I am proud to introduce to you the premiere annual issue of the Sizzle’n Cuisine. In these pages you will find information about the local Palouse and Lewis-Clark Valley dining and entertainment scene in the Moscow / Pullman and Lewiston / Clarkston areas. In the tradition of our Idaho Cuisine and Spokane Sizzle dining guides a few miles north, we bring to you a publication dedicated exclusively to promoting the enjoyment of food, wine and entertainment. We’re an eat, drink and be merry resource, ready for you to explore some of the most Sizzle’n local restaurants, coffee houses, sandwich shops, bars, wineries, breweries, nightlife and entertainment. This publication is all about choices, and sometimes we forget just how many there are out there. We are here to encourage you to support that mom and pop, that neighborhood hang-out, the independent operation that puts their heart and soul into their community to provide a gathering place where good food and drink come together in a way that only a local can do it. Merry Cellars has Moved In early May 2010, Merry Cellars moved out of The Old Post Office into their new home—the Port of Whitman County, located at 1300 NE Henley Court. Since opening in 2004, owners Patrick Merry and his father Dan have gone from making 400 cases of wine a year to 3,600. Initially, Merry says, he planned to relocate Merry Cellars to Walla Walla, Wash., but close ties to the Pullman community, and his success there, have led him to Merry Cellars new location, providing them with a bigger, more modern structure surrounded by rolling wheat fields. They are open 1 to 6pm Tues.-Sat.

The Black Cypress Chef Nikiforos Pitsilionis has won our Sizzle’n Cuisine Fork-in-Cork Award: “For the Love of Food … A Chef with Style!” The Black Cypress is new on the Pullman dining scene and Chef Niki has added a new flair to downtown’s eclectic offerings. Born in Greece, Niki came to the U.S. as a child and grew up during his school years, traveling to Greece in the summertime. His family is in the restaurant business, and he grew up holding every possible position in the restaurants. He opened The Black Cypress in August 2009; this is his first time as owner. With an inventive menu that is both solid with favorites and seasonal with the

detail and Chef Niki has brought together a team at the Black Cypress that has created yet another Pullman dining experience you will want to try for yourself. Find them open Mon.-Sat. for dinner at 215 E. Main St.

Palouse Falls Brewing Company Featuring unique local craft beer, Palouse Falls Brewing Co. is Pullman’s first microbrewery, opened October 2009, and uses the finest ingredients, primarily from the Pacific Northwest. The Palouse Falls brand reflects the beauty and diversity of the surrounding region, and the wide range of flavors, styles and quality of the beers produced mirror the values of the people who are proud to call the Palouse region their home. Located at SE 1335 Bishop Blvd., the brewery is essentially a tasting room, with a tap room and beer garden in the front of the brewery, yet it offers an environment that is warm and welcoming. It’s a great place to enjoy good beer and conversation. They won’t offer you a food menu to go with your beer; instead, they encourage customers to bring their own, order delivery or catering for special events. The brewing line up includes Crimson Pride—the most popular beer in Pullman, Idaho Au, Steptoe Stout, Kamiak IPA; seasonal brews are Whitman Wheat, Midnight Wheat, Spring Thaw and Polar Porter. They self distribute to restaurants and pubs in the Palouse. Find their brews at some of our favorite local hot spots, South Fork Public House and Zeppoz. Palouse Falls Brewing is the casual neighborhood gathering place for local flavors of beer and personalities. Crimson Pride is the most popular beer in Pullman—the owners believe it is Pullman's beer of choice.

Paradise Creek Brewery in the Old Post Office Merry Cellars may have moved out of The

Old Post Office, but not to worry because a great new brewery has taken up residence in the basement of the historic building at 245 SE Paradise. Paradise Creek Brewery is the newest addition to Pullman, other than the freshman at WSU. The beer is crafted on site from the finest hops. Enjoy everything from the lightly malted Dirty Blonde and J-Dub’s English Pale Ale to their creamy yet roasty Postal Porter; the variety of seasonal and perennial ales flowing from the taps, making the most demanding beer lover smile. The restaurant specializes in everything from Bison burgers and pulled-pork nachos to steaks and salmon. Specialty pizzas? Check. Sammies and Paninis? Yup. At Paradise Creek, they strongly believe that good beer and good food go hand-in-hand.

And they cater to the wallet, as the prices are very affordable—everything under $10! Even the “starving” college students won’t be going hungry now that Ion has rolled into town. We can honestly say it’s a dining experience unlike any other in the area. Head to 6th and Jackson to check it out for yourself.

Moscow Angry Bear Located at 1484 S. Blaine St. at Eastside Marketplace, you'll find a diverse, fresh, American menu with a choice of everyone’s favorites! Burgers, steaks, chicken, ribs, seafood ... there's something for everyone. The locally owned restaurant uses many local quality ingredients, including locally baked bread and buns and a selection of beef that's raised just outside of Moscow. Eighty local, domestic and import wines are available, as well as 30-plus beers—16 of them on tap. There's also an outdoor patio with private gazebo, heaters and a fire pit. And for you students out there … every Thursday is College Night!

CD's Smoke Pit We’ve been hearing that there’s some “smokin’ good bbq” at CD’s Smoke Pit. Open for lunch and dinner Tuesday through Saturday, menu offerings include tender brisket, juicy pork, fall-off-the-bone ribs and more! And if that doesn’t satisfy you, the bill will; don’t plan on spending more than $10 for the average entrée. Outdoor seating is available, too! 311 E. Veatch St.

Ion Café “Bus-taurant” That’s right! Ion Café is housed in … a mini-bus! Opened April 2010, the food is prepared in a ‘69 International short bus while diners enjoy their meal outside on the

STAX Opened October 2010, STAX is a family run sandwich joint. Smells of the homemade bread baked fresh from the bakery daily fill your senses as you walk in 402 W. 6th St. Their big and hearty sandwiches (they are seriously huge!) offer quality ingredients including produce from local farmers. They even cut their own meat. Don’t know what to order? Best-sellers include the Vandal Club and Holiday Sandwich. There are four soups on the menu as well, with two available each day. And if you don’t want to wait in line, you can call ahead for pick-up. Even better … they deliver to local businesses within city limits. Catering for up to 200 people is also available. Lunch anyone?

Lewiston Jazzy’s Towne Square has something to talk about and groove to. Featuring live music with a focus on jazz, owners Steven and Clarice Mattoon have hit all the right notes in making Jazzy's the happening spot for live jazz. Located at 504 Main St. in Suite 202, the interior of the building has been reinvented, creating a comfortable and inviting environment for patrons young and old. With a great microbrew and wine selection, it only gets better when you see the reasonable prices. Some tasty appetizers to choose from include the cheese plates, hummus and pita bread, and chips and salsa. Hear the music Wednesday through Saturday; open Tuesday as well.

La Bohème When did Lewiston start feeling European? Ever since owner Nathanael of La Bohème opened the doors at 301 Main St. and invited us in to experience a taste of Europe with local flavor. You can enjoy local wines and tapas while listening to vintage jazz and gazing at local works of art. You should try the baby red potatoes with Nathanael’s homemade aioli or the five-star tuna sandwich with feta, Dubliner, red onion, garlic, chopped pecans and raisins on top of solid white albacore tuna, or have both! If you need a caffeine boost, the highly trained baristas are ready to serve you Landgrove coffee—Italian style.

Spot On Yogurt There is a new cool place to cool off with frozen treats. Spot On Yogurt (next to Hastings) is a one-of-a-kind self-serve frozen yogurt shop with original flavors, fun atmosphere and tons of toppings to make your own creations. Toppings range from healthy to indulging; pick from fruit, cereal or candy, and if you can’t decide what you want, try one of the in-house recipes. The best part is … you pay by the ounce, so get as much or as little as you’d like! Just like their motto says, it’s “Yogurt your way!” Thursdays, take pleasure in 20-percent off during happy hour 2 to 4pm or come in 11am to 3 pm Tuesdays for Kids Day, and kids get 20-percent off. Sugar Mammas There is a new place for yummy treats located in Towne Square Mall on the corner of 5th and Main at 504 Main St. Co-owner Anna Hill is a self-taught, life-long baker following in the footsteps of her mother and grandmother. Her specialties? Cinnamon

rolls and cupcakes, but you’ll also see her making fresh donuts, rolls, muffins and the occasional batch of cookies. The bakery has a lounge area with WiFi and offers Mighty Leaf Tea, Doma coffee and soda. Stop in and treat yourself to a sugary delight, or special order corporate gifts and baskets to be picked up or delivered locally. Anna and Eric Hill take pride in what they do and don’t sacrifice quality for price. They invite everyone to enjoy their neighborhood bakery.

Clarkston Big John’s Rib House Now don’t get into an accident driving down Diagonal Street while inhaling the mouth-watering scents of smoky ribs and chicken. Just pull over, get out of the car, and head into Big John’s Rib House, the new BBQ pit in town. Located at 1794 Main St. in the 1920’s barreltop building, you’ll find Big John smokin’ ribs and chicken, and serving them with sides reminiscent of the south; tangy coleslaw, hearty baked beans, potato salad, corn on the cob, old-fashioned green beans and garlic bread. He also makes pulled pork and chicken sandwiches with the beans and coleslaw piled high on the bun. If you’re in the mood to feel Southern, you don’t have to head to the south!

Bronzestone Hummus After seeing hummus sales exploding in the market, owners Heath Barnes and Tish Ghigleri decided to go into the hummusmaking business. This all-natural hummus incorporates sustainable ingredients, sourcing as many local ingredients as possible. Jazz Fest Moscow defines community involvement with an army of volunteers that help put on this world-class Jazz festival annually for nearly 45 years. “You have to remember the impact on a small community when you bring in an extra 10,000 kids in the middle of winter,” explains Lionel Hampton Jazz Festival’s newly hired executive director, Steven Remington. “Not only is it what I like to call ‘winter harvest’ for the hotels, restaurants and other businesses, but it takes a tremendous amount of passionate, committed volunteers just to manage all the moving parts,” he adds. Actually, more than 600 volunteers are needed to manage the annual festival’s schedule of activities that engage 320 schools from eight states, in more than 115 clinics, workshops and classes. “Whenever you have an enterprise that consumes the community to this degree, you are going to have both detractors and supporters,” Steven says. “The good news is that the latter far outweighs the former, and what you end up with is what sociologists call ‘social capital,’ otherwise known as ‘community building.’ The

hallmark of sustainable communities is their ability to tolerate diversity, engage their members in productive discourse, have frequent opportunities to work together, and quite plainly, have some fun joining together in a legacy event that helps define the community’s identity.” Steven believes that events such as harvest festivals, once the defining identity for rural communities, are necessary for the health of a community and should be nurtured and supported by leaders in the community. “We need these events as a society. They help us to get to know each other, work together toward a common goal, and to just have some fun. Angry Bear Restaurant Not so angry family and friendly dining Now … don’t be scared. There’s really nothing to worry about; there’s nothing “angry” about Angry Bear Restaurant. The truth is … everything about this family owned local eatery entices feelings of the opposite nature. It is a place where you come to be happy and indulge yourself with excellent food, beer and wine, all the while socializing with your family and friends, maybe even strangers. The only thing you could possibly be angered by is the fact that at some point, you will have to leave. The name Angry Bear is actually derived from a family nickname given to the owner for those occasions when his mood wasn’t the most enjoyable to be around. Angry Bear is the result of a family of dining connoisseurs refining their

ideas and creating a restaurant they love and know others will, too. Owners Wes Hassard, wife Sherry, daughter Nicole and son Dustin love to dine out. Over the years, there have been a number of restaurants that have stood out among all the others; restaurants offering sheer excellence when it comes to attention to fine details, superior food quality and impeccable service. The only thing was—these restaurants were stuffy with a pricey menu. They wanted to create that same

five-star quality restaurant, yet with a broader appeal and more affordable price tag. “Angry Bear is a fine-dining experience in a casual environment,” says Dustin Hassard, who was asked by his family to create the restaurant concept. “A restaurant is about more than just taste; it needs to appeal to all of your senses. I’m extremely passionate, more like obsessive, about every inch and idea of the restaurant. Each element from the food, to the music, to the decor, to the staff has to flow together seamlessly to provide the ultimate experience. My family takes everything that happens in the restaurant very personal, and I think our customers will see how much we really care about them,” says Dustin, who left the city life to join his family in expanding their already successful restaurant business. With the suggestion of the community, what they originally intended to be just a burger joint quickly became an authentic steakhouse in the making. And it made complete sense, as there was no place within miles to find a nice variety of premium steaks, especially for a cost that wouldn’t make one cringe.

He adds that his sister Nicole is the inspiration for adding a variety of vegan and vegetarian options on the menu as well as bringing attention to the diet and living conditions of the cattle that supply meat for the restaurant. At Angry Bear, they are all about supporting local. As a locally owned restaurant, their first source for choosing quality ingredients is through various vendors located within the community. Their bread and buns are baked locally, and they offer a selection of beef raised just outside of Moscow. In addition to the food, the wine list and craft beer selections come in as a high priority in excellence. Offering more than 80 local, domestic and import wines as well as more than 30 beers with 16 of them on tap, and refreshing cocktails, they bring together a selection fit for the menu and pleasing for most anyone’s palate.

With the atmosphere of a heated outdoor patio lounge and dining area, complete with fire pit, makes the Angry Bear a gathering place outside as well. “Spending several years in Southern California and enjoying outdoor dining on a daily basis, I wanted to provide a similar, resort-like atmosphere for our patio diners. The kind of place where you could find yourself sitting comfortably all day and into the night,” says Dustin, who designed the patio. Continued...

Though the focus of the restaurant changed direction, burgers—made from USDA Choice beef ground daily in house and 21-days aged—are still on the menu, along with other American cuisine to include chicken, ribs, seafood and, of course, hand-cut premium steaks. Meat is their specialty, but there are also a variety of vegetarian, vegan and gluten-free options. “I believe a restaurant belongs to the community, and feedback from the community is what defines our restaurant. We listen to everything that people want to share and evolve our restaurant based on their comments.

are along the Moscow-Pullman Highway. Wawawai offers a tasting room gallery featuring various local artists and offer a beautiful setting for private events in the barn and grounds. Pullman’s Civic Theatre, the Regional Theatre of the Palouse, WSU’s Theatre & Dance Department at Daggy Hall and the Washington Idaho Symphony Orchestra are local arts venues and programs that provide both Pullman and Moscow with a rich performing arts line-up. Annual events include the National Lentil Festival and Holiday Festival. The Palouse region grows one third of the lentils in the US, and they have a festival to celebrate it! The Lentil Festival is a three-day event featuring a grand parade, street fair, live music, lentil cook-off, arts and crafts, Lentil Lane Food Court, kids’ entertainment, sporting events, microbrewery and more! At the Annual Holiday Festival, held in Pine Street Plaza in December, families can enjoy music from local choirs and bands. Santa even makes an appearance right before the official tree-lighting ceremony, and there’s free cocoa and cookies. The Tour de Lentil, a 50-mile annual bike race, is usually held in August. Throughout the area there are a number of museums and galleries to keep your mind engaged. Washington State University is where you can find the Museum of Art at WSU, offering rotating exhibits ranging from fine arts and crafts

to architecture and design, and explore exhibits to include fish, amphibians and reptiles at the Conner Museum in WSU’s Science Hall. The Palouse Discovery Science Center promotes science, math and technology literacy with the use of exhibits, educational programs, hands-on learning activities and more. There’s also the Museum of Anthropology, and the Staley Museum—the Staley home housed with personal family treasures of the Staley family. And, one for families not to miss is the one-of-a-kind Robert P. Worthman Veterinary Anatomy Teaching Museum located on the WSU campus. The award-winning Palouse Ridge Golf Club and Banyans restaurant are also located on campus on the ridge above, where you can dine in style with stunning views of the landscape and golf course. Nearby, in the tiny town of Palouse, The Bank Left Gallery features regional artists. Also near Pullman, Uniontown is a well-known arts and antique-store destination. The Dahmen Barn is a public-use facility hosting various artisans’ wares, offering classes and workshops to cultivate creativity on the Palouse, as well as hosting special events in the barn. With the surrounding wheel-collage fence, this local landmark is second only to the Great Wall of China as one of the most photographed fences in the world. Charming Historic Town Celebrates their Sesquicentennial in 2011. Located at the confluence of the Snake and Clearwater rivers, the mild weather of the Lewis-Clark Valley has long been an outdoorsman’s and recreational playground. This valley is where the route of the Lewis and Clark Expedition crossed the Snake River in 1805; hence the name Lewiston, and then across the river, Clarkston. Two cities, two states, just across the river from each other, are named after explorers William Clark and Meriwether Lewis. Lewiston, Idaho 2011 is the year Lewiston celebrates its 150-year anniversary! It’s a sesquicentennial, and with a host of historical-themed events, this year is sure to be a special celebration of all that is wonderful about this pioneering western town. Lewiston was the first city in Idaho to allow women to run for office and vote; and it is the site of Idaho’s first post office, brewery, newspaper, capitol, legislative sessions, public library, public schools, and the first telephone and telephone call in the Pacific Northwest! Lewiston first began as a commercial hub to serve gold mines further inland. It is Idaho’s only seaport and is the farthest inland seaport in the US. A levee system built by the US Army Corps of Engineers protects the downtown area where the elevation is only slightly higher than the river at about 750 feet above sea level. This levee system is now a vital recreation trail with several miles of paved paths perfect for rollerblading, walking, running or bicycling, with several picnic and play areas for enjoying outdoor gatherings. These two cities offer a variety of dining and entertainment options that are unique to their respective states and yes, their

own rendition of life along the Snake and Clearwater rivers. The Lewiston area of the Valley includes a charming downtown plaza, well-kept historic buildings and a vibrant night scene. With revitalizations of historic downtown buildings under way, downtown is quickly sprouting a few new dining hot spots. Coffee shops and wine bars, bakeries and eateries are filling many historic downtown spaces. Morgan’s Alley is home to a number of these including La Bohème, Matt’s Grill and the Lady in Blue Tea House. Towne Square, located at 5th and Main streets, is undergoing a major renovation, and the new wine bar, Jazzy’s, offers live music along with a great wine selection. Also in Towne Square lives a new bakery called Sugar Mamma’s. On Wednesdays, venture to the Farmer’s Market and watch for the summer “Alive After 5” dates to enjoy a street fair-like atmosphere with live music. Friday and Saturday nights offer a number of bars and dance clubs to choose from to enjoy the vibrant downtown nightlife. Clearwater Canyon is of one of North Idaho’s four wineries and is the only one using primarily valley-grown grapes in both Lewiston at the Umiker, Ellis and Nichols vineyards, and the Arnett Vineyard in Clarkston, as well as some others in Washington State. Here you can get a taste of wines grown right in the Lewis-Clark Valley. Plan to visit one of Lewiston’s most notable annual events: The Dogwood Festival and Art under the Elms in April, the spring NAIA Baseball World Series, Lewiston Hot August Nights, The Lewiston Roundup and Nez Perce County Fair in September, or the nation’s largest of its kind, the Snake-Clearwater River Steelhead Derby. There's also the Winter Spirit Christmas Lighting and the Lighted Boat Parade in November; and the Northwest Best Brewfest in August and Taste of Hops microbrew event in September are new events celebrating good beer, hoping to create a new annual traditions all their own. If you haven’t been to Lewiston lately, now is the time. Four seasons of recreation and family fun are awaiting your arrival. Hell’s Canyon jet boat tours, hot air balloon rides and helicopter tours will deliver natural beauty and bring excitement to your fingertips. A T rue T reat for the E ntire C ommunity Located in the heart of Lewiston, Idaho, Macullen’s Steak, Seafood and Spirit House offers a dining experience one won’t soon forget. It’s important—and necessary—for a restaurant to stand out, especially when there are so many options to choose from. Not only does Macullen’s compete with other local full-service restaurants and large chains, but also with the fast-food segment as well. Dollar for dollar, Macullen’s value is in offering a high quality experience that is easy on the budget as well. So how does a restaurant set itself apart to stand above the rest? At the family owned Macullen’s restaurant, owner Dan Aherin and his staff provide an inviting atmosphere with space for the after-work crowd, cozy booths for intimate dates and comfortable tables for families, along with room for business meetings and private banquets. “We want everyone to feel like a regular, and we want our regulars to feel like royalty,” says Dan. The building was originally built in the early 70s as a breakfast/ pancake house. Macullen’s opened April 22, 2005, following the closure of Jonathan’s in January of 2005. Dan worked at Jonathan's for eight years and had always been interested in owning his own restaurant. 30

The building went through a major remodel in 1999, and when they opened as Macullen’s, “the goal was to keep the good things that Jonathan’s was known for and improve the things that were holding it back,” Dan says. “We wanted to change the name and build a new identity similar to Jonathan's but more inclusive of a larger audience.” Macullen’s is named after Dan and his wife Desaree’s two sons; a combination of Maxwell and Cullen. “Our entire family was involved from the get go, so putting our kids’ names on the restaurant seemed like an obvious choice,” says Dan. When diners in the area are looking for a restaurant with an upscale atmosphere, Macullen’s is the first name that comes to mind. It’s the natural place for business people to bring their most important clients or to host a dinner for new recruits. But the Macullen’s ambience has sometimes also been an obstacle when it comes to capturing the casual dinner crowd. The perception of some is that linen napkins equal an exorbitant bill. But as Dan points out: “When you factor in the quality of the ingredients, the level of customer service and the diverse choices on the menu, we are the best

deal in town.” It is his ultimate goal to provide the area with the best dining value.

When it comes to choosing the quality ingredients used at Macullen’s, Dan makes every effort to find locally sourced products. “We strongly support the 3/50 Project which focuses on spending our money with as many locally owned businesses as we can. From Jim Moss at Northwest Specialty Meats and Basalt Cellars in Clarkston to Coco and Karl Umiker at Clearwater Canyon Cellars here in Lewiston, I get tremendous satisfaction in knowing that by supporting these local businesses I am ultimately helping Macullen’s carve out the local farm-to-table niche.”

Dan and his staff also participate in the Juvenile Diabetes Research Foundation’s Walk for the Cure. Both Max and Cullen are Type 1 diabetics, so during the month of September, the restaurant features a menu item and donates a portion of the sale of that item to Max and Cullen’s walking team.

Another aspect that sets Macullen’s above the rest is the importance Dan and his staff place on supporting their local community. Macullen’s has been involved with St. Joseph’s Regional Medical Center Foundation’s Winemaker Dinner Series for the past four years. This dinner features regional and local wines paired with special foods prepared by the talents of a local restaurant’s chef. Not only is it a great fundraiser for the foundation, it is also an excellent opportunity

According to Dan, Sliderfest reaches customers who perhaps would not normally choose Macullen’s as a place to dine on a regular basis. In October, the Lewis-Clark State College Women’s Volleyball Fundraiser brings the girls from the team to the restaurant to “work” for a night. They come up with a chef’s special menu for the evening, and Macullen’s and the volleyball team split the proceeds from the sale of those items. The team also holds a silent auction and performs some general public relations work for their program. Again, it’s a great night for the restaurant. Not only because they get to see new faces coming through the door, but also because the guests decide to come first and foremost for the fundraiser. It’s an opportunity for the restaurant to turn first-time visitors into regulars, making these event nights critical to the establishment’s success. Year-round Outdoorsman’s Paradise Originally named Jawbone Flats, Clarkston, Wash., is the gateway to the deepest gorge in North America, Hells Canyon, which is located in the confluence of the Snake and Clearwater rivers and surrounded by gently rolling hills. Basalt Cellars Winery Basalt Cellars Winery is the result of fusing science, art and welltrained palates with the passion for producing and enjoying great wines. The name—Basalt—was coined to represent both the geology of the Columbia Valley vineyards as well as the scenic vistas surrounding the winery site in Clarkston, Wash. Winemaking at Basalt Cellars starts with the highest quality grapes grown locally at Wasem Estate Vineyard and at selected sites around the Columbia Valley. Respect for the character of each varietal, as well as the vineyard terroir and vintage, are valued while gently steering the wine for balance, mouth feel and flavor. Traditional winemaking methods are used which include managing fermentation of reds in small open bins and punching down the cap (fermenting grapes) by hand two to four times daily; simultaneously, temperature, sugar level, aromas and acid chemistry are continually monitored. During press, a traditional basket press is used to ensure gentle expression of the wine. Reds are then aged in Bordeaux and Burgundy oak barrels for 17

to 36 months depending on the vintage, varietal and style of the wine. The last step in the process is the art of blending different lots to create unique balanced wines with age-ability to be enjoyed for years to come. Winemaker Dinners Bringing local wines and the areas most creative chefs together; the table is set! Want to try new wines but don’t know much about them? Want to try a lot of different wines in one sitting? In a perfect world, wouldn’t it be nice if they were paired with some very complementary foods? And, to throw in the icing on the cake, how about having it planned by a renowned local chef and the winemaker himself? Well yes, Virginia, there is a Santa Claus and yes, Virginia, when you grow up you can go to very stuffy sophisticated winemaker dinners. But that’s not what you’ll find here. Nope, winemaker dinners here are not at all stuffy; they are joyously fun celebrations of food and wine. They are gatherings of likeminded people interested in wines of a particular maker or theme; a party thrown by winemakers and chefs to bring their customers together to enjoy the tasting, tasting and more tasting. Winemaker dinners are indeed very sophisticated fun with food and wine, and the process is a collaboration between palates that will offer you the most incredible taste sensations while socializing with friends and getting the opportunity to meet new people who love wine and good food, too. The process of planning a winemaker dinner can mean the chef and winemaker sitting down with several food and wine items to pair, or the

winemaker offering the wine lineup followed by the chef preparing a menu with each course complementing a different wine. The winemaker will talk about the wines and the flavors you are about to enjoy, and the chef will introduce you to the food that was prepared to pair with each wine. It’s also a chance to meet these culinary experts and to let them know what a fan you are of their wines and menus. The chefs appreciate making that connection, as well as the chance to step out of the kitchen to enjoy the guests. As an added bonus, they can be very entertaining at the same time, relating stories and tips for the guests. The winemakers enjoy being able to introduce new wines or vintages in a very engaging setting. These dinners are a great value to the consumers who get to not only imbibe in a party of flavors they won’t find on any regular restaurant menu,

It’s a great way to support your local and regional wineries while benefiting from the chef’s creativity in offering a little something different from the usual menu. Attending a winemaker dinner is definitely a bucket list must-have. I had the pleasure of attending Wawawai (pronounced wah wah wee) Canyon winery’s very first winemaker dinner held in July 2010 at the winery. This rustic rural setting at the winery was picture perfect for a casual gathering complemented by a stunning menu presented by Chef Niki Pitsilionis and The Black Cypress crew. Take a look at the menu that follows and know that it simply doesn’t do the food justice. It was a pinch-myself-I-think-I’m-dreaming experience as each beautiful course magically appeared in front of me. Winemakers Ben Moffett and Christine Havens presented each course with a description of the paired wines, and Chef Niki introduced the food selections as his crew delivered the dinner before us with perfect timing and skill of service. The scene was welcoming and engaging, and the room was filled with good company. The music by Corn Mash was a delightful mix of their original music. All in all, I would say they’re off to a glorious beginning as hopefully a series of winemaker dinners begin. [SC]

Lionel Hampton Jazz Festival Uniting, inspiring and educating, one note at a time For nearly 45 years at the University of Idaho, the Lionel Hampton Jazz Festival has brought jazz masters together with elementary, junior high, high school and college students to share and celebrate a truly American art form of music. In1967, Jazz Fest debuted with a dozen student musicians and one guest artist—Buddy Brisboe. By 1981, the Festival had erupted onto the national stage. Performing that year? Ella Fitzgerald. Spectators packed in to hear the music. Jazz artist Lionel Hampton followed in the excitement, and in 1984, he and the Jazz Festival united, forming the Festival’s most important relationship; a relationship so strong that the following year, the Festival was renamed the Lionel Hampton Jazz Festival—the only jazz festival named for an African-American jazz musician. The Lionel Hampton Jazz Festival has grown from a one-day event to an amazing four-day experience and has featured hundreds of musicians from around the world including China, the Czech Republic, Portugal and Peru, as well as students from Canada, Japan, Russia and Kyrgyzstan. Now having hosted thousands upon thousands of students, spectators, and artists—including Doc Severinsen, Bobby McFerrin, Sarah Vaughn,

Dizzy Gillespie, Al Grey and countless musicians from around the world—the Jazz Festival is four outstanding days of student performances, workshops, clinics and remarkable world-class evening concerts. In 2006, John Clayton, renowned bassist, arranger, composer, jazz educator and longtime Festival friend, joined Jazz Fest as artistic director. Since taking the reins, John’s enthusiasm and passion has filled the hearts of directors, students, staff and friends. His job entails many components, as does any jazz ensemble: “[It is my job] to discover what talent is in the world, on the horizon, available to us, which our audiences would enjoy and should be exposed to,” says John. He helps get the ball rolling with communication between staff and artists. He puts together the educational components, working with Jazz in the Schools, assists in organizing clinics and workshops, contacting the artists personally to help inform them and understand what the festival is about, and meeting with the board of directors throughout the year. It may be a heavy load, but at the end of the day, it is with his help that the sounds of jazz fill the air. What makes the event so inspiring and well worth attending, according to John, is “witnessing and being a part of the exchange between young people performing jazz and the professionals that do it at such a high

world-class level. That exchange is so awesome to see; just to see their eyes light up and discover things that they never thought about, whether it’s about playing, or the history; all of that is incredible.” John’s goals for the evening performance are that they satisfy, educate and allow for discovery. “I want people to go away feeling good, to learn something on the conscious or sub-conscious level and to go away saying ‘wow,’” he says. The sounds of jazz inspire and unite, and one such partnership the Jazz Festival has found is with Wawawai Canyon Winery, which began in 2007. “We were looking for an opportunity to encourage the live local music scene, and the connection was pretty intuitive, given the Moffett family background in music and jazz,” says Wawawai founder and vineyard manager David Moffett.

English Department, who worked on the side as a musician while completing his Ph.D. degree at Duke University and whose Dozier-Jarvis Trio has a big place in the local jazz scene. David’s father was a family man who did not tour himself but was regularly picked up as a sideman by jazz greats who passed through on tour. “I can remember, as a young man, going down to a local dive to hear him back up Stan Getz,” says David. More recently, his dad played on several occasions with Bucky and John Pizzarelli, members of a musical family honored by the 2010 Jazz Festival.

Jazz music brings fond memories for David, namely those connected with his father. Growing up in a musical family—his mother a music teacher and father a graphic artist and jazz drummer— music seeped into his soul and became a part of him.

The concept of becoming a wine sponsor for Jazz Fest came from a mutual friend of the winery and the Festival who had explained that “the Jazz Festival was looking to improve the quality of the dining experience at the VIP events held during the Festival and backstage,” says winemaker Ben Moffett. “He proposed that we create a special label benefiting the Jazz Festival. … Long story short, we discussed which one of our wines the Festival might consider for a benefit label and hit on a cabernet-dominated blend in our 2005 vintage because it was the ‘jazziest.’

His father starting drumming at only 9 years old, playing with family members in the depth of the Great Depression. At one time or another, he played with every serious musician in the Raleigh-Durham, NC, area, including Dick Dozier, former chair of the University of Idaho

Jazz fest Blend has been part of our philosophy ever since.” Christine Havens, co-winemaker and director of marketing for Wawawai Canyon, is excited about the 2011 vintage that will be featured at this year’s event. “Formerly, we went for a silky, smooth blend to capture the mood of the Festival. This year we invited the Festival’s artistic director, John Clayton, to sit in on the blending session with us, and John thought that we should consider a spicy, powerful blend … to this effect, we will depart from former blends that were cabernet and syrah dominated and will produce a blend that is primarily carmenere and malbec.” Attendees can find the Jazz Blend, which has been traditionally released and served during Festival events, at After Hours, the Backstage Bistro and at the Wawawai tasting room. Usually only available for purchase at the Wawawai tasting room and via their Web site, the 2011 will be large enough, according to Christine, to be made available to regional restaurants and wine shops. “I wish [my dad] were here with us to see the venue we’ve created for live music at Wawawai Canyon Winery’s tasting room,” says David, “and the connection we have with the Lionel Hampton Jazz Festival today, but I like to think that, somehow, he listens in.” [SC] Stay tuned for the 2012 Jazz Festival. The Lionel Hampton School of Music is a close-knit community of prominent performers, teachers, composers and scholars who interact closely with dedicated and talented students. The Lionel Hampton School of Music, designated in 1987 in honor of the eminent American jazz musician, is an accredited institutional member of the National Association of Schools of Music. Established as a department in 1893, it was elevated to school status in 1969. A musically comprehensive and nationally competitive School of Music, students are provided with a learning environment in which they learn by performing, listening, analyzing and creating music. The faculty challenge students to achieve high scholastic and artistic goals. Together, the faculty and students create an atmosphere of professional awareness, mutual support, corroboration and outreach. Each year, the art of music is advanced through hundreds of concerts and recitals.
