock tower now features an accurate electronic Global Positioning System (GPS) which ensures that the time will virtually never be out of sync with the rest of the world. The painting contractors also did a wonderful job of cleaning the stained glass, and the tower clock can clearly be seen, even from a distance.

Farewell, Mr Leong & Hello Mr Tan! T

his issue we bid farewell to our General Manager, Mr Anthony Leong, who will step down from his post on 31 May 2015.

Under Mr Leong’s charge, the Management stabilised its staff turnover rate and strengthened the management team into the force that it is today. He also spearheaded the Customer Satisfaction Programme, which aims to improve the overall customer experience of members and guests within the Club. Thank you for all your hard work, Mr Leong! We wish you all the best in your future endeavours. In the same vein, we would also like to welcome on board our new GM, Mr Philip Tan, who will join us on 1 June 2015. Mr Tan hails from an extensive regional marketing and business development background, and is deeply involved in grassroots activities and social work. Mr Leong will stay on for two weeks to ensure a seamless transition with Mr Tan. With the former’s legacies and the latter’s wealth of knowledge and experience, we look forward to smooth operations and an even better Seletar.

The RAF Returns W

e were honoured when members of the RAF Seletar Association paid the Club a visit on Wednesday, 1 April 2015. This association, comprising veterans of the British Royal Armed Forces who once served at the Seletar Airbase and their families, were certainly a vivacious bunch! In truth, they were invited guests of the Seletar Hills Estate Residents’ Association’s dinner & dance event held here, and we were grateful to be given the opportunity to touch base with many of those who had numerous stories to tell of the old Seletar Base Golf Club from the 1950s and 60s. We even managed to score interviews with David Taylor, Chris Puxley and Charles White, all of whom have many fond memories of Seletar back then. Who knows? Perhaps our own members will get a glimpse of their past in our History & Heritage book to come.

eletarians had a ball of a time on 28 February 2015 during the Club’s annual Hong Bao Golf and Dinner. Despite the scorching weather, golfers forged on in between delicious satay breaks. At the end of the day, Francis See emerged the overall winner with a score of 42 points, closely followed by runners up David Yeo and Raymond Ng. Our Seletarian golfers cooled down from the uncompromising heat of the day’s game and let loose at the night’s dinner event. The Seletar Room was abuzz with numerous toasts coupled with scrumptious menu for the night including mouth-watering cereal prawns, steaks and desserts.

Nothing’s better than a satay break during a game…

As the night drew to a close, some of our members went home with exciting lucky draw prizes! Jennifer Wong and Tony Ng won $200 worth of MST vouchers and a Cobra stand bag respectively, while top prize winner Amelia Tan walked away with a Lynn Ez Cart worth $289. Huat ah!

"Cai Qing", which translates into plucking the greens, is a traditional ceremony held during the Chinese New Year to symbolise bountiful wealth for the household. Everybody wants to pet the kitty!

An enthralling highlight to this colourful event, one young dancer from the troupe climbing a three-metre tall pole to reach for a vegetable stalk dangling from the second floor. Once he got down, parents and children alike all crowded around the dancers as the lions spat out sweet goodies for all to enjoy. Another treat was the exciting dragon dance and the God of Wealth handing out sweets to all the youngsters and young at heart.

aturday, 21 March 2015 was an unforgettable day for many Seletarians as we celebrated the Club’s 85th anniversary. From the Chairman’s Trophy Golf to the Official Opening of the Seletar Water Sports Centre, there were activities galore at every location. If you did not get a chance to join us on this spectacular day, here’s what you missed!

Chairman’s Trophy Golf & Lunch The days leading up to Club Day were wet and dreary, and we at Seletar worried that weather conditions on the day itself would not be ideal for the Chairman’s Trophy Golf. Luckily, the weather gods smiled upon the course on that day. The sun finally emerged and blessed Seletar with a wonderful game. After an exciting game, Mark Lee Kam Hong won the coveted Chairman’s Trophy with an overall score of 43 points. Congratulations, Mr Lee! After the game, golfers retreated to the Seletar Room to enjoy a sumptuous buffet spread and witness the prize presentation ceremony for the winners of the respective categories.

All smiles for at Chairman’s Trophy game!

This year’s Chairman’s Trophy Lunch was an extra special one as we hosted several VIPs as well as Seletar’s golf darling, Jennifer Yan. In recognition of her achievements as a pro golfer and roots as a Seletar junior golfer, Jennifer was awarded an honorary membership by our Chairman, Mr Khoo Teng Chye. We at Seletar are proud of our rising star and her achievements! Congratulations Jennifer!

Opening of Seletar Water Sports Centre The Seletar Water Sports Centre (WSC) was alive with activity on Club Day as it geared up for the Official Opening. To kick off the day’s events, Singapore’s first Stand-Up Paddling Reservoir Race commenced at 11am, where more than 30 participants competed head-to-head in a rigorous 8km route. It was the first time ever that stand-up paddlers were allowed to practise their unique sport in any of Singapore’s reservoirs, and we were proud to host this momentous race. As the morning went on, members and guests alike filled the WSC. Kayaking, dragon boating and even stand-up paddling try-outs were a hit among participants, who were given the opportunity to explore the Lower Seletar Reservoirs for free. A buffet spread was also prepared for all to enjoy. The official opening began with Chairman Khoo Teng Chye and several members of the Management Committee as well as

To mark this joyous occasion, our guest-of-honour together with the rest of the welcome party gathered at the water’s edge to witness dragon boat and kayaking races with participants from Greendale Secondary School, the students from the Seletar Voyagers Kayaking Programme, the Seletar Lapwing Sea Scouts, and cancer survivors the Pink Spartans. A prize presentation ceremony also followed for all participants of the respective races, with the SVKP students bagging both the kayaking and dragon boating races! Fun, Food, Fiesta! Back at the Main Clubhouse and Sports Complex, the Club Day activities were in full swing. Carnival games and activities were a hit among the kids. Long queues snaked in wait for popular rides such as the Rodeo Bull, Reverse Bungee and Human Foosball. When showers came later, huge crowds formed around the delicious and (free!) churros stand and games booth.

Closing the end of the day’s activities was an exclusive Beatles’ showcase by our very own Seletar Band at the Tavern. Needless to say their performance coupled with the night’s Satay and 1-for-1 beer special kept everyone in high spirits. What an incredible day! It was indeed a happy Seletarian anniversary.

At the main clubhouse, the High Tea Buffet held at the Seletar Room offered an exquisite array of palate pleasers such as Sushi, Nonya Babi Pongteh, Mexican Tortillas, Gado Gado and various pasta dishes. The highlight of the buffet was a superheroesthemed kids’ corner with a DIY pancake station, Angry Birds beef balls, chocolate fondue and more. Downstairs at the Main Clubhouse lobby, the bazaar drew a bustling crowd with a plethora of items on sale from handmade crafts to Swarovski jewellery. As the evening drew to a close, a lucky draw was held and over 20 attractive items, including an iPad mini 3, a desktop computer and a limited edition Nespresso machine, were won by members and guests!

Course Care Begins with You! A

s much as we all love Seletar’s picture-perfect 18-hole golf course, we know that a lot of work goes into maintaining its grounds. From marshals to horticulturists, everyone plays a part to ensure that all members enjoy their play while they are out on the course.

It is important to note that maintenance of any golf course depends on its golfers as well. Here are some quick tips so you can play your part to care for the golf course too.

Ball Marks

Divots

Sand Bunkers

How to fix them: Insert your ball mark repair tool into the turf at the edge of the indentation. Push the edge of the indentation to the centre, and work around the edges. Gently pat down the repaired ball mark with your shoe or putter.

How to fix them: Pour sand onto the divot (usually found in containers on your buggy) and pat down to smooth out the surface.

How to fix them: Rake over any signs of play on the sand. Don’t forget to remove your footprints too, so gently rake over those as you step out of the bunker.

What: Ball marks are little craters formed on the greens when a ball descends from the sky, impacting the ground.

What: That little patch of grass that goes flying after a good swing but results in a scar on the turf.

What: All those oases of sand which makes your play that much more interesting.

They even managed to celebrate all of the March Babies' birthdays on their last night there. Now that’s what we call a special Bandung Birthday Bash! A head massage by the water… this is the life!

SGA Interclub League 2015 T

he SGA Interclub League is back, and this time Seletar Country Club is ready and raring to take on its opponents. Here is a run-down of how this year’s league will be played and where Seletar stands so far. There are 13 clubs in Singapore participating in the league. Each club will field 14 doubles pairs: two pairs for Premier League (hcp 0 to 4.9); three pairs each for A Division (hcp 5 to 9.9), B Division (hcp 10 to 15), and Seniors Division (age 55 and above); and one pair each for Ladies A (hcp 0 to 11), Ladies B (hcp 11.1 to 18) and Ladies Evergreen (age 50 and above). Games are played every alternate week at a neutral ground (schedule for play is available at the SGA website, www.sga.org.sg). At the end of the season, prizes are given for the following: 1. Overall Winner, Runners-Up and Second Runners-Up (based on points accumulated; three points for a win, one point for a draw and zero points for a loss)

By Anthony D’cruz

Our first game was against Sentosa Golf Club at Changi Golf Club. Seletar came out tops with an overall score of 9 – 5, scoring three full points for our Club. Our Premier Division are the defending champions. In fact, they were champions in 2013 and 2014, and should they win again it would be an unprecedented hat trick. We wish them luck. Look out for the results of our next game held on Sunday, 26 April 2015, against Raffles Country Club at the Laguna World Classic course in our next issue. For the

Love of Golf Jennifer graced the cover of our magazine in the April 2007 issue of Seletar Buzz.

A

t Seletar Country Club, Jennifer Yan has become a household name. This comes as no surprise – after all, Jennifer (or Jing Yan as many call her) began training at what was then called the Seletar Base Golf Club when she was only three and a half years old. "I started at Seletar Base mainly on the grass range. I began on the golf course when I was close to five and had immense fun playing around the old course, where most of my early golf memories are. Golfing gave me a thrill and I knew that I wanted to be the best and to compete since then," the Seletar Junior Programme alumnus explains. Now at 19, this golfing wunderkind has several accolades under her belt, including silver medals at both the Asian Games and the 2010 Youth Olympic Games held in Singapore. In 2013, Jennifer scored a double win as she clinched first in both the Ladies’ and Girls’ British Open Amateur Championships. She also won several Best Amateur trophies in tournaments including the 2009 and 2012 Suzhou Taihu Ladies Open, the 2013 Omega Dubai Ladies Masters, and the 2014 Evian Championship. These days, this University of Washington undergrad competes professionally in Ladies Professional Golf Tournaments in the States – in our e-mail interview with her, Jennifer was in Hawaii competing in the LPGA LOTTE Championship.

Good Ol’ Seletar Days

Needless to say, Jennifer has much to be proud of. Yet despite her many achievements, she remains absolutely down-to-earth and never fails to remember her roots at Seletar. "Singapore is both a home and a base for me so I am always pleased to come back when I can to revisit my friends and the members of Seletar who always take to me kindly," she says. For Jennifer, Seletar’s golf course is one that she remembers well. As a junior, she trained here constantly. Recognising her potential the Club later adopted her as a talent in 2006, where she enjoyed sponsorships for most of her trainings, tournaments and equipment. And as her golfing career took off, this dedicated golfer was on the course daily practising her technique. "Seletar was kind enough to give me a platform and facility where I was able to put in the hours of work needed to get better at the game. The course is relatively long and requires distance and accuracy, as well as careful planning," says the former Raffles Girls’ School and Raffles Junior College student, who remembers her favourite holes on the course were the ones which challenged her to improve her game. "My favourite hole would probably be either the 14th or the 18th. The former has the dangers and lures of the water and a relatively small undulating target for a green while the latter is long off the tee and has the glare of the tavern while you finish out!"

All smiles as Jennifer receives her honorary membership

To Mom & Dad with Love…

Still, this golfing prodigy would never be where she stands now if not for the support of her family. Jennifer fondly remembers one of the very first toys that she played with: a set of plastic clubs gifted by her parents, Yan Huisheng and Zhang Hong, shortly after she was born. Before she even entered kindergarten, she was already getting schooled in golf, and would follow her father to the Seletar Base Golf Course to practise. Seletar’s longest-serving golf receptionist, Liza, remembers Jennifer was different from the other juniors in her generation. "She was very shy and quiet, and would follow her father wherever he went. But you could tell she was very focused for a young girl, and always polite and respectful," she said. Indeed, Jennifer’s parents brought her up well. She recalls the most important values she learned from them were respect, humility and gratitude, traits which are still deeply ingrained in her today. Mr and Mrs Yan were also constantly there to support her in her golfing endeavours, from paying for her golfing lessons when she was younger to supporting her in her various tournaments thereafter. "One of the best moments would have to be making the cut at the British Open three years ago. I shot a second round 69 after a first round 80, the second lowest score of the day through wind and rain to just make the cut. Both my parents were there with me and my dad was caddying for me as well as my mom to support me which was extra special. It was very difficult to take but I was encouraged and motivated as my parents and I never gave up hope." she recalls.

Jennifer and her mother Zhang Hong, enjoying a happy moment

The Yans are clearly incredibly close, and golfing is a common passion that they share (Jennifer’s little brother, six-year-old Yan Ming De, also plays golf here at Seletar). It is unsurprising then that her parents also went on stage with her during the Chairman’s Trophy lunch on 21 March 2015 to receive an honorary membership from the Club in recognition of her efforts and hard work. "My parents have everything to do with my golf and I will never be able to thank them enough. They have always supported me and have never pushed me nor left me for want. They provided me with the facilities and opportunity to grow as a golfer and fall in love with the game on my own," she says. When asked what message she would like to give to her parents with regards to her success, she says, “I would like to say thank you firstly for bringing me into this world and caring for me. Mostly for the invaluable support and guidance they have given throughout my life and career and I look forward to much more to come!" What an apt message for Mother’s and Father’s Day! The Seletar family will also be supporting you all the way.

HISTORY & HERITAGE

Walking Down Memory Lane… O

ne of our most longest-serving staff, Sally Er, has been with Seletar Country Club since its old days at the Seletar Base Golf Course. Members and staff alike all know Sally as one tough cookie, with her no-nonsense demeanour and solid work ethic. Still, underneath that exterior is a heart of gold – Sally never fails to care for her colleagues and members. That is why many of us regard her as Mama Sally; mother to all at the Club. In honour of Mother’s Day, we walked down memory lane with her as she reminisced about the past at Seletar… You’ve certainly been here a long time. How did you begin working at Seletar Country Club? I started in 1985 at the Seletar Base Golf Course. Doreen Liang, an ex-colleague who was then working at the Club asked a friend if she wanted to join, but it was too far for her. So she asked me, and I went for the interview and got the job. I started first as an accounts assistant, but now I’m a Senior Executive of Housekeeping. What do you find are the biggest differences between the old Seletar Base Golf Course and the current Seletar Country Club? The old golf course was smaller – it was only a 9-hole course – but I enjoyed playing on it much more than our current 18-hole course because it was much easier to play. Was there a particular hole that you enjoyed playing back then? There’s a hole I remember, I think it was Hole 4, where we had to cross the road to go to the other side of the course to play. That was my favourite because there were no bunkers or ponds!

Mama Sally smiles next to one of Seletar’s landmarks near the Main Clubhouse lobby So how did you feel when we moved from the old location to our new one? I was sad to leave, of course, because it was where I worked from day one. As soon as we knew the golf course would be taken away, some of the staff and I started playing much more often. About 12 of us even began taking golf lessons. What drives you to stay on at Seletar throughout all these years? Besides the fact that I focus solely on my work, I stay on for the members, especially the pioneer members who have been with the Club since SBGC days. They are all very friendly, which makes me happy to work at Seletar.

Alison Goes Cycling! A

ccounts assistant Alison Cho isn’t much of an athlete, but her enthusiasm sure makes up for it! She gave our monthly night cycling session a try despite not cycling for years, and here’s what she thought of her adventure! Let’s start off with the basics. What did you have to bring for this Night Cycling? I only brought my exercise clothes and shoes because the Club had bicycles and helmets that I could use. But the more experienced cyclists brought their own bikes and gear for the session. Tell us your experience at the night cycling session. It was my first time on a night cycling expedition. It was quite a sizeable group made up of both staff and members with a mix of experienced and casual cyclists. We entered the golf course just as the sun was setting. I have never entered the golf course, so it felt like I was entering a beautiful park with lots of plants and flowers to admire. Were there any safety measures carried out during the session? There were safety riders at the front and rear of the buggy path to ensure we did not veer off course or to help us if we had any accidents. First aid kits were also made available.

As our 18-hole golf course is quite large, did you find the route too long or challenging? It is a long route and I only cycled for one round. But there were others who went for three rounds or more. I would say that one round was just nice for me, and would rate the difficulty of the route about 7 out of 10 because there are some uphill slopes. What was your favourite part of the session? Going downhill on the slope. It makes you feel like you’re flying, like that scene in Titanic!

Cubs on Water

All ready for pool kayaking

O

ur young cubs had a blast on Saturday, 7 March 2015 at their first pool kayaking activity at Seletar Country Club’s Sports Complex. Organised by SplashAxis, this activity was designed for the children to become more confident in the water and familiarise themselves with kayaking skills so that they are better prepared for water activities in the reservoir and sea. Pool kayaking provides a safe environment for beginners to learn basic techniques such as launching, disembarking, and capsize drills.

Pool kayaks are excellent for developing good techniques

For many of these young ones, this session was their first experience in kayaks but that did not stop them from having a ball of a time – they even managed to play a round of kayaking games! “Whether or not they were scared, all of them were brave enough to try. Their parents were also very supporting and encouraging,” said Ding Kian Seng, SplashAxis organiser and instructor for the session. Looking that these photos, we think they’re ready for the sea!

All lined up for great fun!

Easter Egg-stravaganza! T

he Sports Complex was awash with egg-cited children squealing and shouting with joy on Sunday, 5 March 2015 as the club held this year’s Easter Carnival. The afternoon began with a kids’ telematch game, where more than 30 children were grouped into three teams and had to complete a series of challenges such as tossing rings to a pole and throwing a mini bowling ball. Shortly afterwards, the children gathered to the Easter eggdecorating station, where parents and their kids had fun bedazzling their eggs with sparkly stickers and paper. Once all the eggs were attractively decorated, the children formed a long Choo Choo Train line and proceeded to the entertainment room for the highlight of the event: the Grand Easter Egg Hunt! Squeals of laughter filled the room as children of all ages and sizes scrambled in search of the colourful eggs.

Hmm… wonder how many eggs is really in this jar…

At the end of the exhilarating event, prizes were awarded to the children who found the most eggs, the best decorated eggs and the team which won the telematch game. Whether or not they won, all the children were treated to balloons and yummy goodies. It certainly was an egg-stra special Easter! See you again soon kids!

That one’s my pretty egg, and this one’s the one I want to eat!

If I like it, should I put a ring on it?

Let’s make a choo choo train! We want the pink ones!

Where are those eggs?

This takes a lot of concentration

Papa Peter Answers Your Questions I

t’s Father’s Day! In celebration of this special day, we sit down with one of the most fatherly (and handsome) men in Seletar to ask about his life as Executive Chef of F&B and some Frequently Asked Questions that our members have sent in.

Hi Chef! Tell us how long you’ve been working at Seletar and describe your experience here.

You’ve been dubbed the Daddy of F&B. What is one advice do you always give to your kitchen and service staff?

I’ve been here for three years. So far I’d say it’s a good club to work in.

The customer is not always right, but they are all important.

What is one dish that you would recommend our members and guests to try? There are too many dishes to recommend but our wadehs are a popular choice among diners. How many kids do you have, and do you cook at home too? I have two children, a boy and a girl. However I seldom cook at home because most of the time I’m too tired to do so! But if there’s anything my kids ask for, I’ll usually make for them anyway. Speaking of food, how often does the menu get updated? The menu gets a refresh every six to nine months, where we replace less popular dishes with new interesting ones. We know you’re an accomplished chef, but we know you can’t be around all the time. How do you ensure that the food quality and taste are consistent across all our F&B outlets? Prior to cooking, we usually do regular checks on the quality of our raw food products. While cooking, I always remind our cooks to do three things: see, smell and taste. This allows them to always ensure their food quality is up to scratch.

SELETAR BUZZ • MAY 2015 | JUN 2015

With this Customer Satisfaction Programme in place, what changes have been made to improve F&B operations? Our frontline staff have recently been trained to improve their service quality. In order to streamline operations, we have also placed cutlery baskets and water jugs on the tables so customers may help themselves to whatever they need. Recently our Fast Improvements Teams have also begun looking into other improvements we can make in the future. Your staff works really hard especially on weekends and big functions! Do the cooks and banquet staff get days off when there are no events? Our staff do not get days off during non-event periods as they still need to use that time to do food preparation. However if required, they do get paid for hours spent on overtime. What are some of the challenges that you encounter as Executive Chef of our F&B outlets? Cutting down on MSG as part of our efforts to promote healthier lifestyles. We received lots of feedback on the change in flavour of the food, there are changes to make for a satisfactory compromise. That being said, what is the best thing about being here? The best thing is definitely the friendly members that I get to meet here.

Are there any F&B perks that members can expect at Seletar? Aside from the discounted prices, members do get priority when it comes to seating. So if you’re in a queue at the Terrace, our staff will check whether you’re a member and get you seated first. We love the food at Eagle’s View! Unfortunately sometimes it is closed for private functions. How can we get our EV fix? If the Eagle’s View is closed, we usually open up the Seletar Room for ala carte dining so members can head over there instead. Tell us: what will the future of F&B be like in Seletar? Well, we have a few plans in the pipeline. As part of the redevelopment project, we are hoping to cater for dedicated kitchens for each of our F&B outlets or a bigger centralised kitchen. This way we can speed up the food delivery process with multiple cooking stations even if the volume of customers is higher. In the same vein, we are also looking into streamlining our menu to serve members better. Hopefully this will also help resolve also seating and entrance issues as currently we have three entrances to the Seletar Terrace. Last question! Being an experienced Chef, we’re sure you have many cooking secrets up your sleeve. Can you share a tip with our readers?

Quick Tips We’re always looking for ways to serve our customers better! Here are a few tips to make your overall F&B experience a bet ter one on both ends. 1. Show your membership card to our staff when ordering and paying so tha t we can bill accordingly. 2. Cheer begets cheer! A smile makes a difference for our staff. 3. Mind your P’s and Q’s. We love serving wellmannered customers! 4. Safety first: if you’re dining out doors, please move indoors when you hear the lighting alert warning. 5. We are a team of friendly sta ff and we appreciate it when our members are friendly too. Treat the staff how you would like to be treated.

Cooking is a philosophy. It’s not just about following a recipe, you’ve got to go with your feel. Feel it, taste it, change it and rethink it.
