We
love stories about people who take that leap of faith to follow their passion—to build a dream and be rewarded with success. Kelli and James Wright have done just that with their unique and fun Cowboys & Angels Retreat Getaway near Mountain Home, Texas. Just four short years ago, Austin-ites Kelli and James were newly married. Kelli was an English teacher and James owned a construction company. They both were itching to try a different way to live and make a living away from busy city life. Throwing their kayaks and motorcycle into the back of their truck, they headed west looking for a new life adventure. That’s exactly what they found just off IH-10. Interstate 10 isn’t exactly the “road less traveled” but it does weave its way through the most beautiful Texas Hill Country scenery on its way from coast to coast. Eight days into their honeymoon, Kelli and James spotted the 50 acre property between Mountain Home and Kerrville and instantly fell in love with the magic of the place that would soon become their new life, home, and business. The transformation of the private rural property into a getaway retreat happened very quickly as James and Kelli envisioned the kind of life they wanted to create and then got busy building their dream. With James’ construction expertise and Kelli’s love of decorating, soon there were eight new, charm-filled cabins forming a little village nestled under the live oak trees. this mobile age, technology has become increasingly valuable in supporting new generations of lifelong learners and readers. Now Kerrville Independent School District (KISD) and Butt-Holdsworth Memorial Library have formed an innovative new partnership to increase access to more e-books and e-audiobooks for students. This unique collaboration strives to promote literacy and digital learning by combining the schools’ and the library’s digital reading resources in one app. As a result, students can learn anytime anywhere because of the convenience, ease of reading on the go, and the inherent popularity of technology. 18 | MAR-APR 2021 | KERR COUNTY PEOPLE MAGAZINE
“We love the extensive collection of e-books and e-audiobooks for our students and teachers,” says Melanie Graham, Hal Peterson Middle School Librarian. “The benefits to building vital literacy skills have been proven but the cost wasn’t budget friendly. Now all KISD students will have equal access to their favorite titles and authors.” The school-library partnership provides safe access to thousands of age-appropriate titles for students’ use 24/7 inside the classroom, at home or anywhere. Through Sora, the new student reading app for KISD, students can now borrow the schools’ collection of classroom and pleasure reading as well as ButtHoldsworth Memorial Library’s juvenile and young adult digital collection. ince the 1700s BC, variations in body heat have been recognized. A series of crude heat-measuring methods has been used throughout history, leading up to modern hitech FDA approved thermography. “Thermography (digital infrared thermal imaging) is a useful tool in your arsenal against disease,” says Tanya Brown, ACN, CCT, (Applied Clinical Nutritionist, Certified Clinical Thermographer). “A thermal imaging unit uses an infrared camera to scan your body. That data is converted to digitized images that are used to identify precise heat patterns within your body—patterns that can reveal underlying physical conditions, abnormalities, and signs of disease. A healthy body presents a thermally symmetrical image while an asymmetrical image may indicate problems. “The series of digital images is then analyzed by a board-certified doctor who generates a report for you.” An ACN since 2013 and a CCT since 2015, Tanya continues, “After the doctor analyzes your photos, I email you the report and images, then set a phone appointment to review and help you understand the report and make relevant nutritional, selfcare, or body health suggestions.”

pkg. peppered gravy mix lb. asparagus cups water lb. crab or imitation crab tsp. Creole seasoning mix cups milk
Break off hard ends of asparagus and discard. Cut remaining asparagus into ¼ inch slices. Gently boil gently in 2 cups of water till tender; add the crab and stir. Add the peppered gravy mix and Creole seasoning to the milk. Mix well and pour into the crab and asparagus. Cook till creamy and serve hot. Yields 4-8 oz. servings.

In the early days of Queen B’s Tearoom my husband and I worked together, but John was no cook (bless him). One day as I was making scones, I asked him to boil the asparagus for cream of asparagus soup. Then I asked him to open the crab so that I could make the spinach-crab spanakopita. Much to my horror he put the crab in with the asparagus. So, what was I to do? "Pandemic Shuffle"
Here at the Dietert Center, we feel like that’s what we’ve been doing over the past nine months—the “Pandemic Shuffle.” Our greatest concern is the health and safety of our seniors and we know that social isolation is detrimental to their health. We’ve been open to the community and then closed while the infection numbers rose. During this crazy time, we have still been here all the time for our seniors in need. A few highlights from our year include: • Prepared and delivered over 70,000 meals to our homebound seniors • Prepared and provided over 11,500 meals in our Friendship Café and drive-thru services • Loaned out 1,000 medical equipment items and answered over 1,300 calls for community information and referral services • Assured our Call Reassurance program participants over 4,600 times that we are here waiting for their call • Installed and maintained over 325 Personal Alert Link (PAL) units so seniors know someone is there at a push of a button if needed
• We are so honored to have had over 400 volunteers provide over 49,000 hours of service for our programs and especially 200 of those volunteers that deliver our Meals on Wheels each weekday. Thank you for helping care for our community seniors. • Our Dietert staff family continues to be available daily to help wherever needed. Please give us a call. It
rested there on a back burner of Mother’s old white enamel stove that had seen better days. Every day. It needed that rest because that cast-iron skillet never had a day off. Sometimes there’d be leftover bacon grease in it or perhaps it was clean, just waiting for Mother to pick it up and start frying the best chicken I’ve ever eaten. Or any one (or two) of the vast array of foods Southerners fried back then. But that skillet was always right there. Waiting. Calling her name. Every Southern mama had at least one—we referred to them as “iron” skillets—everyone knew it was cast-iron, so why waste a perfectly good word saying so? I was the proud owner of my first iron skillet before I was a mama; Mother gave it to me as part of a wedding gift in 1973. Soon afterward I tried to kill it. A totally innocent mistake (every criminal claims innocence). A dishwasher wasn’t a fixture in our house when I was growing up, so how was I to know the skillet didn’t like that kind of cleaning? To this day I remember how mortified I was when I opened that dishwasher and saw a clump of rust. The good news is that it’s pretty hard to kill an iron skillet so I didn’t have to tell Mother I’d destroyed it. Forty-seven years later, that iron skillet still serves me well. No matter what horrors I put it through, it just keeps hanging on. I often wonder how many years it has left—many more than me, that’s for sure. The one thing my skillet has never done, so I can only assume it never will, is produce food as scrumptious as Mother’s.
Perhaps not my favorite, but certainly the most important thing she cooked in that skillet, was cornbread because it ended up in her chicken ‘n dressin’—oh, the mouthwatering anticipation. When making cornbread she always did a little something special that I’ve never seen anyone else do. I can still see her leaning over, potholder in hand, pulling her pre-heated, piping-hot iron skillet out of the oven. She threw a scant handful of cornmeal into the hot lard to sizzle, scattering the crumbs around before adding the batter. Just enough cornmeal sprinkled in to add more crunch—as if the generous helping of lard didn’t make it crunchy enough. That extra cornmeal did a tad more than make it the crispiest, crunchiest cornbread crust in the world. It made it the messiest. The sheer delight of eating it—cornmeal crumbs all over my fingers, falling on the table and into my lap—rendered the mess meaningless. To me anyway. All these years later, I realize it likely wasn’t meaningless to her. Can’t talk about Mother’s iron skillet without being reminded of Granny’s, although that might just be one of those things that should remain a family secret. Granny cooked a lot of good food in that skillet, such as salt pork for breakfast every morning. I kid you not. Salt pork. You had to wash the salt off before cooking it. However, when it came to cornbread, she used a square aluminum pan. What Southerner does that? I’m betting she’s the only one who’s ever committed such a sacrilege. If I could talk with her today, I’d ask why. At least I draw comfort from knowing that every family has skeletons in the closet. And now I’m all teary-eyed with these memories and thoughts of my mother and granny. Granny’s been gone for forty years and Mother for sixteen. As I sit typing this tonight, I can still hear their voices, see them moving around the kitchen. If my phone rang right now, I would recognize both their voices in a New York minute. Who has more impact on our lives than mothers and grannies? Diane has been publishing this magazine since 2007. She loves all things Texas and Southern. Except humidity.

Weather has been on our minds more than usual lately, with our out-of-the-ordinary frigid blast. Did you watch the forecast more often during the month of February?

Six billion people watch the weather forecast daily on some form of media and most of the time it is not correct. How do meteorologists predict the weather? According to the Old Farmers’ Almanac, founded by Robert B. Thomas in 1792, their forecasts are based on a secret formula. Mr. Thomas believed that the weather was influenced by sunspots.
An old wives’ tale says, “Thunder in February, frost in April.” Some say to wait until after Good Friday to plant. Other gardeners say to wait until mesquite trees bud. I believe the mesquite tree lies in this part of Texas. Personally, I watch native pecans—they never leaf until it’s time. Early gardening is a real gamble—but it is cheaper than Las Vegas!
Of course in this century, state-of-the-art technology is involved. Predictions are made using weather satellites, weather patterns, and computers. Long range predictions are made with solar science, climatology, and meteorology. Here in the Hill Country the average last date for frost is April 15. Yet some years Mother Nature gives gambling gardeners a reprieve and there are no late freezes. Other times she loves to surprise us with
