Editor's Note While a chill still hangs in the air and the gray of winter is not yet behind us, we are approaching the month of romance in February, and there is no better time to starting talking about weddings! Brides and grooms across the area will be planning the details of their nuptials as we approach the biggest wedding planning season of the year, and we have great information about local venues, tips from local experts in planning, travel, and even home decorating for new couples. We stopped in at the peaceful acres of Northfork Farm, to talk with members of the Pasteris family about hosting weddings on site, amongst the thoroughbred horses that have made this place a local treasure. Then we moved on across the county, to highlight other unique venue options to make a wedding picture perfect. We took some time with Cara Cooper of Cooper Home Furnishings to chat about bringing two tastes together in one home, and making the most of a couple’s first

place together, and introduce our readers to a vibrant and fun color for 2019 to liven up any room. NORTHFORK FARM A scenic haven for rustic weddings

W
hen the Pasteris family first came up with the idea of hosting weddings at its expansive farm property in Oswego, there was no idea of how quickly it would take off. After hosting just 12 weddings the first year in business, today couples are lucky to snag a spot at this luxurious wedding venue.
Pete Pasteris, a principal and superintendent, and his wife, Laurie, a teacher, were still working in 2005 when they decided to start breeding and selling thoroughbred horses at the family property.
And it all started as a thoroughbred horse farm.
That got their wheels turning.

It didn’t take long for their two daughters to start using the scenic property for their photo backdrop for events with their friends. “Their friends and parents would come and they would take it all in and enjoy it,” Pete says. “A number of parents asked, ‘have you ever thought about doing weddings out here?’”

THE BEGINNING
The Pasteris property, which originally had been owned by President James K. Polk, has been in the Pasteris family since 1961. Pete grew up on the land and knew he wanted to keep the property – and the thoroughbred history – in the family. In 2002, the Pasteris family demolished the original farmhouse and barn and built a brand-new house, carriage house and barn, drawing inspiration (and the name) from the well-known Southfork Ranch in Texas. The property, which was completed with the barn in 2005, was designed to resemble the types of farms in Lexington, Kentucky. In 2006, Pete purchased his first thoroughbred mare, Summertime Val, who was sired by Summer Squall, the winner of the 1990 Preakness.

While the initial concept was to create a thoroughbred farm, the idea of creating a wedding space alongside the horses couldn’t be ignored. Pete and his daughter, Emma, decided to post a link on a wedding website to gauge interest in the property. Emma posted something at 6:30 a.m. before she left for school in the winter of 2014, and Pete got a shocked call from Laurie that same day. “Did you put something on a website about weddings?” Laurie asked Pete a few hours later. “Because we’ve gotten about 15 inquires already.” It didn’t take long for the family to take the wedding concept seriously. They had the interest, they had the property, and they were looking for something to keep them occupied during retirement. They officially opened as a wedding venue in 2015. “It was actually a smooth and easy transition,” Pete says. “Laurie and I are both used to working with people and meeting their needs, plus we both communicate well and are very detail-oriented. “We know our property,” he said. “This is our home.”

WHAT YOU GET AT NORTHFORK
The cost of the venue in 2019 now includes a “day-of” coordinator, Peggy Mlsna, who meets with couples beforehand and also makes sure everything gets set up before the festivities. The grounds are large, and feature several spots for wedding ceremonies, including the long grass aisle between horse pastures and the backyard of the home. “Some people are curious if it’s going to smell or if there’s going to be manure all over,” Pete says, noting that they try to emulate Lexington, Kentucky’s pristine grounds. “This place is immaculate.” After starting the business, the family realized there was a need for a more permanent reception structure, and invested in a concrete-based tent. “You can’t just willy nilly throw up a tent,” Pete says. “You have to get a special permit; it took us almost a year.” The tented structure can seat 220+ comfortably and has air conditioning, heating and a sound system. In addition to the reception tent and ceremony space, the grounds feature a private bridal suite and an onsite salon.

The bridal suite was formerly a coach house that was inhabited by Pete’s mother, but it makes for a great place for brides to get ready before their big moment. “People take photos on the front porch and in the foyer here,” Pete says. “We have the old corn crib and our old garage, too. People love to take photos out there.” From getting ready to the reception, there’s no need to ever leave the property. “Everything is included here,” Pete says, noting that the fire pit is part of every package and is even maintained by him. “Everything we have here, you can use.” The venue includes everything except the catering, alcohol and linens. “We send you to licensed caterers that have been here a lot, and we really try to work with local Kendall County establishments,” Pete says. “We can recommend DJs, photographers, etc. We want to provide local companies with business and we want the brides and grooms to be satisfied.” They try to keep things local and use repeat vendors because they know the property, which makes it

easier to navigate for weddings.
THE FAMILY
Not only is every wedding ceremony and reception held on the Pasteris property, every wedding is completely managed by the family as well. Pete is onsite for the initial meet-and-great and tour, and is also the man making sure everything runs smoothly the night of the event. Laurie is also onsite working with the day-of coordinator to make sure the décor, seating and everything else is set up. Their daughter, Carly, runs a salon onsite and can usually handle four or five people per event, on her own. She has additional staff she can bring in for any additional wedding party members. “She can take care of as much or as little as you want,” Laurie says. “And she also does trials so you don’t have that nervous feeling the day of. She knows your hair and skin type.”

Emma is the brain behind the computer/technical side and website and has recently taken an interest in wedding floral. “We’re old timers so she really helps us with the tech stuff,” Laurie says. Pete notes that Emma has been taking horticulture classes and intends to take a bigger role in the floral part of the business. “We’ve had brides and grooms tell us the main reason they chose to have their weddings here was because of us,” Pete says. “They know we’re hands-on with them and we’re very approachable. We build relationships and still stay in touch with a lot of people that got married here.”
THE HORSES
The whole family business started with the horses, and the Pasteris family doesn’t forget that. They currently take their mares to Lexington, where they breed at the stallion farms. The mares

deliver the babies in Kentucky and are bred there again before coming home with their babies. “They’re here on the premises during wedding season,” Pete says, noting that the foals are great for wedding photos. “They’re all Kentucky born and bred.” While the original intention was to breed the horses to sell, they now sell and keep every other one to race. Their latest, Villareggia, is from Wicked Tap lineage (and Triple Crown Pedigree) and the family has high hopes for her. “No other venue has thoroughbred horses,” Pete says. “Some may have a horse or country theme, but our horses are what makes us unique and different.” The horses, the barn, the land – it’s more than a business to the Pasteris family. It’s personal. “This place is not commercial,” Laurie says. “We’re very hands-on here and we know it’s going to be successful because of what we put into it.”

ASHLEY FARM Ashley Farm may be one of the newer weddings venues in Kendall County, but it certainly isn’t new. WAREHOUSE 109 This is a unique ceremony and reception space for unique couples. etween picking a venue, selecting a menu, choosing floral arrangements and scheduling dress fittings… sometimes planning a wedding can seem more stressful than your full-time job.
The lead up to the happiest day of your life can be tough. Here are some tips from local wedding planners on ways to make the process less overwhelming.
Start at the beginning
Oppe tells her clients they can determine the majority of their wedding decisions by picking their wedding date and venue first. For example, it helps brides go wedding dress shopping when they can visualize themselves in a dress at the venue at a certain time of year.
Get organized
Head to your local bookstore or online retailor to purchase a wedding planning guide. “It really helps to lay everything out for a couple. The planner provides timelines and budget estimates to help couples stay on track in their planning journey,” says Lauren K. Oppe, event coordinator at Your Day by Lauren Kay in Oswego.

This will solve the problem of your mom inviting her high school gym teacher to your wedding,” Ward adds.

If your parents or future in-laws are contributing financially, Oppe suggests sitting down with them early in the process to find out what aspects of the big day are important to them. “Ask what are their non-negotiables and what parts of the planning process they want to be involved with. This way the couple doesn’t get invested in their selection only to find out their parents completely disagree with what they have chosen,” Oppe says.
Don’t be afraid to outsource
Hiring a wedding coordinator can ease some of the burden of the planning process from helping devise the wedding timeline to offering vendor suggestions.

Stay calm and go with Plan B
Unfortunately the weather and dress mishaps are out of a couple’s control. In those instances, Ward says it’s best to be prepared for minor hiccups, such as making sure your outdoor wedding venue has an alternate location in case the weather gets bad.
Take a break
Scheduling a date night once week with no talk of the wedding can help couples reconnect and remember why they’re getting married. “No matter what happens, keep in mind the most important thing is that the two of you get married and begin your life together,” Ward says.

Blending the tastes and styles of top people with varying tastes and preferences can be a challenge, and restrictions on budget can make that challenge seem overbearing. How do you balance the two, and combine the stuff you already have with new things, and at the same time, make your space feel like home? We sat down with Kara Cooper and Cara Brummel of Cooper Home Furnishings to get some anwsers to common home decorating questions from new couples.
Q: It’s one thing to decorate your first home on your
own, quite another if you need to blend the tastes, and desires of two adults sharing the same living space. What are your suggestions for balancing two differing styles in the same home?
A: Combing two different homes and two different
decorating perspectives is no easy task. But there are certain pieces of furniture that can bring together many different tastes into one house. One versatile texture is leather. Leather is a great cover that can work into several styles

of decorating. Whether you lean more modern or more rustic adding a leather sofa and matching loveseat or just a simple leather chair can fit into any existing decor.
Also many people feel that your entire home has to be all one style and that’s not always true. You can each personally have your own space to claim as yours. Bedrooms can be more of a peaceful calming or romantic space while basements or entertaining living rooms can be more comfortable and relaxed.

Q: We are moving in with a lot of mixed up items, things that were ours before, and hand-me-downs from family members. Until we can get settled and purchase new items over time, how can we make this mismatched group of furnishings work together?
A: There are smaller ways to bring a room together that won’t break the
bank. An area rug is a great way to anchor a room. While the pieces on it may be mis-matched, if they’re arranged on a new rug, it can bring it all together. Sometimes smaller purchases that are easier on the budget can pull a look together more cohesively as well. Such as a new pair of lamps to tie in a mismatched living room set, or some new wall art that high lights pictures or a particular color palette you may want to bring in.
Q: We live in an apartment, so we can’t drastically change anything. But
it is stark and bare and neutral. What can we do to cozy it up, without changing paint colors or doing anything permanent to the space that would violate our rental agreement?
A: Wall décor is a fantastic way to make a space look and feel lived in. Also, adding texture to the room will create that cozy feel. Texture can be added with new pillows and/or throw blankets. A large storage wicker basket is a nice way to add texture to a room as well. Bring in color through your furniture. A fun patterned storage ottoman. Vibrant pillows on a sofa and loveseat or simple chairs with a colorful print can warm up any space. Don’t be afraid to add pattern to pieces of furniture outside of the living room. Entryway benches or dining room chairs can bring in a new, fresh look and color to existing décor or a pale pallet.

na Garten gained widespread recognition for her cookbook “The Barefoot Contessa” (named after her catering business) and related exposure as an Emmy Award-winning Food Network host.
A lot of ground is covered, from what you should know on properly seasoning dishes and attractively plating the food to how to keep your stove top clean when preparing braised short ribs.
The personable and trustworthy writer continues to build on that solid base with her newest cookbook, “Cook Like a Pro” (Clarkson Potter). Her latest effort aims to demonstrate that cooks needn’t be pros to cook like one.
She says home cooks who follow her recipes and tips will elevate their culinary skills. In the book’s introduction Garten says: “Your food may taste a little more vibrant, your presentation may be a little more polished and you

Preheat the oven to 350 degrees F˚ and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups. In a large bowl, whisk together the eggs, oil and vanilla. Add the carrots, apple, pineapple, pecans, coconut and raisins and stir together the flour, sugar, cinnamon, baking soda and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (Garten uses rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature. Pro tip: Brush the tops of the muffin pans with oil and the muffins will be easier to remove. Make ahead: You can make the batter a day ahead, refrigerate it, then scoop and bake the muffins in the morning.

“As people age, they settle into a routine,” says Brent Atkinson, a licensed marriage and family therapist in the Fox Valley area. “That’s kind of death for a relationship. It’s comfortable, but it doesn’t keep a spark in their relationship.”

“Novelty stimulates dopamine and dopamine gives you a sense of eager anticipation,” explains Atkinson. “When you have high dopamine levels, you tend to attribute it to the person you’re with, and it’s probably what causes that spark in your relationship.”
In fact, the group with the highest rate of divorce is couples who have been married for 20 years or more. The trend, often called gray divorce, mainly impacts couples over the age of 50.
“A lot of couples have problems just communicating,” says Tomlinson. “You go into a relationship and have expectations. If you’re not communicating those and not getting what you need from your partner, resentment will build.”
“These couples have raised children, worked on careers, and their marriage oftentime takes the backseat,” says Marianna Tomlinson, a local individual and family therapist. “That’s what I see a lot of – these couples are very successful, but there’s nothing left between them.”
Once you’ve worked through any underlying issues, you can start trying to recapture that “falling-inlove” feeling. The best way to start is byxw making your relationship, and spending time together, a priority.
But there’s a bright side. Tomlinson says that even couples in tumultuous situations can get through it – if they’re willing to put in the work. If you want to rekindle the romance in your relationship, the first step is making sure you have a solid foundation to build on. “There are different layers you have to get through in order to maintain a spark,” says Atkinson. “The first layer has to be treating each other respectfully, and handling differences respectfully, so you can work as a team. “Couples only spend an average of 20 minutes a day with each other,” says Tomlinson. “One thing I recommend is scheduling a regular date night. You need to go out, have fun together and develop that connection that’s been lost along the way.” But just spending time together isn’t enough. How you spend that time matters. A recent study compared couples who went on pleasant dates against couples who engaged in more exciting experiences. The couples going on more adventurous dates improved their relationship over

He suggests breaking out of your routine and seeking out new experiences together. Another way to strengthen your bond is by expressing appreciation. Make an effort to verbalize positive, genuine thoughts about your partner: what you like about him or her, what you like about your relationship, and why you’re grateful to have him or her in your life. “Appreciation is like a bank account,” says Tomlinson. “For every negative thing that’s said in a relationship, it takes five positive things to make up for it. If you can be appreciative and give compliments on a regular basis … if something bad happens it doesn’t hit you so hard.”

Online dating over 40? It ain’t for the faint of heart By SHERRI DAUSKURDAS
I married my high school sweetheart. We met in 1987. No, this isn’t another romantic Valentine’s Day story. I start out with this bit of information because some 25 years later, I found myself single again. Single, with zero experience dating in a modern world, or even as an adult.

If you dated in your teen years, the process itself was easy and expected. You’d pass notes to your favorite guy through the vents of hallway lockers and hold hands on your way to fifth period algebra. You were surrounded by hundreds of other like-minded teens who lived in the same neighborhoods, shopped at the same mall and knew the same people.
with a Christian Bale “American Psycho”-type, chopped into bits after Sunday brunch by an egomaniacal yuppie who happened to look good in a suit? (Bloody Mary, indeed.)
But entering the world of online dating in my 40s – which had become the vehicle of choice for singles looking to connect – I knew nothing.
I started with the market standard: Match. com. And at the beginning, it was kind of fun. I liked compiling a story about myself (I am a writer, after all) and it was OK, even expected, to include only the good stuff.
The entire thought of online dating made me uncomfortable: devising a profile, swiping through page after page of available men, and trying to decipher fact from fiction. It seemed like another job. And what of a date with this unknown online guy? Would he turn out to be the man he claimed? Or would I end up

So, I avoided it. I worked, and I went out with friends. I joined a gym. I hardly was a hermit. But, still, I didn’t meet anyone. After a while, I decided to dive headfirst into this new world of social profiling and give it a shot.
And once I got going, the search became addictive. Swipe right, swipe left – it was easy. Day by day, I got a little braver, sending notes to those who sparked my curiosity, were unmarried, decent looking, lived near

me, had a job, didn’t smoke. It was empowering to be able to choose, until I realized it didn’t really matter what I said, or whom I chose. Other opportunities were headed my way, regardless. One man sent me a message offering to pay for my gas if I came to meet him. He had a Jacuzzi he’d be willing to share if I’d take him up on his offer. The message – his first to me – went on for some 10 paragraphs. Another asked me if I’d yet found Jesus. Not that there’s anything wrong with finding Jesus, but this was the first question he asked – after “hello.” At least he knew what he wanted. Others knew what they wanted, as well. I received at least six different photos of men below the waist, sent to me as primary introductions. Men don’t mince words, I guess. Some don’t even use words. Although, one gentleman used the words “nylon stockings” at least five times. I was approached online by married men, single women and married couples, too. Despite my best efforts to identify my intentions, no one cared. We were all just trying to make some kind of connection in the vast and cold social media-based world.

But even with challenges, I became intrigued by the clever conversations, when the banter was good. A few gentlemen I even met. But nothing of significance came to pass.

A couple of friends suggested that other websites were more suited for me, my age and my locale. So, I tried a few of them, as well. On Plenty of Fish, I liked the screening system better, and my matches came back closer to home. But it’s a freebie site; the response rate was dismal, and a lot of the profiles were the same people as I saw on Match.com. At OK Cupid, survey questions were bold, intrusive and sexualized. Still I answered them all, wondering if more information might result in a better match. It did not. Instead, I found my investigative instincts triggered, as photos showed up on several profiles throughout the site with different names and backgrounds. My father was a country boy, and I fish, camp and can handle a chainsaw, so I even tried the most categorically-specific of all of the dating sites: Farmers Only.
After a couple of years, I opted out of the experience. It taught me a bit about what I could expect from people, and from myself, and how to handle awkward situations, both in person and online, but mostly it made me skeptical. And I already was skeptical. I still believe in romance, just not the kind you find online.
