For decades, Sherwin Loudermilk has looked forward to the time when he and his family could slip away from the hectic pace of life in Atlanta and find refuge in the woods and tranquility of Cashiers. NC Living: Thank you for making time to talk with us, Sherwin. Tell us about your roots in Cashiers. SL: It’s such a pleasure talking with you! My family has owned property in Cashiers for many years, and every single time we come here — whether it’s just for the weekend, or for a longer holiday break — we all have this sense of deep calm and peace as we get closer. There’s something magical about the Plateau, the majesty of the forest, the native plants and animals. And of course the people are so friendly and welcoming. We absolutely love it. NC Living: What made you leave the corporate world and start a residential development company? SL: It was one of those things where several elements of life intersect at the right time, and you see a new path forward. I studied business and thought like an engineer, very process-

oriented. I was working in web development and telecommunications at IBM, and I traveled a lot and worked long hours. I was starting to think about the next chapter of my career, and I always had an entrepreneurial itch. When our daughter was young, my wife Roane started doing house renovation projects and we had this lightning bolt moment of "Wow, we love this. We should start a business." That was more than 15 years ago, and it’s the best business decision we ever made. NC Living: What’s the culture like at Loudermilk Homes? SL: We have a mantra: Build It Like It’s Yours. That means doing the absolute best work using the best products and best techniques and making the right decisions every step of the way. Everyone is empowered to speak up if they see a mistake, and everyone is expected to share their knowledge so we create a culture of continuous learning. We bring in technical experts for things like roofing and windows so they can show us best-in-class products. Most importantly, we have a family culture of respect, trust, integrity, and honor. To show our employees how much they mean to us, we recently named the streets in a new development after several of their children. NC Living: Tell us about your Nine-Step “Process to Perfection” that we keep hearing about. SL: When we first got into this business, we heard so many horror stories about projects going badly, with surprise costs and terrible delays. We vowed to make it easy and fun to work with us, so we created a Nine-Step “Process to Perfection.” It starts with “Inspiration” to reveal their design preferences and create a mood board and learn about their lifestyle. For example, if they don’t wear shoes in the house, we’re going to create extra storage near the entries. If they entertain frequently, they may want a second prep kitchen. We meet with the homeowners at certain intervals to approve the placement of light fixtures and vents and make changes while it’s easy to do so. Following this disciplined process helps everyone know what’s going to happen next so there’s complete transparency. NC Living: You talk a lot about transparency. Exactly how much transparency do you provide?

SL: Each homeowner gets an account in our app called Loudermilk Connect. There’s a live video feed, daily work logs, photos, and real-time schedule and budget updates. They can approve change orders by signing with their finger, and all of their design selections are archived. If a friend asks about their paint colors or light fixtures two years later, they can look up the product number or SKU. And when we say complete transparency, we mean it. Sometimes we don’t pass a plumbing inspection, and the homeowner will see that — along with what needs to be corrected, and an estimated date for the next inspection. We’re looking under the hood of the car, and sometimes you’re going to see a little grease. We like that because it builds trust and confidence. NC Living: How is smart home technology evolving? SL: Some builders use Nest thermostats and call that smart home technology. We’re moving toward whole home automation specifically designed for the needs of our clients. At IBM, I worked on a “home of the future” project and we imagined far-fetched ideas. Your garage door could recognize your car and automatically open. Your house could unlock itself, turn on the lights, play your favorite music and lock the door behind you. Now our homes can actually do all these things, and so much more. We can program the sprinkler system to pause for five minutes if the UPS guy knocks at the door. We can program electronic shades to come down automatically if the sun gets too bright or hot. We will keep finding more sophisticated ways to use technology to make our lives more comfortable. NC Living: When will the homes at Cedar Hill be available, and what’s next for Loudermilk Homes? SL: We have broken ground at Cedar Hill, and there are several other locations around Highlands and Cashiers where we will be building in the near future. We look forward to meeting people who live here and in other nearby states who are ready to design and build the custom luxury home of their dreams on the Plateau. GREY'S HOUND COCKTAIL Inspired by the greyhound cocktail, The Market Place Restaurant of Asheville looked to their spring and summer gardens’ fresh rosemary to create a spin on a classic. This light cocktail is easy to drink, refreshing, and tastes great too! 2 oz Grey Goose vodka 1/2 oz rosemary simple syrup 2 oz ruby red grapefruit juice lime wedge rosemary sprig Method: In a mixing cup, combine ice with vodka, lime wedge, rosemary simple syrup, and grapefruit juice. Shake vigorously and pour into an old-fashioned glass and garnish with a rosemary sprig.

KIKI COLADA There is nothing quite like freshly squeezed Key lime to beat the heat of summer. A Floridian favorite, the kiki colada was made famous on Casey Key in Florida. Many refer to the frozen cocktail as a Key lime colada. Keep calm and rum on! 1 oz Liquor 43 2 oz vanilla rum 1 ½ oz Key lime juice 1 oz cream of coconut 1 ½ oz pineapple juice 1 tsp sugar 1 cup ice Method: Combine the ingredients in a blender. Prepare margarita or martini glasses by rubbing lime around the edge and dipping the rim in graham cracker crumbs. Divide blended yumminess into two glasses and garnish with slices of lime. HOW A CELEBRITY CHEF IS TEACHING AMERICANS TO WASTE LESS AND EAT MORE words by shauna nosler • photography provided by joel gamoran


Best known as the host for A&E’s hit series “Scraps,” Chef Joel Gamoran is one of the country’s most wellknown sustainability-focused chefs. In addition to his television show, Joel served as the National Chef for Sur La Table, makes monthly appearances on NBC’s Today Show, and is the author of “Cooking Scrappy.” With a passion for cooking with ingredients that most people tend to toss in the trash—think mushroom stems and banana peels— Chef Gamoran has shown millions of people (myself included) how delicious and gratifying it is to get scrappy in the kitchen, all while making a personal impact on reducing climate change. Recently, I got a chance to chat with him about his no-waste philosophy and what propelled this scrappy chef to learn how to cook deliciously, with less. “I grew up in a home with overabundance and knew that as I got older and saw the world, that it was my duty to share what I had learned,” says Gamoran of his background and inspiration to look for more sustainable ways of cooking and preparing meals. “We were the family that always had food on hand and full trash cans with food that spoiled,” and adds Gamoran,

it’s this experience that played a huge role in shaping him as a person first and a chef second. Gamoran studied at the Culinary Institute of Florence and the Culinary Institute of America and has since brought his skills and enthusiasm for teaching people how to waste less and eat more to the forefront of America’s home kitchens. Last year, he partnered with U.S. Soy—a relationship he says he’s beyond proud of—and together launched the popular series “Stretched: Make More with Less.” In each episode, Chef Gamoran demonstrates simple, creative ways to stretch a featured ingredient to maximize its use and avoid food waste, such as savory carrot top pesto and creamy brown banana ice cream. Two of my favorite recipes I learned from Chef Gamoran—both in his cookbook—are the onion skin fried pickles and the cheese rind tomato bread soup. Both delicious and both use a no-waste approach that makes you feel good about what you’re putting in your body, and not in the trash. NC Living: How'd you come up with the idea for “Stretched”?

NC Living: When did the series launch and what were you doing before?

Joel Gamoran: COVID-19 was a big driver. I was speaking to my longtime friends over at U.S. Soy, and we were seeing in real-time the efforts that U.S. farmers were putting forth as essential workers to put food on our tables during such uncertain times. Soybean farmers do so much to keep their farms operating sustainably, regardless of tough times and serious concerns around our global food supply. Yet, the story of farmers is often less heard. We wanted to leverage my passion for sustainable cooking to creatively bring awareness to the amazing work of our U.S. farmers and the importance of supporting them through purchasing U.S. grown ingredients and doing our parts to reduce food waste by using these ingredients to their max potential. This is how “Stretched” was born!

JG: The series launched on Instagram in May 2020. Before this, I was hosting a show called “Scraps” on A+E networks where I traveled the country inspiring people about how to cook with parts of ingredients that normally get trashed. So it was a super organic and meaningful next project for me. NC Living: Why is this whole concept of zero-waste cooking important? JG: First, as I already mentioned, making a habit of these simple strategies in the kitchen is a small way to show our appreciation of all that goes into our food supply and play a role as consumers in making the food system as a whole more sustainable. The second would be the planet! Food waste is a major contributor

to climate change. Rotting food in your dumps equals methane gas which creates ozone issues. Another key player, money! The average family of four wastes about 30% of the food it buys, which clocks in at nearly $2,000 per year. So learning how to make the most of what you have can save you thousands of dollars. Last, but most definitely not least, is flavor! These wasted ingredients have loads of potential to up your cooking game in an impactful way. Don’t toss them down the drain! Ever tasted a carrot top or banana peel? Guess what? They rock! NC Living: Are there any particular items you always have on hand that help you "stretch" your own meals at home? JG: Definitely. I have what I like to call my “always ingredients,” which are super versatile key players in stretching almost any ingredient in a whole range of delicious meals. These ingredients are kosher salt, good white wine vinegar, soybean oil, eggs, greens, local honey, whole grains, spices, and Dijon mustard.

NC Living: Switching gears a bit, can you give me your thoughts on the massive grocery store versus the small shop. Here in the U.S. we are prone to want, want, want, and there's some comfort in having an overstuffed fridge and pantry, yet those Costco trips often end up with us purchasing more food than we ever really use. JG: Yes, and I think we can almost all relate to, or at least have witnessed, this tendency in the past few months with “pandemic panic purchasing.” The comfort in having enough in the fridge and pantry is understandable, especially right now, but in my opinion, if we’re willing to make the effort to learn and grow, there could be an equal sense of comfort in trusting your own ability in the kitchen to get the most of out of each ingredient you buy, as this means saving money by not making each trip a massive haul. You could be surprised how much more you can get out of each trip. There’s also a longer-term sense of gratification in knowing that you’re contributing to a stronger and more sustainable food system. There’s a learning curve, and it may mean adopting some new habits in the kitchen, but that’s exactly what “Stretched” and my mission as a whole seek to address.

Joel’s Top 5 Tips for Stretching Your Food STOP WASTING SO MUCH AND START "STRETCHING" WHAT YOU ALREADY HAVE IN YOUR REFRIGERATOR, PANTRY, AND FREEZER

+ Make your own healthier chips out of produce that’s not looking so hot. Simply add a drizzle of soybean oil (commonly labeled vegetable oil on grocery store shelves) with some seasonings of choice and toss them into an oven at a low temp to dry them out at a super slow rate. + Don’t forget about cocktails! A simple syrup, which is one part sugar and one part water, can be boiled and infused with any ingredients you have on hand. + Learn how to make catch-all dishes like frittatas, risotto, and soups so you are always equipped to make the most of what you already have. + Try and see the whole ingredient. Take a moment to assess what parts of your everyday staples you might be used to throwing away, like onion peels or stale bread. There’s likely a use for them that can help you. + Entertain guests by frying up a special homemade appetizer. I love frying things that might seem like they have no more life to give in a neutral oil, like carrot peels or sad-looking herbs. They get crispy and beautiful – the fryer is a huge player in stretching ingredients.

THE FIRST CELEBRITY CHEF WORDS BY ZENA LYNCH

It’s no secret that the world currently has an overabundance of celebrity chefs. They put their name on everything from spatulas to dog food. In this day of blogs and YouTube, anyone can aspire to achieve celebrity status and acquire their own show (and a cult following) on the television channel that’s wholly dedicated to food. You could even say that the celebrity chef movement spawned an onslaught of celebrity psychologists, celebrity doctors, and celebrity dog trainers. But long before reality TV,―before cooking was even a form of entertainment,―America was not a place that came to mind when people thought of sophisticated gastronomy. It took pioneers such as Julia Child to bring America to the forefront of gourmet cooking. Although many consider Child to be the first celebrity chef, it was a man named James Beard who hosted the first-ever televised cooking show. Many know his name, but few know much about him. Born in 1903, he was raised in the Pacific Northwest by his self-sufficient

English mother, who taught him to cook the seafood and wild berries that they gathered themselves from the Oregon beach. A fierce student of the theater, he lived abroad for several years to pursue his dream of acting at his mother’s encouragement. After eight years of failing to break into theater or movies, Beard was forced to learn to make money some other way. He started a catering business that later blossomed into a food shop called Hors d’Oeuvre, Inc. He then began what was to be a prolific career writing cookbooks (he would publish over twenty-five of them before his death in 1985). Upon his return from the war in 1945, Beard jumped right back into the culinary world, appearing on NBC in America’s first cooking show.

As his ideas gained popularity, Beard established the James Beard Cooking School, with locations in New York City and Seaside, Oregon. He spent the remainder of his life writing cookbooks, traveling, and tirelessly teaching others his concepts of good food, ethically prepared with fresh ingredients. He was eventually recognized by the New York Times as the “Dean of American Cookery” for his efforts in coalescing American cooking traditions into a national cuisine.

He was one of the first to shake America from its lazy slumber of canned food and baking mixes. Some have described this period as “the death of food.” In its place, a culture of microwaved TV dinners, Jell-O molds, and Spam was born. Companies had discovered the gold mine that was the American housewife and the result was a movement of factory farming, fast food, and processed food that America has yet to fully recover from. Beard railed against the idea that easy is always better. He suggested buying produce when it’s in season,―a common sense idea that was revolutionary in a time when “organic” was just thought of as a type of chemical compound.

Upon his death, Julia Child urged Peter Kump, a former student of the James Beard Cooking School, to purchase Beard’s Greenwich Village brownstone and continue Beard’s legacy. Originating in China almost 6,000 years ago, feng shui directly translates to “wind” (feng) and “water” (shui). Sometimes thought to be the art of placement—understanding how the placement of yourself and objects within a space affects your life and overall wellbeing—feng shui is a complex body of knowledge. It teaches us how to balance and harmonize with the energies in any given space, be it a home, office, garden or something else. “Feng shui,” says interior design professional and feng shui guru Rhonda Lanier, “involves the placement of objects in relation to the flow of qi (chi) or ‘natural energy.’ It involves the layout, framework, materials, and colors of building structures and is used in architecture, urban planning, interior design, and garden design.” By creating spaces using feng shui principles, Lanier says your environment becomes more harmonious and allows for better balance in one’s living and working space. “This ancient method of constructing and optimizing residences and businesses helps bring about happiness, abundance, and harmony,” she says. And Lanier knows all too well what it’s like to need more harmony in one’s life. FINDING HARMONY

Busy commuting from the East Coast to the West Coast working on a largescale hospitality project, Lanier was officially introduced to feng shui by way of accident, literally. Admittedly,

she says she wasn’t balancing her personal life with her career and knew she needed to slow down but didn’t until she was involved in a car accident that kept her out of work for nearly two years. “There is an old Buddhist proverb that says, ‘When the student is ready, the master will appear’,” says Lanier. And that’s just what happened. Unable to work, Lanier slowly began to shift her focus into feng shui and was fortunate to meet Black Sect Esoteric Buddhism feng shui practitioner Eileen Conti Weklar. Before meeting Weklar, Lanier says that although she didn’t understand it yet, she was already implementing the feng shui principles in her design work. “I have always been sensitive to energy,” she says, “and I knew it was important to get the feel of the room just right … with the colors I used, the different materials, the placement of the materials. I didn’t realize there was an underlying wisdom to what I was designing, I just knew it was working for me and my clients.” Nowadays, Lanier runs her own successful interior design business and her passion for the ancient art of feng shui shows in everything she

does—especially when it comes to helping clients bring harmony to their surroundings. And one of the most important rooms that Lanier says should incorporate the feng shui philosophy is the bedroom. THE COMMANDING POSITION

“How you sleep definitely impacts how you live your life,” says Lanier. Therefore, she suggests loving the look and feel of your bed and placing it in the command position within your bedroom, making sure you have a view of the door.

“The bed in the commanding position represents how family members will face the world and one another from a place of personal strength and power. The bedroom is a place to rest, to love, to sleep. It is a private place for partners to spend time together and must be designed as a place for repose, relaxation, and intimacy,” she said. Another important area to focus on is the entryway, even if you don’t use it that often. “The front door is the mouth of chi and is the literal and figurative beginning point for all things that occur in your life and your home,” she says. “It (the entryway) represents your relationship with


society—the connection between public and private—and the door lets in or keeps out the vital energy that promotes health, luck and wealth in your home ... so be sure to open your front door every day.” THE FIVE ELEMENTS

According to the Theory of Five Elements, wood, fire, earth, metal, and water are the building blocks of everything physical on earth. Lanier says the five elements manifest in countless ways and combinations in the spaces in and around us.

“We typically feel most comfortable when all of the elements are represented and balanced in our bodies, homes, and workplaces,” she says. “In a room, if all the elements are balanced, you will feel much more peaceful and at ease. Have you ever been in a space and noticed you started feeling really tired and your energy drained? This is a space with too much wood element. Too much fire element causes anger and anxiety and can cause you to feel burned out. Balancing the elements in interior design not only brings balance into your space, it creates interest in your space, it brings a sense of feeling at home and comfortable in your surroundings.”

Suspend wind chimes near your front door to disperse any rushing chi. Brass or metal is best with a sound pleasing to you. Flags, wreaths, banners, and scented plantings all enhance the front door and create a sense of welcome. Experiment with the things you plant in the pots near the entrance.

ABOUT COLOR

Everyone knows color can affect many basic human functions like mood, appetite, physical endurance, and more. There is, after all, a reason why so many fast-food restaurants incorporate reds and yellows into their scheme and why spas tend to use whites, greens, and more earthy tones. “All colors,” says Lanier, “represent something different so it is very important to use your colors wisely. "For example, green is a wood element and is associated with tranquility, harmony, and balance. No wonder we feel so in our element in nature. Brown is grounding and calming and is associated with stillness and contemplation. Gray is an ambiguous color; it is the perfect marriage of black and white. Use gray when you want to instill balance and resolve conflicts, stay focused and

communicate effectively.” So, how can you start to bring harmony and balance into your surroundings? Where do you begin? And for that matter, how do you know if you need to? Lanier suggests everyone start by asking some questions and then begin to make changes to your surroundings based on the answers. Get rid of what isn’t serving you, keep the things that bring you joy, and before long you just might find yourself living and working in a more harmonious state.

To find out, start by asking yourself a few questions and then follow Lanier’s tips for beginning the process of decluttering and allowing more good energy to flow into your heart, mind and home. First, ask yourself what clutter actually is. Simply put, clutter can be anything that falls into these categories: ≈ Things you don’t love ≈ Things that aren’t useful ≈ Things that don’t speak to who you are right now

Next, ask yourself why you held onto these things. Do any of these reasons resonate? ≈ I’m going to save this because I might need it ≈ I’m going to save this because it might be worth something ≈ I’m going to save this for my children because they might want it someday Ever find yourself thinking something along these lines?

≈ Too many things in too little space

≈ I bought these clothes for half price. They are two sizes too small but I’m starting a diet tomorrow.

≈ Things that are unfinished: relationships, conversations

≈ I’m just storing this for my friend until he gets settled.

≈ Things that are broken, untidy, or disorganized

≈ I’m going to save this bridesmaid’s gown. One day I’ll cut it down and get another wear out of it.

“Stuff breeds,” says Lanier. “The more stuff you have, the more you need, and eventually the useless stuff crowds out the good stuff.” And the said bad stuff not only crowds your living space, but it drains your energy, creates stress and anxiety, and can prevent you from achieving goals by limiting your relationships and opportunities, essentially putting your life on hold. “Gathering around you the things that you love (instead of the aforementioned bad stuff) is an expression of your own individual chi,” Lanier explains. “Individual tastes may be more in the yin or yang category but your ultimate goal should be to live a life surrounded by and balanced by the things that strengthen rather than deplete you.” In other words, if there’s a tangible item in your home that drives you crazy when you see it—maybe an ex-boyfriend or ex-girlfriend gave it to you, maybe it’s something that reminds you of an unhealthy time in your life, maybe it’s just something you don’t like but feel obligated to have on display because your grandmother gave it to you—then get rid of it. Toss it. Because the bad energy it creates isn’t doing you and anyone else any good. “Be honest with yourself,” she says. “Stop making excuses and stop wasting time by feeling guilty or ashamed … set a realistic timeline and reward yourself along the way so you stay motivated. “Because you only have three choices:

One, leave your clutter where it is and let it disintegrate; two, leave your clutter where it is and when you die, someone else will clear it out; or three, take responsibility for it and clear it out yourself.” 5 Things to Do Now ≈ Move nine things (small or big) every day ≈ Sort, purge, recycle, return ≈ Learn to say no when someone wants to give your their stuff ≈ Stop defending, pretending, denying, lying ≈ Don’t strive for perfection, strive for wholeness

Getting away last year took on new meaning as a pandemic lock down forced unprecedented boundaries on everyone. For those who were used to traveling, and even for those who only dreamed of traveling, escapism trended as city dwellers fled the quarantine, crowded city life, and the fearful viral spread. Leaving behind shuttered restaurants, gyms, and workplaces, people traded their new limited reality for a chance to discover outdoorsy destinations with spacious skies, green space, fresh air, and fewer limitations. A vast population from across the country sought solace here on the Highlands-Cashiers Plateau in the Blue Ridge Mountains of Western North Carolina. Gone were the cacophonous sounds of traffic, ringtones, and the ever-present daunting news. Instead, an alternate reality found footing in these quiet, majestic mountains surrounded by lush National Forests teeming with lakes and waterfalls— allowing families, couples, singles and “quaranteams” to experience rejuvenation, untethered movement, and the great outdoors. As restrictions ease and vaccinations become more readily available, 2021 travel brings with it a new set of guidelines as well as the emergence of popular vacation terms, such as work-cation and flex-cation. No longer is there the demanding need to “checkin to check out,” but rather a deeper desire to live a well-balanced life between work and play, and safely connect with others. Moreover, travelers’ expectations have changed and been reshaped when it comes to places to stay. Aside from the usual anticipated creature comforts, trust in the hosts’ cleaning and safety protocols, plus touchless check-ins and sustainability rank high in traveler demands. Backyard wanderlusters along with their pets wish to stay and explore outdoor spaces in smaller communities one to three hours from home. Marriage to Dr. Abraham Kohl brought Kirsten to South Florida where they raised their three sons. Her interests included watching her boys play ice hockey, riding horses, playing tennis, and art. Kirsten owned The Basketeer gift shop in downtown Ft. Lauderdale and served on the board of local charities, such as The Junior Welfare and The Charity Guild.

The most important thing someone should know before they start their search for a home is what kind of a lifestyle they would like to have.
