Oh winter. No matter where you live, the drop in temperature brings us indoors, onto the sofa, under the doona… and into the kitchen. With our bodies hidden under layers of clothing it’s so easy to slip into bad habits. Winter is often the undoing of all my health and fitness routines. It’s so easy to have that extra helping of some slow-cooked comfort food, or to reach for the chocolate. Maybe it is some innate need to hibernate. Whatever the case I have faced too many summers with too many extra kilos, piled on during those long, cold winter months. But not this year. This year I’m going to find a balance. For every hot chocolate there will be a hot Bikram yoga class, for every slow-cooked casserole there will be a fast walk (with my new puppy), and for every gram of chocolate there will be a kilo of weights lifted. I intend to make this a healthier, happier winter, and face summer – and my bathers – ready to go. Carrot and Walnut Cake with Philly Frosting Ingredients 1 ¾ cups self raising flour 1 ½ teaspoons cinnamon ½ teaspoon nutmeg ½ teaspoon bicarbonate of soda 1 cup brown sugar 2 ½ cups grated carrot (approx. 2 carrots) ½ cup chopped walnuts, or pecans 3 eggs 1 cup vegetable oil ½ cup well drained crushed pineapple 250g Philadelphia Frosting Cream Cheese with a hint of Lemon flavour Walnuts, extra for decoration Method Sift the flour, spices and bicarb into a large bowl, add sugar, carrot and nuts and mix well. Whisk together the eggs; oil and pineapple then stir through the dry ingredients until well combined. Pour into a greased and base lined 20cm round cake pan. Bake in a moderate oven 180°C for 1-1¼ hours or until cooked when tested. Stand for 10 minutes before turning out onto a wire rack. Cool. Spread the cake liberally with the Philly Frosting and sprinkle with the extra nuts. Slice and serve immediately.

Only wash strawberries right before you plan to eat them, they are like sponges and will soak up all the water they come in contact with. Any left over fruit can be frozen and added to a smoothie later. P otatoes - Royal Blues How to store them: Unwashed potatoes and sweet potatoes are best stored in a cool dark place, such as inside a brown paper bag in the cupboard. However all washed potatoes that have clean skin (no dirt) such as Desirees or Nadines should be kept in the fridge crisper to stop them from going green. P umpkin - Butternut in particular How to store it: Store pumpkin in a cool dry place with space around it so the air can circulate. Hard news on soft drinks

Primary and secondary school students are five times as likely to be high consumers of sugar-sweetened drinks, such as soft drinks, if these drinks are available in their homes, according to a University of Sydney study published in the journal Preventive Medicine. The study, which used data from the 2010 New South Wales Schools Physical Activity and Nutrition Survey (SPANS), found alarming levels of soft drink consumption in school aged children, especially those with easy access to these drinks. Half (52 percent) of the 8058 students surveyed were boys and 59 percent were high school students. The authors of the study found students were more likely to be high consumers of soft drinks if they were from a lower socio-economic background or were boys. Lead author and accredited practicing dietitian, Lana Hebden said the study indicated strong associations between school students’ access to soft drinks at school or in the home and increased consumption. “We also found students who drank soft drink with meals at home were almost 10 times as likely to be high consumers of these drinks,” she said. “Parents need to consider what is stored in their cupboards or fridge and what their children have access to.” “Consumption of these drinks has been associated with body weight gain in youth, dental cavities in young children and elevated blood pressure, insulin resistance and lower bone mineral density in adolescents.”

A major study led by researchers from the University of Sydney will examine the incidence of severe paediatric trauma for the first time in Australia and look at how to prevent serious injuries to children. The ground breaking six year study, the first stage made possible by a donation from the Day of Difference Foundation, will bring together the evidence needed to change healthcare policy to better support the parents of critically injured children as well as ensuring injured children are treated at the right hospital. Alarmingly, more than 1000 children are hospitalised each week in Australia as a result of a serious injury. And the number of children hospitalised after injury in Australia in 2006-2007 was double the number of children hospitalised for asthma, diabetes and cancer combined. The study and research program is being developed by Associate Professor Kate Curtis and Associate Professor Kim Foster from the University’s Sydney Nursing School and Dr Rebecca Mitchell from Transport and Road Safety Research, University of NSW. Associate Professor Curtis said the research will, for the first time ever, describe the incidence of severe paediatric trauma Australia-wide and also seek to identify the unmet needs of the parents of injured children. “We want to find out what we can do to improve care for severely injured children and to help their families,” Associate Professor Curtis said. “We’ll find out what can be done to benefit children and parents to help them navigate and get through this highly stressful experience. Our research will enable us to target injury-prevention campaigns and policy at specific causes, so there can be fewer children suffering severe injury in the first place.”

A new Australian study has found that Aged Garlic Extract significantly reduces blood pressure in Australian adults with hypertension, offering hope to those who don’t respond well to prescription medications or would prefer a natural therapy. Published earlier this year in the European Journal of Clinical Nutrition, the study took place at the University of Adelaide. It was led by Dr Karin Ried from the University of Adelaide, now Research Director at the National Institute of Integrative Medicine (Melbourne), who has been researching the health benefits of garlic since 2006. The study found that two daily capsules of a high potency formula of Aged Garlic Extract was enough to reduce systolic blood pressure by an average of 12 millimetres of mercury – which is comparable to the effect of many commonly prescribed anti-hypertensive medicines. This is significant because a reduction in systolic blood pressure in this range lowers the risk of cardiovascular disease by 16 to 40 percent. “More than three million Australian adults suffer from high blood pressure, or hypertension, which places increased strain on their heart, and increases their risk of heart attack or heart failure. These results provide more robust evidence supporting the use of Aged Garlic Extract as a safe and effective adjunct treatment for hypertension that has few known side effects,” Dr Ried said. Aged Garlic Extract is made from organic cloves of garlic, grown without any herbicides, pesticides or other chemicals. The cloves are naturally aged in a 20-month process to prevent its antioxidant compounds degrading, maximise its beneficial properties and completely eliminate its odour. Side parting: Donned by models in New York and Paris, this look involved deep side partings tucked or pinned behind the ear. When it did arrive, she was faced with a barrage of criticism with critics saying she was out of touch. The book, Paltrow’s second, features recipes ‘for the foods she eats when she wants to lose weight, look good, and feel more energetic’, according to the description on Amazon. The book was born after a visit to her doctor revealed Paltrow was anaemic, Vitamin D deficient, and that her stress levels were through the roof. She was prescribed an elimination diet which got rid of all the baddies like coffee, alcohol, sugar, eggs, wheat, meat and processed food. Well known for her love of food and cooking, Paltrow said she was worried that all these restrictions would make mealtimes boring and repetitive, so she set about creating a collection of recipes that adhered to the strict dietary guidelines, but still tasted great. When someone has experienced substantial weight loss, what is the effect that is left on the body, specifically the skin? Weight loss can cause an enormous effect on the skin’s elasticity on various parts of the body. Most significant effects are seen in abdomen, back, thighs, arms and breasts. Some individuals may also lose a lot of fat in their face. Typically, because of rapid loss of fat, skin is not able to shrink and loose folds appear in the above mentioned areas. The abdominal ‘apron’ hangs southwards, breasts droop, folds appear in the back and over flanks and thighs become crinkled. The arms hang like mini wings. These changes can be quite distressing emotionally for the patients. What are the surgical solutions you offer to correct this? The surgical solutions are many and are area dependent. Conventionally a massive weight loss (MWL) patient typically needs body lift (also called belt lipectomy or circumferential dermolipectomy – which includes abdominoplasty or tightening of the muscular layer of abdomen) for the trunk. They most frequently also benefit from thigh reduction or cruroplasty, arms reduction or brachioplasty and breast uplift procedures. If they have lost a lot of volume in breasts and the breasts have become literally a bag of skin with little breast tissue, they may also need breast implants with a breast uplift or mastopexy procedure. The less frequent procedures are face lift, neck lift, fat injections in face, injection of muscle relaxants in face, or even fillers. Is there a substantial amount of scarring? All surgical procedures produce scars. The scars are always considered in relation to the improvement or, rather, the massive transformation that the surgery can achieve. However the scars are planned so that they can be mostly covered even in bathing suits. Typically the body lift produces scars circumferentially along the pubic area, groins and lowest part of back ( just above buttocks). The thigh and arm scars are also planned on the inner aspects. The scars are typically quite long and can be initially conspicuous, but with time they become paler and less noticeable.

What are some of the comments you have received from patients post surgery? I have performed body contouring procedures on several patients from different age groups, and body shapes so far. These patients usually are much healthier as they lose weight and with it their diabetes, high blood pressure, and sleep apnoea. However, they tend to become distressed with the excessive skin folds in various areas of body and this can lead to social recluse and isolation in some individuals. My patients often comment to me, after these procedures about how much these have improved their body image and helped them to regain their self confidence.

Dr Dilips Tips Work closely with a nutrition consultant or a dietitian to make sure that weight loss is not at the cost of nutritional deprivation and a balanced nutrition is maintained at all times. Weight loss patients can be nutritionally depleted and this can adversely affect healing of surgical wounds. Have a goal weight and BMI. The research for the surgical procedures, surgeon, and the consultation process is best started after reaching the goal weight and BMI. I generally wait for minimum of three to six months for the surgery once the weight is more or less stabilised and no further weight loss is occurring. It is also important to keep up with regular exercises to maintain healthy heart, lungs and muscles. Giving up habits such as smoking is critical for optimal surgical results and the preparation time for surgery can be very well used for this. Last but not least, many overweight patients also have diabetes and or high blood pressure. Many times, after weight loss, these problems spontaneously get better, but it is important to keep in regular contact with your GP and assure good control of these medical issues, which helps good preparation for surgical procedure and the anesthetic.

Brooke Watson says her decision to undergo lap band surgery changed her life.

S

he was only 25, but Brooke Watson, an Immunisation Program Officer on the Gold Coast knew she had to change her life. She was overweight and over it. “I think it all started when I got my job as a program officer,” Brooke says. “The position was based in an office with a canteen and also required me to work in the field. Before I knew it I was eating fast foods three times a day, and by Christmas of 2010 I weighed 92kg. I felt embarrassed, depressed, sad, self-conscious, disappointed… the list goes on and unfortunately none of it was good. My husband has loved me the same no matter how much I weighed, but for me, I felt, in ways, that I wasn’t good enough for him.” Like many of us, Brooke tried everything to lose weight. “I did try everything! Soup diet, protein diet, shakes diet, tablets, I even tried spraying a banana scent up my nose to get me through meal gaps! Some slightly successful but they all resulted in putting the weight back on. “I was lying in bed and I was sick of it… I needed to change my life and it needed to start now. So I typed weight loss solutions into the search engine and WeightLoss Solutions Australia (WLSA) was the first result. I clicked on the link and started reading. After about 10 minutes of reading the client stories I knew it was for me. I researched for a further six months before I made an appointment with the doctor, but already I knew it was what I had been searching for.” Like many WLSA patients, Brooke found that first appointment a little daunting. “I was freaking out,” she recalls. “I took my husband (who was my boyfriend at the time) with me. By the end of the appointment I was excited and nervous about the next few months, we had come to the decision that lap band surgery would be perfect for what I needed.” Brooke explains the surgery this way: “When I’m explaining lap band surgery to my friends I hold up my hand and create a circle with my index finger and thumb. I say that this is a band that has been placed around the top part of my stomach that has little pillows on the inside, creating a small pouch of my stomach above the band then the rest of my stomach below. The band has a tube attached that runs down to my stomach muscle where a port has been stitched in place. The port is where the nurse or doctor can insert or remove saline (water). To do this they put a little needle into the port. When they push the saline in it fills the little pillows in the band. This creates a smaller opening to the larger part of my stomach therefore you eat less because you feel full quicker. You also stay full for longer because your stomach works harder to digest the food enough to fit through the hole. You are also able to get the liquid removed using the same process.” She says the day of the surgery she was full of mixed emotions. “I was scared what it would feel like afterwards. I was also excited that the day had finally arrived. I remember lying on the bed in the pre-surgery room

I feel the best I ever have, I have an amazing husband and I’m excited about what the future holds!” waiting to be taken into the operating room, the anesthetist came in to check my details and he asked how old I was, he then said you have made a great decision and your life will never be the same after today. He was right! I look back at that day and thank myself for my decision and how great I feel because of it! “It has been one year and I’ve lost 35kg, I still can’t believe it when I say it. The band just helped me get control of my portion sizes and gave me that push to start making healthier choices. Before I knew it fast food was a part of my old life and trying healthy new foods was easy. I started walking most mornings for 30 minutes. Every week I would see a positive result which gave me more motivation! “I feel fantastic. Proud, excited, healthy, confident and overall amazing. In April my partner and I got married. It’s still something that I would have done, but I know my weight would have hindered the day, I would have felt self-conscious and disappointed about my appearance. Instead I felt loved, beautiful and complete. I married my best friend and I knew no matter what I weighed he would always think I was beautiful. “I enjoy life so much more now. From 110kg to 75kg in one year!


F

rom the outside looking in, Bill and Jennifer Jarrard seemed to have it all. Both successful trainers and authors, with a great marriage and enviable lifestyle, the couple shared almost everything – including a weight problem. Bill talked to SLIM Magazine about their decision to both have Gastric Sleeve Surgery. “I was about 50 and had put on some weight,” Bill said. “I was feeling a bit down so a doctor prescribed me some drugs for depression, but rather than help I quickly stacked on another 10 kilos and hit 95 kilos. I found out later the drug I was given was known to put weight on, so the doctor gave me exactly the wrong solution. “Around mid-2010 I hit 100 kilos for the first time, and was very out of condition. Just before Christmas I played a social game of golf and a few days later my back and legs were so painful I couldn’t walk and even had trouble getting out of bed or a chair. Within a few weeks I was using a walking frame to move around the house, and having spinal injections to try to solve my back and leg problems, but nothing was working. And it was in that period I finally hit 110 kilos (my ideal weight is supposed to be 70). “Jennifer’s situation was similar to mine. She hadn’t been a heavy child or young woman, but over the years, the weight had crept on. Whenever I was heavy it always showed up in my stomach area, and face to some degree. The rest of me is still very thin so being overweight was very noticeable. As I really got heavy and started having to go to the 3XL and 4XL size shirts I knew I’d lost confidence in what I was doing, and that people noticed.” Bill says both he and Jennifer tried various methods of losing the weight, but nothing really stuck. “Like most overweight people we went on dieting programs. In my late 20s Atkins was the approach and over the years I’ve used that, and often had good success – losing weight and keeping it off sometimes for several years. I never did anything too crazy – like live on lemons or whatever, and I never got involved with lots of different books and approaches. I knew what I had to do, I just didn’t seem to care enough or have enough willpower to do what needed to be done. “When I had hit 110 kilos and my back and legs were not getting better, I knew real action was needed. Jennifer and I had to cancel a trip to the USA because I couldn’t risk flying, so it was clear I had to do something, and I knew that dieting and exercise wasn’t going to work.” Bill knew it was crunch time, and decided to take action. “I was 58 years old, my metabolism was slow, my weight was out of control, my self-esteem was shot and I needed to do something. I saw something on an information evening WeightLoss Solutions Australia (WLSA) was having, and recalled a doctor mentioning them to me about six months earlier, so I decided to go along and asked Jennifer if she would join me, which she did.” Bill says both he and Jennifer were a little apprehensive attending that first information seminar at WLSA. “We were a little self-conscious, but then you see a room full of people with the same problem you have, or worse,” he says. “I was there to find things out, so I listened to what was being said and I asked a lot of questions. Not about the operations but about why and how having each procedure would help me overcome the challenges I saw me having – lack of willpower, inability to walk or do much exercise, my enjoying of a good wine etc. People that attended that session still comment about all my questions, and I think it probably helped others as well. “At the end of the info session we were invited to make an appointment with the main doctor, which we did for a few days later. In the meantime I searched online for information on all the options, but was already leaning to the Gastric Sleeve. What this showed me was that while not new, it was not yet common, but it seemed to me to be the safest and best option in many ways, and perfect for me. “Initially I was looking only at what I would do, but as I learnt more and Jen and I discussed it, it started to seem appropriate for her as well, and we realised that both of us doing it together would have many advantages. Jen was only just at a BMI that warranted the Sleeve option, but when we met with the doctor, and he could see we knew what was really involved, that we had thought it all through, and he could see the advantages and reasons why we would both do it, he agreed. So we committed to the operation then and there, and set a date about three weeks away. “Jennifer and I arranged to be operated on the same day, one after the other. We were in the hospital three nights. I think we were probably the only married couple they’d ever had in the ward who had had the same operation at the same time, and the team there loved the sight of us shuffling along hand-in-hand around the halls. After the time in hospital we walked out, I drove us home and we rested for a few days, then started back to work. We work from home, so this was pretty easy, and it allowed us to stay in touch with things without any stress. Then it was just a case

of getting used to the new way to eat. The first couple of weeks was liquids and soft foods, but by three weeks we were trying more things. If we overate or ate a little too fast we knew it immediately, and quickly adjusted to meal sizes and speed of eating.” Then came the weight loss. “I was down to 102 kilos by the end of the operation, and down to about 95 kilos within a few weeks,” Bill says. “As always the body seems to plateau at stages, but after a couple of weeks around 95 kilos I dropped to 90, then 85, then 80 within a few months. I stayed on about 80-81 kilos for several months, then dropped to about 78 kilos where I again sat for several months. “Basically my body was finding what it considered its proper weight – you see after a time your body ‘learns’ what weight it should be. Today I am 75-76 kilos and have been for well over a year, and Jennifer is 71 kilos. My next step is to work to drop off another three to four kilos and have my body learn that I am in fact a 72 kilo person – someone I haven’t been in more than 35 years. It will be tough, but I can do it. For Jennifer’s part, she is loving being “back to a size 12, wearing bathing suits and beautiful clothes. “We look and feel fabulous,” Bill says. “I’m not thin or totally fit yet, but for a man of 60 with a bad back, I’m doing okay. “If I hadn’t had the operation and decided to take care of myself again, I would likely be dead now. I made a choice to take action, and that action saved me – so I’m proud of that. And the fact that Jennifer and I did it together, and she looks so wonderful and sexy, makes it even better. Doing this together, was for me the best possible option. “I am much prouder and more confident now and able to approach and work with clients again, like I used to. And Jen has us doing interviews etc, so being on TV with her was great – and I probably wouldn’t have done that before. And now we have plans on helping other people who have problems with weight like I did, and that is very satisfying. “Initially when Jennifer agreed to have the surgery with me, she would only do it if we told no one about it, to which I agreed. In some way she had a view that somehow we were ‘cheating’ by not doing the hard work of dieting etc. But in my view that wasn’t the case – we had been through all sorts of situations, and to me we were just making the very best decision we could for us at that time. It was quick, it was permanent, it suited our working lifestyle, and it meant that we would simply be doing what experts always say – just eat several small meals each day of the right foods, rather than large meals and your body will balance out – well that’s exactly what the Gastric Sleeve forces us to do, nothing more, nothing less, and we get to choose what we eat. “Who knows maybe one day soon my back will be good enough to climb Kilimanjaro as we once planned, or at least do some hard trekking around the restaurants of Europe (tasting the appetizers of course).” slim-magazine.com.au 37

he first burst onto our screens as the outrageous Tina Sparkle in the 1992 hit, Strictly Ballroom, and has since gone on to become Australia’s favourite TV ‘hostess with the mostess’, fronting everything from Dancing with the Stars, to Big Brother, to her regular Mornings show with David Campbell. At 47, Sonia Kruger has a body most 30 year olds would envy and a smile and style that have made her a red carpet favourite. Although much of her life these days is couture and cameras, Sonia says her childhood was a very happy and ordinary one. “I was born the middle child (I have an older sister – Deb and younger brother – Adam) in Toowoomba Queensland before moving to a semirural suburb south of Brisbane around the age of three,” she says. “We were, and still are, a very tight-knit family.” Those who knew Sonia as a child would not have been surprised to see her star turn in Simply Ballroom or Dancing with the Stars, as she has literally been on her toes since she could walk. “I grew up spending most of my time either outside or in a dance studio. I was really into school and my sister often tells people she would bring her report card home screwed up in a ball in the bottom of her schoolbag while I would have mine pressed neatly between two books before I proudly presented it to my parents. “I was kind of nerdy as a kid. I was into ballroom dancing, tennis and reading. Dad would get annoyed on road trips because I always had my nose stuck in a book and never looked at the view.” Fast forward a decade or two and Sonia is at the top of her game, hosting the hugely popular Mornings with friend and co-host David Campbell. It’s an industry where a lot of emphasis is placed on looks. So how does she keep her sanity and sense of self in that type of environment? “Television is a visual medium so attention will always be placed on how you look,” she says. “It actually makes me work harder to make sure we’re selecting and styling a look that most people would like. In March this year The Herald Sun reported that Sonia is among Australia’s most influential style queens, with clothing selling out within days of her wearing it on air. “I’m dizzy with the power,” the Big Brother host joked to the paper at the time. “Seriously though, it makes me really happy to hear people like what I’ve worn so much that they want to go out and buy it.” “They tend to email, Facebook or ask on Twitter as soon as they see something they like,” Kruger told The Herald Sun. “Fashion is such a big part of what we do on television and there is an entire section on our web page dedicated to providing the details of that day’s outfit.” The report said that Sydney store Cosmopolitan Shoes sold out of its peach-toned Lanvin heels within days of Sonia wearing a pair on Mornings. “If I didn’t have to answer to the viewers about how I look I think I would be a complete slob.” Jokes aside, Sonia takes her health and wellbeing very seriously. “I try to eat a healthy, balanced diet but I do sometimes find myself in the naughty food corner,” she says. Be confident in what you’re wearing and you’ll look great! Oh...and stand up straight. Good posture can take off five kilos!” Sonia admits that even with her positive, healthy attitude, like everybody she has days which aren’t as sunny as others. Panic attacks and anxiety affect so many Australian women and Sonia says she is no different. “I have had several panic attacks over the years,” she says. “The first time it happened I thought I was having a heart attack. I found concentrated deep breathing and talking to someone about what’s stressing you is the best way to stop panic and anxiety attacks occurring in the first place.” While many of us dread the aging process, Sonia says she embraces it wholeheartedly. “The great thing about getting older is you generally have more confidence, wisdom and cash!” So what does the future hold for Sonia? “Huge fun! Working at Channel 9 on Mornings with David Campbell is a delight, and Big Brother will be back soon and I can not wait.”

ovarian syndrome It affects just under 20% of the female population, but many of us still know little about it. Here is what you need to know about polycystic ovarian syndrome.

What is it? Polycystic ovarian syndrome (or polycystic ovary syndrome – PCOS) is a complex condition in which a woman’s ovaries are generally bigger than average. Polycystic means the ovaries have many small, immature follicles that rarely, if ever, grow to maturity and produce eggs capable of being fertilised. PCOS is relatively common among infertile women. It affects 12 to 18 percent of women of reproductive age (between late adolescence and menopause). Almost 70 percent of these cases remain undiagnosed.

Polycycstic ovary syndrome • Polycystic ovary syndrome (PCOS) is associated with problems such as irregular menstrual cycles, excessive hair growth, acne, obesity, reduced fertility and increased risk of diabetes. • PCOS can be diagnosed by history, examination, blood tests and an ultrasound. • Treatment for PCOS includes a healthy lifestyle and targeted therapy such as hormones and medications.

What are the symptoms? For all women with PCOS, it is important to relieve symptoms and reduce the risk of diabetes by preventing weight gain through a healthy lifestyle, or by losing weight if you are already overweight.

Yes, it can be that easy. Make these changes today and see what a difference a day makes. Start making daily affirmations Maybe you are cynical about meditation or affirmations, but studies have shown that daily affirmations help people achieve their goals and become happier and more fulfilled. The good news is, there is no set way to do this; experiment and find a way that suits you. You can choose daily or weekly affirmations, or have a few. Write down your affirmations, take some time to get them into simple and easy to remember sentences such as “Today I will be positive and happy. I will treat each person I encounter with respect”. Take ten minutes at the start of the day and find a place where you won’t be overheard or interrupted, and repeat your affirmations out loud.

Get outside This is not about exercise, although any activity is good. This is about the sensory experience of getting outside and taking in nature, no matter what the conditions are. Whether it is freezing cold or boiling hot, prepare yourself appropriately for the conditions and then get outside. Look around you and take in the sights, smells and sounds of the world around you. Whether you are out in the country or in a busy, bustling city, getting out and about at least once a day connects you to your environment and gives you a sense of being part of the world around you.

Give yourself 30 minutes Half an hour out of 24 hours. Doesn’t sound like much, does it? But you would be surprised at just how difficult it is to allocate just half an hour to yourself every day. But recent studies have shown that taking just 30 minutes a day to do something that makes you happy will improve your mental and physical wellbeing. This is not time to do something you think you should be doing; this is time to do something simply because it makes you happy. Give yourself a pedicure, read a trashy magazine, or take a long bath… whatever it is that makes you feel good.

Give thanks Look around you. Look at the life you have, the friends you have, or the family you have. No matter what problems you may face on a daily basis there is always something to be thankful for. Often more than you might imagine. Taking time to deliberately think about the things in your life that you are grateful for brings to your attention just how wonderful life is. As we all know, a daily burst of positivity and gratefulness is great therapy.

Stop neglecting your health Is that shoulder still sore? Knee still playing up? Or just feeling a little sluggish? Stop pushing health issues aside and take time to attend to your health. Woman in particular have a tendency to put their own needs last and underestimate the cumulative effects that seemingly small health issues can have on our overall wellbeing. Whether it is setting up a doctor’s appointment, having a massage or seeking expert advice from a nutritionist, you need to make time to get your health in order.

Take charge of your space If your living space or work space is in chaos, chances are your head will be too. Creating environments that are organised and pleasant will improve your outlook. You don’t need to undergo a complete renovation, just choose one space at a time and do small things to make it one you are happy and comfortable in. The simple things are often the most impactful: ensure your home is clean and tidy, especially the bedroom. Take time before you go to bed to get your room in order. Waking up in a clean and pleasant environment gets your day off to a positive start.

Help someone In the US, nearly 200 individuals were followed by psychologists for 50 years in one of the longestrunning social-science studies ever conducted. The research looked into what constitutes a happy life. Researchers found that helping other people consistently gave the individuals a sense of wellbeing. The study found that feeling like you are making a difference in the world in a positive way is essential to good mental health. It doesn’t need to be a major commitment to start with; try something simple like visiting an elderly neighbour, taking someone’s bins in for them, or offering to help someone carry their groceries.

Write it down You don’t have to be JK Rowling to enrich your life through writing. The physical act of writing – be it an affirmation, list, note or diary – can be a soothing process. Furthermore, a recent study conducted in Sweden, with over 250 participants, found that writing down a concept, idea or goal improves your chances of achieving it by a staggering 43 percent. And keeping a diary is an effective tool for establishing patterns of behaviour and tracking your progress on achieving goals. If you have negative thoughts, writing them down can help resolve many of them and find some clarity around ongoing personal issues.

Stop the bitching Do you find yourself complaining or whinging a lot? Always have a bad word to say about someone? Or are you a glass half empty kind of person? Well, not only is it a waste of time, recent research has found that negative thoughts are toxic to our overall wellbeing. In extreme cases negative thinking can cause very real physical problems such as eating disorders and stress related heart problems. It takes time to change this pattern of behaviour but it starts with one step: view the events and people in your life – yourself included – with love and respect. Find the positive in every situation – even in the worst circumstances. Celebrate you It may sound like something out of an American reality show but this may be the most important step of all. Take a good look at yourself and see all of the amazing qualities you have. Take a moment to acknowledge them to yourself. You can spend all the time you like working on the things that you feel need improving, but it is just as important to assess yourself and celebrate the wonderful unique qualities you possess. slim-magazine.com.au 43

hatever the age demographic or social status, women are aware that respect from society is forthcoming when conforming to a form that appeals to stereotypes. Moreover, one’s self-respect is ultimately forthcoming when we honour the true potential of our body form. Often these stereotypes are fueled by popular culture (who can forget that shift in desirability for the hourglass figure to anorexic like heroin-chic, and then swinging back again to hourglass). So it appears that when it comes to body image, all that is old is new again. What will never be out of fashion with body image is healthiness, so I am often loosely quoting model Kate Moss by saying to clients that “nothing tastes as good as healthy feels”. Kate said the same, infamously using the word ‘skinny’ instead of ‘healthy’. As a principal psychologist of a private practice a common bane of many women’s therapeutic presentation is their body image and the associated poor mental health issues that arise from a decreased sense of physical self. The most common pathology arising from poor body image is depression, which is often treated pharmacologically with antidepressants. In some cases, antidepressants have reported side effects which include the exacerbation and amplification weight loss difficulties. By examining the cognitive (thought) and behavioral responses to your eating with a psychologist and using such therapies as CBT (Cognitive Behavioral Therapy) and ACT (Acceptance & Commitment Therapy) you can make an action plan that can be applied across your lifetime, naturally. Simply put, what we eat affects our mental state (one to remember is Tryptophan found in bananas and cheese). Therefore, food should have a feel good factor, however, the more you are able to simply view food as a fuel source to nourish and provide energy and only occasionally view food as a social lubricant, purely for satiation purposes – the better your relationship with food can be, and ultimately a better relationship can be established within yourself and your own body. By learning how to make better food choices, you might be able to control compulsive eating, binging and subsequently gaining weight. In addition to better appetite control, you might also experience feelings of calmness, higher energy levels, or mental alertness from the foods consumed. 44 slim magazine winter 2013

What factors influence our eating behaviors?

There are many factors that can influence our thoughts about food and our eating behaviors. These include: • Cultural factors • Evolutionary factors • Social factors • Family factors • Individual factors There also are positive and negative consequences associated with eating as a means to manage negative emotion states such as stress, anxiety and depression. For example, the food consumed might help you to cope with the negative feelings in the short-term by simply distracting you from feeling the unpleasant feelings. In the long term, however, attempting to cope with stress by eating can actually increase negative feelings because you aren’t actually coping with the problem causing the poor emotion state. Furthermore, your self-image will become more negative as you gain weight.

What role does psychology play in weight management?

Psychology is the science of behavior; in essence, the study of how and why people do what they do. For people trying to manage their weight, psychology addresses the following areas: • Cognition (thought) – This part of therapy focuses on identifying self-defeating thinking patterns that contribute to weight problems. • Behavior (the doing) – This part of therapy involves identifying habitual eating patterns and finding ways to change eating behaviors.


What treatment is used for weight management?

CBT is the therapeutic approach most often used because it addresses both thinking patterns and behavior. Some areas addressed through CBT include: • Determining the person’s “readiness for change” – Identification of what needs to be done to achieve your goals and then making a commitment to do it. • Learning how to self-monitor – Self-monitoring creates awareness of triggers to eating through mindfulness of your food choices and portions. It also helps you to stay focused on achieving long-term progress. • Breaking linkages – The focus here is on stimulus control, such as not eating in particular settings and not keeping poor food choices in your home. CBT also teaches distraction, replacing eating with healthier alternatives as a coping mechanism. Some specific techniques include: positive reinforcement though affirmations or self-statements, rehearsal/problemsolving, finding socially supportive network, and altering eating habits.

What does Cognitive Behavioral Treatment involve?

CBT addresses how you think about food. It helps you recognise self-defeating patterns of thinking that can undermine your success at losing weight. It also helps you learn and practice using positive coping affirmations or self-statements. Examples of self-defeating thoughts include: “This is too hard. I can’t do it.” “If I am not supermodel thin then I’ve failed.” “Now that I’ve lost weight, I can go back to eating any way I want.” Examples of positive coping self-statements include: “I recognise that I am overeating. I have the tools and strategies needed to think about how I can reduce this pattern of behavior.” “I understand what triggers my overeating, so I can create a plan to cope with it if I encounter the trigger again.” “Is my body really hungry or is this just a craving to distract myself from some unpleasant emotion? I have the power to wait to see if this feeling passes.” The psychology of attaining and maintaining slim and healthy is attributable to a change in your thinking. Long term weight management includes a shift in lifestyle. Short term strategies will only offer just that – because after all, life rewards effort. To achieve weight management success, you need to become aware of the role eating plays in your life and to learn how to use positive thinking and behavioral coping strategies to manage your eating and your weight.

The food diary

A food diary is the first and last tool used by psychologists in therapy. It records what food you eat, when and how you feel when you’re eating, and what you are doing while you are eating. The diary explores the relationship of food, thought and behaviour, allowing your psychologist to formulate the necessary cognitive and behavioral changes for successful weight management.

The “dos and don’ts” of slim

• Don’t skip meals – This decreases your ability to maintain impulse control, and will have you reaching for a “feel good food fix” which will be more likely to be a poor food choice. • Do keep track of your eating habits with a “food diary” – This is a saying I refer to as “Conscious mind = conscious living”. • Don’t eat after 7pm – This is when your metabolism is at its slowest. • Do drink plenty of water – For purification and toxic elimination. • Do delay/distract yourself – Allow yourself time to identify if you are trying to eat to address the feeling of an unpleasant emotion. • Do exercise instead of eat when you are bored. This is behavioral activation at its best – with purpose. • Don’t eat while you watch TV, work or drive. This promotes unconscious eating or eating amnesia as I call it. • Do only eat in certain settings (ie. seated at kitchen table with knife and fork) – This encourages the ritualisation of eating to regulate how much you eat. • Do watch your portion sizes – This is one of the safest tools to moderate your food intake. • Don’t forbid yourself a particular food. What you resist will persist. • Do give yourself encouragement – Treat yourself, and talk to yourself as you would your best friend. • Don’t beat yourself up when you lapse – Refer to the previous point. • Do think of eating as a lifestyle change – Eating is part of our lifestyle so is requires integration. • Don’t weigh yourself more than once per week – This encourages fixation and also obsessiveness. Life is meant to be lived; your self-esteem is not measured by your weight. • Do make healthy food choices – Life is all about the choices we make. In the book, she says: As pointed out in Forks over Knives: The Plant-Based Way to Health, “Natural, plant-based foods provide all the essential nutrients needed for a well-balanced and healthy diet, as there are no nutrients found in animal-based foods that are not abundantly available in plant foods, with the exception of vitamin B12. And you can supplement vitamin B12 for insurance.” In the past, B12 was obtained in adequate amounts from a plant-based diet, because microorganisms in the soil manufacture B12. But today, foods are sanitised and scrubbed of soil exposure. Although you may choose to keep some meat in your diet for taste, social, familial or any other reasons, there is no nutritional reason to do so. It’s okay to have some cooked vegetables, especially when you’re transitioning and when eating dinner. When cooking vegetables, avoid charring or overboiling them, because you want to preserve the nutrients as much as you can. Steaming or lightly cooking in a bit of vegetable broth, for example, will retain some of the vegetables’ nutrients and ensure they are digested easily. emember the Israeli Army diet? First popularised in the 1970s it involved eating apples for two days, cheese for the next two, chicken for the following two and salad for the final couple. Black tea or coffee was allowed. Needless to say you lost quite a bit of weight, fast, but you ended up a crazy person who, at times, felt faint or even homicidal. Unfortunately it’s not the only crazy diet that women (and men) have embarked on over the years in a desperate bid to fit into a favourite pair of jeans or a tight little black dress. Often prompted by celebrity trainers or get-rich-quick diet doctors, or sometimes just plain quacks, plenty of those desperate to shed a few kilos have digested tapeworm, swallowed their own placenta and had a tube inserted up their nose. Here are 10 of the craziest diets ever.

#1 The Baby Food Diet You may have noticed that towards the end of the hit series Friends there was increasing competition between Courtney Cox and Jennifer Aniston to see who could be the thinnest. Blame the Baby Food Diet on which Jen is reported to have eaten 14 serves of baby food a day and little else. She’s denied it but, really people, grow up.

#2 Watercress Soup Diet

Her famous curves have been squeezed into teeny bikinis as well as dresses held together with safety pins, to the delight of the paparazzi. Actor and Shane Warne’s-bride-to-be Elizabeth Hurley’s crazy weight loss secret: she drinks at least six cups of watercress soup a day and nothing else whenever she wants to slim down for the cameras. Too restrictive to be recommended as a long-term nutritional plan.

#3 The Blue Diet

A Japanese company created sunglasses with blue lenses which you wear to make food look unappetising. The lenses also block red light which is thought to stimulate the appetite. It will come as no surprise that, after a while, you start to feel a bit blue. A better idea: put the colours of the rainbow – carrots, berries, cabbage, sweet potato, oranges, spinach and more – on your plate and go easy on the fats and carbs.

#4 The Nasal Tube Diet It has been popular in Italy and Spain for years but has recently taken off in New York and London. Basically you have a tube that goes up through your nose and down through your oesophagus into your stomach that provides you with low kilojoule nourishment, with no carbs, for 10 days. Side effects include constipation, bad breath and dizziness. Social commentators say this extreme diet is particularly popular with brides but we think it’s on the nose.

#5 The Alcohol Diet

All right, this one has some appeal, especially if you like a sauvignon blanc or two or maybe even a Cosmopolitan. It was first tried in 1087 by an overweight William the Conqueror who took to his bed and drank nothing but alcohol in an attempt to go from flabby to fabulous. Sadly this is not a healthy way to lose weight – it’s bad for your liver and, anyway, alcohol is high in kilojoules – although, temporarily, it could be entertaining.

#6 The Cotton Ball Diet

Popularised recently by catwalk models, the idea is that cotton balls, which can be soaked in gelatin to make them extra filling, are high in fibre but kilojoule free. This diet can cause major digestive problems and is certainly not recommended. In fact we’d have to say it’s one of the dumbest of all the crash diets we’ve heard of. You’re not even getting a little food, you’re getting something you use to take makeup off.

#7 The Placenta Diet

Beautiful starlet January Jones is said to have had her own placenta dried, crushed and put into capsules after her son was born. She then swallowed them in an attempt to shed her baby weight. There are no reports on whether it actually does work.

The Party Girl IV Diet: Stars including Simon Cowell and Rihanna are said to have a cocktail of “fat-burning” vitamins injected regularly to kick their metabolism into high gear. The Martha’s Vineyard Diet: You drink most of your meals and have weekly colonics. It’s supposed to be the ultimate detox but on a scale of pleasantness, it rates a zero out of 10. The Graham Diet: A bland diet developed by a Presbyterian minister in the 1920s. Tomato sauce and mustard were among the foods banned, for fear they could spark sexual thoughts and actions. It is not known if followers lost weight although eventually they probably lost interest in meals and conjugal relations. The Morning Banana Diet: A Japanese weight loss craze which substitutes breakfast for a banana. You must also eat dinner by 8pm and be in bed by midnight. So popular that stocks of bananas temporarily ran low.

#8 The Tapeworm Diet In the early 1900s these parasites were sold in a pill to make ingestion easier although others chose simply to swallow the tapeworm itself and let it digest many of their kilojoules. Besides weight loss you could also expect nausea, headaches, infection, diarrhoea and possibly death. Opera singer Maria Callas was rumoured to have tried this extreme method.

#9 The Vomiting Diet

The indulgent Ancient Romans invented vomiting after meals. They actually had special rooms for throwing up, called vomitoriums. They have a lot to answer for.

#10 The Lemon Juice Diet

Citrus fruit has always been popular in fad diets – remember the Grapefruit Diet in which you eat half of the fruit before all meals to supposedly activate fat burning enzymes? The gorgeous Beyonce is said to have turned to a liquid lemon juice mixture to get into shape for her role in the film Dreamgirls. The regime: six servings a day, as well as a saltwater flush and a herbal laxative. The lemon drink is reportedly laced with maple syrup and cayenne pepper just to give it that extra bit of oomph. slim-magazine.com.au 49


Fad or fiction? We examine three of the most popular fad diets.

e all know fad diets are silly, right? Right? Well, it would appear not, as many fad diets gain huge followings (especially if they are endorsed by a celebrity). The Dietitians Association of Australia says that while people who go on such diets may lose weight, they usually put it all back on again – and some more. In the process they change how their bodies work by disturbing their metabolism – making it more difficult to achieve and maintain a healthy weight in the long term. Before turning to a ‘detox’, ‘cleanse’ or ‘diet’ to lose weight and get healthy, the Dietitians Association of Australia recommends consulting an Accredited Practising Dietitian for tailored, expert advice to eat better and achieve a healthy weight. Here, they breakdown, three of the most popular fad diets.

#1 The Lemon Detox Diet

The Lemon Detox Diet is a 10 to 14 day cleansing program sold in a kit form online or through pharmacies or health food stores. It involves drinking six to nine glasses each day of Lemon Detox drinks. Verdict: Despite what the scales may say, most of the weight lost on this diet is fluid and carbohydrate – so any weight loss is likely to be put straight back on once you revert to eating normal food and drinks. The Lemon Detox Diet does not provide the body with the essential nutrients it needs to function. And this is one diet that is impossible to sustain in the long-term. The body has an amazing detox system – the lungs, liver, and kidneys do this every minute of every day. If you want to ‘detox’, nourish your body by cutting down on fatty, highly-processed foods, alcohol and caffeine, and eat a balanced diet – making sure to get plenty of fruit, vegetables, wholegrains, and water.

#2 The Acid and Alkaline Diet

This diet promotes ‘alkaline’ foods, and recommends avoiding ‘processed’ grains (including bread) and sugar, and restricting meat and dairy foods. It is based on detailed lists or charts of foods to eat and foods to avoid. Verdict: The science is not there to support needing to eat this way. The body naturally controls acidity on a daily basis (and this is not dependant on the foods a person eats). That is, if there is a shift to a more alkaline or more acidic environment outside of the normal range, mechanisms within the body kick-in to restore the optimal balance. There are some good features of this diet (such as it includes fruit and vegetables). However, it recommends restricting very specific foods, so is likely to be difficult to sustain longer-term. A person’s whole diet is important for good health and weight management, so the focus should not be on one food, food group or certain ‘type’ of food.

#3 The Six weeks to OMG Diet

British celebrity personal trainer Paul Khanna (writing under the name Venice A Fulton), suggests dieters skip breakfast and exercise first thing in the morning (after drinking black coffee and before eating) – in an effort to boost metabolism. Carbohydrate foods are limited to very small amounts, but plenty of protein is allowed. Verdict: Much of the dietary information promoted is contradictory to health authority recommendations, and not based on scientific evidence. Avoiding food in the morning can play havoc with metabolism, making it more difficult to achieve and maintain a healthy weight in the long-term. This book also makes controversial claims, such as that broccoli is no better than cola. This sends the wrong message to people. And by unnecessarily limiting nutritious foods, people risk missing out on important vitamins and minerals. Sadly, this book may appeal to younger women, who may be more vulnerable to body image concerns.

Is it a fad? Warning signs that it might be a fad: • Promotes or bans certain foods or food groups • Encourages miracle pills or potions • Promises quick, dramatic or miraculous results • Claims a ‘one-size-fits-all’ approach to weight loss • Focuses on short-term changes to eating and exercise habits • Contradicts the advice of trusted health professionals • Makes claims based on a single study or testimonials.

f you want to lose weight healthily one of the smartest things you can do is maximise natural foods with high antioxidant and fat-burning qualities. Apples

Apples stimulate the digestive system and cleanse it by eliminating toxins from the small intestine. The pectin in apples, especially Granny Smiths, slows the rise in blood sugar, reduces the build up of arterial plaque and promotes digestion. The alkaline elements of apples increase the flow of saliva for carbohydrate digestion.

Almonds

The perfect alkalising protein. The good fats in almonds reduce cholesterol levels and decrease the risk of heart disease. Other properties in almonds improve memory and concentration, help the nerves to relax, provide calcium and assist with fat metabolising.

Berries

All berries have special qualities and when you put strawberries, blueberries, raspberries and strawberries together, you have a fruit mix full of antioxidants, iron, Vitamin C and enzymes with anti-inflammatory properties.

Brazil nuts

Rich in the mineral selenium, which is vital for diabetics because it stimulates glucose absorption. These nuts have a remarkable supply of amino acids, making them a complete protein source. They also have a good supply of calcium.

Lemons

Lemons are packed with Vitamin C and provide an alkaline balance while cleansing the digestive system. Lemons reduce uric acid in conditions such as gout, rheumatism and gallstones. Half a lemon squeezed into hot water is a simple way to detoxify your body.

Linseeds

Linseeds have more essential fatty acids than fish. The Omega-3 fatty acids prevent the build-up of toxic biochemical that the body produces under stress. The essential fatty acids benefit the heart by lowering bad cholesterol. This lowers the probability of clots in the arteries, which may lead to stroke and heart attack. Linseeds are also an excellent source of dietary fibre.

Parsley

Parsley is a rich source of Vitamins A and C. It supports the immune system by providing antioxidants that clean the blood. It is also a rich source of iron that builds up the blood. Add chopped parsley to salads and cooked foods.

Pineapple

Pineapple is a natural blood thinner. It also contains an enzyme called bromelain which helps the pancreas produce the chemicals that digest protein, fats and carbohydrates. The anti-inflammatory properties of pineapple can also assist with easing the symptoms of gout and rheumatoid arthritis.

Rolled Oats

Oats are good news for diabetics because they contain manganese, which helps stabilise glucose levels. It has good iron content and when you add mixed berries to your muesli, the Vitamin C content of the berries assists in the absorption of the iron. Oats contain special ingredients in the fibre called beta glucan, which slows the rise in blood sugar levels and reduces blood cholesterol.

Celery

This amazing vegetable has cholesterol lowering properties and can decrease blood pressure. Celery juice can prevent hardened arteries and naturally thins the blood. Celery is a good food source for diabetics because it stimulates the pancreas glands, producing insulin for carbohydrate digestion.

Carrot

Carrot juice is great for cleansing the liver. Carrots are a rich source of carotene, which the body converts into Vitamin A. This vitamin is required to promote the secretion of gastric juices required for protein digestion.

Cherries

These have a very low GI which makes them an ideal fruit for diabetics. They also provide melatonin, the hormone that relaxes and promotes sleep. They have pain killing power too and can assist with the pain of headaches and arthritis because they retard the enzymes that cause inflammation.

Chia Seeds

These amazing seeds will nourish you and make you feel full. They contain high amounts of Omega-3 essential fatty acids and are high in protein and calcium. They are high in soluble fibre and also boost your metabolic rate. Mix a teaspoon of seeds in a glass of water and drink.

Sesame Seeds

The calcium content of sesame seeds is excellent, making them an ideal non-dairy calcium food. Sesame seeds inhibit the absorption of cholesterol and assist with controlling blood sugar levels for diabetics. They also assist with inflammation from rheumatoid arthritis and are an excellent supply or iron and protein.

Sunflower Seeds

Sunflower seeds absorb a lot of the sun’s energy. They are rich in Vitamin E, which protects from ageing and skin cell damage. They are an excellent source of good fats and are a complete protein.

Walnuts

How to restore alkaline balance

The easiest way to increase your alkaline food intake is to gradually start swapping some of your processed acid forming foods for alkaline foods. Don’t feel obliged to radically change your diet in one or two weeks, if you start with frequent small changes it is easier to stick with your new habits. Before you know it, you won’t be craving the processed, sugary and fatty foods that you used to.

Tell us about your job: I have been in the beauty and cosmetic industry since 1999 – gaining my degree in health science in 2003, while working as a beauty therapist. I gained extensive experience working with top plastic surgeons on the Gold Coast and Brisbane over the last seven years working on post surgery scar camouflage including recreating areolas after mastectomy, and facial and body scars from surgery. Passionfruit Souffles melted butter, for greasing 100g dextrose, plus extra for dusting 150ml passionfruit pulp (from about 7 passionfruit) 1 tablespoon cornflour 3 teaspoons water 5 egg whites Preheat the oven to 180°C (160°C fan-forced). Brush six 1 cup capacity ramekins generously with melted butter, then dust generously with extra dextrose and put onto a baking tray. Put the passionfruit pulp and ¼ cup of the dextrose into a small saucepan. Stir over low heat until the dextrose has dissolved. Increase the heat to high and bring to the boil. Mix the cornflour and water in a small bowl to form a smooth paste. Remove the pan from the heat and whisk in the cornflour paste. Return the pan to the heat and cook, whisking continuously, for 1 minute. Transfer the mixture to a bowl and refrigerate until cold. Whisk the egg whites with an electric mixer until foamy. Gradually add the remaining dextrose and continue to whisk just until stiff peaks form. Add a large spoonful of egg white to the passionfruit mixture and stir with a large metal spoon until combined to loosen the mixture. Gently fold in the remaining egg white. Fill the ramekins to the top with the souffle mixture and run a palette knife across the top to make a flat surface. Run your thumb around the inside of the rim of each ramekin to help the souffles rise evenly. Bake souffles for 10-12 minutes or until risen and golden. Serve immediately.

Coconut & Lime Sorbet 1½ cups dextrose 2 cups water 1 lime, zest removed in wide strips with a vegetable peeler 2 cups coconut milk Put the dextrose, water and lime zest into a medium saucepan. Stir over low heat until the dextrose has dissolved. Increase the heat to medium and simmer for 5 minutes. Stir in the coconut milk. Remove from the heat and cool completely. Pour into an ice-cream machine and churn according to manufacturer’s directions until frozen. Spoon into 4 glasses to serve. Store in an airtight container in the freezer for up to 2 weeks.

Pecan Pie ¾ cup dextrose ½ cup glucose syrup 40g unsalted butter 3 eggs ¼ cup thickened cream 2 teaspoons vanilla essence, or to taste 125g pecan halves thickened cream, to serve (optional) Sweet pastry 1⅔ cups plain flour, sifted 2 tablespoons dextrose ¼ teaspoon baking powder, sifted 180g cold unsalted butter, chopped ¼–⅓ cup iced water 1½ teaspoons vanilla essence, or to taste

Universally loved by sugar addicts and those who have kicked the sugar habit, this is the perfect contribution to the dessert table at your next celebration. If the filling starts to become too dark, simply cover it with foil for the remainder of the cooking time.

To make the pastry, process the flour, dextrose and baking powder in a food processor until combined. Add the butter and process until the mixture resembles fine breadcrumbs. With the motor running, gradually add the water and vanilla and process until the mixture comes together to form a smooth dough. Shape into a disc, then wrap in plastic film and refrigerate for 30 minutes. Lightly grease a 34cm x 11cm rectangular tart tin. Roll the pastry out between 2 sheets of baking paper until 3 mm thick. Line the prepared tin with the pastry. Trim edges using a small, sharp knife. Refrigerate for 30 minutes. Preheat the oven to 170°C (150°C fan-forced). Put the dextrose, glucose syrup and butter into a saucepan and stir over low heat for 2-3 minutes or until melted and combined. Transfer to a bowl, then add the eggs, cream and vanilla and whisk to combine. Pour into the tin and top with the pecans. Place the tin on a baking tray. Bake the tart for 1 hour or until golden and set. Cool completely. Serve with cream, if desired. Store in an airtight container in the fridge for up to 2 days.

Chocolate Fudge Cake with Chocolate Icing 200g unsalted butter, chopped and softened 1 cup dextrose 1 teaspoon vanilla essence, or to taste 2 eggs ¾ cup buttermilk 1⅓ cups plain flour, sifted ⅓ cup cocoa powder, sifted 1 teaspoon bicarbonate of soda, sifted Chocolate icing 3 cups dextrose, plus extra if needed 1 cup cocoa powder, sifted 200g unsalted butter, chopped and softened ¾ cup milk, plus extra if needed 1 tablespoon vanilla essence, or to taste Preheat the oven to 180°C (160°C fan-forced). Grease and line a 20cm round cake tin with 2 layers of baking paper. Beat the butter, dextrose and vanilla with an electric mixer until light and creamy. Add one egg at a time, beating well after adding each one. Alternately fold in the buttermilk, flour, cocoa and bicarbonate of soda until well combined. Spoon the batter into the prepared tin. Bake the cake for 45-50 minutes or until cooked when tested with a skewer. Cool in the tin for 5 minutes, then turn out onto a wire rack and leave to cool completely. To make the icing, combine the dextrose and cocoa in a small bowl. Beat the butter with the electric mixer for 2 minutes or until light and creamy. Add the milk, vanilla and half of the dextrose mixture. Continue to beat for 3-5 minutes, then add the remaining dextrose mixture and beat for a further 3-5 minutes or until the mixture is light and fluffy. (If the icing is too dry, add a little more milk. If it is too wet, add a little extra dextrose.) Spread the icing over the cooled cake, then serve. Store leftover slices wrapped in plastic film or freezer bags in an airtight container in the freezer for up to 2 weeks.

Cruciferous vegetables have it all: vitamins, fibre, and cancer-fighting phytochemicals.

As often as possible, eat these veggies raw or only lightly steamed to retain the phytochemicals. Don’t overcook cruciferous vegetables. They can produce a strong sulphur odour and become unappealing. You can buy several types of cruciferous vegetables in the frozen sections of your supermarket, including broccoli, cauliflower, and brussels sprouts. Add raw broccoli or cauliflower florets to your green salad to give the nutrients a big boost. Add chopped cruciferous veggies to soups, stews, and casseroles. When buying fresh broccoli, look for firm florets with a purple, dark green, or bluish hue on the top. They’re likely to contain more beta-carotene and Vitamin C than florets with lighter green tops. If it has yellow in it or is limp and bendable, the broccoli is old – don’t buy it.

hat do broccoli, cauliflower, brussels sprouts, kale, cabbage, and bok choy have in common? They’re all members of the cruciferous, or cabbage, family of vegetables. And they all contain phytochemicals, vitamins and minerals, and fibre that are important to your health. Experts recommend that we eat several servings per week of cruciferous vegetables - and for good reason. One of the big reasons to eat plenty of cruciferous vegetables is that they may help to lower your risk of getting cancer. Research published in Journal of the American Dietetic Association showed that 70 percent or more of studies found a link between cruciferous vegetables and protection against cancer. Various components in cruciferous vegetables have been linked to lower cancer risks. Some have shown the ability to stop the growth of cancer cells for tumours in the breast, uterine lining (endometrium), lung, colon, liver, and cervix, according to the American Institute for Cancer Research. And studies that track the diets of people over time have found that diets high in cruciferous vegetables are linked to lower rates of prostate cancer. Studies show that one of the phytochemicals found in cruciferous vegetables – sulforaphane – can stimulate enzymes in the body that detoxify carcinogens before they damage cells. Another way cruciferous vegetables may help to protect against cancer is by reducing oxidative stress. Oxidative stress is the overload of harmful molecules called oxygen-free radicals, which are generated by the body. Reducing these free radicals may reduce the risk of colon, lung, prostate, breast, and other cancers. In a study funded by the National Cancer Institute, 20 participants were encouraged to eat one to two cups of cruciferous vegetables a day. After three weeks, the amount of oxidative stress in their body was measured. Then, after a three-week wash-out period, the study participants were told to take a multivitamin with fibre. Again, the oxidative stress was measured three weeks later. Oxidative stress in the subjects’ bodies dropped 22 percent during the period when they were eating lots of cruciferous vegetables. Savoy Cabbage Parcels with Mushrooms & Ricotta Serves 4 1 medium Savoy cabbage 1 tsp olive oil 2 shallots, finely chopped 1 clove garlic, crushed 100g mushrooms, chopped 1 tsp caraway seeds 125g ricotta cheese 50g pine nuts, toasted 350g tomato puree (pasta sauce will do) Preheat the oven to 200ºC. Remove 8 outer leaves from the cabbage, set aside, and shred the remainder, discarding any thick stalks. Cook the whole leaves in a large pan of boiling water for 2-3 minutes until tender. Drain and run under cold water then pat dry with kitchen paper. Cut out the base of the central stalk on each leaf. Heat the oil in a large non-stick frying pan and add the shallots, garlic and mushrooms. Cook for 3-4 minutes, stirring, until softened then add the shredded cabbage, caraway seeds and a dash of water. Season and cover the pan. Cook over a gentle heat for 5 minutes until the cabbage is very tender. Stir in the ricotta and toasted pine kernels. Pour tomato puree into the base of an ovenproof dish. Using a teaspoon, divide the mushroom mixture between the cabbage leaves and roll up into neat parcels, folding in the ends. Tuck into the dish so they fit neatly. Bake for 15-20 minutes until heated through. Serve with crusty bread.

Broccoli Pasta Serves 4 300g wholewheat pasta twists or shells 300g broccoli cut into florets 2 tsp olive oil 2 cloves garlic, thinly sliced 1 red chilli, deseeded and chopped 50g walnuts, roughly chopped Grated zest and juice of 1 orange 2 tbsp finely grated Parmigiano Reggiano Cook the pasta in a large saucepan of boiling water for 10 minutes or until al dente. Meanwhile, cook the broccoli in a pan of boiling water for 2-3 minutes then run under cold water. Drain and pat dry on kitchen paper. Cut each floret in half to give a flat surface. Heat half the oil in a heavy non-stick frying pan and cook the broccoli, cut side down, over a high heat for a minute or two until charred. Drain the pasta and return to the pan, then stir in the broccoli. Heat the remaining oil in the frying pan and add the garlic and chilli. Cook for a minute until just golden then add the walnuts, orange zest and juice and bring to the boil. Add to the pasta pan, toss together then divide between four plates and sprinkle with a little cheese to serve.

Macaroni Cheese with Cauliflower & Broccoli Serves 4 300g macaroni pasta 300g cauliflower and broccoli, cut into florets 50g butter 50g plain flour 750ml skim milk 100g low fat cheese, grated 2 tsp Dijon mustard 2 tbsp breadcrumbs Preheat the oven to 200째C. Cook the pasta in boiling water for about 10 minutes, or until just tender. Place the cauliflower and broccoli in a steamer (or sieve) and set over the pasta for the last 5 minutes until almost tender. Drain the pasta and place in a ovenproof baking dish with the vegetables. Melt the butter in a medium non-stick pan and stir in the flour. Cook for 1 minute until thick, then off the heat gradually whisk in the milk, keeping the mixture smooth. Return the pan to the heat and stir constantly until thickened. Simmer for 2 minutes, then remove from the heat, stir in the cheese, mustard and seasoning and pour over the pasta and vegetables. Sprinkle the breadcrumbs over the dish. Cook in the oven for 20-25 minutes until the top is crisp and golden. For more recipes go to waitrose.com 72 slim magazine winter 2013

love this car. I love, love, love this car. When I choose a new car I firstly want to know that it has all the features I need to keep my family safe and comfortable. I want to know it has the latest technologies that make driving safer and easier. I want it to be fuel efficient. And then, once all those boxes are ticked, I just want a smooth ride. The RAV4 really does have it all. It ticks all the boxes; it’s one of the safest and most advanced cars on the market, but more than that it is just a great ride. The handling on the road is flawless. I had the car for 10 days and I fell in love with it. It sits on the road beautifully, and I didn’t feel like I was driving a SUV or diesel. And it’s great value for money. I filled up just half a tank in 10 days! I also loved how spacious and comfortable it is, and very easy to clean (which is important when you have kids and a puppy). I’m no car expert, but I know a great drive, and the RAV4 is just that. Do yourself a favour and test drive one today at Grand Motors Toyota Southport.

Exterior RAV4’s sleek body design gives the car a lean, athletic look. It’s fitted with 17” wheels (sporty alloys are standard on GXL and Cruiser). GX and GXL are fitted with powerful halogen headlights while Cruiser grades come with High Intensity Discharge (HID) headlights. LED Daylight Running Lamps are standard across the range. Roof rails are standard. At the rear (on Cruiser models), a power rear door is easily opened at the touch of a button on the Smart key fob, making loading and unloading much easier. In Cruiser grades, there’s also a tilt and slide moonroof to let in fresh air and natural light.

Interior The RAV4 has a sporty cockpit-like driver area and high quality material finishes throughout including leather accented seats (Cruiser). The luggage area offers 577 litres of cargo space (506 litres with full sized spare wheel) and with a variety of seating configurations available thanks to the 60/40 rear split-fold seats. There are also plenty of convenient storage spaces for all the things you need to take with you when you travel such as sunglasses, drinks and maps.

Performance and handling RAV4 offers plenty of pulling power, excellent agility, a comfortable ride and surprisingly good fuel economy. Depending on engine choice, RAV4 comes in All Wheel Drive (AWD) or Two Wheel Drive (2WD). Cruise Control and Electric Power Steering (EPS) are standard, and all models are equipped with driver assist technologies including, Traction Control, Vehicle Stability Control, Hill Start Assist Control and Downhill Assist Control.

Safety RAV4 comes with an extensive range of active and passive safety features including: Anti-skid Braking System (ABS) to help ensure that you have steering control while braking. Brake Assist (BA) to enhance emergency braking if necessary. Electronic Brake-force Distribution (EBD) which distributes the brake force to the wheels with the most grip for more effective braking. Vehicle Stability Control (VSC) to help correct oversteer and understeer and to help ensure you have full steering control even when braking during cornering on slippery or uneven surfaces. Traction Control (TC) to help minimise wheel-spin when pulling away or accelerating on slippery or uneven road surfaces. Rear parking sensors that alert you to the distance and direction of obstacles and hazards behind you during reversing. Reversing Camera (RC) to help make reversing easier and safer. GXL and Cruiser grades. Blind Spot Monitor (BSM) to help reduce the chances of lane changing collisions. Cruiser grades only. Rigid body structure designed to protect the vehicle cabin occupants from the dangerous forces of a collision. Impact absorbing structures and materials designed to deflect crash force away from everyone in the car.
