s 2018 begins, a strong year is predicted for the Hamptons real estate market. Summer rental inquiries are on course and sales are off to a great start. The most active segment is under $5M and the most popular areas are West of the Canal, Sag Harbor, and Southampton. Prices are stable, inventory is slowly decreasing, and new construction is in demand. People will always seek out the Hamptons for its beautiful beaches, picturesque villages, trendy restaurants, and fashionable boutiques. Judi Desiderio of Town & Country Real Estate says, “Town & Country has written more leases this winter than the past few years. 2017 was a great

year for sales at Town & Country. The most active segment is $1M-$3.5M!! New construction ‘musthaves’ continue to dazzle and amaze even the most sophisticated buyer.” Judi predicts, “This year should be one of the best markets than in recent years – the stock markets closed 2017 up 25% and the new tax codes reduce corporate tax rates from 35% to 21% – that means more cash to invest. And what better to invest in than East End dirt!” Enzo Morabito of Douglas Elliman Real Estate predicts “a very good rental season for 2018 with the tremendous amount of rental inquiries already. There are 10 sales contracts wrapping up from 2017. West

New construction is in high demand West of the Canal.” Enzo remarks, “The stock market has generated $6 trillion more than before! We could have a really good season if confidence holds up!” Maria Cunneen of Compass says, “The rental market has seen a welcomed change for this upcoming season with several rentals already secured for 2018. New construction has ample inventory.” Maria thinks, “The changes in interest rates, property taxes, and SALT may flatten sales a bit, still too early to call, but buyers continue to look for investment, vacation, and primary residences offering value with a watchful eye.” James Peyton of The Corcoran Group says, “The rental market seems to be on the same pace as last year. Serious tenants have already locked up their desired properties.The fourth quarter sales numbers will prove to be strong, while the first quarter is seeing robust demand. Older homes from $1M-$2M are in consistent demand from Southampton to East Hampton. Prices are very stable and inventory seems to be at a low point. Everything of value priced correctly has been combed over, especially within close proximity to the villages. New construction offerings North of the highway are very exciting.” James believes, “All signs point to another successful season in the Hamptons. Each year, more people discover the beauty of the East End!” Deborah Srb of Sotheby’s International Realty has been “pleasantly surprised by the rental traffic thus far. As for sales, Sotheby’s already has a $40M, $36M, and $32M property in contract. There are some deals in contract under $5M as well. Sag Harbor continues to

be on fire. In December, I was involved in a 4-way bidding war on a .25-acre lot listed for $850K and it went into contract for over $100K over ask. Otherwise prices have mostly stabilized for now. Premiums are being paid for good location and new construction though.” Deborah notes, “Even though we face some uncertainty regarding the new tax bill’s effect on everyone’s bottom line, the Hamptons continues to be sought after for its beauty and lifestyle.” Christopher Burnside of Brown Harris Stevens says, “The Hamptons is fueled by rentals. Several of my rental customers have decided to renew their leases at the same prices. Others are waiting for deals which will happen as the season starts to unfold. Sales are off to a great start. 2018 seems to be a great time to buy and sell as all parties seem motivated. All the A+ properties are always active and the $4M-$6M market is hot along with new construction. I think prices will be the same as last year with plenty of inventory in all price ranges. New construction is always the leader.” Chris believes, “We are off to a good start and it will be getting better.” Geoff Gifkins of Nest Seekers International says, “Rental leases for the 2018 season started very early, spurred by the early push for the PGA tour rentals. We had an increase in sales in the final quarter of 2017 thus finishing the year robustly. Sales inquiries, showings, and negotiations have been very strong in 2018. Inventory is slowly decreasing as sales increase; however, it is still a buyer’s market with inventory levels well exceeding the present demand. We expect inventory levels to reduce further this year. New construction has been steady.” Geoff believes, “This year will be one of the strongest and all the indicators are there, from web traffic increase, number of sold properties, to share market levels.”

HUNTER GATHERER GLOBE-TROTTING INTERIOR DESIGNER OPENS EAST HAMPTON DESIGN EMPORIUM BY HEATHER BRYCE Julia Grayson, who has designed houses in London (where she lived for many years), Paris, New York, Montana, Italy and Greenwich, Connecticut (where she lives), has hung her shingle in the Hamptons. Not only is she available for interior design, but she also opened her first retail space in the heart of East Hampton this past summer. Having spent childhood summers here, it felt like the right place. The shop, called Grayson De Vere (after family names on her maternal line), is a reflection of its proprietor’s seasoned aesthetic.The soi-disant “hunter gatherer” feels that her store is more about “sharing than selling” the myriad of items she discovers from her many sources. Her hope is that customers will find a piece “that speaks to them and gives them that quick intake of breath,” she says. “I see beauty in the design of so many things whether it’s architecture, furniture, fabric or artisanal goods,” she says. “I’m drawn to texture, tone, pattern, scale.” And all those characteristics are very much in evidence at her charming shop. During a tour Grayson exhibits great lashings of enthusiasm as she points out objects. Never mind point, she can’t seem to resist touching and holding the pieces as she shows them off. There are the handsome lacquered lanterns from the Netherlands, great for summer and winter. They are colored chalk, one of the designer’s favorite colors. Not off-white, but very specifically chalk. The hue is everywhere from the Sunbrella upholstery on a chair made from recycled wood to a chalk and charcoal painting by Connecticut artist Margot Nimiroski. Then there’s the boldly knit throw pillow by British fabric designer Rosemary Hallgarten. “There’s a rhythm to the knit.” Her fingers play with a sexy basket made of neoprene by neó design, an Italian company whose pieces including jewelry can be found at MOMA and the Guggenheim

Museum. “Not everything has to be expensive.” She shows a vase, by a Los Angeles potter, whose “fluidity” she loves. The stunning items keep coming. Another vase, this one glass, is from Germany and glazed with “subtle texture and tone.” A citronella candle with multiple wicks is “one of Oprah Winfrey’s favorite things.” This shop is my opportunity to share the things I like best and hope they resonate with others. I offer the ability to combine a series of pieces that together settle into a space and give a certain finish.” She plans to open another shop in Greenwich. A former investment banker at such firms as Bear Stearns, Grayson switched careers after working on her London home, which had belonged to John Lennon. While the architect she hired to transform the residence was “good on paper,” he fell down on the job in many ways. So she took classes at the Inchbald School of Design in Belgravia and became part of the design process, going so far as to do the lighting and plumbing schematics for the project. It helped that she had been a mathematician in her youth. “It was trial by fire.” But it’s what made her “passionate about interior architecture and interior design.”

When she moved back stateside in 2013 she found herself being pulled into luxury staging, a field that has become mandatory she believes due to the computer age. “We’re so used to images shown in rapid fire succession that it’s critical to present [the buyer with] the entire visual experience.” Staging allows “homeowners to capture market attention, maximize property value and captivate a timely and dedicated buyer for those in the market.” Her 200,000-cubic-foot warehouse enables her to gather a mix of elements from her always evolving inventory of designer furnishings. “The result,” she says, “never appears staged.” But best of all: Her staged properties “sell well compared to others on the market.” As part of her entrée into the Hamptons Grayson participated in this past summer’s Hampton Designer Showhouse. She was assigned the lower level, a challenging project because of its length. Her goal was “to create an immersive space that could hold its own but also break down into intimate areas.” She installed indigo wallpaper woven with a basket weave pattern (more of the texture she so adores); William Yeoward fabrics and rugs from London; chalk-colored sofas, and an assortment of spiky charcoal lamps and pottery. Of the pottery she says all pieces were chosen by intuition. It was only later that she realized the similarities. But they all worked to “create a cohesive sense of overall space despite the splitting up of areas. “I love the art of transformation,” she says. “Design is meant to be something that evokes an emotive response. When you walk into a room you should feel it not just see it. Design is a serious art form but it should also be joyful, engaging, fun.”

illy Baldwin’s library is a magical place. Stepping into the room at his Sag Harbor home is like stepping into a world of wonder. Filled with favorite books and cherished possessions, it’s more than a place to read and think—it’s the entryway into the imagination.
Painted a deep red and lined with wooden shelving, the cozy den of a room is the perfect place to think, says the Moonbeam Children’s Book Awardwinning author. “I like the small, intimate space,” he says. “It’s more creative … like a little nook.” Alternatively climbing the wooden library ladder to fetch prized possessions and taking a seat atop a giant stuffed tan-and-white dog-shaped beanbag, the children’s book author shared some of his most treasured tomes and discussed his journey into book making. There’s a lot to share here, he acknowledges.
illustrated alphabet, with one letter to a page. “Those letters really came to life for me,” he says. “I was obsessed.” Baldwin’s first formal book was made for his father, Dave. Titled “18 Holes With My Dad,” the penand-ink illustrated short story was created as an homage to a loving parent who taught him about life. “Some of the best times that I ever had were playing eighteen, alone with my dad.Walking the fairway, dad taught me to play. Guiding my hand so I’d learn the right way,” reads the introduction. “But dad passed on more than the rules of the game. ‘Golf and life,’ he would say, ‘they are one and the same.’” Other books followed, as custom gifts and keepsakes for family and friends. He wrote “Davy the Tinker” for his brother, Dave, another for his brother,Ted, one for his cousin, Shelby, and several more. Eventually,
Reading was a bit of a struggle for Baldwin as a boy, he says. But growing up dyslexic didn’t quash his love for books, he reports. But it did give him a unique perspective.
As awestruck as he is by their talents, Baldwin doesn’t handle his heroes’ work with kid gloves, as collectors might. “I don’t like untouchable books. I like the ones that have been read, used, loved,” he says. “There’s an energy in the words, in the books, and that energy comes to life when you open them up.”
When he was 10, the budding author wrote out what would be his first attempt at a book. It was an

Though he has great affection and humble pride for his own creations, Baldwin is in reverent awe of the iconic authors and illustrators who helped stoke the flames of his passion for storytelling. Among them, Charles Dickens (he’s got bound first- and early editions); Hank Ketcham (a signed “Dennis the Menace”); Norman Rockwell (oversized early Time Life books); Dr. Seuss (an in-progress, a blad from “The Cat in the Hat”); Matthew Reinhart and Robert Sabuda (a treasured pop-up “Encyclopedia Mythologica”); and cartoonists Bill Waterson, Gary Larson and Don Martin (special editions of “Calvin and Hobbes,” “The Far Side” and books by the Mad magazine illustrator); to name a select few. “I’m fascinated with their work, and also their personal origin stories,” he says. “I’m always curious about where someone got their passion, how did they start, how did they translate it into art,”
“I don’t necessarily find the written word to always be an attractive thing, but the illustrations … oh they can be beautiful,” he says. “I love visuals, and I see things in animation. Which is where my dyslexia gives me an advantage over you,” he adds, laughing, as he explains how his mind works. “I’ve always looked at things a little bit differently.”

he decided it was time to turn his hobby into something he could share with a wider audience. Some of those full color picture books, which he created with illustrator Liesl Bell, include “The Last Leaf,” which earned him a 2017 Silver Medal from Moonbeam, “The Cookie That Saved Christmas” and “Wipeout the Wave.”

C
ome the end of the year, interior designers hold their breath in anticipation of an announcement that sets the tone for the year ahead: Pantone’s Color of the Year. For 2018, it is the celestial Ultra Violet. While 2017’s color, Greenery, was an earthy complement to much of the East End’s beauty, this year’s cosmic shade lends itself to the sophisticated and inimitable style of the Hamptons and the North Fork. Bold and thought provoking, ultra violet’s endless opportunities are reminiscent of the galaxy it imitates. Color of the year is selected by the Pantone Color Institute, which offers color trend forecasting, brand color development, custom color solutions, and a bevy of other colorful offerings to businesses worldwide. Selecting one color to set the trends and tones for the year is no easy task, and one that is as thoughtfully planned out as the unique color strategies the organization provides to their clients.

“We are living in a time that requires inventiveness and imagination,” said Leatrice Eiseman, executive director of the Pantone Color Institute, when Ultra Violet was announced last December. “It is this kind of creative inspiration that is indigenous to Pantone 18-3838 Ultra Violet, a blue-based purple that takes our awareness and potential to a higher level. From exploring new technologies and the greater galaxy, to artistic expression and spiritual reflection, intuitive Ultra Violet lights the way to what is yet to come.” For local East End designers, like Norine Pennacchia who owns touchGOODS in Southold, Pantone’s Color of the Year promises to be exciting in terms of design. Indoor, outdoor, and in between, ultra violet has more potential than one may think. “I love that the color of the year is ultra violet,” Pennacchia says. “It’s mysterious and bold, and I think it’s more versatile than people think and can easily pair with modern color palettes, but most especially with its

reliable complementary counterpart - a color often used in mid-century design - yellow. Opposites do attract, and for those decorating with mid-century color palettes, it’s a no-brainer that warm shades of yellow can be jazzed up and live harmoniously with bold violets.” With her store specializing in midcentury and modern furnishings and accessories, Pennacchia shares brands her store carries typically offer pieces in a number of these colors. Her personal favorite, Bend Goods, stocks indoor and outdoor versions of the classic peacock chair in gold wire with ultra violet and gold accented pillows. “Ultra violet is the perfect accent to the gold metallic element tones here on this Bend Goods Peacock Lounge Chair,” she says. “It’s a take on the iconic design that was made famous in the 1970s. The geometric pattern in this indoor/ outdoor chair is made completely from wire.”

Debra Gildersleeve’s design aesthetic leans toward modern, beach-inspired décor with cool, clean lines. No stranger to mixing colors, materials, and styles, she says ultra violet can be thoughtfully blended into an already-designed space in a cohesive manner. “Ultra violet will do well in sophisticated settings with metallic accents like silver and gold,” she shares. “It’s bold enough to make a statement without being overpowering. Think of a beautiful oriental style rug in a bright shade of ultra violet beneath a silver metallic table, with linen tufted chairs in neutral shades like cream or gray. Creatively paired with a striking chandelier and a mix of ceramic canisters in tones of ultra violet, this space can be both beautiful and functional.” Noting that she has noticed a trend in people leaning away from more traditional furnishings, Gildersleeve says homeowners are going for a more casual, noncluttered look. “An eclectic yet tasteful mixture highlighting ultra violet could again be a bold rug in a living room with a leather sofa, purple accent pillows, and modern furnishings,” she says. “Blending different pieces that aren’t necessarily matchy-matchy but make sense together is a great and fun way to tell your own story.” Gildersleeve, who designs interiors on the North Fork, in the Hamptons, Manhattan, and beyond, has two showrooms and a design center in Mattituck at her store, Renee’s. She recommends brands they carry like Surya, Uttermost, and Loloi for home décor products like rugs, lighting, accent pillows, and other accessories in this bold color, many of which can be custom ordered. Wall art is another way to incorporate ultra violet into an existing space, and is another opportunity to make design reflective of one’s personality. Michael Del Piero founded her namesake interior design firm, Michael Del Piero Good Design, in 2007. With studios in Southampton and Chicago, and a boutique in the latter (psst… a Southampton
boutique is coming soon!) she strives to create interiors that are enduring and timeless. Neutral and texture driven palettes often serve as the base of her projects, and the power of color is never ignored. As for ultra violet, Del Piero says it is a bold color that can complement any design style and furnishings. It just depends on how you use it.

“Bold colors are embedded with a great deal of energy and it’s up to you to harness this energy accordingly,” explains Del Piero. “Our environments impact our feelings and emotions, so it’s important to think about how you want a space to feel, and about how you can further these intentions through the use of exciting and unique colors. Colors like ultra violet can be used to turn up the volume just a little, through small accents and accessories, or really make a room shout – think violet upholstery on a major piece of furniture, paint or wallcovering.” Del Piero goes on to say that a little goes a long way, and ultra violet can be incorporated into a space without overpowering it. For the Hamptons Designer Showhouse in 2017, she designed a dining room with a mix of whites, greys, and black, and a single violet orchid that gave the perfect pop of color into the space. In the case of a guest bedroom Del Piero designed, a rug in a guest room is an example of using ultra violet in a sparingly yet powerful way, allowing it to shine as the focal point. “In designing a space to spotlight this color, we would still use it as an accent in concert with dense textures and earthy natural tones,” she says. “This would ensure that the bold color not be overpowering.” How Pantone 18-3838 Ultra Violet will transcend design with its dreamy hues and cosmic tones for the rest of the year remains to be seen. What we do know is interior designers are sure to harness their artistic abilities to make this spiritual color glow in living spaces on the East End, and perhaps throughout the universe. Of course, there are a few East Enders who might prefer awards season over all others. Especially those who have been involved in some of the more Academy-, Screen Actors’ Guild- and Golden Globes-recognized fare.
Streep is in the movie too. She plays Post publisher Katherine Graham. As famed hoaxter and circus man P.T. Barnum, Mr. Jackman shines in the Golden Globe-nominated film “The Greatest Showman.” Nominated for Best Performance by an Actor, his depiction of the mighty Barnum is naturally nothing short of spectacular.
As usual, Hamptons residents are represented when it comes to movies and television. Congratulations are in order for some of this year’s most notable film award nominees, including director Steven Spielberg and his newsroom drama “The Post;” actor Hugh Jackman, the star of “The Greatest Showman;” composer Curter Burwell and his soundtrack to “Three Billboards Outside Ebbing Missouri;” and Alec Baldwin, for voicing “The Boss Baby.” Nearest and dearest for many is “The Post,” which focuses on former Washington Post Executive Editor and East Hampton resident Ben Bradlee and was directed by East Hampton’s Mr. Spielberg. Played by Tom Hanks, Mr. Bradlee’s courage and gumption as a newsman who goes after government corruption are on full display in this Academy Award- and Golden Globe-nominated film. Having been fortunate enough to have met this legendary editor—at his home, Grey Gardens, no less—this writer is awestruck by yet another major motion picture that highlights the ways in which the late, great journalist shaped the world. Oh yes, Meryl

the Golden Globes. Gotta love the cheeky tagline, borrowed (and slightly revised) from another of the Amagansett resident’s movies: “Cookies are for closers.” The East End has also gotten its fair share of television representation this awards season, with big shoutouts for “Stranger Things,” Kyle MacLachlan, Liev Schreiber and Alexander Skarsgård. We just love that “Stranger Things” has become a huge hit. Originally titled “Montauk,” and inspired by the real-life government experiment, Montauk Project, the series was originally meant to be set at The End. Alas, it’s not now but we can still claim it.

he wintertime might be the cruelest of seasons here in the Hamptons, but we do have a few bright spots of sunshine that we get to look forward to every year. The top three, for me, in no particular order, are cross-country beach skiing, the best Presidents’ Day sale prices on major appliances, and awards season.
Behind the scenes, but just as much a part of the action, Mr. Burwell is genius at articulating drama sans dialogue. A man of many talents, whose work shines in some of the best and most popular contemporary films, the Amagansett resident has a particular gift for adding character via music and sound. “Three Billboards Outside Ebbing, Missouri” has been nominated for an Academy Award and Golden Globe for Best Original Score. Rounding out the filmed achievements is Mr. Baldwin’s “Boss Baby,” nominated for Best Animated Feature at both the Academy Awards and

Another one of the tales of the weird that’s been getting some great recognition is “Twin Peaks.” The cult favorite that began more than 25 years ago and picked up where it left off some 25 years later, stars Mr. MacLachlan. The Hamptons resident often seen out and about, was nominated for a Golden Globe for his work in this long-time-coming series ender. Dark and brooding, Mr. Schreiber’s work as the title character in “Ray Donovan” has earned him yet another Best Actor nod. This is the Montauk resident’s fifth Golden Globe nomination for playing the devoted family man-cum-fixer. Last but not least is Mr. Skarsgård, who technically isn’t an East Ender but he does spend a bit of time here so we’re claiming him. The Swedish actor’s portrayal of a brutal abuser who meets an apropos fate in “Big Little Lies” has earned him significant awards buzz this year. To date, he’s won the SAG Award, Golden Globe and Emmy Award for Best Actor.

KILN CONFECTIONS CERAMICIST ANNA CLEJAN’S PIECES RESONATE WITH A JAPANESE SIMPLICITY BY SOPHIE OVERTON
T
he clay works of East Hampton ceramicist Anna Clejan are a study in contrasts – both organic yet glossy, delicate yet strong. Very strong, says the artist. It seems odd to say, but these works of art are dishwasher and microwave safe. While her pieces – plates, platters and bowls, many, many bowls – are formed of stoneware they often resemble the fine and silky qualities of porcelain. And that’s intentional. “I resonate with the Japanese aesthetic of wabi-sabi, perfectly imperfect simplicity,” she says.
enough to glaze. “I always know what glaze I’ll be using while I’m making the piece, “she says. There are dozens of glazes at the studio but Clejan has only a handful of go-to glazes, mostly neutral: Shiny Black (which she always uses with a contrasting shiny or matte white on the exterior or interior), Horizon or Creamy white and Pewter Matte – “People love that one.”
“I had a lot of anxiety during that time and when I was in the studio I felt it literally go away into the work I was creating. I felt I needed it.”
Clejan, also an interior designer, works out of East End Clay Works, a cooperative of fellow potters on East Hampton’s Gingerbread Lane. She begins by rolling out her clay through a slab roller like a very thin pie crust. After deciding what shape the piece will take, she places it in a form to keep the shape while it dries. While the forms are standardized, once the pieces leave them her artistry begins. Here is where she manipulates the material to add her own personal touches. “Even if someone else uses the same form the finished product doesn’t look like what I make.” First, she smooths out the edges. “If you put your lips up to it it’s got to feel good. If it’s a serving dish it needs to feel good as the spoon scratches against it.” She has started experimenting with texture by scratching or rolling different types of texture on the surface. Next she puts it in the kiln for its first firing. When it comes out it is called “bisque,” and is now sturdy

Before arriving on the South Fork, Clejan had a considerable background in art, first studying it in Switzerland then at Marymount Manhattan College where she took a ceramics class and “fell in love with the medium.” She took up studies at the Greenwich Pottery House on Jones Street in New York, where she thrived not only taking classes but also “using the studio every single day.”
After going out onto her own, an enterprise she didn’t enjoy – “There was no sense of community” – she took a hiatus from pottery to have kids and to partner in Modern Net Zero, a local building firm specializing in modern houses that incorporate green technology, where she is lead designer. She returned to making ceramics again eight years ago. While most of her pieces are bowls – she particularly likes nesting bowls whether large or small – she also makes such items as serving spoons and bud vases, which can also be used for drinking espresso or wine. All of Clejan’s ceramics enjoy a natural shape, which takes place in the firing.
While the above are all dipping or pouring glazes, she also loves the Matte Turquoise, which must be painted on. “You have to give it five coats to give it that rich color,” she says. But the time and labor intensive process is well worth it as it evokes a “Hamptons feeling of summer, ocean and sky.”

She especially enjoys making pieces for the display of food. “I cook and have a family so when I put time into making a meal I love having that aesthetic. It elevates the whole experience of eating.” As for mugs? “I don’t love pottery mugs,” she says. “But maybe one day I’ll make elegant mugs.”

Eat Your Veggies Vegetable forward restaurants get top billing on the National Restaurant Association’s “What’s Hot Culinary Forecast 2018.” We’re not talking bean sprouts. Chefs give as much attention to their plant based creations as they once did to meat. In the words of Amanda Cohen, whose award winning Dirt Candy was the first vegetable focused restaurant in New York City, “Anyone can cook a hamburger, but leave the vegetables to the professionals.” Grilled and smoked broccoli dogs and Brussels sprouts tacos are customer favorites. Chef Aaron Adams’ recently opened vegan Farm Spirit in Portland, Oregon, is getting rave reviews as one of the best farm to table restaurants in the country. His carrot jerky would have Bugs Bunny turning cartwheels. Megan Miller of The Salted Fig in Los Angeles highlights plant-based dishes with meat as the side. As a private chef, she has seen more clients than ever requesting plant-based menus. In St. Louis, Blue Hill at Stone Barns alums Tara and Michael Gallina put vegetables forward at Vicia but don’t shy away from proteins. They coat a cabbage with pork fat, grill it, and cut it into steaks and sometimes they even sneak vegetables into desserts. In Chicago, chef Dan Snowden calls his Bad Hunter restaurant vegetable forward even though it’s actually vegetarian. Multi-Michelin starred chef Joël Robuchon has even added a vegetarian tasting menu to his new L’Atelier restaurant in Manhattan.

Walking A Straighter Line Craft cocktails are all the rage but sometimes people want the craft without the complications, especially in hotel bars. “The newest thing is non-alcoholic or low ABV (alcohol by volume) cocktails,” says Susan Terry, vice president of culinary and food and beverage operations, Marcus Hotels and Resorts. “There is decreased consumption of alcohol as boomers cut back.” Sometimes it’s due to health concerns or the

legal ramifications of over consumption and driving. Or a group of women may be having a girls’ night out and one is pregnant but still wants to celebrate. Now there’s even a distilled non-alcoholic spirit. Called Seedlip, it’s marketed as “what to drink when you’re not drinking.” It’s a little like gin but is nonalcoholic. Creator Ben Branson steeps botanicals in neutral grain spirits and then distills to remove the alcohol.“You can make a non-alcoholic gin and tonic with it,” says Gary Gruver, senior beverage manager, global operations, Marriott International. “If you have a lot of meetings or it’s too early to drink, you can still have tonic and the aromatics without the alcohol.” Why? “People are starting evenings a little earlier these days or they may just want to slow down and not be over imbibing.” Smoke and Fire People love the smell of a campfire even in their drinks. Charred, browned, blistered — aka burnt— vegetables and fruits are “in” from the burnt broccoli salad at Superiority Burger in NYC to the orecchiette carbonara with charred Brussels sprouts at Rolf & Daughters in Nashville. Even desserts get into the act with burnt sugar toppings. Technomic reports a 61 percent increase in the use of the word “burned” on menus. Live fire cooking on expansive Argentine grills with adjustable grates that can be raised or lowered to cook directly over the coals are all the rage with chefs. Greg Denton (Ox, Portland, OR) was the first on the West Coast to have an Argentine style grill and to take full advantage of its v-shaped trough designed to catch the “black gold” juices to baste meats and vegetables. John Manion at Chicago’s El Che Bar enlisted the help of a steel worker who builds Harley Davidson parts to craft his custom made 12-foot-long, wood-fired Argentine grill. Every serious pizza place has a wood burning oven which also does double duty for meats and

vegetables. Bars may forbid smoking these days, but that doesn’t dissuade patrons craving the taste of smoke in Old Fashions and Margaritas. Mescal and peaty Scotches have a naturally smoky flavor. But bartenders can also capture smoke by holding a glass upside down over extinguished flame, or infuse spirits with smoky ingredients like chipotles. Can You Hear America Milling? Freshly milled grains may be as important as grinding your own coffee beans. First chefs started making pasta in house, then they baked their own bread. Now many are milling their own flour to make the pasta and bake the bread. Or they’re grinding corn to make masa for tortillas. Chef Kevin Fink at Emmer & Rye in Austin, Texas mills as many as 15 different grains (popping sorghum, red fife, einkorn, etc.) for pastas, breads, and desserts. White Sonora donuts are a hit. Chef Michael Toscano at Le Farfalle in Charleston, SC, adds freshly milled sorghum to his pappardelle to give it a Southern twist. Blame San Francisco uber baker Chad Robertson but artisan loaves are now showing up on restaurant tables and in bakeries across the country. Freshly milled flour and long fermentation are the keys to the crusty, tasty loaves. Carissa Waechter, who has been selling her breads at South Fork farmers markets for a number of years, now has a brick and mortar Carissa’s Bakery in East Hampton. She mills wheat from Amber Waves Farm in Amagansett for many of her loaves. Is Bitter Better? Perhaps thanks to all those bitters in craft cocktails or the kale craze, Americans are getting more used to bitter flavors. Look for more bitter orange, cranberry, green leafy vegetables, broccoli rabe, radicchio, grapefruit, bitter melon, turmeric. Amaros,

Italian bitter liqueurs and digestives, are also gaining in popularity and being used as a modifying spirit in cocktails. They can range in flavor from Fernet Branca’s bitter bitter to Montenegro’s bitter sweet. There are also some Italian restaurants with extensive Amaro lists such as Domenica in New Orleans and Locanda and Bar Agricole in San Francisco. The new romance with bitter flavors also explains why the Negroni, with its mixture of Campari, sweet vermouth and gin, still reigns as the most popular drink. But the Boulevardier, made with whiskey instead of gin, is gaining ground. Rosé All Day Summer in a Bottle, the best-selling rosé made by the Hamptons Wölffer Estate, can take much of the credit or blame for turning the pale pink vintage into a lifestyle. And it didn’t hurt that Angelina Jolie and Brad Pitt marketed one too. Now, this light, refreshing

wine, formerly most closely associated with Provence, is the beverage of choice on happening hotel roof top bars, at beach resorts, and on high-end restaurants wine lists. Its versatility with salads, cheeses, grilled meat and fish, and pasta is universally appealing. Rosé sales, according to the Nielsen research firm, are now more than $207 million annually, up about 50 percent from a year ago. While female interest originally propelled the boom, men are fast joining the party. What other wine has its own hash tag? #RoseAllDay. Thinking even more pink, Wölffer winemaker/partner Roman Roth planted juniper and concocted Wölffer Pink Gin flavored with cumin, cardamom, coriander, fennel, anise, and lime zest and then colored with grape skin extract. PECONIC LAND TRUST PROMOTING CONSERVATION OF LAND ON THE EAST END
T
hreats to farmland on the East End are nothing new. The value of land saw a significant increase in the 1970s on Long Island, which soon resulted in generational families having to sell their land in order to satisfy taxes. In the early 1980s when John v.H. Halsey was visiting home from the west coast, he noticed the 10th generation farm next door had a for sale sign. There were few organizations on Long Island to advise landowners on options that could protect their land and the character of an area that has long been a draw. With this in mind, Halsey founded the Peconic Land Trust in 1983 to help preserve and protect farms, natural land, and historic resources on the East End. Now ready to celebrate 35 years, Peconic Land Trust looks forward to continuing and expanding more than 12,000 acres already conserved on the East End. Sharing that the increasing value of land continues to pose a huge threat to conservation in general, and farmland preservation in particular, Halsey says the value of protected farmland has skyrocketed on the South Fork, and will likely impact the North Fork as well over time. “Non-farmers are purchasing and leasing protected farmland for equestrian and other purposes including as amenities to adjacent development at prices that few farmers can match, especially those who grow food,” Halsey says. “As a consequence, the average value of protected farmland on the South Fork is as high as $185,000 per acre. This has led to the acquisition of additional restrictions on farmland to assure that at least a portion of the remaining farmland is accessible and affordable to farmers for food production.”

Though there are many other threats, there is hope for land on the East End. Peconic Land Trust hosts a number of events, community conservation campaigns, supports various farm programs, and more in an effort to raise awareness and achieve its conservation goals. In Orient, the organization worked with the local community, Town of Southold, and the Edwards Family to purchase and protect 21 acres of farmland, woodlands, and wetlands that belonged to the Edward, Latham, and Terry families since the early 19th century. The area is now protected, and joins 600+ acres of protected land between Narrow River Road and the Cross Sound Ferry Terminal. A plaque was recently installed on the property in honor of former board member and conservation support Joe Townsend. “Partnerships are an important part of the work of the (Peconic Land) Trust,” says Halsey. “From our partners in government, to many nonprofits and educational institutions, to local, regional and national organizations, we partner on conservation initiatives, educational and recreational programming, public policy initiatives, as well as programs that support our local working farms.” Halsey says they have partnered with around 100 different organizations over the years. Partners with the Farms for the Future Initiative for example include Long Island Farm Bureau, Farm Credit East, Cornell Cooperative Extension of Suffolk County, Cornell University’s Long Island Horticultural Research and Extension Center, Long Island Wine Council, Edible East End, Suffolk County Planning Commission, Suffolk County Department of Economic Development and Planning, Nassau Land Trust, American Farmland

Trust (New York), Land Trust Alliance and the towns of Brookhaven, East Hampton, Shelter Island, and Southold.
