2014 is almost done, that’s unbelievable! The months have just flown by and it feels like it was only yesterday we were lugging the sofa for the cover of #sisterMAG12 around Berlin. 2014 brought many changes for us at COP. Not only did we build a new team (see #sisterMAG15 ) but also a new office space, which we often hear referred to as »the girl’s office« and both were great fun. We’re also in the process of launching a new magazine in a completely new field PHOTO CREDITS

(watch our Facebook page for further announcements), so the sisterMAG team has not exactly had a lot of time to reflect on the past few months (yet). Add to that the fact that we put together this brand new issue, sisterMAG N°16, in just over a month and you’ll get an idea of the effort made by everybody involved – for which we would also like to thank everybody again! We had set the bar quite high: because it is Christmas we wanted to offer a particularly nice range of DIY projects, especially inspiring stories

and nothing less than extraordinarily beautiful illustrations and ideas for the holidays. We’re looking back at six (!) bumper issues in one year which means thousands of page layouts, (probably) several terra bytes of image and page uploads and hundreds of new contributors we got to meet. Indesign crashed so often all we (and especially Tina) wanted to do at times was to crawl under a table. We lugged boxes upon boxes of materials into our office and back out again, hauled shelves from one end of the country to the next (see the Tchibo feature in #sisterMAG15), put sportswomen into sack cloths (#sisterMAG14) and build

obstacles for a parking skills course out of larger than life presents. I don’t deal particularly well with change so the idea of having interns come and go is still not something with which I feel completely comfortable. It was hard to say goodbye to Tina at the beginning of the year but she remains a member of the team and still works through nights to get an issue finished. We asked a lot of each and every one of the five interns we had this year. In the spring we »forced« Laura into a modelling career for our photo gallery on beauty codes and staged a summer garden party at about 7°C. Cris had to skillfully touch up all the pictures to remove Laura’s goose bumps :). Anja

Alex, Toni and Ashley during the Couple Shoot supported us over the summer before continuing her studies in Sweden. Caro took over from her in August and was immediately made part of the family by not only helping us to launch #sisterMAG14 but also playing an important part in the wedding prep committee :). On our many trips to modulor, DIY superstores and balloon shops we also got to explore completely new sides of Berlin :). On October 1 we welcomed Sarah to the office who now shifts boxes, digitalises sewing patterns (you’ve got her to thank for the fact that you don’t have to download dummy files this time) and takes care of the Start Up Spotlight section.

Our school subject for this issue is typography and we have dedicated the opening pages to it (including countless links to great websites for fonts as well as font tips and a lot of information around fonts and typography). Elsewhere our main focus is, of course, Christmas in all its shapes and forms. In the past I could not have imagined spending Christmas anywhere else than with my family, with grandma and grandpa, Toni and my parents. But the more your own life takes shape, the more you have to change traditions and explore new ways in which to celebrate. So apart from the classic 3-generation festivity, which we focus on first by throwing a wrapping party at my parent’s house

in Saxony, we’re also showcasing three completely different ways of spending the holidays. Ajda Mehmet and Holly Marder from Amsterdam take us on a casual Christmas picnic­ showing us how to have a merry and relaxed Christmas with friends. To those who don’t want to get caught up in all the cooking, decorating and other seasonal prep stress we suggest checking out the »Glamorous section in which we Christmas« just go away and celebrate at a hotel! Evi has come up with a selection of outfits perfect for the occasion and contributed eight sewing patterns for dresses, skirts and blouses!

We would like to say a few more words about our cover, because it was a very special collaboration between the sisterMAG team and our good friend Alice ( designedbyalice). The Englishwoman who dances in the ensemble of the Staatsballet Berlin is one of the most talented people we have met in the last year! Since the summer months her illustrations have been a consistant part of sisterMAG, she designs and sews ballet skirts and our personal favourite project of her are – small handmade (!) elephants, the »Little Beings« mice, reindeers or tigers. The fact that she sews them by hand and designs them in whole, always leaves us with a perplex look on our faces!

How we first met is a true »Digital Lady story«. Earlier this year, just as Alice had properly started using Instagram because of investing in a new phone :), she commented on an Instagram photo of Thea. After discovering Alice’s wonderful feed – Alice had just posted the cute illustration for »The Ballerina Chef« , Thea asked her for a cup of coffee to talk about possible collaborations for sisterMAG. Only a few minutes into the meeting at Charlottenburg’s coffeeshop »Stulle«, it was clear to both of them: love at first sight. Since then we have all not only become very good friends, but Alice

To show her on the cover at the end of this year just seemed a very good fit! And it is a real »Alice« setting: stuffed animals Little Beings tucked in her huge pocket (a combination of handmade animals of Alice and real childhood companions of Toni & Thea), surrounded by her foamboard forest dwellers (deer, fox, rabbit, birds), who Alice designed and built herself and in front of the landscape that she drew on huge papers in her flat. Faced with such a level of opposition, the public transport

printing process has been widely automated and is now even being replaced by the digital production of text, typography has come to mean the creation of fonts and their use in publications. This means we come into contact with typography whenever we see electronically produced writing, and more often than not the font is just as important as what is written in it. The United States governments’ decision for example to abandon Courier New 12 point and instead use Times New Roman 14 point for all official documents was the result of a long period of considerations. The same is true for Apple’s recent farewell to Lucida Grande, which had served as the Mac OS standard font for 14 years, in favour of Neue Helvetica introduced with the recent Yosemite update; this

decision wasn’t taken lightly either. heoretically one font would be sufficient for everything that is written - or at least there would be no detrimental effect

& new varieties are created by typographers, another indication of how their profession has changed in recent years. Only a few decades ago a typographers’ main job was to keep on top of what’s going on at the printing plant. Hardly any typographer would have dabbled in developing new fonts on the side – especially not one that would become important enough to be named after them and used for decades or centuries to come, like the one invented by 16th century Frenchman Claude Garamond. Today, however, compiling new fonts is a typographers‘ daily bread. A great

example of someone who excelled at this part of his job is that of a Swiss man born in 1928 named Adrian Frutiger. His creation ASTRA Frutiger Autobahn, for example, has been used on signs on A-roads and motorways of his native country since 2003. He’s also the father of the font Roissy which has been guiding staff and visitors of Charles de Gaulle airport in Paris since 1974. In 2007, the Swiss federal office of culture awarded Frutiger their DESIGNER award citing his »influence on the visual surroundings

Paris is by no means the only city using specially created fonts for their public transport signage. The font used in Hongkong is called Casey, the one used in London is Johnston, and you’ll probably be able to guess which city uses

theories available to explain its origins. Some researchers think

The Ampersand hotel, built in 1888, is one of London’s original Victorian boutique hotels. All 111 individually styled bedrooms and balconied suites are a mix of traditional English heritage with modern design. The restored original Victorian features like e.g. the impressive high ceilings, glamorous stairs, or hauntingly gargoyles are the backdrop for contemporary furniture and design classics. The interior design concept was inspired by the surrounding area which is the cultural district of London.

The famous museums of Natural History, Science, and Victoria Albert, as well as the Royal Albert Hall were sources of inspiration. For our shooting with Kayla, we ourselves could enjoy the amenities of the castle hotel in Grunewald, the noble district of Berlin: the historic villa with a parklike garden, the rich and stylish interior designed by Karl Lagerfeld and the very nice staff of the hotel. ESTABLISHED IN 1840, Klar Seifen is the oldest soap manufacturing business in Germany and is still run by its founding family. At Christmas their product range includes a special selection of soaps with a seasonal scent. Our editor Victoria Kau met Niels Klar, current and 5th generation managing director of the Klar family business, for a chat about lather, almond scents and how to capture a fine wine’s bouquet in a bar of soap.

Your family business has been manufacturing soaps since 1840. Which challenges are you facing today? Our soaps are exclusively manufac­ tured right here in Heidelberg. We do not outsource production steps abroad. The traditional soap boiler craft has been extinct since the 1950s so we pass on our knowledge from employee to employee across the generations. Some of your recipes are more than a hundred years old. What’s essential in the creation of soap? We only use sustainable vegetable oils in our base soap and of course we also adhere to any current directives and regulations for the production of cosmetics. From there it’s a successful blend of new ideas and old recipes. We value the preservation of traditional recipes as much as we do innovation. We want each product to tell a unique story, but our main goal is for our soaps to offer a beautiful and exciting customer experience.

The traditional process of soap boiling involves oils and fats being boiled with an alkaline solution to produce a so-called base soap. Many industrially produced base soaps contain animal fats, but Klar Seifen only uses organically farmed vegetable oils for their soaps. In a second step the base soap is refined by the addition of perfume or essential oils. All ingredients are rolled into one homogenous mass which is then moulded, cut and hand-packed with great care.

Your website shows pictures of large tubs and pressing equipment. How much actual manual labour goes into Klar soaps? A lot! We do use machinery, of course, for certain shapes, but a human pair of hands is never far from any of our products at any stage. Measuring perfume oils and dyes, cutting the soap, adding ropes, punching and shaping and the final packaging all involve an employee’s touch. How many pieces of soap do you typically produce in a day? For the more sophisticated ones, like those with a rope, anything between 700 and 1000 is a good day’s work. But we manage between 5000 and 8000 of some other varieties. The final packaging, however, might take longer as all our soaps are hand packed with a ribbon on top.

Liquid soap seems to have become more popular. What are the advantages of a bar of soap?

It comes down to haptics, really. Hol­ ding a piece of solid soap in your hand is a pleasurable haptic experience. Soap bars are the more sustainable option, too. Your average shower gel is full of preservatives, water, salt, paraffin oil and dyes. For something that comes into contact with my skin that simply doesn’t cut it. But the ritual is also important, for example when it comes to using a cake of soap and a brush when shaving. It’s a completely different experience to squirting foam from a pressurized gas can. Our soaps are a great way to treat yourself.

How many different kinds of soap does your current product range comprise? Our regular soaps come in 30 to 40 different varieties. In addition to these we produce private label creations, such as for fashion designers Dorothee Schuhmacher or Escada. This comes to around another hundred different products a year.

Which of the changes that have happened over the past few years have had the most noticeable influence on the soap manufacturing business? Apart from new distribution channels provided by the internet, it has been the return of the customer focus to high quality products based on traditional recipes. We have been noticing this for the last 20 or 30 years.

What has been your main focus in the creation of your Christmas soaps?

Our Christmas mould is more than a hundred years old and has so far mainly been used regionally. We have a very strong connection to our local community and many people around here know our family personally. Clove and cinnamon are traditional Christmas scents and I also remember the smell of almonds from my childhood Christmases so this had to be included, too. What’s the story behind your wine soaps? I have been working with a perfumer from Grasse in France and one night we sat together drinking a glass of wine and suddenly the idea of a soap with a regional connection was born. Looking out of our windows you can see vineyards which have been run by the same family since the 17th century. The perfumer used their Pinot Noir and Riesling to create a perfume and we then used this to create two great new soaps.

Do you have any useful tips, such as for alternative uses for soap? I like to keep a bar of soap in my glove compartment for a fresh smell. But they also work very well as a general air freshener. I have a large piece of soap shaped like an elephant in my bathroom. It looks really nice and smells just wonderful.

Advanced Pinning: How to Generate New Followers (and Keep Them) Once you’ve done your homework on all the available features of a business account there is only one thing left to do: generate followers. To be able to do this your account will first need content which in turn will need constant adding to in the future. Picture selection is key, high quality pictures are a must and a portrait orientation will look best with the Pinterest layout, especially in the app. Make sure to limit the amount of photos and text to maintain readability even on a small screen. Instructions should never consist of more than four or five pictures so followers are still kept curious enough to actually visit the respective website. Make sure to add meaningful and timeless descriptions with common keywords. This will ensure your pins appear frequently in other feeds and in search results. The pin description »Gluten-free raspberry cake – a sweet and healthy snack perfect for a Paleo diet « is much better and will

ultimately be found more often than just »Cake«. But don’t just focus on your own content: follow other pinners and repin, favourite and comment on their pins. Many users will follow back and check out your profile when their interest is triggered by well thoughtout comments. But keep in mind that just „Nice!!“ is not only an insufficient comment, Pinterest will categorise too many of these kinds of mass comments on too many pins as spam. Another way to generate followers is to join other group boards or create some yourself. Group boards are a good way for new accounts to reach users who already follow and pin on them. Once your follower base is growing, invite users to join a new group board to increase engagement and add to your business account. Make sure to review the pins on a regular basis though. The board

The feature, which currently is only available in the US and only supports pictures (no gifs or videos), allows you to select individual pins and, through a tool, make them appear in home feeds and search results. Campaign periods and target audiences (including sex and language of the user) can be selected as well as search terms for which the pin is supposed to be shown, areas, and devices used. Pinterest provides an approximate reach and coverage of the campaign to help you assess and optimize it. Promoted pins are paid for by a cost-per-click system. You determine how much you are willing to pay for a click from a pin to your website and enter into a competition

Say company A wants to promote a new set of Sherlock Holmes themed Christmas cards using the keyword »Sherlock« at a CPC rate of 2$, and company B is offering minimalist posters inspired by episodes of the BBC program of the same name at 4$ per click. If a user now searches Pinterest for »Sherlock« they will see both pins with the poster-related one at the top as the order is determined by the CPC rate. The number of impression generated by each pin is irrelevant as the companies only need to pay once the pin is clicked. So after two weeks, company A might very well have spent more than company B if their shop was accessed more often through a click on their pins. The amount spent on a campaign per day can be capped in order to avoid nasty surprises. If you set up a campaign it will be checked by Pinterest and then rolled out on the start date specified.

The Big Picture: Embedding Pinterest on your Website Pinterest can be a useful extension of a social media profile but your website will have to fulfil a number of conditions for you to be able to use and embed it effectively. First of all your website needs to have a sufficient amount of pin-able content – i.e. many high-resolution pictures (with a width of at least 600 pixels). Additional meta tags and some adjustments to your HTML code will enable you to embed 212

The name also evokes a »flashback« - which we offer with information about the history of Berlin. 3. Then there is the concept of a »back-flash«, a sudden urge to bake something on a Sunday afternoon (when

the only shops open in Germany aren’t usually those who stock vanilla sugar). With our product, a healthy home-made biscuit is never far away. 4. The German word »Flasche« for bottle mentioned before can also be used to describe someone who lacks talent in a certain area. But even if you lack any baking talent you’ll be able to bake our biscuits. We made sure to create foolproof mixtures! ;-D

ST YLING Many young people who are traveling or living abroad spend Christmas away from home, but still want to make it a special celebration to enjoy with those around them. This shoot was all about celebrating the holidays amongst friends in a cozy but casual way. Cushions, rugs and an easy picnic style Christmas menu set the tone for a festive and fun Christmas on the floor! The whole idea behind this shoot was keeping the food and

styling as effortless as possible, offering up an array of ideas that don't involve excess hours of prep in the kitchen or formal table settings. Style wise, we wanted the setting to have a quintessential Christmas vibe to it, while being very informal and youthful with a slight boho feel to it. We did a fresh take on classical Christmas hues with a colour scheme of maroon, duck egg blue, creamy whites and brass.

Dining on the floor was made comfortable and inviting with layered rugs (a vintage kilim atop a natural woven rug) and a spray of cushions to rest on and against. Soft candlelight flickered from tall brass candlesticks and a large collection of white and cream coloured candles in various heights and sizes. A foraged tree branch served as a Christmas tree, decorated simply with a beautiful selection of ornaments.

With typography being the underlying theme for the shoot, we added in hand-made gift tags and labels for Ajda's chutney. To make the rice paper gift labels, simply stamp letters directly onto the paper using an individual alphabet stamp set. Tie the two typography labels together using cotton string.

wowed by the presentation. My take on an Eton Mess with quintessential Christmas flavours had a bit of booze to make it extra special! The picnic was made even more festive and yummy with some seasonal clementines, chestnuts, mulled wine, bread, a selection of salami and cold meats, a variety of cheese, pickled baby onions, sliced apples with honey and some fresh cranberries for decoration.

Red Cabbage and Apple Chutney MAKES 4-5 JARS 700g red cabbage, finely diced 2 apples, peeled and diced in 1cm cubes 100g fresh cranberries 1/2 tsp ground cloves 1/2 tsp nutmeg 1 tsp cinnamon 1 tsp chilli flakes 2 inch piece of fresh ginger, grated 200g brown sugar 250ml orange juice 100ml white wine vinegar 1 glass red wine Sea salt and cracked black pepper

1. Place the red cabbage, apples and cranberries into a large pan with high sides. 2. Add the spices, grated ginger, brown sugar and give it a good stir. 3. Pour over the orange juice, white wine vinegar and glass of red wine and turn the heat up to high until the chutney comes to the boil. 4. At this point, turn the heat down a little so that the chutney is still bubbling away but not boiling. 5. Season the chutney well with some sea salt and cracked black pepper and continue to cook it, without a lid on, for about 45-50 minutes until the liquid has almost all reduced and thickened. 6. Cover the chutney and allow it to cool completely before transferring it into sterilised jars.

Warm Roasted Brussels Sprout, Parsnip and Cranberry Salad SERVES 6 6 parsnips, peeled, halved and cut into equal sized batons 1kg brussels sprouts, washed and ends trimmed off 200g fresh cranberries Olive oil for roasting FOR THE DRESSING 50ml olive oil 25ml balsamic vinegar 1 tsp dijon mustard Sea salt and cracked black pepper

1. Preheat the oven to 200째C (400째F). 2. Lay the parsnips on a large baking tray, season with sea salt and cracked black pepper and toss in a little olive oil. Roast in the oven for 30-35 minutes. 3. Meanwhile, add the brussels sprouts to a pan of boiling salted water and cook for 2-3 minutes. 4. Add the cranberries to the brussels sprouts and cook together for just 1 minute until the cranberries begin to pop. 5. Remove from the heat and strain the sprouts and cranberries in a large colander. Shake off any excess water, add them to the parsnips that are already roasting in the oven, drizzle over a little more olive oil and continue to roast for the remaining time. 6. Once the vegetables are tender and golden brown, transfer them onto a large platter. 7. Mix together the olive oil, balsamic vinegar and dijon mustard in a small jug, season with sea salt and cracked black pepper and drizzle over the vegetables. 8. Serve on top of some lovely, crisp salad leaves.

Potatoes Boulangere with Rosemary and Thyme SERVES 6 8 large potatoes, peeled and cut into 1/2 cm thin slices 2 large onions, thinly sliced Handful of sprigs of rosemary and thyme 500ml chicken or vegetable stock 25g butter Sea salt and cracked black pepper

1. Preheat the oven to 200째C (400째F). 2. Layer the potatoes and onions in a large, deep-sided baking dish, starting with onions and ending with potatoes, seasoning between each layer with salt, pepper and rosemary and thyme leaves. 3. Pour in the stock and add a few knobs of butter over the top. 4. Bake in the bottom of the oven for about 30-40 minutes until the potatoes are tender and golden on top.

Easy Glazed Christmas Ham SERVES 6 1.5-2kg piece of ham, skin on (not on the bone) 1 onion, peeled and quartered 5 black peppercorns 2 bay leaves

5. Place the ham onto a chopping board. Carefully take off the skin and some of the excess fat, making sure you leave an inch thick layer to score and stud with cloves.

'Christmess’ Layered Christmas Pudding, Meringue and Baileys Cream SERVES 6 1 Christmas pudding 4 meringue nests 250ml double cream 2 tbsp icing sugar 25ml Baileys Irish Cream

1. Warm up the Christmas pudding in the microwave according to the instructions on the packet and set aside to cool down. 2. Whip the double cream and icing sugar together in a large bowl until just holding soft peaks. Add the Baileys and whip again for a minute until well combined, making sure not to over whip the cream or it will turn grainy. 3. Break the meringue nests into a bowl. 4. Begin to layer your dessert into 6 individual glasses, starting with meringue, then Christmas pudding, then cream and repeat. 5. Garnish with shaved dark chocolate. 6. Can be kept in the fridge but much better eaten straight away!

It might be the extra free time or the sudden urge to add glitter to everything, but somehow the holidays feel like the perfect time to make things yourself. At home. With candles burning, cookies baking and mulled wine on the stove. The idea for this DIY was born after my boyfriend Danko and I moved to our flat in Berlin with nothing but two carefully selected suitcases of clothes, and a lot of empty wall space to fill. Luckily, we are both designers, and Danko is particularly great at scavenging raw materials and creating unique decor from scratch. One of our first pieces of furniture was a desk made of an abandoned plank of paint-splattered wood. Laid across two tall speakers, it quickly became a multi-functional work surface where we made anything and everything. It has acquired a few more paint splatters, scribbles and coffee stains, plus some specs of rogue glitter since adding it to the room. We also needed something that defined the area as a studio space to create and experiment, so Danko designed giant 3D letters, spelling ‘MAKE’, out of cardboard by combining some of our favourite typefaces into

the perfect sans serif font, creating a flat pattern for each letter and assembling them. I then painted each character white and copper, and we hung them above the desk. The best part about this simple, inexpensive project is that it’s easy to change up. Danko (along with the sisterMAG team) created three different variations of the word ‘XMAS’ just in time for the holidays. They create a focal point that brings the whole room together and adds depth to your walls. By making your own interior decorations, you can recycle local materials and remove the need for mass manufacturing and shipping. This project is perfect if you’re looking for a modern and unique way to decorate your home for the holidays and feel like creating something yourself. INSTRUCTIONs 1. Print the templates on DIN A4 paper (or scale to fit what you have), align the different parts of the letter by matching the symbols, and tape the template together. Cut along the dotted lines. 2. Trace the letter onto cardboard or thick paper and use a utility knife or x-acto knife to cut it out. You can also use a metal ruler to help you make straight cuts, but make sure that your fingers are out of the way while doing this kind of work. 3. Before bending the flaps, score along the lines so you can bend them easier. Make sure you don’t cut all the way through.

The letter templates are scalable and very easy to print. Watch us making them and explaining the construction from start to finish. We also feature three different looks for holiday decor, but how you decorate them in the end is up to you – use glitter, tinsel, wallpaper, fabric or just whatever you find in your home. 239

4. For the sides, cut out a continuous strip of cardboard about 4” wide. 5. Start attaching the siding at the bottom of the letter and bend the strip accordingly at corners. Score the strips again if necessary to make clean bends. 6. Glue the strip to the outsides of the flaps using a hot glue gun or another type of strong glue. Tape the seam(s) together. Your first very own selfmade cardboard letter is finished and ready for decorating!

3 . C hop the chocolate into small pieces and add those to the bowl. Add evaporated milk and cream cheese and continue stirring while the chocolate melts. After about 10 minutes the chocolate should have melted thoroughly. Fill half of the fudge mixture into a bowl, add matcha and stir well. Pour the matcha fudge into the dish, spread evenly and refrigerate for about half an hour.

4 . L ower the heat on the burner and keep stirring the remaining fudge regularly while the dish is in the fridge. When the matcha fudge has cooled slightly, carefully pour the remaining fudge on top of it. Add cranberries and pistachios.

5 . Refrigerate fudge for at least 6 hours (overnight is best) to let it set.

At a birthday party, we wanted to offer our guests a culinary treat, so we looked specifically for a recipe by an award-winnng chef. »Halibut in brick pastry on creamy saffron cabbage.« »Sounds great, let’s do this!« But when we were compiling the shopping list, we already had

some doubts: »I hope I (Irina) can find all this at the supermarket: Malabar pepper, saffron threads, juniper berries, fish pepper, rosemary, vegetable stock, allspice berries, cloves, parsley, thyme, bay leaves, chervil, spice bag, brick pastry…« Some spices were available at the supermarket, others could be found at the delicatessen in town. But then I still didn’t have

husband chose the easier task: He took care of the cake – and just used a ready-made cake mix. Our gourmet feast was a huge success – everybody got to know new tastes and flavors, and our guests were begging for the recipe. We were quite proud and immediately started to make plans for the next cooking event. We still had 280 g of spices left over. Do we cook the

same dish 10 times now? Or do we use new recipes and spend another 60 € on spices, and again go through all the hassle of finding exotic spices and some space in our already more than full kitchen cupboard. The question was: »Why aren’t there ready-made mixes, like those Dr. Oetker or Kathi do for cakes, available for ›real food‹?« An idea was born.

Veganism entered my life quite unexpectedly about seven years ago. It was love at first sight. I had actually been looking for something to motivate myself to use my yoga mat more regularly. Working in a busy PR department my daily life was quite stressful, and I wanted to look after myself better. So I came across a book called “Skinny Bitch“. A deceptively ingenious title: The book not only gives you a push towards eating healthily (i.e. fresh, untreated ingredients), it also rigorously and unsparingly examines the basic facts of milk, cheese, eggs, meat and livestock farming. I read the book in one go and by the end of it had decided to go vegan.

I was in shock and in love at the same time. Any trip to the organic supermarket was new, fun and exciting. There were so many new foods to explore and labels to read – I quickly became an ingredients expert and decided: If I can’t pronounce it, I don’t want to eat it. The produce section became my new playground, and I explored it with great enthusiasm. I soon knew that this was the way to live because it protects other living things and the environment at the same time. Doing your bit for the environment had always been important in my family. As a child I had seen a TV documentary on the clearance of the rainforest to make room for cattle farming. It stayed with me for weeks. A couple of years later I became a vegetarian, from one day to the next – a logical step, really, because I had never liked meat. I had only ever eaten sausages and minced meat because you couldn’t recognize that they had once been an animal. It wasn’t until I started researching veganism that I

discovered the global scope and level of livestock farming and the negative effects this has on the environment. The ethical considerations behind the farming of animals for milk, eggs and cheese had never occurred to me before.

I quickly noticed the benefits of a vegan diet for my personal health. I had always suffered with menstrual cramps which, within a few months, were reduced to mere twitches and I didn’t need painkillers anymore. Even my hay fever subsided and I was able to stop taking my medicine. I soon began to look further than the (literal) edge of my plate and examined the labels on the products

THE VEGAN KITCHEN Milk: Plant-based drinks made from soy, almonds, oats, spelt, rice Cream: Plant-based cream made from soy, rice, oats or coconut can be used for cooking as well as baking. Eggs: Eggs in baking recipes can be substituted by apple sauce, mashed banana or soy flour. Cheese: There is a huge selection of vegan cheeses available sliced, in blocks or grated. Nut-based cheese is particularly delicious and can even be made at home. Meat: Tofu, seitan, lupin, tempeh

in my bathroom. Again, I was surprised to see just how much of what’s in these tubes and jars relies on animal products. I didn’t stop at the ingredients list. I wanted to know which companies tested their products on animals. Even before I had used mainly organic cosmetics – the skin is our biggest organ and we should not expose it to harmful chemicals – and I was excited to quickly and easily find many new products and brands which met my new standards. Looking at my wardrobe I was again surprised to see the variety of animalderived products in it. “Skinny Bitch” had given me a vivid idea of leather

production. After watching a few additional videos, I found it very easy to sell all my French designer handbags and my vast collection of shoes. Nobody should have to suffer for another person’s looks and beauty: no animal, no human being and neither the environment. Vegan, organic and fair have become indivisible concepts for me. What we wear on our skin shouldn’t have a detrimental effect neither on our own health nor on that of those who produce it. When I became a vegan seven years ago the concept was far from the popular trend it is now. Just seeing the word “vegan” in a paper or magazine was something really special. But I

still wanted to use exciting cosmetic products, wear red lipstick and pink nail varnish, cute clothes and high heels and eat at trendy restaurants. What I didn’t want to make was a sacrifice. So I started to do my own research. That got the people around me curious, and in August 2010 I started my blog »Veggie Love« which deals with all these topics: Fashion, cosmetics and gastronomy. I want to show that veganism is good but looks good as well. A lot of time has passed since my personal vegan journey began; nowadays you can’t get away from the vegan trend. Many restaurants have added vegan options to their menus and new fully vegan venues open every day. A couple of years ago I knew every single vegan cookbook on the market – now there are new ones

A vegan life is still the only life for me. Food scandals are frequent and the idea that »you are what you eat« is truer than ever. My veganism doesn’t stop at the kitchen door and I still discover new products, brands and venues that make a vegan live easier and better every single day.

THE VEGAN BATHROOM Bees wax, silk, wool wax (lanolin), carmine, collagen, fatty acids, whey, glycerine, beef tallow, urea and shellac are all animal-based. Many manufacturers add a flower symbol to their vegan products which makes shopping for them easier. After launching our new series on various forms of nutrition with the sugar-free diet in the last sisterMAG, we will now deal with the special challenges of a vegan diet in this issue. Our expert Katrin Stimmler explains what nutrients are critical as animal products disappear as suppliers and how they can be replaced for a vegan lifestyle.

CHALLENGE: CRUCIAL NUTRIENTS

VEGAN DIET = a purely plant-based diet. Any foods or ingredients derived from animals are cut; this means no meat, including sandwich meats, sausages, gelatine, fish, milk, dairy products, eggs, or honey. Since animal derived products are not part of a vegan diet, supply of the following nutrients ‘ordinarily’ provided by animal-based food is crucial.

According to current scientific research, only animal-derived food products contain significant and digestible amounts of B12. Sauerkraut and certain types of seaweed do contain B12 analogues but these are not considered digestible by humans.

It’s very hard to get a sufficient amount of iodine from a purely plant-based diet because plantbased foods contain hardly any iodine. Certain kinds of seaweed are the only exception, but these can actually contain too much iodine which can be detrimental to your health. This is why the German Federal Institute for Risk Assessment discourages the use of seaweed products. Iodized salt alone will not provide sufficient amounts of iodine either.

Most of the calcium in a typical western diet comes from milk and other dairy products. With some effort, however, sufficient amounts of calcium can be consumed on a purely plant-based diet even though plant-derived calcium is not quite as easily digestible as ›dairy calcium‹. Building your meal plan around plant-based foods rich in calcium will require some knowledge about nutrients.

WHAT SHOULD A VEGAN DO? Eat calcium rich plantbased products on a daily basis. High calcium plants include green cabbage, spinach, pulses (i.e. beans, peas, and lentils), nuts, and sesame.

This shows that a varied diet is a must for a vegan. Putting a slice of pepper on your sandwich every now and then will not cut it! Green leaves and pulses should be regulars in your meal plans. Drink calcium rich water. Mineral water is considered high in calcium when it contains at least 150mg calcium per litre. The calcium levels can be found on the label on the bottle. Add fortified products to your diet like soy drinks with added calcium. Use a calcium calculator, which are available for free online. Just enter what you have eaten and it will calculate the amount of calcium consumed.

The most important omega-3-fatty acids are eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA) and alpha-linolenic acid (ALA). EPA and DHA are only present in saltwater fish (like herring, salmon and mackerel) and micro algae. ALA can also be consumed via vegetable oils like rapeseed oil, walnut oil and flaxseed oil. The body can produce a limited amount of EPA and DHA from ALA and vegans therefore only get EPA and DHA from ALA. There is no scientific consensus yet about whether this is sufficient.

WHAT SHOULD A VEGAN DO? Regularly consume rapeseed oil, walnuts, flaxseeds, walnut oil and flaxseed oil. Dietary supplements of vegetable EPA and DHA are also available.

WHAT SHOULD A VEGAN DO? Consume vegetables which provide protein on a daily basis. Pulses (i.e. beans, peas and lentils), soy products and grains are excellent sources of protein. Quinoa and amaranth are especially high in protein. Vegetable protein becomes more easily digestible for the body when pulses and grains are combined, like a lentil curry with rice or hummus with bread.

Both plant- and animal-derived food contains protein, but it’s harder for the body to digest vegetable proteins. Combining suitable products in your diet can optimise the body’s digestion of plant proteins.

As with protein, animal-derived iron is more easily digestible for the body than iron from vegetables. The digestion of vegetable-derived iron can be boosted by consuming vitamin C with iron-rich food, i.e. adding a piece of fruit or a glass of juice to your meal. Sourdough bread also facilitates the digestion of plant-derived iron.

WHAT SHOULD A VEGAN DO? Eat iron-rich plantbased foods every day. Pulses (like lentils, peas and beans), whole grains and especially amaranth, nuts and oilseeds (like sesame, sunflower seeds, pine nuts, pumpkin seeds and flaxseed) are all high in iron. These are also best combined with sourdough bread or sides high in vitamin C like vegetables, fruits or fruit juice. Iron calculators are available online.

Vitamin D occurs mainly in fatty fish but in hardly any vegetables. Only avocados and some mushrooms (esp. porcino mushrooms) contain some vitamin D. Vitamin D is built by the skin when exposed to sunlight. In the summer most of the vitamin D is produced by the skin and only 10% to 20% needs to be supplemented by food. A vitamin D insufficiency is very common even among people on an »ordinary« diet.

WHAT SHOULD A VEGAN DO? Spend a lot of time out in the daylight, especially in winter. During the summer months, spending time outside will be enough. In winter, consider taking a vitamin D supplement. You can also add fortified foods to your diet like margarine or soy drinks with added vitamin D.

3. Combine cabbage, mushroom mixture and pine kernels. 4. Roll out the Yufka dough and spread the cabbage-mushroom mix to within 3 cm (1.2”) of the edge. Roll the dough into a wrap and spread with melted Alsan butter. 5. Bake strudel for 20 minutes at 180°C (356°F).

250 g Vegan biscuits 150 g Pistachios, dried cranberries and peanuts (combined weight)

METHOD 1. Melt chocolate and Alsan in a skillet. Stir in sugar. Crumble up biscuits and add to the chocolate mixture with pistachios, cranberries and peanuts. 2. Pour into a mould and allow to set. Liftt out of the mould, dust with cocoa and serve.

Appetizer

SPICED FENNEL CONSOMME WITH ROASTED MINI-FENNEL

INGREDIENTS 2 Fennel bulbs, diced 1 l Vegetable broth 1 Onion, diced 1 Cinnamon stick 2 Star anise 1 large Fennel bulb or 8 mini-fennels 1 tsp Pink pepper

METHOD 1. Heat some oil in a large saucepan, add fennel, onion, cinnamon stick and star anise. Cook on high heat until fennel and onion are roasted. Add vegetable broth and let simmer for 15 minutes on low heat. 2. In the meantime prepare the

mini fennel or the large fennel bulb (cut into eighths). Heat some oil in a pan and roast the fennel for a few minutes. Add salt and pepper and pink pepper to taste. 3. Strain the consomme through a sieve, add salt and pepper. Serve with the roasted fennel.

WHEAT GLUTEN ROAST AND STRONG GRAVY WITH POMEGRANATE AND MUSHY PEAS

350 g (Wheat) gluten meal

Oil of neutral taste for frying

150 g Chickpea flour

1 Bunch of greens

500 ml Vegetable stock

1 Handful of dried mushrooms

4 tbsp Tomato paste

2 Onions

4 tbsp Yeast flakes

2 Garlic cloves 2 tbsp Tomato paste

Mushy Peas:

Vegan red wine for deglazing

2 Shallots

100 ml Balsamic vinegar

1 tbsp Alsan

50 g Alsan

500 g Peas (frozen)

Thyme, Bay leaves, Juniper, Paprika, Cumin

½ Bunch Mint leaves 50 ml Coconut milk Salt, pepper

METHOD 1. Blend tomato paste into the vegetable stock and season to taste with soy sauce, pepper, salt, cumin and paprika. Knead the wet ingredients and the dry ingredients (pre-mixed gluten meal, chickpea flour and yeast flakes) into a dough and let it set for 20 minutes. Cut the dough into oblong shapes, wrap these individually in aluminium foil and simmer in boiling water for about 45 minutes. Unwrap wheat gluten meat from the foil and cut into the desired shape. You can also fry the slices in a pan in some Alsan until crispy. 2. Sear greens and onion in oil. The toastier, the more aromatic. Add garlic and continue searing. Add tomato paste and continue searing. Then deglaze using the red wine (adding enough wine to just cover the vegetables).t 3. Make sure to scrape the toast off the bottom while the wine boils down and then add enough water to cover the vegetables. Add the remaining spices and the balsamic vinegar reduction and let everything boil at medium heat for about two hours, adding more water in the process if and when necessary. After two hours remove the vegetables from the jus and allow sauce to reduce until it has reached the desired texture. Season to taste.

Zest and juice of half a lemon 1 Pulp scraped out of a vanilla pod 25 g Brown sugar 1 Glass of cherries Cinnamon Ground cloves Tonka bean mousse (either bought or home made) Wonton sheets

METHOD 1. For the curd cream, blend the cream cheese, lemon juice and zest, vanilla and brown sugar. Set aside 1/5 to be mixed with the grated tonka beans. 2. Drain a glass of cherries preserving some of the water. Heat cherries and preserved water in a saucepan. Add cinnamon and ground cloves to taste and thicken with starch. 308

3. Add a dollop of Tonka bean-curd mixture to the centre of each wonton leave and fold like an envelope. Press down thoroughly on the edges. Fry wontons for two minutes, serve sprinkled with icing sugar.
