uch like our cover story (see page 8), the 2020 season has geared up in earnest, and the Plateau is already a bustling beehive of showings and closings for homebuyers eager to begin their dream of the Highlands-Cashiers Plateau lifestyle. I'm delighted to report that the fourth quarter of 2019 finished strong (see page 34), with 2020 proving to be more of the same. New to our team, Merry Soellner and Parker Anderson are thrilled to experience their first spring and summer seasons with us, using the powerful marketing tools that Silver Creek provides to even better serve their clients. You never know what you might find in the forest. Tucked neatly into the 512,000 acres of the Pisgah National Forest, a colony of queens is served by thousands of loyal subjects high on a mountaintop near Lake Toxaway. Sean Collinsworth and Denise Altay of Killer Bees Honey (KBH) welcome you to their honeybee farm where queen bees reign, female worker bees dominate, and male drone bees mate. On their Killer Bees Farm Tour & Honey Culinary Experience, Collinsworth-Altay passionately shares the captivating secret life of bees. According to Altay, “What happens in the hive makes [the HBO fantasy thriller] Game of Thrones look like a kindergarten nap time.” At the epicenter of the bee farm’s euphonic apiaries (i.e. hives) is a complex hierarchical bee society with happenings that make for an intriguing narrative. Taking the tour gives guests the opportunity to learn about the honeybees’ undying family obligation, their cunning power plays, environmental struggles, combative practices and sometimes their need to even commit murder. Six years ago, Collinsworth and Altay created a safe haven for these bees which may have started as a hobby, but as the number of hives grew (the total is now up to one hundred) and a farm was created, so was a mission - a passion project to save the dying honeybee population and the forest. As Head Beekeeper, Collinsworth explains
that keeping their beehives buzzing is no easy business; they often spend sixteen hours a day as stewards of their apiaries’ care and survival. Collinsworth, a retired Los Angeles County Deputy Sheriff, and Altay, a retired high finance executive from New York City, chose to exchange big city life for a quiet existence in the Blue Ridge Mountains of Western North Carolina. However, the quiet buzz about their bee expertise, their cause, and their deliciously pure artisanal honey is rapidly buzzing ever louder.
“It is important to understand the hive culture," announces Collinsworth. “It is a large, highly organized family group dominated by females.” Just like human royal families, the honeybee hive has a queen and hundreds of loyal subjects, workers, and drones. “The hive can be a very volatile place to live,” he professes. “The workers are loving and loyal to their queen, but the job of making honey is principal and oftentimes requires them to be strategic and shrewd in order to protect the hive and the honey. Additionally, worldwide the honeybees’ livelihood is under constant threat due to environmental toxins, disease, habitat loss, and climate change, making the outside of the hive just as volatile as the inside.” Outnumbering the male drones one hundred to one, the female workers NC L IVI NG EA R LY S PR ING 2020 11

are tasked to keep house, care for the larvae, gather nectar, produce honey, and guard, while the drone's only job is to mate a queen before they die. If the drones are still alive after the mating season (end of summer) and at the first frost, the worker bees either kill them or leave them out of the hive to starve in order to make the hive more efficient through winter. The KBH tour goes into much more detail of how the royal household operates.
“What happens in the hive makes Game of Thrones look like a kindergarten nap time.” Collinsworth relays that the word “killer” in their company name not only depicts the fierce nature of the dynastic bee community but more importantly the clean taste of their artisanal honey made possible by the unadulterated forest, virtually untouched by pollutants. “The honey is quite special,” croons Collinsworth. “Our bees have unfettered access to the biodiverse flora system of the Pisgah, a temperate rainforest.” This green mecca offers the bees over two hundred pollen markers for gathering nectar to make wildflower honey, plus sourwood trees, predominantly found here in the WNC Mountains, surround the farm, to create sourwood honey. The sourwood honey is “distinctively rich in flavor.” Altay oozes, “We like to say our sourwood honey is the champagne of 1 2 S ILVE R CR EEK R E A L ESTAT E G R O UP
honey.”
“Our artisanal wildflower and sourwood honey is never blended, flavored, heated, or pasteurized,” Altay says. “Killer Bees Honey is harvested, hand-bottled, and packaged on our mountaintop in Western North Carolina. We are totally transparent with our honey. Via stringent testing, our sourwood is proven quantitatively one the purest in the US with a 94% True Nectar Value (the top of the purity scale). We want to validate it for the consumer, therefore we have it tested at three different labs, one in Canada, one in Germany and one in the USA.” Collinsworth chimes in, “One of our testing labs, Sweetwater Science in Columbia, MO, tested our honey and said it is the most remarkable honey they have ever tested and called it ‘absolutely gorgeous’.”
Collinsworth’s bee expertise is not just rooted in experience from his farm, but he is the only beekeeper in America to go to Bologna, Italy, and the University of California at Davis (UC Davis) to study to become a honey sommelier. Given this and his tenacity for producing uncontaminated honey, the KBH brand is finding quite a foothold around the world. “This year (2019) we expanded to 90 hives. The first 300 pounds of honey sold out in ten minutes,” says Collinsworth. With shipments going across the United States and more further afield to New Zealand, France, and England, KBH has obtained a “sort of cult following” with some customers saying they will never buy from another supplier according to the pair. “Our honey is so pure due to the cleanliness of our forest. Others’ honey is not so because of glyphosate (Roundup, a type of pesticide often used in farming) in neighboring farms that has infiltrated the bee habitat,” explains Collinsworth. “These toxins, and others, are entering the food system and hurting the honeybees as they feed. The loss of the honeybee population is at a crisis level. Our paramount mission with our apiary is to defend the Pisgah and sustain the health of the honeybee population,
but additionally, we give 20% of our total revenue to independent honeybee research.”
There is a reason the KBH tour is voted #1 on TripAdvisor and as an Airbnb experience in the area. In season, the four-hour tour takes place on Fridays and Saturdays and includes a visit to the hives to learn the life of a honeybee and their caste system, a trip to the processing center to pour your own bottle of honey, followed by a decadent honey tasting. “Our plan in 2020 is to form our own non-profit for honeybee research and education called The Queens Brigade,” hypes Altay. Taking a tour with KBH supports this cause, as well as the bees, the forest, and the community. “What is so gratifying for us is to look at the reviews from people who took our tour and read what they have to say. They come away with a global understanding of more than just the bees. They understand how the bees are connected to the whole environment and the important role they play
in sustaining the biodiversity of the forest.”

Do you love medium-bodied red wines? If Malbec or Cabernet are grapes you enjoy, may I introduce you to Carménère? A grape originally from the Bordeaux region of France is making its comeback in the country of Chile.
HISTORY of CARMÉNÈRE The ancient grape, Carménère, can be described best as a sister to Cabernet. Originating in Medóc, the grape is almost impossible to find in France today. Struck by an insect phenomenon, phylloxera, the grape was thought to be forever lost in 1867. The wine was an original treasure in France, and in recent years, was re-discovered in Chile. Come to find out, Chilean growers had imported 16 S ILVE R CR EEK REA L ESTATE G R O UP
the vines from the Bordeaux region in the 19th century, mistakenly believing they were Merlot grapes.
The delicate grape dislikes winter and excessive rain or irrigation water, and it ripens late. The lost grape is hand-picked, double-sorted, and fermented with the skins still on to create perfect harmony in a bottle.
WHY LOVE IT? Why love this wine? It is meant to be consumed while it’s young. Fine wines are better with age, yet Carménère is the perfect dinner table wine. I’m dubbing it the “now” wine, freshly purchased from your online wine club or liquor store. For me, it’s the perfect blend of berry notes and
creamy tannins, with a splash of sophistication. It’s the perfect fall wine, with a color reminiscent of a crimson autumn leaf. Most Carménère wines have striking aromas of raspberry sauce, sour cherry, green peppercorn, and a granite-like minerality. On the more affordable end, you can expect to find Carménère wines with honest fruity red berry aromas and tart flavors of raspberry with a subtly bitter taste similar to kale. In fact, Carménère has many similarities in terms of body and texture to Merlot. On the higher end, the herbaceous bitter notes depart the scene in favor of sweet berries, refined light tannin, and a bittersweet note like cocoa powder. I recently visited Veramonte Winery in the Colchagua Valley outside of Santiago, Chile. Their vineyards are organically farmed, and the mild climate supports the natural development of the grape. With over 10,000 acres preserved as a natural green belt, it’s a safe haven for Carménère.
When I tasted the wine, I expected a lot from this “noble” grape. If silk had a taste, this could be it. The aroma, the flavor, the texture, all with enough complexity for a coveted red, yet velvety smooth for sharing with company. With a chocolate and black pepper (pepper trees are local to the area) finish, the Primus Carménère is one I swirled in my glass, tasted, and of course, shipped home.
You’ll find that most Carménère on the market today hails from Colchagua Valley. This long-lost grape is alive and well. Are you ready to introduce the Chilean Carménère to your wine cellar?
FOOD PAIRING with CARMÉNÈRE Carménère makes an excellent everyday food-pairing wine for several reasons. For one, its natural higher acidity doesn't get lost when paired next to foods with higher acidity sauces, and its herbaceous peppercorn-like flavor
embellishes roasted meats (from chicken to beef). Lower tannins make it a friendly option for lighter fare as well.

“THAT’S ONE SMALL STEP FOR MAN, ONE GIANT LEAP FOR MANKIND,” said Neil Armstrong as he stepped onto the Moon for the first time on July 20, 1969. With the 50th anniversary of the extraordinary Apollo 11 landing on the Moon having just passed, no one truly knows what the next fifty years could look like for space travel. In certain circles, space tourism is a hot topic and, contrary to what the general public may think is possible, it is coming fast. This 21st-century space race will initially launch sightseers into space for short excursions to experience zero gravity and an out-of-this-world view of Earth. A long-term projection includes vacations on the Moon, Mars, and the ISS, and decades from now, infrastructure for people to live and work at all three locations.

But what might it look like ten years from now? One reporter from the Washington Post paints an appealing, yet fictional picture in the article “A Near-Future Tourist’s Guide to the International Space Station”. The piece markets the ISS as an ideal travel destination, a “virtual oasis in the Heavens, complete with exercise classes, luxury accommodations, and the best views you’re going to find anywhere.” Along with high altitude, low crime, and exclusivity (due to the extravagant price tag to get there), an ISS vacation may include robotic
Virgin Galactic’s impressive $220 million home named Spaceport America, located near Las Cruces, New Mexico, is the first in the world to be built for private commercial space operations. According to Reuters, Virgin Galactic has received $80 million in deposits from wannabe astronauts waiting patiently in the wings for their first space flight. These advance reservations amount to 600 people from 60 countries. Unaffordable for most, this space exploration trip costs $250,000 for a 90-minute suborbital ride.
Richard Branson of Virgin Galactic and Amazon CEO Jeff Bezos’ company Blue Origin are racing to be the first to launch tourists into space in the next few years. Then there is Elon Musk’s SpaceX that makes rockets and spacecraft for government agencies and private entities. SpaceX plans to launch its first manned flight in April 2020 after completing multiple successful cargo trips to the International Space Station (ISS). Its secondary mission is to bring travelers to the Moon in 2023 and later colonize Mars in 2024.

We better get prepared, suggests Bruce Crockett, a defense and security marketing consultant who has worked closely with SpaceX to develop plans for clients launching equipment into space using SpaceX rockets. “I am meeting with the Air Force Space Command next month,” announces Crockett, “to talk about how companies can make money in space, and tourism always comes up in the conversation. The discussion is focused on planning for space commercialization 60 years from now!” Many government agencies and companies in the private sector are preparing for a piece of the pie, the space tourism pie that is. According to Mr. Crockett, “NASA is pushing to commercialize space travel to help bring down their costs.” There are short-term plans to allow commercial travel to the ISS, 250 miles above Earth, where tourists can have a hands-on experience assisting astronauts with their duties, enjoy weightlessness, and fulfill their dream of spending a night in space. NASA announced in June that it plans to charge guests of the ISS $35,000 for a one-night stay, not including the cost to fly there.

The state of New Mexico is in a frenzy prepping for the onslaught of tourists to descend on Las Cruces and the area surrounding Spaceport America in the coming years. Improvements to infrastructure include beefing up highways, adding hotels, restaurants, and civilian astronaut training facilities. New Mexico’s Tourism Secretary, Jen Paul Schroer, plans to promote a visit to Spaceport America as a complete and unforgettable travel experience so people keep coming back for more.
The key to maximizing the profitability of space tourism is a fast turnaround where rockets blast off into space and quickly turn around to Earth to refuel and restock, ready to take the next group of tourists into space. Bruce Crockett explains that with the advancement of rocket technology since Apollo 11, a trip to the Moon will be far more streamlined, requiring three sleek rockets rather than one huge clunky one carrying people and equipment. They will meet at the ISS and then launch from Earth orbit to lunar orbit from there, making it far more efficient with a faster turnaround. Last year, Bezos unveiled the Blue Moon lunar lander that is capable of taking people and cargo, with a total weight of 3.6
metric tons, to the lunar surface. Using Blue Moon, he plans to build a base camp on the Moon so he can achieve his vision of creating a human settlement there. Knowing that Blue Origin’s ticket cost for a 1.5-hour trip into suborbital space is $200,000, slightly lower than Virgin Galactic, there’s no telling what the cost will be to fly to the Moon. And beyond the topic of tourism, another little known Dutch company called Mars One is raising capital to help establish a permanent human settlement on Mars in 2026 using SpaceX rocket technology. Per their website, “The Mars One crews will go to Mars not to simply visit, but to live, explore, and create a second home for humanity.”
For now, the dream is to create a space experience of a lifetime for tourists according to Virgin Galactic. For suborbital space missions, passengers will prepare and train for three days at Spaceport America prior to the flight. During the trip, passengers float in zero gravity for several minutes, and "experience astounding views of Earth from the black sky of space" from approximately 62 miles above Earth. The whole adventure will be filmed for each "astronaut" as a memento. Step (or leap) right up. •

WHAT'S IN A NAME?

Most of us who call North Carolina home are conscious of the role the Eastern band of Cherokee Indians played in our history. When the first European settlers arrived in the 1500s, tens of thousands of Cherokee populated places in Western Carolina. They were said to be a peace-loving people, who sadly were forced into a confrontation with the outer world. By the 1800s, cultural upheaval had reduced their numbers dramatically, due to the influx of diseases brought by the Europeans and the painful chapter in American history which is called the “Trail of Tears.” Forced to leave their homes in places like our own Western Carolina, more than 16,000 made the difficult evacuation to Oklahoma. Along with their personal belongings, they left remnants of their culture, which endure today. A testament to the perseverance of the people, the Cherokee language is alive in the names of many geographical places. They are so commonly incorporated into our local lexicon, it's easy to forget their origins. For example, did you know that “toxaway”, as in Lake Toxaway, means “land of the red bird”? Or, that Chattooga means “has crossed the river” or “drinks by sips”? It seems an appropriate name for the land on which The Chattooga Club in Cashiers sits, with its many streams and waterfalls. There is also, of course, a Chattooga River which flows from Cashiers for 57 miles to join the Tallulah River. Tallulah River and Falls are also appropriately named from the Native American words for “leaping water”. The Tuckasegee River, which flows through Western Carolina, beginning above Cullowhee, honors the Cherokee words for “place of the turtles.” Interestingly, many existing weirs, which are stone barriers regulating water flow, are attributed to the Cherokees from hundreds of years ago. Another regional body of water, Lake Junaluska, is named for a famed Cherokee leader. The story goes that his parents did not know what to name him when he was born but found inspiration during his infancy when his carrying rack which they had placed against a tree toppled. The perfect handle, they decided, was the Cherokee translation for “one falling from a leaning position.” Interestingly, Junaluska became a NC L IVI NG EA R LY S PR ING 2020 31

revered leader who rejected Tecumseh's invitation to fight American settlers. He even joined forces with Andrew Jackson in the future President's war against the Creek tribe, an action he later regretted. Chinquapin means “a small edible nut” or a shrubby chestnut in the Cherokee language and seems an appropriate name for the beautiful conservation community located near Cashiers. The Cullasaja River, Cullasaja Falls, and Cullasaja Country Club, all honor the Cherokee word for “honey locust place.” The name inspired at least three Cherokee towns which were each dubbed “Sugartown” by the English settlers. Nantahala, the name applied to North Carolina's national forest as well as a gorge and a river means “land of the noonday sun.” It's probably not coincidental that at Nantahala Gorge the sun does not reach the valley floor until midday. Cullowhee, today the home of Western Carolina University, can be interpreted in a few different ways. There is the Cherokee legend of Judacullah, a mythic warrior who supposedly lived in the area; or, it is believed to be a derivative from the Cherokee word “gulahiyi”, which means “place where the green plant grows”, or it could come from the Native American word for “Kullaughee”, which means “valley of the lilies”. Saluda, located just northwest of Asheville, is derived from the Cherokee word “tsaludiyi”, meaning “green corn place”. Asheville, for that matter, is said to come from the Cherokee word meaning “ashes place.” But this is likely an urban legend of sorts since an early governor of North Carolina was Samuel Ashe. The town was likely named for the man and not the residue from a fire pit. Of course, boundaries were fluid centuries ago, and numerous Cherokee-inspired names are commonly encountered in South Carolina and Georgia. For example, “beside the water” is the English translation of the Cherokee word Oconee, as in Oconee County, South Carolina. At one time the present-day county, parts of which sit on Seneca Creek, was the site of numerous different Cherokee villages. Seneca, it is said, takes its name from the Cherokee town of Sennekaw. Lake Jocassee, the 7,500-acre reservoir in South Carolina, may be known for the clean Appalachian rivers that feed it, but its name means “Place of the Lost One” in Cherokee legend. The actual name can be traced to a maiden who nursed a wounded warrior to health and fell deeply in love with him. In a subsequent battle, he was killed, and the story goes that Jocassee went into the water, did not sink, and walked across it to find the ghost of her beloved. Keowee, as in Lake Keowee, means “place of the mulberry”. Legend has it that the Cherokee settlement of “Kuwahiyi” had a large stand of them, although the town lies beneath Lake Keowee today. Toccoa, Georgia honors the Cherokee word for “where the Catawbas live”, referring to a fierce enemy tribe. In fact, one elderly Cherokee warrior was named ta-qua-di-hi, or “Killer of the Catawbas.” Another definition of toccoa means “beautiful”, which is certainly appropriate for a place like Toccoa Falls. In the present-day enthusiasm for conservation of our valuable natural resources, it seems fitting to acknowledge those who loved our land long before us. Respect for the lyrical Cherokee language is a good place to start.

Ray’s passion for all things real estate blossomed early in his life. After graduating with an accounting degree from the University of North Florida in 1971, his real estate career was launched immediately.
