Our cover depicts the totally enviable and wonderfully Zen Elsa Pataky, Spanish born model, actor, producer, author, mum of three (wife of Chris ‘Thor’ Hemsworth) and fitness fanatic, and Byron Bay local. In her latest project ‘Strong, How to Eat, Move and Live With Strength and Vitality’ Elsa shares secrets to good health, energy, staying strong in the face of life’s challenges. “Just trying to start doing little things. There are lots of innovative options – find what works for you. Long-term: Set up a group chat with your family. Make some channels rules like ‘no messaging after 10pm’ or ‘COVID-19 freezone’ and enjoy the informal conversation that will evolve. You’ll discover a new family dynamic and connection.

Self-isolating: Building resilience in uncertain times SELF-ISOLATING DOESN’T MEAN YOU’RE ALONE. HERE’S HOW YOU CAN WORK TOGETHER EVEN WHILE STAYING APART. We know the uncertainty of this time is not helping anyone. In reality, we’ve experienced a few unprecedented events this year already. Fiona Martin, a registered psychologist in the CSIRO Health and Wellbeing team, shares her professional advice on looking after your mental health if you’re working from home, self-isolating or just trying to maintain a normal routine. We’re all in this together Firstly, this is happening to everyone. This is a very unifying experience. If you’re feeling upset – know that others are feeling this too. Be kind and patient with your family, friends and peers. Not only are we dealing with this event but we’re navigating the rest of our lives at the same time. Recognise what works for you Does leaning into the information help you make sense of the chaos? Or do you need to scale back on social media or news bulletins? Take a moment to understand what feels right for you. You don’t need to know everything about the current situation. Be clear with your family, friends or peers when something isn’t working. Once you understand what works for you, set your boundaries.

Short-term: Speak up with simple things like: • With everything going on, I’m not shaking hands right now • I’m choosing to stay home and limit my physical contact • How about we Skype or FaceTime instead of catching up? Long-term: Boundaries are not restrictions– they are a form of communication. • They allow others to understand us better. They are important in every type of relationship, even our relationship with social media. Know what you need and communicate it clearly. Stay connected to your community When we work from home or are selfisolating, we start to feel disconnected from our peers or other important relationships in our lives. It can happen very slowly so make a plan to stay connected today. There is a range of great virtual working systems available to workplaces. Call your manager for a quick check-in each morning, set up a coffee date (physical or virtual) with a 10 slim magazine AUTUMN 2020

Create a routine and build on it Things can be very disruptive if you and your family are out of routine. You might have children at home, extra equipment around, or be unable to go to the gym. Many people vouch for a routine to minimise feeling anxious. Your routine will consist of very ‘ordinary’ things. Showering, brushing your teeth and eating breakfast are all part of your routine. Short-term: Adjust it slightly to accommodate for social distancing but try to keep a daily routine. Long-term: We all want to build better habits. One way is to start including them into your daily routine. When you put bread in the toaster in the morning, drink two glasses of water while it toasts. Build small healthy habits into your existing routine. The current situation can be challenging. Target your Goals THERE IS A STRONG POSSIBILITY THAT THE NEW YEAR’S RESOLUTIONS YOU SET WAY BACK WHEN HAVE NOT BEEN ACCOMPLISHED, AND LIKELY SET ASIDE WITH PROMISES TO PICK THEM UP AGAIN NEXT YEAR. ACCORDING TO A STUDY RELEASED BY THE UNIVERSITY OF SCRANTON, 92 PERCENT OF PEOPLE WHO SET GOALS DON’T ACHIEVE THEM.

With statistics that high, perhaps you are not the problem! Perhaps the very idea of setting goals sets people up for failure. There are a lot of books written and lectures dedicated to the idea of goal setting as a way of improving your life. The problem with this concept is that the original meaning of goal is “limit, obstacle or boundary”. If you are chasing a goal, you are unconsciously buying into the idea of creating limits and obstacles for yourself. It’s also important to be aware that a goal is a constant invitation to judge yourself—including judgments about whether you’ve accomplished your goal yet and whether you’re working hard enough towards achieving it. Usually, when you judge yourself it blocks you from achieving what you desire. If goals don’t work, then what? Should we all just resign to accept our lot in life and do the best with what we have? That is one choice. But not the one I recommend. HERE ARE MY TOP 3 TIPS ON CREATING THE LIFE YOU LOVE:

1.

Lose the Goals. Set Targets

Targets are different than goals. For starters, a target doesn’t come from judging you. A target comes from looking at what would be fun for you rather than looking at what is wrong with you that you should change.

Another thing about targets is that when you are aiming for a target, what is commonly considered as “failure” just becomes feedback; it is information that can help you adjust your aim and come closer to your target next time. It’s a much healthier and more empowered way of viewing the inevitable twists and turns of life. Aim for your target and if you miss, it’s no big deal. You can just aim and shoot again.

Your Target 2. Define

Have you ever stopped to ask yourself what it is you desire in your life? All too often we make choices based on what others tell us we should desire rather than taking a moment to ask, “If I could create my life exactly as I would like it to be, what would I choose? When you ask this question, you begin to have a sense of what you desire. You start to recognise what is fun for you. Use this information to define your targets.

Gratitude 3. Choose

Creating the life you love starts with gratitude. Rather than looking back and judging where you have decided you are not perfect, and making a firm decision to do or not do certain things, what if you took a moment to say thank you to you? What if you acknowledged what you have chosen? What if you were grateful for what you have created and all the amazing things and people you have in your life? 12 slim magazine AUTUMN 2020

If you have tried to change something in your life by setting goals, if you are thinking of giving up on your dreams and settling for the status quo because what you have done so far hasn’t worked, don’t! Never give up, never give in and never quit. Set targets, choose gratitude for you and start living the life you love!

THIS YEAR’S UPDATE OF THAT NATIONAL THINKUKNOW PROGRAM AIMS TO REDUCE THE IMPACT AND INCIDENCE OF ONLINE CHILD SEXUAL EXPLOITATION IN AUSTRALIA.

According to research by the Australian Centre to Counter Child Exploitation (ACCCE), only 21 percent of parents and carers think there is a likelihood that their child will be targeted by online child sexual exploitation.

The ThinkUKnow program, working together with the ACCCE, represents a holistic approach to fighting this crime,” she said.

That is despite 17,000 reports of online child sexual exploitation received by the ACCCE in 2019. Their research also showed the issue of online child sexual exploitation remains stigmatised, with 21 percent of parents or carers feeling online child sexual exploitation is too “repulsive” or “sickening” to even think about. Further findings highlighted that current preventative measures are reactive and inconsistent, with a need to provide effective education and awareness materials to families. ThinkUKnow has launched its 2020 program update, based on ACCCEcommissioned research.

Australian Federal Police Manager ACCCE, Marina Simoncini said the research was an important step in understanding the current landscape in Australia in order to develop effective evidence-based prevention initiatives. “Education and prevention play a critical role to counter the ever-increasing number of child exploitation reports received each year. Menopause and weight gain MENOPAUSE IS USUALLY A CAUSE OF MANY CONCERNS AMONG WOMEN. ONE OF THE MOST IMPORTANT IS THE FEAR OF WEIGHT GAIN. IN FACT, IT IS WELL KNOWN THAT OBESITY AND METABOLIC SYNDROME ARE FOUND IN WOMEN IN THIS PERIOD OF THEIR LIFE THREE TIMES MORE OFTEN THAN BEFORE MENOPAUSE.

There are a lot of myths – women are not sure whether obesity is associated with menopause per se, or perhaps with “hormonal therapy”? Is weight gain inevitable, something to which one should be reconciled, or is it the result of negligence in the areas of diet and physical activity? A lot of distressing symptoms in a woman’s life appear during menopause, such as hot flashes, mood disorders, sleep disturbances, and recurring infections of the urogenital tract. Moreover, a lot of metabolic problems emerge at this time – increase in body weight, insulin resistance, and glucose and lipid metabolism disturbances. In

consequence, the risk of development of Type-2 diabetes, osteoporosis, cardiovascular and oncological diseases increases. Obesity should be seen as one of the most important disturbances associated with the menopause, being not only a medical but also a social and economic problem. The incidence of obesity in the United States among women prior to menopause is 65 percent, and among women following menopause is almost 74 percent. Oestrogens in pre-menopausal women are responsible for the accumulation of fat in the subcutaneous tissue, 28 slim magazine AUTUMN 2020

particularly in the gluteal and femoral regions. At menopause there is a rapid fall in oestrogen levels, leading to an increase in body weight, unfortunately usually in the form of central obesity (fat inside the abdominal cavity). It is estimated that postmenopausal women had an almost five-fold higher risk of developing abdominal obesity and associated diabetes compared to premenopausal subjects. Central obesity has a much higher association with medical problems related to obesity, particularly diabetes, dyslipidaemia, hypertension and cardiovascular disease. In addition, weight gain in midlife contributes to other health risks including cancer, arthritis, mood disorders, and sexual dysfunction.

Do oestrogens affect appetite? It is well known that fat tissue, particularly in obese subjects, is the source of many hormones, one of the most important of them is leptin. Its levels reflect the volume of fat mass. Leptin inhibits appetite, acting centrally in the brain. It has been demonstrated that oestrogens increase the activity of leptin action, therefore helping with appetite suppression. At menopause when there is a rapid decrease in oestrogen, subsequently there is much less appetite restriction. Moreover, activity of ghrelin – the strongest hunger producing hormones produced in the stomach, (but also produced locally in the hypothalamus) – is partially blocked by oestrogens. Pre-menopause, oestrogen therefore aids to reduce appetite. It can be assumed that the rapid decline in levels of oestrogen would contribute significantly to an increase in appetite.

Because we lose muscle mass with age, we burn fewer calories at rest and also when we exercise. Couple these changes with moving less, and you have a recipe for weight gain. This explains why you may gain weight with the same diet and exercise routine that previously worked for you. When indicated, menopausal hormone therapy can be considered to manage bothersome menopausal symptoms, however there is no evidence that hormone therapy works as a treatment for obesity in post-menopausal women. Hormonal therapy is not recommended for prevention of chronic disease or prevention or management of weight gain.

Undoubtedly, weight gain during menopause is common. It is largely due to hormonal changes that take place at this time. However, also other factors should be taken into account. These include genetic as well as environmental factors, among which lifestyle changes (unhealthy diet, lack of physical activity), illness, certain medications, and other factors should be mentioned. Ageing itself is associated with decrease in lean body (muscle) mass, which decreases the metabolic rate, potentially increasing the body’s ability to accumulate fat tissue. Ageing is also associated with decrease in physical activity, which may be subtle and therefore not easily perceived by the individual. 29 slim-magazine.com.au

Born and raised in Madrid, Elsa Lafuente Medianu changed her name to Elsa Pataky in honour of her maternal grandmother, Rosa Pataky. Working as a model and in Spanish stage and TV productions, Pataky graced the covers of high-profile European and US titles as diverse as Elle, Cosmopolitan, Women’s Health and Maxim – one of the few models who could so comfortably adapt to all of them.

After relocating to the US, Pataky found success with several film roles and is probably best known for her as Elena Neves in The Fast and the Furious franchise.

She met Australian actor Chris Hemsworth in early 2010 and by the end of the year they married. Three children followed, India Rose and twins, Tristan and Sasha.

Before Chris Hemsworth, Pataky dated American actor and Oscar winner, Adrien Brody, who famously bought her a 19th ‘castle’ in upstate New York for her 31st birthday in 2007. Despite reams of celebrity magazine pages devoted to the couple’s domestic bliss and considerable decorating prowess, they broke up in 2009, paving the way for a change in direction and entire life path for Pataky.

Far from the stereotype of movie stars cloistered in the Hollywood Hills, Pataky and Hemsworth lead a chilled existence in Byron, mingling with the locals, surfing and regular yoga sessions on the sublime stretches of sand.

Magazine, the 43-year-old said their marriage, like most people’s, needed as much work as you would dedicate to any worthwhile pursuit, professional or personal. “Chris and I got married very quickly, we had children very early, so we’ve thrown every possible challenge at our marriage. A marriage is constant work because that initial infatuation dies down over the years and you both have to work the rest of your lives to keep the love alive. “Nothing is as easy and perfect as it looks,” she continued. “We have to work at being a couple like everyone else. As much effort as you put into your work, you have to put into your marriage and into being a dad and a mum.” A life-long devotee of yoga, Pilates and the health benefits of the beachside lifestyle, Pataky has made the leap into the role of author, candidly sharing her philosophy that building strength through cultivating the mind, body and diet is key to achieving ultimate health and vitality in her book, “Strong”. In its beautifully photographed pages, she shares simple ways to overcome mind-traps and other challenges; tips on managing cravings and sore muscles; her favourite high-intensity exercise circuits that can be done in the comfort of your own home with minimal equipment; straightforward and sensible nutrition advice to support your fitness program and fuel your body; and delicious, healthy recipes. “My goal is to live life fully – to thrive, not just survive. I do that by exercising daily, eating healthy foods and keeping my mind active. I could not imagine my life without exercise. For me, it is the glue that holds everything together: my health, my happiness, my relationship.” Her own routine consists of strength training at least twice a week, yoga or Pilates three or four times a week, and, lately, practicing Muay Thai, (Thai Boxing) which she picked up from Chris. The couple spends plenty of time training together, and enjoying pastimes they each love, which is important for maintaining motivation. “This is why I wanted to learn Chris’ favourite sport – surfing. Not only would we have more things to do together, but it was a great challenge for me. “In turn, I have introduced Chris to two of my favourite activities: horse riding

and motorbiking. Now he also loves them, which means we have even more opportunities to have fun together.” The kids are not left behind either, joining their famous parents for exercise on the beach, a dip in the ocean and even mini weights. “I get the kids to come train with me and I give them tiny weights – it becomes something interesting for them as well.” Pataky is an enthusiastic proponent of yoga, saying it made a “big difference to her body” and was instrumental in returning to fitness after the birth of her children. “It’s also for your mind. At the end you have that moment of laying down and five minutes kind of like a meditation. I think that’s really important for your brain and to come down. To create a strong body, you have to start with a strong mind. You have to decide that you want to make a change in your life.” 31 slim-magazine.com.au

Pataky also credits yoga with “styling” her muscles and giving her a leaner appearance. Naturally, Pataky favours the Mediterranean diet, heavy on vegetables, fruits, legumes, wholegrains, nuts, seeds and olive oil. “I don’t believe anything about diets, like quick diets that you do before summer. Those miracles don’t exist,” she said. Instead it’s Mediterranean-inspired meals every day for herself and her family, as fresh and organic as possible. As for her beauty regimen, the 43-year old has a range of simple staples she swears by. Speaking to beauty website, Gritty Pretty, Elsa said there are five products she can’t live without: Swisse’s multivitamin; Creme De La Mer Moisturising Cream (which she shares with Chris); Luma On The Glow Highlighter in Bronze Voyage – a $29.95 highlighter for creating a ‘glowy’ look for photos; Charlotte Tilbury Light Wonder Foundation and Dior J’Adore Perfume. At the recent launch of L’Oreal Paris’ new Botanicals Fresh Care range, based on an ethos of sustainability, Pataky was asked the eternal question about how she balances the competing responsibilities of career, husband, motherhood and the needs of her three kids. She answered with her refreshing honesty and back-to-basics wisdom: “I think it’s just, as we say, taking time for yourself. It’s very important. As hard as it is, I want to be 100 percent a mum. YOUR HEART IS A HOLLOW MUSCULAR ORGAN, ABOUT THE SIZE OF YOUR CLENCHED FIST. IT PUMPS BLOOD AROUND THE BODY, DELIVERING OXYGEN TO EVERY ORGAN AND CELL. Heart disease is Australia’s leading single cause of death, with 18,590 deaths attributed to heart disease in Australia in 2017, according to the Bureau of Statistics. Heart disease kills one Australian every 28 minutes. Diseases under the heart disease umbrella include blood vessel diseases, such as coronary artery disease; heart rhythm problems (arrhythmias); and heart defects you’re born with (congenital heart defects), among others. The term ‘heart disease’ is often used interchangeably with the term ‘cardiovascular disease’. Cardiovascular disease generally refers to conditions that involve narrowed or blocked blood vessels that can lead to a heart attack, chest pain (angina) or stroke. 90 percent of Australians have at least one risk factor for heart disease. The more risk factors for coronary heart disease you have, the greater your chance of developing it. The good news is that for most risk factors, you can do something about them. Risks you can control including smoking, cholesterol, high blood pressure, being inactive, diabetes, being overweight, and an unhealthy diet.

High blood pressure – or hypertension – means that your blood pressure is consistently higher than the recommended level. High blood pressure is not usually something that you can feel or notice, but over time if it is not treated, your heart may become enlarged making your heart pump less effectively. This can lead to heart failure. Having high blood pressure increases your chance of having a heart attack or stroke. It’s very important to get your blood pressure checked regularly, and if it’s persistently high it needs to be controlled. If you are diagnosed with high blood, your doctor is likely to encourage you to make some lifestyle changes to help reduce it. This may include increasing your physical activity, losing weight, reducing the salt in your diet, cutting down on alcohol and eating a balanced, healthy diet. Keeping your heart healthy, whatever your age, is the most important thing you can do to help prevent and manage heart disease.

Risks you can’t control include age, gender – men are at higher risk of heart disease, while women’s risk grows and maybe equal to men after menopause; ethnic background and family history. Blood pressure is the pressure of the blood in the arteries. This pressure enables the heart to pump blood around the body. High blood pressure is often termed the ‘silent killer’ as it usually doesn’t present any symptoms. How many kilos did you lose? 42kgs What was your relationship with food? Loved it. I ate it to fill the void of loneliness. What motivated you to go on your weight-loss journey? I gained weight because I was depressed and eating was comfort. Like a lot of people, I ate whatever I wanted thinking it would make me happier. My kids definitely motivated me to lose the weight, and my lagging performance on the fireground. My kids are 10 and 17. I’m a single dad and I enjoy doing things so I have to keep up with them. My son is a volunteer firey as well, so I can’t let him overtake me on the fireground! Last fire season being as busy as it was, I wanted to take measures to lose the weight and it’s just as well I did! This year was the busiest on record.

My kids are happy to have their fun dad back and my dog’s happy too because she gets walked all the time now! What made you decide on weightloss surgery and which procedure was the right one for you? I had seen the results of the sleeve gastrectomy procedure and decided to get busy living or continue dying. I found I had more energy, no aching knees, a complete new lease on life, and in my professional life. My kids are happy to have their fun dad back and my dog’s happy too because she gets walked all the time now! How long had you battled with weight issues? Five years. I found myself giving in to temptation and eating whatever I felt like as a reward and a way to ease the pain of splitting up with my partner. What health problems did you face as a result? Sore knees, extreme fatigue at fires, couldn’t pick my daughter up because it’d hurt and my balance was all over the place. Then there was the fact that my self-esteem was at an all time low. I felt and looked terrible.

Post-surgery, what have been some of the challenges? None. I’ve had very few incidents where I’ve bought food back up. If anything, it’s the desire to still want bad food, but that’s manageable with good choices, exercise and keeping busy. What are some of the benefits? You simply can’t eat the bad food. You learn quickly how your intake is very different. You immediately get an uncomfortable feeling as soon as you’ve swallowed something that’s not going to work. What are the improvements in your lifestyle as a result of your weight-loss? Much more improved on the fire ground – a lot more stamina and energy. sharing the fun keeping up with them, and going on a cruise once a year. What is your response to people who look at weight-loss surgery as “the easy road” to weight-loss? What’s wrong with the easy road? You take a shorter trip to the supermarket if there’s one available to save time. Life’s short; this procedure saves years of training and diet struggles which statically fail. At my age and stage, it’s been a total new lease on life and my self-esteem. Any regrets? No. 100 percent no. My advice to others is don’t wait, categorically do not wait! See the experts as they will explain everything. There was nothing unexpected about my recovery it was by the book and close to a year on, there’s no turning back at all. One of my colleagues has just had it done and I am looking forward to supporting him through his recovery as well.


Slim to none WHAT’S THE PROBABILITY OF AN OBESE PERSON ATTAINING NORMAL BODY WEIGHT?

The chances of an obese person being able to attain a healthy weight are incredibly low, and they get even lower once a person reaches the point of severe obesity. These findings, which were the result of a 2015 study looking at data from UK health records, suggest that by focussing on simple diet and exercise, current weight management programs just aren’t working when it comes to obesity. The researchers from King’s College London, found that an obese man has a 1 in 210 chance to get himself to a healthy body weight, which becomes a 1 in 1,290 chance if he’s severely obese. For women, being obese means they have a 1 in 124 chance of attaining a healthy body weight, or a 1 in 677 chance if they have severe obesity.

According to lead researcher, they drew a sample of individuals aged 20 years and older from the United Kingdom’s Clinical Practice Research Datalink from 2004 to 2014, then analysed data for 76,704 obese men and 99,791 obese women (excluding participants who received bariatric surgery.) They found that with diet and exercise regimes alone, the chances of an obese person getting their weight to normal (BMI 25) was: If BMI 30-35: 1 in 210 for men and 1 in 124 for women; If BMI 35—40: 1 in 701 for men and 1 in 430 for women; If BMI 40-45: 1 in 1290 for men and 1 in 677 for women. ORTHOPAEDIC SURGEONS ARE INCREASINGLY USING COMPUTERS AND ROBOTICS TO NAVIGATE PATIENTS’ BODIES WITH UNPRECEDENTED PRECISION DURING SURGERY. DR ANDREW LETCHFORD, ORTHOPAEDIC SURGEON Using CT, MRI and PETS scans, surgeons build a 3D model of their patient’s body, which is then electronically matched to the patient during surgery using infrared cameras, so the surgeon can see the precise location of bone, nerves and blood vessels. The machines mean surgeons can operate on patients with previously inoperable tumours in difficult to reach places where there was a risk of cutting vital nerves and blood vessels - or of spreading cancerous tumour cells. Some orthopaedic surgery may now also be undertaken using a robot. Robots may be used for joint replacement, spine and bone cancer surgery. In a robotically-assisted operation, planning for the optimal positioning of the joint replacement components to fit the patient’s anatomy is done by specialist engineers, in collaboration with the surgeon. The robot creates a 3D representation that matches a CT scan of the patient’s body. During the surgery, the robot helps the surgeon to scale their movements and correctly place the components of the prosthesis in the body, while a 3D camera gives a view of the operative field. Demystifying Menopause MENOPAUSE IS A FACT OF LIFE FOR EVERY WOMAN, AND ALTHOUGH WE CAN’T STOP IT OR ITS SYMPTOMS, WE CAN MANAGE THEM AND ENSURE THAT YOU ARE AS COMFORTABLE AS POSSIBLE.

There are four stages of the menopausal process: STAGE 1 The first stage of menopause is called ‘pre menopause’. During this stage, a woman’s reproductive system is active and continuing its monthly cycle of menstruation. STAGE 2 The second stage is known as ‘perimenopause’. At this stage women, usually aged between 45 and 55, will begin to have irregular periods, and levels of oestrogen, progesterone and testosterone will begin to decrease. STAGE 3 The third stage of the process is ‘menopause’; this stage is where a woman notices the completion of her menstruation or her final period. Waist watchers WE OFTEN HEAR THE COMPLAINT THAT MENOPAUSE CAUSES WEIGHT GAIN, BUT A RECENT STUDY SUGGESTS “THE CHANGE” DOESN’T CAUSE WEIGHT GAIN, BUT INSTEAD A REDISTRIBUTION OF FAT TO THE WAISTLINE FROM OTHER PARTS OF THE BODY.

The research, led by Ananthan Ambikairajah, a PhD candidate at the Australian National University, was published in the American Journal of Obstetrics and Gynecology. It reviewed studies that included more than 1 million pre- and postmenopausal women and found while women’s waist circumference increased after menopause, the amount of fat carried in their legs actually decreased. “The implications are important, because central fat has been linked with dementia risk, and central fat is linked with cardiovascular disease risk,” said Ananthan Ambikairajah. “There’s the decrease in metabolism that happens as people age. People often say, ‘I can’t eat like I used

to when I was younger, the excess weight just doesn’t seem to vanish when I eat well’. That’s related to an ageing metabolism.” The study highlights the need for women to monitor waist circumference, and not just weight. The tape measure should be placed about halfway between the bottom of your lowest rib and the top of your hip bones, roughly in line with your belly button. WE ARE WHAT WE EAT, AS THE SAYING GOES, BUT THERE’S A LOT MORE TO THE EQUATION THAN THIS. HERE, FOOD SCIENTIST, DR JAROSLAV BLAZEK EXPLAINS HOW TO ACHIEVE WEIGHT-LOSS WITHOUT HAVING TO STARVE OURSELVES. Dr Blazek moved to Australia in his early 20s enticed by the opportunities in the food industry, and proceeded to complete his PhD in food science at the University of Sydney.

Dr Blazek explains “Maintaining diet high in protein and dietary fibre to keep us full for longer is not always easy, especially when we take into considerations various dietary limitations as well as lifestyle factors such as eating on the go.

He was frustrated by the lack of good quality and scientifically proven weight-loss products in the Australian marketplace and set out on a mission to develop a line of scientifically proven and high-quality products for Australians passionate about their health. Conscious of his own ageing and increasing demands on his work and personal life, Dr Blazek says, “Just like most people my age who are trying to balance work and life in this age of competing priorities, I have a slowing metabolism, meaning I can no longer eat as much as I used to in my 20s. “I also have a huge sweet tooth, and after a stressful day love snacking in the evenings.” Dr Blazek has worked with many large manufacturers and has assisted them with developing new products and sourcing ingredients but has often been disappointed with his customers’ decisions to lower the amount of active ingredients for cost reasons or making the product less nutritionally optimal in order to maintain acceptable taste. Dr Blazek points out that the mechanism behind weight-loss or healthy weight maintenance is not complicated. To lose weight you must create a negative energy balance: calories taken are less than calories expended. Of course, this is easier said than done. Lowering our calorie intake leads to hunger. “The trick lies in choosing the right foods to keep hunger under control,” he explains. “Foods that are highly processed or high in simple sugars deliver instant satisfaction but do not keep us full for long”.

“On the other hand, foods rich in protein and dietary fibre will keep the feeling of hunger away for a lot longer.”

“This is when choosing the right weight-loss product is a great way to ensure our nutrient intake follows the latest guidelines and assists us with losing weight without being hungry. Do your research, read the ingredient list and pick a product, which is low in sugar, high in protein and dietary fibre and does not contain any artificial ingredients or additives.”

Throughout his career as an expert in dietary fibres, Dr Blazek has been amazed at how insoluble fibres contributes to the feeling of satiety while delivering zero calories, making them the perfect ingredient to assist with weight-loss. These fibres are found in most plant sources, commonly in cereals such as wheat and oats, but also in most fruit and vegetables, albeit in fairly-low concentrations. Dr Blazek points out that “dietary fibre and its benefits are not a sexy topic to talk about but very large epidemiological studies done in Europe consistently show that dietary fibre intake is one of the best predictors of health and has amazing preventative effects against colon cancer and other lifestyle diseases”. The reason these insoluble fibres are not more commonly used in weight-loss shakes is because they contribute to a somewhat gritty or sandy feel in the mouth. INGREDIENTS MAKES ABOUT 400g • 220g cacao butter • 250ml (1 cup) coconut oil, plus extra if needed • 250g (2 cups) cacao powder, plus extra if needed • 1 teaspoon vanilla bean paste or powder • 2–4 drops of liquid stevia or • 250ml (1 cup) monk fruit syrup, plus extra if needed

METHOD Line a baking tray or loaf tin with baking paper. In a saucepan over medium–low heat, gently stir the cacao butter and coconut oil until melted and well combined. Remove the pan from the heat and gently whisk in the cacao power, vanilla and your sweetener of choice. Keep whisking until thick, creamy and well combined, then taste and evaluate the consistency and sweetness as follows: For a thicker, darker chocolate, add some more cacao powder. For a smoother chocolate, add some more coconut oil. For a sweeter chocolate, add some more sweetener of choice. Once the chocolate has reached your desired taste and consistency, pour it into the prepared tray or tin, transfer to the fridge or freezer and leave until set firm. Store in an airtight container in the fridge for up to 1 month, or in the freezer for up to 3 months.

GOOD TO KNOW: This chocolate can easily be flavoured with your favourite ingredients. To do so, simply pour the chocolate into the tray as above and then sprinkle over your chosen nuts, seeds and fresh or freeze-dried berries. INGREDIENTS MAKES 12 BISCUIT BASE • 125g (½ cup) peanut or almond butter • 1 egg • 3 tablespoons monk fruit syrup, maple syrup or coconut nectar • 2 tablespoons cacao powder • pinch of sea salt

MINT FILLING • 125ml (½ cup) coconut oil • 200g (1 cup) coconut butter • 2–4 drops of peppermint essential oil • 2–4 drops of liquid stevia or 2 tablespoons monk fruit syrup CHOCOLATE TOPPING • 200g Luke’s Block of Choc (see recipe on page 56), melted

METHOD Preheat the oven to 160°C and line a 12-hole muffin tray with silicone or paper cases. For the biscuit base, mix all the ingredients in a bowl. Divide the mixture evenly among the muffin holes, then use your fingers to press it down to create an even, flat layer. Bake for 12–15 minutes, or until set and slightly coming away from the edges. Remove from the oven and leave to cool completely. For the mint filling, melt the coconut oil and coconut butter in a saucepan over medium–low heat, stirring until well combined. Remove from the heat and stir in the peppermint oil and your sweetener of choice. Set aside to cool slightly, then spoon the mixture over the biscuit layer in the muffin tray, using about 1 tablespoon per hole. Transfer to the freezer for 30 minutes for the mint layer to set completely. For the chocolate topping, melt the chocolate in a small saucepan over low heat, stirring, until thick and creamy. Remove from the heat and leave to cool slightly so that it is still runny but not super hot. Once the mint filling is set, remove the tray from the freezer and pour the melted chocolate evenly over the top to cover completely. Return to the freezer for another 30 minutes or until the chocolate topping has set completely. When ready to serve, remove the slices from the tray and leave to soften and come to room temperature. Enjoy.

Bake for 20–25 minutes, or until the tops are set and slightly cracked but the puddings are still a little wobbly in the centre. Remove the ramekins from the oven and leave to cool slightly. Served topped with a few extra berries.

GOOD TO KNOW: If you don’t have any ramekins, you can always make these in a greased muffin tray instead. Just be careful when turning the puddings out to serve.

CHICKEN AND QUINOA SOUP INGREDIENTS SERVES 2

• 200g lean chicken breast fillet

• 1 teaspoon olive oil

• 3 tablespoons quinoa, rinsed and drained

• ½ leek, halved lengthways and finely sliced

• 1 carrot, coarsely grated

• 250g peeled pumpkin, coarsely grated

• 1 cup shredded Chinese cabbage (wombok)

• 2 cups salt-reduced chicken stock

• 2 tablespoons chopped flat-leaf parsley

1. Heat the olive oil in a saucepan over medium heat. Add the leek and pumpkin and cook, stirring regularly, for 3 minutes. 2. Pour in the stock and 2 cups water. Cover and bring to a simmer. Add the chicken and cook, partially covered, for 8 minutes. Remove the chicken and set aside on a plate to rest. 3. Add the quinoa to the pan and simmer, covered, for 8 minutes. Add the carrot and cook for a further 3 minutes or until the quinoa is tender. 4. Finely shred the chicken and add to the pan, along with the cabbage. Recipes……… GINGER PRAWNS INGREDIENTS SERVES 2-4 • 3 tablespoons coconut oil or good-quality animal fat • 600g raw prawns, shelled and deveined, tails left intact • 5cm piece of ginger, cut into fine matchsticks • 4 spring onions, white parts chopped, green parts finely shredded • 4 garlic cloves, finely chopped

• 2 bird’s eye chillies, finely sliced • 80g gluten-free oyster sauce • 1 tablespoon fish sauce • 2 teaspoons coconut sugar • 250ml (1 cup) Brown Chicken Bone Broth • sea salt and freshly ground • black pepper • 1 handful of Thai basil leaves

METHOD Heat 1 tablespoon of the coconut oil or animal fat in a wok or large frying pan over medium–high heat. Add the prawns in batches and cook for 15 seconds on each side. Remove from the pan and set aside. Wipe the pan clean, add the remaining oil or fat and place over medium–high heat. Add the ginger, spring onion whites, garlic and chilli and stir-fry for 2 minutes, or until fragrant and starting to colour slightly. Combine the oyster sauce, fish sauce, coconut sugar and broth in a bowl, then pour into the pan and stir. Simmer for 1–2 minutes, or until the sauce thickens. Return the prawns to the pan, add the spring onion greens and toss for about 30 seconds until the prawns are just cooked. Remove from the heat, season with salt and pepper, toss through the Thai basil leaves and serve.

STEAK WITH MUSHROOM BORDELAISE SAUCE INGREDIENTS SERVES 4 • 4 x 180–220g boneless rib-eye steaks • 2 tablespoons coconut oil or good-quality animal fat* • sea salt and freshly ground black pepper • 1 teaspoon thyme leaves

MUSHROOM BORDELAISE SAUCE • 1 x 12cm piece of beef marrow bone, halved lengthways (ask your butcher) • 2 tablespoons coconut oil or good-quality animal fat* • 1 French shallot, finely chopped • 250g Swiss brown mushrooms, finely sliced • 40ml Red Wine Jus

METHOD Preheat the oven to 200°C (180°C fan-forced). To start the mushroom bordelaise sauce, season the bone marrow with salt, place in a roasting tin and roast in the oven for 15 minutes, or until cooked through. Keep warm. Heat a barbecue hotplate to medium–hot or a large frying pan over medium–high heat. Brush the steaks with the coconut oil or animal fat and season with a good pinch of salt and pepper. Cook the steaks on one side for 2–3 minutes, then flip and cook for a further 2–3 minutes for medium–rare (or cook to your liking). Transfer to a plate and rest for 4–6 minutes, keeping warm. Meanwhile, to make the mushroom bordelaise sauce, heat the oil or fat in a large frying pan over medium heat. Add the shallot and sauté for 3 minutes until softened. Add the mushroom and sauté for 5 minutes until softened and lightly golden. Pour in the jus and bring to a simmer. Scoop out the flesh from the marrow bones and toss through the sauce. Taste and season with salt and pepper if needed. Thickly slice the steak and place on a platter. METHOD Place the rice and 2 cups (500ml) of the stock in a large saucepan. Bring to the boil over high heat, stirring to stop the grains clumping together. Reduce the heat to the lowest setting, cover and simmer for 30 minutes. You want the rice to be slightly underdone, as it will be cooked more later. Alternatively, use a rice cooker. Meanwhile, season both sides of the chicken with salt and pepper. Heat 1 tablespoon of the oil in a non-stick frying pan over medium heat. Add the chicken, skin-side down, and cook for about 8 minutes until the edges of the chicken start to turn opaque. Reduce the heat to medium–low, flip the chicken and cook the other side for 5 minutes. Remove the pan from the heat, cover and set aside. Heat the remaining oil in a large saucepan over high heat. Sauté the onion, mushroom and garlic for 5 minutes, stirring constantly. Add the kale and cook for another 3minutes. Now add the cooked rice and the last cup of stock. Cook for 8minutes, keeping the mixture moving, until the stock reduces by half. The texture should be smooth like risotto, not soupy. Check for seasoning and add a little salt and pepper if you like. Divide the rice mixture between serving plates. Slice the chicken and arrange on top. Finish with the fresh herbs and serve with lemon wedges.

Recipes……… HERBED POTATO SALAD WITH SOFTBOILED EGG INGREDIENTS SERVES 4 • 1kg (about 8) waxy potatoes, left whole and unpeeled • 4 large organic eggs • 1 litre iced water • cup (160g) olive oil mayonnaise • 2 tablespoons extra-virgin olive oil, plus extra to serve • 2 teaspoons lemon juice, plus extra to serve • 2 teaspoons finely grated lemon zest

• 1 tablespoon Dijon mustard • 2 tablespoons toasted sesame seeds • 1 tablespoon roughly chopped basil leaves • 1 tablespoon finely chopped dill fronds • 1 tablespoon finely chopped mint leaves • 2 teaspoons finely chopped tarragon leaves • sea salt flakes and freshly ground black pepper

M ETHOD Place a large saucepan of water over high heat and bring to the boil. Add the potatoes, reduce the heat to medium and boil for 12–15 minutes until fork tender but not mushy. Drain. Allow to cool, then peel and cut into chunks of similar size. While the potatoes are cooling, bring another saucepan of water to a rolling boil. Reduce the heat to a gentle simmer. Use a spoon to gently lower the eggs into the boiling water and cook for 6 ½ minutes. Drain, and immediately place the eggs in a bowl of iced water. With the back of the spoon, tap the tip of each egg to break the shell, then carefully peel in the water. Rinse and set aside to dry. Place the mayo, oil, lemon juice and zest, mustard, half the sesame seeds and half the herbs in a large bowl and whisk until well combined. The dressing should be creamy rather than runny. Add the potato and gently toss everything together. Check the seasoning and add salt and pepper to taste. To serve, divide the potato salad among four plates. Add an egg to each plate and carefully cut in half. Drizzle over a few drops of extra oil and lemon juice and finish with a sprinkle of the remaining sesame seeds and fresh herbs, and a final grind of pepper.

RASPBERRY RIPPLE CAKE INGREDIENTS SERVES 6-8 • 600ml pure cream • 250g (1 cup) crème fraîche • 1 vanilla pod, split and seeds scraped, or 1 teaspoon vanilla bean paste • 40g (¹⁄3cup) icing sugar, sifted

This is one of the most delicious and simple ‘cakes’: just cream and raspberries sandwiched between biscuits.

METHOD Combine the cream, crème fraîche, vanilla and 3 tablespoons of the icing sugar in a large bowl and whip to stiff peaks. Place the raspberries in a bowl with the lemon zest and the remaining 1 tablespoon of icing sugar and crush together with the back of a fork. Line a 23 cm loaf tin with plastic wrap, with plenty overhanging. Spread a thin layer of the whipped cream over the base then top with a layer of biscuits. You can break some of them if you need to make them fit. Top with another layer of the cream, then half of the raspberry mixture. Repeat the layers with the remaining ingredients, finishing with cream (reserve about ½ cup of the cream mixture for finishing the cake). Enclose the cake with the overhanging plastic wrap and place in the freezer overnight. Transfer to the fridge and leave for a further 8–12 hours. When ready to serve, release the cake from the tin by sitting it in some hot water for 30 seconds. Unwrap the overhanging plastic wrap, pop your serving plate over the tin and invert the whole thing. Lift off the tin and remove the plastic wrap. Use the remaining cream to cover the sides and top of the cake, then decorate with extra raspberries and some red currants (if using). CRÊPES WITH WHIPPED RICOTTA

For the sauce, warm the olive oil in a large deep frying pan or flameproof casserole dish over medium heat. Gently fry the onion, celery and carrot for around 15 minutes until soft and beginning to caramelise ever so slightly. Add the passata, bay leaf and 200ml of water and simmer for 10 minutes until slightly thickened. Season with salt and keep warm.

INGREDIENTS SERVES 4 • 250g (1 ²⁄3 cups) plain flour, sifted • 550ml full-cream milk • 2 eggs • 1 tablespoon caster sugar • pinch of fine sea salt • 1 teaspoon ground cinnamon • 1 vanilla pod, split and seeds scraped, or 1 teaspoon vanilla extract • 100g unsalted butter, melted and cooled, plus extra for cooking

Meanwhile, prepare the involtini by first making the filling. In a large bowl, combine the raisins, pine nuts, breadcrumbs, parsley, sage, garlic and pecorino. Season with salt and a little pepper.

WHIPPED RICOTTA

Lay the pieces of beef out flat and cover each one with a slice of prosciutto. Scatter some filling over each piece of prosciutto, distributing it evenly among all the slices, and roll up from the shortest side. Fasten each involtini with a skewer or toothpick.

• 300g fresh full-fat ricotta • 1 tablespoon caster sugar • finely grated zest of 1 lemon or orange • pinch of ground cinnamon

METHOD Mix together the flour, milk, eggs, sugar, salt, cinnamon and vanilla until smooth. Add the melted butter and mix until well combined. (I do this in a blender, but you can whisk by hand in a large bowl). The batter should be quite runny, almost the consistency of thickened cream. If necessary, transfer to a container or jug, cover and allow to rest in the fridge for at least 2 hours or ideally overnight. For the whipped ricotta, simply whisk the ingredients together in a large bowl until smooth. Transfer to a serving dish and set aside. Warm a large non-stick frying pan or crêpe pan over a medium heat and, when hot but not smoking, add a little butter.

Heat another frying pan over a medium–high heat, then add the olive oil and sear the involtini on all sides. They don’t need to be deeply coloured, but a little golden is ideal. Return the pan with the sauce to a medium heat and nestle the involtini into the sauce, spooning some of it over the involtini to cover. Simmer, covered, for 25–30 minutes, turning the involtini halfway. The beef should still be tender and the sauce nicely thickened. Season the sauce with extra salt and pepper, if necessary, and serve with a scattering of extra sage leaves and some crusty bread.

When foaming, pour in about ¼ cup of the batter and immediately swirl the pan to spread the batter thinly over the base (or, if using a traditional crêpe pan, use the wooden tool to create the crêpe). Cook for just a minute, then flip using a spatula and cook the other side for 30 seconds. The crêpe should be golden and just cooked through. Transfer to a serving plate and keep warm. Repeat with the remaining batter, greasing the pan with extra butter when needed. Serve the crêpes with the whipped ricotta, topped with berries and honey or maple syrup.

NOTES: Often we’ll only use half the batter and store the rest in the fridge for the following morning; it may just need to be thinned out with a little milk the next day. While a proper crêpe pan does make things easier, if you don’t have one, any large frying pan will do. 67 slim-magazine.com.au

This is a delicious, filling and nutritious dinner. Not only is it full of flavour, but it’s also a quick meal to cook when you are low on time but still want something comforting and healthy.

IN GREDIENTS SERVES 4 Prep 10 mins - Cooking time 30 mins • 1 onion, diced • 2 garlic cloves, crushed • 500g beef mince • 1 teaspoon salt • 1 teaspoon cumin • ½ teaspoon turmeric • ½ teaspoon thyme • 1 teaspoon dried chilli (optional)

CHILLI MANGO SAUCE

In two serving bowls, evenly divide the chopped kale. Place on the base, then evenly top up each bowl with cabbage, mango, cucumber, prawns, avocado and edamame beans. To make the dressing, place all the ingredients into a blender and whizz until smooth. Drizzle the dressing on top of the main ingredients.

• 2 capsicums, diced • 2 carrots, diced • 5 ripe tomatoes, diced • 1 x 420g can black beans • 1 tablespoon olive oil • 2 cups of water • Fresh coriander to serve

METHOD Heat the olive oil in a large saucepan over medium heat and sauté the onion and garlic. Add the mince and brown for 5 minutes. Add the salt, cumin, turmeric, thyme and chilli and stir until combined. Once the mince is brown, add all of the diced vegetables and black beans. Add the water and allow to simmer for 25 minutes. Add more salt and chilli to your taste. Serve with fresh coriander.

AVOCADO BOATS WITH TUNA SALAD

INGREDIENTS

SERVES 4 Prep 10 mins • 2 ripe avocados • 185g can tuna chunks, drained • 3 tablespoons corn kernels • ½ small red onion, finely diced • ¼ cup cucumber, finely diced • 1 tablespoon whole egg mayonnaise • Juice of half a lemon • Salt & pepper • 1 spring onion, thinly sliced

Cut the avocados in half lengthwise and remove the seed. Scoop out a little bit of avocado from each half to make the centre hole larger and place the scooped out avocado in a mixing bowl. In the mixing bowl, add the drained tuna, corn kernels, diced red onion, diced cucumber, mayonnaise, lemon juice, salt and pepper. Mix the tuna salad together until combined and then evenly distribute the salad between the 4 avocado halves. Sprinkle the top with sliced spring onion.

Using the avocado as the dish looks amazing, tastes amazing and makes this a great takeaway lunch. The fillings can be changed up by choosing ingredients which suit you.

BRAZILIAN SEAFOOD STEW – MOQUECA INGREDIENTS

METHOD

SERVES 4 Prep 10 mins Cooking time 30 mins • 2 garlic cloves, grated • 1 teaspoon fresh ginger, grated • 1 onion, sliced • 4 fresh tomatoes, diced • 1 x 440g can tomatoes • 400ml coconut milk

This is my version of the famous fish stew that in Brazil they call Moqueca.

• 2 white fish fillets • 300g seafood mix • 4 king prawns, green • Juice of 1 lime • 2 sprigs coriander • 1 tablespoon olive oil • Salt & pepper to taste

Heat a large pan or wok over medium heat. Add the olive oil, garlic, ginger and sliced onion and sauté for 3 minutes. Add the diced tomatoes, sauté for a further 3 minutes and add the can of tomatoes. Simmer for a few more minutes then add the coconut milk and lime juice. Combine and simmer for 5 minutes, stirring to prevent it from sticking to the bottom. Add the seafood to the simmering sauce and allow to poach for 12 minutes. Add the coriander at the end and serve in large bowls.

Meating of minds THE CSIRO AND THE MAN BEHIND HUNGRY JACKS, JACK COWIN, HAVE COMBINED FORCES TO CREATE V2FOOD, A SUSTAINABLE, PLANT-BASED ALTERNATIVE TO MEAT.

Made from legumes, the v2food “mince” looks and tastes like meat, and contains added fibre and nutrients. v2food was formed by CSIRO’s Innovation Fund, managed by Main Sequence Ventures, a part of the Australian Government’s National Innovation and Science Agenda (NISA), in 2018. Competitive Foods Australia, the company behind Hungry Jack’s, also contributed seed funding to help launch the startup. The company is led by former Masterfoods and PepsiCo Research Director, Nick Hazell. “Making meat alternatives from plants is not a new idea, but at v2food, we’ve taken it a step further. We are on a journey to make plant-based food both taste better and be more sustainable. The protein substitutes, available to date, simply don’t taste as good as meat and they are not affordable,” Hazell said. “We’ve seen a huge opportunity for plant-based proteins and the category is set to explode,” added Jack Cowin, the Chairman and CEO of Competitive Foods Australia. “I’ve eaten beef all my life but I’ve tasted the v2food and it tastes as good as beef. We can’t wait to take v2food to consumers with some fantastic new products.”

v2food has been collaborating with the grain and meat industries to add plant-based meat to the Australian agricultural story. CSIRO projects this new industry to be worth $6 billion+ by 2030 in Australia. This provides a big opportunity for existing meat and grain producers. It is estimated that by 2050 the world’s population will need twice the amount of food we consume today. Australia doesn’t currently have the capability to process legumes for plantbased meat alternatives. With the help of CSIRO, v2food is working on developing an all-Australian value chain.

“This is an exciting opportunity for Australian grain farmers to be at the forefront of this growing market, which will help them grow and create new jobs. It’s a new segment that could inject $6 billion to our economy by 2030,” said the Hon Karen Andrews, Minister for Industry, Science and Technology. v2food will begin to appear in restaurants and cafes throughout the remainder of the year and aims to have a presence in-store and in cafes around Australia during 2020. The Top Five Reasons People Buy Gym Memberships Every Year But Don’t Go

AUSTRALIA IS ONE OF THE MOST OBESE COUNTRIES IN THE WORLD, DESPITE A THRIVING FITNESS INDUSTRY. The Australian Bureau of Statistics found in 2018 that two thirds of Australian adults were overweight or obese. Fitness industry expert and founder of SpeedFit, Matej Varhalik says that’s because most people think the answer to their weight issues is to go to the gym. But he claims the gym industry is built on selling memberships rather than getting people fit and isn’t actually a suitable solution for the majority of the population.

So why are so many people buying in but not turning up?

1.

Gyms don’t cater to specific needs: Gyms are often not suitable for people with injuries, the elderly or accessible to many who have a disability.

2.

New members don’t know where to start: While most health professionals recommend working with a personal trainer or physiotherapist to develop a gym program, that does constitute an additional cost on top of the already expensive membership – but learning how to use equipment by yourself is difficult.

3.

“The fact is that the business model for most gyms is built on people not going,” says Mr Varhalik.

The gym is too busy: All regular gym goers have been involved in battles over machines, trying to find a free treadmill and just the general hustle and bustle of navigating a gym during peak periods can make it feel like a wasteful exercise.

“If everyone who bought a membership did go, our gyms would be filled to the brim and unusable,” he said.

“Our experience talking to people in the industry is that it can be as high as 80 percent of people at a particular gym paying for a membership but not going. And that means they never get the health benefits they should be finding.

5.

“Part of the reason for that is the gym is simply not suitable for everyone – in fact, the majority of people probably need to take a different approach.” A Finder survey from 2018 found that Australians were wasting 1.8 billion dollars on unused gym memberships.

Self-consciousness (and all those mirrors): If you’re not already a fit person, gyms can be confronting and intimidating places to be.

Gyms don’t incentivise you to go: It’s a rare gym that follows up on you actually attending. There are lots of incentives for being a member – but few for turning up. In 2016, a Harvard researcher looked into why so many people found it so difficult to fit proper exercise in their lives, finding it was actually not in our nature to exercise – rather, that it is a way of coping with the conveniences of modern life. 72 slim magazine AUTUMN 2020
