AROUND TOWN
PROST! IT’S OKTOBERFEST! WRITTEN BY JULIE BURTON
Oktoberfest is upon us, and after last year’s cancellations we need the “prost!” in 2021. The traditional Oktoberfest in Munich, Bavaria, Germany, draws millions of people from all around the world. The biggest beer festival in the world started with a wedding. It’s been held since 1810. (Minus 2020 and 2021—yes, Munich cancelled Oktoberfest this year too.) But Kansas City is not Munich, Germany. Grab a pretzel, get your best beer mug, and get outside to celebrate that wedding in Germany long, long ago. Or just go for the beer. This is your guide to Oktoberfest in Kansas City.

thirsty too. There’s a Biergarten for the adults and a Rootbiergarten for the kids, home brew tastings, and a large carnival to keep the kids busy. Kids! There are pony rides too! Sunday is a carnival-only event. Not in a festival mood? That’s okay. Kansas City is home to some amazing German cuisine that is simply musttry any time of year.

KC Oktoberfest is modeled after the traditional Oktoberfest in Munich. It features German-style bier from KC Bier Co. (yes, bier—not beer), two stages featuring traditional polka and modern music, two game areas, and shopping. Bring the kids! There will be family-friendly activities for the kids, including carnival games like ring toss, kerplunk, and skee-ball. And the kids events are free. Attendees must have a mug to be served bier, which will be sold at the event in half-liter and liter sizes. The official festival bier is Festbier. It is 100 percent imported German malt and hops. Each station will also offer two German wines. Soft drinks will also be available for non-drinkers. Traditional Bavarian-style Oktoberfest food specials include Bavarian pretzels, sausages, bierocks, schnitzel, goulash, and Kasekuchen. Tickets are offered in a variety of options including general admission, VIP, and reserved seating. Get tickets early! The festival admission will be expedited for advance ticket buyers.

Okay, health nuts. There’s a 5k for everything, right? The Bavarian celebration run is in the streets of historic Martin City, Missouri. Get there bright and early! The run begins at 8 a.m. on Oct. 3. The fifth annual event will reward participants with a shirt and finisher’s medal. There will be awards for age group overall fastest winners. Run to German music and sample German beers after your run. Is there any other way? Martin City Brewery is right there.

This restaurant is run by a brother and sister duo in the historic Freight House. Grünauer is in its second decade of success, so you’ve probably heard of it. The Grünauers pay their homage to the family’s popular and long-lived restaurant of the same name in Vienna’s artsy Neubau neighborhood. While they strive to bring the same inspired Austrian cooking, they also offer German and Central European cuisines on the menu.

THE JOYS AND WOES OF BREASTFEEDING WRITTEN BY JACKIE WOODS / PHOTO BY GETTY IMAGES
Parents want the best for their babies, and deciding whether or not to breastfeed is one of the first choices a mother makes for her child. Breastfeeding offers multiple health benefits for mom and baby, so the American Academy of Pediatrics recommends breastfeeding for at least six months.
Perhaps the most important advantage of breastmilk is the nutrients it provides for proper organ development and to help babies stay healthy. Breast milk protects infants from illnesses such as ear infections, pneumonia, and meningitis, and research suggests it may also protect against sudden infant death syndrome
(SIDS), asthma, eczema, diabetes, and some cancers. Women who breastfeed can more easily bond with their babies, and tend to recover from childbirth more quickly. Some studies show that breastfeeding reduces a woman’s chance of developing breast and
ovarian cancer, rheumatoid arthritis, heart disease, and diabetes. Regardless of the health benefits, learning to breastfeed and continuing the process is not always an easy task. Sheila Sloss, RN, IBCLC, is the Birth Center Program Coordinator for AdventHealth Shawnee Mission. Sloss

helps moms understand the benefits of breastfeeding and overcome challenges that come along with it. “As women move through their breastfeeding journey, their challenges will change,” says Sloss. “The most important thing I always want moms to know is that we are here to support them no matter how they choose to feed their baby.” During the first 24 hours after delivery, babies are sleepy and often not interested in nursing. This is the time when moms are learning the best way for their baby to latch, as well as positioning and hand expression of milk. After the first day, babies are more alert and want to nurse, which can be exhausting for some women. Sloss encourages moms to be prepared for this early stage so they know what to expect. “Every time you breastfeed or express breastmilk, you are telling your body how much milk to make,” says Sloss. “Remember that it usually takes two to three days for milk to fully come in.” It is normal for moms to worry about babies not getting enough to eat, so Sloss recommends frequent feeding, looking for wet and dirty diapers, and keeping track of your baby’s weight. If you have questions, don’t hesitate to ask a nurse, lactation consultant, or your health care provider.

As your baby grows, the challenges become maintaining milk supply, properly weaning, and how best to return to work. “For something so natural, breastfeeding can be difficult, especially in the beginning,” says Sloss. “Moms are learning and babies are learning too, and each breastfeeding situation is unique.” For those preparing to face the challenge, here’s some tips that may help. • Set realistic expectations. Do not expect perfection, and resist comparing yourself to other new moms. • Start breastfeeding within one hour after birth so your baby receives colostrum that is rich in immunoglobulin G and protects against infections and illness. • Breastfeed on demand. Feed any time you notice hunger cues from your baby. • Practice rooming in by keeping your baby with you when possible. • If you want your baby to continue to breastfeed, it’s best to avoid offering pacifiers or artificial nipples. • Drink plenty of water and get enough calories. Your body needs an additional 400-500 calories per day when breastfeeding.
•L ean on your care team and personal support people. Lactation consultants can show you how to use different latch options and help you work through issues. What about moms who follow all the advice, but still have trouble breastfeeding? According to Sloss, lots of women struggle with the process, so the answer depends on each person’s individual situation and feeding goals. “If you are a mom struggling with breastfeeding, talk with your pediatrician and lactation consultants and come up with a feeding plan that works for you and your baby,” says Sloss. “As long as your baby is fed, healthy, and loved you are doing a great job.” If you have questions regarding breastfeeding, call AdventHealth’s Breastfeeding Warmline at 913.632.4330 seven days a week to speak with an International Board-Certified Lactation Consultant. AdventHealth also offers a Breastfeeding Support Group every Tuesday from 10 to 11:30 a.m. on the AdventHealth Shawnee Mission campus. Learn more at AdventHealthKC.com/birthcenter.

ENRICH THE MOMENTS SURROUNDING YOUR CHILD’S BIRTH
WRITTEN BY JUDY GOPPERT PHOTOS BY JAMI BOWMAN

lissful Beginnings owner Janice Ingram believes every woman deserves to be pampered, treasured, and revered when she welcomes her little one into the world. A doula is a professional trained in childbirth who provides emotional, physical, and educational support to an expectant mother, someone experiencing labor, or a mother who has recently given birth. Their purpose is to help women have a safe, memorable, and empowering birthing experience. “I believe doulas are needed more than a lot of people know,” says Ingram. She began in 2018 when she noticed the increasingly downward spiral of adequate care for women of color and their infants. “I was working in the criminal justice field and had just had my daughter, and unknowingly at the time began fighting my own battle of postpartum depression,” she explains. “I wanted

to share my experience and advocate for those women—and women in general—but in the postpartum.” She decided to reach out to a woman she highly admired and ask her thoughts on the next step. The woman suggested becoming a Community Health Worker (CHW) and gave Ingram all the information she needed to begin. “As the story goes, sometimes you
don’t get to choose your road, God chooses it for you. I earned my certification as a CHW and there began my birth doula journey,” she smiles. Each new client receives a complimentary consultation, either virtual or in-person, to go over expectations. Ingram believes all women should feel supported and advocated for in their birthing space. She provides not just compassionate care, but calmness to
her clients as well as a safe space to be unfiltered, say it like it is, and be themselves in and out of the birthing space. “I provide full-spectrum care for women who want to get pregnant and have someone walk the journey with them,” says Ingram. She also provides abortion and miscarriage support for women who experience loss or stillbirth. “Although these moments are fleeting, it is so important for a woman to be able to cope, grieve in a healthy way, and get past the trauma.” “My main support comes during birth and postpartum. These two are the main parts of doula care, and they are customized to each person depending on what support looks like for them,” Ingram explains. Aside from birth, Ingram also offers sibling care, meal prep and planning, and childbirth classes, which can be done separately or as part of a package for birth services.

“Janice was beyond amazing. It’s so hard to choose a doula that works well for you and your family, but Janice was an easy choice.”
One of Ingram’s clients, Scarlette T., shares, “Janice was beyond amazing. It’s so hard to choose a doula that works well for you and your family, but Janice was an easy choice.” Scarlette says that right away she felt like Ingram would be perfect. “She was involved as much as we wanted her to be and never any more than that. She answered all my questions and sent me helpful information. She wasn’t pushy or opinionated at all. We were mostly worried about postpartum care, so she stayed with us longer than typical after our son was born to make sure we were all okay. I am so glad we chose Janice as our doula!”

Ingram serves all parts of the Kansas City area, from central Missouri to KCK, and is very close with the New Birth Center in Overland Park where she serves clients and is a part-time childbirth educator. She has also had clients at Saint Luke’s, Overland Park Regional, Liberty Hospital, and Truman Lakewood. She is currently an ambassador and doula for the Kansas City Women’s Ministry, which is a nonprofit that offers wellness classes and birth and postpartum doulas to ensure all women are able to have a doula at no charge or on a sliding scale. As a member of the Kansas Breastfeeding Coalition, she hopes to become more active, and currently advocates for more women of color to breastfeed.

As such, the wildly popular destination for food and fun was born. By the end of 2021, the restaurant chain will boast six locations: the original location in North Kansas City; locations in Wichita, Oklahoma City, and San Antonio; and new locations in Overland Park (located in the Prairie Fire complex) and Grand Prairie, Texas. The restaurants are indeed like no other, combining a love of food and hours of entertainment. Chicken N Pickle is an indoor and outdoor venue, the highlight of which is multiple pickleball courts. The establishment features traditional bar games as well and several other yard games. The menu is simple, delicious food— featuring hormone-free and antibiotic-free fresh meat, including mouthwatering wood-grilled and rotisserie chicken. When Johnson is not dreaming up his next big venture, the selfdescribed “business junkie“ enjoys traveling and spending time with family—his wife Sandra Castetter and children Kelly and Corey.

BEAUTY
SMOOTHING THE WAVES OF AGE WRITTEN BY SOPHIE OSWALD
A
s much as we enjoy living life, most of us hate the gray hair and wrinkles that come with each passing year. Although this is a natural thing that everyone has to face, our culture makes people feel insecure about it. This is especially true for women. There is a lot of pressure to look youthful as you age, and people will do just about anything to achieve this. There’s nothing wrong with wanting to look young if it makes you happy. Doing so requires consistent maintenance and self-love, but it doesn’t mean you should sign up for any invasive procedures or try unhealthy trends. Aging can’t be avoided, but you can achieve the look you want with proper care and healthy habits.

SEPTEMBER 2021
One big thing that impacts how youthful you appear is participating in plenty of physical activity. Exercise is known to help you look and feel younger. It increases blood flow, which nourishes skin cells. When you sweat your pores open, releasing any buildup inside. Research suggests that regular exercise even slows aging when it comes to skin. “The skin is the largest organ in the body, so it’s no surprise that caring for it is essential to its overall health, as that directly impacts our appearance,” says Holly Reynolds of Holly Reynolds Esthetics. “A good skincare routine includes not only quality products, but also plenty of water, and clean, antioxidative/ anti-inflammatory nutrition.”
Skincare starts on the inside. Make sure you are getting plenty of water and keeping up with your vitamins. Drinking the amount of water your body needs every single day will provide you with youthful-looking skin. Staying hydrated even reduces wrinkles. Certain vitamins, such as vitamin D, also work to ensure your skin looks healthy. Nutrition is an important part of looking and feeling your best. There are certain foods and drinks that directly affect various aspects of appearance. For example, flaxseed can improve the quality of your skin, and lentils can prevent early graying. If there is something about your physical appearance that you consider to be a flaw, do a little research and you will likely find a dietary addition that has the potential to help. Be sure you are also including lots of fruits and vegetables in your diet. When it comes to products, different ones work for each person’s unique skin. One that everyone should be using, though, is sunscreen. This simple product is often forgotten or reserved only for really hot days. Sunscreen is something that should be used on a daily basis. Blocking your skin from the sun is key when it comes to skincare. Look for a broad-spectrum sunscreen that is at least SPF 30. “Another vital tool we should all be using to combat the damage caused by our digitized world is a blue light filter,” says Reynolds. “Quality cocktailed vitamin Cs, hyaluronic acid, melanin suppressants, and retinoids are just a few ingredients that have a huge impact on our skin if used correctly and paired with SPF,” she adds. Cleanse and moisturize your skin each morning and night. When doing so, be sure you are using products that are gentle on your skin. It can be tempting to skip a few washes here and there, but try to hold yourself accountable. Develop a daily routine and stick to it. It’s also important to do more of what you love. That could mean going to more concerts, getting regular massages, or taking a walk through your favorite neighborhood. Doing more of the things that bring you joy is vital to reducing stress. “Reducing our stress levels lowers inflammation and the production of cortisol, which are both known to increase the breakdown of collagen and elastin, thus causing wrinkles,” explains Reynolds. Try to keep in mind that aging is a natural process that can’t truly be avoided. You can take care of yourself in ways that decrease signs of aging, but they can never be completely eliminated. As you age, your body will continue to show it. It’s a sign that you’ve lived a full life. No matter what, you will look and feel your best when you put energy into yourself.

raduating with a BFA in fashion design, Jennifer Janesko began her career as a fashion design illustrator. It was not long, however, before she started evolving her fashion illustrations into beautiful works of fine art. “I have always loved drawing, and pencil and paper was my happy place. My dad was an artist in his spare time, and it opened up a magical space in my childhood. My dad is no longer on this earth, so when I create art as an adult I feel connected to him,” says Janesko. Taking a modernist approach, Janesko classifies some of her art as abstract landscapes. “They are inspired by the vistas I see when I travel. I layer those memories in my mind and paint them into a single image,” she explains. She also designs figurative art. “My figurative art is created using either oil or acrylic for paintings and graph-

Janesko believes each of her works of art conveys a story that has been birthed by the artist, but completed by the viewer. It’s a partnership that permits the viewer to create a personal dream destination. Indeed, when viewing Janesko’s landscapes, one is transitioned from a day to day reality into a more vibrant, electric yet serene destination. Janesko’s art is abstract, but at the same time pulls the viewer into a very realistic setting. One feels as if they are transported into the set-

A Not-So-Ordinary Book Discussion
WEEKEND READS WRITTEN BY TIFFANY KILLOREN
In the world of storytelling, sometimes you want to watch a series that will last you months, and other times you only have time for a quick movie. Books are much the same way; there are spans when you can look forward to cozying up with the same book for weeks and other times when you just want a quick escape on a quiet Saturday night. Following are a few weekend reads—books that are perfect when your calendar only allows for a movie instead of an entire series.

The Familiar Dark Amy Engel, 2020
A quick and enticing read, this story begins with a double murder of two young girls with very different lives and ends with a mother’s commitment to justice at all costs. Based in the Ozarks, the tale takes readers into the back woods and dark corners of Missouri that we all know are there, but few have ever seen. Always willing to support Missouri authors, this impulse purchase was one I was glad I made and was just the right fit for a particularly crazy schedule that provided little time for recreational reading. Although a bit predictable, the story’s pace from page one makes it a great weekend read.
The Body The Red Notebook Antoine Laurain, 2014
Serendipity is a wonderful thing. It’s closure in a perfect red bow, a twist we didn’t see coming, but is perfect in its simplicity and view of the world. The Red Notebook is a simple story about a handbag found on a Parisian street and the journey back to its owner. Antoine Laurain is a quintessential French author, complete with a crushed velvet sport coat with a red handkerchief in its pocket (seriously, I’ve met him), and his writing is every bit as charming as he is. All of his books are of the same style and ease, the perfect little escape to Paris whenever you need one.
Stephen King, 1982 Sure, you’ve probably seen the movie Stand By Me a dozen times, but did you realize it’s based on a short novel by Stephen King titled The Body? Although the movie closely follows the book, there are enough differences that make the story well worth a quick read. For those of us who grew up with Stand by Me, the characters and storyline stayed with us long after the movie ended. The book tosses us deeper into the story, introducing us to each character on a level impossible in film. Be forewarned—The Body is written with the same grit and adult content found in many Stephen King books, so be careful before suggesting it to young readers.
The Strange Case of Dr. Jekyll & Mr. Hyde
Robert Louis Stevenson, 1886 Jekyll and Hyde—the phrase itself has taken on a colloquial meaning over the years to signify two drastically different personalities. So many use the phrase, but how many have read the actual tale? The Strange Case of Dr. Jekyll and Mr. Hyde is a novella that explores the dangerous moral precipice between good and evil and the steep price paid when giving in to the attractive, carefree whims of our darker sides. Despite being an incredibly short and quick read, Stevenson tells a timeless story of one man’s struggle to hold onto humanity after tempting fate.

PARENTING
WHY PARENTING STYLE MATTERS WRITTEN BY T.E. CUNNINGHAM
P
arenting is one of the most rewarding—and occasionally frustrating—experiences we are blessed with in life. And how you parent affects your child’s self-esteem, health, and development. How you influence your children will stick with them for the rest of their lives. It is widely held via extensive research that there are four main parenting styles, and that these styles are most on display when the parent is exhausted or stressed.
Authoritarian This parenting style might be best summed up by “you believe when it comes to your children, it is my way or the highway!” Rules are made to be followed. While discipline is a good parenting tool, not considering your child’s feelings can have very negative results. For instance, if

your child seeks to understand why you have made a particular decision, instead of explaining, you might offer a simple, “because I told you so.” You may not be allowing your children to problem-solve and learn to make decisions for themselves later in life. Additionally, studies have shown children parented in this way may suffer from low self-esteem and develop aggressive and mean behaviors. Finally, children who are parented by authoritarian parents learn to become pretty good liars; they do this to avoid harsh punishment for mistakes.
Authoritative
These parents still demand much from their children, but authoritative parenting is generally considered the most effective parenting style. These children tend to perform bet-
ter than those of other styles in academia, social interaction, emotional development, and so forth. One of the great things about being an authoritative parent is you demand the most of yourself as a parent— you hold yourself, not just your child, accountable. You put serious time into your child and the relationship, and while you still have rules, you will explain to your child why those rules are in place. You still hold your child accountable when they mess up, but you consider how to handle those instances by evaluating why your child broke a rule. You also take their feelings and opinions about the situation into account versus handing out instant punishment. You also reward and praise your children when they do good work and deeds. Children raised in this manner tend to become success-
ful, high-functioning, confident adults. More importantly, they tend to be happy.
Permissive
You are all talk and no action. You set rules, but you rarely enforce any of them. These parents often “let things go” and forgive quite easily. When they discipline their child by grounding them or taking a privilege away, they tend to cave in and give back the restriction earlier than was set forth. More concerning, this style of parent tries to be more of a friend than a parent, while they talk to their children about many of the most important things, they don’t tend to discourage their child when they are doing something wrong. Children raised in this style are often poor students and sometimes exhibit bad behavior socially. This is because they don’t respect authority or rules. Worse, they suffer from low
self-esteem and may also suffer from depression or sadness. The parents’ permissiveness often extends to the child’s diet, so obesity and lack of exercise are concerns with kids parented in this manner.
Uninvolved
Do you know where your children are right now? Do you know when their next big test at school is? Do you spend time in the evening or on weekends with your children whenever you can? If you answered no to all of these questions, you might practice the uninvolved parenting style. By being uninvolved, you may make some of the same mistakes a permissive parent does by absentia. If you don’t know where your child is or what he’s doing, how are you making and enforcing rules? Children in this area don’t get much of anything—support, emotional nourishment, mentoring, or health support.
Sometimes this style may be practiced unintentionally by parents struggling with multiple jobs, single-parenting, substance abuse, or other concerns. They also could be very young, inexperienced parents who simply don’t know much about child development. Children raised in this kind of environment tend to perform poorly as students, have behavioral issues, have self-esteem issues and struggle with sadness and depression. “The most important thing to remember is that you are human and will make mistakes, regardless of your parenting style. And that’s okay,” notes Catherine Craig, licensed specialist clinical social worker. “We all need compassion and limits. Pause and take a breath, gain insight, and maybe try counseling or reading up on some parenting articles to learn to do better and keep going! Your connection with your child is what matters most.”

FINANCE
WHAT’S AHEAD
IN BANKING & FINTECH? WRITTEN BY BETHANEY WALLACE
I
n the last decade, the personal finance industry has advanced by lightyears. From how quickly we can pay bills to how we transfer money to friends and families to the ability to have fun while doing it, industries like fintech—that’s financial tech—and digital banking have completely transformed. Those changes, says Josh Rowland, chief executive officer and vice chairman of Lead Bank, are partly consumer-led. “Consumers are driving the trends. They’re looking at the type of services they enjoy from companies. It’s raising their expectations about what banks should offer,” he explains. When consumers have instant access to other technologies such as streaming, social media, and more, those same expectations are put on their finances. That means mobile transfers and the ability to open a bank account—and spend funds—almost instantaneously.
42

SEPTEMBER 2021
“Ten years ago there was no conception that consumers should demand a different payment system. Now it’s table stakes that they make cash transactions by phone,” Rowland says. Apps that incorporate aspects like emojis or gamification with one’s income make it more enjoyable for consumers to manage. However, with these apps there are also risks. Finance-based apps are often only that, meaning they are not backed by the federal government nor are they held to legal standards. “What people don’t understand is that essentially they’re relying on [apps] to follow through with the promise that the transaction goes through. In terms of trends, it’s a bit worrisome. There’s complacency about where their money resides, how they can access it, and whether or not it’s safe,” Rowland explains. In contrast, he says, banks are highly regulated and scrutinized. They have to make good on their financial transactions. Even if a
bank crashes, account holders’ funds are secured up to a certain amount—$250,000 per account holder— while apps and other fintech brands provide no such level of security. What if PayPal crashed? Cash App? Coinbase? What happens to your money in those accounts? What if a transaction simply doesn’t go through? Is there insurance that your funds will be returned or that they will end up with the intended party? No one knows. We simply use the apps with the utmost confidence and assume all is well. In addition, big brands are blurring the lines of how consumers shop and spend. Think about Amazon, which now offers credit cards and cloud storage. No longer is it just a store, but a financial institution and online storage provider. With these blurred lines of innovation, people become complacent about who’s looking out for their money. Just because Rowland is a banker doesn’t mean he believes FDIC (Federal Deposit Insurance Corporation) is best, though. He explains that he simply wants people to be aware—and to demand more of their local banks. First, he says, if you want an instant payment app, opt for Zelle. It’s bank-owned, and therefore more secure to transfer money. And when it comes to opening accounts, consider what your money is doing. While global brands exist in the Kansas City community, the money they earn from local accounts likely won’t be spent in KC. “Look at the community banks. Look at the offerings of those banks. Your dollars are staying in our community. That builds Kansas City,” Rowland says, adding that local should not mean a lesser digital or consumer experience. “Consumers should have high expectations for their bank. Digital, convenience—they’re totally reasonable and rational demands. That’s the market economy we live in. Demand that those banks meet the challenge of digital innovation,” he adds. As for what’s ahead, tech will continue to rise, as will ease of spending. After moving from in-person banking to online banking, we have moved to mobile banking. We have reduced the need for checks and ATMs, let alone having access on every corner. Now the transactions simply get faster, and if consumers have anything to say about it, it should be more fun. “Consumer behavior is really driving a different attitude and driving banks of all sizes to be more innovative with the kinds of experiences that consumers want. It’s forcing companies to really look at what the innovative strategies will be,” Rowland concludes.

GOOD TASTES
APPLE SEASON STARTS…NOW! WRITTEN BY GINA REARDON / PHOTO BY MELANIE MCDOWELL
One of the first family adventures I had when moving to Kansas City in my early teens was apple picking at Stephenson’s Apple Orchard in Raytown, Missouri. We had the most fun climbing trees to pick the ripe fruit from the middle and top branches and filling baskets of apples for school lunches, homemade applesauce and pies, and even apple butter. I still have fond food memories of the apple fritters served with apple butter at the Stephenson’s Family Restaurant. Lucky for us, these same experiences are plentiful at orchards in Platte City and Weston, Missouri and other local orchards in Kansas City, Kansas and Missouri. Lately I’ve been looking for an excuse to make one of my favorites, a New York Style Crumb Cake with Apples. This coffee cake is everything you want it to be: moist and tender, with cinnamon crumble topping and the welcome surprise of fresh apples tucked inside. Try this at your next weekend brunch, or meet me at the next KC Bake Sale for No Kid Hungry on Saturday, Oct. 30. I might just have one for you there.

New York Style Crumb Cake with Apples SERVES 9
Ingredients
Preparation
Crumb Topping
Crumb Topping:
1/3 c. granulated sugar
Whisk sugars, cinnamon, salt, and butter in medium bowl to combine. Add flour and stir with rubber spatula or wooden spoon until mixture resembles a thick, cohesive dough. Set aside to cool to room temperature, about 10-15 minutes.
1/3 c. dark brown sugar 3/4 tsp. cinnamon 1/8 tsp. salt 8 tbsp. unsalted butter, melted & still warm 1-3/4 c. cake flour
Cake:
Cake 1-1/4 c. cake flour (7-1/2 ounces) 1/2 c. sugar 1/4 tsp. baking soda 1/4 tsp. salt 6 t bsp. (6 ounces) unsalted butter, softened but still cool, cut into 9 pieces 1 large egg 1 large egg yolk 1 tsp. vanilla 1/3 c. buttermilk 2 c. fresh tart apples, peeled and cored, sliced thin
Adjust oven rack to upper-middle position and heat oven to 325 degrees F. Spray 8-inch aluminum or ceramic square baking dish with nonstick cooking spray or brush with butter and lightly flour. Cut parchment paper or aluminum foil and fold lengthwise to fit into pan, pushing into corners and up two opposite sides, allowing excess to overhang edges of the pan. (You will use those edges to lift cake from the pan once cooled completely.) In the bowl of a standing mixer with paddle attachment, mix cake flour, sugar, baking soda, and salt on low speed to combine. On low speed, add butter, one piece at a time. Continue beating until mixture resembles moist crumbs, with no visible butter chunks remaining. Add whole eggs, egg yolks, vanilla,
and buttermilk. Beat on medium-high speed until light and fluffy, about one minute, scraping bottom of bowl and sides once if necessary Transfer batter to baking pan and spread batter evenly in one layer. Arrange apple slices evenly over the top of the batter. Break apart the crumb topping into large pea-sized pieces and sprinkle evenly over top of the batter and fruit, beginning with the edges and then working toward the center. Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean (35-40 minutes), and until toothpick inserted in center comes out with moist crumbs. Cool on a wire rack at least 30 minutes. Remove cake from pan by lifting parchment overhang. Dust with confectioners’ sugar just before serving. Note: Do not be tempted to use all-purpose flour in this recipe; doing so will make a dry, tough cake. You may substitute plain yogurt or sour cream for the buttermilk. Cooled leftovers can be wrapped in plastic wrap and stored at room temperature for up to two days.
Mark your calendars for the next KC Culinary Bake Sale on Saturday, Oct. 30, to benefit Share Our Strength’s No Kid Hungry campaign. KACIE ARE THANK YOU NOTES OUT OF STYLE? We welcomed our first baby during COVID. Since friends and family couldn’t be with us in person, they showered us with gifts. They sent a meal train, care packages—everything! It was heartwarming. But it was also overwhelming. I had a hard pregnancy, complications from childbirth, and breastfeeding was a nightmare. The baby was colic. I didn’t take showers for weeks because I wasn’t getting sleep. This was a year ago. I haven’t written one thank you note. I don’t remember what we got from whom anymore. I honestly wonder if the thank you notes are lost in time. Are thank you notes still expected? I’m pretty sure I told them thank you upon receiving the gifts. How do I fix this?
Welcome to motherhood: the joy of doing it all. Short answer: Don’t worry about it. Of course, sending a thank you note is never a bad idea. But if any of those gifts were from mothers, they’ve been there. Motherhood is exhausting. And—this is just me—but when I give gifts to friends, especially friends giving birth during a pandemic, I absolutely do not expect a thank you note. But if you’re truly bothered by a thank you note, here’s what you should do: Email. Limit handwritten notes to those who don’t email. Email provides you a useful tool: copy and paste. You don’t need to mention which gift they gave. Just acknowledge their kind outreach for your family. Attach pictures of the baby too. People love that. Also, use your partner to help with thank you notes. Just because you’re the mom doesn’t mean you need to do everything. Remember that for the next 18 years. Just because you can do it all (somehow) doesn’t mean you need to.

BECAUSE I SAID SO...
WHAT I DID ON SUMMER VACATION WRITTEN BY JULIE BURTON / PHOTO BY JAMI BOWMAN
I haven’t been a student in … well, let’s not talk about that. 17 years, okay? I haven’t been asked what I did over summer vacation in 17 years. So what did I do over summer vacation 2021? I got you, Teach. • I sweat my butt off in 100-degree heat, pleading with the heavens above for my kid’s softball team to please just throw the game so we could leave softball tournament hell. • I got challenged by my kid: “Three glasses of wine, Mom?” There was ice in it, okay. • I taught my kids the life lesson of “when you have a gift card for a restaurant, you always tip on the total bill, not the discounted one.” They responded with “Okay” while staring at their phones. • I cried in the shower because of teenagers.
• I watched my kids cry in the kitchen because of their mother of teenagers. • I got invited by my ex-husband’s girlfriend to his surprise 40th birthday party. My parents and sisters showed up too … I couldn’t make up this summer if I tried. • I took my kids on a summer vacation to Chicago. Of course, I took them to try Chicago-style pizza. When the host asked for my name to be put on the waiting list, my daughter responded, “Abe Froman. The Sausage King of Chicago.” • I had several movie nights with my kids. They’re at an age where
they can start watching more mature movies such as Rocketman. “Wait, Mom. Elton John is gay?” Life lessons. • I offered to take the kids to the zoo. “It’s too hot there.” I offered to take the kids to the water park. “That place burns my feet.” I pushed their heads in the freezer. • I listened to other moms at the pool say how good their babies smell after a bath. My kids go to bed smelling like chlorine. • I did my annual happy dance through Target in the back-toschool supply section while my kids rolled their eyes. They’re all yours, Teach.

SEPTEMBER 2021
APP OF THE MONTH
INSIGHT TIMER MEDITATION
The gist: There’s probably no person in the
world who didn’t have some added stress in the past year. A worldwide pandemic will do that. There are many ways to cope with stress, and one is meditation. There are many types of meditation, but they all have four things in common: a quiet location without distractions; a comfortable posture; a focus of attention, such as a chosen word or set of words, an object, or the sensations of the breath; and an open attitude, letting distractions come and go naturally without judging them. The Insight Timer Meditation app believes everyone should have daily meditation practice. The
app publishes the world’s largest collection of free guided meditations. There are over 70,000 high-quality meditations from over 10,000 teachers, including the Dalai Lama. And they’re all free! Its library is diverse and inclusive, with secular, spiritual, religious, and scientific meditations. Live events where you can connect with the teachers, improve your sleep with music, and yoga—yes, that’s free too, although you’re encouraged to leave a donation to your teacher after class. There is an optional in-app subscription that allows a few upgraded options such as downloading guided meditations to listen to offline. The subscription is $59.99 per year.
