100% ISLAND OF PAG SHEEP MILK Our island is subjected to a powerful winter wind called the BURA which blows from the Velebit mountain range, as it crossed the Adriatic Sea it picks up and dries sea salt which is deposited upon the rocky pastures. This in turn affects the balance of the soil resulting in strains of wild herbs which can only found on Pag. The most pre­ dominant being a unique strain of Dal­ matian sage which is considered by many to be the gourmet sage par ex­ cellence . This aromatic herb forms the largest part of the sheep s diet.

Island of Pag sheep have evolved over thousands of years in these conditions and have become experts in foraging for wild Dalmatian sage

Our sheep are completely free range on small family farms. We have 200 sheep of our own and we buy from local 250 fami­ lies. The milking season runs from January to June and is done by hand. The shep­ herds deliver milk twice daily, the milk then goes straight into storage for production the next day.


100% CROATIAN MILK From an area of Croatia known as Ju ni teren or southern fields, we buy milk from carefully selected family cattle farmers in a rich area of agricultural land stretching 150 km from Knin to Imotski, along the Bosnia border traversing the beautiful mountain range of Dinaric Alps. The cattle are free range and are moved from pasture to pasture through the seasons, only coming inside during the harsh winter. In higher altitude the cows enjoy a diet of alpine grass and subterra­ nean clover. Whilst those in coastal farms are subjected to warm Adriatic breezes where Persian and Alfalfa grasses and clover flourish.

We buy goat milk from small family farms in the Ravni Kotar Region. Oregano is a predominant local herb along with Mentha and Sage

Our cooperates are family enterprises with whom we work closely to maintain the highest quality. Each farm cares for 20 to 100 cattle of Hol­ stein and black and red Simmental.


PA KI SIR - 100% Island of Pag sheep milk a wonderfully tasteful sheep milk cheese that brings a full and com­ plex flavour to the palate and melts nicely in the mouth. Authentic and unique, Pa ki Sir is a pure delight and displays quality in the making, leaving a long and pleasant aftertaste to savour. A yellowish creamy colour with farmhouse aromas, this cheese has a well­balanced texture, taste, aroma and finish, and is delightfully tasty .

KOLAN - Hard, cow milk cheese Aged 3 months, our premier cow milk cheese has a hard yellow to orange thick rind which opens to a firm light yellow interior with a slightly buttery aroma. The taste is fresh and light but with depth where you can find distinctive grassy undertones with a smooth and flavoursome finish.

The perfect partner.. a strong Terran or fuller Malvasia


MLADI TRAPIST - Semi hard cow milk cheese Aged for just 21 days, this white cow milk cheese has a very thin rind un­ der which lies a semi hard textured interior with a delightfully sa­ voury taste. The mild strength makes Mladi Trapist an ideal cheese for those who avoid the more powerful flavours but make no mistake that the quality is evident is every bite.

The perfect partner.. a young Merlot of fresh Malvasia are highly recommended


SIR - Hard cow milk cheese TE ACKI Aged 3 months, our newest cow milk cheese delivers a redolent flavour from its firm yet supple texture. The slightly tangy taste is perfectly balanced and not overly salty which leaves an earthy mellow aftertaste.

The perfect partner.. A slender bodied Merlot or young Plavina


KOZLAR - Semi hard, goat milk cheese Aged for a minimum 14 days or more mature if requested, our goat milk cheese has a very discreet aroma and the thin grey/white rind opens to supple texture with a mild and creamy taste. A per­ fect introduction to goat milk cheese as this does not carry the typical goat cheese bitterness.

The perfect partner.. Riesling or a medium bodied Gra evina are highly recommended


IGLJEN - Hard, mixed cow/sheep cheese Aged minimum 4 month, this mixed milk cheese is a personal creation of Ivan Gligora. Cow milk is largely at the base with 20% sheep milk from the Zadar hinterland. The deep yellow rind gives way to an almost granular texture which has an intense and complex flavour with a spicy finish.

The perfect partner.. aged Riesling or a semi­dry Traminac are highly recommended


DINARSKI SIR - Hard, cow/goat milk cheese Produced exclusively from cow milk from the Dinaric Alps with added goat milk for complexity, this spectacular new cheese won the Best Central and Eastern European Cheese Trophy at the 2013 World Cheese Awards as well as several other interna­ tional medals. The excellent balanced flavour has mild farmhouse aromas with floral undertones and a smooth finish, quickly becoming a favourite in Croatia.

The perfect partner.. a vibrant Terran or a well balanced Malvasia


SIR S TARTUFIMA - Semi hard, cow milk with black Istrian truffles

Select cow milk is infused with a generous helping of black Istrian truffles to give a beautiful intense truffle flavour which is subtly offset by the cow milk.

The perfect partner.. this powerful and complex cheese calls for a Chardonnay or a strong, aged white


SIR S RU MARINOM - Hard, cow milk with Croatian rosemary

Select cow milk from the Zadar hinterland region is used exclusively in this cheese which is coated in fresh coastal rosemary leaves. The intense herbal flavour is nicely rounded with the cow milk qualities.
