On our Highlands-Cashiers Plateau, we have a front-row seat to one of the best shows around. As our mountains and meadows awaken from the spell of winter, we watch the shades of gray and brown transform into brilliant greens with pops of color. It is a performance worthy of applause, even a standing ovation. For this display, we are fortunate to not only be part of the audience but also play key roles. Members of our team, as well as our friends and neighbors, are active in area garden clubs and groups that aim to beautify and preserve the natural spaces that draw so many to our Plateau year after year. You’ll read about a few of them in this issue. Another performance worthy of putting our hands together is that of our local real estate market. For the third consecutive year, we are experiencing exceptional sales. Property continues to sell quickly and at a higher price point, a potential encore of 2021. While we expect some adjustments that will move the market towards equilibrium, there is little doubt it is an excellent time to sell and that purchases made here are sound investments. A TRUE M O U N TA I N G E M Sapphire is the ultimate "have-it-all" lifestyle with its pristine surroundings and extensive amenities.


Travel east of Cashiers on U.S. Highway 64 and you’ll notice a change in the scenery along the way. After the descent near the entrance of Cedar Creek Club, the landscape opens, and views become wider, with mountain peaks on each side. The rushing Horsepasture River, one of the most scenic in Western North Carolina, parallels your journey. There’s no doubt you’re in a valley, but not just any valley. This is Sapphire, a destination that has long drawn visitors seeking outdoor beauty, adventure, and a resort lifestyle. Of course, many do not travel this route. One of the closest mountain resorts to Atlanta—or anywhere in South Carolina or Florida, for that matter— Sapphire draws visitors and part-time residents who take N.C. Highway 281, winding through lush, enveloping forest and the “land of waterfalls” including Whitewater, the highest fall east of the Rocky Mountains. Residential retreats nestle in the valley and ridgetops, while restaurants and resort amenities hug the corridor. Truly, the attraction and desirability of Sapphire Valley does not need much explanation. The recreational, relaxing Sapphire lifestyle doesn’t seem to align with speed, but two things are moving quickly in the valley these days: residential real estate sales and high-speed fiber optic.

LISTED AND SOLD

The past two years have been exceptional for residential sales on the Highlands-Cashiers Plateau. Whether buyers sought idyllic work-from-home settings or ways to invest what they might otherwise have spent on an overseas vacation, area real estate activity during the pandemic has set records. Perhaps because the offerings are exceptionally diverse, Sapphire’s real estate sales stay steady; however, the past two years stepped up the pace and price. In 2021, 260 homes (including condominiums


and townhomes) sold in the area, with an average price of $737,666. But the most impressive numbers are from sales of lots and land. Last year, 137 such units closed, compared to 97 in 2020 and 45 in 2019. “Whether it’s your first vacation home in the mountains or your legacy estate, Sapphire has something for everyone,” said Jochen Lucke, president, and owner of Silver Creek Real Estate Group. “We’ve introduced many of our clients to Sapphire, and know they appreciate the convenience to the airports—whether in Asheville or the fixed-based operator in Oconee—as well as the privacy, the amenities, the natural beauty, and fiber connectivity.”

FIBER TO THE HOME

Several companies have a hand in the installation of residential fiber in Sapphire. A property owners association, developer, or similar group usually awards the project to a provider. BalsamWest and Comporium are two such companies; a third, Optimum (an Altice USA brand with a heavy presence in the New York tri-state area), recently acquired Morris Broadband and now serves Western North Carolina. Optimum, the fiber Internet provider for Sapphire’s largest community, Holly Forest, says that the project is nearing completion. “Optimum is proud to be the provider of choice in the Holly Forest community, and to provide residents with reliable connectivity to meet their growing needs,” says Ashley Morales, a communications specialist with the company. “We are pleased to share that we are in the final stages of completing the first phase of construction of our 100 percent fiber network in Holly Forest and remain on track for completion in the middle of this year.” At launch, Optimum will deliver symmetrical upload and download speeds of up to one gigabit, Morales says, and its network will be capable of 10 gigs and beyond for the future. Additionally, Holly Forest residents and businesses will have several highspeed Internet service options from which to choose, including 500 megabits per second (Mbps), 300 Mbps, and 100 Mbps service tiers. Optimum Smart WiFi, an enhanced, whole-home solution with mesh

technology, will also be available. Later this year, the company plans to launch Optimum Stream—a new, 4K streaming device capable of delivering content in a professional production and cinema standard experience at four times the size of high definition (HD)—to Holly Forest broadband-only customers, as well as home phone service. “We are looking forward to completing this fiber build in the next few months and continue to invest to bring the most reliable products and services to our local communities,” says Morales. Headquartered in Northern Jackson County in Sylva, BalsamWest partnered with Chinquapin, which in 2018 announced its position as the first in the region to provide fiber optic connectivity to every homeowner. Currently, BalsamWest is working with the Cedar Hill community. “Every community has a need for connectivity, whether for cameras at the gate or for wells and water or for fiber to the home,” says Jason Maples, vice president of sales and marketing. “BalsamWest is different in that we build a custom network that is tailored to the needs of that community. We are locally owned and own our network and infrastructure in Western North Carolina, built to deliver commercialgrade services.” A private, competitive local exchange carrier (CLEC), BalsamWest offers an Internet speed of one gigabit “but will have the capacity to go multi-gig in the near future,” Maples says. The company also offers fixed wireless service and, particularly in areas that are difficult to traverse, can combine solutions to serve end-users. Comporium is the network provider for Burlingame Country Club and Whisper Lake. “Comporium continues to seek ways to upgrade and expand its network,” says Shelia Carland, Brevard director, and city executive. “Over the past few years, the company has completed multiple projects to enhance broadband services, including the Whisper Lake community. One-gig speeds are available in Transylvania County to areas served by Comporium’s cable and fiber facilities.” Navigating the rocky, mountainous terrain presents challenges and additional expenses for construction projects in the area, Carland adds.

ROOTS & RESORTS

With roots in the 1800s mining industry and rebirth as a resort destination, Sapphire is a jewel on the HighlandsCashiers Plateau. Named for the bounty of gems once found in the area, Sapphire’s evolution began with the extension of the railroad to the area and The Toxaway Company’s development of two properties: Sapphire Hotel and, in 1896, Fairfield Inn, a stately Queen Annestyle structure built on a former gold mine and facing Lake Fairfield. Fast forward to the mid-1950s, when the Howerdd family purchased the inn and developed 18 holes of scenic mountain golf, naming the new resort Sapphire Valley Inn and Golf Course. The golf course eventually became part of today’s prestigious Country Club of Sapphire Valley. When a 1986 fire rendered Fairfield Inn unsafe, it was demolished, ending an era amid another renaissance: the emergence of singlefamily homes, condominiums, townhomes, and amenities across the valley. With 14 subdivisions along Hwy. 64, Holly Forest property owners—like many others in the area— have access to the facilities of Sapphire Valley Master Association (SVMA), which operates as a sort-of umbrella organization for 35 area subassociations or neighborhoods.

The land of rushing water, Sapphire draws waterfall chasers from throughout the world to its 200-plus area falls. The Thompson, Whitewater, and Horsepasture rivers feed the falls, beckoning fly-fishing anglers. Hikers, campers, and those seeking a scenic picnic spot enjoy the 7,909-acre Gorges State Park. And then there’s Panthertown. With 6,000 acres of trails and waterfalls owned by the U.S. Forest Service, Panthertown Valley is known as the “Yosemite of the East.” Welcoming hikers and equestrians, it offers unspoiled, unsurpassed beauty. Sapphire includes three stream-fed, private lakes— Fairfield, Hogback, and Whisper—all of which offer

fishing, swimming, sailing, kayaking, and canoeing. Paddle boats and paddle boards are favorite rentals at 55-acre Fairfield Lake and Beach, managed by SVMA. For those who prefer their recreation a bit more urbane, the facilities and events of SVMA await. A fitness center and spa, indoor and outdoor pools, a walking track, and other amenities are available to members and their guests. Featuring tennis and pickleball, Sapphire Racquet Club is open to the public during certain hours. Summer concerts and arts and crafts festivals are also open to anyone. The young (or young at heart) will enjoy the arcade, game room, gem mining, and a playground. The area is also home to Ski Sapphire Valley. Open to the public and offering skiing, snowboarding, and tubing, it features two downhill runs—one with a quad lift, a 200-foot vertical drop, and a length of 1,600 feet—and a considerably milder “bunny” slope. For après-ski, stop by Slopeside Tavern at the base. Golf enthusiasts will enjoy not only the tranquil mountain views but the caliber and diversity of play. In addition to the Golf Digest 4.5-starrated Sapphire National Golf Club—the only public course on the Highlands-Cashiers Plateau—there’s Red Bird Golf Links, a nine-hole public, executive course. Burlingame County Club and The Country Club of Sapphire Valley offer exceptional private courses; membership is by invitation only. And for those looking for something unique, SVMA offers foot golf (played exactly as one might expect, except with a soccer ball) and putt-putt golf. Restaurants offering casual to fine fare dot Sapphire’s mountains and valley. Overlooking the eighth and eighteenth holes of Sapphire National is a lively tavern, Sapphire Mountain Brewing Company, with which the golf club has a partnership. A historic farmhouse is home to The Library Kitchen + Bar (a nod to the room at the Fairfield Inn) and its award-winning, Germanborn chef, Johannes Klapdohr. Further east on Hwy. 64 (also known as Rosman Highway), Osteria del Monte Ristorante Italiano offers authentic Italian cuisine during the high season. A rare gem known for its distinct brilliance, Sapphire has precisely the right name.

In a bowl, combine breadcrumbs, garlic, salt, pepper, rosemary, and olive oil. Season lamb with additional salt and pepper and then sear on all sides in a sauté pan on high heat. Let it rest for 10 minutes; brush with Dijon mustard and roll in bread crumb mixture. Roast in oven for 12-18 minutes, depending on desired internal temperature (128 degrees is recommended).

alk into any furniture store and notice your senses. Certainly, your eyes take in the colors, the patterns, the lines, even the lighting. Your ears probably hear pleasant music, and your hands might explore the textures. But what about your nose? At Atelier Maison & Co., a new, elevated furnishings studio in Cashiers, it’s more about what you don’t smell. That’s because its pieces are made with organic, sustainable materials and natural fibers. Glues, formaldehyde, resins, stain retardants, and the like are replaced by certified sustainable products—or not used at all. It’s a concept inherent to the brand, according to owner Sean Sullivan. Tighter, energy-efficient construction can trap the off-gassing from paints, stains, finishings, and furniture, negatively

impacting indoor air quality, including radon levels. The company’s mission is to offer a healthier alternative.

“We’ve been teaching people to design green, to build green, but we’ve not been teaching them to live green. So, we coined a phrase—’whole living’— and that’s really the mission for all three companies, to help our clients build happier, healthier lives.” In addition to Atelier Maison, Sullivan, a custom home builder, owns Living Stone Design + Build. His interior designer wife, Laura, owns ID.ology Interiors & Design. All three companies are based in Asheville and focus on sustainability. A grand

opening event will take place this spring for the Cashiers store, the company’s first venture outside of the Asheville market. Linda Campbell Pryor manages the Cashiers location and serves as senior interior designer. An industry veteran with clients throughout the Carolinas and Georgia, Pryor owned a Cashiers design studio and art gallery more than two decades ago. She connected with the Sullivans and enthusiastically accepted their offer to return to the area.

Atelier Maison (its French name translates to “studio house”) even developed a ranking system—one to three green leaves—that reflects the sustainability of each piece. If Pryor seems exceptionally comfortable in the Frank Allen Road store, that’s because—as in

Sullivan. So, while the company certainly offers the latest looks and designs, it also makes room for timeless, classic, pieces. “Rustic is still popular in Cashiers, and it always will be,” Sullivan says. “But design is transitional. And with timeless pieces, you’re not dating yourself.” Softer, cleaner aesthetics with more glass and light seem to be front and center these days, he added. “I would say the trends are a little more modern, relaxed with lighter, neutral colors,” says Pryor. “You may have light upholstery but a bold rug or accent piece for a pop of color, instead of color being the main vibe.” her former studio and gallery—she’s surrounded by one-of-a-kind, handmade pieces that are artfully crafted from iron, wood, glass, and clay. The design, however, is “not typical of what Cashiers used to be,” she says. “We are a lighter, softer look. It’s relaxed, yet elegant.” Because Cashiers draws visitors and residents from across the country, Pryor believes the market will embrace the variety and sophistication of the selections. At Atelier Maison, a mid-century modern sofa comfortably rests beside a rough-hewn, sustainably-harvested wooden bench covered with an African fabric and a hand-woven, Turkish rug with wool selected from a specific sheep and colored with vegetable dye. The studio’s unique wooden pieces—benches, consoles, room dividers, and free sculpture tables—regularly receive applause. Atelier Maison markets its pieces as “heirloom quality,” created to last through generations and contrary to what Pryor calls a “use and dispose culture.”

The Cashiers store is considerably smaller in size and scope than the Asheville store—a 20,000 mini-campus abutting a creek in the city’s Design District—which emphasizes the client experience by offering a putting green, an outdoor amphitheater, drink bars, a dog park, and presentation space. Both locations feature a Design Resource Center with samples and swatches. As in Asheville, the Cashiers studio will host community events and educational seminars on topics from color selection to indoor plant cultivation to health and nutrition. Atelier Maison is not only interested in making the sale; its team wants to make friends and develop partnerships within the community, Pryor says. expansive views might come to mind. For some plants and trees, the journey was a bit different. Their seeds traveled south on the spine of the Appalachians, courtesy of melting glaciers. Today, these species are thriving at the Southern Highlands Reserve. Perched atop Toxaway Mountain (also known as Hogback Mountain to locals), the flora and fauna of the Southern Highlands Reserve resemble that found in botanical gardens in Canada or New England. “It’s sort-of mind-blowing,” says Executive Director Kelly Holdbrooks. “The Southern Appalachian Mountains are 480 million years old, and the most recent Ice Age ended about 12,000 years ago. The glaciers came down to Pennsylvania. Our area was not glaciated, so this was the last place the species could live without going extinct, and when the glaciers receded, some stayed here because they can survive.” The pinkshell azalea, for example, is an endemic species that grows within the Southern Highlands Reserve (SHR) but in few places outside of the area. Even mammals, such as the Carolina northern flying squirrel, migrated, survived, and stayed. “I feel this huge sense of responsibility and honor to be a steward of land like this,” Holdbrooks says. “At

A boreal forest set between 4,200 and 4,700 feet in elevation and bordering Panthertown Valley, the SHR is a native plant arboretum and research center dedicated to sustaining the natural ecosystems of the Blue Ridge Mountains. The 501(c)(3) organization preserves, cultivates, and displays plants native to the region, and advocates for their value through education, restoration, and research. The topography within its 120 acres varies, allowing for a large and diverse collection of plants. But let’s back up (though not to the Ice Age this time). In 2003, Atlanta philanthropists and lifelong outdoor enthusiasts Betty and Robert Balentine finalized their partnership with the North American Land Trust to form SHR. With a deep love and connection to nature, the Balentines secured land adjacent to their mountain home and protected it through a conservation easement to prevent development. (The land had been sited for up to 22 homes.) Their vision was not only to preserve the land but to make it accessible to all. A master plan created by acclaimed American landscape architect W. Gary Smith, who designed the interactive family garden at the Lady Bird Johnson Wildflower Center in Austin, Texas, guided its development. “We are a private garden, and I think what makes us unique is we are open to tours from the public by reservation,” Holdbrooks explains. “We want people to experience nature, and so there has to be a level of access.”

Though the organization generates revenue from tours as well as an annual plant sale and a symposium series, the Balentines remain its primary source of funding. In 2019, it formalized its donor program, and it consistently applies for grants. The Balentines literally get their hands dirty as part of their work with SHR. They regularly assist with planting and maintaining SHR’s “garden rooms.” “It’s really this family atmosphere when we’re in the garden working together with Robert and Betty,” says Holdbrooks. Such activity is not a departure for Robert Balentine, a successful wealth management entrepreneur and executive who grew up exploring the mountains of North Georgia and Western North Carolina. He learned conservation as an Eagle Scout and drew inspiration from his parents’ passion for gardening. A past president of Atlanta’s Peachtree Garden Club,

Betty Balentine’s service leadership also includes the State Botanical Garden of Georgia and the University of Georgia Press Advisory Council, through which she advocates for publications about the natural world. In 2017, the Library of American Landscape History recognized the couple with the Preservation Heroes Award for their founding of SHR and their many achievements in landscape stewardship, design, and horticulture research. Because survival of the unique forest ecotone is fragile, a key component of the work of the SHR team (composed of three full-time staff, including Holdbrooks, with plans to hire two more) is creating and sharing a digital catalog of its species. Additionally, SHR has collected more than a decade of data on weather patterns and phenology, the study of cyclic and seasonal change in plants and animals. But the project that may be closest to Holdbrooks’ heart is the restoration of red spruce forests.


Under significant threat and constant recovery from climate change, acid rain, logging, and development, spruce-fir forests are near the top of the list of most endangered ecosystems in the U.S. Holdbrooks serves on the steering committee for the Southern Appalachian Restoration Initiative (SASRI), an organization formed by several groups with the common goal of restoring spruce ecosystems across the high elevation landscapes of the Southern Blue Ridge. “I don’t know of another organization like this, to be honest,” Holdbrooks says. “We work across state lines, and we all get the bigger picture. We’ve identified and created a restoration plan, and we’ve restored about 5,000 trees on public land since 2013. Our goal is to get to 10,000.” While earning a master’s degree in landscape architecture (with honors) from the University of Georgia’s College of Environment and Design, Holdbrooks interned with SHR. Serendipity emerged when the previous director decided to move on and Holdbrooks found herself “at the right place at the right time.” She accepted the job offer from the Balentines in 2012. Using her “varied toolkit,” Holdbrooks’ day could involve designing a garden space, pruning and weeding, working with the horticulturalist, raising funds, speaking to a garden club, and—of course— managing the team. During the pandemic, tour demand dramatically increased; so, she established a group of about a dozen volunteers to serve as docents.

Being able to walk around a garden with moderate hiking hit certain demographics that also needed access.” SHR’s work extends far beyond the ridgeline of Toxaway Mountain. The organization has an ongoing partnership with T.C. Henderson Elementary School in Lake Toxaway to supplement its environmental education curriculum. Additionally, it is working with the Highlands-Cashiers Land Trust, playing a role in the design of McKinney Meadow, the triangular field across from Cashiers’ iconic Cornucopia Restaurant that runs along N.C. Highway 107 South. Holdbrooks would love to see the high-visibility space tout a beautiful, photogenic meadow. SHR’s gardens are designed to elicit an emotional response and connection to nature from visitors, and Holdbrooks never tires of witnessing these moments. She is ever-mindful of the role preservation plays in the area’s attractive lifestyle. “I think it’s really important for people to check in and realize why they are self-selecting to be here,” she says. “There is an innate connection to the land— the air we breathe, the water we drink, the access to nature—and so the importance of maintaining its beauty and quality is unparalleled.” For more information or to donate to Southern Highlands Reserve, visit southernhighlandsreserve.org or call 828-885-2050.

Spring is the season of rebirth and renewal, and while the term “greening up” usually refers to the leaves on our trees or the grass in our yards, it can also reference our diets. In fact, the growing season is an ideal time to make more healthful choices about what we eat. Plant-based diets are not new—even if the trend has gained momentum lately. The terminology is popping up everywhere these days, from fast-food restaurants to local farmers markets. It seems everyone, from bigname celebrities to highprofile athletes to everyday people, is exploring the plant-forward lifestyle. In fact, it is highly likely this movement is more than a trend. People everywhere are starting to consider making it a permanent part of their lifestyle. But just how do you begin to explore a plantbased diet? Where do you start? And for that


matter, why should you consider following such a diet?

From fashion designer to whole-foods champion Harriet Birrell (simply known to her followers as Natural Harry), a plant-forward lifestyle advocate and successful cookbook author, has more than a few practical reasons why a plant-based diet is good for your body, mind, and soul. “Lucky for me, we ate a very basic diet of whole foods,” says the Australia native of her upbringing. “We had very few treats or rather, healthy and whole foods were considered treats to us. I grew up on my grandparents’ farm, 40 minutes from the closest big town, so we tended to not have access to local shops and restaurants. Most of our diet was homemade goodness, from scratch.” But while she has always had a diet rich in whole foods with little to no processed food, she hasn’t always followed a plant-based diet. Nor has she always been a shining example of what most would consider healthy. “I really began to disregard my health,” says Birrell, of the years she spent working in the fashion industry in Melbourne, Australia. “The high-pressure, highstress environment caused me to focus more on convenience foods rather than whole food.” Eventually, the lifestyle got to her, and she left her job and city life behind to travel for six months. When she returned home, she took a leap of faith and turned her attention to what she says was always her original passion: health and wellness. She enrolled in a 12-month online course offered by Integrative Nutrition. During that time, she quickly was drawn to the organic, plant-based, whole foods approach. “It just makes so much sense to me that whole is better than processed, and variety, color, and natural equate vitality and sustenance.” After committing to a 100 percent plant-based diet, she says she began to take heed of the changes to her body, mind, and overall well-being. “I noticed an increase in energy and clarity of mind,” she says. “I have always been a swimmer, but [after following a strict, plant-based diet] I was able to swim much farther and faster without tiring. It’s like I have more oxygen in my blood, if that’s possible.” Along with physical changes, Birrell soon recognized

sensitivity to processed foods and says there is a big contrast between knowing what good health feels like and what it doesn’t. While it’s true that Birrell and many others have had a positive physical response to following a plant-based lifestyle, one of the biggest concerns regarding the diet is whether it supplies adequate protein—and it’s especially concerning for athletes.

Plant protein vs. animal protein Griff Whalen, former NFL wide receiver, knows a thing or two about fueling his body for prime performance. Now that he follows a plant-based diet, he says he’s stronger and more efficient than ever, both on and off the field. But he hasn’t always been a plantforward eater. “Growing up, my diet was pretty typical for middleclass Americans, which is another way of saying it was terrible. Especially as I gained more independence in high school and relied less on home-cooked meals, almost everything I ate was heavily processed and oversaturated with sugar and fat.” In college, Whalen says, he gradually began to learn how important nutrition was and how large a role it plays in athletic performance and development. “I started eating more natural foods, lean meats, more vegetables, but still to this day struggle with self-control when it comes to sugary foods. Personally, I feel that I ate so much sugar as a kid and in high school that I developed a strong addiction to it, and now I try to avoid it as much as possible, much like an alcoholic does with alcohol.” Signed to the Indianapolis Colts in 2012, Whalen went on to play for four other NFL teams, including the Oakland Raiders, and it was during his time there that he met sports dietitian Rikki Keen, MS, RD, CSSD, CSCS. In addition to working with the Raiders, Keen has worked with NFL veterans and draftees at ESPN Wide World of Sports and the U.S. Women’s National Team (USWNT), and she currently serves as director of performance nutrition for the Orlando City Soccer Club. “I work with individual athletes and teams on adequate fueling, hydration, and supplementation, planning out menus, monitoring blood work, conducting body composition and pre- and postnutrition for training and game days,” says Keen. Offering plant-based protein sources at each meal, including food sources and supplement options,

is key to building and maintaining the muscle needed for high-level performance, she says.

Vegan or plant-based? What’s the difference? According to vegansociety.com, veganism is a way of living, “which seeks to exclude, as far as is possible and practicable, all forms of exploitation of, and cruelty to, animals for food, clothing, or any other purpose.” In other words, veganism isn’t just a way of eating; it’s a lifestyle. As for the diet part, vegans do not eat any animal products: no meat, dairy, eggs, or honey. Similar to those who follow a plant-based diet, vegans eat a combination of fruits, vegetables, whole grains, and legumes. However, a plant-based, or plantfocused, diet does not necessarily mean excluding all animal products, but those on this path do get 85 to 100 percent of their nutrition from it.

Now in her fifteenth year and on the heels of her most successful as a Highlands-Cashiers Plateau real estate agent, Merry’s words carry the weight of a proven professional. I took lessons from a custom stained-glass maker and made stained glass and I loved it so much. I created some awesome, commissioned pieces, and I was good at it. It was very much a passion at the time.

I really like a contemporary look that leans towards industrial. I appreciate the clean colors and lines, but I like to throw in something unusual such as a bucket sink or another unusual element that helps it lean away from contemporary. We have so much rustic and contemporary design here, that it is good to have something of interest—like a conversation piece. It’s easy to see why Old Edwards Inn and Spa continues to draw top-tier celebrity and guest chefs for its dinner series from across the southeast and as far away as New York and Napa Valley. “They’re fully supported in these dinners,” explains Lizzie McDonald, the resort’s consultant for special events. “Our Executive Chef, Chris Huerta, will do a lot of the heavy lifting, so our guest chefs get to do what they love to do. It’s great exposure and it’s a nice way for them to get away.” Formerly an editor with Atlanta Homes & Lifestyles magazine, McDonald has cultivated an association with the food and wine industry since the beginning of her career. As a result, Old Edwards 2022 Chef Dinners Series reads like a “who’s who” of renowned chefs and vintners with southern ties. While many are fan favorites, all have an established relationship with McDonald and the resort.

The chefs may travel from other states, but the focus is fresh and local. When possible, Old Edwards curates ingredients from its garden or local farms.

Winemaking & Operations Brett Weis. Kornell is continuing a “labor of love” and a family tradition; her father Hanns was one of the first to make Napa Valley sparkling wine in the traditional Champagne method. “These very cool women of wine will work with our guest chef to create an experience that I expect will be feminine, but edgy,” says McDonald. “I’m super excited about it.” The two Napa vintners will collaborate with New Orleans transplant and Executive Chef Kristen Essig of Washington, D.C.’s Dauphine’s to present exceptional food and wine creations. Essig, who learned from culinary giant Emeril Lagasse, is known for her farmers market-driven takes on New Orleans classics. April will bring a taste of Southern Europe when Executive Chef Craig Richards of Atlanta’s Lyla Lila (and formerly of St. Cecilia) presents his take on Italian Easter. Known for his renowned approach to progressive, regional Italian and Spanish cuisine, Richards has been a constant on the Atlanta restaurant scene since 2005. In addition to dinner at The Farm, he will extend his stay to present an Easter event for guests of Half-Mile Farm, Old Edwards’ luxury country inn on the outskirts of Highlands. “He is a champion of the Italian vernacular,” says McDonald. “His food is so beautiful – as lovely to look at as it is to enjoy – and he’s so thoughtful and amazing with his flavors. His presentation will very much be focused on the spring.”

“As much local product is used as possible. Sometimes, the guest chefs will bring ingredients with them. It’s all very local and focused on what’s in season,” McDonald explains.
