For example, in my mid teens I went to San Francisco in 1967 and lived in the middle of one of the most important counter cultural times of the 20th century. Moving back to San Antonio Texas 7 years later I became a member of the artistic community through my shops selling local art, folk art and vintage clothes. That’s what I told my husband—we have to buy me a store.” As fate would have it, Margaret reimagined a building that had seen many incarnations. And I operate on faith—either it will work out or it won’t. The important thing is I’m here and I love to listen to other women’s stories when they come in. We all have stories. Margaret’s story starts in Munich where she was born to a Sicilian mother and an Irish/Scott father who have lived all over the world. She was raised in Kerrville and according to Margaret she married “the boy next door.” She and her husband James Forrest Raymond celebrated their twentieth anniversary this year. You may know James’ family as the owner of the historic Lazy Hills Retreat and Conference Center in Ingram. “And I’m the mother of two daughters whom I homeschooled,” Margaret adds. “Penelope is now a sophomore at Schreiner University with an equestrian scholarship and an eye for photography. Willow is a high school senior and an avid reader who is considering informational science for her career path. They are creative, capable young women in their own right and both will be off to college next year. That timing was my opportunity to open Boutique M.” continue to next page

M Good timing also attracted two amazing staff members. Grace Guerriero is a Tivy graduate and was ready to attend Savannah College of Art and Design. The pandemic kept her in Kerrville for the semester and Boutique M is grateful for Grace and her specialty e-commerce and digital marketing. Sterling Stark was born and raised in Kerrville. She worked in retail for twenty years until furloughed by the pandemic. Assisting Margaret with the operational element of opening a store, Sterling says, “I find great joy watching Margaret live her dream and assisting any way I can with love and faith.”

ere we go again! The 2020-2021 Winter Finch Forecast is out and it’s predicting a very strong irruption of winter finches. About 20 years ago, birder Ron Pittaway began analyzing the summer’s growing conditions and forecasting if these bird groups, called winter finches, would irrupt in the wintertime. Since then we’ve been using this forecast to see if we will be lucky enough for them to head our way. If summer growing conditions in the northern boreal forests aren’t ideal, groups of birds will irrupt during the winter months in search of food. An irruption is a dramatic, irregular migration of large numbers of birds. There are 16 species that can irrupt, but in our area we should expect it to be the American goldfinch, pine siskins, and the red-breasted nuthatch that come in large numbers. There’ve already been reports on eBird of redbreasted nuthatches showing up in September. This means they are already on the move and most likely will descend on the Hill Country in late November, growing in numbers through December. Most backyard birders look forward to an irruption year; it can bring birds in that aren’t normally seen. But it’s the sheer numbers in which these birds arrive that is the real wow factor. They stay all winter and into spring when it’s time to head back to their nesting grounds. To attract these birds to your backyard feeding stations provide fresh Nyjer and sunflower chips for American goldfinches and pine siskins; peanuts and suet for nuthatches. Our year-round resident, lesser goldfinch, will get in on the fun at the Nyjer and chips as well. An irruption year is exciting to observe and quite captivating as we really don’t see this many birds at the feeders at one time. Fill those feeders and enjoy the show!

Can you reverse disease? by David R. Miloy MD
S
even out of ten deaths in America are due to chronic disease, killing more than 1.7 million Americans each year. More than 75% of the $2 trillion spent on healthcare annually goes toward treating chronic disease. We really don’t need statistics because we see these chronic diseases all around us in everyday society.
Because these diseases are so common, it’s likely that you have one and it’s affecting your quality of life. What are they? The leading killers and thieves of health span: • Obesity or being Overweight • Cancer • High Blood Pressure • Alzheimer’s • Diabetes
• Chronic Kidney Disease • Heart Disease • Tobacco Addiction • Lung Disease • High Cholesterol
Most, if not all, of these conditions can be prevented, reversed, or have their progression slowed. Other common conditions that can be reversed are: • Gout • Sleep Apnea • Insomnia
• Depression • Anxiety • Fatigue
Most people work hard their entire life only to spend the last 10-20 years of life with a progressive decline in health. They slowly circle the drain as the vitality ebbs from their being. Their relationships and purpose in life suffer. Instead of growing and experiencing their potential, they gradually whither and withdraw in silence. It simply does not have to be this way. Modern medicine has a medication for almost all chronic diseases. As helpful as these are, they’re best used when their risk is less than the disease itself or other alternatives have been exhausted. espite the unimaginable chaos and strain of 2020, much still exists in Kerr County to warrant thankfulness during the holidays—especially for those people and organizations such as The Society of St. Vincent de Paul who work tirelessly keeping families fed. Five-year Conference President Debra Payne explains, "St. Vincent de Paul, an international nonprofit whose mission is to End Poverty Through Systemic Change, came to Notre Dame Catholic Church in 1953. The organization is comprised of three ministries: thrift store, food pantry, and financial assistance. “We give out over $300,000 in goods and provide $340,000 in financial assistance every year to 1,800 families representing 9,500 people,” Debra says. “We totally put ourselves in God’s hands, and whatever He wants is what we accomplish.” 28 | NOV-DEC 2020 | KERR COUNTY PEOPLE MAGAZINE
Volunteer power Typical of the determined industry keeping Kerr County one of the best communities in Texas, the volunteers at St. Vincent de Paul Food Pantry on Broadway did not let COVID-19 deter their service. While significantly altering operations to comply with safety requirements, since March the food bank has distributed 275,685 pounds of food to approximately 4,500 families in Kerr and surrounding counties. That was no small feat considering many avenues for traditional donations declined considerably as the quarantine period languished along. In the spring, they even questioned if they’d have enough supplies to last through June. Leading the initiative has been retired United States Marine Corps officer John McCalla who has volunteered with St. Vincent de Paul since 1996 and serves as vice president for the food pantry—a perfect application of his aviation supply background. The normal food drives through the post office, Our Lady of the Hills and Notre Dame schools, as well as the collections during Lent didn’t happen this year. Holiday Favorites Maura’s Cranberry Sauce 1 package (12 oz.) fresh cranberries ½ cup sugar (more if you prefer sweeter) ½ cup water ½ cup orange juice ½ tsp. cinnamon 1 tsp. orange zest ½ tsp. nutmeg 1 cinnamon stick 3-4 whole cloves Rinse and drain cranberries. Bring water and orange juice to a boil in medium-size saucepan. Add sugar and stir until dissolved. Add cranberries and other ingredients and cook over medium heat until thick (about 15-20 minutes). Cool and remove cinnamon stick and cloves. Serve chilled or at room temperature. Leftovers are good on turkey sandwiches. Maura Windlinger
Holiday Pound Cake 5 eggs 2 sticks of butter softened 1-3/4 cups sugar 2 cups all-purpose flour 1 tsp. vanilla pinch of salt Preheat oven to 325 degrees. Grease and flour Bundt pan. Cream butter, sugar, vanilla, and salt. Add eggs and flour alternatively ending with flour. Pour into cake pan and bake for 50-55 minutes. Serve with seasonal fruit and whipped cream or ice cream. What would happen if you couldn’t leave home in your later years? Couldn’t shop for food? Couldn’t prepare a meal? Who would help you survive? And, during this pandemic, who would make sure you had plenty of food? The Dietert Center would! For 50 years, Dietert has been feeding Kerr County’s elderly. A hot, nutritious meal is the lifeline that keeps many of our oldest citizens independent and in their homes. More than 68,500 meals were delivered by smiling, dedicated Kerr County volunteers last year. Every weekday, Dietert’s “Meals On Wheels” program provides a hot lunch and warm friendship to approximately 300 homebound seniors. Many are disabled and on limited incomes. During the pandemic, we have continued to provide these meals and they didn’t miss a day. In fact, we even sent extra frozen and shelf-stable meals to assure that everyone had plenty of food on hand. In many cases, our 200 dedicated volunteers are the only people these elders see and assure that no senior feels isolated.

Getting “Meals On Wheels” starts with a phone call to (830)7924044. For those who qualify, meals are available for free or on a donation basis. No waiting list! We know they need to eat—no senior in Kerr County should go hungry. Because meals are available by donation, funds for this vital service are always in short supply. One home-delivered lunch costs $7.75 to produce, including food, labor, packaging, and operating expenses. This year over $300,000 must be raised to keep this critical program going. You can help feed a senior by donating meals for a day, a week, a month, or even a year. Secure donations can be made on our website, DietertCenter.Org, mailed, or dropped off. Our seniors thank you.

Ready to do those winter projects? by Trena Cullins
The excitement of upcoming holiday festivities can make us ignore all else but setting aside time for catching up with a few important outdoor projects is a good idea. Doing so makes sure last spring and summer’s problems don’t plaque us again. Fungal issues on trees benefit from sanitation—rake up all infected leaves and dispose of them in the trash. Fungi can remain on leaves until conditions are favorable again for the spores to develop. Spores can spread by rain and wind, so applying a horticultural oil spray on trees can interfere with the pathogen and suffocate it. It’s also the perfect time to spray existing fruit trees to suffocate fungus and overwintering insects. Fungal problems in lawns can be addressed now as well. St. Augustine lawns have suffered quite a bit with brown spot this past growing season due to all the blessed rains. Rake all dead grass and discard. Then apply a thin layer of peat moss to the affected site. After about two weeks, apply another layer. Peat moss has a natural acidity that helps break

down fungal spores. Prior to the spring warm up apply a small amount of compost to the peat area. This should help your lawn recover quickly during the growing season. Hard pruning should be done in the coldest months when trees and perennials are dormant. Plus, it’s a great way to burn off those holiday calories.
