There is no better motivation to hit the gym than new activewear. I love how activewear has become a wardrobe staple and is now considered ‘cool’ to wear any time. Whether it’s taking the kids to school or walking the dog, I practically live in my athletic gear and I am not alone in my obsession. According to Research and Markets, the world’s largest market research resource, the global women’s activewear market was valued at $174.29 billion in 2017 and is expected to grow at a compounded annual growth rate of 8.2 percent in coming years. At the high end, I can’t go past Lululemon and Lorna Jane for quality, but I love that you can now discover some cheapies (that actually last) at Kmart and Big W. Inspiring Entrepreneur LAUNCHES NEW PROJECT Deb Farnworth-Wood is one of Australia’s most dynamic businesswomen. The award-winning founder of the Australian Skin Clinics franchise has unveiled her latest project – the Ultimate Skin and Body Clinic in Ashmore. The 2017 Gold Coast Businesswoman of the Year talks about her latest venture. Most people know you as the founder of the world-leading franchise Australian Skin Clinics. What have you been up to in the last 12 months? I would love to say I have been taking it easy but that is something I don’t find easy to do. Instead I’ve been working on lots of smaller projects and really trying to take my time about choosing my next venture and thinking about what makes me happy. I’ve also ticked off a few bucket list items including trips to the Maldives and Bora Bora. Apart from my board role with Australian Skin Clinics which ended in December, I sit on the advisory board of an IT company called BitQ which provides business data amalgamation and analysis solutions. I’ve enjoyed this as it has drawn upon my previous experience in systems development. I have also been coaching and mentoring other businesswomen and written two books – Growing and Sustaining your Cosmetic Injectable Business and Growing and Sustaining your Salon and Spa. I have been keeping up-to-date with trends in the aesthetic industry and have been looking at other business opportunities that come my way. I’ve also been speaking at conferences on entrepreneurship, the largest of which was in Sydney to over 3000 people as a sideline to entrepreneur Gary Vaynerchuk. Wella also flew me to Tokyo to speak at their annual conference. The Ultimate Skin and Body Clinic opened its doors in February. Please tell us about the location and what your clients are saying. I exited the Australian Skin Clinics business in February but wanted to keep my original clinic in Cotlew Street, Ashmore, so I de-branded from all the blue and came up with a new name and concept. The name “Ultimate” was chosen by my husband Shaun because the dictionary definition 8 SLIM MAGAZINE AUTUMN 2019

means “being the best or most extreme example of its kind” and I always set high standards for myself and my team. The Ashmore clinic has always had a different clientele to the shopping centre clinics. It attracts discerning clients who prefer treatments in a discrete location rather than shopping centres. They look for more advanced treatments and a boutique environment rather than being in the market for discounted laser. So, although I grew a great high-volume brand in ASC, I have always known that the aesthetic market was so much larger and I am enjoying taking Ultimate Skin and Body to a different level. How does Ultimate Skin and Body differ from other licensed medi-aesthetic businesses? In some respects, the business has come full circle. When I started out in mediaesthetics, the industry was very niche – with no large brands. ASC was at the front of the industry in terms of business model and growth trajectory. I used to call us the ‘Robin Hood of Aesthetics’ because we were taking treatments that had previously only been available to the wealthy and famous and making them available to the everyday person on the street. I’m proud of what we did and, as a result, it will never again be fashionable to look old. However, the aesthetics industry offers so much more than laser treatments and microdermabrasion. The success of the ASC brand was its simplicity but there is still a market for the boutique clinic where more personalised service and tailored treatment programs will be attractive to those who prefer not to have treatments in shopping centres. With Ultimate Skin and Body, I have a different goal. We are not about volume or cookie-cutter style treatments because there is no one treatment alone that will turn back the clock enough. The best rejuvenation results require carefully constructed treatment plans utilising a number of treatment modalities to give the best result and Ultimate’s approach is very much about individual consultation and tailored treatment plans. Our consultations are 30 minutes for skin concerns and we

take the time to understand each client’s needs fully. We have also incorporated more body treatments because technology is getting interesting in that space too and we can now address cellulite, improve lymphatic drainage as well as treat loose skin and reduce fat. What are the main services being offered at Ultimate Skin and Body Clinic? We are all about optimum results so I have taken the time to ensure that we have the right modalities that treat different skin depths so that we can address all common concerns. New treatments include HiFu, an advanced Swiss Micro-Needling system, medical grade LED light therapy system with 6 light colours which means it will treat a wider range of concerns than most others, and an advanced skin analysis system. We are also introducing new advanced acne management protocols. Cosmetic injectables continue to be a core treatment, and of course, we do still have laser hair and rejuvenation treatments but whether you need plumping, smoothing, relaxing, filling, brightening or hydrating, we have something to address your aesthetic concerns. High blood pressure causes around 7.5 million deaths globally each year and many people are prescribed medication as a way of lowering their blood pressure. While it can be caused by a family history, high salt or alcohol intake, weight and a lack of physical exercise, Australian researchers are now hopeful that a more natural method could be used to treat people living with hypertension. Supplementing your diet with aged garlic extract may help our hearts as we age. A recent study, published in Frontiers in Nutrition Journal, found that Kyolic Aged Garlic Extract (KAGE) was highly effective in reducing blood pressure in patients experiencing hypertension. Aged Garlic and Heart Health Simply increasing garlic intake is not the key to lowering blood pressure.

“Unfortunately, increasing the amount of garlic in your diet does not lower blood pressure, because when you cook garlic it loses the active component, allicin,” said Dr Karin Ried, Research Director at the National Institute of Integrative Medicine in Melbourne. However, Kyolic Aged Garlic Extract could cause positive changes in pulse wave velocity, arterial stiffness, inflammatory markers and gut microbiota. “The mean blood pressure in patients taking two capsules a day was reduced by 10 mmHg systolic and 5.4 mmHg diastolic, which is the same as standard hypertensive medications,” she said. “We also observed individual patients whose blood pressure reduced by 40mmHg systolic from 160 to 120 mmHg, which is very significant.” According to a study published in the Frontiers in Nutrition Journal, Kyolic Aged Garlic Extract can significantly lower blood pressure in a way very similar to standard anti-hypertensive medications. According to the research, 60 percent of patients on standard anti-hypertensives report adverse side effects to the tablets, with doctors often finding it difficult to balance a patient’s medications. In such a saturated market of luxury skin care products, it can be hard to know what’s really worth it. At the top end of the skin care market, money buys the most exotic of ingredients – from truffle extract and rose essential oils to 24-carat gold and caviar extract – along with the promise of, if not eternal youth, at least a longer taste of it. However, skin care doesn’t have to be expensive. Faye James, author of The Long Life Plan, takes us back to basics with fuss-free beauty tonics and lotions you can make at home.

Nourishing Moisturiser

According to food, beauty and health journalist Faye James, the key to a good moisturiser is to keep it simple and give your face a good massage while blending into the skin. Heat shea butter and avocado oil over hot water and heat over a medium flame until melted. Pop mixture in a bowl and place in fridge for about 20 minutes. As the mixture starts to thicken, add essential oils, Vitamin E oil and rose water and whisk well. Spoon into a clean jar and keep in the fridge.

Make up a litre of boiling water. Add several green tea bags and grated ginger. Leave to infuse for five minutes. Remove tea bags and let cool. Drink throughout the day, along with at least 2 litres of water.

Tips for Finding a Perfect Sports Bra

Digging in your sides, sliding off your shoulders, chafing – no one wants to deal with bra issues while working out. A poorly-fitted sports bra is not only uncomfortable but can cause pain that lingers long after a sweat fest. When it comes to sports bras, professional bra fitter Tish Tily says you get what you pay for. “Bras available in mainstream retail are often the cheaper, lighter, stretchier models that sell well because they feel comfortable instantly,” she said. “Retail stores love this as it’s cheap to buy and easy to sell. A lot of the boutique brands that produce high-quality products are hard to find in Australian retail stores, so you have to hunt around. You can expect this to be a bit more expensive, but you’ll make up the extra money in a much longer lifespan.” If your bra is worn and washed three times a week you can expect its useful lifespan to be 9-12 months. Tish advises a professional fitting every time a woman buys a bra or if they have gained or lost more than five kilograms.

“If you’re feeling like you need to tighten straps, poke breast tissue back in or clip up the hook and eyes to the tightest setting then the size, shape and fit are not right for you,” Tish said. “Your sports bra should be near enough suctioned onto you. While we don’t want it to be too tight, if it’s feeling loose then it’s likely the wrong size.” Adele Kershaw, the head designer of Innovation at Berlei, said a poorly-fitted bra can bring health risks. “Scaring under the breast is a common problem if the bra is far too tight,” she said. “This is caused by the bra digging into and rubbing on flesh. Lack of support in the bra frame adds extra pressure on the shoulders and chest and this can cause complaints in the back, shoulders and neck.”

From the gold rush to the Golden Gate, San Francisco is a treasure trove of captivating neighbourhood sights and world-famous landmarks. Lara Frawley explored the postcard metropolis. “The Bay area is so beautiful, I hesitate to preach about heaven while I’m here.” This quote, by the late American evangelist Billy Graham, sums up the first impressions many people have of San Francisco: a city of hills and valleys, of dreamers and innovators, of hippies and hipsters. Nestled between the Pacific Ocean and the picturesque Bay, San Francisco is surprisingly small. It is a city of only 18 square kilometres and boasts 43 hills that are vantage points for the spectacular views pictured in movies and travel guides. Despite its size, choosing accommodation in San Francisco can be confusing for the first-time visitor. For those with a car, the Marina District, with its worldfamous Fisherman’s Wharf and views of the Golden Gate Bridge, is a good option. Without a car, downtown is ideal because so many attractions are within walking distance: Union Square Shopping, North Beach (Little Italy), Chinatown and scenic Nob Hill. If you’re seeking a room with a view, the Hilton in Union Square offers a spectacular vista of the skyline and the Bay. Visit the hotel’s top floor – the Cityscape Lounge on level 46 – for unobstructed 360-degree views of the skyline, the Golden Gate Bridge, and a menu that is so long that the drinks are listed in alphabetical order. Despite the temptation to jump in a tram or pedicab, San Francisco is best explored on foot. Walking the streets is like a treasure hunt, with unique and interesting gems around every corner. It’s all there to discover: the history of the construction of the city, the destruction caused by the great earthquake and fire of 1906, and how the rebuilding created one of the greatest cities in the world. Market Street is San Francisco’s first boulevard. Dubbed the “Path of Gold” as it was rebuilt after the earthquake, the

26 SLIM MAGAZINE AUTUMN 2019

street is lined with historic buildings, monuments and art deco skyscrapers. The California gold rush began in 1848 and led to a population boom. Within two years, the population of San Francisco grew from 1,000 to 25,000. The population increase included many workers from China who came to work in the gold mines and went on to build the Transcontinental Railroad. The Chinatown district of San Francisco became – and still is – the largest Chinatown outside Asia. Beyond iconic Dragon’s Gate is a vibrant maze of streets and alleys brimming with dumpling vendors, lacquered ducks and energetic vendors selling hand-pulled noodles. During my visit to Chinatown, the sidewalks were so crowded and chaotic that the only respite was to walk into a shop. Worried about losing our kids in the foot traffic, we pushed our way into a store and bought half a dozen juicy Californian-grown oranges for a few dollars. San Francisco as a whole is roughly one-fifth Chinese, one of the largest concentrations outside China. Many businesses founded to service the growing population are still around today, notably Levi Strauss and Co clothing, Ghiradelli chocolate, and Wells Fargo Bank. Another favourite destination for locals and visitors alike is the Ferry Plaza Farmers Market along the waterfront north of downtown. The fruits, vegetables, meats, cheeses and fish sourced from around the Bay Area are a foodie’s delight. Make your way to The Mission District and you’ll feast your eyes on one of the highest concentrations of street art of any neighbourhood in the world. Over 500 murals from the early 1970s through to today touch upon a variety of themes from the social and political, to the historical and fun. The newest artworks reflect ongoing unrest between the city’s working class and

Silicon Valley’s commuting class. To fully appreciate everything this magnificent metropolis has to offer, you’ll need at least a week. If you only have a few days, the highly-rated Alcatraz Island tour, Pier 39 and the Golden Gate Bridge are worthy destinations. Alcatraz must be booked up to 90 days ahead to guarantee a spot. Once home to some of America’s most notorious criminals, the federal penitentiary that operated on the island from 1934 to 1963 brought a dark mystique to “The Rock”. The presence of infamous inmates, such as Al Capone, helped to establish the Island’s notoriety. Renting a bike and riding across the Golden Gate Bridge to Sausalito is another must-do. You can return to San Francisco by bike or hop on the ferry with your bike. The latter option will give you the opportunity to scan the horizon and reflect on the incredible journey you have just experienced. Make sure you take a jacket as it can get cold and windy on the bridge, even in the warmer months. GOOD TO KNOW • Download a self-guided city tour app; it’s the most interesting way to explore this vibrant city. • A fun and historic way to get around San Francisco is by cable car. There are three cable car routes in operation and they cover the most important landmarks. • Make reservations for Alcatraz at least two months’ ahead. • San Francisco is famous for its fog, which is heaviest in June and July. April and October have the clearest skies and moderate temperatures. • Hotel rates are lower in winter.

Brain Changer: The Latest Cutting-Edge Science on the Link Between Diet and Mental Health In an era of information overload and ‘fake news’, many of us no longer know what to believe when it comes to health. Professor Felice Jacka’s love of food led her to question whether what we put in our mouths every day affects more than our waistline. She set out on a journey of discovery to change the status quo and uncover the truth through rigorous science. Beginning her PhD in 2005, Prof Jacka examined the association between women’s diets and their mental health, focusing on depression and anxiety. What she found fundamentally changes the way we think about mental and brain health, and the importance of the nutrition-mental health link. By Professor Felice Jacka Diet quality is related to Australian women’s mental health My PhD study showed that women whose diets were generally higher in vegetables, fruit, unprocessed red meats (beef and lamb), fish and whole grains were less likely to have clinically significant depressive or anxiety disorders, whereas those with a more ‘Western’-type dietary pattern, higher in processed and unhealthy foods such as meat pies, processed meats, pizza, chips, hamburgers, white bread, sugar and flavoured milk drinks, had more depressive symptoms. These relationships were not explained by any of the other factors we considered and were quite consistent across the age range. 32 SLIM MAGAZINE AUTUMN 2019

Interestingly, we also identified a third (less common) dietary pattern that was high in fruits and salads plus fish, tofu, beans, nuts, yoghurt and red wine, and this pattern seemed to be weakly associated with more depression. This was unexpected and warranted some more investigation, which we undertook. I’ll tell you what we found in Chapter 11 (hint: it relates to red meat). While I, of course, was excited by the findings but not particularly surprised, the rest of the psychiatric community was rather surprised. Because this was the first time this link had been examined or shown, the study generated a lot of interest and excitement. Indeed, not only was it published in the leading scientific journal, The American Journal of Psychiatry, where it also featured on the front cover, but it was voted number one of the top-ten scientific studies in psychiatry for 2010 by the online resource Medscape. You can imagine how pleased I was about this! There must have been something in the air; in a lovely bit of serendipity, two other similar studies were published at almost exactly the same time in the other two leading journals in psychiatry research. Diet quality is related to depression in other populations The first of these studies, led by another research colleague and (now) friend of mine, Professor Almudena Sánchez-Villegas in Spain, examined information from more than 10,000 Spanish university graduates participating in a study conducted over many years and focused on the Mediterranean diet.

For this study, the researchers assessed how closely the participants’ diets resembled a traditional Mediterranean diet (Spain being, of course, a Mediterranean country). Rather than undertaking a psychiatric assessment, the participants were asked whether they’d been diagnosed with depression by a medical practitioner or were taking antidepressants, which meant the method used to ascertain depression wasn’t quite as rigorous as ours. On the other hand, this study had many aspects that made it extremely valuable: first and foremost, it was ‘longitudinal’ in nature. This means that diet was assessed at the start of the study and anyone who already reported depression wasn’t included in the analysis. Then the people with no previous depression were followed up for more than four years to see who developed depression. This is important, because it’s possible that the relationships I saw in my PhD study were due to people eating differently because of their mental disorder. We know that appetite changes are very common in people with depression – some lose their appetites, while others crave sweet and fatty foods. Interestingly, experimental studies in animals show that foods high in fat and sugar actually dampen the stress response; in this way, they may act a bit like a drug or other short-term stress-relieving strategies, such as smoking or drinking too much alcohol. So being able to tease apart cause and effect with a longterm study was very useful. These researchers found that people whose diets most closely resembled the traditional Mediterranean diet were much less likely

to develop depression over the duration of the study. In fact, those participants in the highest categories of the Mediterranean diet score were roughly half as likely to develop depression as those who scored low. This was after considering many other important factors, such as gender, smoking, exercise, marital status, employment status, physical health and any medical conditions. This suggested that eating a Mediterraneanstyle diet might actually prevent depression occurring in the first place. Professor Sánchez-Villegas has also found that fatty acids are related to depression. She studied saturated fatty acids, which are mainly found in animal foods such as meat and dairy foods; polyunsaturated fatty acids, found in many plant foods as well as seafood; trans fatty acids, artificial fats created as part of the process of making many Western-type foods (cakes, biscuits, pies, margarines); monounsaturated fatty acids, found in avocados, olives, olive oil and nuts; and other culinary oils, such as seed oils, butter and margarine. She found, perhaps unsurprisingly, that both poly- and monounsaturated fats seemed to protect against the development of

depression, while the trans fats, which are an established risk factor for heart disease, had a very clear relationship with depression; the more people ate of these types of fats, the more their depression risk increased. This was backed up by another piece of research from the same study, where people who ate foods high in trans fats, such as commercially available muffins, doughnuts and croissants, had an increased risk of developing depression compared to participants who avoided them. It’s reassuring to note that, due to increasing awareness of the danger of processed trans fats to heart health, many countries have reduced or removed them from the food supply. While they were very common – particularly in the American food supply – up until recently, over the last few years they have begun to be phased out and are not now commonly present in most foods in many countries. The exception would be some of the cheaper baked goods (muffins, doughnuts, cakes) found on our supermarket shelves. Watch out for the terms ‘vegetable oil’ or ‘hydrogenated’ on the ingredients list, as well as palm oil, the processed form of which is bad for both our health and that of the environment. I once tried a doughnut at an airport from one of those companies that specialises in making them and found that it left my tongue coated with a really unpleasant film of trans fat. Gross. The third study looking at dietary patterns and depression was conducted by another colleague and friend of mine, Dr Tasnime Akbaraly, in nearly 3500 British public servants. Like the previous study, it followed people over time. The depression risk in people with a more ‘wholefoods’ dietary pattern, who regularly ate lots of vegetables, fruits and fish, was reduced by roughly a third, while the depression risk in those with higher scores for a Western dietary pattern of sweetened desserts, chocolates, fried foods, processed meats, pies, refined grains and high-fat dairy products was increased by more than 50 percent. In fact, the results were quite remarkably similar to ours. And again, they did not seem to be explained by other factors, such as income or education, and nor was there evidence that they were the result of people eating differently because of their depressive symptoms. These three studies had a big impact on the field of psychiatry research, prompting many other researchers around the world to investigate this possible link between overall diet and common mental illnesses. One of the reasons why the field of what we call Nutritional Psychiatry has advanced so quickly is that there were already many populationbased studies that had collected information from people about their diets as well as their mental health, but these two key factors

had not previously been put together. Researchers had done a lot of work to examine the role of diet in various physical health conditions, but not in mental health. Because so much information was already collected, it was possible for scientists like me to do the necessary analyses relatively quickly, and this started to result in many papers on the topic. For me personally, having my PhD research published in such a high-profile way meant that I was in a far better position to ask for collaboration with other researchers in Australia and overseas; this allowed me to really fast-track my research program and the development of the evidence base. I passionately wanted to do this, as – to my mind – it was of extreme importance to public health.

WHAT IS THE MEDITERRANEAN DIET? The traditional Mediterranean diet has by far the largest and most consistent evidence base for health benefits. It’s high in a wide variety of plant foods, such as colourful vegetables, fruits, a wide variety of leafy greens such as rocket, spinach, dandelion and mustard greens, kale, nettles and purslane (many of which are considered weeds in non-Mediterranean countries, but are wonderfully rich in nutrients and bioactive compounds), wholegrain cereals such as barley, buckwheat, millet, oats, polenta, rice, breads, couscous, pasta, raw nuts, legumes such as lentils, chickpeas and beans, and lots of olive oil. It also incorporates lots of fish, a little bit of red wine and dairy foods, and a low intake of red meat. Traditionally, of course, this type of diet tended to be home-cooked and eaten with friends and family in a relaxed setting. It’s likely that this is one of the many reasons why it’s so beneficial.

Not particularly. I was well liked within my peers and most of what was said to me was light-hearted banter. How has your weight fluctuated over the years and how did you feel emotionally and physically when you were overweight?

It fluctuated around 130 kilograms in my late teens and early 20s and began to take an emotional and physical toll on me. I became more sheltered which in turn caused anxiety, hurt my self-image and impacted me emotionally. The physical toll goes without saying. I struggled for breath and day-to-day activities, such as walking to work or university, became overly laborious. What methods did you use to try to lose weight and were they effective? Despite eating well, and with well controlled portions, I believe my methods were ineffective. This was primarily due to physical inactivity and poor choices. I was told about certain plans of dieting such as lower carb and processed food diets by my

doctor, but with limited success, so my journey to reaching a weight-loss goal could never be achieved. Did you experience health problems? I had issues with insomnia and was exhausted pretty much every day. I would wake up groggy and moody. I was often tired by mid-afternoon and consistently failing deadlines became my day-to-day life. What made you decide to undergo weight-loss surgery? The positives outweighed the possible negatives in every way. Primarily, I did it for self-esteem and to enable myself to live a happier and healthier life. My father, Dr Robert Muir, suggested the surgery one to two months out and I considered it quite quickly. My surgeon and his team were fantastic and gave me the motivation to go through with it. What type of procedure did you choose? Laparoscopic Sleeve Gastrectomy. Being the weight and age I was, it made more sense to approach the sleeve gastrectomy rather than any other surgery that was highlighted by my surgeon, such as the Gastric Bypass. When did you have your procedure? 9th July, 2018. How did you feel in the weeks and months following the surgery and would you describe your surgery as a success?

I’d say almost instantly I could describe my surgery as a success. My surgical team provided me with a fantastic experience, and I barely ever felt sick or rundown post-surgery. Within two weeks I was physically able to work and within two months I was 100 percent recovered.

What do you say to people who say weight-loss surgery is the “easy way” to lose weight?

On the surface it seems like it’s the easy way out, however I’d have to disagree. It takes a lot of mental preparation pre-surgery, culminating in life-changing positives. How has weight-loss surgery changed your life? In more ways than one. It’s hard to describe in a few words what the weight-loss surgery has done to my life. Despite being a very open and quite confident person, it has helped me immensely in situations like social outings with general conversation. I found out I also like being in photos now. Not only that, my mental health has changed dramatically. Having suffered general anxiety and panic attacks over the last couple of years due to weight and other personal issues, the surgery provided me with clarity and gave me more confidence in my stride, really helping me with issues I used to struggle with. Has it been difficult to adjust to smaller portion sizes and other lifestyle habits? Initially it was a challenge, but over time it becomes methodical. Meal preparation becomes fun and exercise becomes rewarding rather than an uphill struggle. Are there any people who have inspired you along the way? My family are big motivators and my good friends Nick, Sam, Joseph, Evan, Nigel and Zac.

What are your favourite meals? My favourite meals for portion control and lifestyle are chicken, avocado and a spiced rice with chilli sauce. They are my go-to foods. For breakfast, I enjoy an egg on toast spread with avocado and chilli. Do you have a message for others who are reading your story and battling with their weight? No weight-loss journey is the same. Take it one day at a time. Anyone and everyone are capable of changing poor habits. It’ll be worth it!

Is Weight-Loss Surgery Right for You? Known as bariatric surgery from ‘bari’, a Greek word for weight, it is regarded as the most effective way for obese people to shed excess kilos. Maybe you or a loved one are contemplating bariatric surgery, or your doctor has mentioned that you might benefit from a gastric bypass procedure. Naturally, you may be wondering: What success can I expect to have? How much time will I need off work? What are the risks? Dr Jason Free, one of Australia’s most highly-regarded experts in weight-loss surgery, provides the latest information on this rapidly growing surgical field.

Around 1.4 million Australians meet the criteria for weight-loss surgery and increasing numbers are having it each year. How do you explain the increase? Weight-loss surgery has become extremely safe these days, and the process has very minimal interference on your working life. Most people I see in the weeks after the operation are surprised at how easy the process was and wish they’d done it sooner. The great medical benefits and improvements in lifestyle after weight-loss surgery are now extremely well-known worldwide, and there is less concern about things going wrong. There is a vast amount of evidence demonstrating the long-term failure of relying on dieting and exercise regimes at getting to a healthy BMI in obese individuals. Weight-loss surgery is currently the only intervention that provides sustained long-term significant weight-loss. Since so many people have successfully had procedures, there is much less stigmatism regarding having an operation for weight-loss. Many people these days are extremely proud of their success. Weight-loss surgery is recommended for people with a BMI of 35 who have a significant disease that can be cured by weight-loss, and for people with a BMI over 40. Do you think it should also be available to people with a BMI of 30 who have significant illness that can be cured by weight-loss? These BMI figures are guidelines, arbitrarily made as these cut-offs are roughly where the long-term benefit has been proven to be extremely beneficial for improving health and prolonging life. Above these BMI figures, cost benefit analysis demonstrates that in the longterm the patient, the health system and therefore the government will all be better financially if the patient undergoes weightloss surgery, as there is much less strain on the health system. We must not forget the immense improvement in mental health, quality of life and improved self-esteem and productivity that weight-loss surgery offers, all benefiting the patient and community. These effects of the surgery are hard to objectively demonstrate. We should be offering this surgery to anyone who we can demonstrate will have a benefit. Have you worked with patients in the lower threshold? I see many patients in this category. Many people notice their weight is gradually increasing every year despite best efforts to keep it down. It is common to offer weight-loss surgery to people in this lower threshold as it is almost inevitable that their BMI will eventually rise. Evidence does show that if we can prevent major comorbidities from developing by offering weight-loss surgery early, these patients will be much better off than waiting till they have developed problems

and then trying to reverse these issues, often when it is too late. Although obesity is a chronic illness, it is commonly perceived as a moral failing, with many people regarding surgery as an easy way out. What are your thoughts on this? Surgery should not be considered as an easy way out. Most patients go through the process and operation with very little effect on their usual life. They must, however, take it seriously and use the process to improve their health and lifestyle overall. Our team offers a holistic approach to weight and lifestyle management. How safe is weight-loss surgery? Weight-loss surgery is extremely safe. This is one of the reasons it is becoming increasingly popular. The operation is keyhole with minimal pain. Almost everyone goes home within one to two days and back to work within a week or so. The operation is actually safer than going into hospital to have your gall bladder taken out. There are potential risks however any major problem leading to a prolonged stay in hospital or further interventions happens in less than one in 200 patients. What are the risks associated with weight-loss surgery? The most common issue following weight-loss surgery is about a quarter of patients feel some nausea for the first 12 to 24 hours after the operation, however this always disappears. Major risks are extremely rare. Like any operation some people can have bleeding, infections in the abdomen or at the skin incisions. These occur in about one in 200 people. Very rarely the stomach may not heal properly, causing a ‘leak’, however this is extremely rare occurring in less than one in 500 patients. Less than one percent of patients stay in hospital for more than the usual one to two nights post-op. Is it true that people can go into diabetes remission following weight-loss surgery? This is true. Many patients can get completely off all their diabetic medications and these are often the happiest patients I see. There is a much better chance at eliminating all diabetic medications and complications if the surgery is performed early after diagnosis. Are there any other health benefits associated with weight-loss surgery? There are a multitude of medical benefits. We commonly see improvements in high blood pressure, high cholesterol/ lipids, sleep apnoea, asthma and arthritis. Weight-loss surgery also increases fertility in many women trying to conceive. Many people have completely unrelated medical issues which we don’t expect to improve after weight-loss surgery which actually do

for unknown reasons, such as headaches/ migraines, autoimmune disorders and psychiatric disorders. There are definite improvements in mental health, quality of life and improved self-esteem and productivity after weight-loss surgery. How safe is weight-loss surgery after age 60? Weight-loss surgery is extremely safe in this age group. The operation is the same regardless of age. People in this age group may have higher rates of heart and lung disease than younger groups, however this almost never causes a problem and does not make process unsafe. Our team is accustomed to dealing with medical problems associated with weight and age. How much time would you recommend off work for someone looking to undergo weight-loss surgery? If you work from home you can get back to work within one to two days. I have occasional patients who I see on their laptop on the ward the morning after their operation busily working away. Most people with a desk-type job would go back to work about seven days post-op. If you have a job requiring a substantial amount of activity such as walking, driving and standing for long periods then I would recommend two weeks off work. Can patients expect to keep the weight off years after surgery? Most patients maintain their weight-loss for the long-term. The natural course after weight-loss surgery is for the patient to lose massive amounts of weight in the first 12 months. Often after one to two years people may regain small amounts of weight – a couple of kilograms or so. This is the body’s way of trying to adapt to the change that the surgery has caused. Once your body realises there has been a major change, it tries to get back to its ‘set-point’ weight by absorbing more nutrients and other mechanisms. I keep telling my patients we’re fighting against mother nature! With the increasing popularity of the Sleeve Gastrectomy operation worldwide, we are seeing more patients who have lost a lot of weight, however regained significantly more weight years later. This is a concern in people with very high BMIs, i.e. over 45, and this group would be more suited to one of the many types of bypass operations as they have much lower rates of later weight regain. I do perform a lot of revisional surgery in patients who have not lost as much weight as they had initially hoped for, aiming to get their weight down again with extremely good results. It’s important to know that if you have had a poor experience with previous surgery there is almost always something we can offer to improve your result.

Why are we so angry and what can we do about it? Have you ever wondered why everyone seems to be losing their cool? From road rage to the bickering on Married at First Sight, it seems that anger has become the dominant emotion in our lives. We are out of control, irrational, fighting, breaking up, losing friendships and having outbursts. So why are we behaving so badly? We are living in a community where our frame of reference has become distorted. Perception of people’s lives through their ‘perfect’ posts on social media impact our emotional wiring and intelligence as we expect more and tolerate less. Globalisation and automation – the state or condition in which activities are carried out automatically, especially by electronically controlled systems – have made us more complex, more intolerant and vastly more alone. Research shows that three out of four adults believe we are becoming angrier. Biologically and socially, we’re not coping. Aggression is on our doorstep and when we invite it in, we respond with more anger and violence. We have fallen into the ‘hot spot’, and like most flames, we can fan them to inferno in the tone of envy, frustration and trying to keep up and keep going. We’re left with the empty feeling of not quite being there and it’s a fertile ground for anger. Have you been so mentally fried that you can’t remember what comes next? Has your body felt fatigued but instead of listening to it you’ve turned to caffeine and energy drinks to keep it cooking and wired? Frying your body and brain is not just a metaphoric term. The ‘hot spot’ is a self-engineered spot we fry up and anger is part of that. You can literally sizzle your nervous system, overload your mind and overcook your body. When you throw bad food and preservatives into the mix, on

high-speed automation, you have a recipe for disaster. Consider the energy that you are putting into your mind and body. Is it adding to the inferno or cooling your emotional system from the next catastrophic meltdown? Try taking out stimulants and do not to buy into the excuse, “It’s hard to stop.” It only takes three weeks to kick a habit cycle. One of the most pressing questions we ask those we work with in my two organisations around mental agility training is: Are you in control of your body and automation; and does automation run you? We can’t choose other people’s behaviours or responses, but we can choose our own. It sounds cliché but we don’t need to boil up the hot spot or our control. It’s great to be assertive but a complete boilover may cost you many things. Get some relief for your brain when you need it most. This will allow for more space, focus and clarity for you to evaluate what causes you stress. Tarzan taught us a great trick. Between your breast plates is the thymus gland. It helps fight off illness and produces the important T cells that play a role in our immunity. Giving this gland a thump can stimulate the immune system – we just forget to do it. The Optimisation Hub uses this among nine other easy exercises to master your body in times of highperformance activation. Another tip is to understand your communication style. We can have up to 60,000 thoughts a day – that’s one thought a second for a 16-hour working day. Listening to the little voice in your head and creating a positive internal dialogue can help regulate your internal heating system. Learning to manage your internal dialogue is important for mental well-being, and potentially, success in life.

CAN TAKE A PAINFUL WEIGHT FROM YOUR LIFE Large breasts can make it difficult to play sport, find clothes that fit properly and cause health problems. As a surgeon, I am honoured to be able to provide an option for women who are feeling demoralised due to the size of their large breasts. Breasts come in a wide range of shapes and sizes. There is no right or wrong. For some people, however, large breasts can affect their quality of life. From neck, back and shoulder complaints to sweating and rashes, it’s not easy carrying extra kilos on your chest. Breast reduction surgery, although not uncommon, is often misunderstood. Some people opt for breast reduction surgery to relieve pain. Others may want to reduce their breast size for cosmetic or psychological reasons. Our patients often tell us that after their breast reduction they feel more confident and have a higher self-esteem. Fans of reality TV might remember Ali Oetjen. The Bachelorette star has been open about her desire to remove or reduce the size of the implants she got nine years ago. Ali discussed the topic with her Instagram followers, telling fans that she doesn’t feel comfortable with her breasts. “It’s a personal thing but knowing I got them for the wrong reasons, I don’t 42 SLIM MAGAZINE AUTUMN 2019

want any girl to go through that same thing so that is why I wanted to share (my experience),” Ali said. Belinda (not her real name) is one of my patients. The 53-year-old had breast implants for 10 years before having them removed in 2018. Belinda hated her implants from the start. “They were too big for me,” Belinda said. “I started at a size B and ended up with DD/E. From the moment I had my implants I was thinking of explanting. The reason it took me so long to have them removed was because of my memory of the pain of getting them in. I had back pain, migraines and felt like I couldn’t breathe.” Belinda was nervous when she took the big step to have her implants taken out but after a three-hour procedure and a virtually pain-free recovery, she hasn’t looked back. “I find I’m looking at women with large breasts or implants and I want to say to them, if you’re in pain or discomfort have them removed,” she said. “It’s the best thing I have done for my health. No more neck or shoulder pain. I feel so much lighter. My posture is better too. Explanting was the gift I gave myself in 2018.”

What is a breast reduction? Breast reduction surgery, also known as reduction mammoplasty, can help reduce the weight and volume of the breasts. It involves removal of the fat, glandular tissue, and skin from the breasts, followed by reshaping and repositioning of the nipples. Who would be considered for breast reduction surgery? Those who feel like their breasts are disproportionate to their body size, have uneven breasts, or suffer from back, neck and shoulder pain. Heavy breasts might result in an inability to participate in various physical activities. Those who suffer from skin irritation or poor posture would also be considered. Can scars be minimised? Scars are a common side-effect of breast reduction surgery, but their appearance and visibility largely depend on what the patient is trying to achieve. I have battled with my weight on and off all my life. Were you overweight as a child? I was an average weight as a young teenager and child. I remember being force-fed all the time and allowed to eat the wrong foods. My parents, born overseas, thought that we would starve living in Australia so saying no was not an option. We would walk to school and back and eat lollies on the way. As I grew older, I was taught to use food for comfort, so it was like medicine for me. I would use it to treat every stress in life. I had no discipline and my dad would bring me fish and chips for lunch and hamburgers thinking it was acceptable. For most of my adult years I was overweight and yo-yoing. At your heaviest, how would you describe your relationship with food? When I was at my heaviest – almost 150 kilos – I could not differentiate when I was physically hungry, and I would eat anything in sight and without thinking about why I was eating and what the longterm ramifications were. Innovative, fiercely feminine and never boring, Sonia Stradiotto is very much like her clients describe her: instantly recognisable for the hallmarks of intricate detailing and precision tailoring. This year marks 30 years in the fashion industry for the flamboyant designer. How does it feel to be celebrating 30 years in the fashion business? It has passed in the blink of an eye. When you’re doing something you love, you need never work a day in your life, as they say. Fabrics, technology, my inspiration and my beautiful clients are ever-changing and that keeps me on my toes and evolving. Fashion, style, people – a wonderful combination. It’s never boring and always satisfying. How are you celebrating your milestone? Being more creative than ever before. There will be several events in 2019 which is devoted to celebrating 30 years of wonderful relationships. The main event is my Gala Charity Runway Show at RACV Royal Pines Resort in May. When did you become a fashion designer and what attracted you to the profession? I was born into fashion. It’s in my blood, with a tailoress mother and showbusiness father. I couldn’t help being a blend of them both! I share my birthday, 19 August, with Coco Chanel, so maybe this passion for design is a Leo thing. Whatever it was, designing and creating beautiful feminine garments came naturally to me. Who taught you to use a sewing machine? My mother. What has been the most rewarding aspect of your career? Never the awards or praise, always the people. Building relationships, true friendships that have lasted three decades. I have dressed women for their engagements, weddings, anniversaries, special occasions, then a cruise collection for their first trip away after their divorce! It’s all part of life! We have laughed, cried and celebrated over the many years and that’s what bonds us as women. 48 SLIM MAGAZINE AUTUMN 2019

Your brands have evolved and diversified over the decades. What’s the secret to reinventing yourself and surviving in the fashion industry? My inspiration changes as the seasons do, from my travels, my own experiences, exposure to cultures and new fabrics, my brilliant network of suppliers and their constant innovation. Together, those things make a special formula to keep my brands fresh and thrilling for my customers. You have spent the last three decades empowering women through fashion. After all these years, do you still wake up in the morning feeling invigorated by the thought that you have a higher purpose? Absolutelyt! I am first and foremost a proud and passionate wife to Craig, and a mother to James and Bianca. I love my friends and I feel everything I do needs to have meaning, effect change, both for my clients and my community. That’s why I have a charitable aspect to all my events and undertakings. I love what I do. I believe clothing empowers women when it is designed with not only the occasion in mind, but the woman herself – her lifestyle, her attributes and her attitudes. How many garments have you designed during your career and do you have a favourite? Thousands upon thousands. Like children, I don’t pick favourites! Every era is represented by various ‘favourites’, and many of those still stand the test of time. The one staple I can identify as a standout would be my glamorous iconic black tuxedo jacket, which has had many incarnations over 30 years. You can wear it for all occasions, at all stages of life and at any size and it will boost your morale and never be out of place. As a woman working specifically to create for other women, it’s impossible to not consider recent culture-shifting events — #MeToo and the uncertain political climate. Women wear clothes to feel empowered, to feel safe, to feel comfortable, to feel proud, to feel like themselves. How do you see your role in 2019? My focus has always been on the place and the value of women, whatever they choose to do in this life. I have dressed politicians, celebrities, athletes, high profile entertainers and media identities. They are all so diverse but have one thing in common with all women – the right to be heard and taken seriously, whatever their profession or position. That has endured over my 30 years in business. In 2019, my

belief is burning just as brightly. In 2019, I will be introducing a new range of travel and lifestyle essentials in black jersey and black velvet. They are the ‘must haves’ that will save you the stress of deciding what to wear and give you the freedom to get out the door and on with life. Your designs have been worn by celebrities on the red carpet and by women from all walks of life. Why do your customers keep coming back? I offer them discretion, quality, originality and the true ‘integrity of the cloth’ which is my motto. I analyse them and pick the right dress for them. They enjoy the full ‘Cleopatra experience’ of being my all when they’re with me. There’s no BS. I will never let them leave looking like the dress is wearing them. If you weren’t a fashion designer, what career path would you have chosen? Acting, which is what I am trained in.

Movies: Pretty Woman, True Lies and the Lady Gaga version of A Star is Born which was epic. Book: I read fashion magazines and books about fashion designers. The only book I cherish is the Bible. Ultimate weekend: Cooking for friends, having family and friends to my home and creating a feast for them. Cooking is my therapy. If you could invite three famous people to a dinner party, who would they be? Sylvester Stallone because I have had to punch on to get things done over my career; Coco Chanel because she is a legend; and Sophia Loren, the epitome of woman. What would you cook for them? Everything Italian. I would buy an ash tray for Coco as well, as I don’t have any. What would the dress code be and what would you wear? “Fabulous” and timeless black lace.

HIGH RISK for HIGH REWARDS By Dr Drew Moffrey

Being an obstetrician is a privilege. Every day I work with families and support them on their pregnancy journey. For most, a pregnancy is an uncomplicated and exciting journey consisting of good health for both mum and baby. Unfortunately, some pregnancies carry risks. How these issues are managed is paramount to a positive outcome. I am privileged to be associated with Pindara Private Hospital whose high calibre of specialist and quality nursing care enables me to look after any high-risk pregnancy that presents. This is Candice’s story. In 2016 I meet Candice* who engaged my obstetric services for her first pregnancy. To date, Candice had already had her fair share of health challenges. Although now only in her 30s, in 2011 Candice was diagnosed with breast cancer. This diagnosis lead to Candice having a left mastectomy, chemotherapy and hormone therapy. In May 2017, Candice had an eventful pregnancy and welcomed a beautiful baby boy of whom she breastfed for over six months. In January 2018, Candice was pregnant again. At 16 weeks, Candice underwent a routine breast ultrasound where a lesion was detected in her nodes under her left armpit. After a biopsy a recurrence of her breast cancer was diagnosed. Dr Rhea Liang, a breast surgeon, performed

a left axillary clearance and removed the obvious recurrent disease. Unfortunately, because of the pregnancy, the medical imaging that can be performed was limited. We were unable to predict if there was any further spread of the cancer. Due to the recurrence and aggressive nature of the breast cancer, the risks of commencing chemotherapy during the second trimester were weighed heavily against the risk of waiting for the end of the pregnancy to commence treatment. It was determined the benefits of chemotherapy outweighed the risks to the pregnancy. Chemotherapy was commenced immediately. Two different types of chemotherapy were required with Candice initially undergoing monthly rounds and subsequently progressing to fortnightly treatments. Due to the significant risks, chemotherapy can place on the unborn baby, regular ultrasounds of baby were initiated – monitoring growth of the baby, placental function paramount. Unfortunately, placental function can decrease early when exposed to chemotherapy. Once again, the risks of continuing the pregnancy was weighed against the risks of the baby’s prematurity. It was decided that the baby would be delivered at 35 weeks. After consultation with one of Pindara’s paediatric specialists, Dr Scott Blundell, to discuss possible

outcomes of a preterm delivery, Candice and her husband were given a tour of Pindara’s Special Care nursery. Candice was given medication to encourage the maturity of her unborn baby’s lungs and at 35 weeks the birth was induced. Pindara’s K2 Fetal monitoring ensured Candice’s baby was monitored throughout the labour. One great feature of the K2 fetal monitoring means the baby’s heart rate can be monitored on any computer or smart phone remotely. Candice’s labour progressed well and quickly and a beautiful girl was welcomed into the world. After 16 days, this little pocket rocket was discharged from the special care nursery to home to the excitement of her big brother and has continued to thrive. Since the birth, Candice has undergone further chemotherapy and radiotherapy. The best news is that medical imagery has detected no metastasis of the breast cancer to any other part of the body. Candice is expected to make a full recovery from her breast cancer. This case highlights that while some pregnancies can come with significant complications, great outcomes can be achieved with a collaborative multidisciplinary approach. Considering Knee Surgery? Here’s what you need to know. By Dr Andrew Letchford, specialist in hip and knee orthopaedic surgery

Knee surgery is common. Young adults have their anterior cruciate ligament reconstructed after tearing it when playing sports. Middle-aged people have parts of their meniscus trimmed when they have pain and limited knee mobility, while older people have their knees replaced by metal and plastic when their cartilage has worn out. It is intuitive to think that if something is mechanically wrong, it needs to be fixed with orthopaedic surgery. As Dr Andrew Letchford explains, surgery isn’t always the answer.

What are the most effective nonsurgical treatments?

You have been involved in orthopaedic surgery for over two decades. Have you seen an increase in the rate of total knee replacements and is it expected to rise?

A common reason to have surgery is the desire to return to sport. Do you find that patients are able to return to sport after surgery?

Indeed, we have seen a steady increase in knee replacement surgery. The Australian Joint Registry identified this as a five percent increase in 2017. There is a muchreduced rate of increase in hip replacements at one percent. Knee replacement surgery is expected to continue to rise.

In most cases I find that patients are able to return to sport following surgery.

It is intuitive to think that when something is broken in the knee, fixing it with surgery is necessary. According to research and your experience, is this the case? No. It requires a focused understanding of the underlying problem. Non-operative management and the involvement of a capable physiotherapist should be first line. Is replacing the knee joint associated with pain relief ? Orthopaedic surgery is inherently painful surgery. It requires adequate pain relief via multimodal therapy plus time to heal. 54 SLIM MAGAZINE AUTUMN 2019

First and foremost is maintaining a healthy weight range. It is important to maintain muscle strength around the joint and sensible activity. Is a knee arthroscopy an effective option for middle-aged people with knee pain, osteoarthritis and meniscal tears? This is shown only to be effective if that person is getting mechanical symptoms from the meniscal tear. The arthroscope rarely benefits the osteoarthritis.

Dr Andrew Letchford is a specialist in hip and knee surgery, with an interest in joint replacement, knee reconstructions, sports injuries and acute orthopaedic trauma. After gaining his medical degree from The University of Sydney with First-Class Honours in 2000, Dr Letchford conducted his orthopaedic training in Queensland. In 2009, he founded Pacific Orthopaedics, consulting at the Pacific Private Day Hospital in Southport and performing surgery at Pindara Private Hospital and Gold Coast Private Hospital.

Do patients see greater pain relief when extensive exercise therapy is incorporated in the treatment plan? This is not specifically associated with pain relief, but it is associated with functional outcome recovery. Should exercise therapy be supervised? Initially yes, but patients quickly can become adept at managing their own therapy requirements. What are the factors determining the outcomes of surgery? Some include patient factors such as the severity of the treated condition, weight and muscle condition for post-operative rehabilitation and surgical factors such as the treatment team, including rehabilitation therapists.

Many patients return to sport following surgery.

APRICOT, CASHEW & COCONUT TRUFFLES MAKES 12 BALLS

These fruity, tropical bites are made for an afternoon treat; they’re also great for packing in the kids’ lunches. Treats all around! EASY FRITTATA SERVES 2

Frittatas are perfect for using up veggie scraps. When testing recipes for this book, I used a lot of beets (beets and I were having a moment), so I always had leftover beet greens around the kitchen. I tried adding them to a frittata with some shallots, and it was a hit. INGREDIENTS 2 tablespoons olive oil ¼ cup diced shallots 1½ to 2 cups chopped beet greens Kosher salt and freshly ground black pepper 4 large eggs, beaten METHOD Preheat the oven to 190°C In an 20cm oven-safe nonstick skillet, heat the olive oil over medium-high heat. Add the shallots and cook, stirring, for a couple of minutes, until softened, then stir in the beet greens and cook until wilted. Season with a generous pinch each of salt and pepper. Add the eggs and turn off the heat. Pop the skillet in the oven for about 10 minutes, or until the eggs are set. Slice and serve.

HALIBUT EN PAPILLOTE WITH LEMON, MUSHROOMS & TOASTED SESAME OIL Halibut is a species of flatfish. Substitutes include flake and flounder. This serves two but could be easily scaled up for a bigger crowd. SERVES 2

INGREDIENTS 2 medium shiitake, oyster, or maitake mushrooms, thinly sliced 2 (170g) halibut fillets, skin removed Flaky sea salt and cracked black pepper ½ teaspoon grated lemon zest ½ teaspoon grated fresh ginger 2 scallions (green onions), thinly sliced 1 teaspoon coconut aminos (salty-sweet condiment with a buttery finish) ½ teaspoon toasted sesame oil, plus more for drizzling 4 lemon slices METHOD Preheat the oven to 200°C. Lay out two 22 x 28cm sheets of parchment paper (baking paper) on a flat surface. Place the sliced mushrooms in the lower third of each parchment sheet. Season the halibut fillets generously with salt and pepper and place them on top of the mushrooms. Divide the lemon zest, ginger, scallions, coconut aminos, sesame oil, and lemon slices evenly between the fillets. Fold the top half of the parchment paper (baking paper) over the fish to make a rectangle. Starting on one side, crimp the edges together tightly so no liquid can escape and the contents are completely enclosed. Repeat with the other two edges, then place the parcels on a baking sheet and bake for 12 to 15 minutes, depending on the thickness of the fillets. Transfer the parcels to individual plates. INGREDIENTS 3 tablespoons coconut oil or good-quality animal fat 500g raw prawns, shelled and deveined, tails left intact 5 cm piece of ginger, cut into matchsticks 1 tablespoon finely chopped lemongrass, pale part only ½ onion, sliced 8 spring onions, white part only, cut into 6 cm lengths 300g broccoli, broken into florets 4 garlic cloves, thinly sliced 1 long red chilli, thinly sliced 2 tablespoons tamari 2 tablespoons fish sauce 2 teaspoons coconut sugar, honey or monk fruit sweetener (optional) 250ml (1 cup) Chicken Bone Broth 1 ½ tablespoons tapioca flour, mixed with 1 tablespoon water 2 handfuls of water spinach or baby spinach leaves 1 handful of Thai basil leaves METHOD Heat 1 tablespoon of the coconut oil or fat in a wok or large frying pan over medium–high heat. Add the prawns, in batches, and cook for 30 seconds on each side. Remove from the pan and set aside until needed. Wipe the wok or pan clean, add the remaining coconut oil or fat and place over medium–high heat. Add the ginger, lemongrass, onion, spring onion, broccoli, garlic and chilli and stir-fry for 3–4­minutes until fragrant and starting to colour slightly. Mix in the tamari, fish sauce, sweetener (if using), broth and tapioca mixture and simmer for 1 ­minute, or until the sauce thickens. Add the prawns and mix through until they are just cooked. Remove from the heat, toss through the spinach and Thai basil leaves and serve.

* Monk fruit resembles a melon. Monk fruit sweeteners are made from the fruit’s extract which is 150 to 200 times sweeter than sugar and contains zero calories or carbs. The sweetener can be found online or at some health food stores.

CHICKEN AND BACON IN AN AVOCADO BUN SERVES 2

INGREDIENTS 2 rindless bacon rashers 2 avocados 1 baby cos lettuce, leaves separated and torn 300g leftover roast chicken, shredded 1 t­ easpoon sesame seeds freshly ground black pepper Basil mayonnaise 3 tablespoons Mayonnaise 1 t­ easpoon chopped basil leaves sea salt METHOD Preheat the oven to 200°C (180°C fan-forced). Grease and line a baking tray with baking paper. Place the bacon in a single layer on the prepared tray, making sure the strips do not touch. Bake, turning the tray once, for 10–12­minutes until the bacon is golden brown and crisp. Keep a close eye on the bacon to prevent it from­ burning. To make the avocado bun, slice each avocado in half lengthways. Remove the stone and peel away the skin. On­ one half of each avocado, slice off a small piece to form­a flat base (this helps the bun to stand on the plate). To make the basil mayonnaise, mix the mayonnaise and basil together and season with a pinch of salt, if needed. Set aside. To assemble the buns, place the flat-based avocado halves on serving plates. Spread on 1 t­ easpoon of basil mayonnaise, then top with the bacon, cos lettuce and chicken. Spread on another­teaspoon of basil mayonnaise, then add the top half of the avocado bun. Sprinkle on the sesame seeds and some pepper and serve.


MIDDLE EASTERN LAMB SHOULDER SERVES 6

INGREDIENTS 4 garlic cloves, chopped 1 handful of mint leaves, chopped, plus extra leaves to serve 1 handful of coriander leaves, chopped 3 tablespoons orange juice zest and juice of 1 lemon ½ teaspoon orange zest 3 tablespoons melted coconut oil or good-quality animal fat, plus extra for greasing sea salt and freshly ground black pepper 2 onions, sliced 1 x 1.5kg lamb shoulder, bone in 500ml (2 cups) Chicken Bone Broth or lamb bone broth 1 handful of flat-leaf parsley leaves, to serve MIDDLE EASTERN SPICE MIX 1 tablespoon ground cumin 1 tablespoon ground coriander 1 tablespoon sumac ½ teaspoon ground allspice ½ teaspoon chilli flakes ½ teaspoon ground cinnamon

METHOD Preheat the oven to 240°C (220°C fan-forced). To make the spice mix, place all the ingredients in a bowl and mix to combine. Place the garlic, mint and coriander leaves in the bowl of a food processor and blend until finely chopped. With the motor running, add the orange and lemon juices and zests and 3 tablespoons of water. Blend to form a wet paste. Add the spice mix and coconut oil or fat and pulse a few times to combine. Season with salt and pepper. Using the tip of a sharp knife, make incisions to a depth of 5mm all over the lamb.

Scatter the onion into the base of a large roasting tin. Sit the lamb on top and rub the spice paste evenly over the surface of the lamb. Season with salt and pepper. Pour half the broth into the bowl of the food processor and stir to remove any remaining spice paste from the base and side, then pour the liquid into the tin along with the remaining broth. Roast the lamb for 30 minutes, or until well browned, basting the meat occasionally with the cooking juices. Reduce the temperature to 140°C (120°C fan-forced), tightly cover the tin with foil and braise for 5–6 hours until the meat is tender and falling off the bone. Rest for 10 minutes, then scatter the mint and parsley over the lamb and serve.

KETO ‘BOUNTY’ BARS MAKES ABOUT 20

INGREDIENTS 330g (4 cups) shredded coconut 250ml (1 cup) coconut milk 180ml melted coconut oil ¼ teaspoon vanilla powder or ½ teaspoon vanilla paste 3 tablespoons monk fruit sweetener or xylitol* (you can also use ½ teaspoon liquid stevia), or to taste 1 quantity of Keto Chocolate METHOD Place the coconut in the bowl of a food processor and blitz to form crumbs. Add the coconut milk, coconut oil, vanilla and sweetener and whiz for 30 seconds to combine. Tear a 30 x 20cm sheet of baking paper from your roll. Place the paper on a benchtop, with the long side facing you. Working from the edge closest to you, spoon one quarter of the coconut mixture across the sheet, leaving a 1cm gap from the

edge. Starting with the edge closest to you, begin to tightly wrap and roll all the way to the end of the paper to form a log. Smooth the outside of the log with your fingers to remove any air pockets. Gently lift and place on a tray, then repeat with the remaining mixture to create four logs. Place the logs in the fridge to set for 1 hour. Line a tray with baking paper. Gently melt the chocolate in a heatproof bowl over a saucepan of just simmering water (make sure the bowl doesn’t touch the water or it will overheat). Remove the coconut logs from the fridge and cut into roughly 5cm pieces. Dip the pieces in the chocolate and place on the prepared tray. Return to the fridge for 30 minutes to set the chocolate. If the chocolate coating is quite thin, you can dip the pieces in the melted chocolate again and return to the fridge to set. Store your ‘bounty’ bars in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. SLIM-MAGAZINE.COM.AU 59

‘SORT OF’ SPAGHETTI AND TURKEY MEATBALLS SERVES 2

INGREDIENTS 250g turkey breast mince ½ teaspoon dried oregano 1 tablespoon finely chopped flat-leaf parsley Sea salt and freshly ground black pepper 1 tablespoon olive oil ½ onion, finely diced 1 garlic clove, minced 1 x 400g tin chopped tomatoes 2 tablespoons red wine 2 teaspoons Worcestershire sauce 1 tablespoon tomato paste 1 teaspoon stock powder or 1 stock cube (chicken or vegetable) 250g egg noodles 2 tablespoons freshly grated parmesan METHOD In a medium bowl, combine the turkey mince, oregano, parsley and a good pinch of salt and pepper. Mix together well with clean hands, then with damp hands, roll the turkey mixture into 2–3cm balls (you should get around 10 of them). Place these on a plate, then cover and refrigerate for at

least 20 minutes. Heat a heavy-based saucepan over medium heat. Add the olive oil and the onion and a pinch of salt. Fry gently for 5 minutes, or until the onion becomes translucent and golden. Add the garlic and the tinned tomatoes. Fill the empty tomato tin with water and add that to the pan too. Add the red wine to the pan with the Worcestershire sauce, tomato paste, stock and a good grind of pepper and give it a good stir. Bring to the boil, then reduce the heat and simmer uncovered for about 10 minutes, or until the sauce has reduced slightly and is beginning to thicken. Place the meatballs into the sauce and give the pan a bit of a shake to distribute them evenly. Put the lid on and allow to simmer for 10–15 minutes, giving the pan a gentle shake or a stir occasionally. In the meantime, cook the egg noodles according to the packet instructions. Once cooked, distribute between two bowls Top each bowl of noodles with half of the meatballs, and sprinkle a tablespoon of grated parmesan over each portion before serving.

CAPRICCIOSA PIZZAS SERVES 2 (2 PIZZAS PER PERSON)

INGREDIENTS 4 small wholemeal pita pockets (about 70 g each) 4 tablespoons tomato paste 100g lean ham off the bone (omit for a vegetarian option) 8 button mushrooms, finely sliced 8 marinated artichoke hearts, roughly chopped 16 pitted black olives, sliced Shredded light mozzarella A handful of fresh basil leaves, torn METHOD Preheat the oven to 200°C. Line a baking tray with baking paper and put the pitas on the tray. Dollop half the tomato paste in the middle of each pita pocket and spread it around using the back of a spoon. Top each pizza with ham, mushroom and artichoke. Scatter the olives and the shredded mozzarella over the pizzas. Bake in the hot oven for 15–20 minutes, or until golden and melty, then serve with the torn basil leaves scattered over. 60 SLIM MAGAZINE AUTUMN 2019


KOREAN BEEF BIBIMBAP SERVES 2

INGREDIENTS 1 tablespoon olive oil 200g extra-lean beef mince 1 spring onion, finely sliced ½ teaspoon minced garlic 1 tablespoon tamari or soy sauce 200g (1 cup) white or brown rice 100g baby spinach leaves

Sea salt 1 teaspoon sesame oil 2 teaspoons toasted sesame seeds 150g (1½ cups) bean sprouts 2 eggs 1 carrot, cut finely into matchsticks 2 heaped tablespoons kimchi Chilli sauce (optional), to serve

METHOD Start by preparing the beef mince. Heat a large non-stick frying pan over medium–high heat. Add half of the olive oil and all of the mince, breaking up the mince with a spatula or spoon as it cooks. Add the spring onion, garlic and tamari, and continue to fry for another minute until the mince has browned. Set aside on a plate. Cook the rice according to the packet instructions, then set aside while you bring the other elements together. Bring a small saucepan of water to the boil. Add the baby spinach to the boiling water for 30 seconds or so, then remove with a slotted spoon into a colander to drain. When cool, use your hands to squeeze out the excess water, then place the spinach on a clean tea towel or paper towel to dry completely. Once dry, add the spinach to a medium bowl, season with salt, then sprinkle with the sesame oil and seeds and toss together. Meanwhile, add the bean sprouts to the boiling water for 30 seconds, then drain and pat dry with paper towel. Wipe the frying pan out with paper towel, then return it to the heat. Add the remaining olive oil, crack in the eggs and cook them to your liking – sunny-side up or over-easy for a well-cooked yolk. Set the cooked eggs aside on a plate. Construct the bibimbap by dividing the rice between two bowls. Place half of each of the remaining ingredients in small mounds around the bowl, on top of the rice – the beef mince, spinach, sprouts, carrot and kimchi. Top each with a fried egg and then douse with chilli sauce, if you wish.

METHOD To make the guacamole, put the avocado and lime juice in a small bowl with a good pinch of salt and roughly mash. Cover and place in the fridge until you’re ready to serve. Preheat the oven to 180°C. Line a baking tray with baking paper Heat a large non-stick frying pan over medium heat. Add the olive oil and onion and a pinch of salt and pepper. Cook for 5 minutes, or until the onion begins to soften. Add the eggplant and continue to cook for a few more minutes, until soft. Add the garlic, beans, paprika, stock powder, tomato paste and tinned tomatoes. Half-fill the empty tomato tin with water and add that to the pan as well. Bring to the boil, then turn down the heat to medium–low and partially cover with a lid. Simmer for 15 minutes, or until the mixture is thick and most of the water has evaporated. Meanwhile, slice the wraps into 2cm-thick strips. Lay these on the baking tray and bake for 5 minutes, or until golden. Take them out of the oven and leave on the tray for a couple of minutes to get crunchy. Divide the chilli between two small bowls, arrange the ‘nacho’ chips around the edge and top with grated cheese, guacamole, chunky salsa, some pickled jalapeños and a dollop of sour cream. INGREDIENTS 2 teaspoons smoked paprika ½ teaspoon chilli powder ½ teaspoon garlic powder ¼ teaspoon dried thyme 2 teaspoons honey 1 tablespoon red wine vinegar 1 teaspoon pure molasses 500g boneless pork shoulder, trimmed salt and freshly ground black pepper 1 teaspoon extra-virgin olive oil ½ brown onion, finely sliced METHOD Combine the paprika, chilli powder, garlic powder, thyme, honey, vinegar and molasses in a bowl to form a paste. Rub the paste all over the pork, season with salt and pepper and set aside. Heat the olive oil in a flameproof casserole dish over medium– high heat and cook the onion for 1–2 minutes until translucent. If you are cooking the pork in a slow cooker, the onion can be cooked in a saucepan or frying pan, then transferred to the slow cooker dish.

If cooking on the stovetop: Place the pork on top of the onion in the casserole dish and pour over ½ cup of water. Cover the dish with a lid, reduce the heat to low and simmer for 2 ½–3 hours, rotating the pork regularly, until the meat is very tender. Add a little extra water if the pork starts to dry out at any point. Remove the pork from the dish and set aside. Pour the cooking liquid into a bowl and allow to cool, skimming off the fat as it rises. Once the fat has been removed, return the liquid to the casserole dish. Bring to the boil, then reduce the heat and simmer for a few minutes until thickened slightly. Using two forks, shred the pork into small pieces. Add the shredded pork to the thickened sauce and stir to combine. If cooking in a slow cooker: Place the pork, onion and ½ cup of water in the slow cooker dish and cook on low for 8 hours until the meat is very tender. Remove the pork from the cooker and set aside. Pour the cooking liquid into a bowl and allow to cool, skimming off the fat as it rises. Once the fat has been removed, pour the liquid into a saucepan. Bring to the boil, then reduce the heat and simmer for a few minutes until thickened slightly. Using two forks, shred the pork into small pieces. Add the shredded pork to the thickened sauce and stir to combine. Store leftover pulled pork in an airtight container in the fridge for 3–4 days or freeze for up to 3 months. SUITABLE TO FREEZE

PULLED PORK AND SPINACH SLOPPY JOES SERVES 6

INGREDIENTS 1 x quantity Pulled Pork 1½ tablespoons reduced-fat cottage cheese 45g baby spinach leaves 1½ tomatoes, diced 5 wholemeal rolls

METHOD Reheat the pulled pork in the microwave or on the stovetop until warmed through. Add the cottage cheese, baby spinach and tomato to the warmed pork and stir until well combined and the spinach has wilted. Slice open the rolls and fill with an even amount of the pork and spinach mixture. Serve one pork roll per person. Store any leftover pulled pork in an airtight container in the fridge for 3–4 days or freeze for up to 3 months.


CHICKEN AND JALAPENO POPPERS WITH GUACAMOLE SERVES 4

INGREDIENTS 300g chicken breast fillet salt and freshly ground black pepper cooking oil spray 50g light cream cheese 1⁄4 cup sliced pickled jalapeno chilli 1 teaspoon garlic powder 1 teaspoon ground cumin 8 mini tortillas ½ cup grated reduced-fat cheddar ½ avocado, mashed ¼ cup extra-light sour cream 2 tablespoons chopped coriander leaves 2 tablespoons lime juice METHOD If cooking in the oven: Preheat the oven to 180°C. Season the chicken with salt and pepper and lightly spray with cooking oil. Place in a small baking dish and bake for 30–35 minutes or until cooked through. Transfer the chicken to a plate and shred with two forks. Combine the shredded chicken, cream cheese, jalapeno, garlic powder and cumin in a bowl. Scoop the mixture into the baking dish, spread it out evenly and bake for 15 minutes. If cooking in a slow cooker: Lightly spray the slow cooker dish with cooking oil. Add the chicken, cream cheese, jalapeno, garlic powder, cumin and 1⁄2 cup of water and season with salt and pepper. Cover and cook on low for 6–8 hours. Remove the chicken and shred with two forks. Return the chicken to the sauce and stir through. To serve: Preheat an overhead grill to high and line a baking tray with baking paper. Heat the tortillas in the microwave for a few seconds to soften them up and make them easier to work with. Sprinkle an even amount of cheese along the middle of each tortilla and top with 2–3 tablespoons of the chicken mixture. Tightly roll up the tortillas and place on the prepared tray, seam-side down. Grill for 8–10 minutes, turning halfway through, until the tortillas are golden and the cheese has melted. Meanwhile, combine the avocado, sour cream, coriander and lime juice in a bowl. Serve two poppers per person with guacamole for dipping. Store any leftover poppers and dip in an airtight container in the fridge for 2–3 days or freeze leftover poppers for up to 2 months. Poppers are suitable to freeze.

PORK PAD THAI SERVES 1

INGREDIENTS 50g wide rice noodles ½ teaspoon sambal oelek (chilli paste) ½ garlic clove, grated 1 teaspoon rice wine vinegar ½ teaspoon pure maple syrup ½ teaspoon fish sauce 1 teaspoon lime juice 1 teaspoon coconut oil 60g pork fillet, finely sliced 1 free-range egg, lightly beaten 1 carrot, grated ½ cup bean sprouts, trimmed 2 teaspoons chopped unsalted cashews 1 tablespoon coriander leaves ½ spring onion, sliced METHOD Cook the noodles according to packet directions. Drain and set aside. (Rinse in cold water to make pliable again before frying.) Meanwhile, combine the sambal oelek, garlic, rice wine vinegar, maple syrup, fish sauce and lime juice in a bowl to make a sauce. Heat the coconut oil in a non-stick frying pan over medium–high heat. Add the pork and cook for 2–3 minutes until cooked through.Remove from the pan and set aside. Add the drained noodles and sauce to the pan and toss to coat. Toss through the beaten egg until cooked through. Return the pork to the pan, add the carrot and bean sprouts and toss everything together over the heat for 1 minute. Transfer the mixture to a bowl, top with the chopped cashews, coriander leaves and spring onion and serve.

It was known as a healing food in the ancient Indian system of medicine Ayurveda – where it was used to treat respiratory conditions or as a topical application to soothe or heal the skin. Blend in a food processor until completely smooth. Heat the sauce through and add to pasta. Serve with leafy greens and some chopped toasted cashews.

METHOD Coat mackerel in coconut four then seal in by frying with olive oil. Set to one side. Blend one onion, one head of fennel, green chilli, turmeric root, ginger, garlic and powdered spices into a paste in a food processor and set to one side. Heat olive oil in a large saucepan. Test with a few seeds and when the oil is hot enough to pop them add all the five seed mix until popping has stopped. Add remaining chopped onions and one fennel head – fry for fve minutes until softened. Avoid sticking and burning by gradually adding vegetable stock. Add paste and cook until fragrant, then add the coconut milk and 2-4 kafir lime leaves, then simmer until the vegetables are cooked. Add fish and keep on very low heat until the fish is completely cooked. Serve garnished with fresh coriander leaves and quinoa.

VEGGIE-PACKED MUFFINS MAKES 15

INGREDIENTS 2 small zucchinis grated 2 small carrots grated 2 spring onions finely sliced 1 cup corn kernels 1 capsicum diced 6 eggs ½ cup milk 1 bunch dill chopped 1 cup whole meal self-raising flour 1 tsp baking powder METHOD Preheat oven to 190°C and line a muffin tray with cases or grease tin well. Squeeze excess moisture from grated zucchinis and carrots and place in a large mixing bowl with all other dry ingredients. Mix until combined. In a small bowl combine milk and eggs and whisk until combined. Season with salt and pepper if desired. Make a well in the centre of dry ingredients, add egg mixture. Gently mix egg mixture into dry ingredients until combined. Pour into muffin tins top with any extra cheese if desired. Place muffins in preheated oven and cook for 30 minutes or until cooked through. Allow to cool. ZOODLES AND EGG SALAD SERVES 4

INGREDIENTS 2 x 130g packets sweet berry truss tomatoes 1 cup finely grated parmesan 4 eggs

4 large zucchini, trimmed 2 tablespoons olive oil 2 garlic cloves, crushed ½ cup small basil leaves

METHOD Preheat oven to 200°C. Line 2 baking trays with baking paper. Place tomatoes onto one tray and drizzle with oil. Season with salt. Spread parmesan evenly onto remaining tray. Bake for 20 minutes or until tomatoes are tender and parmesan forms a golden melted crust. Break parmesan crisp into large shards. Meanwhile, bring a medium saucepan of water to the boil. Reduce heat to low, and when bubbles subside, use a spoon to stir the water until a whirlpool forms. Break an egg into a small bowl and gently slide into whirlpool. Cook for 3 minutes or until white is cooked. Use a slotted spoon to transfer egg to a plate. Repeat with remaining eggs. Using a spiraliser, turn zucchini into spirals. Heat oil in a frying pan over a medium heat. Add zucchini and garlic. Cook for 3 minutes or until just softened. Remove from heat. Add basil. Toss until combined. CRUSHED RASPBERRY SEMIFREDDO SERVES: 10

INGREDIENTS Semifreddo 2 eggs 5 egg yolks 75g (1/3 cup) caster sugar 1 teaspoon vanilla bean paste 500ml (2 cups) thickened cream 300g fresh raspberries, plus extra to serve 1 tablespoon sugar, extra Freeze-dried raspberries, crushed to serve Meringue Kisses 2 egg whites at room temperature 110g (1/2 cup) caster sugar 1/2 teaspoon white vinegar Pink gel food colouring METHOD Semifreddo Grease a 6cm deep, 19cm long, 9cm wide loaf tin and line with baking paper, leaving a 5cm overhang at each long end. Place eggs, egg yolks, sugar and vanilla in a heatproof bowl. Place bowl over a saucepan over simmering water over low heat. Using hand-held beaters, whisk for 4 minutes or until thick and creamy. Remove from heat and whisk for a further 3 minutes, or until cool. Place cream in a large bowl and whisk until thickened. Add the egg mixture into the cream and gently fold to combine. Place half the raspberries and sugar in a small bowl and crush with a fork. Add the crushed raspberries to the cream mixture and gently fold to combine. Pour into prepared tin, scatter with remaining raspberries (they will sink as it freezes). Cover and freeze overnight. Meringue Kisses Preheat oven to 150°C fan forced. Place egg whites in the bowl of an electric mixture. Whisk on high speed until stiff peaks. Gradually add sugar a tablespoon at a time, making sure sugar is dissolved between each addition. Once all the sugar is added, use a spatula to scrape down sides of bowl. Whisk for a further 6 minutes, or until mixture is thick and glossy. Add vinegar and whisk for further 2 minutes. Brush 3 stripes of pink food colouring into a piping bag fitted with a 1cm nozzle. Add meringue mixture. Line a baking tray with baking paper and pipe meringue kisses onto tray. Place kisses in oven, reduce oven temperature to 120°C fan forced and bake for 30 minutes or until dry. Invert semifreddo onto a serving platter and top with meringue kisses, extra raspberries and crushed freeze-dried raspberries. Serve immediately. Tip: Semifreddo will keep in the freezer for up to 3 months. Recipe from Australian Eggs

CHOC-COCONUT CHIA PUDDINGS SERVES: 2

INGREDIENTS 3 tablespoons black or white chia seeds 250ml (1 cup) unsweetened almond and coconut milk 2 heaped teaspoons cacao or cocoa powder 1 tablespoon desiccated coconut + 2 teaspoons extra, to serve 1 heaped tablespoon coconut yoghurt + extra, to serve 2 drops stevia concentrate Raspberries, to serve

METHOD Place the chia seeds, almond and coconut milk, cacao, desiccated coconut, yoghurt and stevia into a bowl. Whisk together for a minute or so until well combined and a little frothy. Divide between two small serving bowls or ramekins, then sprinkle an extra teaspoon of desiccated coconut over each serving and place in the fridge to set for at least an hour (overnight is ideal). Serve with a dollop of coconut yoghurt and some fresh raspberries on top.

INGREDIENTS 2 tablespoons vegetable oil 500g chicken thigh fillet, cut into 4cm pieces 1 brown onion, halved lengthways, thinly sliced 2 garlic cloves, crushed 2 tablespoons kecap manis (sweet soy sauce) 1 tablespoon salt-reduced soy sauce 1 tablespoon sweet chilli sauce 1 teaspoon sambal oelek 2 cups long-grain rice 4 cups (1L) chicken stock 12 medium green prawns, peeled, deveined 4 eggs 2 green onions, thinly sliced 1 large Lebanese cucumber, thinly sliced diagonally 250g cherry tomatoes, halved 2 tablespoons roasted peanuts, roughly chopped Coriander sprigs, to serve METHOD Preheat oven to 180°C. Heat oil in a large frying pan over a medium heat. Add chicken and cook for 10 minutes or until well browned. Add onion and garlic and cook for 3 minutes or until softened. Add kecap manis, soy, chilli sauce, sambal oelek and rice. Stir until well combined. Pour in stock and bring to the boil. Remove from heat. Transfer to a roasting dish and cover with foil. Bake for 20 minutes. Add prawns to rice mixture. Make 4 indentations in the rice and break an egg into each indent. Recover with foil and bake for a further 10 minutes or until the egg whites are just cooked. Stand, covered, for 10 minutes. Top with onion, cucumber, tomatoes, peanuts and coriander and serve. TEA EGGS WITH ASIAN NOODLES SERVES: 10

INGREDIENTS Tea eggs 1 tablespoon Chinese five spice 1 cup (250ml) dark soy 3/4 cup brown sugar 1/4 rice wine vinegar 2 black tea bags 2 cups (500ml) water 8 eggs (at room temperature)

Asian noodles 350g fresh egg noodles 2 tablespoons sesame oil 1 bunch broccolini, trimmed 200g Asian mushrooms chopped 1 tablespoon sliced ginger 4 green onions, shredded 1 long red chilli, thinly sliced Baby purple shiso, optional, to serve (shiso is a plant of the mint family)

METHOD Tea eggs Place Chinese five spice, soy, brown sugar, vinegar and tea bags in a medium saucepan. Add the water and bring to the boil over high heat. Add the eggs and cook for 3 minutes. Carefully remove with a slotted spoon.Place in a bowl and gently tap the shell with the back of a spoon. Return the eggs to the boiling cooking liquid and remove from heat. Cover and leave for at least 2 hours to marinate and cool. Remove 1 cup of the cooking liquid and set aside. Discard remaining cooking liquid. Asian noodles Cook noodles according to packet instructions. Refresh and set aside. Heat oil in a large wok or frying pan. Add broccolini and cook for 3 minutes, then add mushrooms. Cook for another 3 minutes. Add ginger and reserved cooking liquid and cook for 1 minute. To serve, peel the eggs and halve some of them. Divide noodles and vegetables between bowls. Drizzle with cooking liquid. Top with eggs, scatter with green onions, chilli and shiso. Recipe from Australian Eggs

Blend together the seeds and juice of 2 passionfruit, 60g protein-rich wheat cereal flakes, 120g fresh reduced-fat ricotta, 1 cup (250ml) low-fat milk and 7g chopped raw almonds.

Blend together the flesh of ½ large mango, 60g natural muesli and 2 cups (500ml) low-fat milk. Serve topped with 7g toasted, chopped unsalted macadamias.

APPLE PIE OATS

Blend together 1/3 cup (80g) unsweetened apple puree, 1/2 cup (45g) quick oats, 7g almonds 1/2 teaspoon ground cinnamon, 200g low-fat vanilla yoghurt and 1 cup (250ml) low-fat milk.

INGREDIENTS 2 mangoes, peeled and chopped 4 ripe bananas, peeled and chopped 250g low-fat berry yoghurt 4 waffle cones METHOD Line a large baking tray with baking paper. Arrange the fruit on the tray in a single layer and freeze for 3–4 hours or until firm. Transfer the frozen fruit to an upright blender and add the yoghurt. Blend on high speed, scraping down the sides of the jug occasionally, until completely smooth. Serve immediately scooped into cones. NOTES: If the mixture is too thick and won’t blend easily, just add 1–2 tablespoons water to help loosen it.

MATTERS Why it’s Important to Talk about Death The topic of death is no different than talking about sex, bullying and mental health, yet many of us don’t like talking about it. According to the Beyond Taboos report on death literacy, only 24 percent of people feel comfortable talking about death, dying or loss with a child. Statistics show that 43 percent of people have experienced the death of someone close to them under the age of 16, emphasising how important it is to have the conversation.

D

eath happens to everyone, yet it is still considered a taboo topic. There is a misconception adults have when discussing the inevitable with their children. They either think that children don’t understand death or it’s harmful to talk about death with them and that children should be shielded from it. According to clinical psychologist Kerrie Noonan, although this mindset comes from a good place, it goes against the natural resilience that children have. It was in 2010, after a trip to Kerala, India, for a palliative care conference that Noonan decided to co-found The Groundswell Project, a world-first non-government organisation dedicated to raising ‘death literacy’, a term she invented to describe the practical know-how needed to plan well for end-of-life. “If discussions about death with children are avoided, it sends the message that death should be feared instead of being a part of life,” says Noonan. “It is crucial for parents and guardians to be informed and able to talk about death with their kids. The topic of death is no different than talking about sex, bullying and mental health. “In Australia, death literacy is not a well-established concept yet, however it should be. Death literacy encompasses learning through experiences, skills, knowledge and taking action. If adults, particularly parents, are educated in this area, not only will it strengthen the relationship with their children, but also the communities’ capacity to take action and care for one another at times of dying, death, loss and grief.” Kerrie Noonan’s top five tips parents and guardians should implement when it comes to talking to children about death 1. Never compare death to sleeping. Avoid phrases such as ‘grandma has gone to sleep’. It can be confusing and scary. It can also make children afraid of falling asleep. After all, sleeping is something people who are alive do. 2. The significance of inclusion. There is no ‘best age’ to talk about death. The best time to talk

about it is when it happens. It is through experience that people learn best, so include children in hospital visits and in dying rituals, especially if someone the child is close to is expected to die. This gives the child a warning and enough time to come to terms with it. You can include children by giving them a small job to complete. In these situations, it is ideal to have something to do to feel helpful when you or the child might be feeling helpless. 3. Use plain language. When it comes to learning and understanding, young children often tell adults their preference is for us to use simple words and phrases. When it comes to discussing death, use plain language such as dead, died, their heart stopped and coffin. For example, you can say, ‘His heart stopped beating and then his body stopped working and he died’. This method also applies when answering questions. Respond in a factual and straightforward way. 4. Teachable moments. Utilise opportunities and teachable moments when they arise. They are a natural transition to start a conversation about death. For example, don’t flush the goldfish or quickly replace pets that die. Children learn a great deal from pet funerals and about grief. It also helps parents and adults build their skills in discussing death with children. 5. Be honest and give children space. There is no need to rush children when it comes to talking about death or the grieving process. Grief usually comes in short intense bursts. Children tend to grieve differently to adults and conversations may take place over several days, weeks or months as they become more curious. Chop Chop Surfers Paradise Yum cha, ramen and bubble tea - Asian dining has gone nextlevel with the opening of Surfers Paradise’s most authentic Asian food precinct. Formerly known as 8 Street, the streetfood hub has been relaunched as CHOP CHOP, promising a bona fide laneway experience. Located in Cavill Lane, in the heart of Surfers Paradise, the official VIP opening was attended by 250 foodies who were guided through signature dishes from a curated degustation menu, highlighting the wide selection of restaurants within the precinct. Love is in the Air Fashionistas were out in force for Sonia Stradiotto’s Runaway Show at Marina Mirage. Hosted by Karen Phillips, the event was one of many planned in 2019 for the award-winning designer’s 30th year in Australian fashion. Sonia spoke about the past, present and future which included the announcement of her new company branch, Integrity of the Cloth, an exclusive retail consultancy and retail professional opinion service. Since embarking on her fashion career in 1989, Sonia has always been about empowering women. The flamboyant designer will soon launch her charity, Girls Without Mothers (GWM) which aims to provide young girls with education in fashion, grooming and formal dress assistance. GWM is targeted at females who have lost a mother to cancer, accident, depression or are estranged from a mother. Gold Coast Suns Launch A stylish cocktail party at HOTA saw the Gold Coast Suns showcase their new-look team to guests as the club celebrated its 2019 season launch. The gala was hosted by SEA FM’s Dan Anstey and TV journalist Sarah Cumming, wife of senior coach Stuart Dew. The evening featured addresses from key figures at the club, including Dew and colourful club chairman Tony Cochrane. The club’s newly appointed co-captains David Swallow and Jarrod Witts also made an impression.
